POP tennis is continuing to grow every Thursday. Meet at the courts at 3:30 on Thursday to play with us and find out with this fun game is all about. We provide the paddles, you just show up and we’ll get you started. All levels welcome!

Creamy Tomato Basil Soup. Perfect for warming up on chilly days!
Ingredients
2 tablespoons olive oil
1 onion, chopped
2 garlic cloves, minced
1 can (28 oz) crushed tomatoes
2 cups vegetable broth
1 cup heavy cream (or coconut milk for a dairyfree option)
1 teaspoon dried basil (or a handful of fresh basil)
Salt and pepper to taste
Optional: Crusty bread for serving
Instructions
Blend the Soup: Use an immersion blender (or transfer to a blender in batches) to puree the soup until smooth.
Sauté the Aromatics: In a large pot, heat olive oil over medium heat Add the chopped onion and cook until soft, about 5 minutes Stir in the garlic and cook for another minute.
Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Bring to a simmer and let it cook for about 15 minutes.
Stir in Cream and Basil: Return the soup to low heat, add the heavy cream, and stir in the dried or fresh basil. Season with salt and pepper. Serve: Ladle the soup into bowls and serve with crusty bread for dipping
