I am not a huge pizza fan. I can take it or leave it most of the time. Even if I loved it, it would feel wrong - a little decadent - to order a pizza for myself when eating out. Recently, though, a cafe in my neighborhood introduced a modified “pizza.” A small, whole-wheat personal pie with a dapple of spinach, goat cheese and grilled portabella mushrooms. No sauce or heavy, oily cheese, no thick-carbohydrate-laden crust. I tell myself it is low-calorie, even healthy. Sometimes I treat myself to the pie as an early dinner after work. Occasionally I’ll order it when eating out with a friend as a special treat. I guess I’ve gotten the pizza enough times that when I come into the said eatery the

lovely woman behind the counter asks me if she should put in the special pizza for me. I’ve never been a “regular” where a store owner knows my name and says, as I walk in, “The usual?” This is as close as I come. It feels good to have someone recognize your face, remember your favorite dish and welcome you with a smile. Since my younger daughter got a job and works twelve hour shifts, I have the pleasure of dropping my granddaughter off at preschool several times a week. I’ve only been doing it for a little over a month but already there is a familiar slew of women - office staff and morot - whom I pass in the hallways as I carry her to her cheerful, second-floor

B eauty Bulletin - The Women in our Lives by: Naomi Scheier The women in our lives: mothers, grandmothers, sisters, daughters, aunts, nieces, cousins, and friends! Where would we be without them? Women often turn to the wonderful women in their lives for advice, tips, a good friend and just plain old fun. A little girl cherishes the memories of playing with her mother’s makeup and walking around in her heels. It is most common for women to turn to those they look up to for beauty tips and model their style, dress, behavior and much more after them. It is our role models who help shape the women we are and want to be. Around this time of year, right after Pesach, many women are focused on losing those extra few pounds. A great way to de-stress and stay in shape is to join a gym. There are plenty of women-only gyms in the area. If you’re not a gym person, chances are you’ll go more often if you have a workout buddy! So grab your mom, sister, or friend and get moving. It is a great way to spend time with each other and you won’t dread it as much because you’re going with someone you love. Also, maintaining a proper diet is key to staying healthy and definitely helps with weight loss. The same goes with going on a diet, if you do it with someone, you’ll be more motivated to continue. It’s always fun to have company. (Be careful not to get too competitive - that’s not the point of dieting together!) Go out to lunch with friends or pick up a coffee and spend time with a loved one. Go to your mom’s house and spend a day in the kitchen, picking up on her culinary mastery or learn some new, healthy recipes together. Spend a day with your aunt, take your kids to visit your grandmother, go walking with a good friend and cherish those moments spent with those who mean so much to you. Among the many things we learn from the women around us is skin, make up and beauty care. Beauty tips are passed down from mother

to daughter, in all generations. Ask your mothers and grandmothers what they did and used to maintain healthy and glowing skin before all the modern day techniques and products arrived on the scene. You’d be surprised to hear that the natural remedies and things that they used work just as well if not better than your typical over-the-counter (and over priced!) products. At the end of the day, it is the great women in our lives who advise, assist, and support us. Take advantage of these special relationships in your life. Try to revive old friendships, re-establish broken current relationships and strengthen friendships. Savor the time with all those who are dear to you - those incredible women in your life.

UPPER CRUST By: Rachel Rosenberg

A

s a wife and mother of three sons, I cherish nights out with the women in my life. I am fortunate to have a very special mom, two vibrant grandmothers, two married sisters, who are my best friends and closest confidantes, a brand-new awesome sister in law, fabulous aunts, cousins and finally, my eclectic and amazing female friends (k”h). The all important question when planning our GNO (girls night out) is where to eat. When dining with men it is almost a foregone conclusion that the restaurant will serve meat. However, with the women in my life, it can be anywhere. Some are on perpetual diets and the restaurant must serve salad or fish, some crave a great chocolate dessert, and some love a glass of wine with their dinner. Upper Crust on Central Avenue in Cedarhurst fills all these needs and more. Upper Crust opened a couple of years ago and unlike many of Central Avenue’s short lived restaurants, it appears to be in it for the long haul. Known for its brick oven Italian pizza, Upper Crust serves up a lot more. The restaurant is warm yet modern with sparklingly clean booths in the front and a few tables in the back. The servers are always friendly and willing to help, although often are overwhelmed and tend to forget about you after they’ve brought your food. On my most recent visit to Upper Crust I ordered my favorite appetizer, the mini cheese calzones. It’s a great appetizer to 54

