Cadi is a centenary cooperative committed to supplying the consumer with products of the highest quality. The Cadi Cooperative is located in a beautiful valley in the Catalan Pyrenees. The high pastures of the Pyrenees mountains give our dairy products a fresh and unique flavor. Since 1915, Cadi has produced cheese of the highest quality, recognized and guaranteed by the most strict European regulatory agencies.
100 years later, Cadi milk is still provided only by the farmers who belong to the Cooperative, which comes only from two Pyrenean regions: Alt Urgell and Cerdanya. This guarantees its constant uniformity and richness. All Cadi cheeses are made of a blend of rich morning and evening milk.
WITH A NATURAL MOLD RIND soft spanish cheese
Neu Del Cadí is soft mold rind specialty cheese from the Catalan Pyrenees. Neu del Cadí is a cheese with a personality. Creamy and lactic at first, which develops more complex aromas during its lifetime, reminiscent of truffles, mushrooms and the damp pastures typical of this area of the Pyrenees. The rind is natural and edible and is largely responsible for the maturation of this aged cheese. Neu Del Cadi is aged for up to 30 days.
