NEWS God’s Pantry Food Bank recently leased 20,398 square feet of industrial space on Winchester Road, which means Enterprise Business Center is fully leased with tenants including Gray Solutions, Habitat Restore, Rebuilt Realty, and CSL Plasma. University of Kentucky has partnered with NASA to help launch a $15 million Space Technology Research Institute (STRI). The new STRI is called Advanced Computational Center for Entry System Simulation (ACCESS) and will focus on the creation of thermal protection systems. ACCESS, which builds upon past NASA and NASA Kentucky funding, will receive approximately $15 million over five years, and roughly one-fourth of the amount will be awarded to UK. The university will also be contributing an additional $1.4 million to the project. Kentucky recently tied for #5 among the top U.S. states for business climate on Site Selection Magazine’s 2021 Prosperity Cup list. In 2020, Kentucky announced 233 new location and expansion projects, according to data from the Kentucky Cabinet for Economic Development. Those

Fireworks Rules and Safety The Lexington Fire Department and Lexington Police Department urge citizens to use caution and follow the law when celebrating with fireworks. The number one thing to remember about fireworks law is if it goes up or blows up, it is illegal in Fayette County.

The only fireworks allowed to be sold or used in Fayette County are ground and hand-held sparkling devices, such as sparklers, ground spinners and fountains.
Grow Smart Academy Virtual Sessions Applications are now available for Fayette Alliance’s Grow Smart Academy Virtual Sessions, scheduled for July 20, July 27, August 3, and August 10 from 6-7:30 pm. Applications are accepted through July 7. Alumni are encouraged to apply. Grow Smart Academy (formerly Citizens’ Planning Academy) is a free, four-week program designed to educate Fayette County residents on land-use planning and its relationship to the community’s economic development, environment, and qualityof-life.
Updates on the Neighborhood’s New Middle School

All aerial and audible ground devices, such as bottle rockets and firecrackers, are prohibited in Fayette County. Anyone found in violation of the local fireworks ordinance will be cited by the Lexington Police Department.
Fayette County’s Board of Education has begun the next steps for the new middle school planned for Polo Club Boulevard. These next steps included approving the construction cost, a revised project application, and design documents. JRA Architects is the design consultant for the project. The building is projected to be around 140,479 square feet and serve 1,200 students.

What’s happening to TGI Friday’s? The TGI Friday’s location on the corner of Man O War Blvd and Sir Barton Way has sat vacant since May 2020, marking a goodbye to the last TGI Friday’s in Lexington. According to public records, a ‘Commercial Remodel Permit’ was filed for the 2,500 square foot space with the project name “Local Taco Hamburg.” This will be Local Taco’s second location in Lexington. Local Taco is currently located on South Limestone, serving Tex-Mex inspired dishes like tacos, quesadillas, and enchiladas.

Team Valvoline’s all about the neighborhood BY KRISTINA ROSEN

alvoline recently won the inaugural “Ally 400” NASCAR Cup Series race at Nashville Superspeedway in June. Well, kind of. Kyle Larson won the race with his No. 5 Chevrolet, which is sponsored—and quite clearly marked—by Valvoline. The company’s iconic red, white, and blue colors were hard to miss as Larson led the race for 264 of the 300 laps. “This Valvoline Chevrolet was really good. It cut the middle of the corner really well and our pit crew did an awesome job again.” Larson told NASCAR after his win at Nashville Superspeedway. Kyle Larson and his Valvoline vehicle are a force to be reckoned with. Larson led for most of the race and finished first in the “Ally 400” NASCAR Cup Series at Nashville Superspeedway on Sunday, June, 2021. He completed the 400 miles in 3 hours, 30 minutes, 23 seconds. He averaged 113.792 mph and beat opponent Ross Chastain to the checkered flag by 4.335 seconds. Eleven caution flags took up 60 of the race’s 300 laps. Larson finished the race having led for 264 of the 300lap event. In April, Valvoline expanded its partnership with Hendrick Motorsports
and now serves as the primary sponsor of Larson’s No. 5 Chevrolet for the remainder of 2021 and 2022. Hendrick Motorsports began using Valvoline products for its racing engines in 2014, and has since won two Cup Series titles in 2016 and 2020. “To be a member of Team Valvoline is really cool for me,” says Larson. “In addition to what they do with Hendrick Motorsports, they’re a longtime supporter of grassroots racing, which is a huge passion of mine.”

