Letter From The Publisher Greetings, Where did another year go? At the end of the year I reflect on what has happened this past year and all the milestones achieved by my family. I feel like they are all growing up so fast. My youngest “baby” is no longer a baby and started kindergarten, my step-son officially entered those dreaded teenage years and my daughter seems like she’s already a teenager with her 8-year old attitude. There will definitely be a challenging new year to say the least. My “other baby”, PB Parenting, turned 6 this year! Time has flown so fast and we are entering into our 7th year of publishing! I want to thank all our readers and advertisers for your continued support of PB Parenting. Also my amazing team! These issues that you read every month, couldn’t be put together without my amazing team which is continuing to grow. I look forward to what year 7 brings to our publication and would love your feedback with any ideas that you would love to see. Don’t forget we aren’t just a paper publication! Eat well When life gets hectic, healthy eating is often the first thing to go—quickly followed by dropping blood sugar and rising stress levels! If you have time, prepare a few meals before the holiday rush to keep in the freezer for those nights you are too tired to cook. Or, before you hit the drive-thru of a fast food restaurant (again) consider instead picking up a rotisserie chicken and a bag of steam- able veggies from the grocery store. December is the month to make dinner as easy as possible. It might even be the perfect time to try out a meal service such as Blue apron. Don’t forget snacks—for both you and the kids. Pack a bag with nonperishable snacks and bottled water to keep in the car for the inevitable time you get stuck in traffic and you or the kids get hungry Choose convenience whenever possible Is it really necessary to bake cookies from scratch for decorating when refrigerated dough is readily available? Will your kids remember decorating cookies with you or that you made the dough from scratch? Make a gift budget I know, easier said than done. But making and sticking to a budget will make your new year much less stressful. Figure out who you will be giving to a make a list, then divide that by the dollar amount you can afford to spend. Do you really need to buy your coworkers or your kids’ and teachers gifts from the mall, or would they be just as happy with a plate of cookies or a card? Divide and conquer Once you have a list, divide it with

your spouse. It’s easy to overbuy when you both pick up the same item—or worse—forget a gift because you each thought the other had it covered. Keep routines Children thrive on routine and although there will some upset in nap and dinner schedules, try to schedule activities around the kids. Your routine is important too! From the cup of coffee consumed in peace while reading the news before the household awakes to dipping into a favorite novel at bedtime, routines keep parents sane too. Cook less for the holiday dinner The holiday dinner can be a huge stressor, especially if you are the cook! Consider purchasing a prepped, readyto-cook holiday dinner with all the trimmings at your local grocery store. Most major chains offer a variety of meals such as ham, turkey or prime rib, often for as much or less that you would pay when buying the ingredients to cook your own. You can still make Grandma’s special pie recipe or your families traditional stuffing to go with the meal, but think of how much easier the holiday will be if that is all you make from scratch! Trim the card list Are you still sending holiday cards to your friend from college who you haven’t heard from since graduation? Or do you get a batch of “no longer at this address” cards back in your mailbox every year? Cut your card list to those who you really want to communicate with to save both time and postage. Speaking of postage… There is nothing wrong with electronic cards, especially if you are short on


time and money. Folks really just want to know that you are well and see pictures of the kids. Sending a general greeting that includes pics of the kids is easy and free. It’s easy to lose the meaning of the winter holidays when chaos instead of joy reigns. But by cutting back or rethinking your holiday commitments and activities and practicing some self-care you can truly enjoy the most magical time of the year. Road Trip Boredom Busters Do your holidays include a trip through the woods to grandmother’s house? The family road trip can be a time to bond and learn about each other’s interests and points of view — or an ordeal that makes you want to scream every time you hear “Are we there yet?” from your kids. A road trip can be a fun, educational, and sane experience with just a little planning, creativity, and preparation. Sure, electronic games, apps, and portable DVD players are great distractions. Pick a topic (for instance, animals) and a letter (A), then have everyone name animals that begin with that letter, like aardvark, antelope, ape. The best thing about this game is that kids can pick a topic of interest — cars, TV characters, countries, cities, foods, names, etc. — and there are 26 possibilities (one for each letter) for every topic. Make the games into marathons, awarding special treats or trinkets to whoever wins each round. Then have lightning rounds or finals for extra-special awards. Journal Jotting Buy cheap but sturdy journals (or use plain notebooks or create your own from construction paper, hole puncher, and yarn) and have kids write down and describe what they see along the way. Have them collect something small (a stone, a seashell, a flower, etc.) or buy a super-small trinket from rest stops (buttons, stickers, postcards, etc.) to glue into their journal, describing each stop and each location or landmark

HOW TO INSTANT POT Maybe you have one and you don’t know how to use it or you keep hearing your friends talk about it. Come meet Mom’s new best friend for quick nutritious family meals!

