eco pep talk What does sustainability actually mean? At a time when greenwashers use all kinds of arguments to try to convince us of their charitable intentions, I find it extremely difficult to communicate about sustainability. The principles I have always tried to follow since the establishment of Extremis are based on common sense and obviously imply that you cause as little damage as possible to the world around you. This should go without saying, but that doesnâ&#x20AC;&#x2122;t seem to be the case.
â&#x20AC;&#x153;My principles are based on common sense.â&#x20AC;? The market is full, even overloaded with products from which we have to choose. Before allowing yourself, as a manufacturer or a designer, to put yet another product on the market, you must make sure that it is needed and functional as well as beautiful. How well we succeed in doing so, I leave to others to judge, but in any case I try to make sure that our designs offer enough added value compared to existing products, that they are better, more beautiful, more functional, and better adapted to the new, continuously evolving needs of society. I really donâ&#x20AC;&#x2122;t want to put a product on the market that already exists, even if it sells well. That is so incredibly boring.

Hops have several medicinal properties: They have a relaxing effect and help to combat insomnia and are therefore often used in tea. Hops also contain phenols, which closely resemble oestrogen, a hormone manufactured naturally by a woman’s body. Hence, they are commonly used for relieving menopause symptoms. Allegedly, older beer-drinking men have more female hormones in their blood than females of the same age category. compare the hop field structure with the hopper design
Poperinge is known as the ‘Hop Capital’ of Belgium. 180 hectares of the surrounding countryside are planted with hop plants. The main varieties grown are Wye Target, Northern Brewer, Challenger, and Hallertau. Hop fields have typified the landscape since the middle ages after the decline of the cloth trade because of quarrels with neighbouring Ypres.

Because of the short period of availability and the labour-intensive culture, hop shoots are considered to be the most expensive vegetable in the world. The first kilos are generally sold by auction for as much as 999 Euros per kilo!
Poperinge still produces 75 % of the Belgian national hop harvest, which is important for a beer-producing country like Belgium. As hop gives flavour to some of Belgium’s most powerful ales, including the legendary 12degree dark tripel from the neighbouring Saint-Sixtus monastery. In June 2005, Westvleteren 12 was again highlighted as “Best Beer in the World” in a bi-annual competition on www.RateBeer.com. Hop (botanically also known as humulus lupulus) belongs to the hemp family. The plant is also used in pharmaceuticals
Some years ago, Dirk Wynants bought himself a farm in Poperinge, the Hop Capital, which is less than 20km from the Design Capital Gijverinkhove, where extremis’ headquarters are based. He immediately decided to establish an entirely new hop garden which is extremely rare, and now he’s harvested his own hops, for the second time in a row. The total hop garden area in Poperinge had been decreasing for many years, but now this seems to be changing!

tremist, the official extremis beer We have the pleasure of tasting a refreshing beer like Tremist thanks to a labour-intensive brewing process. Especially in Belgium, brewing is true craftsmanship with a strong cultural value. The purpose of brewing is to convert a starch source into a sugary liquid called wort and to convert the wort into the alcoholic beverage known as beer in a fermentation process effected by yeast. The first step, where the wort is prepared by mixing the starch source with hot water called “liquor”, is known as “mashing”. The sweet wort is put into a kettle, or “copper” and boiled. This is where Dirk’s home-
grown hops come in as a source of bitterness, flavour, and aroma. The longer the hops are boiled, the more bitterness they contribute. This explains the authentic taste of Tremist. After boiling, the hopped wort is cooled, ready for the yeast. During fermentation, the wort becomes beer in a process which requires a week to several months depending on the type of yeast and strength of the beer. Additional fermentation can take place in the bottle as is the case with Tremist. This results in a better taste and a longer shelf life. For togetherness reasons, Tremist only comes in 75 cl bottles, enough to fill 4 Tremist glasses. In Belgium, most card games require 4 players. Move the bottle gently while pouring, otherwise you will mix the second fermentation yeast at the bottom of the bottle. Yeast lovers can add this to their beer or serve it in a separate glass. Otherwise, just leave about 5 millimetres in the bottle.

