hat a pure labor of love this first issue has been. Thank you, Santa Fe, for being so Santa Fe — wonderful and welcoming, spirit-filled and generous. We are excited to become a part of your lives. An aspen forest full of gratitude to everyone who has made this issue so special. Thanks to George R. R. Martin for sharing with us his love of New Mexico, film, writing and, of course, the Jean Cocteau Cinema. The Jean Cocteau is one of the cornerstones of the Guadalupe District and, thanks to him, it’s thriving again. Our first issue features many Santa Fe favorites — from Mayor Javier Gonzales to freshly roasted green chiles, the wildly talented Chef Johnny Vee to perfect rejuvenating getaways, close to home. As well, take a peek at the new 2015 Lexus SUV— wow! We are honored to have Tias and Surya Little as a part of this first edition. Their elegance and grace are contagious. Speaking of grace, thanks as well to our style maven, Hillary Randolph, for sharing her musings on style and Santa Fe. “I

According to Herbert, the design of the 2015 NX originated with the power of performance vehicles. “The 2015 NX unites the engineering input of racers with the sophistication and class of Lexus luxury,” he continues. The 2015 NX is available in two awe-inspiring models, the NX 200t with a turbocharged 2.0-liter four-cylinder engine and the NX 300h hybrid. This now means that Lexus offers six hybrid vehicles to choose from; that’s more than any other luxury brand to date. Because of the kick-down function of the new transmission, the hybrid offers the powerful thrill that drivers have come to expect from other Lexus vehicles.

he scene on the Plaza is picture perfect: tourists milling about, vendors selling their wares, a musician playing guitar by the obelisk under a cerulean sky with white clouds dancing overhead. Through this idyllic scene Mayor Javier Gonzales passes, shaking hands and waving at people he knows. Being a native of Santa Fe and involved in local politics for many years, he knows a lot of people. He sits down with a group of locals enjoying lunch at one of the new tables found along Lincoln Avenue. They say they love what he’s doing with the Plaza. He then strides over to talk to artist Anna Chavez, who sells her paintings near the bandstand. Next he chats for a few minutes with pedi-cab driver Tracy Kurtenback to see how the summer has been. Mayor Gonzales has a genuine and heart-felt interest in Santa Fe and its people. The Plaza is a special place for many Santa Feans, the mayor among them. He says, “The Plaza is the place I grew up.” He says he has fond memories of getting ice cream, buying shoes and playing on the Plaza. Though things in Santa Fe have changed since his childhood, the Plaza is still the center of the community in many ways. One of first things Gonzales did upon becoming mayor in March was to get the city council to pass his People to the Plaza Resolution. “My goal was to bring all people to the Plaza.” This “gives us the green light to build an experience for all Santa Fe families, which will provide safety and an opportunity for the community to gather,” said Gonzales. As part of the initiative some of the streets bordering the Plaza were closed to vehicles during the summer months and

people involved in production and postproduction work in the local film industry. On the environmental front, the mayor is putting together a Climate Action Task Force to address threats of climate change on a local level. Other environmental issues he plans to address include reducing greenhouse emissions, increasing bus ridership, promoting more usage of solar energy, improving the recycling program and lessening our dependence on fossil fuels. The mayor has been in office for only a few months, but he can already tell his biggest challenge is finding the time to do everything he wants to do. But when asked if he thinks he’ll run for a second term, he says “This is a four year term and we’re going to work that way.” He wants to take one day at a time and be in the moment rather than looking ahead to the next election.

In talking with Gonzales you realize there is a sincerity in his desire to make Santa Fe a better place for all its residents.

Regarding education, Gonzales wants to improve early childhood and after school programs. Considering all the rich arts and culture Santa Fe enjoys, he also thinks we should better integrate our cultural institutions with our education system.

“When I looked at the challenges facing the city, I was drawn to run for mayor. I ran for office because Santa Fe, for all

love Santa Fe and I love fashion, and it’s always a curious thing to mix the two. It’s more than turquoise and cowboy boots, although those things are a part of the style landscape here. For me, Santa Fe is a place of courage and confidence, healing and beauty, and it’s a place where we can combine these powerful elements into our own personal style.

Santa Fe style is magical but not universal. The mere mention of the words Navajo or Paseo De Peralta evoke the autumn reds and golds, russet leather, and winking sky blue turquoise accents. These words, as well as these colors, are part of our everyday life in northern New Mexico. Luxury is more than a price tag; it’s a feeling of grace and self-assurance. It’s that feeling of confidence when you put on your favorite cashmere sweater, or that one pair of earrings that makes you feel fantastic. You know the ones. I have worked in luxury goods my entire life. I was born in

Donald Pliner, the world famous shoe designer, often visits her store. Guadalupe also brings community together, through her work and by creating out-of-the box fundraising events. Could you ask for more? Whether I am packing for a vacation to a guest ranch in Wyoming or for a business trip in Washington, D.C., I know my Santa Feinspired pieces and classic jewelry will carry me wherever I go. New York City and grew up in Palm Beach, Fla., where I was exposed to opulence and beauty from a very young age. The ocean, homes, fashion, jewels, cars and yes, even the people were beautiful. When I was 20 years old, I moved to New York City to work for Ralph Lauren. It was like working in a fairy tale. Beauty surrounded me at every turn. This one store had a million dollar flower budget and I had a clothing allowance larger than many salaries. Every moment was a flurry of exquisite fabrics, textures and patterns. This exposure to pure luxury helped me understand the emotional value of style and beauty — the spirit, if you will, of style. If you look fabulous you feel fabulous. Your entire attitude can be transformed by a beautiful wardrobe. The confidence purely decorative assets evokes is real. Kate Kruger of Cupcake has become my friend and ally in helping to create my

own personal Santa Fe style. Like Santa Fe, Cupcake is not about labels and bling. It is about quality, and looking and feeling beautiful. I define my own wardrobe as sophisticated, simple, elegant, and most of all, contemporary. Kate helps me pull everything together, whether it is mixing things from my own closet or purchasing something new. Bringing Back a Smile A compassionate approach to dental implants

here has to be room for compassion,” says Dr. A. Burton. “It’s not all business.” This approach has served Melton and his patients well for more than 40 years. Melton is a prosthodontist who specializes in dental implants — a type of dental prosthesis that can be permanently screwed into the jawbone and is a replacement for the entire tooth or teeth. This solution avoids many of the issues often experienced with dentures and fixed bridges that simply rest on top of the gums or use surrounding teeth for support.

Because this work can be costly, Melton offers free seminars to give people information about his work and free consultations to people who come to his office. Once the initial consultation is complete, he’ll sit down with a patient to go over the best options. No one is turned away and Melton says he “maximizes what we can do within the cost you can afford.” His attitude is always, “Let’s see what we can do.” Sometimes a patient just needs one or two teeth replaced, and sometimes a patient may need all their teeth removed and replaced with implants. Melton, whose father was a builder, likens his

When he went to see Melton the news was not good. Due to significant infection, his natural teeth all had to be pulled. “I never knew it was so emotionally draining, the thought that someone was going to yank out your teeth,” Kaser recalls.

The process of getting dental implants takes months for most patients. The work must be done in stages to allow time for the mouth to heal. During this time, Melton provides temporary dentures so people can go about their daily lives. For Kaser, the lengthy process was well worth it. “I lucked out to have found Dr. Melton and that he has been practicing prosthetic dentistry for so long,” he says. “This is the best thing I have ever done for myself.” Melton sees his work having a number of facets. There’s the scientific aspect inherent in his role as a dentist. There’s the artistic aspect in his ability to create a new set of beautiful “teeth” for his patients, giving them back their smile. He also notes that his work gives people selfesteem and confidence to have social interaction with others. “You can get calories anyhow. But you want quality of life and to enjoy food,” Melton says. “I’ve been doing this for a long, long time at a specialty level. There’s nothing I haven’t seen,” he adds. He’s witnessed the changes in his profession, too. He says prosthodontists are the original extreme makeover dentists. After practicing dentistry for years, he says he’s at the top of his game and doesn’t see any reason to stop. “I’m just not ready to go home,” he says. Melton feels he really makes a difference in people’s lives, adding, “What else would give me this much satisfaction?”

One such patient who needed a complete reconstruction is Fritz Kaser. Kaser, who says his major calling in life is to be a ski bum, ended up in Taos teaching skiing and building snow runs. At age 60 Kaser realized he had some serious dental issues, which can be normal for an aging person. His dentist in Taos was not equipped to

perform the kind of work necessary and recommended Kaser to go see Melton. Kaser, who now specializes in aging and activity, says dental problems are major issues affecting the quality of life for many elderly people. He says dental issues can affect an elderly person physically, psychologically and socially at a point in their lives when they have the most time to go out and do things. “I still wanted to ski competitively and didn’t want dentures to come out on the mountain,” Kaser says.

