Shown is an original 1925 Challenger Target Shoot Penny Arcade Game, patented by W.A. Tratsch on September 1st, 1925 and manufactured by ABT MFG Co Chicago. To play this vintage trade stimulator you insert a penny in the slot alongside the gun and push down on the lever on the right side. That resets any targets that were previously hit and unlocks the gun. You then take aim through the glass sight and pull the trigger. Each shot powerfully sends a ball at the target. For each target you strike, the copper ball rolls into view–indicating a hit. After 10 shots the trigger locks and the gun is ready to accept a new penny. Also associated with pleasant times, ie. holidays and general gift giving. What are some of the common myths you come across in your business? Myths of what is healthy, butter vs. margarine, tropical oils vs. natural, that corn syrup is bad, sugar is bad, yet nutmeats are good. What message would you like most to share with people? Buy confections with natural ingredients. What would you like me to ask you? What made me want to stay in a business I grew up in? What would you like people to know about your business? We make small batches, high turnover of product equals very fresh candy. What would you like to say to people? If you have never tried our product, what are you waiting for? TOFFEE! What is the biggest compliment customers give you? To never change, even architects tell me don’t mess with the brand. What are you most proud of? Fox & Fork store owner Scott Chenier talks about his store I try to provide an inviting experience to customers–old and new–when they visit the shop. I incorporate all of the senses...visual,audio, scents, touch and taste throughout the shop. Fox and Fork is an extension of my home and not only supplying customers a chance to fill their home with goodies I find and curate, but to allow them carry on the feeling of what I’m trying to provide so they may pass it along to their family, friends and themselves. I have an extensive background in hospitality and I have always taken pride in giving courteous and welcoming service. I enjoy decorating and creating a warm, “feel-good” environment. The shop is quaint, charming and located in a historic town whose backdrop sets a tone to provide all these qualities which I feel at home with. I do my best to be authentic, genuine and accommodating. I have too many family and friends to list who have given me the encouragement, love and support to make this a shop a reality. I’m humbled and so appreciative of this opportunity to be my own boss. My hope is to be able to continue creating within the shop and seek out meaningful items that my customers can enjoy year after year as well want to come back and revisit again and again. Holiday Roast with Red Pepper Cranberry Sauce Prep time: 5 minutes Cook time: 25 minutes Total time: 30 minutes Yield: 2 cups Roast Butcher’s twine 1 Omaha Steaks chateaubriand roast (2 pounds)
2 tablespoons, plus 2 teaspoons, canola oil, divided Omaha Steaks Private Reserve Rub Red Pepper Cranberry Sauce 1 tablespoon olive oil 2 medium red bell peppers, finely diced 1 cup red wine 1/4 cup red wine vinegar 1/3 cup white sugar 2 teaspoons yellow mustard seeds 6 tablespoons dried cranberries 6 tablespoons dried currants 1/4 teaspoon salt To make roast: Heat oven to 250 F. Using butcher’s twine, tie roast to maintain shape. Coat all sides with 2 tablespoons canola oil and season with rub. In medium skillet, heat remaining oil. Sear all sides of roast 2 minutes each.

Place roast in roasting pan and bake 1 hour, 30 minutes. To make Red Pepper Cranberry Sauce: Heat medium skillet on mediumhigh heat. Add olive oil and diced red pepper; saute 3-5 minutes. Add red wine, red wine vinegar, sugar, mustard seeds, cranberries, currants and salt. Bring mixture to boil then turn temperature to low and simmer 20 minutes, or until liquid is mostly evaporated and thickened. Top each serving of roast with Red Pepper Cranberry Sauce. Note: Mostarda can be made up to 3 days in advance. n
