ow what a month. September is finally coming to a close and there are a lot of things going on. Halloween is right around the corner. Our Youth Works this month is more of a pictorial. With the help of kids from Eustis and the Party Source, our models are dressed like zombies and having fun with it. Due to popular demand, we are going to make the coverage of a local band every month. There is a lot of talent out there and we will feature someone new every month. I am also glad that the weather is changing. It is good to go out and not have to worry about being soaked in sweat. It is time to get out and enjoy all the great festivities our county has to offer.

Renewable Energy Sources Have Plenty to Offer Each of Us

an’s over dependence on fossil fuels has brought about disastrous consequences. Global warming and Climate Change have been directly attributed to the release of green house gases due to the use of coal, oil and gas. Nonrenewable energy sources are not effective, and cost far more than they offer in benefits. Renewable energy sources absolutely sustain life because they do not emit carbon-based warming and harmful substances into the atmosphere. Additionally, it helps the people live an economical life by not paying the monthly bills on home energy consumption anymore. Do you want to know what are renewable energy sources and how you can use them to produce free electricity to run your home? The truth about global warming is that it is becoming a much more serious problem that is becoming very hard to deal with today. The main renewable energy sources are examined below. Solar, wind, and water are renewable energy sources that are friendly to the environment. With awareness to the limits of our natural resources, practically everyone is considering renewable energy solutions.
Residential Solar Power The residential solar power makes a difference to your family and the Earth where you live in. With the residential solar power at home, you will be able to cut-off some financial expenses.
Residential Wind Energy At present, wind energy is used in a few places to generate electricity, and the feasibility of more wide spread application of this use is being studied. Wind may be used as a renewable energy source. The energy that can be generated out of the wind power generators is limitless. Unlike the typical energy source produced by private companies, wind energy provides a lifetime power that you need.
Bio Fuels Bio-fuels are also a renewable energy sources. They have been around for a very long time however just lately, people are beginning to take notice. Liquid bio-fuel which is the one used in cars is a natural and renewable domestic fuel that can only be used for diesel engines. This can be made from vegetable oils mostly soy and corn. In fact diesel engines were originally created to run on vegetable oil! The nice thing about bio-fuels is that they contains no petroleum, and they are nontoxic and biodegradable. The fact that we have so many different types of renewable energy sources to choose from means we can use them to our benefit. Some people have already proven the use of renewable energy sources to be very effective that’s why this energy saving idea has been shared to many users nowadays.
Harnessing solar power may be extraordinarily affordable if the energy system is all homemade. The storage cells can be used to store the power made during daytime and this will be still in the position to run during night or at times of the blackout. To successfully turn your home into a residential solar power you need to be situated to a place where there is plenty of sunlight. An open space area would be very feasible to generate more solar energy.

Choosing the Best Type Of Dog For Your Child By Alex Kelly
P
icking the right dog for your family is an important decision. On the one hand you may want to have security with a guard dog and then if you have children you’ll want peace of mind that they will be safe if playing with the dog. Firstly whichever breed you have or choose please remember that leaving a youngster alone with any type of dog is not advisable. Not only should you take into account that the dog, however relaxed, could turn aggressive, there is also the worry that your child may irritate and annoy him enough that he then attacks.
I’m a big believer in rehoming rescue animals, but this could pose a problem if your dog has an abusive history. However relaxed and calm they may be, if they’re hurt by your child with their latest toy you never know how they will respond. That’s not to say rescue animals shouldn’t be in the company of children, just that you should supervise and be aware of these factors at all times. So let’s look at the various breeds of dog and what their traits and characteristics are towards children.
Of course you probably see your child as a complete angel, but there is always going to be something new they haven’t tried yet. Pulling the dogs ears, feeding it crayons, trying to see if he likes hanging by his tail, the list could go on. Of course children want to explore and learn so teaching them animal care and pet responsibility from the start is a great idea. Over time your dog will start to see your child as part of the family pack if he is on the receiving end of care and attention like being watered and fed. Don’t expect your dog to tolerate your child interrupting their sleep or bone chewing time. It is solely your responsibility to teach your children these things.
Labradors and Golden Retrievers
Personally I wouldn’t have a small dog around children as they can be quite snappy and a child may be tempted to pick them up and play with them as they’re a manageable size.

