I

have a credit to a well-known carpet and flooring store in Brooklyn. I've been holding on to it for years and they have been very gracious about it. Originally I intended to use it to replace the once-beautiful salmon, beige and lemon shaded rug in my entrance hall. The rug was one of the first home purchases we made after we got married in the late 1970's. We bought several items from one of the first antique "ladies" around. Her name was Toby and she had a shop on Coney Island Avenue. Everything in her store was used but in top condition, excellent quality and really beautiful. She was what you would call a "character" and we adored her. Anything I bought from her shop still remains intact and beloved in my home, even after three decades plus of travel and wear. After many years of excellent endurance the rug might be, finally, the one exception and rightly so. About 6' x 10', trimmed in faded off-white fringes, our rug has withstood foot

traffic, shoe and boot stomping, weather beatings and the wheels of many a stroller over its delicate floral and leaf Oriental pattern. Perhaps we misused it and would have gotten many more years enjoying its beauty had we placed it elsewhere in our home but the size was perfect for our entrance hall and I don't regret putting it there at all. So I was going to get a new rug. An easy enough purchase. No major measuring and installation needed. I simply had to choose something that appealed to my taste and went with the rest of my decor. But for some reason I kept procrastinating. I waited so long that once again strollers and baby equipment were being dragged through our house. This time for the grandchildren B"H. Maybe now was not the ideal time to invest in a new entrance rug, I thought, as I studied the many threadbare areas on our rug's surface. So I waited some more.

Epicurean Excursions by Rachel: DINNER AT HOME

W

hile I love eating out, I have to admit my favorite evening is spent cooking up a gourmet feast and entertaining friends at our home. Entertaining at home has the advantage of eliminating the need for both a babysitter and a designated driver, and getting to choose all my favorite dishes to serve my friends. I’m not talking about a Shabbos meal, but a random weeknight, preferably the night before a legal holiday when no one has to work the next day. I like to invite three couples so we are a comfortable eight around my dining room table. I will often choose a theme for the meal such as French, Italian, or “around the world.” I either sit at my kitchen table with my favorite cookbooks or in front of my computer reading recipes on foodnetwork.com and epicurious.com to choose the menu. I keep two sheets of paper in front of me, one for writing down my menu and another for writing down ingredients for my shopping list. Here is a sampling of a dinner I recently prepared. I set the table with silverware, wine glasses, water glasses, seating cards and pretty napkins. I don’t put out any plates because I like to pre-plate everything. I love pretty plating and this way everyone gets to try everything I made. My first course was Mexican ceviche served with homemade tortilla chips. The tortilla chips can either be served in two small bowls on either end of the table or two chips placed in each individual’s ceviche. Tortillas are easy to make and taste best when baked immediately before your guests arrive. I buy a package of small round corn tortillas. About 20 minutes before my guests arrive; I cut the tortilla into quarters, place them on a baking sheet, spray them with cooking spray, sprinkle them with paprika and salt and bake at 350 degrees for 7 minutes. The tortillas are then crispy, hot and begging to be devoured. Ceviche is a great first course because it is prepared the night before or in the morning so it is ready to be dished out into martini glasses and placed on the table before my guests arrive. I use red snapper

