THIS BOOK SHOWCASES some of the best food and drink in UK and Ireland in 2022. It contains a selection of the award-winners from this year’s Great Taste, which is run by the Guild of Fine Food to highlight quality across a broad range of products and ingredients.

The 1-, 2- and 3-star awards were determined via some 90 days of judging by an independent panel, assessing products according to texture, appearance, composition, aroma and taste. This year, the Guild received 14,205 entries from 2,243 producers across 110 countries.

To help readers navigate the winning products, we have arranged a selection of them into categories, listed here on the right. Every entry includes web addresses or social media contact details, so you can buy the items online or locate local stockists.

As well as product information, this booklet will introduce you to winners of Great Taste’s top regional and international prizes the Golden Forks, as well as the Supreme Champion – the winner of all winners. The producers’ experiences are a lesson in what it takes to create the highest calibre food and drink.

GREAT TASTE EXPLAINED

The broad range of products included in this book share one important characteristic: they are all here because our expert judges praised their exceptionally good flavour. Yet it is striking how different the various producers are.

At one end we have the winners of the Golden Fork award for London featured on pages 6-7. It is a start-up business, cooking on demand from a home kitchen in Romford. At the other end of the spectrum, we have the Golden Fork for Northern Ireland featured on page 62-63; this was awarded once again to the Baronscourt Estate, the home of the Duke of Abercorn’s family since 1612. Such huge differences in experience and set-up are evened out by the flair and attention to detail that is the hallmark of all of the worthy winners found in this publication.

This year the Great Taste awards attracted record international interest, with 14,205 artisanal products entered from 110 countries –demonstrating the growing global status of the Great Taste accolade. Awards were given to 39.1% of the entries, which means that just over six in every 10 entrants got nothing more than the detailed written feedback that will hopefully help them to improve their entries next time.

A Great Taste 1-star was given to 4,078 producers for ‘food and drink that delivers fantastic flavour’. Another 1,237 were awarded a Great Taste 2-star for products ‘above and beyond delicious’, and 241 got the coveted Great Taste 3-star for ‘extraordinarily tasty food and drink’.

Each product was blind-tasted after being removed from its packaging. Judging took place over 90 days across two locations in Dorset and London. The judging panels were drawn from more than 500 food and drink professionals including critics, chefs, recipe creators, buyers, retailers, journalists, broadcasters, and experts in the field. Every entry was assessed by at least two tables of judges.

For many years, we have seen meat, fish and cheese doing very well in these awards, but it was interesting to note a growing presence of fermented and plant-based foods among the winners this time, a consequence of changing consumer tastes and the effort that innovative producers are making to understand this growing market. It was no surprise to see these products included among the selection of winners in this book. And it was notable that a fermented product took home the Best International and Supreme Champion trophies, as described on pages 56-57.

To achieve a 3-star award, a product needed unanimous support from at least five tables. The 3-star products were rejudged at the end of the process, to identify which should win a regional Golden Fork trophy and which should be declared the Great Taste 2022 Supreme Champion. You may disagree with the judges’ findings, but their independence and the rigour of the judging process are without doubt.

ACCORDING TO JEMIMA’S Deli co-founder Ruth Dutson, one of the problems with having a 3-star product is that no-one wants to buy your other lines.

“In our local store, we sell five packs of Perfect Granola - which was awarded three stars in 2021 - for every pack of Tahini Grain Granola. The two sit side by side on shelf and one has a silver sticker whereas the other doesn’t,” she says.

Now that Tahini Granola has scooped a coveted Golden Fork, Ruth says it will be interesting to see whether the balance shifts.

“I wonder whether that will change,” she ponders. “Tahini has a small but loyal following - people who like it, really like it.”

With its dark colour, intense, nutty taste and Middle Eastern undertones, Tahini Grain is the start-up’s least conventional granola recipe.

“It looks unusual and tastes unusual. It is sweeter than our other granolas, yet almost savoury, with a slightly salty kick,” says Ruth.

The granola’s rich, dark character comes from baking the oats with date molasses and maple syrup.

