The 2012 event will consist of two international arena polo matches merged with exclusive performances from Grammy award winning band, Bajofondo. Sport Relief is back - and it’s coming to London! CHEESE MAKERS MARKET DATE ANNOUNCED FOR 2012
W
ith over 98% of British households buying cheese, and a staggering 700,000 tonnes (including cottage cheese and fromage frais) consumed on average each year, the UK is clearly a nation of Cheese Lovers. And so what better place to visit, than the UK’s top event for Cheese Lovers, which will take place on Saturday 14th April at The Market Place, Old Beaconsfield? Although Cheddar is the nation’s favourite cheese, this event will offer visitors so much more! An opportunity to taste, learn about, and buy new and unusual cheeses, as well as artisan and traditional favourites, the Cheese Makers Market will offer cheeses from over 70 different producers, showcasing both British and Continental varieties. In association with Premier Cheese (a specialist supplier to top restaurants around the UK including Le Manoir aux Quat Saisons and Tom Aikens) and La Cave à Fromage (a wonderful cheese retailer with shops in London and Brighton offering over 200 different varieties) this will mark the second year of the market. In 2011, the market was opened by Alain Roux, Chef Patron of the renowned Waterside Inn. With over 2,000 visitors, last year’s participants included noted producers such as Cooleeney from Ireland, Thornby Moor from Cumbria, Bath Soft Cheese, Cornish Blue Cheese, Errington from Scotland, Isle of

This year, Eric Charriaux and Amnon Paldi, Directors of both Premier Cheese and La Cave à Fromage, will be making The Cheese Makers Market even bigger and better, with more producers (hailing as far as Portugal, Spain, France and Italy), cheese and wine matching tutorials hosted by renowned wine journalist Tim Atkin, workshops and chef demonstrations. The Cheese Makers Market will also have a few carefully selected stands selling cheese macaroons, cheese ice cream, cheese making kits, cheese accessories, wine, cider, beer, bread and hot food made with
cheese. Look out for the pop-up restaurant sponsored by Premier Cheese and La Cave a Fromage, which will offer delicious fine cheese selections served with bread and wine, or a selection of fine cheese and charcuterie platters or raclette served with or without wine. Aware that he couldn’t change the jewellery world overnight, Nick quietly designed bespoke pieces for his clients. But he longed to introduce contemporary styles to the then-static jewellery industry. Gradually he developed his own, unique styles; ultimately succeeding in introducing his collection to more than 70 top-end, independent jewellery retail stores. Innovative, design-led jewellery had arrived. In 1999, the year he won ‘Best Design in Diamonds’ at the UK Jewellery Awards, Nick prepared to open his own boutique jeweller’s. The shop in St Cross Street (off Hatton Garden) became known for its seasonal décor and imaginative displays, featuring anything from gilded walls and 1970s wallpaper to feather-filled baubles. Customers paused to admire the displays – then stopped to gaze at thejewellery, which matched the décor for wow factor and creativity. The shop’s success soared as it built up a reputation for its fast-evolving collections. n 21st March 2012 Gaucho will host The Gaucho International Polo at London’s O2 arena, uniting high-octane polo interspersed with live world famous music to produce a unique event never seen before in Britain. Following the triumphant inaugural year in 2011, Gaucho International Polo has now evolved into the ultimate celebration of Argentina’s sporting and cultural heritage at the O2 arena. The 2012 event will consist of two international arena polo matches merged with exclusive performances from Grammy award winning band, Bajofondo. Bajofondo, who have put ‘electrotango’ firmly on the world music map will open and play throughout the tournament, creating a thrilling blend of polo and performances. The matches will see Scotland taking on Ireland and culminate in the titanic clash between IG Index’s England and Argentina, pitting Britain’s finest player, Jamie Morrison 34

