Happy New Year to all of our members and patrons. I hope you and your family have enjoyed a wonderful holiday season. My family and I were able to spend a good bit of time relaxing and enjoying time together. Of course, as most of us do, we ate way too much turkey, dressing, ham, veggies and all the traditional fixings. We might even have gained a pound or two. Well, now it’s time to get healthy. In this issue of The Healthy Alternative (THA) we have added lots of ideas for a healthy new you, so take some time and read this whole issue. As you embark on this New Year, please remember that Ever’man will be here to supply you and your family with the most wholesome and nutritious foods. We know that January is a month full of New Year’s Resolutions and we are here to help. During the current pandemic, a strong immune system is key to staying healthy. Please do not hesitate to ask our knowledgeable staff to answer your questions, in both stores and on the phone. They are happy to provide you with friendly service.

Although 2020 has been a very challenging year, your Co-op is weathering the storm. As with all small businesses, we have felt many effects from the year’s events. The pandemic, brought many changes and challenges, but we took them head-on. We made many operational changes to keep our staff, members and customers safe. We have also been faced with several hurricanes that caused not only physical damage but financial also. The closing of the 3-Mile bridge has divided our Garden Street store from our members and customers living in Gulf Breeze and Navarre. We miss you and hope you come see us on your next trip to town. Please know that through it all, our employees have stayed strong and worked for you. Your Co-op remains financially strong with hopes for better times real soon. This time of year, is normally board election season at your co-op. We have an uncontested election this year. There are three seats up for election and only three candidates. Therefore, all three candidates (one incumbent and two new) may be seated for 3-year terms after all requirements are met. Stay tuned, we will introduce all of the candidates in the next issue of The Healthy Alternative. In closing, I want to thank you for your support of our co-op. It’s this support that keeps us financially healthy and growing. We truly appreciate each and every member and patron. I look forward to seeing you in the stores soon.

BOARD PRESIDENT DAVE DEBLANDER It is always a pleasure to write the new year magazine article because with a new year, hope springs eternal and everyone is ready to start fresh and make their new year’s resolutions. And, of course, this year we get to say goodbye to 2020 and all the havoc it brought forth. Pandemic, hurricanes, crazy election, shutdowns, masks, 6 feet buffers and an essential bridge gone are memories that we can now put behind us and let us celebrate a new year with hope and excitement. What better way could there be than to make eating well and living well a priority. At Ever’man we have lots of great new stuff including our new Marketing Director, Jennifer Peterson, a new line of delicious sushi items at both stores, and plans to expand our footprint out into the community in a number of different ways. We are thrilled that our cafe hot and cold bars are back up and thriving and we can begin sampling items in the stores again. We really missed being able to show our shoppers the latest and the greatest, along with tried and tested favorites. I must applaud our General Manager, William Rolfs, and his staff and associates on how well they maneuvered through this crazy year of 2020 and ran the two stores with great care and success. We are blessed to have all of them making Ever’man one of the best food coops in the country. Yes, at national conventions, Ever’man is always presented as one of the top coops and a model for others to follow. Both of our stores are so clean, pleasant to be in, well-stocked, the staff is so friendly and the signage, displays, etc. are always top notch. Many of us, myself included, take these things for granted but if you have ever had the opportunity to travel to other coops, you would see that Ever’man is one of the best. I am not saying others are suspect, only that we have two great stores that we can really appreciate. Finally, now that 2021 is here, I hope your new year’s resolution includes lots of quality shopping at the store you can trust. We do not carry junk, and all the essential food items and other necessities you need, can be found at Ever’man. May we have a tremendous 2021, overflowing with joy, peace, health, prosperity and love. Happy New Year from all of us at Ever’man.

Celebrating One Year By: Ellen Bell

After being in business for over 45 years, Ever'man Cooperative Grocery and Cafe took the next steps and opened a second location on Pensacola's north side. Dave DeBlander, Ever’man Board of Directors President said, "The north side of town is absolutely booming, and so many people have asked us when we're going to have a second store�. By supporting the rapidly expanding growth on the north side of Pensacola, Ever'man fulfilled its mission to create a more healthy, vibrant community with the addition of a new store. While similar to the downtown store, we added new exciting features to make our customers feel like they were at a destination rather than a grocery store. We added a pizza oven and pizza bar, burrito/taco bar, hand-dipped locally made gelato, sushi, kombucha on tap, and new amenities. We offer a beer and wine bar, a walking trail and a firepit. On December 11th, 2019, a little over a year ago, we had our Nine Mile Ribbon Cutting Ceremony and Grand Opening. We officially opened our doors to over 200 excited customers waiting to get their first glimpse of the new store. It

