I
have a picture in one of my many photo albums (remember those?), somewhere in the den taken some twenty-five years ago when vacationing with close friends one summer in a Westchester hotel. We have a lot of pictures from those days – all my generation does – but this one stands out and is embedded in my memory. My friend’s oldest son who was about three is hugging my older daughter who was, therefore, around two. They are standing on a wide bright green carpet of fresh grass. It is an adorable photo. He is very tan, she is very fair. He is sporting a head of dark curls. Her hair is light blond and straight. Although he is a year older he appears to be a little shorter than she is. And quite a few pounds thinner. Actually, she might be the one doing the hugging. It is an endearing captured moment and the physical contrast between the two is comical. Like most of my friends who raised young children in the age of Canon Sure-Shots, we have hundreds – no, more likely, thousands – of photographs around the house. Some are in albums, others remain in their drugstore pouches complete with a set
12
of negatives in the front compartment. Still more are in keepsake boxes in the basement. I used to look at them periodically but in this age of digital photography, scrolling through years’ worth of pictures right on our phones, who has the time or the inclination to pull out and sort through all those pouches? There are, therefore, many lovely and touching photographs I have probably forgotten about over the years but the two giggling toddlers holding on to each other as their young parents looked on still occasionally pops into my mind. Two weeks ago I had reason to think about that picture again as I sat at the chupah of that friend’s son’s wedding. Snapping photos on our phones to be printed and framed for the sheva brochos two days later, we had great seats close to the front of the room and were able to see the genuine joy and excitement on the chosson’s face and he watched his kallah march down the aisle towards him. I have known the groom since birth and have watched him grow up with my own children. It is not unusu-

al to sit at a wedding and think bittersweet thoughts about the passage of time. But here’s the thing. This young man about to be wed and embark on a wonderful new phase of his adult life was not even the curly-haired tot who used to play with my daughter. This was a son that hadn’t even been born when that shot was taken. He is son number three, two behind the child in the photo. His older brother, of the famous photo had marched down the aisle with his own family minutes before as had son number two. It wasn’t merely the passage of time, more like the disappearance of it. My mother always says, the older you get the faster the years fly by. How true.
It’s not always possible to notice time creeping by on a day to day basis, and harder, still, with our own children and families who we see constantly. But other people’s children who we only spend time with on spread out occasions are a much more sensitive and jarring gauge of the years passing. And nothing marks that change more blatantly than a wedding where our friends’ children are now becoming husbands and wives, their infant siblings have shot up in colleges and gap years in Israel and stride down the aisle heads taller, with the confidence of an adult; and their children’s children make their way

to the chupah skipping to lively tunes as they toss rose petals by the fistful onto the white runner. Of course, if our friends are fortunate enough to have parents, watching that beloved senior generation proudly, if somewhat slowly, make their way down the wedding aisle also serves to remind us that time is indeed marching on. Weddings are fraught with an abundance of emotions – all of them understandable and legitimate. Old fears, new worries, life-long dreams, hope and excitement. It is a wonderful yet nerve-wracking time for all involved. Although the planning seems endless the
14
night itself passes in a flash. Our babies have grown up and are moving on. Our friends’ babies too are embarking on new journeys. So hard to believe. Whether you are the fortunate one to be making a wedding or this time around are simply the happy guest, you are bound to get a bout of that old nostalgia as the celebration begins and the evening moves on. It is only to be expected. We can’t stop or even slow the passage of time but we can make sure to enjoy the blessings of each moment. We wish you a heartfelt Mazal Tov!

