GOLDEN FORK WINNER | Terra Rossa | Baba’s Rashi & Dibis

Based on a treat whipped up for breakfast by her father, this sweet tahini and molasses spread is a true taste of Terra Rossa founder Hanan Samara’s Middle Eastern childhood hen Hanan Samara was a little girl she would sometimes wake early to the clink and clank of pots and pans as her ‘baba’ (father) pottered in the kitchen. The comforting noise was a sure sign that she was in for a treat for breakfast – warm bread covered in her father’s special tahini and date molasses spread, better known as rashi & dibis. “My dad was diabetic and really shouldn’t have eaten sweet stuff, but it’s so delicious he couldn’t resist,” she says. “He used to get up early in the morning to make some so we wouldn’t catch him. I’ve always been an early riser so would get up and make it with him.” Tahini mixed with molasses and spices is a kitchen cupboard staple throughout the Middle East, where every family has their own slightly different way of making it. The recipe for Baba’s Rashi and Dibis is a closely guarded secret – it’s all in the blend of

spices, says Samara – which has already had Great Taste success, winning three stars in 2012. This latest version has been upgraded with sesame seeds for added crunch. Hanan’s family were originally from Palestine, but were displaced to Iraq in 1948, where she was born, and then forced to flee again to England in 1969. Having spent most of her life as a computer programmer, she set the business up in 2005 with the aim of introducing the foods and flavours from her childhood to a wider audience (Terra Rossa is the Biblical name for the Levant), first importing olive oil and

Baba’s Rashi and Dibis is made in small batches of up to 500 jars in the commercial kitchen at Sutton Cricket ground, which Hanan hires out on a regular basis. “Nobody was doing anything with our beautiful products from the Middle East, so I thought I would introduce them here,” she says. “This was a long time before Ottolenghi. It’s amazing just how popular Middle Eastern food has become.” terra-rossa.com HOW TO USE IT: Great spread on warm bread like peanut butter, but Rashi & Dibis is also delicious stirred into porridge or custard with bananas. Alternatively, mix with soy sauce as a marinade for chicken or drizzle on ice cream with nuts.

GOLDEN FORK WINNER | Capsicana | Brazilian Chilli & Coconut Cook Sauce

Ever since an epiphany on the sofa, Ben Jackson has sought out unusual Latin American chillies and now he has put some them to good use with a Brazilian-inspired cooking sauce e’ve all had good ideas sitting on the sofa. They usually involve making a cup of tea or having another chocolate biscuit. But when Ben Jackson had a brainwave while kicking back at home one Saturday afternoon in 2009 it ended up changing his life. “I was on the sofa thinking about how I wasn’t really connecting with my job and suddenly had a moment when I decided I was going to do something completely different with my life,” he says. At the time of his epiphany Ben worked in recruitment and had precisely zero experience of the food industry, but he had loved Mexican cuisine since some formative dining experiences in the US. “I remember eating in a Mexican cafeteria in Texas when I was about

He initially imported and sold unusual chilli varieties, before creating his own range of spicy cooking sauces under the Capiscana brand in 2015. “I had discovered chillies like anchos, which are the size of bell peppers and dark brown almost black,” he says. “I thought it was crazy that there was a whole world of

chillies that were vastly different to anything you see here.” The sauces, which are manufactured by a third party to Ben’s carefully researched recipes, include flavours such as Peruvian Chilli & Lemon, made with aji amarillo peppers, Mexican Chilli & Honey with chipotle and ancho poblanos, and Cuban Chilli & Lime with habaneros. The Golden Fork-winning Brazilian Chilli & Coconut sauce, which uses frutescens chillies, is based on the fragrant Brazilian fish stew ‘moqueca’, but is equally good with chicken, pork or vegetables, says Jackson, who has won listings for the range with Sainsbury’s, Whole Foods and Waitrose. “My goal is to make Latin American flavours accessible to as many people in the UK as possible,” he says. THE MIDLANDS For the second year in a row, Worcestershire-based Macneil’s Smokehouse has claimed the Midlands Golden Fork but this time the award is for its beechwood-smoked salmon agle-eyed readers of Great Taste Book might recognise Tony and Bee Macneil. Their happy faces appeared in its pages last year, after Worcestershire-based Macneil’s Smokehouse won a Golden Fork in 2017 for its peppercorn- and lemon zest-encrusted hot smoked mackerel. Fast forward 12 months and they are back again with even broader smiles and another Golden Fork for the mantelpiece, this time for their smoked salmon. “You don’t ever expect to win it twice, especially for two different products” he says. “ It shows we’re on the right track and must be doing something right.” Consistency is not always easy for artisan producers, working at a small scale with natural ingredients that can change with the season. But Macneil’s previous career as a chef has helped in this regard, instilling him with an eye for detail and a natural understanding of flavour. “People will tell you I’m quite particular

in the kitchen,” he says. “I’ve always strongly believed in using the best ingredients and I’m always tasting as I go. I’m my own worst critic.” These qualities are particularly important when it comes to smoked salmon where subtlety is everything. “You want to taste the fish and the smoke together,” he explains.

