Three rare oils. Three unique tastes.


Land, Culture, Traditions and Passion. Such are the olive oils produced by “Carbone” company. The agricultural company „Carbone” is in Laureana di Borello, an ancient rural village. The village is enclosed by the immense olive forest, singling out the region’s magnificent landscape. Olive groves of Ottobratica, Tombarello, Ciciarello and also some newer varieties of Coroneiki and Nocellare grow at the foot of Aspromonte mountain, overlooking the Gioia Tauro Plain. Such variety provides for noteworthy extra virgin olive oils. Each of them has its individual character and specific philosophy. Ferdinando and Nicola Carbone cultivate more than 60 hectares of olive groves first attended by their grandfather Nicola and then by their father Pasquale in the fertile place of “Piani Marzano” since 1950.

The key to the Carbone brothers’ philosophy lies in the concept of olive oil not only as a simple seasoning, but as a product with its own dignity, just as wine. Nicola is the expert of olive growing who, with exceptional competence and professional experience, pays attention to all aspects of agronomy and manages the farm environmentally friendly, in accordance with the principles of organic farming and guarantees the high quality in the whole of the supply chain: from harvesting of olives to the bottling of oil. Ferdinando takes care of the processing, marketing and distribution. They both want to produce a high quality product investing resources and energy, constantly comparing and entrusting in qualified specialists.


Quality is fruit of knowledge that comes from far away. The corporate quality and traditions of product innovation are also maintained in the process of oil extraction and bottling: one day mill, cold pressing, low water consumption, bottling in a controlled atmosphere. The manufacturing process is fully controlled by traceable certified equipment to guarantee the highest quality for the consumer. Particular attention of the market is turned to original products of „triptych quality” produced from original crops of Carbone company and sold abroad. This way the partnership with W.Goldfinger Int’l initiated and the brand “Trueataly, responsible Italian Food” was born, and it builds up an international network in Brazil, Japan, the United States and Northern Europe.

Coroneiki

from single variety of Coroneiki “CORONEIKI” is exclusive, refined olive oil of light texture – a wonderful example of how it is possible to keep old traditions of oil making today and how, using rare and ancient variety of olives, to reestablish a myth of Magna Graecia (Mighty Greece) in Calabria. The legend has it that Ulysses made cyclops Polyphemus, son of Neptune, blind by a branch of Coroneiki olive tree...

Extra virgin olive oil „CORONEIKI” is obtained from the homonymous variety of olives and features a clear appearance. A careful visual inspection discloses that its color tonality varies between green and yellow. Once smelled the oil offers medium intensity of fruity aroma of ripe olives, which is made more pleasant by hints of ripe fruits (banana), vegetables (lettuce) and olive leafs. Harmonious taste reveals the notes of “sweetness” followed “spicy” and “bitter” notes all persistent and in balance with each other. The complex taste bouquet is completed by nuts (cedar nuts and sweet almonds) which all together create homogeneous taste of „CORONEIKI”. Olive oil of light texture is ideal with traditional first courses or bean soups, beef carpaccio and roasted game meat.

from varieties of Ottobratica, Tombarello, Ciciarello „TER” because 3 is an ideal number because there are 3 parameters characteristic to olive oil (fruity, bitter, spicy), but mostly because there are 3 main varieties which make this oil unique and display the typical and authentic taste of Calabria region.

Extra virgin olive oil „TER” made of the three most popular olive varieties in Calabria region (Ottobratica, Tombarello un Ciciarello). It has a clear, green colour with golden hues. Medium intensity fruity aroma with hints of ripe olives. The mature aroma is instantly perceived by the olfactory receptors – ripe fruit (Golden apple) and dried fruit (carob). The taste is characterized by strong yet harmonious „sweetness” followed by „spicy” accent allowing to enjoy a pleasant „bitterness” reminding of chicory. In closing obvious feeling of hazelnuts and almonds completes olive oil „TER” profile. Ideal with grilled meat, oven-roasted kid, mushrooms and fish (tuna, swordfish) to the plate.

Laureanum

from single variety of Nocellara High quality extra virgin olive oil “LAUREANUM” made in Laureana di Borrello (RC) region, the „laurel” city of ancient Byzantium and greatly suited for the cultivation of olives as the whole area of Gioia Tauro Plain once called „vallis salinarum” (salt valley). Extra virgin olive oil „LAUREANUM” is obtained from one variety of olives Nocellare. It is clear, golden yellow with intensive tint of green. Once smelled the oil offers intensive aroma of olives picked while still green followed by ripe tomatoes, vegetables (chard) and herbs. „LAUREANUM” taste bouquet can be described as „sweet” followed with the „spicy” notes, reminding of chilli, and „bitter” thus composing a harmonious flavour. The Balsamic taste characteristic of this extra virgin olive oil is enriched by sweet almond and walnut making it pleasant and persistent. It is ideal with seafood first courses, marinated raw fish, shellfish, baked or grilled white meat.
