will admit the winter season is a little harder to bear than the others. I’m not particularly fond of spending what seems like hours getting geared up to endure the icy temperatures, scraping snow from the sidewalk, or how the evening begins in the afternoon. What I do like about this time of year, though, like I am sure many of you do as well, is hot chocolate, stoking the fire, slippers all day long, snowmen, movies and cookies. This is the time of year where we make our lists for the giving season! Sometimes it can feel overwhelming knowing where to start, or where to find new surprises you can gift your loved ones. That’s why we collaborated with some of my favourite local businesses for our winter shopping guide. If you’re wondering what to give, look through our ideas pages for inspiration! Allure of Gemstones

M

arilyn Monroe famously sang Diamonds Are A Girl’s Best Friend, but it was only in the 1930s that De Beers began an aggressive marketing campaign to increase the stone’s popularity. With crystal clear white diamonds flooding the market, many people are turning to uniquely coloured diamonds and precious gemstones to create pieces as unique as their wearers. Ruby Traditionally known as July’s birthstone, this crimson beauty has been mined in Myanmar since 600 AD. More recently, rubies have been discovered in Madagascar and under the receding glaciers of Greenland, yielding stones of astounding sizes. For centuries, the gem has been associated with strength, royalty and wealth. Rubies larger than five carats are so rare and prized that the most expensive ruby ever sold went for more than $3.6 million in 2006, greatly overshadowing white diamond prices at $425,000 a carat.

Rubies have also been the traditional choice of royalty. Sarah Duchess of York received a Burmese ruby engagement ring and Queen Elizabeth II’s ruby tiara incorporates 96 stones, given to her by the Burmese people for her wedding in 1947. The precious gemstone ranges in colour from blood red and pink to pigeon’s blood — which is the most valuable and features a blue tone. The crimson colour of this stone symbolizes undying passion and courage, the perfect gift for any man or woman. sapphiRE Historically worn by royalty as a symbol of good fortune, virtue and wisdom, this September birthstone is most known for its dark blue colour. However, the stones can also be found in orange, purple, green and an almost coral pink colour called Padparadscha (lotus flower), which is the most valuable. In 1997, the world’s largest sapphire, at more than 61,000-carats, was discovered in Madagascar. Named the Millennium Sapphire, it is currently valued at $180 million. The stone was carved featuring the evolution of human history, with representations of historic figures like Christopher Columbus, Mozart, Newton, Shakespeare and Albert Einstein. Legendary beauty Helen of Troy was reputed to draw her power from a large star sapphire and Jean Harlow and

Elizabeth Taylor both collected the stones. More recently, sapphires made headlines due to Kate Middleton’s stunning 18-carat engagement ring, securing Prince William’s wife as a fashion plate the world round. Often associated with stability, sapphires are the perfect centrepiece to a modern setting. EmERalds Mined in Egypt since 1500 BC, emeralds were used to great effect by Cleopatra to emphasize and solidify her royal status. Unlike diamonds, there is no such thing as a flawless emerald; each stone has its own inclusions that make it one-of-a-kind and allow gemologists to trace the stone back to its original mine. The gemstone can be found around the world and was even discovered in the Yukon in 1997, for those looking for a uniquely Canadian piece. Depending on where emeralds are harvested, they

can range in colour from a deep green to a misty mint. Often noted as the May birthstone, the subtle glow of the emerald wowed Spanish conquistadores. Emeralds feature prominently in the world’s most expensive tiara. At 500 carats, the headpiece sold for more than $14 million at Sotheby’s. Recently, the stone has graced the red carpet on celebrities including Angelina Jolie, Victoria Beckham and Uma Thurman. Encapsulating enduring love, luck and intelligence, the emerald is the ultimate statement piece for a truly unique person. Whether you have that perfect engagement ring, an heirloom statement piece or a small token of affection in mind, the beauty and symbolism of precious stones have entranced people for centuries. Redefines sophistication

