ouch is one of the strongest and earliest sensory languages, and one that we’re introduced to immediately upon birth. As an infant, we understand who our mother is and her love just by the warmth of her skin. A baby, when crying or bothered, will seek its mother’s touch – and we’re not much different as adults. “When you reach out with tender touch, you create emotional closeness,” says Chapman in his book. Physical touch doesn’t have to be very intimate, and there is way more to the notion of physical touch than what we think. Expressions of physical touch don’t necessarily have to lead to intimacy. It can be as simple as a hand squeeze when your partner is anxious, a brush on the arm as you pass by, or just holding hands while walking around a supermarket. It can even be sitting side by side with your arms touching. For those who understand physical touch, this sounds like a no-brainer, but if you don’t, doing this unconsciously is hard. Basically, having touch as a love language means that all physical gestures matter more than gifts or saying, “I love you.” This person can be taken on the most extravagant date, but still only feel butterflies when cuddled up in bed together. Your constant physical contact assures them that you are there, you are present, and they are cherished. And that is enough. Here are some simple ways and tips on how to be fluent in this language.

Non-Intimate Touch Despite what you may have learnt through movies or past experiences, there are different levels of intimacy – and intimacy isn’t everything. f all the love languages, the act of receiving gifts is undoubtedly the most misunderstood. While giftgiving in most circumstances is known to be more materialistic, it’s more symbolic as a love language. In his book, Chapman observes: “From early years, children are inclined to give gifts to their parents, which may be another indication that gift-giving is fundamental to love. Gifts are visual symbols of love.” Take a walk down memory lane to a time when you would hide in your room making birthday cards and macaroni necklaces for your parents – it was your way of showing them that you cared. And even though those handmade cards and gifts would be worth next to nothing in monetary value, they were still proudly displayed around the house, symbolising just how important you and your gesture were. This is further emphasised by Chapman as he refers to such gifts as “visual symbols of love”. Gift-giving is present in almost every culture in the world, especially in the love-then-marriage process, the most familiar symbols being the exchange of rings between a bride and groom. You will notice how many couples place a lot of importance on these rings, never taking them off. This is not because of their monetary value, but the meaning they carry. More than Materialism At a time when many of us are trying to practice minimalism and disregarding objects that don’t ‘bring us joy’, the notion of receiving gifts can be thought of as materialistic and unnecessary.

Be Present By now, we all know that technology is a big no-no when it comes to people whose primary love language is quality time. They know that time is always limited, and tomorrow isn’t guaranteed, therefore they see the concept of time as a priceless gift that needs to be cherished. Be present and interested in what they have to say, ask questions, ask follow-up questions, and let them know that you will prioritise them over everyone and everything else. ✤

But don’t worry, this doesn’t mean that your partner is lazy and wants you to do all the heavy lifting. In fact, they’re most likely selfsufficient and super motivated. This is actually why acts of service is their love language. They simply want you to step in a little to help and lighten their burden – to them, that is real love. It’s not about the deed itself, but working together to attain a goal. It’s important to note that acts of service aren’t about helping around the house or becoming a butler to your significant other. You need to work with them, not for them. It’s about creating an equal partnership. “Love is something you do for someone else, not something you do for yourself,” adds Chapman. Grey Times

This past year affected everyone in more ways than one, and FACT’s Anzish Mirza visits the Fire Station Museum to explore how the pandemic impacted the artist’s and their creative process.

M

any of us took solace in art during quarantine, a period in our lives that is still a reality for many around the world. Art provides a means for conversation and interaction, be it through music, painting, television, or the culinary arts (yes, even food). But for a select few artists at the Doha Fire Station, art was a means of being as they struggled to complete their installations and pieces through the pandemic. The Fire Station: Artist in Residence recently unveiled Grey Times, an exhibition — running until July 24 — encompassing the works of artists who participated in the fifth edition of its annual Artist in Residence Programme (AIR5). The exhibition marks the end of the programme and is centred on the current context of the global outbreak of COVID-19, characterised by uncertainty and unprecedented challenges. The initial plan for this year’s Artist in Residence Programme — curated by Dr. Bahaa Abudaya and Saida Ali Al-Khulaifi — was for artists to engage with the relationship between the visual arts and literature. However, the pandemic prompted changes in methods and outcomes for many of the artists, such as Mariam Rafehi, who exhibits ‘Beyond Ideas of Wrongdoing & Rightdoing.’ “As a media artist, I use a lot of technology, but during COVID19, I wanted nothing to do with technology,” laughed Rafehi, emphasising that she couldn’t look at screens anymore, and had to change her perspective. “I came to use wood as a medium to get to use my hands and really enjoyed it. I really liked the feeling of getting my hands dirty again,” she said in conversation. 40

