GOLDEN FORK WINNER | Gelato Gusto | Vegan Salted Caramel & Liquorice Gelato

Even when it comes to frozen treats, plant-based products are in demand. So Gelato Gusto set about developing recipes for its vegan customers and hit upon this Scandiinspired flavour combination. f you had to guess where a Vegan Salted Caramel & Liquorice Gelato was made, Brighton would probably be top of the list. The seaside city is famous for its creative and alternative spirit, and has long been a meat-free hotspot, with more vegan restaurants per capita than anywhere else in the UK. So it was no surprise to find that the Golden Fork-winning dairy-free gelato at this year’s awards was indeed made by Brighton-based Gelato Gusto. Set up in 2012 by Jon Adams, the company has two shops – in North Laine and on the seafront – which make and sell an innovative range of vegan and traditional gelatos and sorbettos in flavours such as Dark Ecuadorian Chocolate, Banoffee Pie and Jaffa Cake. “The vegan market is growing, but particularly in Brighton,” says Adams, “More and more people kept asking

about vegan gelato in our shops so we went on a mission to try and make something that was as good, if not better, than our traditional product.” The award-winning salted caramel & liquorice flavour came about when one of Gelato Gusto’s chefs visited Copenhagen, where liquorice is a popular flavour, and decided to balance it with the

sweetness of salted caramel in an oat milk gelato. “It’s not as simple as swapping milk for oat milk,” explains Adams. “There’s a danger it can become hard and icy, so we’ve had to play around with the recipe a lot to get that scoopability and smoothness.” Putting oat milk through its paces is a long way from Adams’ previous career as a

BAFTA-winning TV producer, making films for everyone from national museums to BBC snooker. It sounds glamorous, but leaving and returning home in the dark each day, part of a gruelling commute to London, took its toll and he decided to change career with the help of a stint at the Gelato University of Bologna. “My parents had a holiday home in Spain when I was a kid and we used to go to this gelateria that was really quite inspirational,” he says. “That was the starting point. HOW TO USE IT? The gelato’s sweetsalty flavour requires something neutral, such as shortbread, which also contrasts with the smooth texture. A refreshing, cold glass of schnapps is also recommended.

EAST ANGLIA Hadley’s Dairy has never been a large-scale ice cream maker, but an unplanned return to its original home-kitchen production methods and smaller batches has paid dividends his year has been a turning point for Jane Hadley, and not just because her Burnt Honey ice cream won a Great Taste 3-star and the Golden Fork for East Anglia. It’s nearly 20 years since the then farm secretary decided to add value to her family farm’s milk in Colchester, Essex, by turning it into ice cream. Her business, Hadley’s Dairy, has gone on to great things since then, winning multiple awards and naturally growing in size. But when her pasteuriser broke down earlier this year it proved to be a blessing in disguise, forcing Hadley to make smaller batches. “We had to go back to making ice cream using pans on the hob and it really made me think about how I do things,” she says. “I’ve always used fresh eggs and cream, but I’d gone up to making 200 litre batches. When we went back to how I used to make it, I just thought it tasted better.” What’s so telling about this comment is that 200 litres

of ice cream is in itself a tiny amount, but such is Hadley’s commitment to quality that she has decided to scale back production, focusing less on wholesale and more on selling through her ice cream parlour in Suffolk, where margins are higher. There can’t be many commercial ice cream makers who still use shell eggs and unhomogenised

And even fewer cooking, sieving and pureeing fresh damsons to make Damson & Cassis ice cream – another 3-star product in this year’s awards, along with Gooseberry & Elderflower. “It’s hard work,” says Hadley. “But when people say, ‘wow, that’s how ice cream used to taste’, it’s just so satisfying.” For her Golden Forkwinning Burnt Honey ice cream, Hadley caramelises honey by hand in a saucepan at 120°C until it hits just the right point. “I want it to get

A natural approach to rearing pigs clearly does the trick for Lincolnshire’s Redhill Farm. Its pork is a serial Great Taste award-winner and this year has seen it win a Golden Fork.

here aren’t many parts of Redhill Farm’s pigs that haven’t won an award at some point over the years. The Lincolnshire producer’s freerange pork is a serial Great Taste award-winner, picking up stars for everything from loin and belly, to ham hock and sausages.

has good marbling,” says Jane Tomlinson, who runs the farm as well as two farm shops with her husband Terry. “I love the fact that a pure, natural product like our meat can win awards. It really shows what we do on the farm makes a big difference. We do things properly.” Set up in 1991, Redhill is tiny compared to most pig farms. It has just 60 Duroccross-Landrace sows, housed in insulated huts and able to roam freely in large paddocks where they can root about in the light sandy soil. The herd is antibiotic free – something that is remarkably rare in the UK – and fed on cereals grown on the farm. But pinpointing one reason why Redhill’s pork tastes so great is impossible, says Tomlinson. “It’s a combination of lots of different things. It’s Terry’s knowledge, the breed, the feed and the fact we leave them alone to live freely.”

