GUNA YALA GUNA YALA El Archipiélago de Guna Yala -antiguamente San Blas y luego Kuna Yalaestá ubicado en el Caribe panameño. Es una comarca indígena, hogar de la etnia Guna, quienes confeccionan las reconocidas "Molas". Su territorio comprende 360 islas e islotes, sus aguas son totalmente cristalinas y su arena es blanca y fina; la adornan palmeras que ayudan a resguardarse un poco del sol y sus arrecifes fueron calificados por la UNESCO como uno de los mejores conservados en la Costa Biográfica del Atlántico Noreste. Tradicionalmente era recomendable para los turistas llegar a la comarca por aire o por mar; sin embargo, actualmente puede llegar a Guna Yala por carretera. Es importante informarse bien antes de emprender el viaje, e incluso contar con un contacto Guna que lo espere en alguno de los puertos, desde donde podrán llevarlo en bote hasta las paradisiacas islas del archipiélago.

The Guna Yala Archipelago (formerly known as San Blas, and then Kuna Yala) is located in the Panamanian Caribbean. It is an indigenous region, home to the ethnic Guna people, who are recognized for their production of "Molas". Its territory comprises 360 islands and islets, its waters are totally clear and the sand is white and fine. The area is adorned with palm trees that help to shade some of the sun, and UNESCO classified its reefs as one of the best preserved on the Northeast Atlantic Coast. Originally, it was recommended for tourists to reach the region by air or by sea; however, you can now reach Guna Yala by road. It is important to be well informed before embarking on the trip, and to also have a Guna contact point who can meet you at one of the ports. From there, you can take a boat to the archipelago’s paradise-like islands.

BOCAS DEL TORO BOCAS DEL TORO Está conformado por un grupo de nueve islas de gran tamaño, aproximadamente 50 islotes y 200 manglares. Se encuentra ubicado a 493 kilómetros de distancia de la Ciudad de Panamá. La cabecera es Bocas del Toro o Isla Colón, en donde se encuentra el aeropuerto; el vuelo desde la ciudad de Panamá toma 45 minutos con Air Panama. Bocas posee una rica historia que se remonta a 1502, con la llegada de Cristóbal Colón en su cuarto viaje, sigue al convertirse en lugar de descanso de piratas ingleses y luego como un próspero sitio para el comercio del cacao y banano en el siglo XIX, hasta convertirse en el hogar de la primera casa matriz de la United Fruit Company a principios del siglo XX. La exuberante belleza natural de Bocas del Toro lo ha convertido en uno de los destinos más importantes para conocer en Panamá. Sus hermosos paisajes, la gran cantidad de animales en su hábitat natural y el encanto de su gente, son solamente algunas de las razones por las que debemos visitar Bocas. Cada año crece la cantidad de nacionales y extranjeros que desean conocerlo y disfrutar de su entorno. Bocas consists of a group of nine large islands, about 50 islets and 200 mangroves. It is located 493 miles from Panama City. The main island is Bocas del Toro or Isla Colon, where the airport is located. Air Panama flights take 45 minutes from Panama City. Bocas’ history dates back to 1502, with the arrival of Christopher Columbus on his fourth voyage. It later became a resting place for English pirates, and much later thrived as a place for the cocoa and banana trade in the 19th century. In the early 20th century it was headquarters for the United Fruit Company. Bocas del Toro’s lush natural beauty has become one of the most important visitor destinations in Panama. Its beautiful scenery, abundance of animals in their natural habitat and its people’s charm, are just some of the reasons why we should visit Bocas. Each year a growing number of domestic and overseas travelers look to enjoy its surroundings. Its unique features and beautiful beaches have made it a destination in its own right, and have increased the amount of tourists that are making Bocas their final destination on their trip to Panama. 28

ARCHIPIELAGO DE LAS PERLAS LAS PERLAS ARCHIPELAGO

Un tesoro natural de islas verdes, costas arenosas y aguas transparentes se encuentra a sólo 47 kilómetros de la ciudad de Panamá. El Archipiélago de las Perlas está compuesto de más de 220 islas e islotes, de las cuales sólo 90 han sido nombradas. Este archipiélago se dio a conocer en 1513, días después de que Vasco Núñez de Balboa descubriera el “Mar del Sur” u Océano Pacífico. Se dice que Balboa encontró a un grupo de indígenas resplandecientes en perlas, remando naves incrustadas con perlas, que le contaron a éste de las islas y sus magníficas piedras preciosas. Aunque él nunca llegó al archipiélago, las nombró “Las Perlas” y las reclamó para la Corona Española. Como resultado de las anotaciones de Balboa en sus registros y su reporte al Rey de España, rápidamente el Archipiélago se llenó de aventureros y piratas en busca de tesoros. En los siglos posteriores, Las Perlas llegaron a ser un conocido refugio de piratas, no sólo por sus piedras, sino también por sus bahías y ensenadas escondidas. La industria de perlas duró hasta 1938 cuando una marea roja destruyó los criaderos. 30