Both of these breeds have similar natures, loyal, protective and kind. The Retriever tends to be a little bit smaller than the Labrador, apart from that they both love to play and are normally calm by nature. They also love affection which is great for kids who want to cuddle their dog. Labradors are more likely to be aggressive towards other dogs where as Golden Retrievers try to get along with everyone. Labradors have shorter hair so are usually easier to comb but are more likely to get overweight as they get older. They will be patient with children which is good for when your child is learning about how to groom their pet. Both love exercise which is perfect for kids and families.

Great Dane
Nicknamed “natures nanny” this dog breed has a huge reputation of being very loving towards children and is also extremely protective. They’re big enough to withstand rough and tumble playtime and relaxed enough not to get too annoyed when your kids get out of hand. These gentle giants are also fantastic guard dogs and usually get on with other animals. They do need lots of exercise and grooming and also drool a lot so be warned.
They’re big softies when it comes to children. They are very patient with little ones and will tolerate kids wanting to play with them. They tend to forget their size and will most likely try to get comfortable sitting on your lap. They love to exercise (and definitely need it) which is good for children and are another breed that is very protective of their families and home. Sadly their lifespan is usually under ten years, so keep in mind how that may affect your children as well.

Beagle
Maybe not the most energetic of dogs, but definitely one of the most affectionate. They have a strong tendency towards protection of anything that is smaller than them. If you tell your kids off you might find that you’re in the doghouse for a while as they will feel you’re attacking something more vulnerable than them. They are very sensitive so don’t let their laid back nature fool you, if you’re upset they’ll come to look after you. They’re at their most content when they’re owner and family is happy. Certainly not top of the list when it comes to guard dog behavior though.
Full of energy and fun this breed is perfect for a young family. They love cuddles and are very affectionate. Being a sturdy dog they can handle rough housing at playtime but like any animal they won’t tolerate children poking or hurting them. Beagles are social animals by nature they won’t be loyal to just one member of the household but will enjoy time with all the family members. Obviously every dog breed is different and a lot has to do with how the dog has been socialized from being a puppy. So always do your homework and background check into the history of any animal before you bring it into your family. One last note as mentioned earlier, train your children too, they need to respect the animal member of the family and not treat them as a toy to throw around.

all has arrived and Halloween is hot on its trail. While Halloween brings an endless supply of the less than stylish orange and black decorations, and of course those stereotypical Halloween t-shirts, there is good news. You can welcome the fall season and the Halloween holiday in a chic and stylish manner- with no plastic decorations in sight. Here are a few examples of how to bring style to your kick-off to the holiday season. Traditional fall colors are orange and brown and Halloween brings all that is neon orange and black. However, as you can see, a soft heather gray and matted orange can be brought together in a fashion forward and appropriate outfit for fall. The long sleeve blouse and skirt gives that fall feeling, while still keeping you cool enough for the warmer weather that is a Florida autumn. The ballet flats and accessories dress up the outfit, while also keeping it casual and comfortable enough to take the kids to the pumpkin patch, go on that romantic hay ride, or host your fall party. When getting your home ready for your party, you don’t have to rely on plastic pumpkins. Take for

instance this old fashioned lantern. Simply fill it with fresh small pumpkins, squash, and recently collected pine cones. The lantern is transformed into a rustic, outdoor cornucopia that welcomes your guests. Add to your lantern a small glittered pumpkin that can be created with some spray adhesive and coordinating glittered sprinkled accordingly, and you have two inviting and sophisticated fall decorations. As your party winds down and your guests begin to depart, you don’t have to rely on the traditional cellophane treat bag for souvenirs. As the saying goes “A girl can never have too many shoes” and what’s more stylish than a peek-a-boo black pump to hold your guests’ goodies. You can embellish the shoes to fit the theme of your party and can fill them with anything from imported chocolates, potpourri, or even a gift card to a local restaurant or store. These are just a few examples to show that it doesn’t matter whether you are dressing yourself, your porch, or your table for the festivities that come with fall, you can do it in an elegant and stylish way that will bring a unique touch to your celebrations.