“The oats become dark very quickly so we have to turn them every five minutes to ensure a uniform bake. This is the most time-consuming part of the granola making process,” says Ruth.

As Ruth is diabetic, she can only indulge in Tahini Grain Granola very occasionally - whereas her business partner Annette will eat it by the spoonful.

“We are quite different in our tastes,” says Ruth. “I am diabetic, whereas Annette has a sweet tooth.”

Jemima’s Deli was born out of their contrasting tastes as well as their shared desire to open a coffee shop. However, when planning permission was denied, they created an online breakfast offer, delivering on a Saturday morning to customers near their homes in Romford, in the east London borough of Havering.

The menu is centred around foods the two women love and find hard to come by: besides granola, that includes fresh cruffins, pearl sugar encrusted Liège waffles and cinnamon rolls, with low carb options for those with dietary restrictions.

At the moment the duo are operating on a small scale - cooking on demand in Ruth’s home kitchen. This is not surprising, considering that Annette has just given birth to her fourth child.

“Our challenge is to find a business model that works for us. We have been holding back, but now both products have three stars, we will endeavour to get our granola into more outlets,” says Ruth.

GOLDEN FORK FROM THE SOUTH WEST

WHEN, BACK IN 2012, Sarah Churchill set her sights on creating a jam with heritage Blaisdon Red plums, she knew sourcing this rare fruit was - quite literally - going to be a tall order.

“I wanted to create a jam that not only tasted absolutely amazing, but had great provenance and a story connected to where I live,” says the founder of The Artisan Kitchen.

She started to research locally grown fruit and her interest was piqued by the Blaisdon Red plum.

“This plum is native to Gloucestershire and has become quite rare due to a variety of factors, some of which are: demand; lack of any orchards commercially growing the fruit; and dwindling tree numbers due to age and disease. The trees are very tall and picking is not for the faint hearted when you’re up a long ladder,” explains Sarah.

Not to be deterred, Sarah contacted the Gloucestershire Orchard Trust and reached out to growers in the local area via social media.

Her search bore fruit, and she now works with two local growers who must surely have a head for heights.

“These growers provide the most amazing handpicked fruit for me. I take around half to a tonne of plums to fulfil my orders through the year,” she says.

Although it was 10 years ago that Sarah made her first test batch of Blaisdon Red Plum Jam, the taste is still firmly etched in her memory.

“It tasted incredible,” she recalls. “The flavour of Blaisdon Red plums is

unique and quite unlike any other plum in the UK. The plums have a great balance of acidity and sweetness, full of natural pectin, and are perfect for jam making with an incredibly complex flavour profile. I knew at that moment this jam would become a staple in our range.”

In the intervening years, her prediction came true. Part of the producer’s core range since 2013, Blaisdon Red Plum Jam has become a perennial favourite.

“All my stockists take this jam,” says Sarah. “Locally and nearest to me, Gloucester Services have this variety front and centre at both northbound and southbound sites.”

Although this particular product celebrates heritage, as a business, The Artisan Kitchen adopts a forward-thinking outlook.

TREE’S MANAGING director Stephany

Hardingham knows better than to change anything about the ice cream flavour that scooped a Golden Fork in 2020 and has gone and done it again this year.

“Our Brilliant Blackcurrant is still made with fruit, whipped cream and sugar, just as we made it two years ago and just as my grandmother used to make it,” says Stephany. “Like all our flavours it is fruity, zingy, fresh and creamy. That is because we use whipping cream rather than milk and it has a 38% fruit content - far more than you would normally find in an ice cream.”

All of the fruit Alder Tree uses in its ices is either grown on the Suffolk farm (in the case of rhubarb, gooseberries, damsons and elderflower) or sourced from within a 25-mile radius.

“We only use whole fruit - not purées or pressed fruit - that is how we get our vibrant colours and flavours,” says Stephany.

While there isn’t any margin for improvement with the recipe of Alder Tree’s flagship fruit cream ices, the company does see scope for improving its packaging; it is in the process of moving to wooden spoons for its 125ml tubs, as part of a sustainability drive.

“One of our main focus areas in the past couple of years has been improving the sustainability of our business,” says Stephany, who, as a former environmental consultant, is more than qualified to lead this initiative.