Entre las principales islas del archipiélago —en cuanto a desarrollo se refiere— están Contadora, Isla San José, Isla del Rey y Pearl Island, esta última con un proyecto de desarrollo privado, con un concepto de exclusividad y respeto por la naturaleza sin precedentes en Panamá. En la actualidad, isla Contadora es la más desarrollada y visitada del archipiélago. Tiene apenas un área de 1.2 kilómetros cuadrados, haciendo que la misma sea fácil de explorar y conocer a pie. Tiene un total de 12 playas, que en su mayoría se encuentran vacías, a excepción de fechas y fiestas importantes. Cuenta con dos hoteles, cuatro “bed & breakfast” y villas para alquilar. Air Panama le ofrece la forma más cómoda y directa de llegar, con vuelos diarios desde la ciudad de Panamá y conexiones. A natural treasure of green islands, sandy shores and clear waters is just 47 kilometers from Panama City. The Pearl Islands is composed of more than 220

islands and islets, of which only 90 have been named. This archipelago was discovered in 1513, days after Vasco Nunez de Balboa discovered the "South Sea" or Pacific Ocean. It is said that Balboa found a group of indigenous people glittering with pearls, rowing ships encrusted with pearls, who told him about the islands and their magnificent gemstones. The latter is being developed as a private and exclusive project that will be sustainable and eco-friendly. This development project is the first of its kind in Panama. Currently, Contadora Island is the most developed and visited in the archipelago. Its land area is only 1.2 square kilometers, making it easy to explore and discover on foot. It has a total of 12 beaches, most of which are empty, with the exception of important dates and holidays. It has two hotels, four Bed & Breakfasts and villas for rent. Air Panama offers the most convenient and direct way to reach the island, with daily flights from Panama City and other connections.

PEDASÍ Y SUS ALREDEDORES PEDASI AND ITS SURROUNDING AREAS Colonizadores españoles llegaron a Pedasí en el siglo XVI, formando una humilde comunidad que vivía de la pesca, la agricultura y la ganadería. Cinco siglos después este pequeño pueblito guarda intacta su arquitectura colonial y memorias de un pasado rico en historia. En sus tierras se han encontrado restos arqueológicos pre-coloniales de 4500 años de antigüedad. En contraste con la apacible vida de pueblo, la exuberante naturaleza se muestra salvaje en sus más de 10 playas e islas poco visitadas. Desde junio hasta noviembre, Isla Iguana es ruta de las ballenas que migran desde el sur en busca de aguas cálidas donde pasar el invierno austral y aparearse; este es uno de los escenarios desde donde puede ver este espectáculo. Más de 200 especies de peces, 10 especies de corales, pelícanos, pájaros bobos y aproximadamente 5 especies de tortugas forman parte

de la biodiversidad que habita el distrito de Pedasí y alrededores. Isla Cañas está localizada en Tonosí, cerca de Pedasí, y es considerada el lugar más importante de anidación de las tortugas marinas del Pacífico en Panamá. El verde de la selva mezclados con el azul del mar han seducido a famosos como Mick Jagger y Mel Gibson quienes acuden a sus playas poco visitadas. Usted puede escoger hospedarse entre lindos hostales hasta lujosos hoteles boutiques. Igualmente podrá disfrutar de una tarde en un café, o degustar los menús de los diferentes restaurantes de comida típica o internacional, recorrer los senderos, o relajarse con un masaje en alguno de los spas.

Spanish colonizers arrived in Pedasi in the 16th century, creating a humble community that lived off of fishing, agriculture and livestock. Five centuries later, this small town keeps its colonial architecture and memories of a rich historical past. Pre-colonial archaeological remains that are over 4500 years old have been found on its land. In contrast to the peaceful lifestyle of its people, nature found here is wild through its more than 10 desolate beaches and islands. From June to November, Isla Iguana is part of the route where whales migrate from the south in search of warmer waters. Here, they will spend the austral winter and also mate. This is a great place to witness this amazing scene. More than 200 species of fish, 10 species of corals, pelicans, penguins

and about 5 species of turtles are part of the biodiversity inhabiting the Pedasi District and its surrounding areas. Isla CaĂąas is located in TonosĂ near Pedasi, and is considered the most important nesting site for sea turtles on Panamaâ&#x20AC;&#x2122;s Pacific coast. Mick Jagger and Mel Gibson have been lured to the areas isolated beaches and the beautiful contrast between the wild jungle and the blue ocean. Accommodations in this area range from cute hostels to luxury boutique hotels. There are many activities available from enjoying an afternoon at a cafe, or sampling menus at different restaurants with typical or international food, walking the trails, or relaxing with a massage at one of the spas. 33