The popularity of this ancient spiritual practice has exploded in the West. It has gone from being an edgy, new age practice, to a normal part of life for soccer moms and stressed out executives everywhere. It seems as though there is a yoga studio on every other corner across North America.

Tias Little opened one of the first yoga studios in Santa Fe back in 1994. He and Surya Little later opened another studio together in 2000, and have been providing spiritually grounded and heartcentered teachings and healing since then. It has roots both in their years of study with B.K.S. Iyengar and study with Pattabhi Jois, the founder of Asthanga Yoga. This, combined with the study of Sanskrit, meditation, bodywork and energetic medicine, led them to develop Prajna Yoga, which incorporates proper alignment with a focus on calming the body/mind system. Tias Little, who teaches workshops, retreats and teacher trainings across the U.S. and abroad, has seen many changes in the practice of yoga. When he moved to Santa Fe in 1989, he says there were only a handful of people teaching yoga and no big studios. Today, a quick Internet search shows numerous places to practice yoga around town in a variety of styles.

So what has caused this seismic shift in the yogic landscape? It’s that yoga has a positive effect on the body, mind and spirit of anyone who practices yoga for any length of time. Surya Little says, “What makes yoga so alive today is that it’s a physical practice, but it has a much deeper effect on the subtler body.” She notes that in a one and a half hour yoga class you not only get cardio-vascular benefits along with a muscular workout and bone strengthening, but also energetic benefits such as clarity of mind and more a bountiful energy level. Most people come to yoga for the physical benefits. But it doesn’t take long one until one notices changes in other aspects of their lives. Yes, yoga makes you stronger, more flexible and the body more lithe and resilient. But it’s the more subtle changes that can really help change your life for the better. Tias Little says, “Yoga is really invaluable as a way to help people reduce stress in their lives. It can help with structural problems like sciatica, lower back pain, shoulder compression and that sort of thing. But it also aids with mental well being, with stress reduction, improved sleep patterns and improved digestive function.” He adds, “The practice really enables people to connect more with their intention, in the way they live their lives.” Both Tias and Surya Little say Santa Fe is especially suited for yoga. Surya Little says, “Santa Fe always reminds me of the Himalayas in Nepal. There’s a sacredness about the land here. The land and open space allows one to reflect more.” She also notes there is a slower pace of life here. “You can live a spiritual life without dropping out.” Tias Little adds about the Santa Fe yoga scene, “Santa Fe has always been so rich in the healing arts. That ups the ante. “ He says this city is unique in this way, much like Boulder, Santa Monica, Austin and Cambridge, Massachusetts. The Spanish word “fe” means faith in English. With this in mind, Tias Little says, “Santa Fe has always been a place for spiritual renewal. The open space, the luminous light lends itself to a seventh chakra (blissful) experience. aroline Campbell trusts Del Norte Pharmacy. With her dog, Pearl, in tow, she walks up to the counter where cashier Becky Pobe greets her by name with a friendly hello. Campbell sets the dachshund on the counter whereupon Pobe offers Pearl a doggy biscuit and an ear scratch. This level of customer service to people (and their dogs) is what Del Norte Pharmacy is all about. In a sense, it harkens back to a time when health care was more personalized and

you knew your doctor, your pharmacist and others to whom you entrusted your most precious commodity: your health. In this day of giant chain pharmacies, Del Norte’s approach is a breath of fresh air. always adequate to properly address a patient’s needs.” For example, if a patient requires a dosage of a medicine not manufactured, if a patient is allergic to a component in a manufactured medicine or if a patient needs a liquid form of a medicine because they cannot swallow a pill, the staff at Del Norte, in consultation with a physician, can make individualized medicines to meet a patient’s particular needs. “As a pharmacist” says Hunt, “it allows you to treat a disease from multiple pharmacologic angles.” Another common reason for the use of compounded medicines is for hormone replacement therapy, often a treatment for women in menopause and men in andropause. This therapy is generally more effective when compounding is used. Each person’s chemical makeup is unique and compounding allows the physician and pharmacist to better match the hormone treatment to that of the patient’s natural hormone levels. Though compounding represents only a small percentage of prescription drug sales at Del Norte, they feel it is an important service to offer their customers. hen I tell people I own one of the largest telepsychiatry companies in the world, they ask: “What’s that, over the telephone?” The originators could have done me a favor and called it videopsychiatry, but people would say, “It’s on videotape?” “Skype psychiatry” people understand, but Google monitors and harvests your Skyping sessions to sell you perfume and diapers. I tell people, “It’s like Skype, but we use programs that are properly encrypted to meet all government health care laws for privacy.”

They kind of get that, but then say: “I don’t want to see my doctor on the Internet. I like to shake my psychiatrist’s hand.” So you drive for an hour, park your car at a building known to house mental health offices, sit in a lobby for half an hour with magazines from 1984 and once called into the room, what is your reward? You get to shake your psychiatrist’s hand and then chat for 15 minutes. Did he wash his hands after that last patient? There isn’t a sink in his office. What are the communicable diseases spread from hand to hand? I think one of them starts with an E. Let’s face it, it’s not about the Internet or that you don’t get to shake your doctor’s hand. It’s that people don’t like change. Long ago, people told Henry Ford human bodies weren’t capable of moving at speeds faster than a horse gallop. Ten years from now, when someone says “I got stuck in traffic and just missed being killed in an accident while I was driving to my psychiatrist’s office,” the response is going to be: “Why in the world would you drive to your psychiatrist’s office?” We, as psychiatrists, don’t touch our patients. There is no physical exam, no tongue suppressor. Socorro and Alamogordo are wonderful places, but let’s face it, finding good

mental health care in rural America is very hard. If you manage a mental health clinic more than 30 miles from Santa Fe, Albuquerque or Las Cruces, you know the reality. High-quality doctors want to live in places like San Francisco and Seattle. Why? Because within 20 miles you have professional sporting events, theater, concerts, world-class museums, major universities and endless five-star restaurants. In one county, we were told, “Over a seven year period, we recruited and trained 100 psychiatrists, only to have them leave in less than a year.” What is one of the major complaints about mental health care in America? Clients are tired of having to tell their stories all over again just because their doctors keep leaving. The mission of our company is to bring highquality mental health care to underserved Americans, with a commitment to continuity of care (mostly Medicaid and Medicare, though we also see private, fee-for-service patients as well). If your doctor can teach at a major medical school on Thursday, take her husband to a Paul McCartney concert Friday night, attend a symphony with her friends on Saturday, take her kids to a Denver Broncos game on Sunday and see you in Raton, NM, less


than a mile from your home on Monday morning, what motivation would that doctor have to leave? It’s the perfect job. Help serve the underserved, and enjoy all the world has to offer. My biggest complaint about mental health care in America is those receiving psychological services are often passive. I can’t tell you how many times I’ve heard: “My counselor was such an idiot. He never did get where I was coming from.” And when I ask: “How long did you see him?” they tell me, “a couple of years.” Fifty minutes a week for a couple of years? And you never said anything? Seriously? If the paper boy threw KoolAid packets into your yard every morning instead of the newspaper, how long would you tolerate that and keep paying for the paper? People are afraid to confront their shrinks and therapists. Okay, I understand a newspaper and a grape Kool-Aid packet are tangible and clearly distinguishable, counseling services are harder to compare. What I tell people is: you know those things you tell your spouse when you get

home from the therapist’s office? Your complaints about being misunderstood? Your annoyance the doctor didn’t even seem to care or seemed caught up in his own stuff? Those are exactly the things you need to say IN the doctor’s office. That is where true therapy begins. The vast majority of mental health care workers would be clueless if you walked in and said, “I’m at point A, and I want to get to point B within six months. How can you help me achieve that goal?” But that is exactly what you should be saying. That makes the intangible tangible. How can telepsychiatry help? Supply and demand. If your psychiatrist is clueless, if your therapist keeps giving you the same platitudes, if you’re telling your story for the seventh time in two years because your small town can’t keep providers, then you now have options. Write your insurance company and demand that they cover telemedicine. You’ll go from two options to two hundred. How do you find a good psychiatrist? I would recommend not reading doctor

reviews that pop up on Google. ombine a love of film, divine timing, a cinema in need of some tender loving care and a man with the means to do something about it, and what do you have? The revival of the greatest little theater in Santa Fe — the Jean Cocteau Cinema, a little cinematic castle in the heart of the city. George R.R. Martin, the internationally acclaimed author and long-time Santa Fe resident, has known the Jean Cocteau Cinema for more than 30 years. He’s known its many incarnations: hippie art house, movie theater and abandoned art deco building. Each of these phases encapsulates a piece of Santa Fe history. Martin came to Santa Fe in 1979, “back in the day,” as he refers to it. He had been teaching journalism at Clarke College in Dubuque, Iowa, and was hoping to turn his part-time passion for writing into a full-time career. He was also looking to leave behind the severe winters of the Midwest for a place with less extreme seasons. Today, his genuine affection for northern New Mexico is evident in the way he talks about the natural beauty and the light so synonymous with Santa Fe. But back then, little did he know what the future held for him. Martin fondly recalls when the Plaza and downtown were alive with local businesses. “The Plaza has changed. It was more a place where locals shopped.

