Meet Frances Ankeny Your Neighbor to Know at Hamburg’s PetSuites
O
ctober is the traditional celebration of the patron saint of animals, Saint Francis of Assisi, which is accompanied in many communities by the Blessing of the Hounds and the Blessing of the Animals. Frances Ankeny’s first name is spelled a little differently than the famous Saint Francis, but she is definitely one of our neighborhood’s favorite animal lovers. Frances is from Keene, Kentucky and grew up in the country, beginning her lifelong love of animals and taking care of them. Most days you’ll find her at Hamburg’s PetSuites on Bryant Road where she’s blended that love with a professional career. Before joining PetSuites, she frequently traveled for work. After she got married and began a family, she realized she was ready for a career change that kept her closer to home. She asked herself, “What better job to have than one where I get to relive my childhood and take care of other people’s babies —and then come home and enjoy my own.” PetSuites and doggie daycare offered her an opportunity to do just that: treating other’s babies just like her own. Based on her professional background filled with travel, she also knew, “having peace of mind while you are away is so important.” Having settled on wanting to offer an array of services an operation like PetSuites could provide (boarding, grooming, doggie day care and more), she knew the right location would be key. She enthusiastically embraced Hamburg and southeast Lexington because she sees this area as a large, upbeat, trendy, career/family minded community, and she knew she wanted to be a part of that. With so many families living in this area, she wanted to give them a convenient and loving place to board their Frances Ankeny photographed on dogs, whether it was for a day, or for weeks. National Dog Day in August.
NEIGHBORS TO KNOW The most rewarding aspect she’s come to experience at work is “when I see the Pet Parents and their furry babies reunite after being away.”
“I am very proud of remaining true to myself and my beautiful family.”
H
aving had dogs throughout her life, Frances has come to understand the patience, dedication, and commitment it takes to properly care for any animal. Her advice for those thinking about taking the leap and adding a pet to the family? She suggests you stay strong and be patient. Don’t give up on that furry animal so quickly when they don’t seem to pick up on commands right away. Puppies like structure and consistency, especially when it comes to feeding and potty breaks. Most importantly? Enjoy every moment you have with them and take lots of pictures because they grow up fast. Those new to puppy love should also know that the decision to add pets to your household will mean there’s never a dull moment. She still laughs about the time her dogs gave her an accidental fright. “When I lived in Louisville, I worked very long hours. I came home to a dark house and heard a voice in my empty home. I was so scared and went to check on my babies, Jet and Jazzy. When I turned the corner, they were chilling on my bed watching Friends and eating their snacks!” These days, when Frances isn’t at work taking care of your four-legged friends, you’ll most likely find her with her family. Whether it’s a sunny day at the pool, or just spending time with them outside getting fresh air and exercise — any day she spends with her family is the perfect day in her eyes. She’s proud of Lexington and loves to show it off when friends visit — introducing them to Keeneland and our local distilleries and wineries. She enjoys showcasing her city and neighborhood, because they’re filled with amazing experiences. Frances Ankeny is a proud mother, wife, and a lover of animals, and you can meet her at the Hamburg PetSuites. Hamburg is filled with local and family-friendly businesses and HJ will introduce you to all of them. hamburgjournal.com | September 2019 11

Welcome! Brenda Cowan Elementary opens on Athens Boonesboro
O
ur neighborhood’s newest elementary school, Brenda Cowan Elementary on Athens Boonesboro, celebrated their opening in August a few days before welcoming their first students.

hamburgjournal.com | September 2019
The school is named for Lieutenant Brenda Cowan, the first black female firefighter/ EMT-B to serve with the Lexington Fire Department. She died in the line of duty in 2004, as a first responder at the scene of a domestic violence. “At our school, students will be passionate, engaged and caring, as they develop into the best versions of themselves,” says Cowan Elementary School Principal Josh Williams. When the name was selected, he said, “As a committee, we truly believe that Lt. Brenda Cowan exemplified those four characteristics. It’s an honor to be able to celebrate her life and to be able to recognize all the men and women who put their lives on the line daily in service to others.” Cowan’s cousin, Rachel Moxley, spoke at the ribbon cutting and shared the late lieutenant’s story. On behalf of the Cowan family, Moxley donated Cowan’s fire helmet and Medal of Valor, which the school now
displays in a glass case near the front entrance. Lexington Fire Chief Kristin Chilton told the assembly at the ribbon cutting, “She was a hard worker with a great attitude and an unmatched sense of humor. She was the type of person you’d want your child to be like.” Mayor Linda Gorton described Cowan as a wonderful role model, whose example could teach students “a lot about life, about service, about honor.” Engine 18, from Cowan’s unit, was parked in front of

The inaugural Rising Stars Kids 3K is on Sunday, September 29 at 3 pm at Liberty Elementary School. This kids only race is powered by Grassroots Running Club, a youth running program created by our friends and neighbors at Grassroots Pharmacy. the school during the ceremony. Local fire department members even rode buses to BCE with the students and welcomed them on the first day of school alongside staff. The school was designed by EOP Architects. EOP’s Paul Ochenkoski, says, “Our goal was to make the school a place where kids want to be,” adding “Being a part of something so symbolic to our firefighters is an amazing, humbling experience, and we only hope we honored Lieutenant Cowan in a respectful manner.” The firm says, “the school will have the capacity to educate more than 750 students, becoming the largest elementary school in the Fayette County system. Fittingly, the school’s mascot is the Dalmatian and has two Dalmatian puppies to serve as therapy dogs.”
A sixth grader from Christ the King won LexTran’s recent inaugural bus wrap competition. Polly Rink, 11 years old, submitted her design in their summer contest for kids, and her design was selected among 70 entries. The wrap will be displayed on a LexTran bus for the next three months, so keep an eye out!
Tates Creek High School is getting closer to a brand new building. The local planning committee has included a new construction option for Tates Creek HS rather than renovations, for a more cost effective plan. Designed by Tate Hill Jacobs Architects, the construction would be built in phases on the current property.