Another such technical artist is Aisha Al-Muhannadi, who started off with the mission to foster in-person social interactions into her art but ended up reflecting the impact of virtual interactions in conversations between strangers, thanks to quarantine. In conversation Al-Muhannadi said that people seemed more relaxed and comfortable through online means, rather than meeting in person, which for her was a great find. “When we’re in a physical and open setting we have a lot of distractions, so these videos show people within their four walls, in their studios, at home, or in offices and we would just talk,” she observed. Her pieces host interviews from a simple man working as a guard in Doha, to an intriguing perfumer in Italy. More artists showcasing their works as part of the 2020-2021 Artist in Residence Programme include: Aisha Al-Muhannadi, Ameera Al-Aji, Ebtesam Al-Hothi, Hadeer Omar, Haytham Sharrouf, Jaser Alagha, Latifa Al-Kuwari, Majdulin Nasrallah, Mariam Rafehi, Maryam Al-Maadhadi, Mashael Al Hejazi, Maysaa Almumin, Muna Al-Bader, Naila Al-Thani, Noor Yousef, Suzana Jouma, Hind Al Saad and Ameena Al Yousef. These artists tackle various inspirations; from Rumi, to dreams, to conversations, inheritance, pearl diving, and more. It truly is a marvel of ideologies collected and displayed under one roof. It’s also interesting to see how many artists had to completely alter the meaning or display of the questions they had pre-pandemic — unable to fully pursue their artistic vision from the confines of their homes. However, this induced further meaning into many of the works displayed; telling stories through intuitive pieces that we can all relate to.

An example is the pieces of Muna Al-Bader, her sculptures and artworks showcase the emotions that pearl diver in Qatar felt, as they voyaged into the sea for months on end; leaving their families behind. “Quarantine really put us at a distance from one another, and this induced a deep empathy for their situation which you will see reflected in my pieces,” she said, pointing to the stunning hues of blue that overtake a large section of the exhibition. Through the artworks created during the participating artists’ residency, Grey Times artists sought to answer the questions, “Who am I?” and “Who are they?” The works reflect the evolution and adaptability of the creative process in relation to limitations imposed by the pandemic i.e., the lack of studio space and social engagement, limited creative materials, execution, and installation. And now those months of struggle, have become celebrations of triumph and success. As artist Jaser Alagha stated when explaining his installation: “Memory is always changing.” ✤

Y

ou may recognise the building from years ago but it’s what is on the inside that counts. The Hyatt Regency Oryx Doha recently opened its doors to the public at the beginning of the year and we are super excited to see what this year-long project has in store for us. The hotel boasts 400 rooms to connect travellers to who and what matters the most, from the Hamad International Airport to the business district to cultural outlets. And with international travel still on hold, we treat ourselves to a little staycation in the heart of the town. Still new in operations, the hotel exudes comfort and familiarity from the staff to the décor. Checkin is swift and hassle-free – a good sign we always look for in any hotel. We walk into a vast open lobby that cascades to the hotel’s Sky Lounge; an arrangement of lively coloured seating areas, under a slanting and open skylight, which sits by a delightful selection of food and drinks. We can definitely see ourselves basking in the sunlight as we lounge here in the mornings. The hotel hosts an open terrace structure, which allows bright ambience; perfect for when Doha’s weather has us stuck indoors.