was everything we had hoped for, with more highfives, hugs, smiles, and even tears of joy all around, the grand opening was underway and Ever'man Nine Mile's future looked very bright. Little did our team know that within those next four blissful months of operation, a world-wide pandemic would strike, and our routines would be changed forever. Ever'man continued to look ahead and took guidance from local, national, and public health authorities to better serve our community and employees. By making adjustments and listening to our members' and customers' suggestions, we were ultimately able to keep our employees working and serving the community. We can't thank you enough for your support and encouragement during this uncertain time, and we could not have done it without you!

Bringing Joy to Your Shopping Experience By: Jennifer Peterson From the very moment that I met Wendy I knew that she was a person who genuinely loves her job. She has a delightful spirit that speaks clearly that her goal is to please her customers and she passes that infectious energy on to her employees who work for her in the Customer Service Department. She has over 25 years’ experience as a Customer Service Retail Manager and started her career with Ever’man just over a year ago. When I asked Wendy to describe what she loves about her job, she stated, “I love Customer Service so I can interact and build relationships with our “Guests” (as she calls them). I want our Customers to feel Welcomed when they come in to shop. I have had guests tell us we are their safe shopping space.” I asked Wendy several questions and here is our interview:

INTERVIEW WITH WENDY GREEN CUSTOMER SERVICE MANAGER AT NINE MILE What makes the products at Ever’man stand out from regular grocery stores?

We provide Non-GMO, no artificial flavors, colorings or preservatives in the products we sell. We carry the largest selection of organic produce in the Pensacola area and aim to provide as much local produce as we can. We provide a wide range of products in our Wellness Department for those seeking a healthy lifestyle. What are some of the favorite items you see Customers purchasing at Ever’man?

We screen ingredients on all items for our customers. They love our Produce and specialty breads we offer. We provide a wide range of Gluten Free, Keto, Paleo and Vegan options for Customers and they love and appreciate that about Ever’man. Do you provide any other services in your department? Yes, Membership Services are a large focal point in our department. We share with Customers the benefits of why they would want to be a Member and how to become a part of the Ever’man Family. What would you like to see happen with the grocery industry in the future? A continued focus on Healthy Food

It was a pleasure learning from Wendy about the Customer Service Department at Ever’man and seeing her passion for what she does. From the moment you walk through the door until you check out and walk back out the door to go home, the Customer Service Department is there to greet you, answer questions for you and say thank you for shopping Ever’man before you leave. Members and Customers may place orders online and pickup at the store in as little as three hours. Curbside pickup is available between 10am and 7pm every day of the week. We currently have over 7,000 items in our curbside cart for you to choose from and we our adding items every day. While shopping online, if you notice an item not listed on the website you would like to purchase, go to the notes section to ask us to add it. After you submit your order, our team will pick the freshest items throughout the store for you! When I think of a natural food co-op, my very first thought is that it provides healthy and natural foods with something for everyone that is seeking to live a healthier lifestyle. With a Wellness section that provides high quality Health Supplements and Natural Products is its defining signature. At Ever’man our Wellness Department ties our entire Grocery Store together to give you a perfect shopping experience by supplying all your health needs in one great place. Lyn Sparks is our Wellness Manager at Garden St and is currently overseeing our Nine Mile location as well. She has been with Ever’man for 19 years! When you meet Lyn, you will find her to be an exceedingly kind and friendly lady who is knowledgeable in all things “Wellness” and will warm your heart with her smile and lovely Scottish accent. We have high product standards and a large selection of Health Supplements. Of course, we have high quality vitamins that is simply expected that we carry items as such, but we have so much more. We have high quality Powdered Nutritional Supplements, Essential oils, Natural Lotions and Soaps. We also carry Natural and Organic Skin Care Products for your face along with having a make up area where you can test products. What are your best-selling items in your department and why do people choose them?

There are many trends that happen in our department. Collagen is the “one” at the moment. Our customers notice the benefits of Collagen overtime. Zinc, Vitamin D, Vitamin C and Elderberry are big items right now. What would you like to see happen in the grocery industry in the future? I hope we continue to get the quality items that are available to us now and that people will continue to educate themselves on the benefits of living a healthier lifestyle.