Alder Tree has already

been awarded the Suffolk Carbon Charter Gold for its efforts to date, which have included installing a biomass boiler for hot water and a 29 kVa solar system. In addition, the company has just finished reinforcing some roofs to accommodate more solar panels.

“This will get us to the point where 80% of our energy is produced on site,” says Stephany.

“Ultimately we would love to be carbon neutral, but we are a way off that at the moment.”

At the same time, Alder Tree has been busy developing a plant-based offer.

“We have been having a play with a plant-based vegan range. Our ethos of using only simple, natural, unprocessed ingredients has made this quite challenging, but we have some exciting trials in the pipeline.”

IN THE SAME way that the gas versus charcoal discussion can become quite heated in a BBQ setting, the gas versus electric debate can be pretty divisive among coffee roasters.

Founded over 10 years ago to fill the coffee void on the Welsh coast, Bay Coffee Roasters sits firmly in the electric camp - the Ceredigion coffee company does all of its roasting using electricity.

“We are one of the few roasters to use electricity instead of gas; the amount of energy used to roast coffee is tremendous and we wanted to do things the right way without having to use carbon offset schemes,” explains owner Duncan Gray.

He continues: “Our electricity uses a traceability scheme and comes from 100% renewables like solar and wind. Instead of a traditional drum roaster we use fluid bed technology. This requires more handson attention than a drum roaster but we feel the end product is exceptional.”

The judges clearly agreed with this sentiment, honouring the producer with the Golden Fork for Wales for its Indonesian Sumatran Fairtrade Organic Coffee.

This Sumatran Mandheling arabica is grown on the volcanic slopes of Mount Leuser, near the port of Padang in west-central Sumatra. The name is a tribute to the Mandailing people - an ethnic group who go by this second spelling.

The roastery originally sourced this bean to include in its blends, but soon realised it had the full body and legs to stand alone.

“We couldn’t stop drinking the Sumatran on its own and decided that others would probably enjoy it as much as we do,” recalls Duncan, adding: “I personally enjoy drinking it most when it is prepared

using a V60 filter; it has a slight spiciness and natural sweetness.”

The coffee is so sought after that Bay Coffee Roasters has had to sign a contract to secure the 10-15 sacks a year it needs to satisfy demand.

The producer’s sustainability efforts haven’t stopped at sourcing renewable electricity either - it has recently purchased a Vortx air cleaning system.

“It uses atomised water in the form of a steam cyclone and reuses the roaster’s energy to clean up the air that is exhausted,” explains Duncan.

Bay Coffee Roasters is also working towards becoming a B Corp – a for-profit company that meets the highest standards of verified social and environmental performance.

“Our goal is to just keep on looking for ways to improve what we do – running a small business is a constant learning curve,” he says.

THE PERFECT FOIL

SCÚP’S NATURAL FROZEN yogurt is, by the company’s own admission, as plain as it sounds.

“It’s a very plain, simple product,” says Willie Devereux, who set up the gelato business with his mother, Siobhán, in 2014 with the aim of supplying top hotels and restaurants with premium homegrown Irish product.

“We start with plain yogurt, put it through our process, and end up with a frozen product that doesn’t depart much from the original.”

And that is the way that Scúp - and its customers - like it.

“Our chefs are looking for a plain product that they can pair with tarts and soufflés, for example. They don’t want any inclusions and they know exactly what they are getting with this product. They appreciate it being so close to the original yogurt,” says Willie.

The yogurt that is the essence of this product is Killowen, made in Wexford in the southeastern corner of Ireland for over 30 years and renowned for its creamy, tangy taste.

“I grew up eating this yogurt as a kid, and we are blessed to have them on our doorstep,” says Willie. “They are 20 miles from us, which fits with our ethos of local sourcing, but even if they were at the other end of the country we would probably still use them - they produce the best yogurt in Ireland.”