How A Halloween Mask Adds To Your Costume’s Mystique By Monty Smith
H
alloween masks have come a long way over the years. What used to be a simple plastic mask with an elastic strap that held it in place has progressed to high-tech latex masks that would be right at home in the latest big-budget Hollywood horror flick. When you want to really get into character for Halloween, completing your costume with a mask will make it complete. They also give you the confidence to really take on the role of your alter-ego, since nobody needs to know who you really are. One of the biggest advantages of masks is they take minimal effort and skill to make them work. You might be able to achieve the same result with makeup, but unless you have the skills or know someone who does, it’s tough to get the effect just perfect. Part of the fun of Halloween is getting into character as someone you’re not. You’re free to “become” almost anyone - even if they’re the complete opposite of your true personality. A mask helps add to that mystique, since you don’t even need to admit to who you really are in a lot of cases. If you want to scare the neighborhood kids as they arrive at your front door while trick-

When you dress up in a Halloween costume without a mask, everyone will just see you wearing a costume. With a mask to complete the effect, they’ll see who you have “become” instead of who is inside the outfit. When choosing a mask, make sure you get something that is comfortable to wear. You’ll probably have it on for several hours, so if it’s uncomfortable when you try it on, it’s just going to get a whole lot worse as the night wears on.

hile October is famous for Halloween, the arrival of fall, and even Columbus Day, it is also Head Start Awareness Month. Many may be familiar with the term “Head Start�, and even have a general idea of what Head Start is and what it does, but few truly understand how dramatically Head Start impacts a community- and more specifically, our Lake County home. In our area, Head Start is part of the Lake Community Action Agency (LCAA) located on Bay Street in Eustis. According to the 2011 LCAA Annual report, Lake Community Action Agency continually strives to become the premier agency in building partnerships that provide professional services to children and

families in an effort to bring them to self-sufficiency. The Lake County Action Agency receives support from throughout Florida. Governor Rick Scott, United States Senators and Representatives, the Lake County Board of Commissioners, Lake Sumter Community College, and the Lake County Public School Superintendent have all acknowledged the importance of LCAA and The Head Start program in our community. Head Start / Early Head Start itself is a comprehensive child development program that provides services for low-income and at risk children and families. So, beyond the official terminology what does Head Start mean to the teachers and students who live the Head Start program each day?
Bright and early each school day, parents and children file into 5 locations throughout the Lake County areaEustis, Leesburg, Montclair (Early Head Start), Mount Dora, and South Lake, anxious for an exciting day of learning. Head Start is unique in that it emphasizes a family and home-like atmosphere; an atmosphere some of the students may be lacking due to social or economic reasons. From the ‘family-style’ breakfast and lunch that gives the children the opportunity to eat comfortably with their teachers and each other, to the smaller class sizes and emphasis on individualized learning, to brushing their teeth after each meal - the well-being of each child is of the utmost importance. To ask most of the kids what they like about Head Start, you get the answers you would expect from most 4 year olds- “lunch time” or “play time” or “nap time”. However, when you ask the teachers why they value Head Start, the answers are a bit more specific.
For example, one of the newest teachers to join the Head Start program shared, “So far I have found it be tough when you want so badly to give each child your undivided attention. You want to spend all day with them so that they know how much they matter. However, I’ve realized a hug or a kind word can mean just as much to them…even more.” As you watch the children creatively playing with each other during indoor play time, or as they get excited when they know the right answer during circle time, or as they find a ladybug on the playground, it’s clear that Head Start means more to them than they may be able to comprehend at their age. When they are at Head Start, kids who may not be able to experience all the joys of being a kid at home, have the opportunity to do just that each and every day that they come to school.

Smooth Country By Michelle Turner
A
s you walk into the Windhorse theatre and look around, taking in the small tables crowded around the outer edges of the dance floor, the high top tables off to one side, the pews lining the back walls, all facing the small intimate stage adorned with wagon wheels, you start to feel like you are in a honkytonk right out of any traditional country song- which is the perfect setting for a group of men who thrive on those classic country sounds. One by one, the six men of Smooth Country arrived with their instruments and equipment in tow. When I arrived, David Allen Potter and David Peddicord were already there. Next to arrive was Hank Scroggins and “Gorgeous” George Hawkins on lead guitar. Finally, Vern Brewer the bass player and Stan Chase the drummer arrived as well. One by one, in between setting up and sound check, they each shared with me their own stories of how they ended up in the business, how they ended up in Florida, and how they ended up at the Windhorse every Monday night from seven to nine thirty. While each of the men had very different stories to tell, they all have in common similar musical