In the old days, the Plaza was a more integral part of the town,” Martin says. He also vividly recounts each of the independent theatres and bookstores that used to be there. A lot has changed in Santa Fe, and as well for Martin. He explains that four years ago no one really knew who he was. His set of books, “A Song of Ice and Fire”, sold millions of copies and led to a hit television series on HBO, “A Game of Thrones”. Seemingly overnight he was catapulted into super-stardom and fame. One of the theaters he remembers most fondly from days past was the Jean Cocteau Cinema. “I loved this theatre and I really hated the thought that someone would buy it and tear it down,” Martin says. His success as an author gave him the means to do something about it and to change the fate of the local treasure. So, nearly two years ago, Martin decided to do just that after rounding the corner from lunch at the Whole Hog Café. “I have rounded that same corner many times and this time I just thought, ‘I’m going to do it,’” Martin muses. “What the hell, let’s see if we can make it go again. I love movies. I love old movie theaters. It broke my heart going by and seeing it dark,” he adds. Martin purchased the theatre April 2013 and spent several months renovating. It had been standing vacant since 2006,

and after being idle for so many years, was in need of serious repair. He installed a new screen, a Dolby sound system, a digital projector and completely redid the concession area. Today, the Jean Cocteau Cinema, a la George R.R. Martin, is so much more than a theater. It’s alive with movies, music, lectures, books, art and more. “Basically, I’m up to try most anything,” says Martin. “I want to support the community and whatever the community wants to do.” Inside you will find a unique bookstore in which every book is signed by its author. This includes, of course, Martin’s own best-selling series, “A Song of Ice and Fire”, along with books from other authors who give readings and signings there. It’s a venue, too, a place where you can hear musicians, poets, writers and artists. There’s an ongoing list of events in the intimate and cozy theater gracing the beautiful Guadalupe District of Santa Fe. It is also a beautifully appointed spot you can rent for your own private function or party.

While at the Jean Cocteau for a movie or other event, you can enjoy a beer, wine or some of the most creative “cocteau-tails” in Santa Fe. “You must try the Whiskeyrita,” says Martin, “It’s a wonderful cocktail Nicole Ullerich created with green-chile infused whiskey. Really quite nice,” Martin says with a smile and twinkle in his eye. “She creates the most unusual and delicious drinks, you really must try them,” adds Martin. True to its history, the Jean Cocteau is principally a theater. It’s where you will not only find what Martin calls the best popcorn in Santa Fe, but vintage musicals, newly released indie films, the classics and more — it’s a place where every genre is a star. Martin mentions he’s come across many people who think he only shows movies in keeping with the genres he writes, but nothing could be further from the truth. “I love sci-fi and fantasy. I’ve made a living writing that,” says Martin, “but we show many types of movies.” It’s a theatre created with the people in mind. f you would like to eavesdrop on history while enjoying one of the best margaritas in Santa Fe, El Farol is the obvious choice. At El Farol you can almost feel history emanating from every corner. The dark, worn wood of the floorboards and the thick adobe walls attest to the many decades this establishment has been a part of Santa Fe. In fact, this Canyon Road restaurant has been a gathering place for Santa Feans since 1835. One can only imagine the furtive conversations, wedding proposals, famous flamenco dancers and secret rendezvous that have happened in this historic place.

In the early days, as owner David Salazar tells it, people used Canyon Road as access to the wilderness surrounding the city to hunt, forage and gather firewood. Canyon Road wasn’t even paved until 1959. Salazar says artists have always lived in the area and were some of the first customers of the restaurant. Nowadays, of course, Canyon Road is renowned for its art galleries, restaurants and upscale boutiques. Salazar, who has owned El Farol for 30 years, says that though the history of the restaurant runs deep, he and his staff make every effort to keep things

fresh and new. Right now there are two new aspects of this venerable eatery you should check out: the outdoor patio area and the gallery and gift shop. The outdoor patio area is a great addition to El Farol. There’s ample seating in a style of rustic elegance. A refreshing breeze and shaded seating keep it cool and inviting, even in summer. Salazar says there will be not only live music in the patio, but also fashion shows by known and upcoming designers as well as a sculpture garden.


Live music, whether inside the restaurant or on the outdoor patio, happens every night at El Farol, adding an even more festive air to this art-centric dining spot. Salazar says the music runs the gamut from salsa to flamenco to rock, jazz and more. Salazar says they are trying to recreate a “cafe society,” which harkens back to New York in the 1930s and ‘40s. It’s not just about going out to dinner. He says, “It’s about extending the evening to include music, dinner and still get home at a reasonable hour.” Salazar adds that, “Santa Fe is an eclectic place and we cater to the eclectic.” According to Salazar, El Farol was the first Spanish restaurant in New Mexico and they’ve been doing it for 30 years. From their menu you can pick entrees like paella, Angus rib eye or grilled sea bass. Or you can go the tapas route choosing from a delectable assortment of salads, cheeses, seafood and meats. Adjacent to the patio is the new gallery and gift shop, which opened this June. General manager Freda Keller says, “The artists in the gallery represent the history and passion of El Farol.” She adds that they have a direct connection to El Farol and many of the artists are the ones who painted the murals that you will find gracing the walls inside the restaurant. As far as the items in the gift shop, Keller says that owner Salazar wants to have art from all around the world. He calls it a “casa del mundo” or “house of the world.” The gallery and gift shop are open from noon until 8 p.m. Tuesdays through Sundays. Another valuable service at El Farol is its catering. In fact, if you are considering having El Farol cater your holiday event for family, friends or business, it’s wise to call soon as “we fill up pretty fast for the holiday time,” says Keller. The full regular menu is available for catering. What’s more, you can even have flamenco music and dancing at your catered event. Catherine Skelton, a client from Houston, Texas, raved about her catering experience. “We chose El Farol for our son’s rehearsal dinner last December. It was an incredible experience,” said Skelton. “We live in Houston and had never frequented the restaurant or Santa Fe for that matter. Freda Keller held my hand all the way from helping with decorations, sound and video equipment to planning the delicious menu. The event was perfect. Freda and her staff took care of every detail and everyone had a wonderful time. I would highly recommend El Farol. The food is fabulous and the staff is professional and efficient.” Experience a piece of Santa Fe history and enjoy fabulous Spanish tapas and sangria by heading to El Farol. From the Plaza to Old Pecos Trail during August, September, and October, Santa Fe is wrapped in the scent of green chilies tumbling over open flames. The deep green hue of the precious cargo blackening as it slow

green chile chicken stew with cheddar cheese Biscuits From Johnny Vee 2 tablespoons butter 1 cup onion, chopped 3 garlic cloves, minced 1 1/2 cups roasted, peeled and chopped green chiles 3 tablespoons flour 1 tablespoon jalapeno pickle juice or white vinegar 3 cups chicken stock 1 teaspoon salt 1 teaspoon cumin seeds, toasted and ground 1 teaspoon Mexican oregano 1/2 teaspoon salt 1/2 teaspoon pepper 2 large red potatoes, diced into 1-inch squares 1 1/2 cups poached chicken meat

Melt butter in a medium saucepan. Add onion and sauté until soft and translucent. Add garlic and brown slightly. Stir in chiles. Sprinkle flour over onion mixture, stir in, and let brown slightly. Stir in pickle juice, stock, cumin, Mexican oregano, salt, pepper and potatoes. Reduce heat to simmer and cook about 10 minutes or until potatoes are almost tender. Stir in chicken. Pour stew into buttered 4-quart casserole dish and top with cheddar biscuits. Cheddar Cheese Biscuits 2 cups flour 1/2 teaspoon garlic powder 1/4 teaspoon pepper 1/2 teaspoon hot ground red chile 4 teaspoons baking powder 4 ounces cold unsalted butter 1 cup shredded sharp cheddar cheese 1 cup heavy cream, plus 2 teaspoons

In a medium bowl combine flour, garlic powder, pepper, salt, red chile and baking powder. Using a cheese grater, grate the butter into the flour and stir it until mixture resembles coarse meal. Stir in the cheese. Add cream and mix lightly with a wooden spoon until dough just holds together. Cover and let rest 10 minutes. Using a large spoon, break off dollops of dough to form flattened biscuits 2 inches in diameter by 3/4 –inch thick and drop onto surface of stew. Bake stew uncovered in preheated 425 degree F oven (450 degrees at high altitude) for 20 minutes or until biscuits are nicely brown. Note: If you cannot fit all the biscuits on the surface of the stew, simply bake on a cookie sheet for 12—15 minutes and serve on the side.


