• 18% chromium, 10% nickel. You will often see flatware listed as 18/8. This is the same as 18/10 as the 8–10% nickel is within tolerance of the raw material bought.

• Knives are 13/0, 13% chromium, 0% nickel to produce a sharp blade and maintain rust and corrosion restistance.

• Type 304 stainless for forks and spoons

• Type 420 stainless for knives (because it is stronger than 304)

• 18% chromium, 0% nickel

• Knives are 13/0, 13% chromium, 0% nickel to produce a sharp blade and maintain rust and corrosion restistance.

• This is type 430 stainless. It is less expensive than 304 stainless but not as corrosion resistant and can rust. But for consumers this is less of a problem than for commercial due to differences in washer types.

• This material is harder than 18/10 so it is generally thinner. It is ideal for high volume, budget conscious customers.

TITANPVD™ FLATWARE

A process called physical vapor deposition, PVD provides durable and distinctive finishes on a variety of flatware patterns. A titanium compound is vaporized and adheres to the surface, by a vacuum process, which creates a lasting bond. While, PVD is a hard surface that stands up to the rigors of commercial food service, including normal handling and commercial dishwashing, we recommend hand-washing to maintain the original finish and luster. TitanPVD™ flatware is available in brushed gold, brushed black and rose gold finishes.

• After service, immediately soak in 140–160ºF water with chlorine-free, acid-free, non-abrasive detergent for 10 minutes. (soak PVD flatware in hot water only, no detergent)

• Soak in basket in plastic bus tub, avoiding aluminum, as aluminum may cause discoloration

• Avoid using abrasive materials (steel wool, metal scrapers, scouring pads) to remove food remnants from flatware

WASHING

• Wash as soon as possible in basket, mixing forks and spoons so they do not stack

• Load forks and spoons handle-down to ensure optimal water access for a better wash and final rinse

• Load knives blade-down for safety in a separate basket to prevent scratching

DRYING (afterwash)

• Remove residual water by drying with a soft cloth or towel to prevent water spotting and corrosion

• Store in dry area away from humidity and grease

GLOSSARY

304 Stainless Steel

Contains high nickel content between 8 and 10.5% and 18 to 20% chromium. A softer alloy than 420 and 420 allows for stamping of more decorative designs.

420 Stainless Steel

Contains a minimum of 12% chromium, making it corrosion resistant and is magnetic due to the lack of nickel.

430 Stainless Steel

Contains 16 to 18% chromium, making it corrosion resistant and is magnetic due to the lack of nickel.

Alumina Oxide

A fine ceramic material known for chemical and physical stability with high heat resistance, strength and hardness that is excellent at resisting abrasion.

Press Molded Glass

Glass produced by mechanically pressing molten glass into a mold using a plunger.

Reactive Glaze

Variegated glazes that result in a unique finish from a non-formulaic firing due to oxidation or a chemical reaction during the glaze fire.

Soda Lime

The most prevalent type of glass, soda-lime is chemically stable with a smooth and non-reactive surface.

Spun Molded Glass

Glass produced by pressing molten glass into a spinning mold using a plunger.

Thermal Shock

A variation in temperature which causes tension in a material which may result in breakage.

Thermoplastic

Plastic that is molded at elevated temperatures and hardens upon cooling. Has high insulation properties in its solid state.

Twice Fired

Ceramics that are fired twice. The first firing, the bisque fire, removes moisture and hardens the clay. The second fire, or glaze fire, fuses the glaze to the ceramic body, forming a glassy layer.