THE AWARDS REALLY SHOW WHAT WE DO ON THE FARM MAKES A BIG DIFFERENCE. WE DO THINGS PROPERLY. But this year it was a different cut that was crowned with a 3-star and a Golden Fork. Pork shoulder is sometimes overlooked as a muscle fit only for sausages, but get a good piece of meat and treat it well, and it can be the star of the show in a roast dinner or render the best pulled pork. “Good chefs get it – they want to use the whole pig and understand that good pork

Another factor is that, rather than send the animals to far away slaughterhouses, the Tomlinsons take their pigs to a local facility themselves on their own trailer, which means they are not stressed. The meat is also hung for several days to improve texture and flavour. “Most of the cheap supermarket stuff is slaughtered, cut and packaged in one day, and will be on the shelf the next,” she says. HOW TO USE IT? Pork shoulder makes a great roasting joint, especially if you like crackling. Tomlinson also likes to rub crushed fennel, thyme and garlic into the meat (not the skin) or slow cook it in beer in a double wrapped tray for several hours until it develops a ‘pulled’ pork texture.

NORTH OF ENGLAND When it comes to sourcing micro-lot coffees from far flung locations, Dark Woods excels itself. But its roastery in a former textile mill is also part of the magic formula that helps it win so many awards. ark Woods sources beans from exotic locations – Ethiopia, Costa Rica and Brazil – but its headquarters couldn’t be more British. In an old textile mill beside a canal and the River Colne, the company roasts beans surrounded by the beautiful Pennines, with its moorland, dry-stone walls and ancient woods. “Working in a dramatic, windswept valley helps inspire the mood and flavours of our coffees,” says roaster Damian Blackburn, who co-founded the business in 2013 with two coffee industry friends, Paul

beans, the company sources speciality coffees from skilled farmers, and roasts on a 1950s German drum roaster to bring out their distinctive flavours. There is plenty of distinction in La Huella Café de Panama, a brand that covers beans grown by a group of farmers in Panama. The La Huella collective is headed up by Pedro Moss in Panama, who hand-selects and mills microlots of beans for Dark Woods. “These small, unique batches are sourced from different coffee producers under the La Huella umbrella, with every farmer working with distinctive micro-climates, soils, altitudes, and Arabica varietals and process styles in and around the town of Boquete,” explains Blackburn. The batches used to make the Golden Fork-winning Café de Panama Natural coffee are primarily selected from a farm called Finca Pandura, and the coffee beans are dried within

their cherries – on raised beds in the sun. “This ‘natural’ processing is what lends the beans an extrasweet fruitiness, combined with a rich body and chocolatey flavour, once they are carefully roasted,” says Blackburn. Unlocking the natural sweetness, acidity and complex aromas is a delicate job with only 5kg of beans roasted at a time. “We leave the roast a little lighter so the inherent fruitiness really shines through in the cup,” he says. SOUTH WEST ENGLAND Bruno Forte grew up eating his grandfather’s gelato in the family trattoria. It was the inspiration for setting up Swoon in Bristol less than 5 years ago and it has already driven him to create a Supreme Champion product. runo Forte can pinpoint the moment he knew gelato was his future. “I took a course at the Gelato University in Bologna, and the first morning I was amazed by what we were making and tasting,” he says. “It was a real ‘wow’ moment.” Forte had decided to take the course after many years in hospitality – first running hotels in London and then back in the family trattoria in Swanage, set up by his grandfather in 1970. “Gelato has always been in the family,” he says. “But there wasn’t a product out there as good as my grandfather used to make.” Enthused by his training, Forte returned to the UK and set up the first Swoon gelateria with his family in Bristol in 2016, before opening three more – two in Bath and one in Oxford. It’s been a rapid rise, which is only likely to gather pace after Swoon’s Nocciola (hazelnut) Gelato was named Supreme Champion at Great Taste 2019, where judges raved about its “smooth and super creamy” texture and