share, as there are two crispy cheesy calzones, one filled with mushrooms, the other with artichokes. The calzones are served alongside a small dish of warm marinara sauce for dipping your calzone in. We also tried the bruschetta with roasted artichokes which was not as warm and comforting an appetizer. The bruschetta were small garlicky pieces of toast served with a small bowl of cubed mozzarella, artichokes, and tomatoes, flaked with basil. Maybe it is a personal preference, but if I’m splurging calories on bread and cheese, I prefer them to be cooked. For our second course (this is Italian dining so four courses is the way to go), we shared a Mediterranean salad, which is one of my favorite salads in the 5 Towns. The salad can be a meal on its own or shared by two or more. The feta cheese is finely crumbled and evenly distributed over a bed of crunchy romaine, and served with kalamata olives, cucumbers, red onions and tomatoes. The salad is topped with two small toasted crostini with sun dried tomatoes. The dressing is delicious and light, flavored with lemon and fresh herbs. For our main course, pizza of course. Although for the diet conscious, Upper Crust does have a number of healthy fish selections. Every table and booth in the restaurant is set with a wired pizza tray and more are brought out if more than one pizza is ordered. The topping selection includes everything one can want on their pizza, including faux sausage. The pizzas are made to order and while sometimes I’ll just choose one of Upper Crust’s ready to order selections, when sharing we like to get creative. This week we tried a whole wheat crust with half the pie having an assortment of veggies and tofu chicken and the other half with mushrooms, olives and caramelized onions. The tofu chicken had a strange flavor and frankly just didn’t belong on my pizza. The pizza crust, cheese and marinara sauce are always solid. Not the best pizza I’ve ever had but worth eating

You don’t have to spend a fortune to look like a million

every last bite. For dessert I recommend the dulce de leche cake with its sinfully delicious caramel. The tiramissu is light and fluffy and great with a shot of espresso. The warm chocolate cake served with a small scoop of cookies and cream ice cream and a nice sized dollop of whipped cream is the chocolate lover’s dream. The most fun dessert to share is the Nutella pizza, a fullsized pie smothered with the hazelnut

spread. Upper Crust is one of my favorite local spots for a GNO, especially on a week night when everyone finally finishes homework and bedtime routines with their kids and is ready for a late night shared pizza and salad. My rating: 3 stars ★★★ Rachel Rosenberg, a practicing attorney, is known amongst friends and family as an accomplished chef and daring foodie with a critical eye and discerning palate. MIND OVER MATTER: Female Friendship By: Jennifer Mann, LMSW

between visits, she is my “person.” Our lives have taken us in very different directions, but our connection doesn’t seem to mind. We see these intense relationships amongst women exponentially more than amongst men. So what exactly is going on? The research tells us that this need for connection and female community is wired into our DNA. We see this seeking of female friendship across all socioeconomic classes, races and religions. We see it in the animal kingdom! My internet surfing brought me to an interesting article on About.com titled “The Girlfriend Instinct” by Debba Haupert. Ms. Haupert references Shelley Taylor’s book, The Tending Instinct, which focuses on the biology of men and women’s relationships with same sex friends. The findings of her book are very revealing! It seems that married men live longer than single men, but married women have the same life expectancy as single women. It is women who have strongly developed friendships with other women who were found to live longer. Men classically respond to stress with the “fight or flight” response. In other words, when faced with a stressor, a man will either run (i.e., avoid, deny, actually run etc.) or fight, whereas a woman will turn to her friend. It has been found that spending time with friends actually reduces our stress, yielding positive health benefits. Here’s to meeting our friends for lunch! Studies have found that when we girls spend time with friends we release more oxytocin, the hormone that helps us feel good. Having a great conversation, going for a walk, to a movie, meeting for a cup of coffee helps release that feel good oxytocin, reducing stress levels. One study found that 70% of women feel prettier, thereby increasing selfesteem because of their female friendships. On the flip side women lacking friendships are at the same risk for health issues as overweight people and smokers. With all the demands put upon us, no matter the generation or age, it can be difficult to find time to spend with friends…

