ABOUT GREAT TASTE

THE GREAT TASTE accolades have been awarded each year since 1994. Entries go through a rigorous judging procedure to discover the very best. This year saw a record of more than 14,000 entries that were blind-tasted by 355 judges over 86 judging days. Standards were high and more than half the entries did not get an award, although detailed written feedback from the judges will help them to do better next time. A Great Taste 1-star was given to 4,027 entries which satisfied the judges that their product delivered fantastic flavour. Another 1,138 entries got a 2-star award for food or drink that was deemed to be above and beyond delicious. The top 3-star rating went to just 218 products that were considered so extraordinarily tasty that the advice is “don’t leave the shop without buying it!” Every product went to be assessed by at least two tables of socially-distanced judges. To achieve a 3-star rating, products

need unanimous support from at least five tables. You are at liberty to disagree with their findings, but you cannot deny the independence and expertise of the judges. Regardless of branding and packaging, each product was judged according to its texture, appearance, composition, aroma and taste. The judges included food critics, chefs, restaurateurs, retail buyers, cooks, producers, food writers, journalists and social media influencers. Hopefully this publicity will encourage a deli, farm shop or store near you to stock the products you would like to try. If not, you will find many of them are available to purchase online via the producer’s websites included in this guide. Or you may be tempted on your travels to buy close to the point of production – at home or abroad. SUBLIME BUTTER | RIDICULOUS NO.55 LOBSTER & CRAB BUTTER

YOU COULD SAY that Christopher Mair is something of a double agent. Whilst his main occupation is producing flavoured butters, he is also founder of the SAS. But his weapon of choice is likely to be a steak knife and his target a ribeye rather than a bullseye. That’s because his SAS is no military operation. It is the Steak Appreciation Society, a homage to the steak clubs of the 18th century such as the Sublime Society of the Beefsteak, where lunches were accompanied by speeches, songs and lashings of port. “I read a book about this and thought it was marvellous,” says Chris. “We now have 45 members and have dined at some brilliant steak restaurants.” But it struck him that, while the quality of steak on offer has improved massively over the years, the condiments haven’t moved

on from “rich creamy sauces that drown out the steak”. “I chatted to a couple of people in my steak club and decided to start making flavoured butter,” he says. “Butter is a great vehicle for adding flavour to dishes. Tony, a talented chef and steak club member, helped me to take the flavours to another level of complexity.” Chris and Tillie Mair launched Sublime Butters in 2019 with flavours such as Truffle, Parmesan & Black Pepper and Béarnaise, which are now stocked by 360

independents across the country. They then went from the Sublime to the Ridiculous, when they developed a “noexpenses-spared” range of limited-edition butters, made in small batches in their home kitchen in Richmond upon Thames. Chris is first to admit that the price tag of Golden Fork-winning Ridiculous No. 55 is “ridiculous”. This is reflected in the ‘packaging’ – a butter dish that was customdesigned by a Venetian glass blower; the exclusive nature of the ingredients, which include British Isles lobster, Devon crab and caviar; and the lengthy production process. “Because this product starts with a lobster bisque, it is very time-consuming to make – it takes 26 hours in total,” says Chris. “After we won the 3-star, we had a surge in demand, which left Tony exhausted. He had to stir the bisque every two to three hours through the night, so he was getting no sleep.” However, those without £95 to shell out on hand-churned butter need not fear – the producer has elected to also sell Ridiculous No. 55 without the dish, at a slightly less ridiculous price point. www.sublimebutter.com

The vibrant citrus marmalade is an expression of The Artisan Kitchen founder’s longing for sunnier climes while locked down in Gloucester. “I missed my holidays in the sun during lockdown,” she says. “This marmalade was a result of dreaming of exotic and sunnier places to travel. I love to develop new products and strive to elevate flavours to a whole new level.” Raising the bar on a product like

