Seu Jorge Presents The Life Aquatic The Brazilian Singer presents The Life Aquatic: A Tribute to David Bowie at Faena Theater. In commemoration of David Bowie’s passing in January, Seu Jorge, one of Brazil’s most popular new singers, has created a special tribute to David Bowie based on his performance in The Life Aquatic, a 2004 film by Wes Anderson. Seu Jorge rose to international fame in Wes Anderson’s film The Life Aquatic as sailor Pelé dos Santos, who sang several David Bowie classics in Portuguese, perched on the bow of the Belafonte. Bowie himself even said, “Had Seu Jorge not recorded my songs in Portuguese, I would never have heard this new level of beauty which he has imbued them with.” This special tribute will be played at

LOS FUEGOS LUNCH MENU Choripán and the elegance of street food For Francis Mallmann, cooking is about the dynamic juxtaposition of flavor. One side is charred and the other is cold, one side is salted and the other left to it’s natural flavors, or in this case a simple gaucho’s sandwich — Choripán— is placed next to Prime Rib-Eye and Mediterranean Branzino on the lunch menu at Los Fuegos. “These are the highs and the lows,” explains chef Francis Mallmann, “Choripán is an indulgence, juicy and flavorful, that is elegance.” Traditionally, the gauchos on the Pampas would eat it standing up, slicing the sausage with their knife and letting the juices run onto the bread of the sandwich. These days choripán is a simple street food in Argentina, and Francis wouldn’t have it any other way on his menu here. He cooks the sausage above the flame for 30 minutes before butterflying it and finishing on the grill. Topped with chimichurri, it is not to be missed.

There is a cognitive gap between how we describe our daily problems and tempers in terms of weather and how it actually affects our behavior.
Chef Paul Qui invites his friends from Miami and beyond for a night of creativity at Pao in a monthly series.
Join us on September 20th as we welcome chef Yoshi Okai, Executive Chef of Otoko in Austin, Texas as the chefs create a kaiseki experience, haute cuisine inspired by Yoshi’s home of Kyoto, Japan’s former capital city. In 2015, Yoshi was named head chef of Otoko, Paul Qui’s 12-seat Japanese restaurant. A Kyoto -born jack-of-all-Japanese-trades, Yoshi created a 22-course tasting menu that is a journey through different preparations of Japanese cuisine. Traditionally a kaiseki experience progresses from light appetizers to steamed, fried, and grilled courses, then closes with a hot pot soup, fresh fruit, and dessert. In Kyoto the flavors skew toward umami over saltiness, which translates to Otoko’s use of a lighter shoyu soy sauce and signature dashi that’s savory enough to sip on.
Yoshi has been a collaborator and friend to Paul for many years, working with him at East Side King, Qui, and now Otoko. He is thrilled for the opportunity to join Paul at Pao for this collaboration. Yoshi currently plays with the band Kuroneko (Black Cat), and says he sees parallels between making sushi and making music: they both require flexibility, and they both make people happy.

“Weather is necessary to a narrative of human experience,” Mark Twain conceded in the opening lines of The American Claimant, where he decided to do without it because he thought it interrupted the flow of the plot. His, however, is not a weatherless book; on the contrary, weather pervades every line of the narrative as if it were a translucent ghost with the wingspread of a fictional universe.
On Turner J.M.W. Turner’s omnivorous eye was trained by the weather. A famous, if sometimes debated event, has Turner lashed to the mast of a ship struggling through a snowstorm to better experience its force. The natural effects of light and weather (the atmosphere) play a crucial role on Turner’s concept of vision. Every glorious, hazy wash of light in his paintings is also an emotional report.
And so weather pervades our food, our architecture, our journeys, our maps, our relationships and our entire emotional universe, even if as a quiet metaphor. It is just there, rooted in our language, recreated in our imagination, and setting the tone for our experience. And it works so well as a symbol partly because its literal manifestation is oddly “slippery”, as Alexandra Harris explains in “Weatherland”. The greatest thing about its unstable quality is that it is revealed only in the effects it has on other things. The weather is never the weather but what it does to things. It is this nature, so similar to our changeable minds, what makes it a supplier of metaphors for the human experience. Moods can brighten and darken, dispositions can be sunny and cloudy, memory can be foggy and receptions can be cold. And yet there is a cognitive gap between how we describe our daily problems and tempers in terms of weather and how it actually affects our behavior. According to recent works on climate science, there are many strange ways in which our behaviors are influenced by the ever-changing weather, and not just the obvious ways such as being happy in the sun and sad in the rain. From influencing what colors we wear to how we judge criminals, from the limits of human creativity to how we treat strangers, temperatures have a great effect on the human psyche, and weather metaphors, it seems, tend to be too obvious to be accurate. Of the many aspects of weather, sunshine is the most intimately tied to mood. Although the link works in stranger ways that what is immediately evident. Generosity, for instance, is often drawn
out of people when they suffer the shared hardships which can occur as a result of extreme cold or prolonged darkness. The same goes for empathy, which is typically associated to “good” weather (sunny days). Even if humans are not believed to be all that seasonal (like plants and animals) the log of our emotions is marked by Earth’s multiple motions–– spinning on its axis and orbiting the sun. The higher the temperature, for example, the more people are likely to act aggressively. Rates of aggression are higher in the spring and summer months than in the fall and winter, and humidity tends to make people more tired and irritable. Every change of light, every tilt of the Earth affects small from things like our pupil dilation and alertness, to bigger ones such as our melatonin and serotonin levels. The effects of weather on our mood, however, are not straightforwardly biological. They are also psychological and social (one reason why heat is associated with aggression, for example, is that people interact more in public in hot weather). But regardless if the effects are biological, cultural, social or psychological, the weather is still behind it all. “Weather is necessary to a narrative of human experience,” because it created human experience. It created culture and it molded the bodies and the brains with which we undergo it. Perhaps the only way for weather to “get in the way” of our plot is to undermine it with weak metaphors. In the end, weather is the author of history.