fillet or tilapia. The fish is cut into bite size pieces and marinated for 8 hours or overnight in a mixture of lime juice, olive oil, jalapeno, garlic, salt and pepper. I then cut up a red onion, some green onion and an avocado and toss it with the fish immediately before serving. I garnish the glass with some cilantro and a couple of tortilla chips. I love small plates so I will often serve a second appetizer or intermezzo. For a refreshing and easy intermezzo, I buy lemon sorbet, melt it, mix in a little vodka and refreeze. I then scoop out the sorbet into small bowls and serve it with a sprig of mint. For a heavier French themed second appetizer, I often make duck breast salad. I call my butcher two to three days before and ask him to prepare a deboned duck breast. The duck is baked in a sauce of brown sugar and orange juice for 30 minutes on each side at 350 degrees. For the salad I usually mix mesclun lettuce with some yellow peppers, red onions or other colorful vegetables. I dress it very lightly with lemon juice, olive oil, salt and pepper. Depending if this is my only appetizer or a second I will either fill a bowl or sprinkle a small plate with my colorful salad and place 2-3 slices of duck breast crisscrossed on top. For my main course, I recently fulfilled a longtime goal, and made Beef Wellington. My husband is British and while I’ve made my share of Shepherd’s pie, I’ve never made or had Beef Wellington. My guess is the kosher restaurants don’t serve it because the meat typically used is not kosher. For my recipe, I asked my English sisters in law to scour their English kosher cookbooks. The result was incredible. For the beef, I enlisted the help of my butcher to find a gorgeous 2 pound piece of meat that would work well for Beef Wellington. The preparation was fun and not too difficult. I made a mushroom duxelles out of two types of mushrooms saut`eed with onion and spices. I seared the beef on each side and covered it with Dijon mustard. I then took a sheet of puff pastry, spread it with duxelle, placed the beef in the center, wrapped it closed and brushed it with an egg wash.The Wellington cooked for 45 minutes in a 425 degree oven until the pastry had a beautiful golden crisp to it. I cut thick slices of Wellington and the beef was perfectly pink in the center. I served the Wellington with asparagus and colorful potatoes. No one left over any beef on their plate. For dessert, I’ll admit to cheating. I don’t own a mixer and hate the thought of baking. I either order from Chantilly or serve fresh strawberries with nondairy whipped cream.

MIND OVER MATTER:

A Case Study in Home Décor and the Shidduch Crisis By Jennifer Mann, LMSW

M

ia* is a 26 year old single woman who is stuck in the throes of the Shidduch Crisis. She would love to get married, have a family and move on with her life. She worries daily, sometimes numerous times a day, that she is getting older and her age is becoming more and more of a deterrent for men in the dating world. She is an educated professional, makes a good living and has a world of fabulous, single friends, much like her. And still, with her exciting and busy life she feels lonely and isolated, worries constantly and has difficulty sleeping at night because she has not met “The One.” Mia feels hopeless and disoriented, like a leaf tossed about in the aimless wind of the Shidduch Crisis. When I work with a single person who is in therapy because of the overwhelming external pressure to get married or a burning internal desire to get married (often a combination of the two), I ask a short series of initial questions. After getting to know this person, I ask “In your opinion, why are you not married today?” The answers are always varied and unique to the person answering. For some they simply haven’t met Mr. or Ms. Right, whether there was no chemistry or they could not compromise on significant life views and priorities. Some aren’t being set up consistently and some have commitment issues. Singles are encouraged to speak to their parents, friends and Rabbeim when feeling confused about a date or relationship but often leave those conversations feeling despondent. What I hear most frequently is that singles are encouraged to continue dating or even get engaged when significant issues have not been resolved and even when the issue has no resolve. When a single person has hit this brick wall, some turn to a clinical eye for perspective and validation. It was when Mia hit her brick wall that she decided to give me a call. Though my services do not involve delivering Prince Charming, they do include much needed validation, insight into

any baggage that may be sabotaging my client on dates and in relationships and often I provide practical coaching advice and tools. The role I play most is reminding my clients of their worth. Mia spent much of her initial therapy sessions talking about her father. When Mia started dating at nineteen her father would insist upon sprucing up the house whenever a guy would pick her up. What began as cute and thoughtful in Mia’s mind soon entered into the land of overbearing and repulsive. Her father would clean compulsively, buy new vases and chatchkes and often would break the bank to buy larger purchases such was a sofa and new rugs for their apartment. On her parents’ modest salary her father insisted she buy new wardrobes every few months for her dates. It reached the point that Mia did not want to be picked up from her home because of the pressure she felt it put upon her father, and eventually herself. Mia decided, after some time, to invite her father to her therapy sessions. During the visit, he shared how he loves his daughter with all his heart and how much it pains him to see her so unhappy. He was cleaning and purchasing frenetically because he had his own guilt about not providing a lifestyle for his family that in his mind would have made it easier for his daughter to get married in the environment of the present Shidduch Crisis. He noted that young women from affluent families have a much easier time being set up because they are the sought after. In his mind it was only a matter of time before Orthodoxy became an exclusive club for rich people with squeaky clean records. The rest of us he noted would disappear into the abyss, unable to afford school tuition, kosher food and marriage! He makes a good point, I think! He didn’t want his daughter to be embarrassed by their 20 year old sofa and stained rugs. He felt in some way that his poor financial decisions and career moves along the way had impaired his daughter’s ability to find her zivug. With a new understanding of her father’s behaviors Mia began to cry. She told her father that he had given her more important things than a big house or a new sofa. Mia shared that she would cringe at the thought of dating because she knew her father would spend money he didn’t have. This created a tremendous amount of anxiety for her. Though their two sessions did not help Mia find Mr. Right or solve the Shidduch Crisis, it repaired one of the most important relationships in her life. Today, Mia