GOLFO DE CHIRIQUÍ CHIRIQUI GULF

El Golfo De Chiriquí, ocupando la zona entre Isla Coiba y la frontera con Costa Rica, siempre ha sido el lado desconocido y sorprendente de la provincia de Chiriquí. El pequeño pueblo de Boca Chica en tierra firme y su muelle está a tan solo veinte minutos de la Interamericana, y es el punto de embarque para paseos y visitas hacia las islas cercanas. En la zona de Boca Chica se encuentran cada vez más opciones de alojamiento, en general son hoteles pequeños con buena atención y para todo tipo de presupuesto. La primera parte del Parque Nacional Marino y la isla grande de Boca Brava se encuentran a sólo 10 minutos de Boca Chica, y puede llegar en una de las frecuentes lanchas manejadas por la amigable gente del pueblo. A 30 minutos comenzará a encontrar las islas más lejanas con sus playas blancas y posibilidades de snorkel. Boca Chica es también punto de embarque para los charters a las Islas Secas y sus excelentes paisajes marinos, otra joya del Golfo de Chiriquí. En todo el golfo hay muchas posibilidades de explorar playas tropicales y en general un clima más seco y tiempo más fiable que la costa caribeña. El Golfo De Chiriquí es también una de las zonas más conocidas para la pesca deportiva en nuestro país, atrayendo a internacionales “fans” que vuelven año tras año para llegar a puntos tan legendarios como Isla Montuosa o Hannibal Bank. The Chiriqui Gulf occupies the area between Coiba Island and the border with Costa Rica. It has always been the unknown and surprising side of Chiriqui Province. The small town of Boca Chica and its dock are just twenty minutes from the Interamerican Highway. It is the embarkation point for walks and visits to nearby islands. There are an increasing number of lodging options in the Boca Chica area. Most options consist of small hotels with good service and a range of prices. The first part of the Marine National Park and the large island of Boca Brava are just 10 minutes from Boca Chica. This area can be reached by many available boats driven frequently by friendly townspeople. After about 30 minutes by boat, you will reach the most distant islands with white sand beaches and snorkeling opportunities. Boca Chica is also an embarkation point for charters to the excellent seascapes of the Secas Islands, another of Chiriqui Gulf’s jewels. Across the Gulf there are many possibilities to explore tropical beaches, and there is generally a drier and more reliable climate than on the Caribbean Coast. The Chiriqui Gulf is also one of the most popular areas for sport fishing in our country, attracting international enthusiasts who return year after year to reach points as legendary as Montuosa Island or Hannibal Bank. 34

CORONADO CORONADO Belleza, playas tropicales, un campo de golf de primera clase, un club ecuestre, y una atmósfera de vacaciones, todo al alcance de sus manos; de eso se trata Coronado, que es la playa más antigua y desarrollada de Panamá. Al tiempo que están las extensas playas, algunas privadas y ostentosas, el principal atractivo de Coronado sigue siendo ofrecer todo lo que necesitan y desean tanto los que van de vacaciones como los residentes de la zona. Una vez allí, el salir de Coronado es opcional; sus mercados, supermercados 24 horas, restaurantes, así como las ferreterías, farmacias, clínica veterinaria y el hospital, eliminan la necesidad de ir a cualquier otro sitio. Está situado a 80 km (50 millas) desde la ciudad de Panamá. Sólo la carretera, con algunos baches, engaña un poco la primera vez que los visitantes llegan; sin embargo, se quedan maravillados de todo lo que pueden encontrar allí. Después de la bulliciosa actividad comercial de la entrada, y tras dos kilómetros, la carretera le lleva hasta la puerta de seguridad del Club Ecuestre, donde tienen lugar internacionales shows de caballos durante el año, que incluyen demostraciones del espectacular paso fino montados por jinetes vestidos de blanco, reminiscencia de la época colonial. Una vez en la puerta de entrada, los jardines y la gloriosa y flamante línea de árboles de las sinuosas calles de Coronado añaden un faz de color y ocultan casas muy diversas; desde enormes villas estilo mediterráneo que uno esperaría encontrar en Grecia o Italia, a las más clásicas que simulan el interior del país, perfectas para pasar el fin de semana. Nuevas torres de condominios continúan apareciendo en la localidad, pero no han alterado el entorno, haciendo presente un ambiente vacacional los 365 días del año. El campo de golf es sede de competiciones anuales y torneos; competidores y espectadores a la vez disfrutan de la belleza del hotel situado allí, que siempre está cubierto de buganvillas.

Coronado, one of the oldest and most developed beach areas; brings beauty, tropical beaches, a first class golf course, an equestrian club and a holiday atmosphere to your fingertips. While some of the vast beaches are private and ostentatious, Coronado’s main attraction continues to be that it offers both residents and visitors everything they could need or want. Once inside Coronado, there is really no reason to leave. It has available markets, 24-hour supermarkets, hardware stores, pharmacies, a veterinary clinic, and a hospital. It is located 80 km (50 miles) from the Panama City. The road, with some bumps, can mislead first-time visitors. Once they arrive, they are often surprised by everything that is available. After the bustling commercial 36

activity found at the entrance, two kilometers down the road takes you to the Equestrian Club security gate. International horse shows are hosted here throughout the year, including demonstrations of the ‘paso fino’ riding style where riders dress in white, reminiscent of the colonial era. After the entrance, the winding streets of Coronado are lined with gardens and glorious and flamboyant trees that add a colorful facade and hide an array of unique houses. Architecture styles range from huge Mediterraneanstyle villas that one would expect to find in Greece or Italy, to the more classic style that simulates the countryside, perfect for a weekend away. New condo towers are popping up in town but have not altered the environment. It has created a 365-day a year holiday atmosphere. The golf course hosts annual competitions and tournaments. Competitors and spectators enjoy the beauty of the hotel which is always covered with bougainvillea.

on expectativas muy altas que superar, este año la ciudad de Madrid recibió una enorme variedad de países, y durante 5 días Fitur se convirtió literalmente en punto de encuentro y vitrina del mundo. La participación de Panamá cada año, ya no es una novedad, pero la inclusión de el Valle de Antón sí que lo fue. Panamá ya es uno de los participantes más esperados por aquellos que han visitado la feria anteriormente; hemos sentado un precedente de alegría y belleza característico de la comunidad latina, pero con la gran novedad este año de la inclusión de un “diablo cucua”, propio del área de Coclé, el cual fue objeto de un centenar de fotos. El hecho de descubrir que el material utilizado para su elaboración no es tela sino corteza de árbol causó fascinación entre los presentes, haciendo volar la imaginación de muchos.

