My younger daughter and her husband left for a weekí s vacation to the West Coast this evening. She took her last nursing school final today and is, G-d willing, graduating next week. They wanted to get away and with their busy schedules a week was the most they could take. Too few days to travel far, too many to stay local, they thought California was a good compromise. The bonus? Language and food would not be issues. They packed together in one reasonably-sized soft suitcase and brought along a joint carry-on. I marveled at how neat and uncomplicated their travel gear was when my husband drove them to the airport. I hope ití s a great trip. It used to be that when you traveled to 12

Perhaps it was the same to other overseas destinations but we are not such big travelers and ití s been years since weí ve crossed the Atlantic to visit other countries. Two seventy pound bags seems like a lot but somehow when you travel to the Holy Land it is never enough. Going on a trip to Israel is rarely for the purpose of touring only. You are always visiting someone. A son in yeshiva. A daughter in seminary. A married child who has stunned you by suddenly picking up with her husband and children (yes, your grandchildren!) and is ì trying it out.î Many people have siblings, even parents who have Continued on page 14

Continued from page 12 chosen to make their home in Eretz Yisroel. Or friends. Everyone has an old elementary, high school or college friend who made aliyah. The point is, that a typical trip to Israel may involve tour guides and sight-seeing but for most of us it also means visiting loved ones. And visiting loved ones naturally means shlepping them stuff. As I said, two seventy pound pieces of luggage seems like plenty, but ití s not. Not only did we always manage to fill our bags to the gills with our own clothing and incidentals but by the time we packed in all the items on the lists we were sheepishly given, our bags were usually bursting at the seams. If by some odd chance we did not have many packages to squash in to our luggage for our own connections, not to worry. Some radar signal went out and magically reached friends and neighbors in a wide radius around our home and packages routinely appeared on our porch and in our hallway. Who could blame the couriers? We too ran with our own bundles when someone we knew (or was a friend of someone we knew), was heading to Israel. The favors pretty much evened out. But for a while now things have changed. First one suitcase was cut out altogether. Suddenly you had to make due with a single seventy-pounder. Thatí s a huge difference! You couldní t not bring your son or daughter the essentials they needed so you had to rethink your own wardrobe and necessities. And you know what? It was almost a positive thing. We learned how to pack more efficiently. Did we really need those heavy trainer sneakers? Maybe we would just wear them - or better yet, a lighter pair - on the plane and free up a few priceless pounds. Out went all the ì maybe Ií ll needî items and the ì just in caseî clothing. One party dress was sufficient (were you even going to a party?). One bathing suit was enough (really, when was the last time you actually put on a bathing suit anyway?). Have Food, Will Travel By: Rachel Rosenberg

A

s a food≠ obsessed Orthodox Jew, when planning my familyí s vacations around the world or around the country, my first thought is alwaysó where and what we will eat. Throughout our travels I have sampled some fabulous kosher restaurants that rival or are sometimes superior to our acclaimed New York restaurants. Here are a few of my favorites. Darna, in Panama City, Panama is a hip and modern kosher bar and restaurant that is a favorite with locals and tourists, both kosher and not. The all≠ glass front allows passersby to glimpse the well≠ dressed diners sitting in bright red chairs enjoying Mediterranean style dairy cuisine. I felt comfortable eating there with my three small children as the room is spacious and the vibe is a buzz of diners who didní t seem to mind the added noise. The food was super fresh. The Panamanian ceviche was like eating salty sea candy and I have since been trying to replicate this dish at home. Darna bakes their own bread and the foccacia and pizza were amazing. Darna is a great place to eat when visiting Panama for business or pleasure as it appeals to all. When my twin sons were 18 months we took them to Italy where they learned their first Italian words ì gemelliî and ì bravo.î After a long day of touring Rome they fell asleep in their double stroller and my husband and I sat in the outdoor seating area of La Taverna del Ghetto, an Italian kosher meat restaurant in the Jewish ghetto. We 36