The Suite Life Our one-bedroom suite is a space that emits cosiness! The warm 44

lighting, dark hues, wooden furniture, and carpeted rooms have us crawling into bed for some comfort and relaxation. The suit enjoys high-tech room facilities, complimentary Wi-Fi access, and an in-room workstation with a large working desk and an ergonomic chair; making sure to keep our work from home (or hotel) activities going. The living area is a comfortable size and enough for late-game nights, which we took full advantage of. It also hosts a balcony off the bedroom for some fresh air and a bright bathroom equipped with a full tub, and sectionals for the shower and toilet. Both rooms also possess wall-to-wall windows, bringing an abundance of sunlight throughout the day. Our favourite part however is the clock/wireless charger, because as usual, we forget our phone chargers. This is a lifesaver for many. We make ourselves comfortable, head up after dinner, and lay in the room’s dim lighting that serves as the ideal environment for some Netflix in bed before we awaken for a delightful breakfast the next day.

Food Joints We begin our first morning at the Hyatt Regency Oryx Doha with a delectable breakfast at Choices, where we are literally spoiled for ‘choices’ at the buffet. The buffet is a collection of stations consisting of everything we need for a good breakfast, after all, it is the most important meal of the day. We start at the bread and cheese station where we pick up some buttery croissants, a sugar-coated doughnut, cinnamon rolls, apple tart, and sinful chocolate brioche. Morning carbs are essential for us. Next up is the fruit station, full fact magazine

of fresh juices, produce, and cuts. And finally, the make-to-order station where we order the fluffiest vegetable and cheese omelette, some dim-sum, and a warm custom-ordered cheese and spinach manakish straight out of the oven. We are so pleased with the food and atmosphere that we’re back for lunch the same day. For dinner, we make our way to Al Nafourah Garden. The outdoor garden is bustling with life with chatting customers, music, flowing water fountains, and the aroma of Arabic food. Our appetiser choices are definitely the Halloumi Fries, crispy breaded strips of perfection. Side note, you’ll end up ordering two of these dishes. We also pleasantly indulge in the heavenly spiced minced lamb Arayees and the Goat Cheese flatbread. For the main dish of the evening, we are served the classic and deliciously spiced Land & Sea Mixed Grill. An adornment of tender and juicy lamb kofta, lamb loin, lamb chops, shish taouk, jumbo prawns, and fish taouk. We end our evening with some refreshing Moroccan mint tea and a plate of warm and sweet Kunafa. The best way to end the night after a busy day. If you’re in the mood for a themed night out then The Cellar is your go-to dining destination. Here the tapas and drinks run the show, as they perform tantalising flavours on your plates. Our appetiser picks consist of the Salpicón De Mariscos, a delectable seafood salad, and the Pigmento Del Padron, which are deepfried padrón peppers with rock salt (trust us, it’s not as spicy as it reads), and finally the Coliflor Crujiente Con Parmesano, where the dip perfectly complements the crispy balls of cauliflower. mains we indulge in the most decadent beef we have ever had in our dining experience, the Costilla De Vacuno Braseadas; braised beef short ribs cooked for 12 hours (we’re serious) and laid atop a creamy potato mash. The dish may look small but the intensity of the flavours, buttery tenderness of the beef and spicy aroma, has us well satisfied and fulfilled. We end the night with a classic — Churros dipped in vanilla cream and chocolate sauce. This restaurant is truly a dining experience on its own.

Blissful Moments Even though we’re working from our rooms, we still take some much needed time out to relax and release our muscles at the Club Olympus Spa & Fitness centre. The amenities include a temperature-controlled outdoor swimming pool, a Jacuzzi, massage rooms as well as steam and sauna rooms. We stroll down for a little quiet time in the sauna and steam rooms to loosen up our muscles before we embark on our massage appointment. The massage room is small and quaint, offering solitude in a comforting atmosphere. Each muscle is stretched and knots are undone, leaving the body in a state of idle comfort. The Hyatt Regency Oryx Doha is ideal for dining out, offering scrumptious delights at each restaurant, and stays within the city to keep you with in the vicinity of where you need to be. ✤