My thoughts: I wish I could wave a magic wand around this self imposed “Shidduch Crisis.” Our community acknowledges there is a problem, but what we don’t acknowledge is the bigger crisis, which is that members of our single community are suffering from a host of issues, such as anxiety and depression. Many ask “what is wrong with me?” or “what is wrong with the people I am set up with?” And in Mia’s case, and many other families, there are other family members who are suffering as well as a result and questioning their own worth. Who can blame them? It is a natural response to a situation that feels completely out of their control. Singles are made to feel that there is something wrong with what they are doing on dates, or that they are too picky, heavy, dependent etc. etc. While some individuals have unfinished business that may be interfering, for the vast majority it isn’t so. I simply think of married people who are engaging in and have always been engaged in severely dysfunctional, unhealthy behaviors, and they managed to get married. We owe our singles and the future of the Jewish people at large an alternative to the present Shidduch system and its rules and regulations. We are shooting ourselves in the foot. Leaders, Rabbeim and shadchanim, parents and singles must take inventory and ask “Am I contributing to the crisis?” “Is there a red flag that I see that I am willing to speak up about?” There is a lot of “Crazy Making” going on, and I amongst many feel it is unacceptable. I am speaking out from my small corner of the world in my ESRA magazine column asking, no, demanding change for our fabulous singles. There’s nothing wrong with your homes, your families, your weight, your father’s salaries, where your mother bought her Sheitel or your choice of career. But something has become very wrong with our value system. Continued from page 14 One day as I was going up the stairs to our second floor I noticed some white markings in the center of our carpeted staircase. I bent down to brush them off and to my dismay noticed they were not stains but carpet-less areas of our steps worn through by years of trekking up and down the staircase. When had this happened? Why had I never noticed it before? Wow. How had I missed what must have been a gradual eroding of the carpet surface? Suddenly I knew where I was going to allocate my credit. I would need to re-carpet my steps. The new rug would wait. I actually went down to the Brooklyn carpet store and, walking right past the area rugs, headed to the large selection of suitable, durable staircase carpets. The choices were vast and overwhelming. I had four bedrooms situated off the upstairs landing so choosing a carpet that coordinated with them all was not an easy task. I ordered a few samples and waited for them to come before deciding which coloration would work best. Once again the store was gracious and patient. I received my samples quickly and spread them out on my upstairs landing to gather opinions. Unfortunately there were many. Too many. Everyone liked something different and I couldn't choose. I was planning to have the stairs re-carpeted before the high-holidays. You know, a fresh new look for a fresh new year. Once, however, I missed that deadline and the holidays came and went perfectly well with the worn carpet, I lost my momentum. The carpet swatches were relegated to the extra room closet and have not been heard from since. I am not a wishy-washy person and certainly not a procrastinator. Sometimes I might actually choose something too quickly just to be done with it, slash a line through the goal on my list of things to do and move on to the next item. So I really didn't understand my motives, or lack thereof. But just as well. This past summer several of my kitchen floor tiles began picking up, especially and understandably around my kitchen table with the back and forth scraping of the solid oak seats. Suddenly chairs were getting stuck and people were tripping as they left the area. Besides being an eye-sore, the uneven and chipped tiles created a perilous situation. When it was one or two tiles I chose to ignore the newly developed problem but after a few months I realized something needed to be done. And then the light bulb. Aha! That's where I will allocate my credit. Lest you think I am about to repeat the above described scenarios I'll have you know that I have already brought home some kitchen floor samples and even had the floor