marmalade, which uses established production methods and just a few simple ingredients, is a tall order, but The Artisan Kitchen has succeeded in creating a complex, sweet and tart preserve that captures the essence of tropical fruit. Sarah says the secret is in the quality and quantity of the raw ingredients. “I use the finest, freshest fruit, as this is the most important aspect of all our food production,” she says. “I also make sure my marmalade has an exceptionally high fruit content and generous soft peel.” Her Tropical Marmalade is packed with fresh Moro blood oranges, pink grapefruit, limes, lemons, pineapple and passion fruit. Sarah hand-cuts and juices the fruit, then soaks the rinds and fruit pieces for 24 hours in the juice. The following day she cooks the fruit with sugar in traditional heavy copper Maslin pans. “It’s a simple process that creates a mouth-watering fruit marmalade,” she says. As the name on the label suggests, this is a true artisan product – each pan makes enough marmalade for just 11 jars and Sarah does all the preparation and cooking on her own. “I wish I could clone myself sometimes,” she admits. The way business is going, she will soon need a double. Over the last 18 months, online orders have soared and Sarah is in the process of developing a new e-commerce platform to support this growth. It’s a busy life, but Sarah says she wouldn’t have it any other way. “I love everything about the Artisan Kitchen – the peaks and the troughs. GOLDEN FORK FROM EAST ANGLIA Rich and succulent, Temple Farm’s slow-grown Bronze turkeys are for savouring rather than gobbling

“IT MIGHT SOUND like a cliché, but a happy

turkey makes a tasty turkey,” says Charlie Frederick, farm manager at Temple Farm, which, from his description, appears to be nothing short of a real-life utopia for the 1500 Bronze turkey chicks raised here every year. “Our turkeys have the most stress-free life a bird could have,” says Charlie. “They are reared in small flocks, on natural foods, with no additives or antibiotics, and are free-range from five weeks of age.” Temple Farm in Essex chooses slowgrowing breeds that are allowed to reach full maturity and are then “naturally finished” to layer on the fat. “It’s never a question of getting them to a certain weight and then slaughtering them,” says Charlie. Even their passage to death is a peaceful one, with the birds slaughtered on the farm. “They are not under any stress. They are not put into any cages to be transported. They just walk down to the barn.” It’s not just the rearing methods that are traditional on Temple Farm – the processing techniques are traditional too. After slaughtering, the birds are dry-

plucked and game hung for a minimum of seven days to enhance the flavour. Mass production precludes this step, says Charlie, as birds are wet-plucked which means they have to be eviscerated straightaway. Things have been done this way on Temple Farm for 60 years, and this commitment to traditional methods is rewarded with meat that is rich, succulent and well marbled, with a natural fat layer that helps to retain moisture during cooking and produce a crispy, golden skin. The approach has also earned this fourth-generation family business a loyal base of repeat customers. “A big highlight for me is seeing familiar faces coming back year after year to collect their turkeys,” says Charlie. The last 18 months have been tough for the Frederick family, with the loss of

Charlie’s father and uncle – both of whom were partners in the business. GOLDEN FORK FROM WALES There’s more to sheep’s meat than spring lamb, as Pembrokeshire Lamb’s melt-in-the-mouth hogget shoulder demonstrates

IT’S OFTEN SAID that things were better in the good old days, and Pembrokeshire Lamb was started by Steve and Kara Lewis as an experiment to test this theory. “We weren’t sure whether it was our nostalgia or sentimentality, but the lamb we were buying didn’t taste the same as we remembered from our childhoods,” says Steve. “So we thought we would see what we could do by rearing and preparing the meat properly ourselves. The big question was: would it be as good as we remembered?” In 2012, they secured the tenancy of Fferm Wernllwyd in Haverfordwest. They were not coming at this as newbies – both Steve and Kara are from families with a long history of farming. Steve has a degree in agriculture and has worked in many shepherding roles, while Kara has a degree in Animal Behaviour and Welfare and a flair for flavour. Their ambition was to use their combined experience to rear Welsh lamb with a superior flavour and high welfare and sustainability credentials. The duo also wanted to inspire

consumers to try new ways of cooking lamb and to discover the eating quality of more mature animals, notably hoggets aged 12-24 months. “As a population, we are way too fixated on spring lamb,” says Steve. “There is much more to lamb and there is a lot of quality in hogget that we have overlooked.” “Hogget has a completely different flavour to lamb. It is richer and deeper and has more intense meatiness compared to the sweetness of lamb. Hogget takes on additional flavours really well and this elevates the meat to another level.” The flavour of hogget even varies throughout the season, according to Steve. “The natural variation in the grasses and herbs available to the sheep throughout the year leave subtle differences in the finished flavour.” All of Pembrokeshire Lamb’s animals are reared on the farm, where they enjoy

WHEN PETER LOUËT-FEISSER and his wife Anna arrived on Irish shores in the late 1960s in a wooden sailing boat they had built themselves, little did they know that the world was to become their oyster, or rather that oysters were to become their world. A few years later, a broadcast on BBC Radio 4 inspired Peter to start his own oyster farm in Carlingford Lough, an inlet in County Louth whose A-classified waters are rich in nutrients and minerals carried down in mountain streams from the limestone and granite of the Cooley and Mourne ranges. “These nutrients mix with the interchange of cool tidal waters to produce specific conditions that encourage a unique cocktail of algal and plankton species,” says secondgeneration oyster farmer Kian Louët-Feisser. “This is what imparts the unique flavour of a Carlingford oyster.”