O

ver the years, we at FACT magazine have had the privilege of test driving an extensive array of vehicles produced by a large number of brands. In some cases, we’ve been lucky enough to experience several models from a single marque. However, every now and then, we get the opportunity to experience something completely new. This month, FACT’s Chirine Halabi got behind the wheel of the new Kodiaq, our foray into test driving a model by Czech automaker Škoda. The precise, sharp lines of the Kodiaq’s exterior design endow the vehicle with a muscular beauty, ensuring it radiates an essence of both power and prestige. This 4x4 SUV is as robust as it is beautiful and looks equally at home on the city streets as the mountain trails. The raised central strip of the bonnet draws the eyes down to its full LED headlights, whilst the sharply drawn fog lamps are located at the height of the radiator grille for protection during off-road adventures. At the sides, the sharp edges combined with smooth surfaces create an interplay of light and shadow, whilst the square wheel arches and protective sill covers add to the vehicle’s all-terrain capabilities. Also noteworthy are the 20-inch Xtreme anthracite alloy wheels that are fitted as standard. From the rear, the vertical black extensions merge with the roof spoiler and border the rear window, thereby improving the aerodynamics of the Kodiaq. Silver roof railings highlight the appeal of its exterior, whilst the LED crystalline rear lights are deep-seated into the fenders. Slipping inside the vehicle, we were greeted by a comfortable environment that felt organised and spacious. Ambient lights run along the inside of the car and, with 10 colour options available, the mood can be set for whatever journey lies ahead. A panoramic sunroof supplies the option of additional natural light as well as an abundance of fresh air. All of the materials used are of a good quality, the front seats offer plenty of support, and the multifunction sports steering in perforated leather wheel feels great in hand. We found the Škoda Connect infotainment system to be intuitive, user-friendly, and easy to navigate. The rear seating of the seven-seater model has plenty of head, leg, and shoulder room on offer, and up to seven people can comfortably travel in the three-row seven-seater Kodiaq. This vehicle has obviously been designed with road trips in mind as it provides a multitude of storage spaces – there’s a jumbo box storage compartment in the front armrest, an upper storage compartment by the front passenger seat, another storage compartment in the lower part of the dashboard, and a driver’s storage box located directly below the steering wheel. There are also front door compartments, a sunglasses compartment above the interior rear-view mirror, bottle and mobile phone holders as well as a removable unibag designed for transporting longer items. The boot itself is electronically operated and offers 835 litres of luggage space, which increases to 2065 litres with the rear seats folded down. This compartment also offers a variety of hooks and nets to secure goods, and sports a double floor that places the bottom of the luggage compartment on the loading edge level, allowing for easier handling of cargo. By the time we started up the Kodiaq’s sporty-sounding 2.0 TSI turbocharged petrol engine, we were more than ready to hit the