Scúp’s gelato making process is a closely guarded secret, but Willie says it is designed to minimise the amount of air in the product, and involves blast freezing to -35°C to prevent the formation of

large ice crystals and maintain a creamy, smooth texture. Scúp produces the frozen yogurt in batches of 80-90 litres every two weeks or so. This is also key to ensuring its quality, as it isn’t kept in the freezer for months on end “Our frozen yogurt tastes best when it is freshly made, which is why we try to ensure our products are consumed within a month of being produced. This means getting it to the restaurants as soon as possible after production and making sure the cold chain is maintained,” says Willie.

THE PHRASE ‘the best things come in small packages’ could well have been inspired by fermented green Kampot peppercorns, which pack a mighty flavour punch despite their diminutive size.

“They are fresh, almost citrusy, with a long, smooth finish and a salty sweet balance. When eaten whole, they pop and burst in your mouth - not what you might expect,” says Michael Winters, who has been a driving force behind the introduction of this Cambodian national treasure to the UK market.

Kampot pepper is a botanical phenomenon because it produces green, black, red and white peppercorns, each of which has a very different organoleptic profile - all on the same vine.

Since 2006, FarmLink has been working with independent pepper farmers in Kampot to process their native pepper and promote it internationally.

The difficulty, when it comes to exporting the green peppercorns, is capturing the distinctive profile of the fresh young berries in a form that can withstand international trade. This challenge was the genesis of an idea that resulted in a long-term collaboration between FarmLink and Kadode and the development of twice Golden Fork winning Fermented Fresh Green Kampot Peppercorns.

“We wanted to harness the amazing flavour of the young green peppercorns that were used locally in Kampot, notably in a speciality called Kampot Pepper Crab,” says Michael. “We think the taste of fresh green Kampot pepper is unparalleled, but it was difficult to preserve in its fresh state and therefore almost impossible to export.”

They experimented with

various preservation methods - from drying and pickling to vacuum packing - to no avail. Then in 2015 FarmLink and Kadode started looking at fermentation processes.

“Through much trial and error, we eventually made a remarkable discovery when using a particular lactofermentation method,” says Michael. “We produced a peppercorn that was both soft and juicy yet spicy with hints of lemon - an almost ‘snackable’ peppercorn that could be eaten whole.”

Michael describes the process as “an old Japanese method of slow fermentation”.

“It involves careful control of the moisture content so as not to lose the robustness of the corn. Get it wrong and all you taste is salt,” he says.

After the month-long fermentation, the corns are sorted with tweezers and bathed in local Fleur de Sel. The presence of the salt flower helps to flavour and preserve the peppercorns - not that they usually hang around long enough to warrant it.

THE WILD JAPANESE Sika deer that roam the Baronscourt Estate in County Tyrone might have to contend with more adverse weather than their antelope cousins in the Serengeti, but they have just as much freedom.

“Ours are wild deer, not parkland deer. And when I say wild, I mean wild,” says Lord Hamilton. “If they want, they can leave the estate and wander into Donegal.”

Being wild, the deer have a varied seasonal diet, grazing on the flora and fauna that grows naturally on the 5,500-acre estate. This ranges from saplings in the winter to rye grass in the summer, and contributes to the soft, sweet, flavour of Sika venison.

“The meat is delicately gamey, but not strong and sinewy, and this is partly because the animals are eating flowers, grass and moss,” he explains.

“Their wild existence also influences the fat structure of the meat.“

“The way they carry fat is different to farmed deer; they move more so have less fat and the fat is marbled through the muscle,” he adds.

The cut that claimed the Golden Fork this year is the loin - the second most expensive cut (after the French rack, which won a Golden Fork in 2015).

“We sold the loin for £50 per kilo last season. It is effectively the fillet - and is very easy to eat because it is a soft cut with very little fat on it.”

Being a lean cut, the loin cooks very quickly, so care has to be taken to avoid the type of overcooking that has led to perceptions of venison as tough and tasteless.

“Opinions of venison aren’t generally good

because they are often based on experiences of meat that has been boiled or stewed for hours until it is tough and sinewy,” he adds.

Under Lord Hamilton’s stewardship, Baronscourt Estate is changing attitudes by putting wild Sika venison on menus across Northern Ireland and beyond. James St & Co. and OX are two Belfast restaurants where diners might sample Sika venison loin.

