> Virtual carol concert a success In December, the Fine & Country Foundation hosted its annual carol concert, Carols for Causes, on Facebook Live with friends, family and loved ones enjoying the evening’s festivities from all corners of the world. The evening’s carols were performed by Bishop’s Stortford Upper Sixth Choir, with the programme featuring classics including ‘Oh Come All Ye Faithful’, ‘Once in Royal David’s City’ and ‘Hark! The Herald Angels Sing’. Attendees were mesmerised by the exceptional talent of the choir. The carols were interspersed with testimonials from charities awarded grants by the Fine & Country Foundation during 2020, one of the most challenging years faced by the sector. The evening came to a climactic crescendo with a performance from the Ndlovu Youth Choir from Limpopo, South Africa, who appeared on America’s Got Talent. Their energetic renditions of ‘Higher Love’ and ‘All I Want for Christmas’ provided the perfect, uplifting end to the concert – and the year. The event raised over £3,000 with proceeds donated to charities that aid the fight against homelessness and poverty. I
nternational travel seems some way off still, but when borders do reopen, there’ll be a number of new faces on the luxury accommodation scene. A surprising number of high-end hotels are planning to open their doors in 2021. Here are five on our wish list. 1. Vietnam: Zannier Hotels Bãi San Hô Based on Da Vinci’s quote, “Simplicity is the ultimate sophistication”, Zannier Hotels creates experiences that focus on local authenticity, understated luxury and simple, unpretentious design.
Zannier Hotels Bãi San Hô is the newest addition to the boutique family of properties. The resort takes its name from the private one-kilometre coral reef bay it overlooks on a secluded peninsula in Phu Yen province on Vietnam’s South-Central coast. Phu Yen is as yet relatively undiscovered by visitors. The rugged region offers diverse landscapes, myriad wildlife and sweeping panoramas, with mountains on one side
and cliffs giving way to pristine sandy beaches and hidden coves on the other. With a handful of fishing villages and miles of untouched coastline, visitors can experience local life by harvesting oysters, learning how to cultivate rice, taking a trip aboard a traditional long boat or hiking or cycling along a network of trails. The history of the region can be explored through the ancient ruins of the Champa Kingdom and Nhan Tower. Those seeking serenity and comfort, though, can stay ensconced in the resort, which represents Vietnam’s rich culture and history through a journey of the senses. The 71 villas here, over half of which have private pools, have been ecologically built using age-old techniques and are inspired by traditional Vietnamese dwellings. The pared-down interiors feature a collection of Vietnamese paintings, silk prints, and furniture handcrafted from reclaimed wood and bamboo. The villas are discreetly positioned, ensuring privacy, with views ranging from traditional rice paddy fields to dramatic hilltops or the powder white beach. Naturally, gastronomy is integral, with three dining options available: Bà Hai sees chefs using traditional recipes handed down from their mothers and grandmothers; Nhà Ở serves all-day South East Asian dishes; and Làng Chài is a beachfront restaurant offering fresh seafood. 2. Mozambique: Kisawa Sanctuary Scheduled to open in early 2021, Kisawa Sanctuary pairs cultural celebration with environmental conservation in Mozambique. Kisawa is a 300-hectare sanctuary of forest, beach and sand dunes on the southern tip of Benguerra Island, which sits 14 kilometres off the coast. Part of the Bazaruto Archipelao, this WWF National Marine Park is home to some of the richest and least-explored subtropical ecosystems in the Indian Ocean. A dramatic 150-metre-high sand dune overlooks the sanctuary, a place more than 145 bird species, including flamingos, call home. Orcas, manta rays, dugongs, whale sharks and an assortment of dolphins are either regular visitors or permanent residents. The island’s warm, clear waters are also a globally significant nursery for humpback whales, along with five species of nesting sea turtles. The array of marine life here is nothing short of spectacular. Kisawa comprises 12 one-, two- and three-bedroom bungalows, plus The Kisawa Residence, positioned within a 300-hectare stretch of forest, beach and sand dunes. Each uniquely designed bungalow is housed within its own oneacre plot, offering maximum privacy. Each also has its own stretch of beachfront, private swimming pool and shaded day area with outdoor kitchen, massage hut and pantry. Interestingly, Kisawa’s architecture incorporates a patented 3D printing technology, commissioned specifically for this project, created by a mortar comprised of the island’s sand and seawater. This eco-friendly building material is used throughout the property. This aesthetic is paired with Mozambican weaving and thatching, carpentry and textile skills, involving artisans from Benguerra and neighbouring islands. An upbeat, earthy colour palette references 1970s Mozambique and is complemented by patterns and prints inspired by regional traditions. Guests can choose between multiple dining venues and relaxation facilities across the sanctuary, including two beach “cozinhas,” a beach bar “barraca,” a library and main terrace. There is also a standalone spa, which specialises in traditional Chinese medicine and Ayurvedic offerings. Malta: Iniala Harbour House & Residences Set to open in April 2021 and located on the prestigious and historic St. Barbara Bastion, Iniala Harbour House & Residences is bound to be the hottest five-star hotel in Valletta, Malta. Spread across four exquisite Maltese townhouses and their ancient vaults, dating back to the 1600s, this is the latest opening from philanthropist Mark Weingard. The hotel, which overlooks the Grand Harbour, will set new standards for eye-catching urban design. A UNESCO World Heritage site steeped in history, Valletta has an abundance of sights and activities. Iniala Harbour House & Residences will provide land, sea, art and cultural experiences in the capital, such as underground private tours of Valletta, and exclusive use of Iniala’s luxury boat and diving experiences, including an underwater photography workshop. Iniala Harbour House & Residences has 23 uniquely designed rooms and suites, mixing tradition with more contemporary touches, offering an eclectic mix of design concepts that reflects Valletta’s unique heritage and charm. Created by three world-class design studios – A-Cero from Spain, Autoban from Turkey and Malta’s DAAA HAUS – the historical details of the properties are beautifully preserved, with each townhouse having a unique identity. USA: Ambiente Hotel Nestled into the geology of the Arizonian desert town of Sedona, enclosed by rugged landscape and the protected preserve of the Coconino National Forest, lies the new Ambiente hotel, due to open in August 2021. A first of its kind in North America, Ambiente, a Landscape Hotel, is uniquely designed to blend in with the mystical red rocks of Sedona and give guests the opportunity to experience and embrace the natural beauty that surrounds them.

