On the tennis front, fall ALTA season is starting up and of course football season is here as well! Checkout the new football fan gear in the Lifestyles shop. The Chef’s featured recipe is for all you chocolate lovers, enjoy! We continue to maintain the golf course with the necessary maintenance to provide the best playing conditions possible. The course will be closed September 6th and 7th. As always, I would like to extend a warm welcome to all our new members that have recently joined the club and appreciate the continued support of all our current members We hope to see you soon around the club and at all the exciting events planned

Aerification of greens will take place September 6,7,8 We are using the same small coring tines we used in June to minimize healing time and disruption of playability We will be going two directions this time, but this will not change our ability to recover quickly. We will also be interseeding into our aeration holes in areas needed to help some areas recover from summer stress. Aeration of the courses tees, fairways and green surrounds in early August was a success. Thank you again for allowing us to remain closed during this very important agronomic practice. We have already seen the positive impact of this when it comes to course conditions and the ability to get off the cart paths much quicker than normal after rain events This Summer brought many challenges to bentgrass managers in the southeast. We experienced record breaking heat in June followed by very humid and wet conditions in July. Thankfully August brought us an early fall giving us the opportunity to start recovery from Summer earlier then normal. Much of the work we did last year helped us improve turf quality on many greens, while we know we still have work to do on others Tree work completed on 1 and 10 made an immediate impact on not only the greens, but green surrounds as well. We will continue this process of improving air flow and shade issues by carefully selecting what trees to remove around each of the remaining problem greens. We will be starting on 9 and concentrating on the area directly behind the green which blocks the flow of the prevailing Summer breeze. We will then move on and assess each green individually to evaluate the need for more tree removal We are currently discussing the possibility of adding fans on several holes as well Cart path work was completed on holes 3,6 and 8. We are prioritizing other holes and discussing the possibility of continuing to improve cart path conditions throughout the rest of the course. We have many exciting events at the club this Fall and we look forward to seeing everyone on the course, Thanks for your continued support!

1 cup Kahlua 1/2 cup sugar 1 egg, lightly beaten 3/4 cup whipping cream, whipped to soft peaks, for garnish

Butter an 8 x 13inch glass loaf pan and dredge it with sugar.

Strain into a warmed pitcher and cover with foil to keep warm. Slice the warm pudding and serve with a pool of the warm Kahlua sauce on one side of the plate and a scoop of coffee gelato (or ice cream) CHOCOLATE BREAD PUDDING

1/4 cup brown sugar, firmly packed

1/4 cup flour

1 teaspoon cinnamon

3/4 cup brown sugar, firmly packed

1 teaspoon vanilla

1/3 cup unsalted butter, cut into 6 pieces

3/4 loaf stale French bread, cut into 1 inch cubes

6 eggs 2 egg yolks

4 ounces unsweetened chocolate

3/4 cup sugar

In the top of a double boiler, melt the butter and then add the Kahlua and sugar Whisk until sugar is dissolved Whisk 1 tablespoon of the Kahlua mixture into the egg to temper it, then return the whole mixture to the double boiler and cook, stirring constantly, over simmering water until slightly thickened.

1 cup pecan halves, toasted and coarsely chopped

Pecan Streusel:

Preheat the oven to 325 degrees In a very large bowl, whisk together thoroughly the eggs, egg yolks, sugar, and vanilla Stir 1/4 cup of this custard mixture into the chocolate to temper it, then add all of the chocolate mixture back into the custard Add the bread cubes to the bowl, toss until they are evenly coated, and let sit in the refrigerator for 20 minutes. Pour into prepared loaf pan and place in a larger pan.

Fill the larger pan with boiling water to come halfway up the sides of the loaf pan. Top with pecan streusel and bake for about 2 hours, until center feels slightly firm. While cooking, make the Kahlua sauce.

Kahlua Sauce:

1 1/2 ounces unsalted butter, cut into tiny bits

Bread Pudding: 6

1/4 teaspoon salt

SERVES

1 1/2 cups cream

In a medium bowl, combine all the ingredients for the pecan streusel and toss together with your fingertips until crumbly and evenly blended Refrigerate until needed

In the top of a double boiler, melt chocolate over simmering water. Add the brown sugar and cream, whisk until smooth and remove from heat. Cool for 10 minutes.

Hopefully your schedules have settled down now that school is back in session. While the kids are in school, take the opportunity to stop by the gym and join one of our group exercise classes. They are free, fun and have great instructors.