The Instant Pot: A pressure cooker, slow cooker, rice maker, yogurt maker, steamer, sauté pan, and warmer all in one. This genius tool can cook dinners while you’re at work, make yogurt while you sleep, steam rice and vegetables quickly, make No-Stir Risotto in 20 minutes, mull cider, and even roast a potato. There’s virtually nothing it can’t do! The trick is to know how to use it. Check out Daniel Shumski’s new book How to Instant Pot so you can learn how to master all the functions that this handy kitchen appliance does. Here are two tasty and quick recipe excerpts from his book. No-Stir Risotto This creamy, comforting Italian rice dish conjures up images of nearly endless stirring, but happily the Instant Pot relieves you of that duty. That’s right, you get all the flavor (and bragging rights) of risotto without the incessant stirring. Master Method Total time: 20 minutes Active time: 5 minutes Yield: Serves 8 1⁄4 cup (1⁄2 stick) salted butter 2 cups arborio rice

4 cups reduced-salt chicken broth or AllPurpose Chicken Stock 1  Press Sauté and use the Sauté or Adjust button to select the middle temperature (“Normal”). Place the butter in the inner pot, wait about 1 minute for it to melt, then add the rice. Cook with the lid off, stirring occasionally, until the grains of rice are opaque and well coated in butter, about 4 minutes. 2  Add the chicken broth and stir to combine with the risotto, scraping the pot so that no risotto sticks to the bottom. Close and lock the lid. Set the valve to Sealing. Press Cancel, then press Manual or Pressure Cook and use the Pressure or Pressure Level button to select High Pressure. Use the – or + button to set the time to 7 minutes. 3  When the cooking cycle ends, carefully use a wooden spoon to release the pressure by turning the pressure-release valve to Venting. (The pressure is released when the small metal float valve next to the pressurerelease valve sinks back into the lid and the lid is no longer locked.) 4  Press Cancel and remove the lid. Stir the risotto thoroughly and serve hot. No-Stir Risotto will keep, in an airtight


container in the refrigerator, for up to 3 days. Risotto does not reheat particularly well, though. Your best bet is placing it in a pot with a generous splash of chicken broth. Warm the pot on the stovetop over medium-low heat while stirring occasionally for about 5 minutes, adding more broth as needed to give the risotto a loose and creamy texture. More Flavoring and Serving Ideas for Risotto • Serve with freshly grated Parmesan cheese. • Serve with Caramelized Onions • Serve with a spoonful of Roasted Garlic stirred in. • Crush a few threads of saffron between your fingers and add them to the inner pot with the rice in the Master Method. • Add cooked crab or lobster meat to the Master Method recipe just before serving. • Is everything better with bacon? Risotto certainly can be. After opening the lid, fold in cooked, chopped bacon. • Turn leftover risotto into risotto cakes: For each 3 cups cooked risotto, mix in 1 egg yolk and 1⁄2 cup breadcrumbs. Form the mixture into 12 balls, then flatten the balls into 2-inch pucks. Pan-fry with oil in a skillet until golden brown, about 3 minutes on each side. Ziti with Italian Sausage Total time: 3 hours 30 minutes  Active time: 30 minutes  Yield: Serves 6 This is on the shorter side of slow-cooking times, which means you can plan to make it in the afternoon rather than the morning. Maybe the weather turns lousy and you decide to take on a tiny, delicious cooking project. This dish turns out almost like a casserole with the tomato infused into the soft pasta. It’s made for a chilly evening and a glass of red wine (chilly evening optional). Round out the meal with a tossed salad or grilled vegetables.

Use the − or + button to set the time to 3 hours. 5  When the cooking time is finished, press Cancel and remove the lid. Stir the pasta gently, then divide the pasta, sausage, and sauce among 6 bowls. Top with mozzarella before serving hot. Ziti with Italian Sausage will keep, in an airtight container in the refrigerator, for up to 4 days.