tarmac. This capable engine produces 132KW 180 horsepower. and 320Nm of torque. This – coupled with an automatic sevenspeed DSG transmission – enables the 4x4 to accelerate from 0-100km/h in 7.5 seconds and reach a respectable top speed of 212km/h. The Kodiaq handles very well, even on the sharpest of bends. Its responsiveness ensures that the driver always feels in complete control of the driving experience, a feeling enhanced by the solid braking system. Although we spent only a little time in an off-road environment, the all-terrain capabilities of this SUV were obvious. We couldn’t help but wish we had more time and a mountain dirt road to play with. The Kodiaq has also been equipped with an array of drive and safety assist features to keep passengers safe on the roads. Spearheaded by menswear creative director Kean Etro, the Italian brand’s Fall/Winter 2021 collection for men has adopted a new attitude – one that is optimistic yet realistic about what makes the fashion house relevant for today’s consumers. Presented virtually at Milan Fashion Week, it’s a tribute to the calm and sun after the storm, the storm being the pandemic and the sun being the new collection. A sense of freedom runs through the line-up, where established rules are broken to create a fresh, immediate, and appealing vocabulary of iconic pieces to mix and match with a frisky approach. It blurs the line between daywear and eveningwear, blending function and aesthetics to take the street with a fierce, bold attitude. Impeccable blazers with cadet details and robe coats in rich fabrications are layered on colour-blocked sporty anoraks adorned with discreet paisley patterns. Recycled wool maxi sweaters find place next to shirts featuring collars made of archival silk linings, while the Pegaso logo pops up on bomber jackets and oversized hoodies. We also see the street-cool appeal of baggy utility denim pants splashed with cashmere motifs counterbalanced by the impeccable sartorial sophistication of camel coats and doublebreasted suits featuring deconstructed fluid silhouettes. The label’s vintage upholstery textiles helped craft quilted jackets, while pyjamainspired piping details enrich shirts. Motherhood is never easy, especially when the notion is taken away before it can even fully begin. Starring as Martha, Vanessa Kirby gives us a chilling performance in this mournful melodrama. The first 30 minutes of this Netflix film alone are noteworthy, featuring a brilliantly filmed birth sequence that was captured in one take and spans both the anticipation of joy and horror of reality. Martha goes into labour and with the help of her husband, Sean (Shia LaBeouf), secures an alternate midwife (Molly Parker) since her first choice was preoccupied with another birth. We follow the uninterrupted clip from start to finish, witnessing the many emotions a person can go through in one moment in time, ending in dismay upon the death of the newborn child. This is where the real story begins. We follow the couple's fallout as they both grieve in their own ways, and making matters worse is Martha’s meddling mother, who insists on taking legal action against the midwife for negligence. If the storyline doesn’t convince you, then Kirby’s performance should. She comes in like the calm before the storm – even when she’s doing nothing at all, it’s like waiting for a volcano to erupt.

hey say good things come to those who wait, and we’ve been waiting a long time, so it’s only fit to have high expectations. What’s more exciting is when those expectations are not only met but exceeded — enter: the renewed La Casa Twenty Eight. This Mediterranean dining outlet recently reopened its doors to the starving people of Doha, us included, early this year after a long closure for a little magical hospitality makeover behind its doors. If you’ve visited the establishment before, you’ll know when we say that the restaurant is unrecognisable — only in displays though; it still exudes the delicious Mediterranean aromas that we’ve always loved this place for. You can tell the restaurant wants to make a grand comeback as you walk into its newly furnished and remodelled dining area. Where there were once homely rustic chairs and wooden tables now stand glamorous sofas, gold-rimmed chairs, small plantations, and stunning mirrors to add the final touch of charisma to the place. The restaurant has also cannibalised some space to fit in four equally stunning private dining rooms of mixed sizes, for groups who wish to eat in privacy and intimacy. And as you look above the ornate ceiling gives off luxurious vibes that counter perfectly to the simple yet beautifully delicious plates that arrive. The winter breeze of Doha however, is enough to steer us away from the classy indoors to find an outdoor seat; truly an experience that mimics eating al fresco in a small Mediterranean town as the comings and goings of Medina Centrale pass us by. 72