There is no other relationship like the one you have with your girlfriends. This does not take away from the love we feel for our husbands, children and parents; but make no mistake, female friendships serve and fulfill like no other. With this month’s theme, The Women in Our Lives, I got to thinking about what exactly makes this bond between women so wonderful, so heartwarming and dare I say, nourishing. Many years ago, I was a 13 year old nervous wreck going to high school. The only person I knew was a girl who I hadn’t been in touch with in over a year. In the life of a 13 year old, one year is an eternity and she felt as far away as all the other strangers in my freshman class. I quickly felt like an outcast in my unfashionable sneakers, clothing and hairstyle. I don’t remember how or exactly when but eventually I would meet a friend whom I would fairly immediately note my soul mate. We would laugh like hyenas and support each other through hard times; speak on the phone until all hours of the night. She would understand me in a way no one else had until this very day. She would shower me with compliments, doing wonders for my self-esteem and teach me through her humor not to take seriously the words of high school “mean girls.” For a young teenager, she was wise beyond her years. Years later she would make Aliyah and my world would be destroyed. It felt as though a part of me was leaving with her. When she told me the news I could barely breathe. I felt the wind knocked out of me, and at that point in my life I quite literally did not know how I would move on. Continued from page 70 and unfortunately it is often the first thing to be scratched off the to-do list. I think of the “sandwich generation” taking care of both their aging parents and children and possibly grandchildren. I think of all the mothers out there, whether working in the home or out of the home. I think of all the single women working for a living. I ask myself, when are we women supposed to find the time to spend with our friends? Being that there are tremendous health benefits to spending time with friends, I think we owe it to ourselves to figure it out. Step one is to reframe and reprioritize your goals. If you view spending time with friends as wasteful and selfish you will never do it. If you view it as taking medication or a therapy session, you may reconsider. Step two: Over the next two weeks, take inventory of how you spend your time and log it in a journal. You may notice a pattern beginning to emerge. Perhaps you are free Tuesdays at 7PM for one hour, or maybe your time comes at 8:30 AM when the last one is off to school. Once you’ve located your time slot, Step 3, make a commitment to see a friend. Every week may not be feasible, maybe it will be once a month. Step 4, go and enjoy! By the way, you may have to get creative. Who said food shopping has to be done alone? For some it is not as simple. For a myriad of reasons, studies show that many women do not have close female relationships in adulthood. Perhaps they are from out of town, or simply have not been able to find the time to maintain friendships and have consequently lost touch. Fear not. If you want friends, you will have to make them. Join a community class, go to shiurim, accept lunch invitations, and invite people to your house on Shabbos. Be friendly, friendly, friendly! It seems people can’t resist talking about themselves, so ask questions! When you have found “the one” and are ready to take your friendship to the next level, you can test the waters by sharing something personal. If she shares in return, you may have found yourself a keeper! By the way, please keep in mind 72

that you will probably not find the one “perfect” person who will understand you on every level, as I have learned along the way since high school. And that is OK. You may have a friend with whom you share a spiritual connection, another who you love to shop with, and yet another who shares your interest in parenting practices. Celebrate each woman for her strength and the unique connection you share. I dedicate this column to all of the women in our lives. Those who have passed away. Those who were not meant to be forever friends, but who have taught us tremendous lessons about ourselves and contributed to our growth. To our mothers and mothers-inlaw, grandmothers, sisters, aunts, cousins, daughters and friends. Let’s be kind to each other and less threatened. Let’s share our truth instead of hiding our secrets. From Soup to Nuts: Family Gatherings When the women in our lives get together you can be sure there will be much laughter, lots of warmth and, of course plenty of good food. In Gatherings cookbook, a project of the parents of Netivot HaTorah Day School, you’ll find a vast array of family favorites such as: LEMON PARSNIP SOUP PARVE/MEAT