Promoting Independent Learning At St. Helen’s girls are encouraged to take an active involvement in their learning as part of a broad education that promotes independent learning and creative thinking. Habs is Exceptional! Following a detailed assessment by the ISI (Independent Schools Inspectorate), Haberdashers’ Aske’s Boys’ School has recently been judged to be excellent in virtually every aspect of its relationship with its pupils and its community. The school knew that it offered an outstanding educational environment. After all, it has achieved 40% or more A* grades at A level in each of the years that this new distinction has been awarded. However, it was exciting to read the ISI’s conclusion that the school provided an ‘outstanding educational experience’ which allowed its pupils to perform to ‘the highest level of their ability’. Particular attention was drawn to the high quality of the teaching that enabled such spectacular results.
‘I always knew that I and my team of outstanding staff were focused on building a first-rate educational environment,’ noted Headmaster Peter B Hamilton, ‘yet even I would not have dared to expect such an outstanding ISI report. I pay tribute,’ he continued, ‘to the support and direction provided by our entire community of pupils, staff, parents and old boys. Working together,’ he concluded, ‘we have built a school whose pupils go on to lead happy, purposeful, and successful lives. What better start can a school provide to any child?’
More importantly, perhaps, was the praise which the ISI focused on the spiritual, moral, social and cultural development of Habs boys. The high standard of pastoral care provided at Habs was particularly noted, which the inspectors claimed played a powerful role in creating what they described as a ‘friendly and supportive school community.’ Furthermore, added the ISI conclusions, this sense of community extended to the parents, judging by the responses received to the parental questionnaire which the ISI undertook.

LONDON GEARS UP FOR SPORT RELIEF
port Relief is back - and it’s coming to London! The city is set to host one of the flagship Sainsbury’s Sport Relief Miles on Sunday 25th March, and needs Londoners show their support by entering now at www.sportrelief.com. This year, over one million people are expected to pull up their socks and take part in the Sainsbury’s Sport Relief Mile in order to raise some serious cash for vulnerable people right here in London, across the UK and in the world’s poorest countries. This year, the London Mile has a new route along the Mall which takes in some of the most iconic sights the city has to offer. Entrants will pass Horse Guards Parade, the Queen Victoria Memorial, Buckingham Palace and Admiralty Arch to name but a few. Last time, more than 16,000 people took part in the London Mile, and the

people of London raised and donated over £6million. Since then, more than 190 projects in the city have received grants thanks to money raised through Sport Relief. "Prints are key to this season's denim, from floral to tropical and aquatic for the adventurous," says Thornton. "Animal print is such a statement, too, which can be worn in faded pastel denim shades of mint, blue or rose, featuring a subtle leopard or snake print for added wow factor." How to wear them: Let these show-stopping jeans do all the work by throwing on a plain white tee and flats for daytime, or black vest and heels in the evening. BRIGHT BRIGADE The block brights that dazzled throughout 2011 are going nowhere fast. Red jeans are practically vying with traditional blues as a denim staple. egone January blues, the outlook for spring denim is looking bright, with traditional indigos, navies and stonewash jean hues making way for pastels, prints and eye-popping colour. The big denim makeover comes at a time when it's revealed 75% of British women wear less than a quarter of the jeans in their wardrobe regularly. The findings, by fashion advice site Miss High Street (www.misshighstreet.com) indicate an average ownership of 10 pairs of jeans, leaving at least seven pairs lying neglected in the denim drawer. Time for a new trend-led spree? Hannah Buckley, founder of Miss High Street, recommends a frugal fashion approach: "Don't splurge on trend jeans because their appeal might be short-lived. "Coloured skinnies are huge this season but 52

SUMMER STRIPES Hello instant leg lengtheners! Pyjamas are a big catwalk trend for spring/summer but stripy denim is the more wearable way to work stripes on the streets. "This season anything goes with stripes contrast colours, thick stripes or pinstripes," Thornton suggests. "The 'pyjama look' is the fashionista favourite, worn skinny and cropped for a fresh take on nautical." How to wear them: Keep the look fresh and maritime-inspired with washed-out colours like creams, pale blues and faded reds. CROPPED CAPERS If you can't bare to be parted from your blues, step into summer with a pair of cropped jeans. Shoe addicts will adore these for their feet-baring qualities, which make them perfect for teaming with ballet pumps and ankle boots alike. Thornton says: "If the new denim hue is colour, colour, colour, then the new shape for spring is the crop. "The look is mid-rise, straight leg and ankle length." How to wear them: Pair with a crisp shirt for a clean and modern look.