Customer Service is especially important to us. We work closely with our Reps from our various companies to get the trainings we need to be able to explain their products to our customers. Emotional wellness is about being aware of your emotions while understanding and accepting them. Mental health and physical health are connected, as poor emotional health can have a negative effect on the body. A visit to an wellness center can help you create feelings of happiness in your life while showing up for your family and yourself. Self-esteem, self-respect, and positive energy are all important parts of being emotionally healthy.

Where can you go and find a cafe that provides so many options for people that have different dietary needs? Ever’man Cafe! It is so exciting that we have an opportunity at Ever’man to give the community such variety. Whether you are a Carnivore, Vegetarian or Vegan, we have options! From our Salad Bar, Our Hot Bar, Sandwich, Burrito Bar, and Pizza Bar we have it all including Sushi! Brett Beamer is the Prepared Foods Manager at Ever’man on Nine Mile and he takes his job very seriously and has great desire to make sure that everyone finds their dietary needs at Ever’man Cafe. In an interview, Brett shared some of his thoughts on things. Please enjoy our interview.

INTERVIEW WITH BRETT BEAMER PREPARED FOODS MANAGER AT NINE MILE Please tell me about yourself, your experience in the grocery industry and in your specific department?

I have been with Ever'man since 2013. I have been working in the restaurant industry for almost my entire adult life. I spent 5 years as a corporate trainer for a large restaurant chain. I would travel the country and open new restaurants. I spent some time as a restaurant manager before making the transfer to retail grocery. What makes your products stand out from conventional grocery stores?

All but a select few, of the items in our Cafe are made daily from scratch, with Clean, Natural and Organic ingredients in small batches. We aim to provide options for people with different dietary needs. Something you cannot find just anywhere. What are your favorite items that you sell in your department and why?

The Vegan Carrot Cake is my favorite item in the Cafe. You would never know that it is Vegan. It is delicious.

What are your best-selling items in your department and why do people choose them?

The Hot Bar and Salad Bar have always been successful in the cafe. There are numerous choices that change on a daily basis. I think that people choose the hot bar and salad bar because of the variety and convenience. We now offer Sushi and that has been a great hit for our Customers. What would you like to see happen in the grocery industry in the future?

I would like to see retailers that are moving into the Organic field learn WHY Organic is better for you versus just knowing that they need to stock it because it sells. Why should people choose to shop at Ever’man and come see you?

People should choose Ever’man because we have already read the labels for you and made sure that all of the nasty ingredients are not in the products we sell. We strive to provide the very best of everything in our store. Statement from Brett:

ROASTED TOMATO SALSA WITH HOMEMADE CHIPS Roasting the tomatoes, garlic, onion and jalapenos in this salsa gives it a rich, smoky, concentrated flavor. Perfect with homemade tortilla chips or your favorited Mexican fare. INGREDIENTS 4 large tomatoes, halved 3 large jalapeños 4 cloves garlic, peeled 1 large onion, cut in 8 wedges 3 tablespoons olive oil, divided 1 1/2 teaspoons salt, divided 1 teaspoon ground cumin 1 1/2 teaspoons smoked paprika, divided 1 tablespoon fresh lime juice 1/4 cup fresh cilantro, coarsely chopped 6 corn tortillas

PREPARATION Position the top oven rack 6 inches below the broiler, and turn broiler on to high. Place vegetables on a large sheet pan with a rim and drizzle with 2 tablespoons olive oil. Toss to coat, then sprinkle with 1 teaspoon salt. Broil for 5 minutes, remove pan from the broiler. Turn the vegetables over, and return to broil for about 5 minutes longer. When vegetables are blackened and soft, transfer the pan to a cooling rack. Once vegetables are cool enough to handle, remove stems and seeds from the jalapeños, and place the peppers in a food processor bowl. Add remaining vegetables and juices from the pan, and puree coarsely. Transfer to a bowl and stir in the cumin, a halfteaspoon smoked paprika, lime juice and cilantro. To make the chips, heat the oven to 350°F. Cut each tortilla into 8 wedges, drizzle with remaining olive oil, toss to coat, then sprinkle with remaining salt and paprika and toss again. Spread on two sheet pans and bake for 12 to 15 minutes, rotating the pans halfway through. When the chips are lightly browned and crisp, cool on pans on racks. Serve chips with the salsa.