“Oysters are a truly wonderful species to grow,” he says. “They take on and reflect beautifully the locale. You literally taste in your mouth what you see with your eyes.” When an oyster is in prime condition the uppermost gill takes on a rich creamy hue caused by reserves of glycogen. This imparts a sweet flavour that beautifully complements their briny saltiness. Also, the adductor muscle has a delicate nutty flavour reminiscent of raw scallops.

Over the years, the family has observed how different growing conditions and husbandry techniques enhance these characteristics, and annually sets itself the goal of growing better oysters than the previous year. Peter, now 83, still goes out at 5am to catch the early morning low tides and tend to the oysters. Nevertheless, growing exceptional oysters is still a challenge, according to Kian. “Growing excellent oysters is like trying to catch smoke in your hands. It’s really elusive and even if you repeat what worked in previous years, the weather or nature may conspire to confound your efforts.” This year, though, all the elements have aligned, earning the Mullatee company a Golden Fork for its premium Louët-Feisser Select oysters. These are the very best oysters to come out of these waters, accounting for 10% of the farm’s overall production. “With our Louët-Feisser Select Carlingford oyster we are trying to nurture the perfect oyster that our body of water in Carlingford can sustain,” explains Kian. “It’s easy to grow an average oyster, but where is the pleasure in that?” www.carlingfordoystercompany.ie

KAMPOT PEPPER MIGHT be the most expensive in the world, but that doesn’t mean that its farmers are well paid. According to Lukáš Hejtmánek, cofounder of .pepper..field, there are about 300 small, family-run farms in Cambodia at the mercy of larger, foreign-owned farms. “They have no choice but to sell to the big farms for a lot less than the market price or face having no market for their product,” he explains. Determined to do something about this situation, Lukáš, his cousin, David Pavel, and their girlfriends, Lenka Trchalikova and Klara Dohnalova, started exporting the pepper. “We wanted to help these farmers find a market for their pepper,” says Lukáš. Trading directly with the farmers, .pepper.. field pays the price officially set by the Kampot Pepper Promotion Association. This gives farmers enough to pay for farm maintenance, health care and school fees for their children. However, in order to make exporting viable, the .pepper..field’s founders needed

a way of capturing the aromatic essence of fresh green Kampot pepper in an extended shelf life format. Using freeze-drying techniques, they were able to preserve the original flavour profile.

“The main difference between freezedrying and dehydrating the peppers is that freeze-drying is done at lower temperatures. This preserves the shape and the flavour notes,” says Lukáš. “If you compare regular dehydrated pepper with our freeze-dried pepper, it’s like tasting a completely different product. Ours is much more like fresh pepper. It begins with salted notes that give way to juiciness when crushed in the mouth, followed by heat.“ He explains that the reason not all pepper is preserved in this way is because it is much more expensive than conventional drying. 50kg of fresh pepper only yields 25kg of freeze-dried product, plus the freeze-drying process is complex and time-consuming. “Our process takes three days from start to finish. It involves three phases and we had to precisely set up each stage to get the desired final product.” Although this Prague-based start-up only launched in 2018, due to logistical issues caused by COVID, it is only just getting going. This year has seen it launch into Germany, France, Ireland and Italy. And the next stop is the UK. www.pepperfield.uk

ARNALDO MORELLI IS in business with

three siblings – Marino, Daniela and Tania – but maintains that he owns the “bragging rights” to the Golden Fork since developing a caramelised hazelnut flavour was his idea. “Hazelnut is my favourite ice cream flavour,” he says. “It is very popular in Italy, not so in Ireland, where people seem to have a sweeter tooth, preferring flavours like honeycomb and caramel. The addition of salted caramel sauce and caramelised nuts was intended to give it a toffee-sweetness that would make it more appealing.” This creation was not just a hit with the ice-cream-loving public, but also with the Great Taste judges, earning this fifthgeneration producer its first ever 3-star and a Golden Fork to boot. “We’ve entered Great Taste for 10 years

and have had lots of 2-stars but until now, a 3-star had eluded us, so a Golden Fork was the icing on the cake,” says Arnaldo. “It is also nice to win something so prestigious in the year that we are celebrating 110 years in business.” After such a long time in business in Northern Ireland, there is not much the Morelli family doesn’t know about ice cream making, and Arnaldo is happy to share the knowledge that has been passed down through the generations of this Italian immigrant family. “Our ice cream is aged overnight in a