The Maldives: Patina Maldives Set to open in the first quarter of 2021, Patina Maldives will be the inaugural flagship resort from Patina Hotels & Resorts, a new lifestyle brand by Capella Hotel Group. The resort is situated in the heart of the Fari Islands archipelago, located in the North Malé Atoll, a 50-minute boat transfer away from Malé International Airport.
Sedona’s landscape is dramatically colourful. Think towering red rocks and jagged sandstone buttes, contrasted against blue skies. There’s a reason filmmakers are so enamoured by this area – the fiery red rocks have been used as the backdrop for box-office hits including 3:10 to Yuma, Broken Arrow and Midnight Run. In this setting, Ambiente is being developed with a deep respect for the environment, blending sustainable methods and organic, modern architecture that minimises the impact on the surrounding land. The hotel comprises 40 cubed-shaped guest Atriums that are elevated above the ground by steel piers and constructed using floor-to-ceiling, bronze-tinted glass and matt-charcoal and rusted metal. Designed by Scottsdale-based ASUL Architects, Ambiente is constructed around the natural vegetation and topography, requiring less cut and fill, which meets today’s expectations of being responsible land stewards. The pier method to building the Atriums eliminates the need to grade the land. During construction, this allows each Atrium to be rotated and individually hand placed at specific angles to fit, as best as possible, within the existing trees and flora, maximising the views, while minimising environmental impact. T
he pandemic has accelerated the existing trend towards lifestyle changes and healthier eating habits. The provenance of the food we eat has become increasingly important over the past decade. People are demanding more transparency around what they eat – they want real food, with real flavour. Wine producers were the first to heed the call and many other sectors, like coffee and chocolate producers, followed. What does this have to do with golf? As part of the move to sustainability and concern for the environment, many golf resorts have been undertaking developments that will be in greater demand in the future. The social and environmental responsibility adopted by European Tour Destinations venues, for example, has placed them in an enviable position, with the ability to respond to new demands for a healthier lifestyle. Understanding the importance of ensuring the sustainability of the natural environment and supporting the local community has been a cornerstone of their development. Golf by its very nature is a sport that connects players with the natural environment, but it can be much more than that, as evidenced by properties such as PGA Catalunya in Spain. Originally, the land the property occupies was set aside for the construction of an F1 Grand Prix track, but instead, from its inception, the resort near Barcelona has demonstrated its commitment to maintaining and enhancing the environment.
In 2013, it was the first resort in Catalonia to attain golf’s international eco-label. It continued its development as a showpiece for sustainability. Projects such as welcoming a million new honeybees, a programme managed by the in-house biologist, not only supported saving the endangered endemic black bee but also resulted in the production of house-made honey. The bees feed on the resort’s organic gardens and the surrounding Natural Park and produce an amber-coloured honey that tastes of the region. The honey is used in all of the resort’s restaurants and was launched at the Pure Food Market. Striving to have minimum impact from the golf courses and real-estate development has involved transplanting hundreds of trees to promote the natural balance. And then there’s the vineyard, which re-establishes the old Catalan tradition of family wine production for their own consumption. The approach of carefully treating new vines with only 100% natural products has yielded high-quality fruit. The resort now offers its own CamÍ Ral rosé, red and white wines, all produced from the vineyard harvest. Verdura Resort in Sicily capitalises on its location, with 230 hectares of Mediterranean coastline and countryside. Cooking classes that promote Sicilian cuisine are on offer, with a focus on classic dishes and culinary traditions. Chocolate, homemade pasta, pizza, Sicilian caponata and Sicilian pastry are taught at the Culinary School. The masterclass concentrates on some of Verdura’s most ➤➤

