Is Summer not the best time to call the KZN North Coast home? More specifically, is Summer not the most wonderful time to call Simbithi home? It is by far my favourite season on Simbithi. My love for Summer is such that when my arm was finally twisted to replace our beloved Labrador cross, Crystal, with a new puppy - an energetic Golden Retriever - naming her was easy: Summer. This way, as a family, we get to celebrate Summer every day. It is such a wonderful privilege living in Simbithi as a pet lover, with the incredible space available to us to walk in nature as a family, including our furry friends. This privilege does, however, come with responsibility. In this vein, by the time of publishing, you would have seen the recently rolled out #DYK (Did You Know) video series on responsible pet ownership. In this informative series, we hope to enlighten you on some simple, pertinent reasons surrounding our pet rules. Through educating and empowering our community, we believe that we will foster the spirit of compliance. Compliance is a community initiative. By reporting incidents to us, you assist us to in ensuring that our rules are respected. We will continue to develop our #DYK series, sharing information on the various rule infringements we encounter. Hopefully, the guidance given will assist our community in understanding how to
remain compliant. Obviously, this is only helpful to those who wish to follow the rules, and in Simbithi, thankfully this is by far the majority. Summer also happens to be a wonderfully noisy season. The summer migrants return (both avian and human), the longest school holiday season kicks off with all the various festivals and activities, and our Estate’s population swells to its highest levels of the year. During this busy time, it is easy to forget that we live within a community, with our neighbours. Let’s respect each other, let’s respect the rules, and let’s respect the speed limits. Our precious wildlife on the Estate don’t understand that they should be more cautious during the holiday season, so it’s our responsibility to ensure that we drive slow enough to prevent any harm. To anyone visiting Simbithi for the first time, welcome. You’re home. To our returning guests and residents, lovely to see you back at home. To our permanent residents, who may be traveling away from Simbithi over the holidays, travel safe, and we can’t wait to see you back home. Lastly, to our families who live here year-round and who aren’t travelling, good choice! Enjoy Simbithi, enjoy Summer, enjoy home. Best wishes,

“Hi, Barbie.”
You heard it in that voice, didn’t you? Oh, wait. You said it in that voice, didn’t you? Ever since my sister (we are 29 and 33, for reference) and I wore matching Barbie shirts to watch The Barbie Movie together, I’ve been fighting the urge to greet everyone this way. Mind you, I recently wore a pink dress to the office on Friday and insisted that my colleagues forgo the “hey, J” I usually am greeted with for a (perfectly accented) “hi, Barbie”. Granted, they rolled their eyes at me… but they liked it. I know they did. It was just a few months ago when the mania that is Barbie and her cronies took the world by pink snowstorm. It was far, far more than just the movie at play. I lost count of how many brands – some of them rather illustrious at that – tangled themselves in the sparkly spiderweb. Given my age, my excitement was understandable. Little Jodi played with many a Barbie in her heyday. Hollywood Hair Barbie (Google it) was my FAVOURITE. And, I was incredibly blessed to have the Barbie Dreamhouse, which my sister and I played to smithereens. But, walking into the cinema, I realised it wasn’t just women around my age decked in pink. There were all sorts, and it intrigued me. So, being a part-time brand communication student, I evaluated the Barbie craze and, of course, deduced that it was a slick, well-oiled machine of carefully strategised marketing and brand collaboration. Balmain, Airbnb, Gap, Crocs,
Aldo, Zara, Superga… just a few brands that dipped into pink. Even if you detest Barbie or the hype annoyed you, you simply cannot deny that the marketing campaign was successful. Why? Because you know about it. And this is the beauty of marketing. The wonder of blending theory with experience, with the touch and feel of a brand’s uniqueness, to soliciting and invoking the feeling you are after through carefully selected touchpoints. Ask me what I do, every day, in my office that is not coincidentally pink, and that’s as close to a summary as you would get. It’s not just me, though, is it? All of my colleagues have their own ‘dreamhouses’, engine rooms set in Simbithi-land, if you will, where we innovate, dream, and thrive for the benefit of our Estate. At the end of every day, when dusk starts to fall, we come out of our dreamhouses and muse about our highs and lows. And, no matter what, we remind each other that we’re one team, working together for a fantastic Estate and a warm, caring community.

Members, at the outset, allow me to thank you for your patronage and support this year. Your commitment to Simbithi Country Club, whether it is through dining at the Fig Tree, enjoying a drink at the Drop Zone Bar, booking our conference venues or a round of golf, we appreciate you choosing us.
Santa Claus will make his way back from the North Pole to our deck in December. We will share more details on that, soon, so make sure you keep your eyes open for that information!
It has, indeed, been a wonderful year with several highlights, including the great progress made on our golf course improvements. We look forward to seeing our course become even better in the months to come. We have just elected our 2023/24 golf committee, and the team and I are excited to see what the next year holds for the good game at Simbithi. As is our annual tradition, the course will be “open” for a month, from around mid-December to January. I encourage you to bring your friends and family to Simbithi to experience the brilliance of our executive course.
Also, look out for a few fresh new dishes on the Fig Tree’s menu, which we are sure will delight your tastebuds this festive season. As we saw during the Rugby World Cup, the ‘gees’ at Simbithi is something truly special, so be sure to come down and enjoy a meal or two (or three) on our deck. You are always welcome. Riding on the coattails of summer are zest and freshness: not just in the weather, but in the kitchen, too. Whether you are looking for a quirky addition to your Christmas table or something sweet to enjoy while you bask in the balmy goodness of Simbithi, this dish will do the trick. Chef Betty Dube shares the recipe for her Pineapple Sabayon, a new addition to the recently relaunched menu at the Fig Tree Restaurant.

