NEWS
Lexington Humane Society and Hamburg’s Southern Barker boutique are teaming up to bring holiday cheer to the dogs in the shelter. Through December 22, you can bring new or gently used dog toys to Southern Barker from 10 am to 8 pm. Winter Pet Care tips form the Lexington Humane Society In many areas, winter is a season of bitter cold and numbing wetness. Help your pets remain happy and healthy during the colder months by following these simply guidelines. Don’t leave dogs outdoors when the temperature drops. Most dogs, and all cats, are safer indoors, except when taken out for exercise. Pets who spend a lot of time outdoors need more food in the winter because keeping warm depletes energy. Warm engines in parked cars attract cats and small wildlife, who may crawl up under the hood. To avoid injuring any hidden animals, bang on your car’s hood to scare them away before starting your engine. The salt and other chemicals used to melt snow and ice can irritate the pads of your pet’s feet. Wipe the feet with a damp towel before your pet licks them and irritates his/her mouth. Antifreeze is deadly, but it has a sweet taste that may attract animals. The best prescription for winter is to keep your dog or cat inside with you and your family. The happiest dogs are those who are taken out frequently for walks and exercise but kept inside the rest of the time.

Earlier this year, Bravo announced that Top Chef would head for the bluegrass state for a southern twist on the popular cooking show. “We are always looking for rising culinary destinations and are looking forward to planting our flag in Kentucky and soaking up a diverse region of the country that we haven’t yet explored on Top Chef,” said Shari Levine, Executive Vice President, Current Production, Bravo Media.

He echoes Branscum’s pride. “As bourbon becomes more popular across the world, people have started to pay attention to what we’re up to in Kentucky. op Chef has come to the great state of Kentucky for season 16 and Kentuckians can finally watch the results in December when the Bravo series airs.
Pablo Lamon cooking with Bourbon
The Bravo show built its footprint in major culinary destinations like Miami, New Orleans, and Austin. This season, the show shines its cable spotlight on the bluegrass region. Kentucky Tourism Commissioner Kristen Branscum says, “Top Chef is an opportunity to showcase the bourbon and horses that Kentucky is known for, but also the rich culinary culture across the entire state. On this season, we look forward to showcasing our food scene, but also the natural beauty, one-of-a-kind attractions, and especially the talented Kentuckians who will be featured.”
“Kentucky has a bit of everything,” he continues, “Mountains in the east of the state, palisades and rolling hills / farms throughout central Kentucky, and wetlands in the western part of the state. Too far east to be west, too far west to be east, too far south to be north, and too far north to be south. There is an interesting mix of cultures across the state. Appalachian in the southeast, and German-American around Louisville and the northern part of the state.” “People on the west coast don’t even

know that beer cheese exists!” he adds. Sarbacker is proud of Lexington’s culinary diversity (and helped prepare authentic Sri Lankan fare in a friend’s kitchen for Padma Lakshmi). He says, “Once a massive test market for corporate chain concepts, Lexington has shifted and there are more small places popping up in existing structures in neighborhoods that otherwise have little to no access to food.”

here are 15 contestants going for that ultimate Top Chef prize and lucky for the host state, there is a hometown girl competing. Sara Bradley is from Paducah, Kentucky and is the chef/owner of the local restaurant freight house. Sara’s mission with her restaurant is to bring fresh, local ingredients from the community, to the community, while working to define the flavor of the “new south.” Celebrities who participated in Season 16 include Emeril Lagassé, Eric Ripert, Jonathan Waxman, Art Smith, Nancy Silverton, and former Top Chef competitor Richard Blais. Actress Lena Waithe, musicians Hunter Hayes and Caleb Followill, model Lily Aldridge, UK basketball coach John Calipari, and former boxer Laila Ali will also show up. Chefpreneur Ouita Michel (Holly
Despite the star power, the scenery will undoubtedly steal the show. Kentucky has been known for its beauty of rolling green hills, white horse fences in the country, and picturesque sunrises/sunsets. The crew didn’t confine their visits to the “big cities.” Yes, there are episodes set in Louisville and Lexington, but they also went to Lake Cumberland, Maker’s Mark Distillery, and many other places that really show the essence of Kentucky. There’s a facebook page devoted to Top Chef Kentucky. Winchester fan Michelle Ladanyi, says, “ Being a Top Chef fan I was very thrilled to hear that they would be featuring Kentucky. There is a unique food culture here in Kentucky that you cannot find anywhere else. I am excited to see what Top Chef has decided to feature and hope it showcases the bluegrass state where it entices people who are not from the area to visit and experience what this great state has to offer.” Photo By: Michael Hickey/Bravo Media