“pure” flavour. “Our gelato is soft and silky because we churn it slowly and keep water crystals absolutely microscopic,” explains Forte. “A lot of ice cream is made using pastes, which are often high in additives and stabilisers. We make ours with fresh ingredients like milk from Somerset and hazelnuts from a small farm in Piedmont.” The Bristol and Bath shops have their own gelato ‘labs’, but Swoon also has

Further outlets, which will be supplied by the unit, are planned in the near future. Sales have increased 20% since the award win and the phone has been ringing constantly with food halls keen to stock Swoon’s products. As yet, the company has not developed a retail product, but trials are underway to recreate the

IRELAND Mór is the Irish word for big and this 8% ABV cider, aged in brandy barrels, certainly lives up to the name bestowed on it by its creators at Longueville House in Cork here are plenty of good reasons to visit Longueville House in County Cork, Ireland. The 300-year-old country house has a four-star hotel and an award-winning restaurant. It also offers activities like fly fishing, falconry and horse riding on the surrounding 450acre estate in the beautiful Blackwater Valley. But for drinkers it’s the tours of the 25-acre apple orchard and distillery that are the biggest draws. First planted by Longueville’s owner Michael O’Callaghan in 1985, the orchard is home to Dabinett and Michelin cider apple trees, whose tart and tannic fruits are used to make cider and Irish Apple Brandy – Cork’s answer to Calvados, made by distilling cider. “My father always instilled in his children the fact that we are only curators of the land for the next generation,” says Michael’s son William O’Callaghan, who now runs the business with his wife Aisling, after his father passed away in 2010. “We have a very strong blossomto-bottle ethos here using

only cider apples that we have grown ourselves and using only 100% juice. No concentrates, no water, no added preservatives, no added sugars and no added sulphates. “It’s a totally natural cider. We take great pride in being as sustainable as possible with a huge respect for the terroir and environment. We do not use any pesticides or chemicals in the orchards or on the apples.” O’Callaghan makes his smooth, rich brandy and two types of cider with master distiller and chief cider-maker

WE HAVE A VERY STRONG BLOSSOM-TO-BOTTLE ETHOS HERE Dan Duggan. The original Longueville House Cider is crisp, clean and medium dry, but it’s the richer, punchier Mór that won plaudits at this year’s awards. Developed eight years ago, it’s a unique product that is made by allowing freshly pressed apple juice to naturally ferment and age in barrels previously filled with apple brandy. Mór is the Irish word for ‘big’ – a nod to the cider’s 8% ABV and its bigger, rounder flavour,

which comes from barrel ageing. “It’s got a buttery fruitiness – apricot and butterscotch notes – but also structure from the tannins,” says O’Callaghan, who formerly trained as a chef, including a stint with Raymond Blanc. “Cider is an extension of cooking and taste. NORTHERN IRELAND While Northern Irish craft beer is still relatively small compared to other parts of the UK, Whitewater Brewery has made itself a spearhead for the country’s scene with a punchy 10.5% imperial stout

raft beer is so mainstream these days that many pioneers – from Fuller’s to Camden Town – have been bought up by huge multinational breweries. It’s a different story in Northern Ireland, however, where the craft scene has been slower to take off and still remains largely independent. “Northern Ireland has been less receptive to craft beer, but that’s changing big time,” says Bernard Sloan, owner of Co Down-based Whitewater Brewery, which is spearheading the new movement. “We have a strong ‘beer-tie’ system here, which has made it harder

GOLDEN FORK WINNER | New Quay Honey Farm | Afon Mêl Heather Mead

Only the best heather honey, made in Wales’s Berwyn mountains, is used to brew up small batches of this mead that is brimming with flavour and the terroir of this key ingredient farmed at all.” Cooper’s family has been making raw honey under the Afon Mêl brand since 1995, selling it in jars through a shop and visitor centre on the 40-acre farm and to independent retailers. He also ferments the honey with Champagne yeast to make the ancient alcoholic drink mead in a range of styles, from 330ml bottles of sparkling sessionable drinks to 750ml bottles at 13% ABV, designed to be drunk like wine. The company’s awardwinning Heather Mead is a particularly remarkable product, made with honey from hives that are moved up into the Berwyn mountains in North Wales in August when the purple flower comes into bloom. Cooper literally straps around 100 hives on the back of a lorry and takes them up into the mountains. “It’s worth doing because heather honey is the king of honeys,” he says. “It has a unique flavour and texture very rich, opulent and intense with a jelly-like consistency and an interesting bitter flavour. When you ferment it

into mead, the flavour really shines through.” New Quay only makes around 5,000 litres of Heather Mead a year, which is at least a year old when it hits the shelves after several months of fermentation and a series of tasting, assessment and blending steps.