T

his fall, a select group of people were privileged to experience an event, first of its kind in this city: PARKLUXE Saskatoon. Notfor-profit organization PARK (Promoting Artists, Redefining Kulture) exists to promote and support emerging creatives in communities across Canada. The organization, headquarters based in Calgary and directed by Kara Chomistek, hosts different events that give these up-and-coming talents a unique and engaging opportunity to showcase their work. PARKLUXE, one such event, is an upscale fashion show, connecting sophisticated fashion-lovers with local designers. The inaugural Saskatoon event was met with much enthusiasm — by both the attendees and those putting the show together. Presented by Midtown Plaza, the event was supported by PARK’s connection to the Cayman Islands Department of Tourism. Cayman representative, Paul Minich, says the relationship began after the creation of the Cayman Island Stylemaker program, an initiative to support those with exceptional emerging forte in the fields of food, fashion, art and interior design. “I reached out to fashion event organizers in Western Canada, and liked what PARK represents and the quality of events they stage,” Minich explains. Held at the Rouge Gallery, Chef Dale MacKay, owner of Ayden Kitchen & Bar, and Chris Cho, the restaurant’s resident bartender, led the Ayden team to deliver an assortment of top-notch hors d-oeuvres and cocktails. The fashion show itself, made successful by talent from EDGE AGENCY, left quite an impression on the guests: Matthew Gallagher (the force behind Maison Matthew Gallagher and titleholder of the Stylemaker title), was the star behind PARKLUXE Saskatoon’s premiere fashion show. Gallagher’s haute couture line was modelled for the more than one hundred guests. With the crowd mesmerized by the Italian-trained, Toronto-based designer’s collection, local designer Rebecca King followed the lead and put her modern-cozy collection on display. Various upscale retailers from Midtown Plaza selected fashions for the models, followed by designs by Edmonton’s Malorie Urbanovitch and Caitlin Power from Toronto. “I had a great time, and was happy to see a crowd who was excited to be there,” says Gallagher once the event wrapped up. Appreciative of the connection with PARK and Cayman Islands Stylemaker program, Gallagher acknowledges events like this allow him “to branch out and meet people I wouldn’t normally have the opportunity to work with.” King agrees. “I loved seeing so many people in Saskatoon dressed up and eager to see what we have to show. I received an amazing response to my collection and many went home with their favourite pieces they picked out on the runway.” The one-of-a-kind luxury fashion and culinary event was a triumph for all. “What an amazing and fun evening,” says Minich. “Saskatoon totally embraced the event, as did the media and local celebrities. This was a huge success, and we will be back next year.”

T

he concept of manifesting what we desire by holding the intention is not new. This concept was made widely popular by the book The Secret. And, while some people have learned how to utilize this tool, it’s not as easy as some of the teachings make it out to be. Perhaps a more realistic course of action is to look at our current situation and ask a very important question: “Why?” There is an old adage that says we can’t know where we’re going unless we know where we’ve been. Allison Bachmeier, an advanced BodyTalk practitioner and instructor, agrees. Her course, Money, Wealth and Valuing Yourself, allows people to explore how their concept of self-worth ties into their current state of wealth. That is, wealth on all levels; financial, physical and emotional. “Our state of financial health is a very clear mirror to how we relate to ourselves,” says Bachmeier. If we are in financial debt, we can see our situation as a clear metaphor for lack in deeper, more personal aspects of ourselves. “So often people approach life from a place of lack because that’s where we think we get our motivation from. And, yet, nothing could be further from the truth,” Bachmeier adds. In this vein, those struggling with finances might benefit more from exploring the concept of self worth, rather than looking directly at finances, as this could be where the answers to the apparent lack lie. Bachmeier explains the conscious mind represents only 10 per cent of our psyche. The other 90 per cent is subconscious. We really need to explore our entire psyche to

break through our self-limitations, as many of our beliefs are so deeply ingrained that we don’t give them a second thought. “When finances are lacking, the deeper question is what is limiting you,” says Bachmeier who recommends spending time revisiting your past. For starters, explore how your parents dealt with money and spoke about money. Those who grew up watching their parents work hard for little, will undoubtedly have had their beliefs and current attitudes towards money shaped by this experience. It’s important to not just look at our parents, but also to consider societal conditioning that affected our belief systems. “We often hear in society money is the root of all evil. That translates to the feeling there’s something dirty about having money,” says Bachmeier. If we take on this, or similar, beliefs our ability to receive money is greatly limited. Essentially, the way we think affects our state of abundance. “Our belief systems, our thought patterns, our attitude and our personality affect all aspects of our life, and we see it very clearly in our state of financial health,” says Bachmeier. Her online 40-day course offers daily exercises in self-explorations, allowing participants to see where their limitations are coming from, and how to address them, in order to move into a better state of awareness and overall abundance. Be intentional about doing or saying one thing each day that nurtures the relationship. Relationships thrive in a safe, calm, loving and fun home. Be intentional about cultivating personality characteristics that are of value to you and to your partner. For example, if you want to be a better listener, then work on actively listening to your partner. When your partner raises an issue, really listen, rather than immediately jumping in with your own viewpoint. Be mindful of your emotional state, particularly frustration and anger, in order to increase your capacity to stop knee-jerk reactions with your partner. This will allow you to slow down and think about how you want to respond to your partner, rather than responding with an automatic reaction. FOR PARENTS WITH CHILDREN Be intentional in your playfulness. Play is the language of a child. Parents will see benefits from setting aside some dedicated time to create positive energy within the family. A child needs to witness her parents being happy and relaxed and having fun. As a child matures, it is important to keep finding ways for the

