GENERAL MANAGER MESSAGE

Dear Members,

It is hard to believe that many of you will be heading back to your northern homes in the next few weeks We have had a tremendous season at Tarpon Cove with non stop social events to keep everyone busy and enjoying their club

For those of you who will be staying in Florida for the summer we have a steady lineup of entertainment for you to enjoy

As you can see there have been many improvements such as the new furniture in the dining room as well as patio furniture throughout the pool deck The walkway has now been completed by the tennis courts along with new lighting We are closely monitoring the marina rebuild and will keep you update as to the progress of this project

Be sure to join me for donuts and coffee on May 3rd from 9am-10am for a social hour with your fellow members

Thank you for supporting your club at all of the various social events We are all about our members and look forward to seeing you around the club

As our busy season comes to a close we want to thank everyone for participating in the many social events that have taken place at Tarpon Cove over the past few months. The End of Season party was a great success with many wonderful comments about the food and entertainment by the Girls of Motown

You may have noticed some new faces around the club and we ask that you help make all of our newest members of the Tarpon Cove family feel at home and welcome. Membership interest has been very high and numerous tours have been taking place showing what a beautiful club we have.

If you know of anyone that may be interested in membership please let me know and I will be sure to help answer any questions they may have and give them a tour

Looking forward to seeing you around the clubhouse and enjoying all of the wonderful amenities and entertainment Tarpon Cove has to offer.

TENNIS

TENNIS UPDATE

As we approach the end of season, we must thank you all for your patience and support of the new court project. It has been a long, sometimes noisy and dirty process, but we persevered and got it done.I also want to thank Lee for all the hundreds of trips with her wagon back and forth with ice and water to keep us all hydrated through the unusually hot and dry winter. Soon we will have power running back to where the ice machines go, and we can ditch the wagon!

FEATURED RECIPE

AVOCADO CORN RELISH

In this refreshing relish, corn kernels are lightly cooked just to develop their flavor and then mixed with chunks of smoky roasted chiles, luxurious avocado and crunchy sharp scallions Such a relish can easily take the place of a cooked sauce with casual foods like grilled skirt steak or fish This relish can be eaten right off the spoon or with nothing more than tortilla chips

Ingredients:

¾ cup olive oil

4 cups fresh corn kernels (about 5 ears)

1 Tablespoon Sea/Kosher salt

¾ Tablespoon ground black pepper

2 Haas Avocados, peeled and seeded

1 large red bell pepper, cored and seeded

4 poblano chiles, roasted, peeled, and seeded

4 scallions, white and light green parts, thinly sliced on the bias

½ cup red wine vinegar

Directions:

Heat ½ cup of the olive oil in a large skillet over medium heat Saute the corn with the salt and pepper, about 5 minutes Transfer to a large mixing bowl and set aside to cool

Cut the avocados, bell pepper, and roasted poblanos into ¼ inch dice Add to the sauteed corn along with the scallions, red wine vinegar, and remaining ¼ cup olive oil Mix well and let sit 20 to 30 minutes to blend the flavors

Serve at room temperature Corn relish can be stored, lightly covered, in the refrigerator To make 2 to 3 days in advance, mix all ingredients EXCEPT the avocado and store in the refrigerator Add the avocado shortly before serving

To roast the poblano peppers heat oven to 425 degrees and roast 10-15 minutes until the skin is blistered and charred.

Exercise daily

The best part is that even if you aren’t that great at it, doing something will give you a sense of accomplishment and increase your confidence There’s really no excuse for not being active All you need is a pair of comfortable shoes and about 30 minutes a day There are so many benefits to being active, including: Better Sex Increased Energy Improved Mood Improved Mental Health Lower Risk of Heart Disease

Increased Immunity Greater Sex Drive Stronger Bones Stronger Muscles

Eat healthy

Eating healthy is crucial for boosting your metabolism, building strong bones and teeth, and preventing heart disease and many cancers. It’s also essential for maintaining a healthy weight, and for keeping your energy levels up too It can be difficult to know what to eat, especially when you ’ re throwing yourself a party This is why it’s important to have a healthy diet that consists of a variety of fresh produce, wholegrains, lean proteins, and low-fat dairy products. You should also limit your intake of sugary drinks, processed foods, saturated fats, salt, and sugary snacks. There are so many healthy food options that you can choose from, such as: Fresh Fruit Nuts and Seeds Low-Fat Dairy Products Lean Proteins wholegrains

Learn something new

If you think about it, we ’ re all in this thing called life for a reason: to learn, grow, and experience new things There’s no way you ’ re going to be able to do that if you ’ re constantly worried about money and your bills The best way to learn new things and expand your knowledge is by getting inspired by other people and what they’ve achieved. There are so many different ways you can do this. You can watch documentaries, read blogs, attend seminars, or simply listen to what other people have to say The more you do this, the more you’ll realize how much you don’t know and how much there is still to learn This will boost your confidence, give you the ability to understand new concepts, and make you feel more optimistic about the future.