La presencia de la “india dormida” también fue algo totalmente inesperado. Contamos con la participación de una hermosa modelo que yacía dormida sobre una de las mesas, en atuendo de india y manteniéndose inmóvil, creando un ambiente propio de un cuento de hadas. Todos se preguntaban cuál era la razón, y al igual que el diablo cucua, nuestra india dormida en Madrid fue objeto de múltiples fotos y comentarios. La historia de su amor imposible robaba un suspiro a todo aquel que la escuchaba. El Valle de Antón no pudo haber sido representado de mejor manera, y junto a una gran variedad de artesanías en exposición, fue el deleite de todos los visitantes.

Además, con dos polleras, una de gala y otra de labor, nuestra variedad cultural se mostraba día a día. Tampoco podía faltar el sombrero pintao; sin mencionar los trajes estilizados que fueron objeto de la curiosidad de todos los presentes e inevitablemente se les comparaba en todo momento con las polleras. With high expectations in place, this year Madrid received a huge variety of countries. For 5 days, FITUR literally became a meeting point and showcase for the world. Panama's participation each year is no longer a novelty, but this was the first time El Valle de Anton was included. Panama is highly anticipated by participants who have previously visited the fair. We have set a precedent of joy and beauty characteristic of the Latino community. The big news this year was the inclusion of a "diablo cucua" native to the Cocle area. These “devil” costumes are made from the bark of the cucua tree. It was the subject of hundreds of photographs. ay dos caminos para llegar a la cima: uno para subir en auto, y otro a pie. Para hacerlo caminando, debe llegar hasta “Mi Pueblito”, donde puede estacionar su auto. El complejo turístico Mi Pueblito es una reproducción de los asentamientos de las primeras y autóctonas etnias panameñas, y está ubicado en las faldas del Cerro Ancón. Está dividido en tres áreas: Afroantillano, Campesino o Interiorano e Indígena. Una vez dejamos el auto en Mi Pueblito, comenzamos a subir la calle y casi al final, a mano derecha, se nos presenta una escalinata empinada. Tomamos las escaleras y de una vez vemos las primeras vistas del popular barrio El Chorrillo, destruido durante la invasión. Poca gente sabe que su nombre se debe a una vertiente de agua que nacía en las faldas del Cerro Ancón, conocida popularmente como El Chorro. El Chorrillo originalmente se pobló de extranjeros que llegaron al país atraídos por la construcción del Canal de Panamá, muchos de ellos de origen antillano, por ello allí todavía es común encontrar a la venta puestos con el famoso “pescao frito”. Seguimos subiendo las escaleras y cada vez la vista es más amplia, siempre acompañada de vegetación. A cada rato vamos encontrando descansos con bancas, ideales para detenerse y tomar un respiro. No somos los únicos, en todo el trayecto nos cruzamos con un ir y venir de personas caminando a buen ritmo. Después de haber subido 70 peldaños, paramos a disfrutar de la vista del Causeway y del recién inaugurado Museo de la Biodiversidad de Frank Gehry. Como ruido de fondo todavía se siente el bullicio citadino, que con cada escalón se va opacando entre los sonidos de la selva. Después de 97 escalones llegamos a una carretera principal asfaltada, que une la entrada de Quarry Heights (por donde subiría si desea llegar a la cima en auto). Debido a que la calle es muy estrecha, el Cerro Ancón cuenta en este punto con una garita que se comunica con la cima y los 42

carros suben en grupo, una vez que llegan arriba autorizan a bajar otro lote, y así sucesivamente. Ahora podemos decidir si seguiremos el ascenso caminando por la calle, o bien utilizando pequeños atajos a través de la vegetación. Los trillos no están muy claros ni definidos, son sumamente empinados y formados a base de piedras y raíces. No sabría decir si son producto del caminar de la gente o de las corrientes de agua que deben producirse con las lluvias. Todo el entorno ofrece un toque aventurero y de verdadera selva, sin olvidarnos que estamos a 5 minutos de la ciudad. Nos acompaña la humedad constante, el olor de la vegetación; los ruidos de la ciudad van quedando atrás, dejando lugar al cantar de los pájaros y el aletear de los grillos. El objetivo de subir caminando el Cerro Ancón no es el llegar a la cima, sino disfru-

tar la caminata, el aire, y las vistas que ofrece, las que varían a medida que subimos la pendiente. Ahora llegamos a otro conjunto de bancas; la vegetación aquí crea una especie de “V” que al fondo deja vislumbrar el mar en conjunto con Punta Pacífica, la Torre Trump y la nueva isla artificial Ocean Reef. Más a la derecha vemos un conjunto de barquitos o cayucos en el muelle, al lado del Mercado del Marisco. Sin duda, una vista sacada de una postal. Seguimos caminando, y a escasos metros volvemos a pararnos para disfrutar de las primeras vistas del Casco Viejo, bordeado por la tercera etapa de la Cinta Costera. En una siguiente apertura, entre la vegetación, vemos la fila de barcos esperando para cruzar el Canal. Tampoco podemos dejar de lado el mismo Cerro. A nuestras espaldas encontramos una especie de selva “escalonada”, en la cima las palmas y en cascada el resto de vegetación, acompañada de mariposas amarillas, rojas y demás colores; ¿Será que en ejemplos como estos están ambientados los tan citadinos jardines verticales? Seguimos caminando y nos encontramos con el último tramo de escaleras para llegar, los últimos 105 peldaños. Tras media hora de caminata cómoda, ya estamos en la cima, a los pies de la bandera de Panamá, que dicen tiene el tamaño de un campo de béisbol. También podemos encontrar puestos de artesanías y una estatua que le rinde homenaje a la poetisa Amelia Denis de Icaza, quien escribió el poema “Al Cerro Ancón”: “Ya no guardas las huellas de mis pasos / ya no eres mío, idolatrado Ancón, / que ya el destino desató los lazos/ que en tus faldas formó mi corazón…” Pasamos unos momentos en la cima y ya nos disponemos a bajar. Definitivamente la mejor opción fue subir a pie, así disfrutamos del entorno, e incluso de mejores vistas que las que presumiblemente hay en la cima del Cerro. De vuelta en Mi Pueblito puede pasear o descansar, acompañado de un exquisito batido natural -de Guanábana o Melón por ejemplo-, hechos con mimo por una señora bocatoreña tan amable y auténtica como Mi Pueblito.

