ometimes it’s hard to see what’s right in front of us. What’s that expression? You can’t see the forest for the trees, right? It’s so true. We are often so close to something or someone that we lose proper perspective. Things seem exaggerated and out of proportion. Like those magnifying mirrors. Pretty scary stuff. Although what you are seeing might actually be there, it’s not as horrific as you think it is. Have you ever taken a look at your face (especially if you are in your fourth decade or older), using a magnifying mirror, standing by a window, under the natural but often cruel morning light of an otherwise beautiful day? If you did then you know what I’m talking about. The instinct is to leap – not walk – right back into bed, pull the covers up and over your head and not emerge until sundown, if then. I am not a vain person and I probably spend too little time checking myself out in my bathroom or rear-view mirror before facing the crowds (hence the toothpaste on my chin, the spinach between my front teeth), but those mirrors can set your self-es-

teem back a good decade. Like I said, that stuff may actually be there but not to the degree that you are seeing it. It’s important to keep that in mind. A similar example is when we get angry and upset about something and we react quickly without giving ourselves time – real and emotional – to calm down, rewind the scene or conversation, create a little distance and step back. Almost always we – and the target of our angst – benefit from the new perspective. When we are too close to a subject – be it physical or emotional – there is no wiggle room. Everyone knows that when you are about to lose your cool you are supposed to count to ten before you react. While it’s a lot easier said than done, if you can manage that bit of self control chances are your reaction will be either entirely different, having giving yourself a moment to breath and process before you react, or at the very least your response will be tempered.

Add milk to eggs and beat well. In a frying pan melt a little butter over low heat. Strain tomatoes then add to sugar, onion, salt and pepper in saucepan, cooking over low heat. Pour egg and milk mixture into frying pan. While omelet is cooking pour part of the sauce over it before folding omelet. Fold and place on plate. Pour remainder of sauce around and on omelet and serve hot.

1 small box pancake mix 3 T softened butter 1 egg 1/3 cup confectioner’s sugar 1/2 cup orange juice Milk Grated rind of 1 orange 1 tsp cooking oil
Mix pancakes according to recipe on box, adding milk, eggs and cooking oil with pancake flour in a large mixing bowl. In a separate bowl mix butter, sugar and grated orange. Melt butter in a skillet and fry pancakes. Set aside to cool. Spread orange mixture on cooled pancakes, roll up and put back into the skillet. Add orange juice and heat until juice bubbles. Serve at once. Makes 12 Petites.

3 plums 1 cup orange juice 1 bananas 3 nectarines 1/2 lb. purple grapes
Peel nectarines. Slice pulp off the plums. Combine in a jar. Peel and slice bananas. Add to nectarines. Add grapes. Pour in orange juice just to cover. Cover jar tightly and refrigerate overnight. Spoon into fruit dishes. Makes 7 servings.
Tomato Baskets • • • •
6 medium sized tomatoes 2/3 cup sliced green pepper Cottage cheese Paprika
Cut tops off of tomatoes and remove insides. Fill each tomato with cottage cheese. Sprinkle with diced green pepper and garnish with paprika. Serves 6.

Epicurean Excursions With Rachel: SUMMER FOODS

ummer is finally here and with it my favorite summertime food events. The weekly outdoor Shabbos kiddush in the garden, rooftop cocktail hour, charity barbeques and of course, pool parties. When hosting a summer event, the key is to think light and bite size. I also like dishes that take minimum preparation, because let’s face it, the sun is out and I don’t want to be slaving in the kitchen. For Shabbos kiddush I always prepare bruchetta. I chop a ripe tomato and an onion, mix them with olive oil, lemon juice, salt and pepper and spoon the mixture on mini Melba toast. I add a sprinkle of parsley just for color. My other go-to summer kiddush quick bites are endive leaves filled with chopped, colored peppers and topped with thin slices of smoked salmon. I also put out bowls of guacamole and spicy salsa alongside platters of tortilla chips, zucchini, celery and carrot sticks. For drinks, simply throw a bag of frozen strawberries and/or peaches into a blender; add orange juice and you’ve got fruit smoothies ready to be served. A pitcher stays well-mixed in the fridge overnight. Add a little vodka to the smoothie but make sure you clearly label which pitcher is for “grown ups only.” For the evening parties, everyone likes Abeles & Heymann hot dogs in their many different flavor options, straight from the grill. The mini cocktail frankfurters can be served with colorful tooth picks or wrapped in pastry dough and baked, for upscale franks ‘n blanks. If you are barbequing, cut up squares of chicken breast, colored peppers, tomatoes and onions. Spear a kebab stick with the chicken and veggies, spray it with cooking spray and voila, the perfect food to eat while walking around and socializing. My latest summer go-to dinner (even when we aren’t hosting an event), is ground turkey in a lettuce wrap. I saute a chopped onion with mushrooms and add the ground turkey, mixing until the turkey is cooked through. Stir in some barbeque or sesame teriyaki sauce and start filling your lettuce wraps. I love romaine lettuce for my wraps, but use any lettuce with a boat-like shape that you can pick up with your hands. Fish tacos are also a great evening barbeque food for your summer parties. Grill some of your favorite white fish, mine is halibut, but any firm white fish will