ew Quay Honey Farm’s bees have an impressive menu of flowers to choose from when they fly about their daily business. Originally developed to replace substandard shop-bought dinner party nibbles, these diminutive cheese biscuits have remained true to their original home recipe as they’ve gone from strength to strength t would take an iron will to eat just one Cheese Sablé. The “incredibly cheesy little biscuits” (as their producer likes to describe them) are extremely moreish, thanks to a unique recipe combining organic Scottish wheat flour, butter, 24-month Parmigiano Reggiano and Scottish Mature Cheddar. “The secret is to not hold back on the cheese,” says Shortbread House of Edinburgh director Rupert Laing. “In fact, getting that much cheese and butter into a biscuit and still keep it looking like a biscuit is quite difficult.” Not surprisingly, Laing is not willing to divulge any technical details of how to shoehorn so much cheese into a tiny snack, but says the recipe has not changed since Hugh and Pam Corbin (who also founded Thursday Cottage jam company) first came up with it in 2010. “Hugh was a bit of a foodie and was disappointed by the cheese biscuits in shops,” says Laing. “He wanted something special he could serve with drinks when people came over for dinner, so spent ages coming up with the

perfect recipe.” Corbin’s daughter Maddy started making the sablés commercially at her bakery Pea Green Boat in Portobello soon after, but before long they became so successful she couldn’t make them fast enough. Local bakery Shortbread House of Edinburgh started helping

THE SECRET IS TO NOT HOLD BACK ON THE CHEESE with production and now owns the company outright, baking at a new dedicated facility in Leith with plenty of room to grow. “Export is a really big area for us, especially to the US,” explains Laing. “We’ve put a lot of work into extending the shelf life from two to six months with hermetically sealed packaging, so we have big plans.” Original Cheese Sablés won a three-star in Great Taste Awards 2015 and 2018, but this year it was the turn of the fennel & chilliflavoured version to get full marks and take the Golden Fork. “The fennel gives you a slightly cooler flavour and

then you get the heat of the chilli,” says Laing, who adds that the success shows the Corbin family’s legacy is in safe hands. “100% of the credit goes to those original recipes that are so good,” he says. www.peagreenboat.co.uk

WORLD FLAVOURS Pork tends to dominate the charcuterie scene in Spain, but in the region of Castilla y León, it is air-dried beef that is most prized. And Cecinas Nieto makes one of the finest examples of this local delicacy. amón is king in most parts of Spain, but visit the western region of Castilla y León and you’ll find a very different cured meat on the slicing stand. Made with cuts of rear quarter beef, such as silverside, flank, topside and rump, Cecina de León is an oaksmoked, air-dried speciality that is less common in other parts of the country. “It’s not well known outside our region, especially the South of Spain where they are used to buying Iberico, but it has a history stretching back more than 2,000 years,” says Conchi Nieto Martinez, export manager at Cecinas Nieto, a company based in the small town of Astorga, which was founded by her father in 1965 and has been curing beef ever since. “Our area has very special weather to make such a pure product,” she adds. “We have dry, cold winters and hot summers – perfect conditions for air-drying beef.” Cecina de León’s secret is well and truly out now, however, after the company’s El Abuelo Maragato brand,

which is distributed in the UK by The Ojos Foods, was named Best Imported Food in Great Taste 2019. Judges fell for its intense, smoky flavour and dark cherry complexion, which comes from a unique production process enshrined by a Protected Geographical Indication (PGI). This specifies that only beef from cows that are at least 400kg in weight

We want big back legs that have good marbling inside and outside, so we can age them for a long time.” The meat is cured in salt, before being gently smoked over locally-grown oak and then air-dried for 18 months until the texture is silky and the flavour is long and complex. “I’ve been eating it all my life, so it’s difficult to

put the flavour into words,” says Martinez, who runs the business with her brother José Luis. “It should be sliced thinly so it melts in the mouth and you get a juicy and savoury experience. We only use beef, salt and smoke to make Cecina de León, but it tastes of much more.” www.theojosfoods.com