The seasonal nature of the product, however, makes it hard to guarantee. Every year, between August and March, the health of the herd is maintained through culling, and it is only during this period that the meat is available.

Next season will see Baronscourt experimenting with smoked game, a move which should help to balance the seasonality of this beautiful byproduct.

LIKE BELL BOTTOM jeans, comb honey has been in and out of fashion over the decades and is currently enjoying a revival.

“As the farm grew over the years, our Scottish Heather Honey became more popular in its extracted form and so we sold little in the comb. However, with today’s increased interest in honey, its profile and its origin, comb has increased in popularity again,” explains Mark Noonan, managing director of Heather Hills Farm.

The family-run farm has been producing comb honey since 1945, when it started with just one hive. When it relocated to Blairgowrie in 1954, it became one of the UK’s first commercial honey farms.

The area is ideal for making honey, with its abundance of soft fruit and proximity to the heather moors, providing a varied forage year.

Many of the original sites are still used today - Scottish Heather Honey is won from wild-flowering purple ling heather in the Highlands across rural Perthshire and Royal Deeside between July and September each year.

The hives are well spaced out in some of the most remote places in Scotland, allowing the bees plenty of room to forage to gather the finest nectar. This, combined with its terroir, creates the honey’s distinct flavour profile.

“As with a single malt whisky, the honey’s unique terroir dictates its outstanding autumnal palate and, combined with its limited production season, makes it highly sought after,” Mark says.

Although comb honey is less labour intensive for the beekeeper (it is cut from the frame and boxed straight

from the hive), it is hard work for the bees.

“It takes time and a lot of energy for the bees to make and draw the wax to create the cells to store the honey - it takes 8lb of honey to produce just 1lb of wax,” he adds.

Once each cell is drawn and filled, the bees fan it to reduce the moisture content and seal it with a wax layer, a process known as ‘capping’.

If forage is scarce due to a poor climate, the bees may start to eat the honey or won’t produce enough - leading to insufficient capping. In this scenario, very little cut comb is produced.

Fortunately, 2022 has proved an exceptional year for Heather Hills in more ways than one: an abundance of heather due to optimal weather and a Golden Fork to show for it.

PICKLE IN THE LIMELIGHT

BLACK LIME CHUTNEY was born out of the postChristmas lull that hits the food trade every year.

In Penrith, this is the time of year when chilli sauce, chutney and pickle producer Mr Vikki’s gets its new product development into gear.

“Every year, after Christmas when we are quiet, we take the opportunity to work on new products. This year we focused on a citrus theme,” says Adam Marks, the chef turned self-confessed chilli head who started Mr Vikki’s in 2005.

From the very beginning, lime pickle has featured in the producer’s line-up, but Adam has always had it in the back of his mind that he wanted to create a sweet version. This year, he did just this, steeping chopped lime in a marinade of tamarind, muscovado sugar, dates and garlic for two weeks until it took on a sweet, sticky taste and dark colour.

“It was my first crack of the whip and I hit the sweet spot first time,” says Adam. “It is quite a complex taste: sweet and sour with a bit of chilli.”

Initially, Adam admits he wasn’t overly confident about it, because of the lack of refinement and adjustment that is usually the rite of passage for any new product.

“I only ever made it once and then produced 500 jars,” he says.

For that reason, the chutney never really got out to markets - it was just quietly added to the producer’s online shop.

But when a customer said that it was the best thing they had ever tasted,

Adam realised he was on to something special and entered the chutney into Great Taste.

3-stars and a Golden Fork later, Black Lime Chutney features prominently in the producer’s plans for future growth.

“We have sold 500 jars to date. Next we will roll it out on a bigger scale,” says Adam.

Whilst it could be easy to get carried away with this success, Adam’s feet remain rooted firmly on Cumbrian ground.