influences- such as George Jones, Buck Owens, and Willie Nelson- and a love of playing and performing. Truthfully, after talking with each of the men, and with the brief glimpses into their lives that they shared with me, it was clear that they each deserved their own story. How does one do justice to over 200 years of combined musical prowess, and even more life experience, in just a couple of pages? Most would not know that a Computer Scientist, A decorated Vietnam Helicopter pilot, a professional radio broadcaster, and a retired Air Force Airman are just some of the hats worn once upon a time by the men that call themselves Smooth Country. I first talked to the leader of the group, vocalist and fiddle player David Allen Potter. David is one half of Smooth Country’s unique twin fiddle sound and shares the vocal responsibilities with David Petticord and Vern Brewer. The self-described “baby of the group” took the stage with approximately 30 years of experience, but not before sharing with me the backstory of how Smooth Country came to be.

Smooth Country was originally known as The Texas Gentlemen and conceptualized by Texas musician Lou Rochelle. Lou was familiar with various musicians and brought them together. They originally played other locations as the band evolved. Meanwhile, Lou Rochelle found himself facing retirement due to ailing health and David Allen Potter became the leader of the group. While they have played together at other locations since 2010, they have played at the Windhorse since last fall. The Smooth Country sound includes western swing, easy listening pop, the occasional 50’s ‘rock’ song like Elvis, and of course, classic country songs from the likes of Ray Price, Eddie Arnold, Willie Nelson, and George Jones. At 7:00pm sharp, they started the set with a twin fiddle and lead guitar instrumental that had the crowd clogging immediately, but it was David Allen’s rendition of Eddie Arnold’s “Make the World Go Away” that had the dance floor full. The dance floor was again full when the line dancers had their turn and started electric sliding across the floor to John Anderson’s “Swingin”. Petticord and Vern also showed their smooth country vocals on the mike. Before he started into “Goodbye Mary” Vern even kidded, “Listen to the words, not how we play it.” Sorry, Vern! It’s kind of hard to not notice how seamlessly the group transitions from one song
to the next. This is even more impressive considering that they are not like most bands that show up to the stage with an agreed upon set list. Each guy knows what he wants to play / sing and the rest follow along accordingly. If you watch closely, you might catch the subtle nods and signals that somehow turn into beautifully smooth country music. Regardless of whether its George Jones’ “The Grand Tour”, the classic “Harbor Lights” or even the rowdier “Sweet Home Alabama” the combination of natural talent and experience that each of the men brings to the stage is evident. Even more so, the fun and mutual respect between the band and their Windhorse audience is amazing. The birthday announcements, their willingness (and ability) to take requests and even the familiarity that the audience has with each othergreeting one another as they arrive- simply adds to the traditional country atmosphere that Smooth Country brings to the Windhorse theatre every Monday night. In what seemed like a blink of an eye, 9:30pm came and it was time for the night to end. However, they had one more song. David Petticord closed the show with a powerful gospel song while the crowd sang along- as I am sure they do every Monday night.

Emeralda Marsh -
The Jewel of Lake County
T
he crown jewel of bird watching in Lake County is also one of the most prized conservation areas in all of Central Florida.
Although the 7,089-acre preserve known as the Emeralda Marsh Conservation Area is almost a secret outside of the Sunshine State, local bird watchers and environmentalists rave about its large and diverse wildlife population. After only a decade of rehabilitation, the St. Johns River Water Management District, along with support from the Lake County Board of County Commissioners and Oklawaha Valley Audubon Society, has accomplished an astounding feat of creating a viable conservation area and an ecotourism attraction. The uniqueness of Emeralda Marsh is partly due to its past. In the 1940s the marsh lands to the east of Lake Griffin were drained and converted to agricultural fields and cattle pastures. With the support of the community, the District purchased seven different parcels between 1991 and 1993 that make up the conservation area. The Snowy Egret (top left), Great Blue Heron (top right), Northern Mockingbird (bottom left) and Anhinga (bottom right) are just a few of the birds that can be found at Emeralda Marsh. Initial restoration of the area began in 1994 when a wetland treatment marsh was established

on more than 1,500 acres of former agricultural fields bordering Lake Griffin and Haynes Creek. The marsh treatment, or flow-ways, helps remove solid materials and nutrients from Lake Griffin. From the advanced to the novice bird watcher, Emeralda Marsh presents unlimited opportunities. Known for its varying habitats and sheer size, what separates the conservation area from other preserves is its 4.3-mile wildlife drive. Built atop the dikes in the treatment marsh, the drive provides unbelievable access to the interior of wetland habitats.