were serenaded by the restaurantí s violinist while we ate, what else, fried artichokes and pasta with meat. I adored the Italian dining where it is perfectly acceptable to have an appetizer, first course, and second course and still follow it with dessert. Bravo!! Being married to an Englishman, Ií ve made a number of trips to Manchester. For the first ten years of my marriage, I complained to all the Mancunians willing to listen about their lack of kosher dining. But then the opening of Rare Grill in Prestwich changed my whining to proclaiming that Mancunians no longer need to travel to New York City for a great kosher steak. The shredded salt beef topped with a poached egg is plated perfectly so that when you slice your fork through the top, the yellow of the egg runs down the salt beef for the perfect bite. The lamb burger is thick and juicy and great for eating in or out. The service at Rare Grill is incredible. The dining area includes an open window into the kitchen through which the chef pops his head out to make sure your steak was exactly as you ordered. The management, staff and food at this restaurant make it top rate. On a trip to the Galapagos Islands where we could expect no kosher food other than what we brought with us, I found we had a five hour lay≠ over in Atlanta, Georgia. I convinced my husband there was time to exit the airport and try one of Atlantaí s kosher restaurants. After reading some on≠ line reviews we chose Broadway Cafe, a vegetarian dairy restaurant on Briarcliff Road, about a twenty≠ five minute drive from the airport. Broadway Cafe was empty when we got there so we were served quickly. The menu included many faux meat dishes, including, Jambalaya and ì sausageî and eggs. The food was tasty with my favorite being the fish tacos. While we had originally planned on ordering extras for the flight, the food was a bit too greasy for travel. Fortunately, we discovered a kosher deli directly next door to Broadway Cafe, and managed to put together some sandwiches Continued on page 111

MIND OVER MATTER: Keeping Travel Close to Home By: Jennifer Mann, LMSW You had been saving and scrimping for years for a trip to Europe. (Go with me on this one). All your life you had dreamt of seeing the Eiffel Tower. You envisioned your bereted self on a bicycle, baguette in basket cycling around the quaint streets of Paris. The time had finally come for the trip of a lifetime. You planned, prepared and packed perfectly, might I say! The trip was more than you could have dreamed. You posted so many pictures of yourself on facebook, your friends were thinking ì Europe can keep her!î Though you knew your problems would be waiting safely and soundly for you at home, this was your time to explore, discover and relax all while becoming even more of the fabulous person you always knew you were. Unfortunately, the trip had to come to an end. During the last two days of your trip you were experiencing blessed denial but it finally hit you when you were crammed in your airplane seat (sorry, you didní t fly first class). Your mind sobbed, ì I am going home!!!!î Suddenly, you are home, standing in your hallway and you are greeted by a horribly pungent wafting odor. ì Yitzyî you scream (Yitzy is your husband) ì Did you forget to take out the garbage before we left?î The suitcases are piling high by the staircase all waiting to be schlepped upstairs. What doesní t go upstairs goes downstairs to the washing machine. How have you and Yitzy amassed five garbage bags of dirty laundry? Youí ll get on it tomorrow, along with picking up the mail from the post office, stocking the fridge, catching up with work and family and returning the 40 voicemails on your home phone. You begin to rethink the value of this

long awaited vacation. Your good friends and family want the itinerary to your trip but you caní t remember. All the details and the stress of putting life back together has made the vacation feel like a distant memory! Whether youí ve traveled to exotic destinations or taken road trips with the kids, you are probably familiar with the dreaded ho hum of returning to daily life. I think the end of a vacation can feel like a breakup. Breakups are horrible. You may be left feeling that you have wasted your time and have absolutely nothing to show for it. Even though you are not together anymore the truth is it was not a waste of time because you have learned, grown and changed. When informed of ESRAí s theme of Travel for the June issue, I started thinking about the true benefits of travel. I decided there has to be a lasting, more permanent benefit of traveling. I for one refuse to break up with my vacation! It turns out there are many long-lasting, psychological benefits of traveling. For starters, having some physical space between you and your life allows you to see things from a new perspective. When we are immersed in our own lives, it is hard to think outside the box. The physical closeness of the people and work that make up our daily lives, the monotonous routine busy on autopilot, all keep us focused on the concrete, here and now. Having space allows us to see things through a fresh lens. Seeing other people immersed in very different lives and cultures reminds our brains (perhaps subconsciously), that there are other ways of thinking and processing and that perhaps you are more capable of coping with your personal situation than you think. Research suggests that it is not only seeing other people leading different lives that is good for us. There must be an element of open-mindedness and genuine interest in how other people live. Travel is a wonderful way to get in touch with your desires and drives. Understanding your emotions is a helpful tool in planning your next getaway. Make a list of what it is you want to get out of your vacation. It may be a sense of independence, reconnecting Continued on page 124