.S. Representative Andy Barr held a sendoff event for High School Service Academy Appointments from the Sixth Congressional District. The event was held at the Kentucky High School Athletics Association in June. “In four short years, these students will join the ranks of the world’s greatest military officers,” said Congressman Barr. “I speak for all Sixth District residents when I say how grateful I am for each of these students stepping up to take on this challenge. That is why I wanted to hold this event to congratulate and commend each student for their commitment to serve our country.”

Eleven year-old Lindsay DeVore qualified to compete in the Scripps National Spelling Bee, which began in June with 209 of the best spellers around the world. Lindsay is the third of her three sisters to qualify for the Scripps National Spelling Bee. The finals will be held in-person on July 8 and broadcasted on ESPN 2.

NATIONAL RECOGNITION Rising Lexington Christian Academy senior Milo Golding is the winner of Google’s national Doodle for Google competition. Millions of users saw his artwork featured on Google’s homepage for 24 hours. Milo will also receive a $30,000 college scholarship along with Google hardware. His school will receive a $50,000 technology package. In describing his doodle, Milo says, “I am strong because I have hope. I once asked my father how he overcame obstacles and became who he wanted to be. ‘Hope, hope keeps me strong.’ After I unexpectedly lost him at 13 due to a heart attack, it helped me overcome grief and support other children who lost loved ones.”

CHI Saint Joseph East named its DAISY Award and BEE Award winners for the first quarter of 2021. Andrew Hurt, RN, MedSurg, received the DAISY Award for extraordinary patient care. Beverly Thomas, a care assistant/health unit coordinator, received the BEE Award for exceptional service. The DAISY Award is a nationwide program that celebrates the extraordinary clinical skills and compassionate care given by nurses. Similar to the DAISY Award, the BEE Award honors nursing support staff – patient care assistants, housekeepers, respiratory therapists, health unit coordinators, dietary, transporters and various other team members – who go above and beyond in service, care and compassion. Lexington Podiatry is expanding their office with the addition of 15 exam rooms, coffee bar, and surgical suite. UK HealthCare’s Kentucky Children’s Hospital received a donation of $452,118.01 from multiple Speedway stores across Kentucky. More than $22,000 of the funds came from the Speedway location on Athens Boonesboro Road.

With Lexington’s senior population continuing to grow, a new Center for Senior and Therapeutic Recreation has been proposed in Shillito Park on West Reynolds Road. The new center will provide new, accessible space for therapeutic programming, and supplement some of the services now offered at the Senior Center on Life Lane.
Through the Senior Farmers’ Market Nutrition Program, low-income seniors are provided with $48 vouchers to purchase fresh, unprocessed, locally grown fruits, vegetables, and herbs at Stateapproved farmers’ markets. Eligibility for senior participants: must be 60 years or older at day of issuance, and must provide proof of age, as well as proof of income that meets the income criteria.

Leaving the husks intact for easy handling, I peeled back the husks, layer by layer, from 5 large Benton Farm Ambrosia corn cobs, pulled the feathery silks away, and tossed the ears (along with 2 halved limes) onto an oiled hot grill until they started to blister (about 4 minutes per turn). Just before the corn popped, I pulled the ears from the grill and carefully sliced the kernels from the cobs.

