PUlAU GAYA, or Gaya Island, lies just off of the Malaysian coast of Borneo, in South East Asia. The island is one of five that make up the 5,000-hectare Tunku Abdul Rahman National Park in Malaysia, which is two-thirds protected ocean. As such, the beaches, ocean and tropical forest in the area is some of the most beautiful and unspoilt in the world.
Pulau Gaya itself covers an area of fifteen square kilometres, and in addition to the stunning beaches and ocean, it also boasts 20km of hiking trails that criss-cross the island’s protected jungle, many on raised walkways that let you hike way up close to the jungle’s canopy. There are even some zip-lines for the more adventurous traveller!

Wildlife to be spotted includes Hornbills, monkeys, bats and even wild boar, if you’re lucky, but being jungle, you are also strongly advised to use insect repellent, and is perhaps not recommended for those of you who are bugged out by creepy crawlies. Ingredients
Charmoula
1x large garlic clove, crushed with 2tsp of salt until smooth
1½ tsp ground cumin seed
2 tsp sweet paprika
2 tsp coarsely chopped Italian flat-leaf parsley
2 tsp coarsely chopped fresh coriander leaves
¼ tsp crushed hot red-pepper flakes, seeds removed
2 tsp fresh lemon juice
2 tsp fruity olive oil
Fish and Vegetables
4x thick lean fish fillets or slices, about 8oz each: monkfish, red snapper, sea bass, tilefish or other ocean fish
1x carrot, sliced thin
1lb red, ripe tomatoes, cored and sliced thin
2x small green bell peppers, cored, seeded and sliced thin
1x small green or red hot pepper, cored, seeded, sliced thin
2tsp Sea salt and pepper
2x wedges of preserved lemons, rinsed and drained, pulp discarded, peel sliced thin
2tsp Coarsely chopped Italian flat-leaf parsley
Sprigs of fresh coriander for garnish
For our Middle Eastern recipe this month, we visit the kitchen of Chef , from the Shangri-La Qaryat Al Beri Hotel, Abu Dhabi, for a delicious Moroccan spiced baked fish dish.

Directions:
Prepare the charmoula a day in advance. Blend the garlic, spices, herbs, and pepper flakes. Add the lemon juice and olive oil, and blend until smooth. Slowly heat mixture in a small saucepan, stirring, until hot and aromatic, do not boil. Let cool, then divide mixture in half. Rinse the fish, and pat it dry with paper towels. Rub one portion of the spice mixture into the fish and let it stand at least one hour or overnight preferably. Add ½ a cup of hot water to the remaining spice mixture, cover, and refrigerate separately (The recipe can be prepared to this point a day ahead).
About 1½ hours before serving, preheat oven to 300 degrees. Spread two tablespoons of the charmoula over the bottom of a shallow baking dish. Scatter the carrots on the bottom and sprinkle with a little charmoula. Add half the tomatoes, bell peppers, and chilli pepper, sprinkle with a little charmoula. Lay the fish over the vegetables and cover with the preserved lemon peel and the remaining tomatoes and peppers in a decorative pattern. Spread the remaining charmoula over all. Cover tightly and bake for 45 minutes. Once done, pour off the liquid from the fish into a small saucepan. Bring it to a boil over moderately high heat, and reduce to a ½ cup of thick liquid. Pour it back over the fish. Raise the oven temperature to 500 degrees. Uncover the baking dish, baste with the pan juices, and bake in the top third of the oven for 10 minutes, or until a nice crust has formed over the vegetables. Sprinkle with parsley and garnish with coriander. Serve warm.
