The first Canine Companions for Independence facility dog in the state of Kentucky has joined the Court Appointed Special Advocates (CASA) of Lexington team. Matilda (pictured above), a yellow Labrador, will assist handler Liz Noffsinger during her work with CASA children. This match marks a first for the state of Kentucky in receiving a Canine Companions for Independence facility dog. Frederick Douglass High School hosted the second annual Youth Citizens Academy: Fire & Emergency Services Field Day on Monday, October 29. This annual event provided students with a hands-on look at the multiple functions of Lexington’s Fire and Emergency Services personnel. Over 300 students participated in five different stations to include use of a fire engine’s water hose, bleeding control training and certification, fire extinguisher training, and an on-site landing of the medivac helicopter and tour of the aircraft. Leaf Collection Lexington’s vacuum leaf collection program will begin on Monday, Nov. 5. The vacuum pickup is offered once a year for single-family homes that receive city waste collection service. Her husband, Preston Madden, explained the origins of Hamburg’s street names in our July cover interview with the legendary retired horseman. “Before this end of the farm was developed, I was extremely busy breeding horses. I had 100 horses on the farm, so my son [Patrick] did the actual [Hamburg] development and my wife, Anita, named the streets. I think she did a hell of a job. My grandfather bred over 100 stakes winners. She had a list of 100plus stakes winners —Sir Barton, first Triple Crown winner, and Alysheba were the obvious choices so she took from all of his stakes winners and my stakes winners.” The Madden family transformed Hamburg Place into the thriving commercial corridor that it is today, but Anita Madden was just as well known as a hostess, socialite, and philanthropist. UK Coach John Calipari memorialized her on facebook, “I’ve had the privilege of becoming good friends with Pat

It was the early 70s. I was in my first job out of college working for Lt. Gov. Carroll and barely out of the white socks I used to wear on the farm in West Kentucky. The Governor sent me over to Hamburg Place to give Anita Derby tickets the night before the races. When I got there, her famous Derby Eve Party was in full swing. Anita pulled

me out on the dance floor where she put the tickets in the bodice of her gown —the skin tight sequined costume certainly had no pockets. I was transfixed! Over the years, I became close friends with Anita and Preston. We enjoyed conversation over drinks at the bar in their home as movie stars, sports figures and racing clients came and went... Surely, the fact that Anita gave Preston a buffalo for a birthday present had nothing to do with the fact that Laura Lee and I eventually started raising buffalo of our own (I don’t think so). “Anita was a complex character. Behind the blond wig and feather boa was a private person. A deep intellect who could care less if some judged her harshly for her flamboyance and who embraced the friendship of those who didn’t. She used her fame to help others less fortunate. When we opened the 21c Museum Hotel Lexington, I was thrilled to have Anita sitting front and center for a performance straight out of her handbook. I think she knew she inspired me. I know she knew I loved her…. When I attend her service tomorrow will I wear a black suit or a gold dinner jacket?” Lexington mayor Jim Gray echoed the description of her egalitarian ethic, saying, “she celebrated the unusual and she welcomed everyone regardless of their station in life.” Hamburg resident Jackie Long said, “I was fortunate enough to attend one of her Derby Eve parties with a group of fantastic friends. Anita knew how to throw a party! Later, I had the privilege of being a guest at her home for several political events. And, I even had a couple of memorable conversations with her. I was always struck by how genuinely down to earth and nice she was. I will never forget sitting at the bar at Bravo Pitino with

her listening intently as she told us about all the rich ladies she knew who ‘went to the same doctor in the desert’ and they all came out looking the same!” She will be missed for her style, her sense of humor, and her compassion. An unfailing ambassador for the racing industry and for Lexington, for four decades, her celebrations helped ensure that Lexington would earn its place as a Derby weekend destination, undiminished by the fact that the race is actually held in Louisville.

exington — and Hamburg — lost an icon when Anita Madden passed away last month. Famed for her Derby Eve parties at the Maddens’ Hamburg Farm, one need only look up to any street sign in Hamburg to see evidence of her enduring legacy.

LexArts wrote, “Her fashion was as fabulous as the parties themselves and the crowds crooned and swooned as she made her entrance. For many of the ‘3,000 or so of her most intimate friends’ lucky enough to attend the parties, photographs were sometimes the only proof of the evening.

TWEAKING THE TURKEY FRY ME TO THE MOON

I

learned a thing or two the year I misfired and overshot Thanksgiving.

My father was well into his long battle with cancer when autumn gently rolled in and brushed Port Oliver with blistering color. Not long after we welcomed the crisp chill and settled into the season, my father announced that we were hosting the entire family on his rural western Kentucky farm for what was to become his last Thanksgiving. I was shooting for the moon, cooking everything from scratch, and putting my spin on the traditional feast. Over the course of a few gorgeous mid-November days, I brined and rubbed an enormous 18 pound fresh turkey, shucked a few dozen oysters, procured a fine brie for the creamed fresh pearl onions, compiled buckets of chopped mirepoix, dried various types of bread for stuffing, snapped fresh green beans, peeled pound of potatoes, made cranberry sauce, and poached more pears than anyone should ever poach.

