GENERAL MANAGER MESSAGE

I hope that everyone has had a spectacular month. Here at Black Diamond, we are continuing our efforts in providing you with the best possible service in all of our departments. I would like to take this time to personally invite you to join us at some of our upcoming events.

Trivia Night will be held at 6:30 PM on Thursday, February 2nd We also host a Trivia dinner before Trivia begins Reservations start at 5:30 PM and feature a dinner special expertly selected especially for Trivia Night

Happy Hour is held at the clubhouse every Friday evening from 5:00-6:00 PM

Please join us for the 2023 Sweetheart Tournament on February 12th with a 10:00 AM Shotgun. Our Valentine's Day Dinner and Dance will be on February 14th from 5:30 PM to 9:30 PM.

Turkey Dinner will be held on February 24th from 5:30 PM to 6:30 PM. Come enjoy a Thanksgivingstyle feast!

Although February is the shortest month on the Calendar, we have a full slate of golf-related activities for you to enjoy! I have listed the upcoming events below, and as always if you have any questions or wish more detailed information on these events, please contact the Golf Shop (352-746-3446) and it will be our pleasure to assist you. 2023 Eclectic Tournament

February 4th & 5th / 9:30 Shotgun both days

Format: Two-Person Team Ringer Event over 36-Holes MenChoice of Tees, Ladies-Silver Tees Quarry Course (both days)

Entry Fee: $20 Cash per person

Sweetheart Tournament

Sunday, February 12th / 10:00 Shotgun

Teams: Foursome Teams consisting of (2) Member Couples

Format: 2 Best-Balls of the Foursome (Better Ball of Each Couple added together) Ranch Course

We live in Toronto and golf in Georgia in the off-season As it was getting too cool there for our taste, we decided to try Florida We googled the top 10 courses to play in Florida and Black Diamond Ranch intrigued us We booked a Stay and Play and needless to say, we fell in love with the courses and practice facilities. Also, we couldn’t help but notice the very friendly and welcoming staff and membership We have 2 children and 3 young grandchildren and a full life in Toronto. We look forward to coming to BDR in the winter.

Ingredients Needed:

2 teaspoons of olive oil

1 pound boneless skinless chicken breast (cut into 1-inch pieces)

Salt and pepper to taste

1 diced red bell pepper

15 oz pineapple chunks (juice and fruit separated)

1/3 cup of chicken broth

1/4 cup of soy sauce

2 tablespoons of light brown sugar

1 minced garlic clove

1 teaspoon of grated ginger

Green onions for topping

Serves 4 people

30 minutes to cook

HAWAIIAN CHICKEN

Cooking Instructions

In a mixing bowl, add pineapple juice from the can (about 1 cup), 1/3 cup of chicken broth, 1/4 cup of soy sauce, 2 tablespoons of brown sugar, 1 minced garlic clove, and 1 teaspoon of grated ginger If you like your food a bit spicy, you can add 1/4 teaspoon of red pepper flakes Mix it together and set it aside

Preheat a large skillet over medium heat and add 2 teaspoons of olive oil

Add 1 pound of chicken breasts cut into 1-inch pieces and season them with salt and pepper Sear it for about 8 minutes, stirring occasionally, until the chicken is almost cooked through

Add diced red bell pepper and cook for another 3-4 minutes until it is softened.

Add pineapple chunks and cook for another 3-4 minutes. Add the sauce mixture to the pan, stir everything and let it simmer for about 5 minutes

Mix 1 tablespoon of cornstarch with 2 tablespoons of water Add the slurry gradually to the pan, until the sauce thickens to the desired consistency Cook for a couple of more minutes

Sprinkle with sesame seeds and chopped green onions before serving

The potential of frost delay is still a possibility and not uncommon through February We are communicating with the Golf Shop so they have the most up-to-date information on the delay

If we can all do our part to continue to minimize the cart traffic in the rough this winter we will see improved playability and not bare or thin areas caused by compacted soil and excessive wear With the courses in a dormant state, please do your part in making sure we are driving in the short grass as much as possible Limiting the traffic in the rough will enhance playability in the spring and summer

A Chipco Choice insecticide targeting moles and crickets is scheduled for the beginning of February The courses will be closed temporarily during the application process on consecutive days During these course closures, we will also be applying granular pre-emergent herbicide to all areas, the shortgrass and rough We will provide more information for you through the Golf Shop as these dates approach