Traveling Comfortably with Arthritis By: Mordechai (Mark) Shedrowitzky, PT,MS Owner/Director of Rehabilitation Associates of Brooklyn

Now that summer is approaching I frequently overhear the same conversation between patients in my office. ì Are you going to be visiting your children this summer? No. I doní t think so. Ití s a long trip and with my arthritis Ií ll never be able to get out of the car when I get there.î This is a conversation that has the potential to go entirely differently with some education. What is Arthritis? Arthritis is the inflammation of a joint or joints, which is where two bones come together. According to the CDC there are approximately 50 million people in the United States with arthritis, including approximately 294,000 under the age of 18. What does arthritis come from? There are many different causes of arthritis, including wear and tear on the joint, autoimmune issues, gout, trauma, psoriasis, side effects from certain drugs, and many more. There are at least 100 types of arthritis and associated diseases. We will focus on osteoarthritis, the arthritis caused by general wear and tear, although this discussion applies to most types of arthritis as well. Why is traveling with arthritis uncomfortable? There are a number of negative effects that arthritis has on the joint. There will typically be the loss of or softening of the cartilage which serves to protect the ends of the bones. There will also be the loss of normal joint fluid which serves as a joint lubricant. In severe cases there will be spurring (extra bony growth) on the ends of the bones. Due to these changes in the joint there is typically stiffness and/or pain when trying to move the arthritic joint out of a position that it has been in for more than a few minutes. This is why one of the hallmarks of osteoarthritis is having pain and/or stiffness in the morning until you move around for a few

minutes. The key to traveling comfortably with arthritis is to keep in mind the causes of pain and stiffness and plan for them. What I usually recommend to my patients is the following: -- When traveling short distances most people do not have significant issues caused by arthritis, but with trips that last longer than 20 ñ 30 minutes there may be stiffness and pain, especially when attempting to exit the car. To minimize this issue try to move the seat back as far as it will go to allow for movement of the affected joints during the ride which will help ward off some of the potential stiffness. -- Additionally, if the ride will be lengthy, then stopping to exit the car is recommended every 30-45 minutes. Once you get out of the car, just a short walk for 30-60 seconds will stop the pain/stiffness from setting in. If at all possible, range of motion exercises should be done while traveling to promote lubrication of the affected joints. This will also help blood circulation in that area of the body which will be beneficial in remaining limber. -- Another useful strategy used to decrease difficulty associated with traveling is to take an anti-inflammatory medication. I would recommend clearing the use of antiinflammatory medication with your physician prior to taking it if you are not on a regular regimen of it. This is because the use of these medicines is contraindicated in people with certain medical conditions such as stomach ulcers, unstable high blood pressure, etc. It would be helpful for those with arthritis to plan their scheduled anti-inflammatory medication around departure time. If the antiinflammatories are taken 20 minutes prior to departure there will be less pain and stiffness in the affected joints upon arrival at the destination. If there is significant stiffness and/or pain in the affected joint upon arrival, it would be helpful to use a moist heating pad as well as perform range of motion exercises to restore function of the affected area. Things to consider when planning a trip ● The walking distance from the car to your hotel/home. ● Are there stairs that you will have to use, and if yes, how many? ● Distance to the elevators.