culinary alter ego, red chile, and ladled over a couple of blue corn tortilla chicken enchiladas, it’s known as “Christmas.” And every time you have it, it’s a gustatory gift. Both professional chefs and local epicures enjoy the unique flavor of green chilies in their kitchen creations. Santa Fe celebrity chef and director of Las Cosas Cooking School, Johnny Vollertsen (known as Johnny Vee), incorporates green chilies frequently when cooking his prized Southwestern recipes. “Green chili is a versatile ingredient that offers not only heat, but a depth of flavor to anything it is used in, whether it is chopped and put on a green chili cheeseburger or used in something more complex like a green chili stew,” Vollertsen says. Green chilies fill our homes with the scent of tradition and our palates with punchpacking capsaicin, the component of chilies that makes your mouth smolder with delight. It also contains mega doses of vitamins A, B, and C and kick starts your metabolism, similar to caffeine or green tea. What’s not to love? For making your own green chile-inspired creations at home, here’s a couple of recipes to get you started from chef Johnnie Vee:

green chile scalloped Potatoes 4 medium potatoes, washed, peeled and sliced very thin 1⁄4 cup butter 1⁄2 cup breadcrumbs 1 1⁄2 cups heavy cream 1 1⁄2 cups milk 1 teaspoon, hot ground red chile 4 egg yolks, lightly beaten 1 cup shredded Monterey Jack or Cheddar cheese 1 teaspoon Mexican oregano 2 teaspoons salt 8 green chiles, roasted, peeled, seeded and chopped Freshly ground pepper

Method: Preheat oven to 400oF and spread potatoes on kitchen towels and dry well. Melt butter in a medium sauté pan and add breadcrumbs. Saute the breadcrumbs until they are toasted and lightly browned. Remove from pan and set aside. In a medium bowl, whisk together cream, milk, red chile, yolks, cheese, Mexican oregano and salt.

over potatoes and scatter half of the chiles over potatoes. Pour half of the cream/egg mixture over potatoes. Add remaining potatoes and chiles and pour remainder of milk/cream mixture over chiles. Top with toasted breadcrumbs. Cover and bake at 400oF for 40 minutes. Remove cover and continue baking for 15 minutes more, or until casserole is bubbling and nicely browned. Serve warm

You are welcomed with friendliness and the smell of the chef’s exquisite creations. Chef Angel Estrada’s story is truly inspiring. He was born and raised in Chihuahua, Mexico, the oldest of eight siblings. His upbringing completely revolved around food. He helped his father, who was a farmer, and assisted his mother cooking the family meals. At age 15, Estrada came to the United States and found work as a dishwasher in a restaurant. He then moved up to prep cook and continued to learn the business via “on-the-job” training. He grew his expert cooking skills under the tutelage of many world-renowned chefs. To this day, he is very much a “hands-on” chef, doing everything from prepping vegetables to making sauces and keeping an eye on every plate before it leaves the kitchen. Beautiful visual presentation is integral to Estrada’s culinary style. Estrada met Catanach while both were working at one of Santa Fe’s longstanding fine dining establishments. Catanach was the general manager and Estrada was the executive sous chef, and then executive chef. restaurant adventure. Estrada contacted Catanach and suggested they open their own place. After many discussions, they decided to go for it, and Midtown Bistro opened in December of 2012. Catanach has enjoyed 35 years in the restaurant business and is often the first person you see when you enter Midtown Bistro. In addition to co-owning the restaurant, he manages the front of the house. Cantanach exemplifies the role of restaurateur. With his convivial manner and distinguished moustache, he escorts guests to their tables, directs the wait staff and ensures everyone has the most amazing dining experience. White linen tablecloths and fresh flowers, often English roses, add touches of elegance. The wait staff, several of whom have worked with the two owners for years, is professional, friendly and extremely knowledgeable of the menu and wine list. If you spend any time here, it’s obvious the waiters know many of the clients who return again and again. One diner, Dr. Robert Bell, has been to Midtown Bistro dozens of times and says, “We love everything on the menu.” The menu at Midtown Bistro is described by Estrada as, “American cuisine, with a Southwest flavor.” But this doesn’t begin to describe the delectable selections

offered, whether you go for lunch, dinner or Sunday brunch. You might start with crispy calamari with citrus chipotle aioli and habanero pineapple sauces, or yellowfin tuna tartar with fried wontons, miso, wasabi and soy. Salads include a fresh mozzarella with organic, local heirloom tomatoes and balsamic syrup as well as a cobb salad with baby spinach, chicken breast, bacon, hard boiled eggs, avocado, tomatoes and gorgonzola cheese dressing…amazing! For a dinner entree, you might try the grilled New Zealand rack of lamb with summer vegetable gratin, sauteed Swiss chard and balsamic demi-glaze, or the seared diver scallops with sweet corn risotto, calabacitas and basil pesto. Both are prepared with the highest quality ingredients and attention to detail. The entire menu is extraordinary, delicious and wonderful. And what’s more, it changes throughout the year. Estrada says he puts together the menus based on what is fresh and seasonal. There’s plenty of local and organic ingredients as well as many gluten-free options. They serve Sterling Silver brand beef and the goat they use is procured from Talus Wind Heritage Meats in nearby Galisteo, New Mexico. Catanach says of himself and Estrada,

rancheros and fajitas, which are super popular, as well as traditional comfort foods like macaroni and cheese. Sit back and enjoy the western flavor and the live music, which happens every night at the Cowgirl BBQ. The Cowgirl BBQ is “deeply committed to the local music scene,” says Ballas, spanning genres from Americana to Zydeco. Don’t forget Sunday’s musical brunch from noon until 3 p.m., with extraordinary menu selections. Wednesday nights, when school is in session, kids eat free. According to Ballas and Lambert, “unexpectedly awesome” are the words commonly used to describe their

catering. Lambert says they can cater anything from their regular menu or they can custom design a menu as well. Autumn O

ne of the many benefits of living in northern New Mexico is we get to experience all four seasons in such richness; picture-perfect examples of winter, spring, summer and fall. It is autumn here in Santa Fe, and we are moving slowly into the winter months, perhaps my favorite time of year for many reasons. One reason for my fondness, is the flavors that accompany both autumn and winter. Primordial cravings begin to somehow become part of what we choose to eat and drink as the seasons shift. Flavors of mushrooms, roasted nuts, butternut squash, figs, cider, pear, sweet spices and an array of savory herbs are just a few examples of ingredients finding their way into your kitchen, as well as the menus of seasonally-conscious restaurants across the city. It’s also a perfect time to turn inward and spend more cozy nights at home nestled around your kiva fireplace. So I would like to suggest some ideas for you to enjoy as the sun starts to set earlier and the cool brisk evenings say hello. While the herb-crusted rack of lamb is in the oven I would like to recommend two beautiful fall cocktails, as well as one amazing red wine. The first drink I named “The Tranquilo,” and the other is called “Spiced Chimayo Cocktail.” Both are perfect pairings for a brisk fall evening. The wine which I have chosen to accompany dinner is red, rich and robust. I developed “The Tranquilo” cocktail specifically for Tequila Patrón, which has come out with a new artisan line of tequilas, called Roca Patrón. These tequilas are all produced using the ancient method of the “tahona,” a large volcanic stone wheel used to crush the baked agave before fermentation. Roca is also fermented with the fibers, so the end result is a beautifully crafted line of tequilas showcasing pure, baked agave flavors.

In “The Tranquilo,” I chose to use the Patron Roca Añejo, which is aged for 14 months in American oak bourbon barrels. The cocktail highlights the inherent flavors of caramel and vanilla found in the tequila. This drink is incredibly versatile and can be either served warm or cold.


The Tranquilo 1.5 ounces of Roca Patrón Añejo 3 ounces of Loóza pear nectar 1/4 teaspoon of caramel syrup 2 drops of vanilla extract Caramel for rim

To prepare the drink (cold version): Gently heat up the pear nectar and dissolve the caramel and the vanilla paste into the nectar. Chill. In a mixing glass stir Roca Patrón Añejo with ice and chilled pear nectar. Strain mixture into a caramel-rimmed martini glass and serve.

To prepare the drink (warm version): Gently heat up all the ingredients and serve in a caramelrimmed glass. The second cocktail, “Spiced Chimayo Cocktail,” is incredibly unique and, for me, defines fall in the high desert, combining the spiciness for which Santa Fe is famous with artisan tequila and locally-pressed apple cider.

Spiced Chimayo Cocktail 1.5 ounces of Roca Patrón Reposado 3 ounces of fresh, local apple cider 3/4¾ ounce of crème de cassis 1/2¾ ounce of Spiced Simple Syrup

To make spiced simple syrup: With a spice grinder, grind two cups of cinnamon sticks, one cup of star anise, one cup of cloves, one cup of Szechuan peppercorns. Put ground mixture into a pan and gently start to heat. As the spices begin to smolder, stir the spices in the pan once or twice. Be careful not to burn them. Add five cups of simple syrup (Note: simple syrup is made, in this case, by mixing two-and-one-half cups water with two-and-one-half cups granulated sugar and heating) to the mixture and bring to a boil. Remove from heat and let cool. Filter the mixture through a fine strainer and place in a squeeze bottle. Layer all ingredients over ice in a tall Collins glass and enjoy!