YOU WANT TO TASTE THE FISH AND THE SMOKE TOGETHER “Key to finding that balance is taking things slowly – not rushing the process.” The company, which launched four years ago, sources super fresh salmon from Scottish farms, which is filleted in house and hand-cured in sea salt and a little sugar for 22-24 hours. The sides are then gently cold smoked over beechwood in a vintage Norwegian smoker, which Macneill brought back to the UK from his last job working as chef at a hotel and restaurant on a Norwegian island. NORTH OF ENGLAND By using the lesser-known Bronte variety of pistachio from Sicily and avoiding all of the nasties used by bigger manufacturers, Ruben Porto has created an ice cream that delivers both in taste and texture here’s ice cream and then there’s Rogue Bronte Pistachio Ice Cream. Made by Ruben Porto in Manchester, the frozen delicacy is a world away from the tubs of factory-made products found lurking in supermarket aisles. Pastel green with a remarkable fragrant flavour accentuated by a pinch of sea salt, the ice cream has a gloriously smooth, creamy texture that “hugs your mouth”, as one Great Taste judge put it. At the heart of this beguiling experience are Bronte pistachios, which come from Mount Etna in Sicily. Known as “green gold”, they are prized for their incredible flavour. “It’s expensive to use real pistachios so people use flavourings, colourings and almonds instead,” explains Porto. “People also buy cheaper Californian pistachios, but the Bronte nuts are very different in flavour and colour. They are much browner, darker, deeper and earthier.” Organic whole milk, double cream

PEOPLE THINK MAKING ICE CREAM IS EASY,BUT IT’S NOT. and free-range egg yolks are other key constituents, but what’s not on the ingredients list is equally crucial. “A lot of the big manufacturers use stabilisers to add shelf life and so the ice cream feels thicker,” he says. “We don’t use anything like that.” Porto’s road to ice cream nirvana is an unusual one. He graduated with a law degree in 2007, but after a week of law school decided to quit. Instead he travelled the world teaching English in Cameroon, Japan, Kuwait and South Korea, which is where he first became interested in ice GREAT TASTE 2018-19

cream, setting up a blog on the subject. The hobby became a business when he moved back to the UK, set up Rogue in a unit in Manchester in 2017 and started selling ice cream at events from a customised cart. “I don’t have the machinery to produce huge quantities, but I like the idea of having a tiny shop one day,” he says. “People think making ice cream is easy, but it’s not. It’s one of the most complex foods. SOUTH WEST ENGLAND Devon’s Pipers Farm has done it again and this year its Wessex Saddleback pork steaks – sourced from a partner farm in Somerset – have wowed the judges with their texture and flavour t’s hard to find a more bucolic scene than Pipers Farm in Devon. Set among rolling hills and valleys just north of Exeter, Peter and Henri Grieg’s 50-acre “little patch of England” (as they put it) is made up of small fields, bordered by 400-yearold hedgerows, where traditional grasses, clover and herbs run riot in the rich red soil. The prime pastures support native Red Ruby Cattle and Suffolk sheep, while Saddleback pigs root around in ancient orchards munching windfall apples, unearthing turnips and wallowing in mud. The family’s small-scale approach has environmental benefits, say the couple, who abandoned industrial farming practices 30 years ago and now partner with other family farms across Devon and Somerset. One such business is owned by the Snell family in Somerset, which supplies the company with the Wessex Saddleback pork for its Golden Fork-winning neck steaks.