vat at 4°C and then quickly frozen,” he says. “When we make the hazelnut flavour, we age it for another four hours to produce a fuller flavour.” Clearly the choice of ingredients is key too. Arnaldo says he “swears by” the Irish double cream that is delivered fresh every day from the local Ballyrashane Creamery, while the hazelnut paste is made with nuts from Piedmont in Italy. Although Morelli holds fast to its smallbatch process, it churns out considerable volumes of ice cream – 900,000 litres per year. Its own shops in Portstewart and Portrush are local institutions, while scoop franchises and a strong trade in supplying retail tubs to the supermarkets have built up the Morelli empire across Northern Ireland. “We are artisans at heart, but we run a commercial company,” is how Arnaldo so neatly puts it. www.morellisices.com

IT IS TEN YEARS since this smokehouse on

the west coast of the Scottish Highlands won its first Golden Fork for its Mallaig Kippers. Two more followed in 2014 and 2016. Then this year it went the whole hog – claiming a 3-star, a fourth Golden Fork and the Supreme Champion title. Had Great Taste existed in 1944, when J. Lawrie & Sons was founded by the original George Jeffrey Lawrie, or ‘Jaffy’ as he was known on the quays and harbours, there’s no doubt the smokehouse would have even more Golden Forks to its name; for this is a business that is grounded in consistency. Neither the cures nor the smoking techniques have changed in almost 80 years. As third-generation owner Jeff Lawrie puts it: “It’s about one family doing the same thing it has always done, using the same techniques.”

Jeff personally selects the herring at the quayside. He chooses fish that are plump and have a high fat content, as he says this makes for more succulent kippers. The raw herrings are split and pickled in brine before being slow-smoked for 12-18 hours overnight over oak shavings from old sherry casks in a traditional brick kiln. “Combined with the delicate oils in the herring, this gentle and carefully judged

smoking process produces kippers with a delicate, buttery flavour. A lot of kippers are heavily smoked, whereas ours have a very light, smoked flavour,” he says. Much of the credit for maintaining this finely balanced flavour year-in year-out goes to Jaffy’s original technical genius – Jeff’s father (pictured here, and also called Jeff), who is now in his fifties and continues to be the master smoker. Under his stewardship, each kipper comes out of the smokehouse with the same fine texture, golden colour and smooth finish as the one before. “Our ability to maintain this degree of consistency in our flavours and processes is mainly down to our commitment to these time-honoured techniques,” explains Jeff (senior). “I am always tasting the product, making sure the salt content is correct and changing the strength of the fires according to the weather. For example, I might open different doors to adjust the draught stimulating the fires if there is a change in wind direction.” Just as Jeff (senior) was taught the craft by his father, he too has passed on the timehonoured techniques to Jeff (junior) and his siblings to ensure that the oak fires will burn at Mallaig for many years to come. www.jaffys.co.uk

GOLDEN FORK FROM THE NORTH OF ENGLAND Nick Wadeson has taken inspiration from his mother’s baking to serve up a classic pudding – in a glass

THE BOUTIQUE GIN market is a crowded space, but Cheshire distillery Three Wrens has come up with something that no-one else is making, by using the ingredients of a traditional British pudding as its key botanicals.

“Ours is the only apple crumble gin currently available on the market. It sits alongside our world-first Bison Grass Edition as the best-selling gin in our range,” says Nick Wadeson, who founded Three Wrens in 2019 after a career in the cocktails and spirits industry. “I think this is because of the spirit’s quality and the fact it is unusual and can’t be found anywhere else.” But that’s not to say the concept of making gin with oats, apples and cinnamon

is new. According to Nick, these simple ingredients have long been deployed. “Oats, apples and cinnamon have been used in gin for over 200 years. We just found a new and innovative way to use them.” Three Wrens toasts the oats and steeps them in the spirit, which is then distilled with juniper, cinnamon, nutmeg and sweet orange. It then passes through a vapour basket packed with dried apple slices to extract the flavour from the fruit. “The apples are sourced from nearby orchards, and preserved in-house to last us throughout the year,” explains Nick. He says it takes patience to make, as each small batch takes three days, but the warming liquor that ensues is worth the wait. The gin has an intriguing nose, with piney juniper, rich toasted oats and crisp apple. The first sip has lots of depth with buttery notes and baked apple, while the finish is long, with subtle cinnamon and gentle spice. Three Wrens distills its gin in two copper stills – ‘Valerie’ and ‘Jill’ – in batches of 300 and 50 litres respectively. The stills are named after Nick’s mother, whose apple crumble inspired this flavour. “I am constantly experimenting with flavours and how they pass through the distillation process,” he says. “After enjoying mum’s dessert, it started me wondering if we could use the ingredients in a gin, while preserving its soul of juniper.” Valerie and Jill will soon be on the move, along with the rest of the team, into a new, larger distillery five miles down the road in Combermere. “We will have greater capacity for tastings, a big botanicals wall for visitors to choose from when distilling their own gin, and of course, a cocktail bar,” says Nick. www.threewrensgin.com