family to have fun together. This doesn’t necessarily require an elaborate plan or an expensive vacation. Find an hour to play a board game together or go for a walk. Be intentional about allowing your child to struggle in life. By validating these struggles as normal, a child is encouraged to problem solve and discover which path is intrinsically right for him. “Protecting” your child from struggles can help create a false sense of self and unhealthy dependencies. Be intentional in practicing self-empathy. By checking in with your own feelings and needs, you will increase self acceptance and self connection. Take a minute before you react to your child’s needs. Being aware of your own needs can reduce anger and avoid a power struggle. Be intentional about modeling appropriate reactions when dealing with anxiety and stress. As a parent, when we model healthy self-soothing techniques, we provide the child with the tools she needs to cope with difficulties that will arise in her life. Be intentional about setting healthy and age-appropriate boundaries with your child. While a child needs to have a voice and feels that he is heard, parents need to guide the child’s development and make decisions to ensure that long-term interests of the child are protected. Teens continue to need guidance as they become more emotionally intelligent, while taking more responsibility over their lives.

Dry, rough feet and heels are actually a very common concern. For best results, I would suggest getting a pedicure every six to eight weeks by a professional pedicure technician in a clean and sanitary environment. If your budget does not permit for professional pedicures, I would suggest purchasing a foot file or paddle (approximately $5 to $15). Once a week, soak the feet and use the paddle on callused areas afterwards. Filing any more frequently could actually increase callus build-up. Apply a foot cream immediately after filing and continue applying nightly to maintain the best results. My favourites are: Gehwol MedSalve for cracked heels ($20), Gehwol Callus Cream ($21) or Gehwol Blue for dry rough feet ($17). My pre-teen wants to start wearing makeup. What should we mothers do so our daughters don’t stumble through like we did when we first started, wearing blue eyeliner and pink lipstick? Can you advise? — Angela Jennings Simmons I think it’s really important to advise our daughters that beauty comes from within first and that makeup is designed only to enhance that beauty. daughter on a healthy skin care program, available from any skin care professional, and teaching her the key to beautiful makeup is looking natural. Begin with a few basic items that help enhance her true beauty, like mascara, light powder and a subtle lip gloss. Scheduling her with a makeup artist is a fabulous idea as she will be given suggestions and taught to apply makeup properly. What is up with getting acne in your 30s? What’s the best product to prevent and/or treat it? — Marie Schultz Those pesky breakouts don’t necessarily end when we pass the teen years! There can be many reasons as to why an adult may break out or be dealing with acne. It could be caused by the cosmetics or products being used on the skin, or be related to allergies, stress, diet or hormonal changes. To best determine exactly what is causing the breakouts and to be able to properly remedy these concerns, I suggest scheduling a consultation with a skin care professional. Maintaing your Fitness Objectives Understanding Core Strength & Pain-Free Movement

W

e all understand the numerous health benefits that result from an exercise program. New Years is a time to take stock of personal goals. Two considerations while beginning any exercise routine are core and movement. CORE

Endeavouring to improve one’s fitness level or initiate a new healthy lifestyle are amongst the most common New Year’s resolutions. However, the most discouraging scenario for many is derailment due to injury, especially of the lower back. It is my personal observation that there are numerous individuals whose exercise objectives are put on hold due to lower back pain. In fact, there is a study with a particular group suggesting that emphasizing fitness training alone may result in increased risk of injury. I have seen a wide range of active people become extremely frustrated when their gains and long term goals are negated by their weakest link. Individuals performing various types of group exercise, high level collegiate athletes, and those who are simply exercising for health reasons, are all at risk for disruption of their exercise plans and routines if some basic understanding of proper core recruitment are not first understood and initiated. When a weight is carried or placed on the shoulders, this causes a spinal load. Spine loading and physical exercise cause

