WELCOME It seems like only yesterday that the initial idea was being discussed and meetings were being arranged… fast forward almost a year and it’s happening.
T
he vision for the food festival was a ‘city-wide celebration of Cornish Food and Drink’ and this has remained throughout the planning as the event will showcase the best of Cornwall and operate city-wide. The main event will take place across two separate but linked sites; Lemon Quay and Boscawen Street, with the surrounding roads being closed for the duration of the festival to make the event more enjoyable for all who attend. The team have worked tirelessly to curate a deep and varied programme of events to complement the chef demonstrations and artisan market which will include foodie talks, butchery demonstrations, foraging walks, a local food trail, workshops, a charity feast as well as children’s rides and a free daytime music stage. We are delighted to be working with the Trussell Trust a charity that aims to end hunger and poverty in the UK. The Trust support a nationwide network of food banks to provide emergency food and support to people locked in poverty. They also campaign for change to end the need for food banks in the UK. We will be hosting a charity feast in aid of the charity on Thursday evening at The Alverton with all profits being donated. I would like to take this opportunity to thank everyone who has played a part in helping to turn this idea in to a reality including Truro City Council, Truro BID, all of the local businesses, the chefs, speakers, performers, musicians, local producers and traders, sponsors and partners, suppliers and last but not least all of the amazing and dedicated staff and volunteers that bring everything together.
Enjoy the festival..

REFLECTING OUR ROOTS
With our homeland as the ultimate inspiration Tan Dowr was destined to encompass the very elements that define Cornwall
W
e are proud to welcome Tan Dowr to the Truro food festival this year, a true Cornish delight created by friends Warwick Royden and Charlie Gebhard. The inspiration behind Tan Dowr and its small Cornish team came from their passion for the Cornish coastline and it’s wild seas. The belief in having a premium Cornish brand coupled with their passion for Cornwall, meant that Warwick and Charlie were even more set on bringing something truly unique to the market. Warwick tells us about how their journey started and how travelling the country visiting nationwide distilleries helped them get a true feel for what a premium spirit really meant. With access to some of the best produce in the world, they endeavored to follow their passion for their home county by using Cornwall’s very own Cornish Sea Salt. The end result is a true Cornish Vodka, that’s unmistakably salty on the tongue. “No ingredient has been more profound over our history in enhancing flavours than salt and we have found that this transfers perfectly into our drinks”. Whether you decide to drink it neat over ice, enjoying its smooth salted complexions, or enjoy it as the ideal cocktail companion, its versatilities soon become apparent. It’s pure filtered smooth qualities are hard to miss and I can see why it would be a fantastic bedrock for so many cocktails. It truly is a versatile spirit that will compliment many combinations. Find Tan Dowr in the Cornish Food Hall presented by GWR on Lemon Quay. TANDOWR.CO.UK

BREWING IN CORNWALL SINCE 1851
I
ndependent, family-owned brewer, St Austell Brewery has been brewing beer in Cornwall since 1851. Most famous for Tribute Pale Ale, the brewer’s range of award-winning beers – also including Proper Job IPA and Korev Cornish Lager - are available in pubs and supermarkets nationwide. As a headline sponsor of this year’s Truro Food Festival, St Austell Brewery is proud to present the Chef’s Theatre. The highest calibre of chefs will take to the stage throughout the weekend including the brewery’s very own ambassador, Jack Stein. Jack – who released his debut cookbook ‘World on a Plate’ in 2018 - has developed a collection of food matches for the brewery’s Cornish beers. For Jack’s headline slot he will be showing festival goers how to create a vegan ‘pulled jackfruit’ recipe (see page 26) that pairs perfectly with St Austell Brewery’s flagship beer, Tribute Pale Ale, which turns 20 this year. St Austell Brewery will be selling a selection of its beers throughout the weekend and will also be sampling and handing out recipe cards, so that festival-goers can recreate and enjoy Jack’s recipes - and suggested beer pairings - at home. RECIPE
KING PRAWN SAGANAKI BY IRINI TZORTZOGOU Serves 4 as a light lunch with a few green leaves. Definitely some crusty bread required for all that delicious sauce!
INGREDIENTS • 12 peeled and cleaned tiger prawns (any raw prawns will do but adjust quantity) • 50mI virgin olive oil • 1 onion finely chopped • 3 garlic cloves finely chopped • 1 red chilli seeded and finely chopped • 3 spring onions • 2 green peppers
• 5 medium sized tomatoes (I prefer to buy on the vine) • 50 ml of ouzo • Salt & Pepper • A tsp of sugar • 250g of feta cheese • A pinch of dried oregano • 2 tbsp of chopped parsley
METHOD Clean and wash the prawns, pat dry and season with salt and pepper. Keep to the side. Bring a saucepan of water to the boil, add the tomatoes which you have scored a cross on top and bottom and leave for 30 seconds to loosen their skin. Drain and rinse under cold water to stop them cooking. Cut the tomatoes open, remove the seeds and chop in small dice. Cut the green pepper open, remove the seeds and cut in small dice too. Heat a couple of tbsp of the oil in a saute pan. Add the onion and cook for a minute or two over medium heat. Add the garlic, the spring onion, the green peppers and as chilli to taste and continue for a couple of minutes more. Add the tomatoes, season, add the sugar and oregano. Cover the pan and cook for 10 minutes. In a separate frying pan, add a couple of tbsp of olive oil and when hot add the prawns cooking for a minute on each side. Pour the ouzo over them and continue cooking for a minute or so to lose the alcohol. Transfer the prawns to the saute pan, sprinkle the feta over them, cover the pan and continue cooking for another 5-7 minutes. Do not overcook the prawns or their meat will toughen. Sprinkle with the remaining olive oil and the chopped parsley and serve.

FROM COPPER STILL TO OAK BARRELS We speak to Brian Farmer, the owner of Moorland Distillery, located on the edge of Bodmin Moor and asked him to tell us about his vision for the family-run business. Established in 2016, we find out what inspired him to create this truly exquisite Apple Brandy.
B
rian explains, ‘our vision was to produce quality beverages made from pure ingredients. By allowing the ingredients time to mature, you get the most exceptional products’. This discovery inspired Brian to explore this further, experimenting with a range of base ingredients that could be used to produce an outstanding Brandy alongside a refreshing Cornish Apple Schnapps. He tells us about his journey and how
extensive research led him to understand that some of the best brandies are produced in copper pot stills, allowing them to retain more of the original aromas and flavors. Following this discovery, Brian’s next purchase was in fact a 150 litre copper pot still and the legal requirements were soon put in place to begin production. We stored our first Brandy in the summer of 2017 and we launched our ‘one year old’ fresh bottles in the

summer of 2018. ‘The whole experience has been amazing’ explains Brian. ‘Our successful production has meant continuous sales of Apple Brandy for both consumption and investment purposes.’ If you are interested in investing in the first ever produced untapped barrel, call Brian on 01208 841760 or visit the Moorland Distillery stand in the Cornish Food Hall.