There are two paths to reach the top: one is for cars and another for walking. To walk up, one should go to "Mi Pueblito", where you can park your car. The tourist area, Mi Pueblito, is a reproduction of the settlements of the first Panamanian indigenous ethnicities and is located on the slopes of Ancon Hill. It is divided into three areas: West Indian, Indigenous and ‘Campesino’ or ‘Interiorano’ (rural, in English). Once we leave the car at Mi Pueblito, we start up the street and near the end, on the right, we are presented with a steep staircase. We take the stairs and immediately see the first glimpses of the popular neighborhood, El Chorrillo, which was destroyed during the invasion. Few people know that its name comes from a spring of water that was born on the slopes of Ancon Hill, popularly known as El Chorro. El Chorrillo was originally populated by foreigners who came to the country attracted by the construction of the Panama Canal. Many of them were of West Indian origin, and it is still common to find stalls selling their famous fried fish. We continue up the stairs and the view continues to widen, always accompanied by vegetation. We come across benches along the way, which are ideal for periodic breaks. We are not the only ones climbing and are passed by a coming and going of people walking. After climbing 70 steps, we stop to enjoy the view of the Causeway and the newly opened Biodiversity Museum designed by Frank Gehry. In the background, we can hear noise from the city that fades with each step, and gives way to the sounds of the jungle. After 97 steps we reach a paved main road linking our path with Quarry Heights (this is where you would go if you want to reach the top by car). Because the street is very narrow, at this point there is a booth that communicates with another at the top. Cars go up and down in groups. Once they arrive, the booth authorizes another group to go, and so on. Now, we can decide whether to continue the ascent walking on the street, or using small paths through the vegetation. The trails are not very clear or defined, are extremely steep, and are formed of stones and roots. It is unclear whether these trails are the product of people walking or by water currents produced by heavy rains. The whole environment offers an adventurous and real jungle feel, without forgetting that we are 5 minutes from the city. We are constantly accompanied by humidity and the smell of vegetation. The city noises are left behind, giving way to birdsong and the flapping of crickets. The purpose of walking up Ancon Hill is not getting to the top, but enjoying the walk, air, and views 44

offers, which change as we climb the slope. We come to another set of benches; vegetation here creates a "V" at the bottom left which allows us a glimpse of the sea in conjunction with Punta Pacifica, Trump Tower and the new artificial island, Ocean Reef. Further to the right we see a group of boats or canoes on the dock next to the Fish Market. Certainly a view taken from a postcard. We keep walking, and a few meters later, we stand back to enjoy the first views of Casco Viejo, bordered by the third stage of the Cinta Costera. In a next opening in the vegetation, we see the row of boats waiting to cross the Canal. We cannot ignore the beauty of the actual hill. Behind us, we find "staggered" jungle, palms overhead and waterfalls of vegetation, accompanied by colorful butterflies. Could it be that vertical gardens used by city dwellers are adapted from these areas? We keep walking and come to the last flight of steps, 105 steps left to reach the top. After half an hour of comfortable walking, we're at the top, at the foot of the flag of Panama, which they say is the size of a baseball field. We can also find craft stalls and a statue that pays tribute to the poet Amelia Denis de Icaza, who wrote the poem "For Cerro Ancon": "You no longer keep the traces of my footsteps / thou art no longer mine, idolized Ancon / destiny already broke the ties / your feet formed in my heart ..." We spend a few moments at the top, and then decide to go down. The best option was definitely walking up and enjoying our surroundings, and even better views than those presumably at the top of the hill. Back at Mi Pueblito, one can walk or rest while sipping on an exquisite natural blended drink, made from soursop or melon for example, and prepared by a lady from the Bocas del Toro Province who is as friendly and authentic as Mi Pueblito.

For a little perspective, the average height of the gates is similar to that of the Panama Viejo Tower. Their weight exceeds up to four times that of the gates of the actual locks. Propelled modular tugboats are used to transfer each gate to its position. These consist of multiple vehicle platforms with more than 400 wheels each. 52

That which they failed to find, was built in a workshop using Florida pine wood (aged 80 years), rescued from the rafters of the old US Army barracks on the Atlantic side of the Canal.