Moving onto foraging and grazing, the pigs are reared on vegetables and fodder beet. “We’re motivated by many things at Pipers Farm, from animal welfare and sustainable land management to the future of family run farms, but above all else our meat needs to taste fantastic,” says Grieg. It’s mission accomplished if the comments of Great Taste judges are anything to go by. “Full frontal flavour”, was how one described the neck steaks, which are hung on the bone for three weeks. GOLDEN FORK WINNER | SuperValu | Signature Tastes Smoked Rack of Bacon

While meat at some supermarkets is of dubious quality, that’s not the case at Irish chain SuperValu, which has bagged an award for a smoked bacon rack produced with tender, traceable Hampshire breed pork mall artisan producers are the backbone of Great Taste for good reason. Passionate people using quality ingredients and traditional craft skills are hard to beat. But there are exceptions. SuperValu in the Republic of Ireland is a case in point. Part of the Musgrave Group and with 220 stores across the country, the multiple retailer launched a range of fresh pork products under its Signature Tastes brand in 2016 that took provenance to new heights. In last year’s Great Taste, numerous products from the range picked up awards, including a smoked bacon silverside and ham fillet. This year its smoked rack of bacon did even better, with a three-star and a Golden Fork. Part of the secret to the range’s success is that it is 100% Irish pork from Hampshire breed pigs – one of the oldest in the country. “All our own-brand pork was already Irish, but by using the Hampshire breed that

is taking provenance to that extra level,” says Denise Shannon, who works in the retailer’s fresh meat product development department. “The meat is naturally leaner and pink in colour, and also succulent.” Developed with Roscommon-based meat processor Oliver Carty, the rack is made with Hampshire pork from local farmer Luke Bogue, which is hung, wetcured and smoked over beechwood. The final joint can be roasted whole or split into separate chops, says Denise. “It’s a real occasion centrepiece that goes well at Christmas and Easter time. What

NORTHERN IRELAND The Mackle family has been growing apples in Co Armagh for more than half a century, predominantly to supply them for pie fillings. But its latest product – an organic cider vinegar – is a more healthy proposition. f you thought vinegar was just for putting on chips, you’ve been missing out. Apple cider vinegar has long been used as a home remedy for indigestion and fighting off colds, but has more recently been credited with lowering blood pressure and helping weight loss. Natural Umber from Co Armagh in Northern Ireland is one of the newest names in this rapidly expanding niche. Named because of its dark golden hue, the organic apple cider vinegar was launched at the start of 2018 and is the brainchild of the Mackle family, which has been growing and processing apples for pie fillings for over 50 years. “I’ve worked with apples all my life and we felt we could make a product that would stand out,” says MD Michael Mackle. To make the vinegar, the company first produces cider from organic Bramley, Gala and Braeburn apples, which is then allowed to sour with the help of ‘The Mother’ – a cloudy community of bacteria, which turns the alcohol into vinegar.

A lot of cider vinegars are pasteurised and filtered, but we don’t do either. The mother is the soul of the product. It’s where there is an awful lot of nutrients, so we leave it in.” Since launching Natural Umber the company has been swamped with messages from customers raving about how it has helped everything from reflux to arthritis. “We’re careful about the claims we make, but we do get some amazing unsolicited comments on Facebook. Health benefits aside, it was the vibrant apple flavour of Natural Umber, which caught the attention of Great Taste judges. “We use a special process, which brings the taste of the apples forward,” he explains. “You need about 1kg of apples for a litre of standard of cider vinegar. GOLDEN FORK WINNER | Caws Teifi Cheese | Celtic Promise

You might smell Celtic Promise before you see it but this cheese is at its most remarkable when it hits the palate. Caws Teifi’s powerful creation has won numerous accolades but this year it won a Golden Fork. eltic Promise is proof that you shouldn’t always trust your nose. Give the sticky orange rind of this Welsh cows’ milk cheese a sniff and you’ll get a pungent blast that, to the uninitiated, could be overwhelming. But nibble on a slice and the experience is completely different. Sweet, creamy, with a mellow savoury depth, it’s undeniably a powerful cheese but one that is rich, complex and fully rounded. “The pungency is all in the rind, but the paste is creamy and has a lovely semi-soft texture,” says cheesemaker John SavageOnstwedder. “They balance each other.” It’s a combination that has made Celtic Promise a serial award-winner, including twice being named Supreme Champion at the British Cheese Awards. And now, there’s this year’s Great Taste success. “Celtic Promise is the most highly

THE PUNGENCY IS ALL IN THE RIND,BUT THE PASTE IS CREAMY awarded raw milk cheese in Britain,” says John. “The reason it’s won so many awards is because of the raw milk. It gives you a flavour with a start, a middle and an end.” The son of a Dutch father and Scottish mother, John set up Caws Teifi Cheese at Glynhynod Farm in Ceredigion’s beautiful Teifi Valley in the early 1980s. Celtic Promise was developed with legendary affineur (maturer) James Aldridge in 1995 and is made with unpasteurised milk from a nearby farm. The initial cheese follows a Caerphilly recipe, but is then washed with brine and wine or cider as it matures to create a sticky rind. “The premises, the temperature and the