1 Tbsp oil 2 onions, chopped 2 Tbsp fresh thyme leaves, chopped 1 tsp lemon zest, finely grated 4 cups parsnips, peeled, chopped 2 cups potatoes, peeled, chopped 6 cups chicken or vegetable broth l Tbsp lemon juice 1/2 tsp salt pepper to taste thyme sprigs In a large saucepan, heat oil. Add onion, thyme leaves, and lemon zest. Saute on low heat for 5 minutes, stirring often. Add parsnips and potatoes. Simmer for 10 minutes over medium-low heat, stirring occasionally. Stir in broth. Bring to a boil. Cover. Reduce heat and simmer, stirring occasionally, for 1 hour or until parsnips and potatoes are very soft. Remove from heat. Cool. Transfer soup to a blender, or use a hand blender and blend until smooth. Stir in lemon juice, salt and pepper. Adjust seasonings. Garnish with thyme sprigs before serving. Tip: Lemons provide a tart accent to this soup and in many dishes. Slices, wedges or bits of peel add both flavour and colour to garnishes 90

SALMON LEEK QUICHE DAIRY

This is a quick dinner idea. 1 9-inch-deep dish pie crust, defrosted 2 large leeks, cleaned thoroughly, sliced in half lengthwise, sliced thinly 1 Tbsp butter l (16-oz.) can salmon, drained, and flaked l cup Cheddar cheese, grated 3 eggs 3/4 cup milk salt and pepper to taste Preheat oven to 400ºF. Bake pie shell for 5 minutes. Remove from oven. Cool. Lower oven to 375ºF. In a large skillet, saute leeks in butter until tender. Remove from heat. Set aside. Put the salmon in bottom of pie shell. Add leeks and cheese. In a medium bowl, beat the eggs with the milk, salt and pepper. Pour evenly over mixture in pie shell. Bake for 25-35 minutes, or until set and golden. Let stand 5 minutes, and then serve. SERVINGS: 6-8 | PREP TIME: 15-20 MINUTES TERRA CHIP CHICKEN MEAT

1/2 cup all purpose flour l Tbsp garlic powder 1/2 tsp salt 1/2 tsp pepper 6 chicken breasts, boneless, skinless 1 egg l Tbsp Dijon mustard 1 tsp lemon juice

l tsp lemon and herb spice l (170 g) bag Terra chips, crushed 1/3 cup margarine Preheat oven to 350ยบF. In a small bowl, combine flour, garlic powder, salt and pepper. Dredge chicken breasts in mixture. Set aside. In another small bowl, beat egg, mustard, lemon juice and lemon and herb spice together. Set aside. Place crushed chips in a large bowl. Dip chicken first in egg mixture then in crushed Terra chips. Place chicken breasts in roasting pan. In a small saucepan, melt margarine. Drizzle on top of chicken. Place roasting pan, uncovered, in oven. Bake for 30-45 minutes. Tips: To crush chips and still maintain texture, put them into a sealable plastic bag and use a rolling pin for crushing. For a finer texture, crush chips in a food processor. Terra chips come in a variety of flavours and colours. SERVINGS: 6 | PREP TIME: 15 MINUTES

Add a small amount of water, as needed, to thin the marinade a little (should be a thick sauce consistency). Put roast in a shallow glass dish. Rub marinade over meat. Cover. Refrigerate overnight. Preheat oven to 350ยบF. In an ovenproof dish, arrange strips of meat in a single layer, and cover with marinade. Bake, uncovered, for 20 minutes. Credit cards: they’re both a blessing and a curse in these modern, unsettled times. What would we do without them? And how can we control them rather than have them control us?? What effects do the getting and use of them have on our general lives? MUCH more than you’d expect! And are you mortgaging your future, and possibly your children’s futures, by using them? After mortgage debt and student loan debt, credit card debt is now the 3rd largest block of debt that Americans as a nation carry (approximately 1 TRILLION dollars), and very few Americans are free of credit card debt. The average household credit card debt is now at $15,200, and rising! If you’ve got less than the national average in credit card debt, pat yourself on the back! But not too much of a pat if you’ve still got “too much” Many things in our country are based on our credit scores, and a major component of what makes up our credit scores is CREDIT CARDS, their acquisition and use. Things we might never expect are affected by our credit card use and the debt we accumulate by using them: the rate we pay for our car insurance, whether or not we can get a mortgage to buy a home, whether our children can get into their first choice of college, whether or not we can get the job we apply for, and much more. The debt system is rigged against the consumer, but there are ways of beating the big guys at their own “game”. However, the “game” has to be played carefully and with full awareness of the rules. How do we know the rules? By reading all offers carefully! Every time we apply for credit cards our score goes down, except for the times it goes