As the aroma of the herb-crusted lamb fills the kitchen and the risotto is being prepared, it is now time to open the wine. Autumn brings full-bodied reds to mind. A perfect pairing for the meal might be a Barbaresco from the Piedmont region in northern Italy. I recommend finding a 2007 vintage in your favorite wine shop. This wine is an excellent recent vintage and will be showing nicely with a few years of age. Try Marchesi di Gresy Martinenga Barbaresco. This particular Barbaresco has an explosive nose of cherry, sweet spices, rose petal and licorice. With integrated tannins and a nice bit of acidity, it helps to balance the richness of the risotto. I think you will find this to be the perfect paring for your special late autumn feast. Cheers! Enjoy! Herb-Crusted Rack of Lamb 2 racks of lamb, about 1-1/4 lb. each, chine bones removed, rib bones frenched, and meat trimmed of all but a thin layer of fat Kosher salt and freshly ground black pepper 2 cloves garlic, minced 1/4 cup chopped fresh parsley 2 Tbs. chopped fresh thyme 1 cup soft fresh breadcrumbs 1/4 cup olive oil 2 Tbs. Dijon mustard

Position an oven rack in the middle of the oven and heat the oven to 475°F. Season the lamb with salt and pepper. Combine the garlic, parsley, thyme, and breadcrumbs in a shallow bowl. Moisten the mixture with enough olive oil to make the mixture hold together. Heat a large dry skillet over high heat. Put the lamb, meat side down, in the skillet. With tongs, hold the lamb against the skillet for a minute to give it a nice brown crust. Turn the meat to sear it on all sides for a total of 4 minutes. Remove the meat from the skillet and paint the meaty side of the rack with the mustard. Roll the meat in the herb mixture to coat it. Sear and coat the second rack in the same way. Transfer the racks to a roasting pan just large enough to hold them. Cover the rib bones with strips of foil so they don’t burn and roast until medium rare, 20 to 25 minutes (120°F internal temperature). If you want a crispier crust, finish cooking under the broiler for 2 minutes. Let the racks rest for 5 minutes before carving. Use a carving knife to cut between the rib bones. Arrange the chops on warm serving plates. Serve hot. (The chops will cool quickly, so the best strategy is to carve the racks at the table.)

hen you consider the top tier of restaurants in Santa Fe, a city known to “foodies” for its gustatory excellence, Geronimo is always included in that list. Equally impressive is Geronimo’s ranking as one of the top 100 restaurants in America by OpenTable, a leading restaurant reservation website. Geronimo is also the only Mobil/Forbes 4-star restaurant in New Mexico. The reason for this success rests in the hands and hearts of the partners, the collaborative team of Chris Harvey and Eric DiStefano. They’ve been working together for 18 years with Harvey as general manager, taking care of the front of the house and staffing, and DiStefano as executive chef, heading up the kitchen and putting together the imaginative and delicious menu. Harvey says of their partnership, “It’s like working with a brother who you really like.” Harvey has been one of the partners of Geronimo since 1994 and DiStefano since 1997. This duo, with their combined creative synergy, is one of the reasons why this restaurant is so wildly successful. “We both love food and dining. This is our life.” says DiStefano. Of their partnership he says, “It’s a good fit. Both of us are interested in excellence and that is what we constantly work toward.” Harvey adds, “It’s all about the service. It’s a combination of food and hospitality.” “We’ve worked really hard to get where we are,” DiStefano says. “Geronimo has evolved, it’s like a child. Being a part of that child’s evolution, watching it grow” is one of his favorite things about Geronimo. eronimo, just the name evokes thoughts of times past and images of the famous Apache leader. But Geronimo the restaurant isn’t named after the Native American, as many people believe. It’s named after Geronimo Lopez, a peasant farmer who built the adobe structure in 1756. In this historic dwelling, both locals and tourists enjoy one of the finest dining establishments Santa Fe has to offer From the white, crisply-pressed linen table cloths, to the simple fresh-fromthe-garden flowers and the plush leather chairs, Geronimo invites you to dine in elegance. But what keeps people coming back is the outstanding service and incredible food. This Canyon Road icon offers everything you need to have a memorable dining experience. The menu at Geronimo is self described as “global eclectic.” This global influence

can easily be seen perusing the menu where you will find elements of French, Thai, Japanese, Southwest cuisine and beyond. they use, for example, are from a farmer in Abiquiu who grows tomatoes exclusively for them. “I use all the ingredients of the area” says DiStefano. On the other hand, DiStefano will bring in ingredients from anywhere necessary to make the perfect dish. For example, their fish is from Hawaii where, the chef says, the fish is fresher and from healthier oceans than fish from other areas. T

here are not enough adjectives to describe the flavors at Coyote Café. You could start with exquisite, after taking a bite of mesquite grilled Maine lobster tails and revel in its delicate, yet substantial, richness. Or you might say impeccable, after trying something so incredibly simple, yet perfectly prepared, as the cast iron seared, grass-fed filet mignon with a finish of foie gras butter that sings. Coyote Café—a place where exquisite and elegant, meet relaxed and creative. Chef Eric DiStefano grew up in Pennsylvania, a long way from anything resembling a chile pepper, and later did a five-year European cooking apprenticeship at the famed Hershey Hotel where he learned everything from béarnaise sauce to bouillabaisse. But it wasn’t until the ‘90s, when DiStefano moved to Arizona, that he discovered the powerful flavors of the southwestern desert. And once he got started, he never looked back. He learned about the complexity and richness of guajillo, poblano, Hatch green

chiles and others. DiStefano combined that knowledge with his classical culinary training, mingled it together with care and love to create his own version of Santa Fe-abulous and is now recognized as one of the top chefs in the country. In fact, he is now the co-owner and executive chef of Coyote Café, the downtown Santa Fe restaurant started by Mark Miller who brought Southwestern cuisine to national recognition nearly 30 years ago. DiStefano is continuing this tradition of amazing, creative cuisine through a more global menu with Southwest touches. Coyote Café is, “the most fun place to eat in town,” DiStefano says. “It’s fine dining and great service with a fun atmosphere… it’s not stuffy,” he adds. DiStefano coowns Coyote Café along with Quinn Stephenson, who invented many of the wonderful drinks found on the bar menu, and Tori Mendes who is the general manager. The wait staff is clearly well versed, not only with the intricacies of each recipe, but also about which wines will pair best with each dish.

One unique aspect of Coyote Café is the exhibition kitchen where much of the cooking is done and customers can see the chefs at work. The kitchen, open to those dining at Coyote, is beautiful to witness. “Well-oiled machine” doesn’t even begin to describe the focus and intensity, yet light-hearted and loving way, with which each plate is prepared. Diners can also reserve the seven seats at the chef’s exhibition counter. In this area you can order from the regular menu. Or, for a fun change, you can simply ask the cooking staff to prepare an original dinner for you and your friends. This could mean anything from five to 10 courses, made especially for you, with paired wines. DiStefano says, “We love doing that kind of cooking for people.” One can only imagine the possibilities. eorgia O’Keeffe, gazes out over the dining room of one of the newest additions to the Santa Fe restaurant scene. Her wise, knowing look saying, “Yes, you picked the right spot.” The large, black and white portrait pays homage to the iconic New Mexico artist at this eponymous restaurant, Georgia. Located directly adjacent to the Georgia O’Keeffe Museum in downtown Santa Fe, this eatery combines great food, a warm, inviting atmosphere and local history all into one wonderful dining experience. Executive Chef Brett Sparman describes the menu as contemporary American cuisine “that’s just a little bit different.” While he appreciates the typical New Mexican fare found at so many local establishments, he says eating at Georgia is “a step out of Santa Fe.” While you won’t find any green

chile on the menu, you will find a tempting selection of free-range meats, seafood, organic salads and more. The menu at Georgia changes seasonally, Sparman says, but you will always find favorites such as the grilled romaine salad, shrimp and grits, and grilled and chilled jumbo shrimp cocktail. There are also daily specials available. “We take great importance in what we put on the plate,” adds Sparman. For example, all the beef used in their burgers is from wagyu cattle raised at Lone Mountain Ranch near Madrid, New Mexico.

When Lloyd Abrams, one of Georgia’s owners, was looking for an executive chef for his restaurant, he says he put an advertisement on Craigslist at 5:30 a.m., Sparman submitted his resume at 6:30 and was hired by 7:30 a.m. In addition to the delicious food, Georgia also has an extensive wine list and a full bar. Their bar staff is experienced and have concocted a number of house specialty drinks including the Abiquiu Rose, the New York Night and the Black Iris.

Sparman has been cooking since he was a young boy. Creating food to please his friends and family was his passion. This passion is obvious from the first bite.