azel Tov! You just became engaged. How can you de-stress and create a calm time before you wedding day? First, take care of all your appointments. Make a to do list of all your wedding needs. Make sure to make your facial appointment at least one month before the wedding day. Have a hair and makeup trial at least four weeks before. Your skin should be healthy and glowing the day of your simcha, so talk to your skin care specialist about developing a regimen to customize your skin care needs. If you want try any drastic new looks with your haircut or color, give yourself at least two months before the wedding. Once you have taken care of the details, it’s time to relax and pamper yourself. Go for a massage, make sure to take time to exercise, and don’t forget to watch your diet by trying to avoid foods that cause breakouts and bloating. Some remedies that help to relieve stress include vitamin B (which nourishes the nervous system), whole wheat bread, and brown rice. Drink a cup of peppermint tea before bed to relieve stress. Add honey to your tea (honey is known to replenish energy and also calms the mind and promotes rejuvenating sleep). Foods that contain magnesium such as green vegetables like spinach and avocados have a calming effect and contain soothing properties that induce restful sleep. A hot bath is great when you are anxious. It helps relax muscles and restore blood circulation. Try adding Epsom Salts or Dead Sea Salt to the water as they both work great for deep muscle relaxation. Don’t forget to relax, have fun, and always smile! Have a great Simcha, NAOMI

Let’s take a closer look at some of the potential thoughts and feelings each family member or
friend may be experiencing during this time. Let’s begin with the close friend. Your best friend is getting married. (I am using just the pronoun “she” in this column, but if you are a man reading this, please think of it as interchangeable with “he”). You are probably very excited for your friend. She has found the love of her life and her dreams are coming true. But what if you are feeling something other than excitement? Perhaps you find yourself worried about losing your friend? Perhaps you find yourself wishing it were you. These are things we often don’t talk about. But the truth is, these thoughts and feelings are completely normal. Your friend’s transition only naturally sparks a fire within you, leaving you contemplative about your own life. A word of advice… If the chosson or kallah is your best friend, prepare yourself for the great possibility that your relationship will change after the wedding. Understand that your best friend will be consumed by her husband, her new apartment, her new life, her new everything. To a large extent, this is normal and par for the course. What can you do? Start cultivating friendships with other people now. Did you talk to your friend morning, noon and night? Or have a standing coffee date every Thursday night? Prepare for the possibility that your friend may not be available as regularly and make other plans. Onto the siblings. Your sister is getting married! Mazel tov! Here is a sampling of what you may be thinking or feeling… The family structure and family dynamic is changing and your relationship with your sister will change as well. Particularly if you are very close with your sister or brother getting married it is perfectly normal to feel a sense of sadness or loss at times. For some siblings it signifies the end of an era, the end of childhood as you knew it. The nuclear family (mom, dad and siblings) is shifting. Your sister is off to create her own nuclear family. No more fighting over sweaters or late night gossiping. So, if at times you are not completely tuned in to happy feelings all the time, that is OK. The Parents. Every parent wants to see her son or daughter find the one and settle into a healthy relationship. Some parents are just so elated, or so relieved (certainly understandable in light of the current shidduch crisis), that they breeze through the engagement and wedding. For some parents it is not as easy. Sometimes tensions flare between bride and mother of the bride as they plan the wedding. People who normally are carefree and la di da suddenly become consumed with demands. I once worked with a woman whose daughter was getting married and she was not pleased with the status of their relationship. Method: 1. In a Dutch oven or enamel pot, heat the olive oil over medium heat. Add the carrots, onion, and celery and saute until softened, about 5 minutes. 2. Turn up the heat to high. Add the lamb, coriander, fennel seeds, rosemary, thyme, and cumin. Saute, breaking the meat up while browning it, for 4 to 5 minutes. Season with salt and pepper. Add the tomato paste and wine and simmer until the liquid has evaporated, about 5 minutes. 3. Add the tomatoes with their juice and the stock and bring to a boil. 4. Cover the pan partially and simmer over mediumlow heat until the liquid is slightly reduced, 25 to 30 minutes. Adjust the seasoning and add the red pepper flakes, if using. 5. Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until al dente, 8 to 10 minutes (or follow package directions). Drain well, transfer the cooked pasta to the sauce, and toss over low heat. Transfer the pasta onto a large serving platter, sprinkle with the mint, and serve.
Light and Creamy Cheesecake with Nut Brittle and Blueberries SERVES 10 New Yorkers have lots of opinions about cheesecake—not surprisingly, as it is a hometown favorite. This version made it into the book because it combines low-fat farmer cheese and goat cheese to lighten up the classic recipe, which relies heavily on rich cream cheese and sour cream or whipping cream. The result is a light and tangy cake that we surround with a crunchy, nutty, caramel brittle. Cheesecake is the main dessert made for Shavuot (the Jewish holiday that celebrates the giving of the Torah to the Israelites at Mount Sinai), when it is customary to eat dairy foods. While there are many reasons for this tradition, one of the most compelling is the reference
Ingredients: • 1 pound low-fat farmer cheese • 3/4 cup (5 ounces) cream cheese, at room temperature • 1 log (11 ounces) Montrachet goat cheese, at room temperature • Grated zest of 1 lemon • 1/4 cup lemon juice • 3/4 cup sugar • 1 teaspoon pure vanilla extract • Pinch of kosher salt • 6 extra-large egg whites (about 1 cup) • 1/4 cup low-fat plain yogurt or mascarpone • Nut Brittle (see recipe) • 1/2 pint fresh blueberries, blackberries, or raspberries Method: 1. Position a rack in the bottom third of the oven, and preheat the oven to 350 °F. 2. Grease an 8-inch springform pan and wrap the exterior with foil up the sides to make it watertight. 3. In a food processor, puree the farmer cheese, scraping down the sides of the bowl 2 or 3 times. Add the cream cheese and goat cheese and puree until smooth. Add the lemon zest, lemon juice, sugar, vanilla, and salt and combine. Add the egg whites and continue to process the mixture until smooth. Pour the cheese mixture into the pan and tap it a few times on the counter to knock out any bubbles. 4. Set the springform pan in a roasting pan or other ovenproof pan with 2-inch sides. 5. Add 1 inch of boiling water to the roasting pan. Carefully transfer the roasting pan to the lower third of the oven and bake until the cake is set and its edges are beginning to color, about 1 hour. 6. Remove the cake from the water bath and allow to cool in the springform pan to room temperature. Chill for at least 2 hours before serving. Run a thin knife around the sides of the pan then open the hinge and release the sides.