cranberry sauce. Surprisingly fresh and somewhat familiar, the humble pears struck a happy balance that felt right at home. They still do. Nowadays, I hold fast to simpler things. And while most folks hold onto strong turkey traditions, I believe there’s wiggle room. Deep Fried Turkey With Whole Berry Cranberry-Pear Sauce For years, I could never wrap my head around fried turkey. How can

I also realized that while it’s ok to buck tradition and tweak a few things, it’s a whole other ball game to change everything. The biggest success from my Thanksgiving folly? No doubt, the poached pears with

I rinsed and thoroughly dried a 10 1/2 pound fresh turkey. I combined 1 cup warm melted unsalted butter, 1 cup dry white wine, 1 cup honey, 2 tablespoons kosher salt, and 2 teaspoons ground white pepper. After whisking everything, I used a meat injector to carefully inject the marinade under the skin of each breast, thigh, and leg.

you make giblet gravy without the pan juices? What about the sticky bits ( flavor bombs) stuck to the bottom of the roasting pan? Where do you stuff the stuffing? As it turns out, you can have it all. The relative quick fry and hot oil seals the meat under shockingly crisp skin, locking in moisture and flavor without being a bit greasy. Better yet, fried turkey frees up the ovens for the important stuff. You can have your moist turkey, scratch gravy (made from giblets and extra turkey parts), stuffing (dressing baked on the side), sides, crispy fried turkey butt, pumpkin pie, and eat it too. Everything is possible.

What’s for dinner?

tablespoon lemon zest, 2 tablespoons fresh lemon juice, and 1 1/2 cups of diced fresh peeled pears. Into the fridge to chill and set up. Fry.

Rub. After mixing 2 tablespoons light brown sugar, 1 tablespoon Bourbon Barrel Bourbon Smoked Paprika, 1 teaspoon ground dried sage, 1 teaspoon ground dried rosemary, 1 teaspoon ground white pepper, 1 teaspoon onion powder, 1 teaspoon ground dried thyme, and 1 teaspoon garlic powder, I rubbed the turkey under and over the skin before sliding it into the refrigerator to rest overnight. Poach.

Oh sure, it was a fine feast. The burnished turkey glistened. The creamed onions floated in the sticky melted brie, moist dressing sported perfectly crisp edges, buttery whipped potatoes, laden with cream, were unexpectedly light, oysters Rockefeller (in lieu of scalloped oysters) perched on rock salt, and poached pears filled with dollops of whole berry cranberry sauce sparkled like jewels. I outdid myself.

I traded my turkey baster for an injector, and threw caution to the wind.

I brought equal parts water and sugar (2 cups each for a basic simple syrup) to a rolling simmer before adding 1/2 white wine, 2 tablespoons lemon juice, and 1 tablespoon whole black peppercorns. After peeling 8 fresh pears, red and bosc for textural/flavor variation, I halved them without coring, and tumbled them into the simmering spiced simple syrup. When they were knife tender, I pulled them from the heat, let them cool completely in their bath, and used a small scoop to easily core before sliding them into the refrigerator to chill. Cranberry-Pear Sauce. After bringing 4 cups fresh cranberries, 1 cup sugar, and 1 cup water to a boil, I reduced the heat and let it rip until the cranberries popped and melted into the sauce. When the sauce thickened, I pulled it from the heat before adding 1

A deep fried turkey cooks fast. 3 1/2 minutes per pound. Set the table and set the timer. After filling an 11 quart indoor electric turkey fryer with 2 3/4 gallons (yes, gallons) peanut oil, I cranked the heat to 375 degrees, closed the lid, and let the oil preheat. Knowing it would take about 45 minutes to an hour for the oil to come to the right temperature, I pulled the turkey from the refrigerator to take the chill off. When the oil hit 375, I positioned the turkey, breast side up, in the frying basket, and very carefully lowered it into the shimmering hot oil. Once submerged and on full fry throttle, I released the basket, lowered the lid, set the timer for exactly 39 minutes, and poured myself a glass of wine. At the 39 minute mark, I lifted the turkey from the oil, hooked it onto the side of the fryer, used an instant read thermometer to make sure the internal temp hit 165 degrees, and let it rest for 20 minutes before nestling the fried bird onto a bed of greenery topped with aromatic fresh herbs and tucking the cranberry sauce poached pears to the side. Fry me to the moon.

The Lexington Fire Department Community Services Division, in partnership with the American Red Cross, offers the option to install 10-year lithium battery smoke alarms in all homes in Fayette County. Lexington has received national recognition for its stormwater program, winning the Program Management Award and the Overall Highest Score Award. The awards were presented to Jennifer Carey, the Division of Water Quality’s Stormwater permit coordinator.

Residences and businesses with curbside city waste collection will not be serviced on Thursday, November 22 and Friday, November 23. The makeup day for both will be on Wednesday, November 21. Please place carts out after 4 pm the day before the make-up day to receive service.

The Lexington Fire Department Community Services Division will install 10-year lithium battery smoke alarms in all homes in Fayette County. As part of the installation, the LFD will also conduct a fire safety inspection. Leaf Collection Lexington’s vacuum leaf collection program will begin on Monday, Nov. 5. The vacuum pickup is offered once a year for single-family homes that receive city waste collection service. Residents should prepare leaves before collection begins in their neighborhood. Rake leaves into the area between the sidewalk and street. If your sidewalk is next to the curb or if you have no sidewalk, place the leaves on the edge of your lawn closest to the street. Never rake leaves into the street.