The owners of Georgia (Abrams, his wife, Janet Salk, Terry Sweeney, David Morris and Sparman) are all very hands-on and active in every aspect of the business. This means greeting and getting to know their guests.

it. He adds that they do not want Georgia to be just a place for special occasions, but rather a place you come back to again and again. Abrams wants his restaurant to be the kind of place where there is a familial atmosphere and everybody knows you by name. Sparman adds, “There’s a definite personal touch here. We take pride in knowing our guests.” Adding to the atmosphere is the history and architecture of the space. Georgia is housed in what were two separate buildings, both more than a hundred years old. Abrams says they were originally part of the Fort Marcy complex and used to be housing for cavalry officers. When Abrams first saw the buildings, they were not in good shape. But he says, “as soon as I came in, it hit me what had to be done.” And there was a lot to do; the place was renovated from floor to ceiling. Abrams notes that, along with his wife, Salk, they had a great time working on the project together. Now with the work done and the doors open since May of this year, Georgia is looking good and putting out great food. The hardwood floors, brick walls and clean design make Georgia very inviting. Abrams calls it “a sophisticated but simple aesthetic.” “Inside boasts simple elegance…it’s very clean and simple,” says Sparman, “It’s not a typical Santa Fe spot. You could step inside and think you’re in a hip borough in New York.” Georgia is open for dinner seven days a week beginning at 5:45pm. The restaurant closes on July 4th and Christmas Day. Georgia celebrates happy hour daily in the Tavern from 4 to 6 p.m. offering well drinks and selected wines for $6., bar snacks are $7. If you’re looking for a comfortable place to dine that’s a little different from your typical Santa Fe spot, Georgia may just be the place for you. Sharing His Vision Opening People’s Eyes to What’s All Around By Michael Jenkins  Photos Michael Jenkins

W

hat he sees, he paints or photographs. What he captures with his brush or camera, he wants to share with others. And sharing art is one of the things Ronnie Layden of Layden Fine Arts Gallery, does best. Layden is a true artist. He has always been moved to express his vision of what he sees. “My eyes see things, it grabs my attention. Something moves me and I want to capture it so it moves other people,” he says.This drive to share his vision with others is not new. “I have always been interested in details and patterns,” he says. Layden has been drawing since he was a young boy. But it was when his mother gave him a camera at age 16 that his art really changed. At first, he was photographing things as subjects to paint. Then through his photographs he says he started to learn design and composition. He was completely devoted to photography for years and says he has a collection of around 800,000 negatives. Eventually he returned to painting and now works in both mediums. “Having two different mediums to express myself…I like that,” he points out. When it comes to inspiration for his paintings, nature is definitely his muse. “I just love nature,” he says, “there’s something about the physical world that enthralls me. I want to share what moves me.” Unlike many artists, Layden doesn’t have interest in being political. “Some people want to make a political statement with their art. I don’t want to do that,” he says. “If I want to do that, I’ll use my mouth,” he says jokingly. His objective is more aesthetic. “I want to give people a place of peace and beauty with my art.”

Layden’s paintings fall into two distinct styles. One he calls “en plein air” (“in the open air”), which is a more traditional approach to painting. This style taught him the basic principles and values of painting. He believes it’s important to learn these fundamentals as your foundation. Once you have your foundation, you can then do your own

His other style of painting is more stylized and abstract, incorporating bolder colors and a cleaner, more graphic look. In both styles, however, nature is his most common motif. Though some of his work reflects his travels around the world, a majority of his paintings are inspired by his native Santa Fe. His gallery, Ronnie Layden Fine Art, is a reflection of his desire to help people see the beauty surrounding them. You’ll often find him painting in the courtyard of his

I

had the pleasure of stopping by and spending time with the Sherry Ikeda and John Schaeffer, co-owners at Gallery 901. During our time together, they enlightened me on many interesting ideas. Gallery 901 may be small, but they have an amazing assortment of fine art and jewelry. One can choose from oil, sculpture, acrylic, watercolor, encaustic and photography. “If you want it and we don’t have it, we can find it for you,” says co-owner Sherry Ikeda. How’s that for convenience? Gallery 901 is known as Canyon Road’s authority on encaustic art. The owners, Sherry Ikeda and John Schaeffer, are themselves encaustic artists. When I asked them, “What is

encaustic art?” they had a lot to say, but didn’t want this to all be about encaustic art. However, I was fascinated with the encaustic paintings, so I felt the need to present some history. “If you’re going to do that, at least dispel some myths about encaustic,” Schaeffer requests. Apparently, people come into the gallery and go on and on about how much they love the encaustic pieces, but then they ask, “Will it melt off my wall?’” You can feel the gallery owners’ exasperation when they tell the story. “If your wall is 140 degrees, you have more to worry about than an encaustic painting, and acrylic gets soft at 140 degrees too,” Schaeffer points out.

“Gallery 901 directly faces west and we put encaustic pieces out on the front wall in direct sunlight,” Ikeda says. “You can touch them and they are hot, but they are not melting off the wall. If you push your finger into them, they will damage, but that’s true of acrylic and oil as well. You treat an encaustic painting like you would any fine art.” The next myth, according to Ikeda, is that encaustic won’t last and thus has no investment value. I did some research and discovered the most expensive painting ever sold by a living artist is Jasper Johns’ painting ‘False Start’ sold in 2006 for $80 million and it’s an encaustic painting. (How many oil paintings are older than 2,000 years? None. Oil painting was invented in the 1300s A.D.) Ikeda and Schaeffer shared images of a 6th-century encaustic icon from Saint Catherine’s Monastery in Egypt. When

asked if that painting was for sale in gallery, Schaeffer replies, “It’s a museum piece, along with other encaustic art from around the world.” “We like to support innovation and artists who push the envelope,” Schaeffer says.

Gallery 901 represents Willow Bader, a nationally acclaimed encaustic artist, who sees her art as an ongoing adventure. She pushes encaustic painting beyond mainstream boundaries, always seeking images of people in motion — dancing, playing music, celebrating. “We know people come into the gallery specifically wanting oil and acrylic paintings,” Ikeda says. “So, we searched for local Santa Fe artists and fell in love with Paul Steiner’s oil paintings and John Barker’s acrylic works.” John Barker likes to call his art “distractionism.” He paints figures reflecting a state of inner chaos. Barker says this style arose out of his efforts to balance an outer world of stress and constant activity with an inner desire to find some kind of order and grounding. The images that emerge resonate because most people can relate to the conflict Barker expresses. Paul Steiner paints the high deserts of the southwest where there is a sense of loneliness and a sense of the tremendous scale of time that goes into each creation. her work at Gallery 901. She specializes in precious metal clay, also called powder metallurgy, and unique, precious gems. I

f you’re into great food, an awesome beer selection and classic rock ‘n’ roll, then Rock & Brews is the place for you. The good news is this restaurant chain, which has the vibe of a family-friendly concert event, is now in Albuquerque. Rock & Brews officially opened its doors in the Duke City with a splash on Sept.16. Rock icons Gene Simmons and Paul Stanley, of the ‘70s super band KISS, were on hand to get the festivities going. The two are founding partners of Rock & Brews. There was also a bevy

of television, radio and print media reporters and photographers present to record the proceedings. The cavernous restaurant — located on Montgomery Avenue in the northeast part of town — is family style, with picnic table seating both inside and out. It’s decorated with oversize album covers from famous albums of the ‘60s, ‘70s and ‘80s, and a “Great Wall of Rock” tribute to legendary rock icons that runs all the way around the interior of the space. Multiple flat screen TVs show some of

the greatest rock concerts of all time. It’s a 360-degree entertainment experience. This chain has several restaurants in Southern California (where it started), one in Kansas, one in Hawaii and one in Mexico. So, why Albuquerque? “As Rock & Brews expands throughout the United States and beyond, our goal is to have local partners with deeply rooted ties to the communities in which our family-friendly restaurant brand operates,” says Gene Simmons. “In the

For the Albuquerque grand opening, they invited 100 veterans for lunch, during which they presented a check to the New Mexico Veterans Affairs Health Care System for $30,000. The money was raised by selling tickets to the grand opening event on the evening of Sept. 16. Hundreds of people attended the bash, which included live music (including a set of three songs by Simmons and Stanley), signing of autographs, posing for pictures, a buffet of Rock & Brews food and lots of fun for all. The veterans at the luncheon were effusive in their thanks and praise to Rock & Brews for their support. “I didn’t know they really cared,” says John Rucker, a Marine Corps veteran who now works at the VA hospital. “This really touched me.” He adds veterans and troops should get more support. “People ought to take more advice from the rockers.” “I’m happy they’re helping our adaptive sports program at the VA,” says Issac Flores, a Navy veteran. When asked if he was a KISS fan, he replied, “I’m too young to remember them.” One veteran who clearly remembers the silver and black clad, face-painted rock group was Ed Flores, an Air Force veteran. “I grew up with KISS on Guam, surfing and partying to KISS along with other groups,” he says. “It’s outstanding that they have that connection with the VA and veterans.” Flores, who had donned a black KISS T-shirt for the occasion, was clearly having a good time. “Being here is like a dream,” he says. “It makes me feel like a teenager again.” ABOVE Gene Simmons does a television interview at Rock & Brews on the day of the grand opening.