PINEAPPLE SABAYON Ingredients
For the Pineapple • 1 fresh pineapple • 1 cup of water • 1 cup of granulated white sugar • 1 stick of cinnamon • 2 whole star anise • 2 whole cloves NOTE
For the Sabayon
As an extra touch, you can brûlée the dessert if you have a torch.
• 1 egg • 2 tbsp granulated white sugar • 1 tbsp white wine vinegar OR sweet white wine To serve • Vanilla ice-cream • Maraschino cherries
Method
1. Peel and core the pineapple and cut into thick-ish slices, about 1.5 to 2cm each. 2. In a medium sized saucepan, combine the sugar, water, and spices. 3. Place the syrup over medium heat until the sugar is completely dissolved. 4. Once the sugar is dissolved, bring to a gentle simmer. 5. Add the pineapple slices to the syrup and simmer gently until the pineapple is tender. This should take between five and seven minutes. 6. Once the pineapple is tender, put it to the side (you can leave it in the syrup until needed). 7. Now, begin with the sabayon: fill a medium sized pot to ¼ with water. 8. Bring the water to a rolling boil. 9. In a large, heat proof mixing bowl (one that will sit comfortably on top of the pot with boiling water) add the whole egg, the granulated white sugar and vinegar/wine.

10. Now the hard work starts… You must whisk vigorously and continuously for about 10 to 12 minutes. The more you can aerate the egg mixture, the better. Your goal here is to aerate and cook the egg mixture. 11. Once the egg mixture is light coloured and very frothy - like foam - it is ready to use. You can test whether the egg mixture is ready by: • Touching a bit of the mixture to your lip. It must feel hot but not burn your lips. Or, • If you dangle the whisk over the mixture and let the mixture that is on the whisk drizzle down, it must form a ribbon on the surface of the egg mixture that will hold for at least five seconds. If the mixture seems ‘dry’ you can add a bit more wine or even water. A tablespoon should be more than sufficient. 12. Plate up! As this dessert is saucebased, it is best to serve it in a bowl. Place a pool of the sabayon in the bottom of the bowl, then arrange the
cooked pineapple rings in a stack, in the centre of the bowl. Pour over more of the sabayon. Serve with ice-cream and decorate with Maraschino cherries.

My mom would drop me off at the golf course in Kokstad in the morning and they would fetch me later in the afternoon. I would spend my days hitting thousands of golf balls.” A trip to Cape Town a year later saw Dane at a golf academy, where he began to realise there was more to the world of golf. “I always wanted to play. The trails now have ‘loops’, where riders may branch off. These have adjacent ‘chicken runs’, which are designed to challenge more technical riders. The trails are being graded to indicate their levels of difficulty, which will allow riders to choose their routes and use the loops to cut in and out of their path. The upgrades are continuing, with regular engagements with our cycling community to hear their opinions and feedback.

“It’s a funny story,” Amanda, a special needs teacher, giggles when asked how she and James, a trader, met five years ago. “Tinder! I swiped left and deleted the app after I found James. Making the World Easier to See TIPS FOR THOSE WITH LOW VISION
F
or those in our Simbithi community with low vision, an underlying eye condition can mean that ordinary glasses are not of sufficient help and stronger-than-normal glasses, optical magnifiers, and digital low-vision aids are needed. The medical care from your ophthalmologist (to manage and stabilise the eye condition as much as possible) and the practical care from your optometrist with a special interest in low vision (in helping you to work around difficulties with visual tasks) are both important in navigating your visual difficulties. Having said this, environmental design and adaptations may also make things noticeably easier to see. Lighting is an important tool and can be one of the primary reasons why your glasses may seem to work at some

times but not others. Angle-poise lights, aimed away from your eyes to avoid glare and directly on what you are trying to see (from as close a distance as is practical) often provide a surprising benefit to clarity. The type of lighting is important too. Clear, white light is often the most beneficial, but warmer colours may be considered if your eyes feel more comfortable with these. These lights can be used for so many daily tasks: writing, reading, preparing food, eating, using the TV remote, applying makeup, and other “skills of daily living”. Colour choices also matter. White soap on a white background may blend into the background, while coloured soap stands out far more boldly. Consider this when buying toothpaste, shampoo, tablecloths, crockery, etc. Coffee cups might be white on the inside and dark on the outside so that it is easier to see the contrasting colours at the rim
when aiming the kettle to pour water. Contrasting edging on steps or railings are good safety features. Colour-coded (and raised to be tactile) labels can also be used on TV remote controls, appliance dials, etc. Larger print is of course easier to see. Consider this when setting up digital devices (take a look at the options of accessibility settings in cellphones, tablets and computers). Large print calculators, telephones, kitchen scales, rulers, etc. are also available. From a safety perspective, be sure to keep walkways clear and well-lit, ideally having rounded edges on furniture, granite kitchen tops and door handles. Simple adaptations like these, and working with your optometrist experienced in low vision care, can go a long way in making the visual environment more accessible.
