GENERAL MANAGER MESSAGE

Hello Members, Thanksgiving is about family, so gather your family and celebrate together at the club! We will do all the cooking so you can sit back and focus on one another as you share memories and spend time together. This Thanksgiving feast features savory and delectable selections, all expertly prepared by Chef Shaan and his team. We will be finalizing our CTCC Tournament Schedule for events for 2023 in the next few weeks. Please contact Michael Carbaugh to discuss any new events for 2023. Our country club Membership approval process always begins with a referral. Our philosophy of “Member by Invitation” allows another Member to refer potential Members. Please contact Grant Gilbert, Membership Director, about our Referral Rewards program at CTCC.

Golfingly yours, Raymond Reyes, GM

Play For Pink

The ladies of Carolina Trace Country Club joined together for the annual Breast Cancer Support golf tournament on Tuesday, October 4, 2022. About 50 ladies from the Women’s Golf Association, the Nine Hole Women’s Golf Association, the Ladies Beginner Golf Group and guests played together in this charity event. A total of $4,332 was raised through entry fees, sales of honorary and memorial flags, and many cookie sales throughout the year. $2,351 will be donated to “Play for Pink” and $1,981 will be donated to the Central Carolina Hospital Auxiliary Breast Cancer Comfort Care Fund.

Play for Pink’s mission is to raise money through sporting and lifestyle events and 100% of its proceeds is donated to the Breast Cancer Research Foundation. The research is continually working to improve breast cancer treatments and survivorship.

The CCH Auxiliary Breast Cancer Comfort Care Fund provides assistance to any breast cancer patient in the community with comfort items and screening not covered by insurance.

As usual, the ladies dressed in pink for our round of golf. Afterwards we enjoyed a nice luncheon and many went home with door prizes. Pink water flowed from the fountain in front of the clubhouse and the 1ST person to sink their putt on a green got a specially decorated rock. Our thanks go to the members of the organizing committee: Maureen Travis, Jacqui Danek, Sara Napier, Carol Schock, Louis Spofford, Carol Abbey, Bernadette Russel and Lisa Robert.

Thanks also to all the ladies who baked and worked the many cookie sales throughout the season. This event was made even more special through the efforts of the pro shop, golf course, and restaurant staff. The committee would also like to recognize the following for their contributions:

Ray Reyes, CTCC General Manager for special golf balls and markers.

Coach Andre Panet, Triangle Golf Association for donating golf lessons.

Brian Lenski, who kept the water in the fountain a beautiful pink.

Jerry Merritt, who contributed special pink soaps for door prizes.

Patti Bokhoven and Penny Fogg, for custom made biscotti.

Southern Charm, for donating a beautiful gift basket.

Barbara Berman, for donating three handmade purses.

We look forward to an even bigger event next year!

PRO SHOPGOLF NEWS & TIPS

The Fall months in North Carolina bring some of the most beautiful opportunities to play golf in near optimal conditions With these conditions come increased member and guest play on both courses Increased play brings with it a multitude of adverse effects on both our playing enjoyment and the conditioning of our courses As conscientious and respectful members we can take proactive measures to make everyone's experience at Carolina Trace a more positive one The first thing that we can all do is to adhere to our posted cart path rules The ninety degree cart path rule means that we follow the cart path until we reach the point that our ball is in the fairway. At that point, we enter the fairway at a ninety degree angle and remain in the fairway until we approach the green. Additionally, no one should ever park their golf cart closer than 35 feet to a green. The second thing that we all can do is to be mindful of filling in our divots on the fairway and repairing our ball marks on the greens. It's good practice to quickly look around and see if there is an extra divot to fill or ball mark to repair. Lastly, no one likes a 5 hour round. The pace of play should be between 4 and 4 ½ hours on either course. This is easily achievable if we all play ready golf and limit our search or retrieval of lost golf balls to less than 3 minutes. One of my goals for the next year is to speed up play. As is the case, if you encounter slow play or bad behavior by a member or guest, I want to hear about it as soon as possible. If I am able, I will seek to remedy the situation immediately. If not, I will address it promptly. Let's make Carolina Trace an even more amazing place to play golf!

MGA NEWS

The Men’s Golf Association is nearing the year end. Our next event is the Annual Dinner where we recognize and celebrate our year. The dinner is November 4th and is open to all MGA members but they need to sign up no later than October 28th.

We have plans to revise our schedule for next year and hope to be able to attract more Members who work by scheduling more Saturday events. We are also going to move our Major events to the Spring and Fall so as to help to avoid the hot summer for the more strenuous events.

We hope that Club Members will consider joining the MGA and participate in the events.