For this months’ Q&A, it occurred to me that a huge number of people are currently in the process of planning summer holidays. So even
though most of us are great at looking after out oral health when we are at home, we don’t often pack the dental floss! So here are a few ways you can prevent cavities while you are away from home..... Crunchy fruits and vegetables such as apples, carrots, cucumbers, and celery can help to mechanically clean food debris and bacteria from your teeth. In addition, fruits such as cranberries, blueberries, and apples contain nutrients that decrease the stickiness of the bacteria that causes cavities. Green and black teas also contain minerals that can reduce the growth of bacteria on your teeth. And best of all…Cheese.
While the mechanism is not completely understood, numerous studies have shown that eating cheese after eating a sugary snack greatly reduces the damage to your teeth. Cheese tends to increase the amount of saliva in your mouth which helps keep cavities at bay. Cheese can also help neutralise the acid that bacteria produce. airdressing is constantly evolving. From dip-dye colour trends to asymmetric cuts and feather hair extensions, the faddy trends may come and go. But an elite stable of hairdressers has stood the test of time.
Charles Worthington is undoubtedly a member of this exclusive club - and this year marks a quarter of a century since he opened his salon doors. With a client book crammed with A-listers, and blow-drying skills at the ready for his fourth year as official hairdresser at the BAFTAs in February, Worthington is celebrating the occasion with a hair gift for us all - a limited edition BAFTA and CW 25th Anniversary Collection of products. His mantra is "bouncy, shiny, touchable hair that looks full of life". With the Oscars and BAFTAs upon us, Worthington reveals how to achieve that red carpet look in the comfort of your home.
RED CARPET HAIR RULES
You don't need an invite to a flashy premiere to feel like a superstar. Follow Worthington's hair tricks for a big event in your diary and you'll be fighting off the camera flash bulbs in no time... Eat your hair healthy The glossy hair you see on the red carpets isn't achieved by shine spray alone. Stars spend weeks prepping for their big red carpet moment, according to Worthington, diet included. "You can't expect to have shiny hair without a balanced diet with plenty of vitamins, minerals and nutrients," he says. "If you want to boost your diet with supplements to help your hair health, then take vitamin B complex, zinc and Omega 3 that will provide essential fatty acids." Hold the lather Ditch grand plans for hair treatments on the day. Styling your tresses when it's not freshly washed provides better hold for dressed hair. "Freshly washed hair can be slippery, so day-old hair is always better," Worthington explains. "Spritz a volumising spray into dry hair, then rough dry to achieve more texture to work with for dressing your hair. Beware if you have greasy hair, use a dry shampoo first." Faux gloss Hair looking bouncy but lacklustre? Fake that Hollywood shine. Worthington recommends ditching the hairspray and using volumising spray and shine serum instead. "A little trick of mine is to apply a tiny amount of serum to the palm of the hand then, using a large make-up brush, lightly sweep

over the hair for subtle glossiness and shine," he recommends. You can also try Worthington's trick of blasting cold air at the end of each blow-dried section to set the style and seal the cuticles with extra shine. Secure the style Nobody wants to spend half the night constructing an elaborate hairstyle only for it to start falling out as soon as you pick up your first canape. Matte hair grips are an essential in Charles Worthington's wardrobe of hair essentials because they have a firmer hold and show up less than shiny ones. "If you're dressing hair, my top tip is bending back one corner of a hair pin to form a fish hook - it means that when you put the pin into the hair, it can't come out. "Bear in mind you need to allow a little time to take the hair out afterwards!"

Cheat! Worthington cites a style he created for Emilia Fox at the BAFTAs as a red carpet favourite - a side-on, tousled low bun. "The one big advantage of this style is that it's at the side of your head so you can see what you're doing, which means you're cheating to start with," he says. "Not many people realise that you can use a big bun ring - my favourite secret weapon to create the illusion of plentiful hair." Put your hair in a ponytail and pull through the ring, gripping sections of the hair to the ring.

Worthington has coiffured the locks of countless A-listers during his 25 years of blow-drying, snipping and styling. Here, he reveals some of his favourite famous encounters in the hairdresser's chair: I loved working with Sharon Stone for the BAFTAs in 2009 that lady has star quality! She was breathtakingly beautiful even without any make-up. For the BAFTAs, her hair was quite short, so we decided to put it up to give the impression of an up-do. The aim was for an effortlessly chic look that wasn't too structured or ageing but had a more spontaneous feel. When Sex And The City were filming the very last episode, they did the final scenes in our salon in New York. That was thanks to Kim Cattrall who was a client and suggested our salon for the shoot. At the time, Kim had blonde shoulder-length, high-maintenance hair, which needed to look mega-groomed for the part. She loved having polished, bouncy hair - our blow-dry times together were always fun. Jerry Hall has thick, luscious hair, which sometimes needs controlling. That said, she is so lucky to have good strong hair. She loves the Salon Results Moisture Seal range, which has the nourishing Argan oil as a key ingredient. ictoria Beckham and Rihanna were rumoured to have been sent advance supplies and eager skincare enthusiasts stripped the shelves bare on its first day of sale. Ladies, please welcome YSL's new Forever Youth Liberator serum, hailed as the 'holy grail' of anti-ageing. As previous stampedes for Aldi's Lacura Multi-Intensive Serum and Boots' No7 Protect & Perfect (albeit with lower price tags) prove, serums are hot property. This unassuming product may take pride of place on every beauty editor's shelf but many women are yet to sign up to the serum club. "A lot of women wrongly assume that oil creates more oil," says Chey Birch, aromatherapist and founder of beauty brand Black Chicken Remedies. "But not all oils are equal - many have therapeutic properties for your face that contain high concentrations of nutrients and can enter deep into the skin." Moisturisers, beware. Serums are fast becoming the skincare must-have. SERUM NOVICE Once you've stumbled upon a super serum, there's no going back.