Exercise and Fat Loss –
Effective Steps to Successful Fat Loss By Michael Lee Exercise and fat loss may not be as easy as some advertisements claim it to be; oftentimes, you don’t reap the fruits of your labor until much time and effort has been exerted. However, by knowing and applying a few simple exercise and fat loss principles, you will not only lose stubborn fat effectively, but you’ll be able to keep it off successfully as well.
Exercise Any Chance You Get Keep moving. Make yourself busy with errands. Walk or ride a bike instead of driving to the store. If you do take the car, park as far away from the entrance as possible and walk the rest of the way there. Do the same at work. Shun the elevator and make a beeline for the stairs. Take a walk around your office building for fifteen minutes during lunch. At home, perform household chores — from the dishes to the laundry. Not only are you getting a nifty workout, you’re getting things done, too. Remember, as long as you’re on the move, you’re burning calories. Muscle burns fat and calories all day long, even when you stay put and do absolutely nothing. Therefore, build more muscle! Do weights or strength training as this boosts metabolism, so that you’re still losing the fat long after you’ve cooled down. You may notice at first that your body seems to be doing anything but lose weight, but that only means you’re gaining muscle tissue, which will then help you lose fat and drop the pounds eventually. When doing aerobic or cardiovascular exercises, the best time for this would be first thing in the morning, when your body does not have any carbohydrates to burn. To get the energy needed for your workout, your body will burn fat instead. Make sure you drink lots of water beforehand, though, to prevent dehydration. One great motivation for having a proper exercise and fat loss program, as well as building muscle tissue, is the food you get to eat. If you’ve got plenty of muscles, then you can afford to eat a little more; and you don’t have to worry about your body hoarding all the calories as the muscle will just burn them right up anyway. That’s not to say, however, that you’re

free to gorge on all the chips and sweets you can eat to your heart’s desire (and demise). Neither should you deprive yourself of the occasional treat. Moderation is key. Remember, proper diet and nutrition go hand in hand with exercise.
Lose the Lard by Eating Right
Eat frequently but not heavily. Eating five or six small meals throughout the day is ideal than eating three bigger meals. Do not plunge yourself headlong into this, leaving no room to get accustomed to it. Take time to adjust, until you are comfortable with fewer portions at every meal. This strategy also helps the body absorb nutrients more efficiently as it has fewer amounts to work on each time. Keep in mind to consume the most food at breakfast, and the least at dinner, as you have a whole day ahead of you to burn those calories you acquired in the morning. Never allow yourself to get hungry as this slows metabolism considerably. When that happens, your body is not able to burn as much fat as you would like. Instead, it will only get ‘greedy’ and will want to hold on to whatever you feed it when you do decide to eat, thus, making it more difficult to shed the extra fat. Do not load up on carbohydrates, as this will keep your body too preoccupied to concentrate on the fat. Eat protein-rich foods like fish, poultry, eggs, beans, milk, and tofu, because protein takes longer to digest and requires the most energy in doing so. Thus, the act of digesting is, in itself, a calorie buster. Fiber foods such as wheat bread will make you fuller faster and, like water, is also very effective in flushing out toxins from the body. Following a proper exercise and fat loss program really aren’t that complicated after all. And don’t worry about the smallest of actions not making the slightest bit of difference. They do. The numbers may be negligible, but they all add up eventually—and quite sizably, too.