SERIAL ENTREPRENEUR WILL CHASE says that his latest business foray, Willy’s Wellness, reflects the stage he is at in life. “I’m 60-something and have recently recovered from illness,” he says. “Now I want to have fun making products that are good for people, which reflects my own outlook on life. The next chapter for me is fermenting.” Will says that in recent years, he has learned a lot about healthy food and has been “greatly inspired” by the gut microbiome movement. “I think fermentation is the future. It’s natural, it’s sustainable and it takes food back to how it used to be produced before modern society decided that if it wasn’t pasteurised or homogenised, it wasn’t safe.” But it was overhearing shoppers at Whole Foods Market “raving” about the benefits of

apple cider vinegar that sowed the seed of the idea for his third venture. “When I spoke to the buyer, he said apple cider vinegar was one of his best-selling products. I thought to myself, I’ve got 200 acres of untouched old organic orchards.” Willy’s Apple Cider Vinegar hit retailers’ shelves in 2017, and the Willy’s line-up has since grown to take in other gut-health tonics, from daily dose shots to kombucha. Will’s latest apple-based fermentation

excursion has taken the Willy’s brand into balsamic vinegar, with the development of a product that has picked up a Golden Fork just after going on sale. Live Apple Balsamic is fermented from over 48 wild apple varieties and aged for three years in French oak wine casks to add complexity. “The better the cask you buy, the better the product. Beautiful tasting wood will come out in the product. We tried all sorts before settling on Bordeaux and Burgundy casks,” says Will, adding: “But the most important thing is that it is a living culture, still ‘with the mother’.” At present, the vinegar is aged in the roof of the potato shed at the distillery but will soon be rested in the loft of a new ‘farmentary’ that is being built on the Herefordshire farm for completion by April 2022. “The new farmentary will be right in the middle of the orchards,” says Will. “I’m very excited about opening it up to the public so people can learn more about what we do.” www.willysacv.com

THE MIXERS MARKET is awash with premium tonics to pair with gin. However, the true measure of a good gin is whether it will stand up on its own. This is the yardstick that Sussex distiller Tom MartinWells uses to judge whether his spirits have made the grade. Indeed, creating a London Dry Gin that is “good enough for sipping” was the motivation behind the development of Slake Spirits’ Sussex London Dry Gin. “The genesis of this product was my reaction to the London Dry Gin style and bringing it round to where I felt it should be,” says Tom, the self-proclaimed head dragon, forager and distiller at Slake Spirits in Shoreham-by-Sea, West Sussex. “A lot of modifications were needed to make it good enough for sipping neat; it was too fierce, too piney and too dry.” To make these adjustments to the London Dry Gin style, ‘Dr Tom’, who usefully has a PhD in Chemistry, combined

column and pot distillation to remove some of the pinene from the process and make a sweeter, less dry spirit that is better suited to drinking neat. The gin is made in batches of 170 bottles via what is termed in the gin lexicon as a ‘single-shot’ distillation process. This, says Tom, results in a more rounded, complex spirit than the ‘multishot’ approach typical of mass-market producers. “Essentially, the multi-shot method involves overloading on botanicals to produce a spirit with a concentrated flavour that is then diluted to stretch it out,” explains Tom. In the traditional single-shot method, by contrast, there is no concentration or dilution. “Single-shot production is more difficult as there is no opportunity for correction; the botanicals have to be in balance from the start. It requires more skill, but it is worth the result.” For Tom, Slake Spirits is as much a portal for reconnecting with Sussex’s biocultural heritage as it is a business venture. The company’s branding is inspired by the region’s rich folklore and many of its recipes are designed around wild or locally grown botanicals, reflecting Tom’s passion

for foraging. “If an ingredient is abundant enough to be foraged for locally, that is what we will do. If not, and it can be grown in our climate, then we will look at growing it.”