work. Buy the readymade round Mexican tortillas, spray them with cooking spray, and lay them on the grill. They’re done and taste amazing after only a minute of grilling time. For absolutely no work, fill your tortilla with grilled fish and some coleslaw. If you have the time, make fresh slaw with red cabbage, lime juice, olive oil, salt and pepper and top with sliced avocado. For your dairy day-time pool parties, crumbles of feta cheese on a slice of zucchini or cucumber are always fun. Mini pizzas, either basic ones with cheese and tomato or with added toppings like olives, mushrooms or fresh arugula, get gobbled up by kids big and small. I serve tray after tray of baked french fries and they always seem to disappear. Make sure to keep a freezer full of ice pops for a simple, cool thirst quencher. For an easy summer dessert, I cut up fresh strawberries, raspberries and blueberries and toss the mixed berries in a martini glass. Sometimes I’ll spoon ice cream or sorbet over them depending on how full everyone is at that point. Hope everyone enjoys their summer, summer food and summer parties! Teaching Mindfulness to Children By Robin Daar, RN, LCSW
I
think we can all agree that life has become more complicated than ever. There are more demands being placed on us and expectations can be high. Children too are experiencing high levels of stress. With the Core Curriculum being introduced, the social pressures of school and the length of the school day, it’s no wonder that children are presenting with more anxiety than ever. Of course all children experience anxiety in their own way, but regardless it can be debilitating and upsetting. How can we help our children to cope with their busy lives and give them the tools to help themselves? One such way is practicing the ancient art of “Mindfulness”. Mindfulness put simply is “a way of paying attention in a particular way, on purpose, in the present moment”. Mindfulness was developed 30 years ago as a therapeutic meditation by a scientist named Jon Kabat-Zinn. In the last few years mindfulness has become a treatment of choice for children and adolescents with many different conditions. With mindfulness we are building the muscle of attention and focus while reducing the influence of the amygdala, the part of the brain that regulates emotional response. We can also increase the brain’s structure, size and capacity with simple routine exercise and increase our grey matter more or less throughout our lifetimes. To comprehend how mindfulness can help we need to get a better understanding of what it is. Mindfulness means “maintaining a moment by moment awareness of our thoughts, feelings, bodily sensations and surrounding environment”. When we practice mindfulness we pay attention to our thoughts and feelings without judging them, without believing there is a right or wrong way to think or feel at a given moment. Studies have shown that practicing mindfulness, even for a few weeks, can bring a variety of physical, psychological and social benefits. Most of mindfulness research on children has been done in school settings. Mindfulness is making its way into public schools across the U.S. by advocates who say teaching children how to

use these techniques of controlled breathing and meditation can clear children’s minds, sharpen a student’s focus, reduce stress and anxiety, and boost academic performance. How can you teach mindfulness to children when it is difficult for many adults to grasp? First of all when explaining mindfulness to a child describe it as a way to “quiet their minds”. Another thing that’s important when trying to teach your child these exercises is for you to practice them as well. You can start slowly with a meditation practice of your own for 5 to 10 minutes a day. Deep belly breathing is another excellent way for your child to achieve mindfulness and be calmer and more focused. Conscious breathing (simply being aware of our breath), is one of the best tools we have to regulate the nervous system, the home base of sensory processing. When a child feels overwhelmed by sensory input, is frustrated with a task, has low energy or too much energy for the situation, or is just feeling a little grumpy a few conscious breaths can make a big difference. Some examples of deep breathing belly techniques include Bubbles: having children practice a deep inhale and then slowly exhale as they blow bubbles. Objects on the stomach: Have students place a small stuffed animal or object on their stomachs. As they breathe deeply they should feel the stuffed object or objects rise and then fall when they exhale. For younger children, you can tell them their job is to rock the stuffed animal to sleep using the rise and fall of their stomachs. (There are many other techniques you can use.) Another easy way for children to practice mindfulness is to focus on paying attention to what they hear. You can use a bell, a set of chimes or a phone app. Tell the child they should concentrate on the sound and listen carefully until they can no longer hear it. Take a “mindful” walk with your child. Walk through the neighborhood paying attention to things you see and describe them. Designate one minute of the walk to be silent and simply listen to the sound. We are surrounded by sounds all the time but never take the time to listen to them and really hear them. Another exercise that “Mindful” people do is practice gratitude. When you practice gratitude you teach your children to appreciate what they have as opposed to what they want. There are families that make it a point to share one thing a day that they are thankful for with each other. An example of mindful eating would be taking a small piece of chocolate and not eating it right away but instead slowly examining it, it’s color, it’s shape, it’s texture. This article is just an introduction to readers about mindfulness but there is literature out there to give the interested reader what they need to know. What we know for sure is that the beauty of practicing mindfulness is free, can be done at your convenience and can be done by anyone, including children. The benefits can be great. These benefits include helping your child enhance his or her concentration, memory, learning and regulate their emotions. We as parents may not be able to control all the pressures of life our child may experience but it’s nice to know we can help them along the way.