Whether it be your Produce that is free from harmful chemicals or knowing that your eggs are soy free and the chickens were able to roam free on the range, the meat we eat is just as important. Today there are so many healthy options for meat products and the good news is you can find them right here at Ever’man. Sonny is our dedicated Meat Manager at Nine Mile and it was a pleasure getting to know him during this interview.

INTERVIEW WITH SONNY PORTER MEAT MANAGER AT NINE MILE Please tell me about yourself, your experience in the grocery industry and in your specific department.

I began my career as an apprentice meat cutter in 1979. At this moment in history the industry was transitioning from “hanging meat” to boxed primal beef and boxed primal pork. I was fortunate to learn the different cuts and from where on the animal they originate and how to process them. This was accomplished under the careful supervision of senior meat cutters and market managers. I progressed through the ranks until I was promoted to Market Manager. During my tenure as Market Manager I was recruited by the local community college to teach students in the culinary arts program different cuts of beef, pork, veal, and lamb. I also taught the different flavors and textures of the cuts and introduced them to sausage making. When I joined Ever’man 7 years ago as Manager of the Meat Department, there had never been a Meat/Seafood department prior. I was able to apply all my knowledge, skills, and abilities in a challenging environment to develop and open a brand-new department. A department with the goal of providing excellent customer service and the finest all natural, grass-fed, and organic meat products available.

All our local beef is grass-fed and is naturally leaner. Making it a much healthier choice over conventional beef that tends to use antibiotics/hormones to fatten up their cows. Our ground beef is processed on site. We have a wide range of sausages that we make in house. We also carry free range natural and organic chickens and turkeys. Customers can also find in our seafood case, wild caught seafood that is sourced out of Alaska by a family operated company that still operates with only hook and line, no net casting. All their fish is processed on the boat and immediately frozen for freshness. What are your favorite items that you sell in your department and why?

My favorite items that we sell are our made-in-house sausages. We have many flavored sausages to choose from. Not only do we have pork sausage, but we also have chicken. Some of your choices are andouille, bratwurst, mild Italian, and chicken spinach feta sausage. We have several more flavors as well. What are your best-selling items in your department and why do people choose them?

Grass-fed ground beef and steaks are our best-sellers. More people are looking to change their dietary habits. We also have a lot of Customers purchasing our seafood. Our wild caught salmon fillets that come from the Gulf of Alaska are our biggest sellers in our Seafood Department. Why should people choose to shop at Ever’man and come see you?

Pomegranate Glazed Salmon Pink salmon with a deep ruby red glaze is as beautiful as it is delicious. SERVINGS: 4 INGREDIENTS 4 6-ounce salmon fillets, skin on 2 cups unsweetened pomegranate juice 2 tablespoons light brown sugar 1/4 cup chopped shallots 1/2 teaspoon arrowroot powder (or cornstarch) 1 tablespoon olive oil 3/4 teaspoon coarse salt 1/2 teaspoon black pepper

PREPARATION Pat the salmon fillets dry with paper towels and allow them to come to room temperature while you make the glaze. In a small saucepan, combine the pomegranate juice, brown sugar and shallots, and bring to a boil over high heat. Boil for about 15 minutes, stirring frequently, until reduced to about 3/4 cup. Pour into a metal or glass measuring cup and let cool. When slightly cooled, whisk in the arrowroot to thicken. In a large sautĂŠ pan, heat the olive oil over high heat. Sprinkle salt and pepper over the salmon. Place the fillets in the hot oil, skin side up, and sear for about a minute and a half, until the salmon releases from the pan when a thin spatula is inserted underneath. Carefully turn the salmon pieces. Take the pan off the heat and carefully pour the pomegranate mixture in the pan (since the pan is hot, pour it in on one side and tilt to cover the bottom of the pan). Return the pan to the stove; cook for about 2 minutes longer, depending on the thickness of the fillets, using your spatula to scoop the glaze over the filets. Eat Clean and Green at Ever'man By: Jennifer Peterson Anyone that has come in to Ever’man would most likely agree that one of the absolute best experiences about our store is the incredible fruits and vegetables that we provide and how our Produce Department always looks so inviting. Not only is it clean, beautifully laid out, but Ever’man can happily boast that it has the Largest Selection of Organic Fruits and Vegetables in the Pensacola area. Our Produce Manager at our 9 Mile Store, Steve Cochran has been in the grocery industry for 32 years. He has a passion for his work, and it comes through when you see him in his Produce Department working. Steve worked up the ladder from a Customer Service Clerk to Store Director at Winn Dixie and was eventually promoted to Produce Specialist who oversaw the Produce and Floral Departments in 26 stores. He has now been a dedicated Produce Manager at Ever’man for 9 years. I had the privilege to visit with Steve and ask him about his passion and interests in Produce and in the Grocery Industry. INTERVIEW WITH STEVE COCHRAN PRODUCE MANAGER AT NINE MILE What makes your produce stand out from Conventional Grocery stores?