But unless you're already an aficionado, there's confusion about what these hallowed bottles do and how to use them. While creams only affect the top layer of skin, serums are packed with active ingredients that can be rapidly absorbed through the skin's layers. As well as brightening tired, dull complexions, serums are "high in concentrated ingredients to treat skin problems such as redness, wrinkles, discoloration, dehydration, sagging skin and acne", Birch explains. And there are no hard and fast rules on routine - they can be used morning and night after cleansing and toning, and before a moisturiser - or on their own. "Apply a few drops of serum and use mild upward and outward strokes to blend the serum into your face," suggests Birch. "Wait for five minutes to allow full absorption. After that, if required, apply a moisturiser over the serum. Don't forget the neck area too." A good skincare routine might feel like a daily chore but adding that extra serum stage can make all the difference for glowing skin. BOTTLE BROWSING Just as you choose a moisturiser according to your skin type, serums aren't a one-fits-all product. They all smooth and repair but there are varieties targeted at specific skin concerns. Some claim to erase pigmentation, acne and

redness, while others tackle fine lines and wrinkles. "As the skin ages, we all notice slackening and sagging, with deeper lines becoming more visible," says Sarah Chapman, facialist and skincare expert. "Once you start noticing these signs, look for peptide-loaded serums, which also contain antioxidants such as vitamins A, C and E, coenzyme Q10 and targeted ingredients such as renovage that work on the cells' DNA to help defend and repair." Chapman recommends thinking of serum as your skincare underwear, which restructures and contours the skin. If the winter overdose of central heating has dried out your skin, look for a serum based on hyaluronic acid (HA). "Slot this option into your routine if your skin looks dull and always feels tight, to lock in moisture and get your skin glowing and dewy again," says Chapman. THE SERUM TAKEOVER Widely hailed as the hero of skincare for complexions, it's little wonder that the beauty world has utilised the wonders of serum in other products. Make-up
Look for the new wave of serum-enriched foundations to make your skin look radiant and healthy in an instant. Max Factor make-up artist Caroline Barnes says: "January days tend to take the glow out of your skin. Unruly locks? Seek out a hair serum as an effective quick fix for bad hair days. Mark Woolley, creative director of Electric Hairdressing, says: "Serums usually contain a high concentration of potent ingredients, meaning you only need to use a small amount. They instantly smooth down any stray hairs while adding a beautiful, natural shine."
TRIED & TESTED Lisa Haynes tries out the all-new 'rasul mud treatment'. While I gave up on most of my detox resolutions at approximately 10pm on January 1, there was one ritual I left on my list. That was to have a 'rasul' - a traditional Arabian cleansing ritual. Wearing bikinis, my friend and I entered a glistening tiled room and unrobed to slather ourselves from top to toe in Moroccan clay mud. s recommendations go, none could come more highly for a pilates teacher than from the Duchess of Cambridge's little sister. Cast your mind back to April 29 last year when, besides the lacy number worn by Kate, all eyes were on her sister, Pippa Middleton, and more specifically, on her rear. Now, the woman Pippa credits with helping her create that internationally renowned hour-glass figure, has revealed her secrets... Pilates guru Margot Campbell has just released a workout DVD, entitled The Perfect Pilates Bum, with a ringing endorsement on the front from Miss Middleton, as well as a book, Pilates On The Go. Despite having a studio in the leafier part of west London, there is nothing haughty about Campbell - she's a grounded, bubbly Scot, who's partial to a bit of Abba. With Thank You For The Music blaring from a stereo, Campbell steers me to one of her pilates 'beds' - which, if it weren't for the Cath Kidston-adorned cushions, look like something out of a hospital ward or horror film - all moving parts and draped with springs and spiky rubber balls. Within minutes, I'm jumping, but not in the normal, vertical fashion. Instead, I'm lying down with my neck in a brace and springing off a board at my feet. It sort of feels like being an astronaut and after a few tentative jumps, I'm flying. First-timers should not fear - the beds are simply an aid to doing the exercise which was pioneered by German Joseph Pilates in the 20th century. As pilates has developed, Joseph's mat exercises have become more popular and you'll often find these are the basis for local classes. Campbell's book is a series of such exercises, with exotic names such as 'Bananas' and 'Clams'. "They're all designed to develop and strengthen the core muscles in your body," says the instructor, whose glossy dark bob and smooth complexion render it