From Soup to Nuts: Jewish Cooking in France

What is Jewish cooking in France? This question has haunted Joan Nathan for years and has driven her to unearth the secrets of this hidden cuisine. In her extraordinary cookbook, Quiches, Kugels and Coucous, My Search for Jewish Cooking in France, (Knopf), the fruits of her quest are revealed, featuring a treasure-trove of delectable recipes and the often moving stories behind them interlaced with the tumultuous two thousand year history of the Jewish presence in France. Now with Joan Nathan guiding us, carefully translating her discoveries to our home kitchens, we can enjoy dishes such as: VEGETARIAN APPLE PARSNIP SOUP YIELD: 6 TO 8 SERVINGS Vegetarian Broth 2 tablespoons olive oil 1 onion, peeled and diced 4 carrots, peeled and diced 1/2 stalk celery 2 leeks, cleaned and diced 2 bay leaves 2 branches fresh thyme 3 plum tomatoes, diced, or 6 ounces canned San Marzano plum tomatoes A few sprigs fresh parsley A few sprigs fresh chervil Salt and freshly ground pepper to taste Soup 1 pound parsnips, peeled and diced Juice of 1 lemon 2 tablespoons olive oil 2 tablespoons butter or pareve margarine 6 shallots, diced 4 tart apples, peeled and diced 1 cup cider 8 cups chicken or vegetable broth Salt and white pepper to taste

A few gratings of nutmeg 1 teaspoon cider vinegar (optional) To make the broth, heat the olive oil very slowly in a large pot. Add the onion, carrots, celery, and leeks, and saute until the onion is transparent. Add 10 cups water along with the bay leaves, thyme, and tomatoes. Bring to a boil, and simmer over low heat, half covered, for 45 minutes. During the last few minutes of cooking, add the parsley and chervil, and season with salt and freshly ground pepper to taste. Put everything through a sieve, and set the broth aside. For the soup, put the parsnips and the lemon juice in a large bowl. Cover with water, and let sit for a few minutes until you are ready to make the soup. Drain and dry the parsnips. Heat the olive oil and the butter in a heavy soup pot. Add the shallots, parsnips, and apples, and saute for about 10 minutes, or until the shallots are clear but not golden. Add the cider, and cook, uncovered, for 5 minutes. Then add the broth, bring to a boil, cover, and simmer slowly for 40 minutes. Add salt, white pepper, and nutmeg. PurĂˆ e the soup in a blender or food processor, and if you want more acidity, add the cider vinegar. Serve immediately. TOMATO, ALMOND, AND LETTUCE SALAD WITH SMOKED SALMON, WALNUT VINAIGRETTE AND DILL YIELD: 4 SERVINGS 1/4 pound smoked salmon, cut into 1-inch pieces 2 tomatoes, cut into wedges 4 cups mixed salad greens 1/4 cup slivered almonds, toasted


2 tablespoons walnut wine vinegar 1 teaspoon Dijon mustard 1/2 teaspoon mustard powder 3 tablespoons vegetable oil Salt and freshly ground pepper to taste 2 tablespoons chopped fresh dill 2 tablespoons chopped fresh chives Gently toss together the smoked salmon, tomatoes, greens, and toasted almonds in a salad bowl. Whisk together the vinegar, mustard, mustard powder, oil, and salt and freshly ground pepper to taste in a small bowl. Pour over the salad, mix, and sprinkle with the dill and chives just before serving. ALSATIAN SWEET AND SOUR FISH YIELD: 8 TO 10 SERVINGS 3 tablespoons olive oil 1 medium onion, peeled and thinly sliced Salt and freshly ground pepper to taste 1 cup sugar 1/2 teaspoon ground cinnamon 2 tablespoons cider vinegar 1/2 teaspoon ginger 6 bay leaves 1/2 cup golden raisins 1/2 cup slivered almonds One 3-pound fillet of carp, salmon, grouper, bass, rockfish, or sea bream Heat the olive oil in a pot or poacher large enough to hold the fish, and saute the onion, seasoned with salt and freshly ground pepper to taste, until translucent. Dissolve the sugar in 2 tablespoons water in a heavy skillet over low heat, stirring with a heat-resistant spoon. Raise the heat to medium and stir constantly until large bubbles start to form, about 5 minutes. Then stop stirring and carefully rotate the pan over the heat until a golden-brown color is reached, brushing down any crystals that might form with a brush dipped in cold water. Pour this caramel over the onion. Pour 2 cups water over the caramel and onion and bring to a boil. Stir in the cinnamon, vinegar, ginger, salt and freshly