temporary weakening (stiffness and sore muscles) and later adaptation of muscle, bones, and connective tissue, ultimately leading to better strength and health. However, the intervertebral discs in our spines do not adapt. Repeated motions, especially involving bending and loading the spine when it is flexed (bent forward) will eventually result in cumulative damage to the low back. Sparing the spine is the key. For example, hundreds of sit-ups will ultimately lead to breakdown. It is extremely important to develop a strong core safely and effectively. The key core exercises engage the core musculature maximally while minimizing spinal motion, compressive and shearing loads. Dr. Stuart McGill, a leading lower back researcher, has advocated three key starting exercises to serve as a foundation for core development: 1. A lumbar spine crunch that maintains a neutral lumbar spine and does not allow any bending. 2. A side plank (see pictures #2 & 3 of two different levels of difficulty). 3. A lower back stability exercise called the bird dog. **Proper instruction is critical in perfecting the form of these exercises** With the development of proper core control, endurance and strength, an individual can safely begin exercising to achieve one’s fitness goals.


MOVEMENT If there is a single word that encapsulates all that physical therapy stands for, it is “movement.” In order for the body to move properly, there must be proper movement of bones, proper movement at joint surfaces, proper movement of the muscles that move the bones (and therefore appropriate fascial gliding within the muscles), appropriate myofascial length, and co-ordinated movements of limbs thus leading to strong, purposeful and pain-free movements of the body. When a person is beginning a workout plan, apart from muscular discomfort at the end of a hard set or delayed onset muscle soreness (DOMS), which can occur up to two days later, all movements in an exercise should be pain-free.

Any pain during the performance of an exercise should be monitored closely to ensure that the individual does not have a mechanical problem. In fact, if there is pain during the performance of an exercise or pain that lasts after typical muscle soreness should be subsiding/ or starting to subside (within a few days), the individual should probably seek out a health care professional. Physical therapists are trained to assess joint motion, myofascial length, and soft tissue trigger points. Treatment of these dysfunctions can allow the individual to resume pain-free movement.

The old adage “no pain, no gain” is passé. I would prefer a client stop the particular exercise that causes pain during the movement, seek advice and treatment from the appropriate professional, and modify their workouts until safe progression can be made. Likewise, after a hard workout although one should expect discomfort from sore and tired muscles, pain is different. Listen to what your body is telling you. If small steps are taken to treat issues that arise along the path to healthier living, maintaining your fitness objectives and sticking to your New Year’s resolution is far more attainable.

High frequency sound waves are used to image soft tissues and fluid filled spaces. Ultrasound is an excellent modality for non-invasive, radiation-free imaging. hoW cAn i get An UltrAsoUnd? A referral is made by a physician. The physician will fill out a requisition indicating the type of exam and reason for exam. An appointment is then needed. Most people don’t know the requisition can be used to book an appointment at any ultrasound clinic, even if there is a specific ultrasound clinic name at the top of the requisition.

ProcedUre Before the scan, a sonographer will ask pertinent questions regarding the reason for the exam. Warm gel is applied to the skin and a transducer that sends and receives sound waves is moved on the body. This produces a live image that can be frozen and an image stored. Most procedures take about 30 minutes to complete. A radiologist reads the images and makes a report. The results are sent to the ordering physician in approximately two working days.

y opening Brainsport when he was just 21 years old, Brian Michasiw has been helping runners put their best foot forward for 23 years. Brainsport’s new location on 10th Street East is just a short jog from its previous location on Broadway Avenue, offering running, walking, work and casual shoes all under one roof. “We’ve got the best collection of running shoes we’ve ever had,” says Lisette Schermann, manager. “We also have the best collection of waterproof and insulated boots we’ve ever had.” The impressive new building hosts a remarkable selection of shoes and apparel from notable brands such as Asics, New Balance, Keen, Sorel, Salomon and Helly Hansen. His current venture heralds a new restaurant concept that will delight families and classic rock and roll fans alike. Co-owners, and KISS front

men, Gene Simmons and Paul Stanley are behind the burgeoning franchise that has opened several locations in the last two years. Simmons’ wife, Shannon Tweed — a model and actress — is a Canadian girl whose mom and sisters live in Saskatoon. Tweed connected the dots between the restaurant founders and Saskatoon entrepreneur Vaughn Wyant for the first Canadian Rock & Brews location.

