Iberico cheese is made with an enticing blend of Cow, Sheep and Goat Milk. Iberico is made in a similar mold as Manchego, thus the shape and rind texture are quite similar.
There is an excellent harmony between its flavor and texture. The blend of three milks give this cheese a grassy and earthy aroma and a distinctive fruity to nutty taste. The paste is soft with a light buttery texture.
The richness of this cheese makes it ideal to be served as a snack cheese, grating or a grilling cheese. Enjoy with robust Spanish wines and cured Spanish meats such as Chorizo, Jamon Iberico or Jamon Serrano.
Iberico has aromas of yogurt and butter. It has a marked softness making it slightly sticky with a pleasant oily sensation.