September is Yoga Month
HEALTH
Celebrate with our neighbors at Grassroots
T
ree pose. Warrior pose. Yoga is a workout for both the body and the mind. If you have never experienced a class or have been wanting to try something new, what better time than September which happens to be Yoga Month. Over the summer, our neighborhood friends at Grassroots Pharmacy, Shelley and Lindsey Roberts, have been providing classes on their patio with instructor Peggy Baldridge. In 2005, Peggy’s doctor recommended yoga classes to help with her autoimmune disease and she immediately fell in love with the practice. More importantly, she began to feel better. She began training to become an instructor in 2010 and by the next year she received her certificate. There are many benefits to practicing yoga, such as reducing the risk of injury for those that play sports or stay active. “This is great not only as we age, but for people who are active in other sports or activities. You can reduce your risk of injury by staying flexible and strong through yoga,” Peggy says. Some yoga devotees have said the practice helps with weight and pain management, and even arthritis, asthma, and blood pressure. Peggy says that yoga can “help counter the effects of the aging process by moving each joint in the body through its full range of motion. This helps to stretch, strengthen, and balance the body.” There is also the mental and emotional aspect of the practice and how it can
improve your focus and concentration. Peggy says that “Yoga is a great tool to help children and adults learn how to calm their minds and reduce stress and anxiety. It has been shown to help improve your mood and have a more relaxed and positive outlook on life.” For those who have never taken a class but have always wanted to try, just go. There are modifications for every pose that help beginners get started. Instructors are trained to adapt to their classes and who is participating. If you weren’t a fan of your first class, don’t give up. Each class and each instructor is different
— find that flow or stillness that best suits your needs and wants. Yoga is a bit like swimming according to one note of advice from Peggy. “It is best not to eat at least an hour before doing yoga. Some postures are inverted and some twisting postures help massage your internal organs. Eating right before a class may make you feel uncomfortable.” It’s best to wait around 30 minutes after your class to get the full nutritional benefits. Preferably eat something with protein, carbs, fiber, and a small amount of fat. Smoothies are a great alternative to food if you’re on the go after class. Something that contains fruits, vegetables, good fats, and some protein. Even though yoga has been around for centuries, some newcomers find it intimidating. Use Yoga Month as an excuse to get out there and try something new. It could become your most favorite form of workout or your best ally to calming the mind. Currently Grassroots has finished their summer line-up, but will have a fall schedule out soon.

Summer’s Last Gasp Tomatoes in the Pumpkin Patch By Tom Yates
S
omething feels out of whack. We have Chaney’s pumpkin ice cream in the freezer and gorgeous heirloom tomatoes on the windowsill. Labor Day begins the season for corn mazes, pumpkin patches, apple picking, fresh apple cider, and winter squash. Fresh Tomatoes in the pumpkin patch? Really? The tomato seedlings we bought from Henkle’s Herbs and Heirlooms at the farmers’ market last spring have morphed into one gigantic tomato hedge with collapsed tangled limbs limping over their cages, meandering and entwining at will. Amid the twisted growth, tomatoes poke through the trapped fallen leaves and dried up branches. Oh sure, we’re happy to have tomatoes this late in the season. Who wouldn’t be happy? They just feel oddly out of place. A few mornings ago, I watched a confused squirrel try to bury a bright red tomato in his winter war chest. Welcome to the club, little buddy. Fall tomatoes. Eventually, I’ll roast them. Or juice them. Or throw them at the garage. Right now, they’re just still so perky. Cheery, even. Happy looking. Undaunted by the recent dreary weather and cool spell, I embraced their out of season swagger and threw together a Fall heirloom tomato salad. Sacrilege. I sliced Black Carbon, Orange Minsk, and Red Jetsetter tomatoes into thick discs. To boost the flavor, I sprinkled them with sea salt and placed them in a colander over a large bowl to drain. After 20 minutes, I slid the tomatoes onto a large plate and used the salty sweet drippings for a broken tomato vinaigrette (1/4 cup tomato water, 2 tablespoons rice wine vinegar, 3 tablespoons olive oil, cracked pepper, and snipped chives). I split a few Yellow Pear, SunSugar, and Supersweet tomatoes, and set them
aside. For textural contrast, I grabbed another handful of the tiny sweet tomatoes, carefully scored the bottoms, and dropped them into boiling water for 5 seconds before plunging them into ice water. Their skins slid off easily to reveal hiidden treasures. As an unconventional nod to a caprese salad, I halved a Madison County Key Largo sweet red pepper, removed the seeds, and stuffed the halves with fresh mozzarella cheese. After topping them with crisp candied bacon and diced green peppers, I slid them into a 350 oven to roast for 20 minutes. I stacked the sliced tomatoes over lightly dressed baby arugula and tumbled the split tomatoes to the side. After pulling the bacon-flecked cheesy peppers from the oven, I nestled them next to the undressed tomatoes. Every salad needs crunch, so I peeled and deveined 8 jumbo shrimp, dredged them through flour and egg wash, wrapped them each with shredded phyllo dough, and deep fried them in 350 degree oil until they were crisp before scooping them onto paper towels to drain. After spooning the vinaigrette over the glistening tomatoes, I showered them with cracked black pepper, briny capers, and fresh basil flowers before finishing with the peeled tomato jewels and the outrageous fried shrimp croutons. Crisp. Fresh. Clean. Unexpected. A simple salad from our late summer garden jungle. Now, it’s time to carve the pumpkins. Or cook them.