ummer hits full throttle when the corn trucks back into our local markets and dot the sides of our county roads. Spilling from truck beds with reckless abandon, the fresh picked ears embody the essence of summer. Gather and shuck. For some folks, shucking corn is a mundane chore. Not this guy. Shucking corn, layer by layer until the wispy silks fly into the air like delicate gossamer threads, gets me every time. It never gets old. Silver Queen. Ambrosia. Peaches and Cream. Bi-Colored. Any Variety. Any time. All the time. When the first waves of corn start rolling in, the first few dozen might best be eaten straight from the cob slathered in butter and dusted with salt. After that, anything goes.
Chipotle-Tomato Jam Glazed Shrimp and Chorizo with Mexican Street Corn Salad Full throttle. Jamming. Whether it’s for work or for play, I make a lot of tomato jam. It takes a little time, but it’s very forgiving and the payoff is huge. Here’s the deal with the tomato jam. Even with hints of warm spice, fresh ginger, garlic, vinegar, and sugar lending complex tangy sweetness, the not-too-sweet long simmered jam still packs a big fresh tomato punch. Almost any tomato variety works for jam. During tomato season, I usually gather the culls and the uglies. If those aren’t available, I shoot for the heirlooms. No seeding or peeling necessary. The peels add body and texture to the jam. After coring 4 pounds of very ripe Mercer County heirloom tomatoes, I diced them into 1” pieces and tossed them into a large stock pot, adding the residual seeds and juice. After cranking the heat to medium high, I added 1 cup light brown sugar, 1 cup white sugar, 1/4 cup lemon juice, 1/4 cup balsamic vinegar, 1 heaping tablespoon freshly grated ginger, 1 teaspoons cinnamon, 1/4 teaspoon ground clove,

1/4 teaspoon allspice, salt, and cracked black pepper. When the tomatoes started to bubble and spit, I reduced the heat to a simmer and let the jam rip for 2 1/2 hours, stirring occasionally and adding a splash of water if it appeared too dry. When it reduced to the sticky consistency of jam, I finished with 2 tablespoons of reduced balsamic to boost the sweet tang and a generous dusting of salt to level the playing field. When the jam was cool enough to handle, I spooned it into a 1 quart mason jar and slid it into the fridge to chill.

Kicking it up. After warming 1 1/2 cups of the reserved tomato jam over a low flame, I added 1 minced chipotle pepper in adobo sauce along with 1 tablespoon of the smoky sauce. When the chipotle pepper melted into the jam, I pulled it from heat and set it aside. Skewering. Surf ‘n’ Turf on sticks. After peeling and deveining 1 pound 16/20 count large shrimp, I nestled 3/4” thick half moon slices of smoked Spanish chorizo into the curved nooks
Packed with the same ingredients as Elotes, grilled Mexican street corn on the cob, Esquites is the somewhat less messy daintier version. Forget the corn facial. After mixing the warm cut off corn kernels with 2 tablespoons fresh squeezed grilled lime juice, I added 1 1/2 tablespoons mayo, 1 1/2 tablespoons Mexican crema, 1/3 cup Cojita cheese, 4 sliced green onions, 3 tablespoons minced fresh cilantro, 8 halved Pulaski County Sun Gold cherry tomatoes. 2 teaspoons ancho chili powder, salt, and cracked black pepper. With the salad on deck, I slid the shrimp/chorizo skewers on the grill and turned them from time to time, brushing them with additional chipotle tomato jam after each turn, until the shrimp cooked through, about 4 minutes per side. When the shrimp caramelized from the smoky heat, I pulled skewers from the grill, and nestled them over the Esquites. After splashing the shrimp and chorizo skewers with grilled fresh lime juice, I finished with a sprinkling of salt, a dusting of chili powder, fresh cilantro, scallion spears, extra grilled limes, and halved Pulaski County perky red cherry tomatoes. Corn Daze. Full throttle. Get your summer on.

JULY VETERINARIAN SPOTLIGHT: MEET DR. HEATHER HANCOCK
Dr. Heather Hancock is a Lexington native and University of Kentucky alumnus. She graduated summa cum laude from the Tuskegee School of Veterinary Medicine in Alabama, where she met her husband, Kevin Simmons, also a veterinarian and a volunteer firefighter. After graduation, Dr. Hancock participated in one of the country’s most prestigious veterinary preceptorships, the VCA West Bernard Animal Hospital in San Diego, Calif. Today, Drs. Hancock and Simmons have three children: Liam, Lily, and Cayce, as well as five dogs (a boxer, husky, Labrador retriever mix, a Great Dane, and a special little Dachsund named Rapunzel), three cats (Pokey, Shirley, and Catriona), fish and a leopard gecko lizard named Bowtie.
Dr. Hancock and her family live on 20 acres in Madison County, where she and Dr. Simmons founded and manage the Central Kentucky Wildlife Hospital where they treat sick and injured wildlife.