Adopt a Kid or Two

ou’ve seen the Christmas trees in the Post Offices in the Golden Triangle Area...You know the ones, with the little cut out Angels with a child’s name and age...Did you ever wonder, who puts these trees up, who collects the gifts, where do these kids live. Here are all the answers: It started 27 years ago in the Mount Dora Post Office. An observant carrier by the name of Jim Gray noticed a child on his route was probably not going to receive any Christmas gifts. He and his wife, Evita, decided to help this family out that Christmas. The following Christmas Jim realized there were more children that needed help. Eventually it came to the point that Jim and Evita needed help to assist these families. Jim asked his colleagues at the Mount Dora Post Office and Adopt a Child or Two, Inc. a/k/a Adopt a Child for Christmas was formed. Today, Adopt a Child or Two, Inc. lives on with Jim’s motto
“Never
let a child’s dream go unanswered.”
The all-volunteer Board of Adopt of Child or Two, Inc. decided to ask Triangle Elementary School for a list of the children that would need help for Christmas. Schools were added throughout the years and the Board worked hard to fulfill all the needs. Today we are still an all-volunteer Board and serve elementary schools throughout the Golden Triangle area, including Sorrento and Astatula. All of the children on the Angels live in southeastern Lake County. We provide applications to the Guidance Counselors in the local schools and they give them to families who they think will have a need for temporary assistance that Christmas. The parents then return the applications listing each child in their household with specific age and clothing size information. Last year we provided gifts to 957 children. Our gifts consist of an entire outfit for each child and a minimum of one toy. We spend approximately $65 per child. A frequent question is, “If I buy a toy for a specific child on an Angel, does that toy go to that child?” The answer is “Yes!,” however, if the toy is not brand new or appropriate for that child’s age or the clothing size does not match the size the parents provided, then we switch out for the appropriate size, age, etc. Every brand new toy and clothing item given to us is given to a child in our program. When an Angel comes back to us, if only a toy is provided, we provide the clothing and vice versa. Sometimes we receive gifts after our distribution date, we hold on to those gifts for the following year. We have been very fortunate in the past few years to have space provided to us by Blaine and Jonni Vermeulen. The space is located behind Party Source in Eustis and it is where we set up our own version of Santa’s Workshop. Adopt a Child or Two, Inc. is 100% non-profit and our funding for 2012 is 100% donation. We have many generous contributors that have been doing so for years. Many clubs and organizations in the area also have Christmas parties and ask their guests to bring a brand new toy for us, i.e. the Lawn Bowling Club in Mount Dora and the Mount 30 everythinglake.com
Dora Yacht Club. This year Bosshardt & Marzek Plastic Surgery Associates held a Christmas in July and collected over 50 toys for us! There are many ways you can help: your organization can request a tree with Angels, or collect toys for us, your family can sponsor a family or you can donate time or money. So many families express their gratitude to us on the day we give out the gifts. It is pure joy for us to know that we are making a difference. y culinary taste buds took me to this gem of a restaurant in the heart of Mt Dora. Copacabana Cuban Café brings the best of Cuban food to Mt Dora. As I walked into the restaurant, I noticed that the restaurant was elegantly decorated, was warm and very inviting. With its high ceiling and the authentic décor, you feel right at home. “We are a family owned and run restaurant” stated Chef Juliet. “All of our recipes are family recipes with my special twist to them”. I asked her about what makes Cuban food and she told me that Cuban Cuisine is the result of the interaction of the Spanish influence and other cultures. “We have customers come from all over Central Florida. Just this week we had people from Lake Mary, Winter Garden and Orlando” Chef Juliet explained.
Of the chefs specialties, I had an opportunity to try there Stuffed Red Pepper. It was just simply delicious. The menu also offers homemade desserts and Cuban coffees. The restaurant has a full liquor bar, with a full list of beers and wines. “We have the best mojitos in Lake County” stated Chef Juliet. The restaurant offers a menu that ranges from $7.50 up to $18.50. The hours are Sunday- Thursday from 11am to 9pm, closed from 3pm to 5pm except for Sundays. Friday and Saturday hours are from 11am to 10pm all day. Copacabana Cuban Café is located at 320 Dora Drawdy Way in Mt Dora. You can reach them at 352-385-9000 With its friendly staff and great food, this is a restaurant that you have to visit. Buen Apetito!
The menu has a wide array of Cuban cuisine. From fourteen different appetizers, large lunch menu, kids menu, soups and salads, chef’s specialties, huge array of Cuban plates, deserts and coffee, there is something for everyone here. I got to try the tamales from the appetizers and they were one of the best I have tried in Lake County. They were fresh and rich with favor. The next thing that came out was the Pernil.