popular dishes. The dishes are made using the freshest local ingredients – greens are hand-picked from the resort’s own vegetable garden and oranges and olives are collected from the groves. A focus on local ingredients is intrinsic to the offerings at so many of European Tour Destinations venues. At Lighthouse Golf and Spa resort in Bulgaria, the restaurants serve up daily specials including Black Sea fish enhanced by fresh bio vegetables and herbs from their own herb garden. Terre Blanche in France uses the seasonal produce of its Provencal countryside location. With its own bakery and the best local ingredients, from Moulin de Callas olive oil to goats’ cheese produced by the Monteiro family, the restaurants pay homage to southern French cuisine. As part of the commitment to a sustainable approach, Terre Blanche has set up beehives near the main preserved natural areas. The honey produced is free from chemical pollution and can be sampled in the restaurants. The bees are also used as a way of raising environmental awareness among younger people. Discovery workshops are organised every year at the Kids’ Club to teach children about the role of bees and the honey-making process. There is also a herb garden in the heart of the resort that offers around

15 herbs, which are used by the restaurant chefs. Accepting seasonal constraints is the first step towards a sustainable and environmentally responsible approach. In Portugal, Quinta do Lago literally translates to “farm on the lake”, so it’s not surprising that 2,300 square metres of farmland has been developed to support the mission of sustainability and enhance the quality of life in the resort. Embracing the location in the Algarve with the Atlantic on its doorstep, Quinta do Lago makes the most of a ready supply of local wild-caught fish and 40 different products are provided by the resort’s restaurants.
Organic farming principles are applied on the Q Farm and the supply of freshly harvested herbs and vegetables has resulted in some interesting developments in the cuisine on offer in the restaurants. Recognising that diet is a lifestyle choice, a greater range of plant-based options have appeared on the menus. Almost half the lunch bowls offered at Pure café are vegan or vegetarian. These initiatives all point in one direction: an increasing emphasis on sustainability, provenance and health. It’s clear to see these resorts are making a mark on the map that extends well beyond a game of golf. n

Storage One of the main downfalls of working from home is that paperwork, notepads and files can stack up quickly. There has never been a better time to make that long-standing resolution of going paperless a reality. This is the perfect time to invest in cloud-based storage.
Multifunctional furniture If you don’t have a study or space for a desk and need to incorporate your workspace into an existing room, you may be able to utilise an existing piece of furniture. A side table in your sitting room or dining room can easily become a desk during the day. It doesn’t need to be bulky if you are using a laptop.
If going paperless is not an option, buy some storage boxes for your paperwork and office supplies and match them to your colour scheme for an intentionally coordinated aesthetic. Equally, a plastic storage box can contain your items and be stored away in a cupboard.

If you would rather work at the dining room table or a kitchen island, organisation and storage are key to avoiding these spaces having an office look on a permanent basis. Find a neat place for everything and operate a clear-desk policy when the working day is done. Temporarily converting a guest bedroom Bedrooms can work well as studies, especially if you have an unused guest room. A dressing table can double up as a desk and extra storage boxes should fit into a wardrobe. Do your children have a playroom you could use as a study during the daytime when they are at school? Do you have a home gym that hardly gets used? You could move the equipment around to accommodate a desk – or put the gym equipment in the garage if you habitually leave your car on the driveway. Utilising additional space Consider partially converting a loft space or an outbuilding into an office. An office in an outbuilding, if it is big enough, could become a cinema room in the evenings or on weekends. Alternatively, you could convert a loft space into an office, but also furnish it with a sofa bed so it can be used as a guest room when needed. Make sure you have the right planning permissions in place to do this work and remember, if the outside building is only used as an office, it may be liable for capital gains tax when you sell. Built-in office space Some people don’t like to be shut away in an office or study and want to be in the heart of the home, which is usually the kitchen. Building a desk as part of your kitchen cabinetry can look really smart. It can be hidden away behind doors or can be left open as a design feature. You can do the same in other rooms, too – for instance, built-in cupboards and a desk under the staircase. It’s a great use of space and can be closed off in the evening to hide office untidiness. Alternatively, you could build a desk within your wardrobes, on a landing, in the dining room or wherever there is a nook or cranny that can be filled in.