In the Produce Department, we carry 98% Organic Fruits and Vegetables. What separates Organic from Conventional Produce is that Organic Farmers do not use chemical-based fertilizers or pesticides which all Conventional produce does. This makes eating Organic Produce safer and healthier for you and your family. Also, Organic Produce is a little more expensive than conventional but when only 7.5% of the Worlds Produce is Organic and the demand is extremely high, price will be a little more than Conventional. What is your favorite Produce items that you sell and why? My favorite items in the Produce Department is the cut fruit and cut vegetables section. We cut most of these items daily and it makes it easier and quicker for customers who are looking for a quick healthy snack or looking to make dinner preparation a bit more simplified. What are your best-selling items in Produce and why do people choose them?

Our bestselling items in the Produce Department are bananas (quick and easy snack), kale, carrots, beets, apples, celery- these are great juicing items and customers are juicing daily to stay healthy. What would you like to see happen in the grocery industry as a whole in the future?

I would like to see Organic Produce expand and be grown more in the United States instead of being imported in, as much as we do right now. We do have a few local farmers but certainly not enough to supply the high demand for Organic Fruits and Vegetables. Why should people choose to shop at Ever’man and come see you?

I keep a very neat, fresh, and high-quality Produce Department where you can get just about any produce item you need for all your recipes. If I do not have it, I can try to get it as quickly as possible unless its out of season. We also have very nice and knowledgeable Produce Associates that will help you with all of your needs either in the Produce Dept. or they can direct you to the right person to help with your needs throughout the store. DIY: Salad in a Jar Is there anything you can't do with a canning jar? They can be used to freeze homemade margarita mix, ferment pickles, display a collection of beach glass, organize screws and nails, and store bulk grains. So it should come as no surprise that there’s yet another amazing (and handy) thing you can do with canning jars: they make a perfect container for a lunch-on-the-go. Meet your new fresh and healthy friend: salad in a jar. Start with a clean, dry mason jar. For a small to medium salad with few greens, a pint jar is perfect. If you like a lot of greens, or want to make a large salad, use a quart jar. Wide-mouth canning jars are easiest to fill, but regular jars work for smaller ingredients just fine. Depending on how hearty you like your salads, fill the jar as follows: • Add 1-2 tablespoons of your favorite dressing to the jar. • Next, add the hardest, least-absorbent ingredients. Chopped veggies like carrots, celery, fennel and onion can marinate in the dressing on the bottom and absorb flavor without compromising their texture. • Next, add cooked beans and/or firm grains like rice, barley or spelt; things that won’t get too soggy if they sit on top of, or in, the dressing. • Proteins such as tofu, cooked chicken, ham, or tuna can be added next. • Then add cheese and any softer veggies or fruits that are complementary to your mix. Berries, sliced apples and pears are good seasonal choices, but don’t forget dried fruits like raisins or cranberries that are nice year-round. • Next add cooked, light, absorbent grains like quinoa or couscous, or pasta. • Then seeds, nuts or croutons—stuff you’d like to keep fairly crunchy. • Finally, fill to the top with chopped salad greens. Twist on the top, stick the salad in the fridge, and you’re good to go! When you’re ready to eat, the salad will be dressed by the act of emptying the jar, so shaking is not necessary but you can give it a gentle shake just before emptying if you like. 24 drops Aura Cacia Eucalyptus (globulus) Essential Oil 0.5 fl. oz. 24 drops Aura Cacia Grapefruit Essential Oil 0.5 fl. oz. 3 fluid ounces unscented liquid soap (Castile type) 1/3 cup whole almonds 4-ounce plastic squeeze bottle

DIRECTIONS: 1. Into bottle, measure soap and essential oils. 2. Replace lid and shake until contents well blended. 3. In a food processor or blender, pulse or grind almonds, until a mediumfine ground forms. Add ground almonds to bottle, replace lid and shake until well blended. 4. To us, shake bottle and into a wash cloth, dispense 1 tablespoon mixture and gently scrub skin. Rinse and follow with moisturizer if desired. Before use, spot-test in an inconspicuous area to ensure that the product does not irritate your skin.