While I would say the menu heavily weighs towards Italian food, the restaurant is keen to stress that it’s a pan-Mediterranean menu with dishes you can just as easily expect to see on the French Riviera, Spanish seaside, or the Italian coast. The menu still draws inspirations from the past but with an upgrade. We delve into the selection of appetisers, which are deliciously quite the healthy alternative to what we usually opt for. We start off with a Caprese Salad, a simple dish showcasing fresh sliced mozzarella and tomatoes, and make our way through another handsomely portioned Avocado and King Crab Salad, that tingles our taste buds. These appetisers give us a hint of summer warmth as we sit amidst Doha’s somewhat chilly winter. Then the mains arrive in sensational presentations. The Linguine with Lobster is a delectable and light option; perfect for lunch, while the fresh Sea Bass comes in all its glory with a salted crust; the perfect crunch of the skin. which unleashes soft, flaky white meat and the aromas of the sea. However, the Wagyu Cheek Confit steals the spotlight with its tender and melt-in-your-mouth meat. Sitting on a bed of mashed potatoes, this dish truly glorifies the upgrade in quality from the kitchen. The literal meaning of La Casa is ‘the house’ and the restaurant aspires for its visitors to experience ‘la dolce vita’ or the sweet life. In keeping with the pleasant and comfortable vibes, the restaurant is keen to ensure that visitors feel at ease and are inclined to stay with the introduction of the cigar lounge. Bella Ciao is a quaint café that boasts a wide range of unique innovative menu selections meticulously prepared with only the freshest and finest ingredients in the market. The restaurant’s name directly translates to ‘Hello Beautiful,’while giving us the most beautiful setting for our brunches, with its ruffled pink cascading curtains and its rose-pink and gold chairs. This place is overflowing with Instagram opportunities. The café’s location is just as lovely as the décor itself, which makes the journey to the restaurant a treat. Take a leisurely stroll alongside the canal and walk-up across the Rialto Bridge to a small flight of concrete stairs. You really do feel like you’re in Little Italy. Bella Ciao opened its doors last September and sits at an elevated vantage point that overlooks the canal below; giving diners stunning views of blue hues from the windows. And these exquisite sights are also complemented with tasteful menu items. The café’s head chef, Abu Bakr, comes from a history of five-star hotels and personally crafted the menu to provide the same five-star standard at reasonable prices. What more can we ask for? Therefore, Bella Ciao stands out from the crowd of restaurants that surround the area in terms of both appearance and food. And we bask in the glory of both. We begin our culinary journey with a light and healthy cheese and fruit platter; adorned with fresh strawberries, raspberries, blueberries, and a selection of cheeses. This platter is served alongside a yoghurt compote and distinctive honey; stunning and tasteful at the same time, as we pick and choose our pleasures with a warm and house-made sourdough bread. We dip and glaze and pretend to be in a fictitious world of teacup parties. And remember, pinkies out! For a more wholesome choice, we take a bite out of the delicious Crusty Benedict. And this comes with a twist, instead of laying the ingredients on top of the customary muffin or toast, the chef makes do with a toasted, flaky croissant. This is layered with the poached eggs, turkey, delectable and dripping hollandaise sauce, with the achingly trendy smashed avocado for a different and distinctive taste. These are eggcelent (pun intended)! Another treat that arrives on our table is the mushrooms and melted truffle on brioche bread; a little gluttonous but a total treat. Rich and oozing with flavour, this dent in our diet is definitely worth 76

T

he Radisson Blu Hotel Doha stands as a monument to the golden days of Doha when, well, most of it was golden sand. Standing proud since 1979, the hotel is also known to have more restaurants than any other in Doha. Managing to evolve with the times whilst still keeping the favourable sense of hospitality, food, and culture at its core. And with such a variety of options, we’re always left in a food debacle, however this time we made a beeline to Ruby Wu’s. Coming down to the Radisson Blu Hotel Doha is always a treat, since it’s been there for so long it feels like home, with its warm greeting faces and statement furniture. We also got to meet up with Jun Yang, the hotel’s Chinese Head Chef, who joined around 11 years ago, as we make our way downstairs to Ruby Wu’s. Forced to close at the lead of the pandemic, the staff and restaurant are now eager to create memorable dining experiences. And what’s more memorable than the dramatic winding staircase that makes us feel as if we are Chinese royalty, as we descend. And we love making an entrance. The restaurant still evokes the same sensations through the décor, with its statement lanterns and red place settings. Nothing has changed, and that alone gives a comforting feeling. Well, nothing except the loss of a physical menu,

In compliance with health regulations, Ruby Wu’s has opted out of the QR codes that have swarmed dining experiences in Doha, instead they go old school and place the entirety of the menu underneath the glass on the table. And we applaud this, it’s the refreshing break from technology at dinner that we need. Speaking of keeping in with heritage and old rituals, we were glad to see the restaurant retained the spinning glass wheel at the table. This has always provided a little fun at the table, and even after years, we still feel giddy and in awe of its spins, as it carries the everso addictive prawn crackers and the two moreish dips within reach to all on the table. And trust us when we say we can devour these crispy delights all night, but are pleasantly distracted by the swift entrance of our appetisers. The dim sum arrive in bamboo steamers, and are piping hot, delectably soft, and bursting with flavour. We chose to indulge in the prawn and chicken options as we enjoy each bite as they melt in our mouths. We also opt for the Roasted Beijing Duck, now this dish is available as both appetisers in a smaller portion and as the main course; we choose it as a starter. The duck is impeccable and roasted to absolute