El equipo curatorial del MAC ofrece con esta contextualización un recorrido por el arte latinoamericano del siglo XX a través de una selección de las obras emblemáticas de la colección del MAC Panamá. Se incluyen 55 piezas, entre pinturas, dibujos y grabados de destacados artistas latinoamericanos, como Wifredo Lam, Guayasamín, Omar Rayo, Celis Pérez o Antonio Alvarado, entre otros grandes nombres. La exposición se divide en siete tendencias y temas: las tenencias abstractas, concretas y ópticas en la planta baja; una sala de la obra sobre papel y un conjunto de pinturas desde los años 30 hasta la actualidad reflejando las variantes de las modernidades y las vanguardias latinoamericanas en temas comunes: figura humana, naturaleza muerta y paisajes. With this contextualization, the MAC curatorial team offers a tour of Latin American 20th century art through a selection of iconic works from the MAC Panama collection. Escuchar una de sus conferencias fue una gran oportunidad, de la cual nos queda claro que Ferrán Adríá es un apasionado de su profesión.

¿Cómo definiría su papel en Panamá? Mi papel es dejar plantadas unas semillas y que el país recoja el fruto. En 2011 fuimos a Perú a rodar un documental sobre su cocina; ocho meses después estábamos en la ONU, en Nueva York, poniendo a Perú y a su cocina en el mundo. En el caso de Panamá también nos gustaría que estas semillas se aprovecharan. ¿Qué es la gastronomía para Ferrán Adriá? Para empezar, la gastronomía no es el lujo, estrellas Michelín, sino que puede encontrarse en cualquier lugar, en un aeropuerto, en su casa. En cuanto a su importancia, la gastronomía llega a significar que por ejemplo, de los turistas que visitan España, 7 millones simplemente buscan la comida española. Para hacernos una idea, me comentaban que a Panamá están llegando 2 millones de turistas; la gastronomía puede significar escalar de estos 2 millones a ocho millones en cinco años, como le va a pasar a Perú. ¿Qué papel tiene la educación dentro del sector alimentación, y viceversa? El mundo de la gastronomía no cuenta con un duro (dinero) público. Si un chico de Panamá quiere ir a estudiar cocina a Europa, no tiene becas. Pero es que también pasa en España, país que ha estado a la vanguardia de la cocina durante

años; tampoco existen estas becas. Cuando hablamos del sector económico de un país, vemos que se invierte mucho en otros campos, no así en gastronomía, por lo que aún hay un gran potencial por desarrollar. También se invierte mucho dinero en prevención de enfermedades como la obesidad y otras. Así seguirá siendo mientras la alimentación y la salud no sean asignatura obligatoria en la escuela. Es fundamental que los niños aprendan desde pequeños a comer bien, a hacer ejercicio, a conocer los alimentos. Hay muchos cocineros en el mundo que están ayudando a desarrollar este papel. Háblenos del Bulli. ¿Qué les llevó a ser un restaurante único? El Bulli estuvo abierto durante 50 años, hasta el 2011. Se trata del lugar del mundo del que más se hablaba y el que menos gente conocía, después de Marte. Y esto ha generado una infinidad de mitos sobre El Bulli. Lo que hacíamos era simplemente preguntarnos el “por qué de las cosas” y hallar la respuesta. Esto es la innovación. Imagínate un lugar que está en la Costa Brava y que para cenar tienes que reservar con un año de antelación. Cuando llegas te traen pan con mantequilla, como en el 99,99% de los restaurantes. ¿Tú crees que vas a hacer el esfuerzo de ir hasta la Costa Brava a comer pan con mantequilla?, pues esto es lo que hacían durante años los restaurantes gastronómicos. Pero qué hay de creativo o innovador en el pan con mantequilla. Para responder las preguntas hay que ser valientes y hacerlo, porque cuando la gente llegaba preguntaba “¿y el pan con mantequilla?”. Cosas tan sencillas como ésta, observar, ver, es lo que hacíamos. Al principio, en el Bulli, yo salía al comedor y preguntaba a los comensales; uno te decía que algo es-

taba perfecto y otro te decía que le pondría un punto de esto o aquello. Entonces me iba casa cada noche pensando. Por ello empezamos a crear un punto de objetividad; por ejemplo, el agua es algo objetivo, ahora si te gusta el agua o no, es subjetivo. ¿Qué se entiende por innovación en la cocina? El primer taller de cocina se hizo en el Bulli, en el 98. Somos la única empresa que durante 25 años cada año cambiaba todo; para ello el Bulli cerraba 6 meses al año. El 24% de su facturación estaba destinada a I+D. La gente quiere innovar sin invertir dinero ni tiempo, pero milagros no hay. Para lograr innovación al máximo nivel, tiene que haber auto presión. Otro concepto muy errado es pensar que para ser creativo debe existir la anarquía en el trabajo, un concepto etéreo de la creatividad; sin embargo, no he conocido a ninguna persona desordenada que opere en el máximo nivel de su profesión –y he tenido oportunidad o la suerte de trabajar con algunos de los mejores en diferentes campos-. ¿Por qué cerró el Bulli como restaurante? Lo cerramos para que continuara. El 80% de las PYMES solo duran 12 años; entonces, cómo te mantienes haciendo vanguardia e innovación 30 o 40 años. Además está el efecto tsunami que consiste en que si no te transformas o preparas mucho antes de que lleguen los problemas, no te dará tiempo. El Bulli cerró para transformarse. Fue una decisión compleja y valiente pero sabíamos que si no lo hacíamos podríamos aguantar hasta 2015 ó 2017 y después qué. Entonces anunciamos la transformación tomándonos tres años para aprender, reciclarnos y poco a poco ir construyendo el nuevo proyecto que se convirtió en una fundación.