CHEF TOM
HOW TO MAKE A CHRISTMAS HAM? JUST ADD BOURBON. BY TOM YATES
I
rarely drink or cook with bourbon... except for Christmas.
Lately, I’ve tossed around ideas for something to cook for an upcoming family Christmas dinner we enjoy every year in a cabin overlooking the lake. It’s a potluck affair for a large group of people packed into a rented cabin anchored by a tiny kitchen with very limited storage...150 miles away. Tricky business. Think about it. While rifling through our kitchen cabinets and pantry for potluck inspiration, I stumbled across a small jar of Kentucky Proud Applecreek Orchards Bourbon Cherry Preserves. So, I used it to slather a bourbon-soaked honey cured smoked ham. I fell off of the bourbon barrel.
over a medium flame before adding 1/4 cup red wine vinegar and 2 heaping teaspoons of prepared horseradish. I brought the glaze to a quick boil, reduced it to a simmer, and let it bubble away to thicken before setting it aside.
After scoring the outer layer of fat on a small three-pound honey cured smoked ham, I slowly brushed the split fat and exposed ham flesh with 1/2 cup of Maker’s Mark 46 bourbon. While the ham soaked up the potent 94 proof bourbon, I mixed together 1 cup of dark brown sugar, 1 tablespoon of ground mustard, 1/2 tablespoon of ground ginger, and a tablespoon of fresh minced rosemary. I rubbed the wet ham with the spiced brown sugar, wrapped it tightly in aluminum foil, placed it into a dutch oven with 1/2 cup of water, covered the pot, and slid it into a 350 degree oven to bake for an hour. While the smoked ham simmered in its initial sugary bourbon bath, I threw together a finishing glaze using the Applecreek Orchards Bourbon Cherry Preserves. I melted 8 ounces of the preserves in a small saucepan
bourbon cherry glaze, and returned it to the oven (uncovered) for an additional 15 to 30 minutes to finish cooking. When the ham was beautifully glazed and caramelized, I pulled it from the oven, and let it rest, while we finished off the last of our Georges Duboeuf Beaujolaise Nouveau in the parlor. After slicing the glistening glazed ham, I served it on puddles of the sticky bourbon pan juices nestled alongside blistered Green Beans Amandine and individual pots of creamy Weisenberger Mill spoonbread. Old school. Without being cloyingly sweet, the succulent ham hinted a slight caramel flavor from the Maker’s 46-infused brown sugar sauna. Peppered with hot pungent horseradish, the dreamy bourbon cherry preserves oozed over the salty smoked ham, creating a fabulous sweet and savory balance.
A

NEWS
Hepatitis A in Lexington The Lexington-Fayette County Health Department is now recommending hepatitis A vaccination for everyone in the community as the number of cases in the region and throughout the state continues to climb. “The best way to prevent hepatitis A is to get vaccinated,” said Commissioner of Health Dr. Kraig Humbaugh. “The vaccine is effective and has an excellent track record. However, most adults have not yet been immunized since the vaccine was not given routinely as part of their childhood schedule of shots.” Starting in the 2018-2019 school year, Kentucky students will be required to have the vaccination. Please check with your medical provider to see if your child has been vaccinated. The hepatitis A vaccine, given in two doses six months apart, is available from some medical providers and many pharmacies in Lexington and is covered by most insurance plans. The vaccine is also available at the health department’s Public Health Clinic by appointment. Call 859-288-2483 to check availability and to schedule an appointment. Good handwashing can also help control the spread of hepatitis A. Consistent and careful handwashing, including under the fingernails, for at least 20 seconds with soap and water can help stop the spread of the virus.
Holiday Mental Health Sometimes dealing with the holidays isn’t so much a physical struggle, but a mental one. The stress of hosting so many people in one house, your routine being thrown out of the window, or even sentimental memories can bring people down during the holidays. The VA Crisis Line has some tips to keep those holiday blues at bay: •
Stick to normal routines as much as possible
•
Get enough sleep
•
Take time for yourself, but don’t isolate yourself. Spend time with supportive and caring people
•
Eat and drink in moderation. Don’t drink alcohol if you are feeling down.
•
Get exercise! - even if it’s take a short walk down the street or around the mall
•
Set reasonable expectations and goals for the holiday activities such as shopping, cooking, entertaining, attending parties, or sending holiday gifts/cards.
•
Set a budget for holiday activities. Don’t overextend yourself financially.
•
If you can follow most or all of these tips, your holidays should become a fun time with friends and family.
Stay Healthy this Winter With the winter approaching, Be Ready Lexington wants everyone to take a moment to read about the possible carbon monoxide dangers in your home. Anything that burns fuel will produce carbon monoxide, so be sure to never run those items inside your house or for little periods of time. Also, be sure to have a working carbon monoxide detector inside of your home to prevent any kind of poisoning. Carbon monoxide is the leading cause of accidental poisoning deaths in the US. Symptoms include flu like symptoms, headaches, fatigue, dizziness, shortness of breath/chest pains, nausea/ vomiting, and confusion. If you start to experience any of the symptoms or if your detector is going off, head outside to get fresh air and call 911.