virtually impossible to guess her age. turned to pilates as a "calmer" form of exercise to supplement running, swimming and aerobics. She now does hot yoga too, but prefers the way that pilates works to strengthen the body over traditional yoga. "It wasn't just all about stretching and holding positions. In pilates, we modify positions. So you might be in the plank position, but we'll do a press-up out of that. With yoga, you'll just hold the plank," she says."We keep it quite warming and we keep it going." After just five minutes of lying on my back, sucking my tummy in and raising my head ever so slightly and lifting up my legs into 'tabletop', I can see the appeal - pilates seems pretty easy. How exactly did this shape Pippa's bum? While Campbell says you can tailor her exercises to focus on certain body parts, it's better to work on the whole body - and you'll be better off combining pilates with other forms of exercise to get that Middleton shape. "The bottom line is pilates can be enough for certain people," she says. "If someone came in here and hadn't done any kind of workout for a number of years, they will start to see results, because they're going from a baseline of zero. "But if triathletes (like Pippa) come in here, they're incredibly fit already, and pilates helps them to stretch out and tone in a different way." So it helps if you add it into the mix with other regular exercise and you'll see the difference in the way you perform those sports, says Campbell. "If you're a runner, you'll be running a little bit taller and be drawn in, supporting your back a little when you're doing it. "If you're doing aerobics, you'll breathe better and draw your tummy in - it's all about connecting the abdominals and stomach muscles." Pilates is often recommended to those with back problems, because as you strengthen stomach muscles, you give your back muscles a rest, meaning they'll hopefully ache less. "For people with non-specific back ache, a lot of it is to do with how we carry ourselves and if you can use pilates to strengthen the stomach, learn to stand up and walk tall, you'll be using your abdominals more and your back muscles less. "And it will improve your wellbeing - you'll look and feel better." My first attempt at a pilates class left me feeling like I'd played an hour-long version of the game where you have to pat your head and rub your tummy. I was so busy trying to hold my tummy in, my back in an arch, my pelvic floor tight and focus on breathing out while I moved my legs up into the air. It was horrible. But Campbell reassures me that you only need to focus on one thing at a time and get it right. "For me, the most important thing is pulling the tummy in by about 60%. By doing that, you're starting to use your abdominals and then you're protecting your back, as it's doing less work. "Eventually you should pull up the pelvic floor, but don't be caught up by 'imprinted' or 'neutral' placement, all that means is pushing your back into the mat or not. Don't try to do too much at once. have often said that we should emulate the prudent wealthy people of Tudor times who invested their money in tangible things like land, property, decorative arts and items of intrinsic value such as gold and silver. The production of artefacts made of the latter was, by the middle of the 16th century, strictly controlled and as proof of this the Goldsmiths’ Company had instituted a system of marking all items so made which revealed with individual stamps on the surface the quality of the material, the identity of the maker, the place where it was tested and the officer in charge of the testing. As it was an annual office this mark changed each year and, taking its form as a letter of the alphabet, became known as the Letter of the Year Mark or more recently simply the ‘Date Letter’. Originally it was called the Assay Mark - from the French word assai meaning examination - introduced under a statute of 1478 wherein the Goldsmiths’ Company was made liable to a fine if it marked any substandard silver. (A point here is that in this context the term goldsmith applies to silversmiths as well.) In 1545 the fourth mark was added, depicting a lion walking to the left with its right paw raised and known as the Lion Passant. It became known as the Sterling Mark as it took the place of the earlier King’s Mark to denote quality while the latter became recognised as the mark of the London Goldsmiths’ Company and Assay Office. The reason for the change was two-fold. Firstly by the mid 1500’s the coinage had become debased by approximately 50% which meant that a silver crown (5 shillings) had only half a crown’s worth of silver content. To prove the maintained sterling value and quality of wrought plate, that is items made of silver, the Lion Passant mark was introduced. Secondly, by this time and starting as early as 1378, Assay Offices had been established in various parts of the country, particularly at York, Newcastle, Lincoln, Norwich, Bristol, Salisbury and Coventry. While it was imperative that all