“I told Vaughn we want this to be great and even though Saskatoon is small, we want this to be the first in Canada,” says Furano. “I want to have retractable glass roofs so even in winter you can feel you’re outside with snow falling. We’ll have fires going. I know it gets cold up there!” The ConCepT Rock & Brews is “an energized dining and entertainment concept” featuring affordable, high quality American comfort food, including wings, salads, burgers, sandwiches and pizza, along with a variety of diet-conscious, gluten free and healthy options. There’s a broad selection of international and craft brews, and guests enjoy a family-friendly rock ‘n’ roll experience. The restaurant caters to “li’l rockers” too, with a special menu and crayons to colour placemats. The Lore In the summer of 2010, highly respected concert tour manager Dave Furano, his brother, concert merchandising industry pioneer Dell Furano, and restaurateur/hotelier extraordinaire Michael Zislis got together for a KISS concert. While backstage, enjoying a cold beer and visiting with Gene Simmons and Paul Stanley, Dave said, “What’s better than rock and brews?” Brainstorming ensued — engaging the diverse talents and creative energy of the five friends bound together by their love of concert rock — and Rock & Brews was born. The LoCaL Legend It looks like this kind of cool will work out well north of the border as Vaughn Wyant, Saskatoon business magnate, has signed on to work with Gene, Shannon and the Formosa group of Vancouver to launch the first Canadian Rock & Brews. While Vaughn has a “high opinion of the of the business climate in Saskatoon, and Saskatchewan as a whole,” it’s the “kind of cool and interesting twist,” that is Rock & Brews, along with Gene Simmons and Shannon Tweed — that piqued his interest. While prospective locations are still being toured, and opening dates are not even being considered yet, there is a lot of optimism around the project. “I’m in the beer business (Great West Brewery), maybe we can work with Gene to produce some proprietary brews,” adds Vaughn with a chuckle. The roCk god KISS bassist and singer Gene Simmons stands behind Rock & Brews wholeheartedly. “My favourite thing at the restaurant,” he begins, “depends on whether I come here to do some real damage. You can’t beat the burger. You cannot wrap your lips around the burgers; they’re so big! We’ve got gluten free beers and pizzas. I have to watch my girlish figure so the salads are out of this world. Everything is tasty, so you can’t lose. Food’s got to look good, then smell good, then it’s got to taste good,” Simmons says.

That’s a fancy way of saying just never mind what everyone else is doing, just do the best you can.” gene on living a successful life: “Look, approach life with the following proviso: God gives you only one day of life, 24 hours. What are you going to do? Are you going to watch I Love Lucy reruns and wait to die? Or are you going to go out there and take life by the scruff of the neck and do some good, leave your mark, take care of your loved ones and make a lot of damn money? And that’s a good thing. A lot of people don’t realize that the one per cent makes life possible for a lot of people. It is the rich who create jobs. Nobody poor ever gave me a job.”

vidently Gene Simmons — rock god, Rock and Roll Hall of Fame inductee, restauranteur and business genius — is all that and can officiate weddings, too.

He married his first couple in May to the tune of KISS’ Rock and Roll All Night at a wedding ceremony at Rock & Brews in El Segundo, California. Despite having balked about his own wedding for years, Gene might be getting the hang of it.

“We’re going to work out some way for people to submit their requests, maybe have a contest. The first one he did here was really special. Shannon was there and he said, ‘You know, it’s taken me a lifetime to know the importance of this reunion.’ Shannon’s bawling, I’m bawling, the whole place is bawling. It was really special.”

Couples planning their nuptials might want to take note, especially if they’re KISS fans. “The plan is for Gene to perform weddings at the grand opening,” says Dave Furano,

Hiring for the restaurant will be extravagant, too, says Furano. “When the word goes out that we’re hiring, I want it to be like American Idol. I want the lineup around the block!”

Karin Melberg Schwier: Your brand and name is hugely recognizable. What makes you one of the most sought-after photographers in Western Canada? Heather Fritz: My company does well because I don’t complicate the reasons for doing what I do. Getting great photos means allowing people to be themselves, and capturing the essence of who they are. There’s no big secret sauce or mystery to it. I never try to force people into looking like something they’re not, but that requires investing some time in getting to know each other. KMS: Lots of people are out there taking pictures. How do you differentiate yourself and stay competitive?

HF: This market is saturated with photographers, but I don’t spend a lot of time worrying about how other photographers work or how they perceive what I do. What I care deeply about is that my clients are happy with what their pictures say about them. I care that a public person who’s been photographed a million times finds something fresh and different in the images we create together. KMS: Loving what you do is so important in any career. When you’re so busy and so in demand, how do stay fresh and excited about what you do? HF: My philosophy of following my own path serves me well as I continue to work in this market. I travel for projects around North America, but the mainstay of my

work is here. I love keeping my eye on exciting emerging artists who have fresh energy and the excitement they bring is infectious. I think it’s important that we encourage one another – established or just starting out – especially in an unregulated industry. There’s a big range of quality and variety out there, so I’m thrilled when someone I’ve mentored opens their own business and is doing great work. KMS: What are you passionate about? HF: Well, I’m passionate about my family, my friends and my community but I’m passionately interested in photography, real estate and women’s issues. I’ve got a keen interest in how this community is growing, how people are making

KMS: Plus community involvement seems to be a big part of your life.