Regards, Ken Harden

MEMBERSPOTLIGHT-THESTEPANIKS

Our member spotlights this month goes out to Gerald and Diane Stepanik who are two of our golf members that almost everyone Carolina Trace has had the pleasure to meet, and we are so grateful to have them at our facility!

They moved from Washington D C and joined the country club shortly after the fire incident at the old clubhouse in 2008

A fun fact about Mr Stepanik, is he has made 2 holes in one this year!

One on lake #15 and the other on creek #3 To put this into perspective the average odds of making a hole in 1 are 12,500 to 1!

They are both avid golfers and Mr Stepanik has been taking lessons with our director of instruction Andre Panet Raymond where they have been working on his balance and getting more on his heels during the golf swing

GARLIC HERB BUTTER ROAST TURKEY

How to cook a perfect Roast Turkey without brining this holiday season! Moist and succulent turkey slathered with a garlic herb butter then oven roasted to get the most perfect, juicy meat and golden brown skin!

Prep Time: 15 mins

Cook Time: 3 hrs

Total Time: 3 hrs 15 mins

Servings: 8 people

Calories: 703 kcal

Ingredients

Roast Turkey

12 pound (6 kg) whole turkey, skin on (fully defrosted, washed, giblets and neck removed)

3 heads garlic cut in half horizontally divided

3 slices lemon divided

6 sprigs thyme divided

6 sprigs rosemary divided

1/2 cup olive oil divided

Herb Butter

4 ounces (125 g) unsalted butter

1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme

4 teaspoons minced garlic

Salt

Cracked Pepper

Preheat oven to 425°F | 220°C for standard ovens, or 390°F | 200°C for fan forced. Lower oven shelf to the lowest part of your oven.

Combine the Herb Butter ingredients in a bowl and mix well. Reserve half of the herb butter in the refrigerator for later.

Line a large roasting pan with foil or parchment paper

Arrange the 4 halves of garlic cut side down on the bottom of the pan with 4 sprigs each of thyme and rosemary, half of the olive oil and 1 slice of lemon

Thoroughly pat turkey dry with paper towels Stuff with the remaining heads garlic halves, lemon slice, a squeeze of lemon from remaining slice, herbs and a drizzle of olive oil

Melt the butter and rub all over the turkey, including under the skin Season generously all over with salt and pepper Place turkey on top of the garlic and herbs in the pan BREAST SIDE DOWN Drizzle with the remaining oil

Roast uncovered for 30 minutes for a small turkey under 13 pounds (6 1/2 kg), or 45 minutes for a larger turkey over 14 pounds (7 kg plus)

Turn turkey over (breast side up) with a pair of tongs, a clean tea towel or oven mits (heat proof gloves) and baste with pan juices

Spread half of the reserved herb butter over the top of your turkey with a spoon or brush (be careful, the turkey will be hot and the butter will melt nicely over the skin). Pour any remaining juices over your turkey.

Reduce heat to 325°F |165°C (for standard ovens), or 300°F | 150°C (fan forced). Roast, uncovered, for an hour.

Slather turkey generously with remaining butter and roast for 30 minutes Baste again, then continue roasting for a further 30 minutes or so, depending on the size of your bird *Tent loosely with foil if starting to brown too fast *

(For an extra large turkey, you may need an additional half hour to an hour )

For extra crispy skin, broil (or grill) in the last 5 10 minutes, keeping your eye on it so it doesn't burn, until the skin is crispy and golden browned all over Tent turkey with foil and allow it to rest for 20 30 minutes before carving and serving

Remove 2 1/2 cups of the liquid from the pan juices (top up with stock if you need too), strain and reserve for your gravy

FITNESS COMMUNITY

Hello to a new season from CTCC Fitness! The fall fitness schedule is up and running, with a new class: Low Impact Lift. This is ideal for those who desire resistance training without much stress or strain or need modifications, and it’s great for golfers as it includes: shoulder and hip care, core and balance work! It’s been a joy to see the community committing to personal goals and self care; everyone is striving for something unique. A focus of late has been strengthening the core, which we’re sure to target in each class, especially 30 min Core (T, Th 9:30 am).

According to the CDC, 30 minutes three times a week is the recommendation for movement for adults. Be mindful that more or less is alright, just be safe, have fun and get in some movement. There are many ways to achieve a health, wellness or fitness goal what works for one may not for another. Try out new things and find what works for you!

30 min Movement Ideas:

Go for a walk or hike Yoga Yard work or gardening Clean around the house

Low impact sports: tennis, pickle ball, golf Be active with your kids or grandkids outside or the playground Weight training in the CTCC fitness room CTCC fitness class!