When it comes to the Dairy Department, there are so many choices. From Coconut Milk, to Fermented Milk like Kefir. Vegan Plant Based Cheese, to Humanely Raised Chicken Eggs and healthy Butter options like Ghee. The options are plentiful and fun to peruse the dairy section to see all of the items that Ever’man provides it’s customers. Our Grocery Manager Darrell Melton is sincere in his work and takes pride in overseeing the Dairy Department at our 9 Mile Rd store. It was a pleasure to hear what Darrell had to say in our interview.

INTERVIEW WITH DARRELL MELTON GROCERY MANAGER AT NINE MILE Please tell me about yourself, your experience in the grocery industry and in your specific department?

I started my career with Albertsons when I turned 16. I held several positions from stocker to Grocery Manager to Store Manager in my 10 years with them. I moved extensively with Albertsons working in 13 different stores and markets. After leaving Albertsons I worked as a sales representative with Specialty Foods before being promoted to the position of District Manager which I held for 15 years. I owned a Pepperidge Farm Distributorship in the Orlando area for 7 years. After moving back to the Pensacola area, I worked for Hobby Lobby as the Store Manager at the Davis Hwy location for 7 years. I started with Everman in January of 2014 as the Grocery Manager at the Garden Street location. I helped set up the Nine Mile location and we opened the new store in December of 2019.

One of our best-selling products is a delicious Japanese Ice Cream treat called Mochi. It is distributed by Bubbies and is available as a single snack or in packages of 6. We have many interesting flavors as well as Holiday flavors and Vegan choices. What would you like to see happen in the grocery industry in the future?

I believe the grocery industry is struggling to meet the current and future supply demands of the customers and retailers. Covid has slowed the productivity of most manufacturers and is forcing them to focus on producing only their best-selling items. Because of the increased customer demand and panic buying retailers are having a hard time keeping their shelves full. I would like to see some consistency in the grocery industry in the way of product availability and selection. Why should people choose to shop at Ever’man and come see you?

We are a one stop grocery shopping experience. We offer excellent customer service and have a very experienced staff that can help you meet all your dietary needs. If you’re new to the area or have never shopped with Ever'man before stop by and check us out. We offer a different type of shopping experience with many different products that are not your typical grocery store selections.

What makes your products stand out from conventional grocery stores?

We offer mostly Natural and Organic Products that are Non-GMO. While most Grocery retailers offer limited selection and choices for Organic products, we carry many items to choose from. We carry a large selection of Vegan and Plant based products that are very popular. What is your favorite part about working at Ever’man?

I enjoy working with our Local Vendors that supply products to both Everman locations. I communicate on a weekly basis with the suppliers that bring us all their locally produced products. We carry raw cow and goat milk. We

Chocolate Matcha Energy Balls Looking for a little pick-me-up? These tiny treats don’t take up much room in your bag, but pack enough energy to fortify you for a vigorous hike or long day at work. Dates provide a natural, fiber-rich energy boost, while cocoa and matcha contribute antioxidants (and a little caffeine). Can't find matcha powder in the bulk aisle? Check the tea section or wellness department.

INGREDIENTS

1/2 cup raw cashews 1/4 cup raw walnuts 1 cup pitted dates 1 tablespoon maple syrup or honey 2 tablespoons unsweetened cocoa 1 tablespoon plus 1 teaspoon matcha, divided Pinch of salt

PREPARATION

Place cashews and walnuts in the food processor and grind the nuts to a fine mince, then scrape them to the center of the container. Add the dates, maple syrup or honey, cocoa, 1 tablespoon matcha and salt. Process until the dates form a thick paste and the mixture holds together if you squeeze a bit of it. Scoop out a tablespoon of the mixture, form into a ball and place into a medium bowl; repeat until all of the mixture has been used. Use a wire mesh strainer to sift the remaining matcha over the balls. Roll the balls around to coat. Store, tightly wrapped, in the refrigerator for up to a month.

TIPS AND NOTES

Use maple syrup instead of honey for a vegan version.

WILDLIFE SANCTUARY OF NORTHWEST FLORIDA

We are a non-profit organization based in Pensacola, Florida, that works to provide appropriate care to injured or orphaned indigenous wildlife. We receive injured or orphaned wildlife, provide medical care and fostering during recovery, and rehabilitate and release wildlife, if possible. We work in cooperation with local, state, and federal wildlife agencies. We also provide educational outreach and conduct educational programs