KMS: You do marketing and promotion work outside of your photography business. What other projects are you working on?

HF: Yes, it’s one of the best aspects of living in Saskatoon, all of the different ways to get involved. I work regularly with w the Saskatoon Children’s’ Choir, YWCA Women of Distinction Awards, and Silver Spoon Dinner. Most recently I did some work with the Ronald MacDonald house and was blown away by the level of volunteerism that is required to make that place run.

HF: Recently I’ve done some project management and communications work for Archer Daniels Midland Company, one of the world’s leading agricultural processors; Toepher International, a commodity trading firm; accounting firm Buckberger Baerg & Partners LLP, and mortgage associates Jackie Hendrickson & Kristi Knippel to name a few. Lots of my business connections are a good fit for my clients so it makes sense and works rather seamlessly when I spearhead some of these projects.

once said ‘life is short so make it wide.’ I like a dash of unpredictability and spontaneity in life. There’s a lot I want to do! It’s a little like closing my eyes and sticking a pin in a map. I’m taking online YouTube guitar lessons because I’m not even remotely musical. And, just for something completely different, I think I’ll write my real estate exams.

KMS: What’s next? HF: I try to live my life by constantly throwing myself into new experiences, stretching myself, trying new things that maybe I’m not very good at. Someone

LIVING SKY WINERY JULIETT CHERRY PORT (SASKATCHEWAN): Strong but elegant. The succulent flavour from the Saskatchewan cherries holds on the palate, while the finish leaves you dreaming of candied fruits and warm fires.

DAUPHIN DE GIRAUD (FRANCE): A classic example of French dessert wine, where ‘Botrytis’ is allowed to affect the grapes before picking. Deeply golden, quince, pear and orange flavours mingle with spiced orange treacle. Clove and cinnamon lingers.

GRAHAM’S 20 YEAR OLD TAWNY PORT (PORTUGAL): Tawny ports are made from red grapes aged in wooden barrels, exposing them to gradual oxidation and evaporation. As a result, they gradually mellow to a goldenbrown colour with a nutty flavour and a medium sweetness drawn from the oak casks. Like all good things, tawny ports will improve with age.

BAKED APPLE WITH CINNAMON AND CRÈME FRAÎCHE

FLAPPER PIE

The secret is in the timing: don’t guess! 9 tbsp. unsalted butter, plus extra for greasing 1 tbsp. pure cocoa powder, plus extra for dusting 5 oz. dark chocolate, broken into pieces 1/2 cup caster sugar 3 small eggs 3 small egg yolks 1 cup plain flour, sifted 4 3/4 cup oven-proof moulds Preheat oven to 200°C. Thoroughly grease moulds and dust lightly with extra cocoa powder. Melt butter and chocolate in a bowl over a bain-marie. In a large bowl, beat together sugar, eggs and egg yolks until light and pale. Pour melted butter and chocolate over egg mix. Fold in sifted flour and cocoa. Pour the mixture into the prepared moulds and bake for 8 minutes. When the outside is crisp, loosen with a knife and carefully turn onto serving plates. The centre should be soft and gorgeously gooey! Serve with crème fraîche or vanilla ice cream.

A prairie classic, just like grandmother’s! Crust:

The best apples for baking at this time of year will be the biggest ones you can find in the stores. apples brown sugar maple sugar cinnamon crème fraîche Dig into the top of the apple with a teaspoon until about half way down, then fill with brown sugar and maple syrup. Bake at 350°C for 15 minutes. Top with crème fraîche and a sprinkle with cinnamon.