Crust Variation: • 4 ounces graham crackers or gluten-free oat biscuits • 1/4 cup packed brown sugar • 4 tablespoon (1/2 stick) chilled unsalted organic butter Combine the crackers, sugar, and butter in a food processor and process into fine crumbs. Press into the bottom of the pan. Pour batter on top and follow baking directions above.
Nut Brittle
Our brittle was inspired by the New York City restaurant Chanterelle’s astounding peanut brittle. It’s great sprinkled on almost anything—ice cream, sorbets, chocolate cake. You can’t go wrong. Makes about 1 cup • 1/2 cup sugar • Pinch cream of tartar

• 2 tablespoons plus 2 teaspoons water • 1/4 cup finely ground blanched hazelnuts • 1/4 teaspoon ground ginger (optional) • 1/8 teaspoon finely ground sea salt 1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. If using organic sugar, pulsechop the sugar in a food processor fitted with a metal blade for 8 to 10 seconds to get the finer texture you will need for this recipe. 2. In a small heavy saucepan, combine the sugar, cream of tartar, and water and bring to a rapid boil over high heat. Reduce the heat to medium and continue to cook (do not stir) until the caramel turns a golden brown color and smells like burnt sugar, 5 to 7 minutes. Pour the mixture onto the baking sheet and cool. 3. Break the brittle into pieces. Transfer to a food processor and pulse to grind to the consistency of sugar. Transfer to a medium mixing bowl, add the hazelnuts and ginger if using, and mix to combine. 4. Re-line the baking sheet with parchment paper and spread the caramel-nut mixture over it in an even layer. Bake until the caramel has melted again and begins to bubble, about 5 minutes. 5. Remove from the oven and sprinkle with the salt. Allow to cool. Break into oat-size crumbs.