1/2 cup sugar 1/4 cup water 10 whole cloves 1 teaspoon ground cinnamon 3 peppercorns, whole 1/4 teaspoon nutmeg (to taste) 1 orange, juiced 1 bottle red wine Cinnamon sticks (optional)

1. Combine all ingredients except wine in a pan and boil for five minutes. 2. Reduce heat, add wine. Heat to the point where it is just before boiling. (Try to avoid boiling; the alcohol will begin to evaporate.) 3. Strain into cups and serve hot. 4. Garnish with cinnamon sticks, if desired. Serves four.

Its charm stems both from the old adobe family home in which it is located and the completely redesigned interior of the guest rooms and common areas. Taos in general, and Palacio de Marquesa in particular, is a place to get away from it all. General manager Chad Ozment says, “The thing so unique about this property is that the people come and relax. They can renew their energy. They’re different when they leave, than when they arrive.”

The hotel, recently acquired by Heritage Hotels and Resorts, was completely redecorated before it’s reopening in April of this year. The design concept of Palacio de Marquesa pays tribute to a number of notable women artists who have lived in Taos.

After staying at Palacio de Marquesa for the first time, Chuck Blanton, from Houston, remarked, “If I can’t stay in a place nicer than my home, why bother? This place is great. I will come back.” Blanton’s stay was made remarkable by the flavorful breakfast, attentive staff and exquisite luxuries found in his room, like the Italian-made Frette linens and towels.

The interior designer of Palacio de Marquesa, Adriana Long, says, “The rooms honor the remarkable women of Taos who made Taos what it is today.” Each of the rooms is dedicated to one of these extraordinary women: Martha Reed, Georgia O’Keeffe, Dorothy Brett, Agnes Martin, Gene Kloss, Mabel Dodge Luhan and Millicent Rogers.


Long says they wanted the rooms to all look similar but with each one having details particular to each woman. “The room is kind of a blank canvas to showcase the artwork and persona of each woman,” she notes. The rooms are a mix of modern and traditional design. Each has a canopy bed designed by Damien Velasquez of Albuquerque and throws designed by Irving Trujillo, a well-known weaver from Chimayo. Although each room has been completely redesigned, the original flooring and vigas remain intact to reflect the local style and history of the building. Palacio de Marquesa is so charming guests may not want to leave the premises. But Ozment says there is so much to do in the Taos area, like hiking on Taos Mountain, viewing the breath-taking Rio Grande Gorge, going to the Taos Pueblo, white water rafting, art gallery hopping and more.

The hotel offers a number of packages for guests. The museum package includes an entrance to five local museums. In the winter season, a snowshoe package is available. And perhaps most intriguing is the “take a llama to lunch” package, where guests embark on a day hike with these wooly companions that carry all the provisions for a lunch feast enjoyed in the great outdoors. It was a perfect, starlit fall evening, with a slight nip in the air, as guests arrived at Casa La Luna. They came wearing everything from cocktail dresses to miniskirts, jeans to business suits, reflecting the gamut of casual elegance that is Santa Fe. More importantly, they came to be a part of ShowHouse Santa Fe 2014.

T

his event is both a way for local interior designers to show off their talents and a way to raise money for worthy causes. In addition to enjoying the work of interior designers and the gorgeous property itself, guests were treated to cocktails, hors d’oeuvres and entertainment including Chinese dancing dragons. This year the money raised from ShowHouse Santa Fe goes to support local education through the nonprofit organization, Dollars4Schools, which funds activities, materials and innovative programs for Santa Fe-area schools. The gala event also funds children’s programs — such as in-class workshops, student productions, technical internships and a statewide student film and photography festival — at The Lensic Performing Arts Center. While area school children are certain to benefit from this event, it may be the local interior designers who are most excited by this project. La Casa Luna is a 13,400 square-foot house located just off of Old Santa Fe Trail on the southeast side of town. This magnificent home was sitting vacant for a number of years. After the work of nineteen interior designers, it is now a showcase of style and elegance.

David Naylor, one of the founders of ShowHouse Santa Fe, a member of the gala committee and a local interior designer, was thrilled to be a part of the event. “This house was perfect for us. It’s a great platform for designers,” says Naylor. Because La Casa Luna is such a large house, Naylor says they were able to include more and younger interior designers on this project. He notes it’s unusual to have such collaboration and cooperation among the designers in what is usually a very competitive field. “Everyone really stepped up,” he says.

The theme of the ShowHouse this year was Ancient-Future. “Acknowledging the past, but interpreting it in a contemporary way,” Naylor describes. Each designer, or design company, was given a room in the house to decorate. They were given free reign to do whatever they wanted. Naylor says they were told, “Show what lights you up. Go outside the box, not just what the industry provides.” The result is an eclectic array of styles and tastes. Though a different artist designed each room, there was flow and consistency. “The

sensibilities really mesh,” Naylor says. The house, which is for sale and listed by Barker Realty | Christie’s International Real Estate, is a blend of old and new; it was a perfect venue for the Ancient-Future theme of the event. While the original part of the house was built in the 1920s, a major addition was completed more recently. “The bridging of 1920s and contemporary was masterfully executed,” says Lisa Barker, co-owner of Barker Realty, and co-chair of the gala committee. She explains the granite for the original estate was quarried from the property.

The pool was then constructed in the place from where the granite was taken. The asking price for La Casa Luna, which sits on 10 acres of land, is $5,850,000. All of the elements of the interior design work, including furnishings, artwork and accessories, were also for sale the night of the event. Naylor thinks anyone who purchases the home would be excited to have a house that served as a fundraiser for worthy causes. Barker says, “The current owners of Casa La Luna are very philanthropically inclined and pleased

W

hen Joseph and Valerie Montoya began their home-building venture, they didn’t plan on having a “green” construction company. But today, Platinum Sky Construction is one of the top green building companies in Santa Fe. It all just fell into place. Right after they opened for business in November of 2007, the economy went south and the housing market crashed. During that challenging period, the couple did much of the work themselves to keep costs down. Joseph Montoya became intrigued with building techniques and materials that would lower the Home Energy Ratings System (HERS) score of the houses they built. He started doing what he calls “tighter” construction. This includes using different framing techniques, better insulation in the walls and more energy efficient windows to help regulate the temperature in a house. Then in 2009, two interesting things happened. First, they started building houses for Homewise, the local nonprofit that helps Santa Feans achieve home ownership. Homewise requires their homes to be built with green building practices. Second, the city of Santa Fe started requiring that any new construction incorporated eco-friendly building techniques. Since Platinum Sky was already using these techniques in their construction projects, they were ahead of the game. Joseph Montoya says, “We were the first ones doing it in Santa Fe.” He adds, “In Santa Fe they are very stringent about

what you can and can’t do. We actually go above and beyond what the city requires.” Currently their company does all the new housing construction for Homewise, about 35 to 45 houses each year. They also build three custom homes per year. The custom houses tend to be larger dwellings, like the Las Companas home in which the Montoyas currently live. Their 5,100-square-foot house, with sweeping views of the mountains, won the Parade of Homes 2013 Grand Green Award for Excellence in Green Building. The green building features of the Montoya’s current home earned it an amazingly low HERS rating of 17. Valerie Montoya says, “Our bills from PNM and the gas company are less than the 1,700-square-foot home we lived in before. This house stays at this temperature all year, no matter what the outside temperature is.” In addition to the homes they build earning impressive HERS ratings, Platinum Sky Construction usually receives a gold level LEEDS certification on its construction projects. LEEDS stands for Leadership in Energy and Environmental Design and is a rating system from the U.S. Green Building Council. A home’s LEEDS certification is based on factors such as materials used, if the materials are local, building techniques and more. In Platinum Sky Construction homes, they use non-toxic glue, paints with no volatile organic compounds (VOCs), minimal carpeting and no tiles.

The Gwyneth: Cool Glamour Oscar-winning actress and author of cookbooks My Father’s Daughter and It’s All Good, Gwyneth Paltrow has lived — and cooked — in many luxury homes, including a mansion in London, a penthouse in New York, and a country estate in the Hamptons. Mold: A Potential Threat to Home and Health

Another 40% or so is caused by plumbing and mechanical failures and the rest is due to assorted other failures of the building envelope,” he said.

When toxic black mold does grow in the home it’s usually in a place out of sight. Toxic black mold needs a lot of moisture for a long time before it can begin to grow. This is why it often grows where there has been a water leak hidden from view. Leaks inside walls, above ceilings or under floors are common causes of toxic black mold. If not taken care of quickly and professionally, mold may

To make matters worse, he said “more than 50% of our roof work also requires mold remediation and very little, if

Check all flashing around roof penetrations (vents, pipes, chimneys, skylights). 5. Check the roof membrane field and corner seams to make sure that they are water tight, especially in areas which already have visible evidence of ponding. The second most common cause of water damage, and by extension mold contamination, is plumbing and mechanical system failures. Therefore, these systems should be checked and maintained as well. A reputable, licensed and insured plumbing and mechanical professional should be hired.