10 graham wafers, crushed 8 soda biscuits, crushed 1 tbsp. sugar 1/2 cup butter Combine graham wafers, soda biscuits, sugar and butter. Set aside 1 cup for topping. Pat crumbs in a 9-inch pie plate and bake at 350°C for 5 minutes. Set aside to cool. Cream filling: 2 cups milk 1 tbsp. cornstarch 1/2 cup sugar 3 eggs, split yolks and whites 1/2 tbsp. vanilla extract 6 tbsp. sugar Pour milk into a heavy saucepan. Mix cornstarch and sugar. Stir into milk. Add slightly beaten egg yolk and vanilla. Cook, stirring constantly until the mixture boils and thickens. Pour into pie crust. Let cool. Beat egg whites, gradually adding sugar until peaks are formed. Pile gently onto cooled pie. Spread to edges, and swirl whites for an attractive finish. Sprinkle with remaining cracker crumbs and bake at 350°C until peaks are lightly browned.

n the 1950s, the diner was often the beacon of social activity — rock ‘n’ roll music, good food and endless entertainment. John Tyson has recreated this fun blast-from-the-past atmosphere with Pink Cadillacs Malt Shop and Diner.

“People hung out at diners like they would a bar now,” says Tyson, who runs the locally owned and operated diner. “With Pink Cadillacs, we want it to be a hub — a place for people to hang out, de-stress and have fun.”

The diner’s interior is an ode to the era, with black and white checkered floors, bright red seating and pictures of James Dean, Marilyn Munroe and Elvis lining the walls. There’s even an original 1950s jukebox playing everyone’s favourite 45s all night — transporting guests back


to when the greasers and pink ladies dominated the social scene. The menu offers a variety of tasty comfort food made fresh daily. Tyson says the names of each dish is a quirky tribute to his favourite era, such as Big Bopper’s Corned Beef, which is made with shaved corned beef and served on sourdough with pickled onions, Swiss cheese and sauerkraut. Served with tangy mustard and your choice of side. Frankie’s Fish & Chips is a lightly breaded cod that’s fried golden brown and served with tartar sauce. Other names include I — Lucy’s Garden Salad, The Doo Wop and The Danny Zuko. Pink Cadillacs malts and milkshakes — topped with whip cream — are proving to be one of the diner’s main draws for patrons. “We use the original malt powder from the U.S.,” says Tyson. And while malts

and milkshakes come in three flavours —vanilla, chocolate and strawberry — customers can also customize flavours with ingredients such as pineapple, banana, Reese’s Pieces and Oreo. On the weekends, the staff don authentic silk and felt poodle skirts and perform a choreographed dance to Jerry Lee Lewis’ Great Balls of Fire on the malt counter. During the day, movies from the ’50s, such as Cinderella and Lady and the Tramp are shown — making it a great place for families to get together and hang out. After 9 p.m., Pink Cadillacs turns into an adults-only establishment, becoming a slick, sophisticated lounge to enjoy a few drinks and some rock ‘n’ roll. Pink Cadillacs serves wine, beer and specialty big kid shakes such as At the Hop — made with Malibu Rum, banana bols and ice cream

as well as specialty cocktails such as Pink Lady, Blue Moon and Graceland. “Pink Cadillacs was always something I wanted to do,” says Tyson. “There’s nothing like it in Saskatchewan.” And the diner already has it “made in the shade” with patrons of all ages — especially seniors, who enjoy the ’50s nostalgia alongside a menu that showcases a flair for old favourites — burgers, fries, onion rings and sandwiches. Pink Cadillacs also has gift cards that are a perfect gift for the upcoming holiday season.

achievement that can only be earned through countless hours of toil; efforts often gruelling, sometimes frustrating, and almost always anonymous.

For the Canadian athletes in the crowd, Hill’s win in the Gold Medal Plates culinary cook-off was their victory as well. The money raised in the prestigious annual cross-Canada competition will help fund their own gruelling training, their own anonymous efforts — and hopefully, eventually, their own moment on the podium.

Gold Medal Plates is called the ultimate celebration of Canadian excellence in food, wine, athletic achievement and entertainment. It has raised more than $8 million for Canada’s Olympic athletes since its inception in 2004. Chefs in 11 major cities compete for the chance to represent their community at the Canadian Culinary Championships Feb.