up.Why down? Because a major component of the very secret formulas that are used to compute our scores is the amount of potential debt we can accumulate: the more credit cards, the more the potential debt. BUT, there are times when opening a new credit card can help your score to RISE! How can you know when to apply or not apply? Careful guidance is needed. As a nation we’ve crept far enough out of the Great Recession so that the banks are offering “deals” again: deals to transfer balances from one credit card to another, deals for opening a new credit card, deals for switching from a current bank’s credit card to a new bank’s credit card. All of these actions can either help you or hurt you, depending on what your individual current situation is, so before taking any of these actions, consider the ramifications carefully. Of course, the best scenario seems to be to have no credit card debt, but that’s not always the case. That can hurt you almost as badly as out of control debt. However, if your debt is out of control (and you’re the only one who can determine that) there are very simple and effective methods for paying the debt down so that it no longer seems overwhelming or disappears completely. If you’re waking up in the middle of the night with anxiety, going through your days avoiding answering the phone because it may be a bill collector, or using one credit card to pay another credit card payment, your debt is out of control. Period. There are simple rules which you can apply to get yourself out of the mess you’re in. BUT, be aware of any offers to “reduce the amount you owe”. They can cost you many thousands of dollars that you didn’t expect to spend, and get you deeper into debt. The biggest irony of credit card ownership and usage is that, when used correctly, it is the fastest way to boost your credit score into the “Excellent” category which can make many aspects of your life so much easier and less expensive. So, don’t close those accounts and cut up those pieces of plastic! But, do make them work for you rather than you working for them!

My husband recently bought me an iPhone 5s with a fingerprint password. I was really looking forward to this new finger print technology that replaces the password. I constantly mixed up my passwords and was not able to remember all the different ones I had chosen for various applications. So here are some tips to come up with—and remember— complex passwords. Before we begin, we must be clear on one major expectation: there is no such thing as a perfect password. A committed hacker can crack any password, given enough time and the right “dictionary” or “brute force” tools. But just like breaking into a car, if the protection is strong enough, the hacker will become discouraged and commonly give up before the protection fails. 1. Start With a Base Word Phrase. A good password starts with a base word phrase. This means: choose a memorable catchphrase, quotation, or easy-to-remember saying, and take the first letter from each word. Choose a phrase that is memorable to you. This phrase can be the words from a book that you particularly like, words from a song that you remember with ease, a statement that some powerful figure made that you will never forget. The key to a successful password is to create a phrase that is easy for you to remember, but that no one else will ever think of attributing it to you. Examples of some base word phrases: • Can’t See the Forest Through the Trees: cstfttt • If the Shoe Fits, Wear It: itsfwi • You Can Lead a Horse to Water: yclahtw • The Last Mile Is Always Uphill: tlmiau • Personal phrase: “my Birthday Is April(4) Nineteenth Nineteen Seventy One(1)”

When we think about the women in our lives we immediately tend to conjure up images of our moms, our sisters, our daughter and granddaughters, and, of course, our dear friends. And while those are, undoubtedly, the most important women in our lives, there are so many others we encounter in the course of our daily or weekly routine who have a positive and impressionable impact on our lives as well. Perhaps it is the toll lady you wish a good morning to each day as you cross the bridge and head to work. Maybe it’s your plumber’s wife who you have never met but, feel like you know well as, due to the unfortunately aging innards of your home, you speak to on a regular basis.
