Letter From The Publisher Greetings, I can't believe we are talking about Summer Camp already! I know it seems soon, but the school year will be over before you know it. A pro tip: it is never too early to book camp. Many camps fill up quickly! To help you decide where to send the kids this summer, PB Parenting has put together our 11th annual Summer Camp Directory. There is a camp for every age, interest, location, and budget. If you go online to our website, we even have an interactive map and drop-down menu to help narrow down your search. Coming up even faster than summer, Spring Break is less than two weeks away! We have you covered there with Spring Break camps on page 12. If you are taking some time off for Spring Break and spending it with the kids, we have some suggestions for some fun things to do right here in your backyard! You don't need to travel far. We live where people want to vacation, and the weather is usually warm and sunny. It is the perfect time to go to the beach, science center, or zoo. On a personal note, my youngest child hits double digits this month!! The BIG 10 TEN! Time has flown by as both my children are getting so big (LOL, they are almost as tall as me). Tips for Choosing the Right Camp for Your Child Summer is right around the corner. School will be out but you may still be working or just simply need a break from the kids during the long weeks of summer. According to a recent online survey, Parents say they expect to spend an average of $998 per child on summer child care expenses. Of these parents, one in five parents say they plan on spending over $2,000 per child for summertime child-care services, that includes summer camps, classes or baby-sitters. With the possibility of spending thousands of dollars this summer, you want to make sure you are sending your child to the right camp for your family’s budget. Here are some tips from PB Parenting for finding the right camp that fits your child and budget. Healthy, delicious and internationally-inspired, your family will love this easy dinner recipe. Chicken Apple Enchiladas Recipe courtesy of Healthy Family Project’s Mission for Nutrition 1/2 sweet onion, diced 1 jalapeno, diced 1 Envy or Jazz apple, diced 2 cups cooked shredded chicken 8 flour tortillas 6 ounces shredded Mexican blend cheese, divided
1 can red enchilada sauce cilantro (optional) Heat oven to 350 F. In skillet, cook onions until translucent. Add jalapeno and apple; saute 2-3 minutes. Add cooked chicken and mix well. Remove from heat. Lay out tortillas and sprinkle cheese on each. Add chicken mixture and roll. Place in baking dish and cover with enchilada sauce. Bake 20 minutes, or until heated throughout. Serve with homemade apple pico de gallo, yellow rice and black beans. You can make apple salsa with all the ingredients I had on hand to make this recipe, plus some tomatoes and a little lime juice. It was so easy to make and absolutely delicious! Eat it with chips and we also put it on top of the rice and beans.

TRAVELS & Places to go Seven Seas Food and Wine Festival at Sea World Orlando STORY AND PHOTOS BY MARIANNA FRANCES This was my family's first experience at the Seven Seas Food and Wine Festival at Sea World Orlando, and I'm not sure why. Thinking about the day we had and the ease of moving through the attractions was perfect, and still plenty of room to be socially distant. I was highly impressed with how Sea World had the event set up and organized. My family and I experience most of the annual festivals at Epcot, and even though I love everything Disney… the lines are long, the portions are small and honestly, I feel most food stands are a bit overrated. When I went to Sea World, I wasn't sure what to expect and was a bit overwhelmed with the thought of buying a lanyard and going stand to stand. What if there was nothing I wanted to eat? Would they have vegetarian or gluten free options? Options my picky kids would actually eat? Similar to Epcot, there are stands
located outside of each food kiosk with the three food selections you can choose from as well as the specialty drinks. The a la cart price is listed as well. If you plan on spending the day there, I would say the food and drink sampling lanyard is the way to go. You can even share one lanyard between family members or a large group. I had become so used to the small food portions at Epcot, that when I received my first order at Sea World, I thought they must have gotten my order wrong. It was a fullsize portion. FULL SIZE. For adult drinks, you can use two "punches" for a full-size drink. Don't feel like you have to use your entire card in one day. The festival goes on until May 8, 2022, and you can use the card as little or as much as you want until then. There are 24 different tasting locations that are themed with plenty of maps located around the property to guide your way. My boys loved the independence of taking the lanyard to the counter, ordering what they wanted, and paying with the punch card. Not a ride person? Not a problem… there are plenty of shows, concerts, and shopping options to keep everyone entertained and smiling. Marianna Frances is PB Parenting’s Treasure Coast Editor.