Use a saucepan to very slowly fry the onions until golden. Brown the meat in a pan and add it to the onions. Deglaze the pan with Tremist beer and add to the saucepan with all of the spices and stir. how drunk are you? do the calculation The amount of alcohol in the blood or the blood alcohol content (BAC) is usually expressed as a fractional percentage in terms of volume of alcohol per volume of blood in the body. A BAC of 0.5 per mille for instance means that 1 cc (= 1 millilitre) of blood contains half a milligram of pure alcohol. Under the current traffic code the alcohol level can also be determined by the breath alcohol content (BrAC). This is expressed as the number of milligrams of pure alcohol per litre of exhaled breath. A certain amount of pure alcohol does not always result in the same BAC. Pure alcohol is in fact dissolved evenly throughout the body water and the amount of body water varies from individual to individual. More corpulent people have more body water than slimmer people. Hence the same number of drinks will have a bigger effect on slimmer people. There is also a difference between men and women: As a female body contains less water per kilogram of body weight than a male body, a woman will have a higher BAC if even both have had the same number of drinks. Men
also absorb more alcohol from the stomach than women. At first sight, the formula for calculating the blood alcohol content seems quite complicated: BAC (a x 10)/(g x r) - (u â&#x20AC;&#x201C; 0.5) x (g x 0.002), in which a = number of drinks, g = body weight, r = for men 0.7 and for women 0.5, u = number of hours since the first drink. What is the pace of the alcohol breakdown in the body? The answer is both simple and straightforward: its own undisturbed pace, approximately 0.002 per mille per kilogram of body weight per hour. Although many, often individual, factors play an important role in the process, it is in general safe to apply the following rule: alcohol breaks down in the body at a pace of approximately an hour and a quarter to an hour and a half per drink. The only way to sober up is to give your body time to process the alcohol consumed. Spending time outdoors, drinking strong coffee, taking a cold shower, exercising, taking vitamins or trying other folk remedies has no effect whatsoever. Unfortunately...

of the beer-brewing process. As the shortage of safe drinking water was most severe in towns and cities, beer was in greatest demand in urban areas.
Everybody knows that when drinking in group you usually clink glasses with your fellow drinkers. As with many of our food traditions, the clinking of glasses traces its root to the dark Middle Ages when rivals often tried to kill each other off by poisoning their food or drink. The clinking of mugs was a way for beer to be passed back and forth between mugs to prove it was safe. A person with evil intentions could easily be singled out as he would refuse to drink the beer.
Soon each town had a few breweries. Locally brewed beer was also cheaper, as no import duties had to be paid. There were many towns and cities each with their own brewing traditions, which over time resulted in a large and diverse range of beers.
What many people donâ&#x20AC;&#x2122;t know is that this custom was not really widespread, but mainly used in court circles. Over time, this custom fell victim to the snobbery of the conceited courtiers, who considered clinking crystal glasses much more
stylish and elegant than clinking stone mugs. However, glasses have to be handled with greater care, so the liquid did no longer pass back and forth between glasses. But as the eyes are the mirror of the soul, people now looked deep into the eyes of their drinking partner to find out what his or her intentions were. Sleeping around was quite common in court circles and being unable or too scared to look your partner in the eye, was soon considered as a sign that you were having an affair. It goes without saying that after finding out the partner did not fancy having sex. Hence the superstition that not looking someone in the eyes while clinking means seven years of bad sex.

a new star on the rise Hopper, which made its public debut at the Interieur Design Biennale in Kortrijk, Belgium, is now presented in Milan as an extensive range. In addition to the Hopper table there is also the completely fine-tuned Hopper Shade. Familiar yet innovative Hopper is yet another casebook example of the Extremis philosophy: gathering people round a piece of
outdoor furniture which unites functionality and innovation. Hopper clearly bears resemblance to the traditional picnic tables everybody knows, but as is typical of Extremis it offers extra comfort. The four pass through zones make it easy to get in and out of Hopper without having to lift your leg over the bench or disturbing your table-companions. Extremis is really proud of its latest creation and is happy that it has started to discover the world. The entire crew is convinced that the Hoppers have already offered their new owners many joyful moments outdoors and will continue to do so for many years to come.