ground pepper to taste, the bay leaves, the raisins, and the almonds. Place the fish on top, cover, and simmer over very low heat for about 15 minutes, or until the fish is barely cooked through. Carefully remove the fish to a serving plate, and boil the sauce down to reduce by half. Pour the sauce over the fish, cool, and refrigerate. Serve the fish at room temperature. SWEET COUSCOUS YIELD:6 TO 8 SERVINGS 4 pounds onions, peeled and thinly sliced in rings 4 tablespoons vegetable oil or butter 1 tablespoon sugar Pinch of saffron 1/4 cup raisins 1/2 cup sliced or roughly chopped blanched almonds 1 pound (about 2 cups) couscous Salt and freshly ground pepper to taste In a frying pan, sautĂˆ the onions in the oil or butter over medium heat until translucent. Add the sugar and saffron, and continue to cook until caramelized and jamlike. Add the raisins and almonds, cooking until the almonds are golden. Prepare the couscous according to the package instructions, seasoning it with salt and freshly ground pepper to taste. Mound the couscous in the middle of a plate, and surround with the onions, raisins, and almonds.

Planning a trip overseas is both stressful and exciting. Especially as we get ì olderî (and I am including myself in this category), there are more precautions to consider before leaving the safety of our home. Here are some quick tips that will make your travel easier and safer: 1. STEP program - Smart Traveler Enrollment Program (STEP) go online and enroll: https://travelregistration.state.gov. ➢ The Smart Traveler Enrollment Program (STEP) is a free service provided by the U.S. Government to U.S. citizens who are traveling to, or living in, a foreign country. ➢ STEP allows you to enter information about your upcoming trip abroad so that the Department of State can better assist you in an emergency. ➢ STEP also allows Americans residing abroad to get routine information from the nearest U.S. embassy or consulate. 2. Places to Receive Mail If you will be abroad for an extended period, you may want to arrange for the delivery of your mail. Some banks and international credit card companies handle mail for customers at their overseas branches. In addition, post offices in many countries will hold mail for travelers under their General Delivery (Poste Restante) services. U.S. Embassies and Consulates do not handle private mail. Check with the embassy of your destination country to see if that will be possible there. A listing of foreign embassies and consulates in the U.S. is available on the Department of Stateí s website at http://www.state.gov/s/cpr/rls/dpl/32122.htm 3. Bringing Medications or Filling Prescriptions Abroad If you are traveling with a pre-existing 100

Any medications being carried overseas should be left in their original containers and be clearly labeled. If you wear eyeglasses Take an extra pair with you. Pack medicines and extra eyeglasses in your hand luggage so they will be available in case your checked luggage is lost. To be extra secure, pack a backup supply of medicines and an additional pair of eyeglasses in your checked luggage. 5. If you have allergies If you have allergies or reactions to certain medications, foods, or insect bites, or other unique medical problems, consider wearing a ì medical alertî bracelet. You may also wish to carry a letter from your physician explaining required treatment should you become ill. For these trips, we order double-wrapped meals from Mauzone in Lawrence, New York. Mauzone does a great job preparing and packing generouslyportioned traditional meat dinners, each served with two side dishes and labeled. However, check your destinationí s policies on bringing in outside food. After a 17 hour flight to Fiji with two toddlers, we arrived to be told by the military controlling the airport that no outside food could enter the country. Fortunately, a little American brass, many American dollars and a few American tears eventually got us to our resort with our suitcase full of delicious dinners