humidity all make a big difference,” adds John. “We made lots of mistakes in the early days. It took us a couple of years to really get on top of it.” The timing couldn’t have been better with washed rind cheeses becoming increasingly popular among Brits, who have developed a taste for funkier flavours. “People’s tastebuds are changing,” he says. “When I came to Wales 35 years ago, people thought yoghurt was exotic. SCOTLAND Less fishy and richer in flavour than your average cold smoked fish, Argyll Smokery’s kiln roasted smoked salmon is a labour of love – and time et up in 2010, by Allan McDougall and Karen Baxter, the Argyll Smokery is a relative tiddler in the smoked salmon world, where companies count their histories in generations and turnovers in millions. But the Dunoon-based producer has achieved a startling amount in its short life. Its customers include stellar names, such as Waitrose, the House of Bruar and London wholesaler Capital Seafoods, which supplies iconic restaurants Scott’s and J Sheekey. This rapid rise makes more sense when you discover that Allan has been involved in the salmon industry for 30 years, working for companies including Inverawe and Loch Fyne, where he met Baxter. “We always wanted to set up our own business so we just went for it in 2010,” he says. “It’s been an exciting time.” Cold smoked salmon is the mainstay of the business, but demand for kiln-roasted salmon is surprisingly strong, especially in Scotland. “In the South, people like traditional smoked salmon, but hot smoked

gets more popular the further north you go,” he says. “I don’t know why that is, but it does have a richer flavour and is less fishy.” Super fresh sides of salmon are sourced from a Scottish farm where Allan used to

MOST PRODUCERS WOULD LAUGH AT THAT. work, and are carefully cured by hand. “I spend an hour applying the cure to just 50 sides,” he says. “Most producers in the industry would laugh at that. They would do it in 10 minutes. But I take time to make sure every bit of the fish is covered.” The sides are then cured for 16 hours, before being hot-smoked over oak whisky barrel chips for nine hours at up to 70°C. It’s a far cry from the corners that are cut by industrial processors, who use techniques such as brine injection and liquid smoke flavourings to speed up the process, boost yields and save money. “We lose around 20% of the weight of the fish during curing and smoking, when the industry standard is 5-10% or even lower,” he explains. “It means we get a firmer texture and the flavour is intensified.” argyllsmokery.com HOW TO USE IT: Keep it simple by warming the kiln roasted smoked salmon in the oven and serving with a little crème fraiche and a twist of lemon, or try with a creamy whisky sauce and a wee dram of Allan McDougall’s favourite Springbank Single Malt.

WORLD FLAVOURS Two dentists, originally from Minnesota, discover a nut that grows in volcanic soil in The Philippines. Then they pioneer a new drying technique that transforms these bland nuts into an “ethereal” gourmet snack. You couldn’t make it up. Meet this year’s Supreme Champion… r Steve Costello has a point when he asks: “When was the last time someone brought a new nut to market?” He estimates it was around the turn of the 20th century when pistachios were brought from Persia or perhaps the Macadamia from Australia. “That’s why we got so excited about the pili nut.” Steve and his brother James Costello were right to be excited. After launching Mount Mayon-branded Premium Pili Nuts last year, the variety dusted with Ecuadorian Cacao took the Supreme Champion title at Great Taste 2018. Not bad for a nut that most people in the UK have never heard of, let alone tasted. For the uninitiated, the pili is a tear-drop shaped tree nut from the Philippines. The Costellos, who hail from Minnesota, but worked as dentists for many years in Hong Kong, source the nuts from the rich volcanic soils of Mount Mayon on the island of Luzon. Pili nuts are naturally high in magnesium, vitamin E and protein, but the mountain’s

unique terroir also adds to their flavour and nutritional content, say the brothers. A dusting of Ecuadorian Cacao and organic coconut sugar doesn’t hurt either, while other flavours in the range include Himalayan Pink Salt and Kyoto Matcha. The reason why pili nuts haven’t made a bigger impact until now is that in their natural state they don’t taste of much at all. “Raw they have a very bland flavour and if they are dried and then roasted or fried in the traditional way they can be quite sawdusty,” says James.

WHEN WAS THE LAST TIME SOMEONE BROUGHT A NEW NUT TO MARKET? The secret of Mount Mayon nuts, he explains, is a 17-step process of pre-sprouting and dehydration, which changes the flavour, texture and nutritional profile. The brothers are understandably cagey about giving away the details of their trademarked SloDry process, but germinating nuts, seeds, beans and grains in water to change their nutritional composition is a growing food trend. In the case of pili nuts it also improves the flavour, with judges describing them as having an “ethereal texture” and “incredible creaminess”. You read it here first.