“We are basically a family business which prides itself on supplying independent retailers, food service outlets and consumers via our online business. We still do the market stall at Keswick ourselves as we love to meet customers, and most importantly, we are all passionate chilli heads,” he says. www.mrvikkis.co.uk

WHEN YOU ORDER a wild mushroom tortellini or a ravioli di Capri from a high street Italian restaurant, the chances are that that the filled pasta wasn’t made on the premises. Pre-Brexit, it probably wasn’t even made in the UK, as most restaurants imported their pasta products from Italy.

However, the UK’s departure from the EU has disrupted the entire food service supply chain, making importing problematic.

For GCL Ingredients, a Nottinghamshire-based food producer, this represents an opportunity to put British pasta on the map. However, convincing buyers is a challenge, admits Justin Akpa, the company’s head of food development.

“There isn’t much confidence in buying British when it comes to pasta,” says Justin. “That is why we have made it our mission to champion British pasta. We want to be seen as being able to produce equal if not better flavours than produced in Italy.”

In order to meet this challenge, the company is investing in consumer insight and trendsdriven New Product Development, with ‘Nduja & Honey Mezzaluna the first product of this new strategy.

“‘Nduja & Honey Mezzaluna was inspired by our food trends research in 2021. We saw that hot honey was trending and knew this works well with smoky meats, giving a hot, spicy kick,” says Justin.

In an area of the market where traditional flavour combinations such as ricotta & spinach dominate, Nduja & Honey Mezzaluna is a welcome innovation.

Whilst GCL can and does produce on a large scale, ‘Nduja & Honey Mezzaluna is made in small (100-150kg) batches due to its premium positioning.

“Our main customers for this product are local

independent restaurants, including Luigi’s in Arnold and Portobello in Carlton,” says Justin.

The production process is ‘part automated’, deploying two pasta making techniques: extrusion and lamination.

“Lamination is essentially what you would do with a roller when making pasta at home - it results in a better texture,” explains Justin.

The filling is a marriage of Italian cheese, organic honey, cured pancetta and ‘nduja, in which the heat from ‘nduja balances the sweetness of the honey, while the cured pancetta delivers a “subtle smokiness” to the back of the palate.

Its flavour profile - which is reminiscent of honey glazed ham - makes ‘Nduja & Honey Mezzaluna an ideal candidate for festive menus, but will also ensure that this contemporary pasta product will be a year-round cracker.

A SAUCE OF CONTROVERSY

FROM BEEF TO palm oil, many of the foods we eat raise difficult ethical and environmental questions. But who knew that soy sauce is controversial?

According to Jacob Thundil, founder of London-based Sozyë, our appetite for soy sauce is contributing to the world’s deforestation problem.

“Traditionally, the sauce industry is very heavily reliant on soya. Soybean farming is responsible for causing widespread deforestation and displacement of indigenous people around our planet,” he says.

Noya is Jacob’s answer to the ethical dilemma posed by conventional soy sauce. Instead of being brewed from soya, it relies on Scottish seaweed to pack a umami punch.

“We brew our sauces in the UK using organic certified Scottish seaweed instead of soya. Our seaweed is harvested from the remote and pristine shores of Wick and we make sure that only the tops of the leaves are collected so that they can regrow within a few weeks,” says Jacob.

It took three years and hundreds of kitchen trials before he and his business partner, Manisha Solanki, had perfected the product.

“We spent three years on the development of Noya and it is not the complexity of the process which makes this umami bomb - it is the quality of the ingredients,” says Jacob.

Finding the right variety of seaweed was one of the most time-consuming aspects of the development process, which is why Sozyë is anxious to keep this a

trade secret.

“The taste profile of commercially available seaweeds wasn’t right - they have a leathery aroma,” says Jacob. “We found a Japanese seaweed that worked, but we didn’t want to source from somewhere so far away. We were sure there must be a way of finding a local organic source.”

Eventually, Sozyë found a company based in Wick, Scotland, that hand harvests a variety that has a taste very similar to fish stock, and in 2021 was ready to bring its soya-free sauce to market.

Planet Organic, Whole Foods Market and Marqt in The Netherlands are among the outlets that have bought into the ‘no soya’ sauce concept.

Having nailed its British-made soya sauce alternative, Sozyë has gone on to develop Nish - a fish sauce alternative - and Noyster - an oyster sauce alternative.
