MEXICAN BEEF
Prep Time: 20 mins Cook Time: 40 mins Serves: 4
Ingredients
ȩ 500g beef mince ȩ I tbsp oil ȩ 1 onion ȩ 2 carrots ȩ 1 or ½ red capsicum ȩ 1 medium sweet potato
Steps
ȩ 1 can corn kernels or red kidney beans ȩ 1 packet taco seasoning* ȩ 1 tsp vegetable stock powder ȩ 1 cup tomato cooking sauce or passata ȩ 1 cup water
1. Dice all the vegetables or use a food processor.
2. Fry the onion and red capsicum.
3. Add the beef and cook until brown.
4. Add the remaining vegetables and cook for 5 minutes.
5. Add the Vegeta seasoning, tomato cooking sauce or passata and water.
6. Simmer for 15-20 minutes on low heat.
7. Serve with rice or couscous.
Note: you can use zucchini or pumpkin
* If you do not have taco seasoning use 1 tsp of ground cumin and 2 tsp of sweet paprika.