When Gold Medal Plates began, she was just finishing her university career as a pole vaulter, and went through the struggles typical of a high-performance athlete. She saw firsthand how support continued to improve. “Those years are the most difficult years because once you leave university you usually leave where you’re training, and find somewhere new. And you have to pay for that. You have to pay for coaching, and find a place to live. So bridging that gap is usually pretty difficult. You are on your own.” Hendry made it to the top. She won gold at the Francophone Games in 2005 and competed at the Olympics in Beijing, China in 2008. textures and petite carrots paired with the McWatters Collection Meritage 2012 wine. It’s more basic than it sounds. “I grew up in small-town Saskatchewan, so the whole focus of the dish, which we called the Farmer’s Table, was built around very humble ingredients. We didn’t win with truffles or foie gras or lobster or anything like that. It was basically peas and carrots and lamb — components that, growing up on the farm, we would have had for Sunday dinner. We just took those ingredients and elevated them to a different level.” Hill did that by thoughtfully complementing each ingredient of the dish. “We made celery root puree and we used micro celery leaf as garnish. The pickled mustard seed we garnished with a mustard flower, and the pea pudding was decorated with a pea wafer. So we used a lot of the components in multiple ways, which I think showed a lot of technique, a lot of flair. It won over the judges.” Hill had only been with the historic Saskatoon hotel for six months when the Gold Medal Plates opportunity presented itself. He had moved from his post at the Fairmont Chateau Lake Louise with an eye to the competition, just not so soon. “I was looking to be involved in 2015. That was my goal coming here, and then found out with very short notice that some people backed out, so I had about six weeks to prepare. And it moved along quite fast after that.” She knows how time-consuming and expensive the logistics of competing are. Just getting the opportunity for meaningful training is a monumental effort. Hendry, recalling a moment she spent pleading with an airline to accept her 15-foot bundle of 10, high-tech poles onto a plane and paying the extra charge, says there is no easy route for most athletes. “For me, specifically, I was going to the U.S. a lot after my university career was over and training there, so events like [Gold Medal Plates] raises money to help pay for living and coaching and travelling and equipment. That’s one

of the things that is so difficult in athletics, which a lot of people don’t realize, is that getting to the meets you need to get to in order to develop.”

And now, on to Kelowna: another podium, another dream of gold.

Chef Hill took his own circuitous route to the podium. Growing up in tiny Imperial, SK he didn’t have too many opportunities to sample haute cuisine. But he did learn a thing or two about good, wholesome food. It’s knowledge he put to good use at the competition. The chef from the Delta Bessborough Hotel kept it simple to wow the judges. His winning dish was sous vide lamb sirloin, celeriac puree, pea

ou’re at the top of the world. The natural mountainscapes are coated with soft, powdery snow. Long, untouched descents are accompanied by the soundtrack of adrenaline pounding in your ears. You’re exhilarated: this is the adventure you’ve been waiting for. “The first heliski experience is something you will never forget,” says Bruce MacMillan of Mike Wiegele Helicopter Skiing in Blue River, B.C. “The excitement of watching the helicopter flying in to pick you up is what gets the heart rate going, and from there it’s the best skiing experience ever.” Western Canada, and British Columbia in particular, is a hot spot for the sport; the majority of the world’s heliskiing trips take place throughout the Rocky Mountains. MacMillan notes, “The fact that we ski in the lightest, most dense powder snow in possibly the world is something that you can never forget.” It seems unlikely there is anything forgettable about a heliskiing adventure. Experimented in Western Canada in the 60s, the sport grew in commercial tourism across North America and into Europe by the 1980s. “It is the best way to ski – powder snow every run, [you’ll] never ski in another person’s tracks and, of course, no lift lines!” exclaims MacMillan. “What got me hooked? The first run! I can guarantee you will have the same feeling the first time you try it.” “It” involves skiers boarding a helicopter and being flown to fresh terrain (the average ride is just minutes long) where they are dropped off with a skilled guide to experience the best run of their

lives. “We have terrain to suit all levels,” explains MacMillan of Mike Wiegele’s 1.2 million acres of terrain that spans the Cariboo and Monashee mountain ranges. While each heliskiing operation has its own unique prerequisites for skiers, MacMillan says, “If you can ski a blue run, you can come heliskiing with us. This speaks for itself, but coming with some fitness will allow you to enjoy every turn, run and day that you are skiing with us. As long as you show up with the ski attire and boots you are comfortable with for the day, we supply the rest: the latest Atomic and Völkl powder skis and the perfect deep snow boards from Burton. All safety equipment including an avalanche transceiver and backpack are standard.” If the thrill is tempting, but the fear of something going wrong lingers in the back of your mind, let it go. Skier safety is essential to the heliskiing industry and all precautions are taken. The Canadian heliskiing industry is strongly regulated with the highest safety standards in the world. Well-established systems are in place to forecast potential avalanches. “Every decision, every run, all day is based on getting the best and safest powder skiing anywhere in the world,” MacMillan explains. “We use the five-step stability forecasting system developed over 40 years ago, and have two guides, one in front and one in back, in all our 212 groups. The interior of the Cayenne was created with the driver’s comfort in mind. “The new multifunction sport steering wheel features standard shift paddles. The look and functions are based on the steering wheel of the 918 Spyder,” says Engelmann.