AFTER any, of that cost is covered by the insurance companies.� Most insurance companies no longer cover mold removal or repair, or have placed limits on the payment of services related to mold control. Considering that mold remediation work can range from $750 for minor work to $15,000-plus for more involved remediation projects (not to mention the potential allergic reactions and ill health effects) the costs of mold contamination can be quite substantial for building owners. To avoid all of this expense, building owners need to become pro-active. The best possible way to minimize the occurrence of costly building repairs is to make sure your building is consistently well maintained. Since the number one cause of moisture intrusion is a faulty roof system and its components. We recommend having your roof professionally checked at least once a year. We recommend such checks in the fall, just before winter. With pitched or steep-slope roofs:

1. Check the general condition of the roof covering. If it looks worn ask reputable roofing contractors for estimates to replace the roof. 2. Repair or replace any missing shingles. Re-fasten or replace loose or missing screws in metal roofing. 3. Pay attention to the condition of flashing around roof penetrations (chimneys, pipes, vents and skylights). With flat or low-slope roof systems: 1. Check the general condition of the roof covering. If it looks worn ask for estimates from reputable roofing contractors. 2. Pay particular attention to stucco cracks or other damage to the parapets. These areas need to be repaired as water will leak into the roof and the building from these areas. 3. Take a close look at the flashing and positioning of the canales (roof scuppers). Make sure the canales are sealed on all sides to prevent water intrusion. Make sure the canales are

1. Periodically check under all of the sinks and look for active drips. If the cabinet base has discoloration that looks like mold that is usually an indication of some sort of water leak. 2. Check under and around the water heater and boiler for indications of water leaks. Discoloration of the water heater platform and drywall in the mechanical closet often is a good indication that something is amiss. 3. Check exterior faucets and hose bibs for leaks or drips. 4. Make sure that your sewage drain system is functioning properly. The third most common cause is moisture intrusion/mold contamination from the remaining building envelope, the outer exterior of your home. 1. Carefully look at the condition of your building’s siding or stucco. Make sure all cracks are repaired. 2. Look at the windows and doors. Seal around them to prevent possible moisture intrusion. 3. Inspect all penetrations to the exterior. Cable, Phone, TV, electrical and plumbing penetrations should be sealed. 4. Clean and inspect the gutters and downspouts. It gave our business a mission to find ways to reduce our environmental impact by reducing waste, sourcing recycled papers and being more environmentally friendly,” says Joshua Weybright. Nationally, housing prices have gone up 29 percent since bottoming out in 2012. Everyday most of us use our computers, smart phones, tablets or other high-tech devices, happily tapping and clicking our way through our tasks with a fluidity and speed that would have been unthinkable only a few short years ago. Modern technology is really quite amazing. At the same time, some say there is something more real and satisfying about the feel of pressing the keys of an actual

typewriter and seeing the words appear magically, letter by letter, on a sheet of crisp, white paper. Billy Garcia, owner of Santa Fe Business Products, has seen the changes in how people get their work done in the almost 40 years he has been in business. He’s witnessed the revolution from analog to digital, from mimeograph to Macintosh. Though most people don’t see, let alone use, typewriters in their daily life, Garcia

says they are still out there. You’ll find them in banks and credit unions, government agencies and schools. Anywhere there are paper forms to fill out. But Garcia notes there are also some younger people who come into his store, iPod and cell phone in hand, and start to play with the selection of old typewriters on display. Some become so fascinated with the tactile pleasure and the clicketyclick sound of the old machines that they end up buying one to take home. Garcia says, “If a young person comes in and sees a typewriter and computer side by side, they are drawn to the typewriter. They like the feel, the sound and they can see what they’ve typed immediately on paper.” Of course mechanical devices, such as typewriters, break down from time to time. ince the invention of motorized vehicles, the focus has been on making them faster and better. Exploring the limits of technological advancement has been a special focus for the teams at Lamborghini. Since its launch in Bologna, Italy, in 1963, Lamborghini has established a name for itself as the ultimate in luxury and speed. The newest line features the 2014 Veneno. It’s a startling achievement that already has a loyal fan base and a waiting list that would make any car lover cry. The 2014 Veneno is a 12-cylinder masterpiece. With a 750-horsepower

engine, it would give the bat mobile a run for its money. This beauty can go from zero to 60 in a mere 2.8 seconds, with a maximum speed of 355.7 km per hour. It does come at a cost, though, ringing in with a price tag of $4.5 million. A drop in the bucket for true car connoisseurs, the wait list is courtesy of a limited yearly release of nine cars. This allows engineers and mechanics to focus on every inch of this dream machine, ensuring the highest possible quality. When the car was created in 2013, there were a mere three cars released for sale. All were sold before they were even produced.

Interior finishes for the Veneno feature race seating, created with the finest leathers and carbon-fibre panels that mimic the sleek exterior look of the vehicle. With carbon-fiber components, the Veneno has achieved a superior rank among lightweight vehicles. t’s unlike any other SUV in its category,” says Doug Herbert, product specialist for Lexus College. He’s talking about the thrilling 2015 Lexus NX. With a more cutting edge design and new exciting new performance technology, the 2015 NX has been created with a more youthful appeal than its predecessors.

According to Herbert, the design of the 2015 NX originated with the power of performance vehicles. “The 2015 NX unites the engineering input of racers with the sophistication and class of Lexus luxury,” he continues. The 2015 NX is available in two awe-inspiring models, the NX 200t with a turbocharged 2.0-liter four-cylinder engine and the NX 300h hybrid. This now means that Lexus offers six hybrid vehicles to choose from; that’s more than any other luxury brand to date. Because of the kick-down function of the new transmission, the hybrid offers the powerful thrill that drivers have come to expect from other Lexus vehicles.

Is venturing into unexpected weather a possibility for you? Both NX models offer their own version of pro-active allweather drive (AWD). Just seeing the Lexus NX is a pleasurable experience. The excitement in Herbert’s voice is unmistakeable as he describes the look of this edgy compact SUV. “The designers wanted something that would ‘pop’ and the NX definitely turns heads,” he comments. While still upholding the Lexus tradition of impeccable quality; the Lexus NX features a sportier design that’s not only aerodynamic but very pleasing to the eye. Audrey Allison, the new general manager of Lexus of Santa Fe, with more than 36 years in the automotive industry, agrees with Herbert. Allison says, “This new 2015 Lexus features the most state-of-the-art technology Lexus has put out to date. “ The Lexus NX was designed in Japan by a team of innovative designers Takkakaw Kato, Keiichi Nishiyama, Hiroshi Inoue and Sunao Ichihara. The team have a history of racing and advanced automotive design with Lexus. Together they focused on optimal performance while targeting fuel efficiency. As a result the new 2015 Lexus NX features a number of Lexus ‘firsts’ which include: • The all-new 2.0-liter turbocharged gasoline engine has a combination watercooled cylinder head, integrated exhaust manifold and twin-scroll turbocharger. • A kick-down switch in the hybrid,

which, as in conventional vehicles, ensures maximum power is delivered when required. • The front axle adopts a pre-load differential to control differential torque. It assists turning on slippery roads and straight-line stability at high speed. • Standard energy-efficient LED headlights and taillights. • Touch-sensitive interior lamp switches in the headliner. Detail, detail, detail; you can rely on Lexus to pay close attention to everything right down to the last bolt. As you get into the Lexus NX you quickly get the thrilling feeling of sitting in a sports car. The NX dashboard and console continue the Lexus concept of display and operational zones. The seats, inspired by sports car design, coddle driver and passenger as you’d expect from a Lexus. “When you’re sitting in the seats you actually feel at one with the vehicle; like you’ve become a part of it,” remarks Herbert. Driver and passenger comfort are a must Lexus as the NX offers available heated or heated and ventilated front seats. Standard dual-zone automatic climate control is also available as it offers an available fuelsaving S-Flow mode that detects a front passenger and directs airflow only to the occupied front seat or seats. Let’s not forget safety! Famous for their high standards in this area, the Lexus NX comes standard with eight airbags. A pre-

collision system will give audible warnings prior to preparing the vehicle for impact. Other features include lane departure alert and an all speed cruise control system that allows you to maintain a safe speed when following vehicles. “When we do it, we do it right!” exclaims Herbert, “We are all about detail.” He goes on to explain that the Lexus NX is equipped with premium lighting throughout which leaves no black spots on the exterior of the vehicle. This includes LED lighting in the door handles which serve as puddle lamps. “What you are looking at with this new Lexus is the new luxury sports car of SUVs” Allison adds. “Not only is the car gorgeous on the outside, it is the ultimate urban cross-over vehicle, quite possibly changing the car world forever.” There are far too many amazing features on the 2015 Lexus NX to list.