FERRÁN ADRIÁ ¿Cuáles son las claves para mantener la motivación? En el Bulli siempre ha sido importante formar a las personas en valores humanos. Es decir, que “se puede ser ambicioso sin ser cabrón”. Si te vas a casa y duermes bien por las noches, es que eres feliz; entendiendo que la felicidad no es el “Happy”. En el Bulli teníamos una premisa: no busques el éxito, busca la felicidad. Es importante mantener la motivación. Como anécdota, en el Bulli nunca hicimos una fiesta. El Bulli logró todos los premios que pudiéramos soñar, pero nunca hicimos una fiesta porque nosotros no buscábamos los premios; los premios eran una consecuencia y nos encantaba conseguirlos. La única fiesta fue la que hicimos el último día, un homenaje a todos los “Stagers” que pasaron por El Bulli, más de 2000. Lo que hicimos fue buscar a aquellos, que como ellos fueron Stagers en El Bulli y que hoy estaban en otros restaurantes; y cuando lo hicimos nos encontramos con que el número 1, el 2, el 3, el 4, el 6 de los chefs más influyentes del mundo habían sido Stagers en El Bulli. La Fuerza de El Bulli no era Ferrán Adria, sino estas 2000 personas que hoy están por el mundo, educando a otras. Besides being a Harvard professor, he is considered one of the century’s 100 most influential and relevant people, according to Time Magazine. Listening to one of his lectures was a great opportunity, which cemented Ferran Adria’s passion for his profession. How would you define your role in Panama? My role is to plant some seeds and let the country collect the fruit. In 2011, we went to Peru to shoot a documentary about its cuisine. Eight months later, we were at the UN in New York, introducing Peru and its cuisine to the world. In the case of Panama, we would also like for the most benefit to be reaped from these seeds. What is cuisine to Ferran Adria? For starters, cuisine is not luxury, Michelin stars, but can be anywhere, at an airport, at home. In terms of importance, gastronomy comes to mean, for example, that of the tourists visiting Spain, 7 million seek out Spanish food. To put things into perspective, someone commented that about 2 million tourists are coming to Panama; gastronomy can mean climbing from these two million to eight million over the next five years, as will happen in Peru. 70

What role does education play within the food sector, and vice versa? The world of gastronomy does not have a public drive (money). If a kid from Panama wants to study European cooking, there are no scholarships. But it also happens in Spain, a country that has been at the forefront of cuisine for years; there are also no scholarships. When discussing the economic sector of a country, we see a lot invested in other fields, but not in food, so there is still great potential to develop. A lot of money is invested in disease prevention such as obesity and others. That issue will continue as long as food and health are not mandatory subjects in school. It is essential that children learn from a young age how to eat well, exercise, and about food awareness. There are many cooks in the world who are helping to develop this role. Let’s talk about El Bulli. How did it become such a unique restaurant? El Bulli was open for 50 years, until 2011. It’s a place that the whole world talked about but even fewer knew about, like Mars. This has generated countless myths about El Bulli. We simply asked ourselves the “why” of things, and then tried to find an answer. That’s innovation. Imagine a place on Catalonia’s Costa Brava, and you have to book a dinner reservation a year in advance. When you arrive, they bring you bread and butter, as 99.99% of the restaurants do. Do you think you're going to make the effort to go to Costa Brava to eat bread with butter? For years, this is what gastronomic restaurants were doing. There is nothing creative or innovative in bread with butter. To answer questions you have to be brave and do it, because people came asking, "where is the bread and butter?” We did simple things like observe and watch. At first, in El Bulli, I would go through the dining room and inquire with the diners; one would tell you something was perfect and another would say that they would add a pinch of this or that. Then I would go home every night thinking. Therefore, we started to create a point of objectivity; for example, water is something objective, if you like water or not is subjective. What do you mean by innovation in the kitchen? The first cooking workshop was held at El Bulli in 98. We are the only company that for 25 years changed everything on a yearly basis. In order to do that, El Bulli closed for six months a year. 24% of revenue was spent on R & D. People want

to innovate without investing money or time, but miracles don’t exist. To achieve innovation at the highest level, you have to put pressure on yourself. Another erroneous concept is to think that to be creative you must have anarchy at work, an ethereal concept of creativity. However, I have not met any unorganized person operating at the top of their game, and I've had the chance or luck to work with some of the best in different fields.

Why did El Bulli close as a restaurant? We closed, so that it could continue. 80% of SMEs only last 12 years; then how do you continue at the vanguard and innovative for 30 or 40 years. Then there is the tsunami effect that if you do not transform or prepare for problems with enough anticipation, then you won’t have enough time. El Bulli closed, so that it could transform. It was a complex and courageous decision, but we knew that if we didn’t do it, we could hold out until 2015 or 2017, and then what. Then we announced the transformation that took us three years to learn, to recycle and slowly start building the new project that became a foundation. What are the keys to staying motivated? In El Bulli it has always been important to train people in human values. That is, "you may be ambitious without being a bastard". If you go home and sleep well at night, you're happy; keeping in mind that happiness is not the "Happy". El Bulli had a premise: don’t look for success, seek happiness. It is important to maintain motivation. On a side note, we never had a party at El Bulli. El Bulli won all the awards we could have ever dreamed of, but we never had a party because we were not looking for accolades. The awards were a consequence, and we loved to receive them. The only party we had was on the last day. We paid tribute to all the "Stagers" who had passed through El Bulli, over 2000. What we did was look for those, who like them, were Stagers at El Bulli and were now at other restaurants. What we found was that the number 1, 2, 3, 4, 6 of the most influential chefs in the world had been Stagers in El Bulli. El Bulli’s force was not Ferran Adria, but these 2000 people who are all over the world, educating others.