perfection in mouth-watering juices and smoky flavours. A must-have for all our visits. For our mains, we went a little meaty and ordered the stirfried beef with mushroom and broccoli in oyster sauce and the stir-fried beef in black pepper sauce. The portion sizes are handsome whilst the beef remains the star of both dishes in tenderness and flavour. The stir-fried beef in black pepper sauce is a mainstay dish and getting that right is often a sign of how good a Chinese restaurant is. Our empty plates are a testament that Ruby Wu’s passed with flying colours. Ruby Wu’s is an easy option for a comfortable night out for good food and with Chinese New Year around the corner, this is bound to be popular in the coming weeks. We’re thrilled to see that the Radisson Blu is starting to return to business as usual after the year we’ve all had, hand-in-hand with good food and atmosphere. ✤

Hence, we got together with Executive Chef Hasan Kayabasi to talk about him, the restaurant, and most importantly the food. Inspirations come in many shapes and forms, what inspired you to become a chef? My neighbour ran a pastry business, and I began to help him in the kitchen at the mere age of 10 years. He was my inspiration for wanting to learn more about food and to develop my skills; pushing me to attend culinary school in 2005 and really turn my passion into a full-time commitment. This passion led me to my big break when I was recruited by a five-star hotel in Turkey, which further built my foundation and honed future developments in learning different cuisines and topping my skillset. This will be your grand debut as the Chef De Cuisine, how have your past roles prepared you for this position? I have never been in a rush to climb up the professional ladder, I like achievements to come naturally in their due time. I have patiently built my experience and knowledge working at various restaurants with different cuisines and concepts. All while working alongside experienced chefs throughout this journey. With your vast experience, how many cuisines have you mastered, and which one holds a special place in your heart? Besides Peruvian of course. I have experienced working with Mediterranean, Anatolian, French Asian, and Pan-Asian, but I would say I have mastered the Mediterranean cuisine. How many restaurants have you worked in so far? Coya Doha will be my 15th restaurant. When are you happiest at work? I find happiness in what I do; when I am at my busiest and my restaurant is bustling with happy and satisfied customers. Being a chef requires long odd hours, what is the longest you’ve been in the kitchen? 24 hours straight - we had catering events and I stayed on duty for 24 hours to ensure all clients received everything as per their expectation, I wanted to support the team as much as I could. In addition to your career, what other important thing has made you happy? Spending quality time with my family and friends, particularly the quality time when dining out with my wife. We’re both chefs, so we prefer to keep the cooking at work and go out to eat.

There has been a huge boom in Peruvian cuisine these past years, what is your take on that and on Peruvian hybrid cuisines such as Nikkei? I believe that the cuisines exposure is still fairly recent and there is a lot more to experience and experiment with. As far as inspiration in cuisines such as Nikkei, Peruvian cuisine is inspired by many different cultures Japanese, Chinese, African, and Spanish. Nikkei is a little more inspired by Japanese cuisine, but the Peruvian flavours always shine through. How would you say COYA Doha differs from other Peruvian restaurants in Doha, what makes it special? COYA is a complete experience that enchants and challenges all your senses. The design in COYA was meticulously chosen to transport guests on a multi-dimensional journey through the look, feel, and Latin American energy; the music plays a key role in creating our dynamic atmosphere. This is complemented with art inspired by Martin Chambi, Peru’s most celebrated photographer. We’re proud to own a collection of his work that’s as fresh and surprising as it was over a hundred years ago. It’s hard to choose one dish but if I had to choose I would say the Arroz Nikkei. In your opinion, what is the most underrated kitchen equipment or gadget? Sharpening Steel - which is used to sharpen my knife sets. This for me is the most important tool I need for my work. What would people be most surprised to learn about you? My age, I am 28 years old. Which one thing do you wish home cooks knew how to do well in the kitchen? Knife Skills. Now for the most important question, chocolate or vanilla? Vanilla – for sure! ✤