Ií ve gone hiking several times with my son. I love the fact that we are so isolated that NO ONE can find us, being in the forest (on a trail, not getting lost!), is so peaceful! All you think about are the amazing trees and that ití s cool and green. My favorite artist is ì Thomas Kinkaid.î He has paintings of cottages in the remotest areas, with grass and flowers, with lakes, and isolated cabins between the mountains, and when I look at his paintings I wish I were there, away from the stress of the city. Although it is not a ì physicalî location, it is as tranquil as if I were actually there. S.W. On top of a Colorado mountain, with great views, while it is snowing lightly with a hint of sun coming through the clouds. The snowflakes sparkled like glitter. I have only seen it this winter and cannot forget it. I think about it often and wonder if this scenario will ever occur for me again. Heaven on earth for sure. D.W. Before you plan your next getaway, ask yourself what you are looking for in your travels. If you are yearning to have a romantic getaway with your spouse this could be a potentially wonderful opportunity to reconnect before the vacation. If you are itching to lay on the beach by yourself for 2 weeks and throw your phone into the ocean, you may want to consider making small changes to your routine which incorporate some time for self soothing. So you see, planning for travel can give you a birdí s eye view of what it is you really want, desire or feel. Finally, whether you travel on your own or with loved ones, you are creating new experiences and new memories. Even if the trip is a flop, you will always remember when Yitzy (remember him, your husband?) had to go to the bathroom and you couldní t find a working restroom from New Jersey to Florida, and look back on it fondly. (It caní t always be a trip to Europe, right?) Why is this? The same way physical distance from a situation allows the brain to understand input in a new way, it is the timely distance that allows the brain to see that painful experience of ì holding it inî from NJ to Florida, as funny and remember it fondly. According to positive psychology (a paradigm that values happiness and downplays pathology), time spent reminiscing alone or with loved ones can have huge health benefits. After you are all settled in, make yourself a beautiful album from your vacation and look at it often with your family. Ask everyone to gather round and share memories. Take out an older album while everyone is gathered and reminisce about other times. Wherever your travels take you this summer, I wish you good times, emotional growth, the creation of shared meaning and memories and a safe return. Continued from page 14 chances are you would not have the time to sit and sketch the Judean hills on this or any other future trip. The pad and pastels stayed home. Then came another shocking change. Fifty was now the new seventy. Thatí s right. One fifty pound bag was all you were entitled to. Now that already is unfair! Although dragging one fifty pound suitcase in and out of your car, the airport and taxis is a lot kinder to your spinal column, it is often simply impossible to limit oneself and oneí s belongings to that requirement. There are a few solutions to this dilemma. Those who doní t mind the lifting and lugging of additional bags, as well as the extra cost, simply pay for a second piece of luggage. Depending on the airline it is usually easier and cheaper than paying for overweight bags. Another option is to go to the max on your carry-on. Many people doní t like to travel with a carry-on but with


the current weight limitations every nook and cranny of those wheelies and knapsacks now gets filled. Still others try very hard to follow the rules. They buy those innovative home luggage scales or carry their bathroom scales down to the lit entrance-way and get on and off and on and off, pulling out and rearranging until that needle points no higher than fifty. So they woní t read on the plane, have boots if it snows, bring a gift to their host. They are not going one ounce over fifty. Of course with all the new restrictions it is impossible to ask anyone the favor of taking a package for you. Since my daughter ì movedî to Israel this past summer I have tried every means of getting goods to her, including a private shipping store, the local post office and shipping directly from an online vendor. None is flawless. There is still the December 27, 2012 birthday box I sent floating around somewhere that never got delivered. Every once in a while some kind and generous soul heading to the Holy Land will actually call ME and offer to take something small to my kids. What luck to have such wonderful friends and family members. I usually drop off one or two sturdy Zip-lock gallon-size freezer bags that I miraculously managed to seal. I squeeze and squeeze every last bit of air out and hand over the shriveled, unrecognizable parcels to the traveler. ì If they doní t fit doní t worry,î I say. ì Just call me and Ií ll pick them back up. I know how hard it is to fit everything into one suitcase.î Most people never call, bless them. Do you have any travel plans this summer? Once the stress of planning, shopping and packing is over, traveling is usually a wonderful pastime and a special opportunity to reconnect with friends, family members and even places. Whether you are taking a brief weekend drive or a lengthy cruise, enjoy. Oh and do you have room for a littleÖ just kidding. Have fun and stay safe.