El pasado 12 de enero se inauguró oficialmente la duodécima edición del Panamá Jazz Festival, con el apoyo de la Honorable Señora Lorena Castillo de Varela, Primera Dama de la República de Panamá. Más de 500 personas asistieron a la conferencia de apertura del PJF 2015, evento que ha reunido importantes personalidades que promueven la cultura, música y artes en Panamá y el mundo. Así lo dejó claro su Excelencia Jesús Sierra, Ministro de la Autoridad de Turismo de Panamá, al dirigirse al Profesor Danilo Perez, “gracias por colocarnos en el circuito mundial del Jazz”.

The twelfth edition of the Panama Jazz Festival (PJF) officially opened on January 12th with the support of the Honorable Lady Lorena Castillo de Varela, First Lady of the Republic of Panama. Over 500 people attended the opening ceremonies of the 2015 PJF, an event that brought together important personalities promoting culture, music and arts in Panama and the world. This was made clear through His Excellency Jesus Sierra, Minister of the Tourism Authority of Panama, while saying to Professor Danilo Perez, "thanks for putting us on the Jazz world circuit".

Este año, las personalidades del Panamá Jazz Festival desfilaron por la alfombra roja durante la Gran Gala, la noche del miércoles 14 de enero en el Teatro Nacional. La Excelentísima Vicepresidenta y Canciller de la República de Panamá, la señora Isabel Saint Malo de Alvarado procedió al nombramiento oficial como Embajadores Culturales a Omar Alfanno y Danilo Pérez, calificando a Alfanno como “impulsor en beneficio de la niñez y la juventud panameña” y a Danilo como un “panameño excepcional, símbolo de superación, quien utiliza la fuerza de la música para transformar positivamente la sociedad”.

This year, the Panama Jazz Festival celebrities paraded down the red carpet at the National Theater during the Great Gala, held Wednesday, January 14th. The Vice President and Chancellor of the Republic of Panama, Her Excellency Isabel Saint Malo de Alvarado, officially appointed Omar Alfanno and Danilo Perez as Cultural Ambassadors. She described Alfanno as "the drive to benefit Panamanian children and youth" and Danilo as an "exceptional Panamanian, symbol of excellence, who uses the power of music to positively transform society."

1 tbsp. soy sauce ¼ tsp. hot sauce (or more, depending on taste) 1 tsp. onion powder 1 tsp. garlic powder 1 tsp. salt 1 tsp. pepper 3 tbsp. Cornstarch dissolved in cold water

WINGS 20-25 wings 1 cup olive oil 1/3 cup lime juice 2 tbsp. crushed culantro (4-5 leaves) 1 tsp. salt

1 tsp. pepper ½ cup corn starch or flour 1 tsp. salt 1 tsp. onion powder 1 tsp. garlic powder

PROCEDIMIENTO SALSA La salsa se puede preparar con antelación. Hervir 2 tazas de agua. Enjuague las flores de saril, y agréguelas al agua hirviendo. Baje el fuego y cocine a fuego lento durante aproximadamente 5 minutos. Retire la olla del fuego y poner a un lado. Permita que las flores reposen durante 3 ó 4 horas. Escurra el líquido y deseche las flores. Devuelva el líquido a la olla a fuego medio y agregue el resto de los ingredientes. Revuelva constantemente hasta que espese; deje enfriar. ALITAS Prepare una bandeja para hornear, cúbrala con papel de aluminio y rocíela bien con aceite. Corte las alas en las articulaciones de charnela. Mezcle las alas con el aceite, jugo de limón, culantro, sal y pimienta. Deje marinar en el refrigerador durante 45 minutos. Mezcle el almidón de maíz o harina en una bolsa con la cebolla en polvo, el ajo en polvo, jengibre, pimienta roja y la sal. Mezcle las alas en la bolsa. Colóquelas en la bandeja de hornear y refrigere 1 hora. Reserve ½ taza de salsa preparada. Refrigere las alitas en la salsa restante, luego regréselas a la bandeja para hornear y hornéelas por 30 min. o hasta que estén bien cocidas. La salsa reservada se puede utilizar para remojar las alitas. Esta salsa también se puede usar con puerco. ¡Disfrute!

PROCEDURE SAUCE Sauce can be prepared in advance. Boil 2 cups of water. Rinse saril flowers, and add them to boiling water. Lower the heat and simmer for approx. 5 minutes. Remove from heat and set aside. Allow the flowers to steep for 3-4 hours. Drain the liquid and discard the flowers. Return the liquid to the sauce pan on medium heat, and add the rest of the ingredients. Stir constantly until sauce thickens, let cool. WINGS Prepare a baking sheet, line it with aluminum foil and spray well with cooking spray. Cut through the wings at the flapper joints. Mix the wings with the oil, lime juice, culantro, salt and pepper. Allow it to marinate in refrigerator for 45 minutes. Mix the corn starch or flour in a bag with the onion powder, garlic powder, ginger, cayenne pepper and salt. Toss the wings in the bag, arrange them on the baking sheet and refrigerate 1 hour. Reserve ½ cup of prepared sauce. Dip refrigerated wings in remaining sauce, then return to baking sheet and bake 30 min. or until done. The reserved sauce may be used for dipping. This sauce is also delicious with pork. Enjoy!