f busy schedules, quarantine, and long work hours from this past year have put a strain on your life and relationship, then you’re not alone. We all need time to unwind and reconnect with ourselves and our partners. And what better way to do so than by treating yourself and your loved one to a spa day, the perfect way to restore your sense of wellbeing - especially when shared with someone special. This month we dive into the luxurious Couple’s Hideaway experience from the Anantara Spa at Banana Island Resort Doha by Anantara. This couple’s experience incorporates a couple’s Hammam followed by a blissful signature massage and a hydrating facial. A complete head to toe therapy treatment. Set at the far end of a crescent-shaped island, the Anantara Spa is a world of relaxation. The island already disconnects you from city lights, but the spa takes you a journey further as you escape into its doors, where Arabian rituals meet ThaiWestern healing. Upon entering you are greeted with warm wooden interiors, green trees, and echoes of flowing water in this relaxation haven. With a quick consultation you and your partner are ushered into changing rooms – fully equipped with disposable wear, flip-flops, shower caps, and more – to begin your relaxing voyage. The hosts are attentive and gracious in their manners and offer us a complete walkthrough of what to expect in the 180-minute treatment. The first step of the journey is the hammam, and we are engulfed in aromas of warm eucalyptus and wafts of steam as we enter the room. The hammam itself is a stunning structure of blue mosaic tiles that radiate calm and healing sensations. These sensations fully engulf our bodies and being, as we step into the water and let loose, giving our bodies the freedom to flow with the ripples. After a quick 10 minute dip, we are guided to the seating on the outside of the pool. A rich and creamy black soap is applied to the entirety of our bodies before we are taken to the steam rooms. The heat and steam then act to open our pores and relax all muscles, leaving our skin soft, supple, and refreshed with the aid of the black substance. After thorough hydration and replenishing of the skin in the steam room, we are guided, with the slightest and gentlest touch on the arm, to two separate marble Hammam beds. Initially, we have warm water sloshed over us from a freeflowing tap, and then the treatment begins with the renowned Keesa exfoliating glove, which scrubs us from top to bottom, ridding away dead skin, dirt, and impurities. It’s a bit like being sandpapered; your pores won’t know what’s hit them. Finally, after a rigorous cleanse, your body is sent to a calm state with a ghassoul body clay mask (a natural mineral clay mined from the Atlas mountains). As your body relaxes you can sense your worries and troubles exit your body as they float away with the mist above you. Remember to be mindful and allow your mind to fully bask in the relaxing atmosphere offered in this moment. Our host then moves to our faces to apply an exfoliating scrub, making sure the face matches the glow of our bodies after the treatment ends. To conclude the hammam experience, there is no better leisure than someone washing your hair. Our scalps were cleansed from roots to tips, making sure to massage the head; promoting ample blood flow to ease any residing tensions.

Then comes one last trip to the shower to wash away the soothing products as well as any other connection to the outside world that is left lingering. And believe us, there was barely any. We end the hammam with another quick dip in the pool while our hosts prepare for our massages. This last dip truly shows us the newfound smoothness, as the water slides over our arms to our fingers. We quickly dry off before being escorted for the massage. We’re not going to lie, we did feel a little loopy as our bodies were still trying to regain posture after the treatment – always a good sign. The private room hosts two massage beds for just us two, accompanied by rose petals and the sounds of soothing music. After making a quick note of our pressure tolerance, the masseuses begin. Warm oil is lathered across our backs as their hands make way through our knots and muscles. Time speeds by and before we know it, we are back at the reception for a post-treatment treat complete with dates, nuts, and warm ginger tea. The beauty of a shared Hammam is that it’s great for couples, who want to zone out in solitary bliss together. It gives couples a chance to reconnect with themselves as well as each other, making the day as romantic as you would like. The perfect way to celebrate love and connection between two people. Leave the Hammam floating on air, feeling revitalised and refreshed for a cosy night in, before taking a long walk along the beach together, feeling soothed by the rhythmic whispers of the waves.