silver should be guaranteed to be of the sterling standard and marked as such it was impractical to expect silversmiths from these disparate places to travel to London to have their wares marked and so each adopted a different emblem to equate with the Leopard’s Head of London. All these towns and cities used a letter of the alphabet to identify the Assay Master but they did not all use the same sequence of letters. London used the first twenty letters in the alphabet excluding ‘J’ and when the run was exhausted the typeface or the shape of the background ‘shield’ was changed. In 1560 Queen Elizabeth I restored the value of the coin, a move which set Britain on a steady course to recovery for the best part of 100 years only to be decimated by our civil war (1642 – 1649.) Among the results of this were vast amounts of earlier wrought plate being melted down to pay for it, which in turn caused a shortage of silver for manufacture. Over time this affected the monetary supply to such an extent that by the 1690’s further legislation was necessary. Until the reign of Charles II all our coinage was made by hand, stamped by hammer and die and the edges trimmed with shears. Although trade was often conducted through barter or credit, cash transactions were
common enough and so, before parting with your coins it was only human nature to snip a little bit of the edge of each one. These little snippets all mounted up - the original ‘every little counts’ – but it had already become a capital offence to clip coins and, with a fake die, forge your own money. However with an increased demand from working silversmiths these scraps could command as high a price as the coins they had been cut from, and with less risk of detection of the crime. So a new type of coinage was called for and a mill was set up in the Tower of London and powered by horses to produce perfectly circular coins. As a belt -and-braces measure an inscription or legend was engraved around the outer edge thereby making illegal clipping virtually impossible. But the authorities failed to see the problem with having both old and new currency in circulation at the same time. Obviously people hung on to the new with its full face value money’s worth, while spending and clipping - the old. Clearly the old coinage had to be withdrawn and the 2nd, 3rd and 4th of May 1697 were the final days for collection at the ten furnaces specially built behind the Treasury, which was then at Whitehall between the Banqueting House and the river. For weeks great piles of coins, mostly half face value and barely recognisable had been collected, melted down and cast into ingots. In one instance some £52,000 of face value coins were melted to produce just over half that amount of silver worth. But distribution of the new coins was slow and while all this was going on another factor became evident; the value of coin clippings to silversmiths had to betaken out of the equation. This was done by raising the silver content of wrought plate to a level above that of coin. Not by so much as to make the material too soft for use and durability but sufficient to be detected by the assay. The figures were a raise from 92.5% pure to 95.84% pure. It was known at first as the New Sterling Standard but – as it
was denoted by a stamp showing the figure of Britannia – it soon became known as the Britannia Standard. This mark replaced the Lion Passant mark and in London the Leopard’s Head was replaced by a mark showing a Lion’s Head in profile, facing to the left with a jagged neckline as if torn from its body. Heraldically this is called ‘erased’ and so the Britannia Standard in London is denoted by the Britannia mark and the Lion’s Head Erased. In all other towns and cities the Lion’s Head Erased is used in addition to their town mark. From 1697 until 1720 the Britannia Standard was obligatory but in the latter year the economy in England had recovered sufficiently for the government to restore the old Sterling Standard while retaining the Britannia Standard as an option which it remains to the present day. In the early days of the maker’s mark, people were less literate and initials meant little or nothing to most, so symbols were commonly used. These might be a miniature image of the shop or tavern sign where the silversmith had his workshop, such as leathern bottle or a swan, a star or crescent moon. By the 17th century we see the first two letters of the surname being used and by the beginning of the 18th century the silversmith’s initials gradually became the norm. From the 1720’s it can be said without question that the manufacture and sale of English silver was the most proficiently run and tightly controlled of all industries, with the welfare and benefit of manufacturer, supplier and purchaser held in equal esteem. The four marks as described filled every requirement and would surely have survived unaided save for a change in taxation in the 1780’s and the Convention Hallmarks introduced in the 1970’s, nearly two hundred years later. When we’ve dealt with them we really will get onto the silver from the Channel Isles, Scotland, Ireland and other desirable categories where the present day equivalent of the prudent Tudor person should still be putting their money ■

IS TRIPLE GLAZING
BETTER THAN DOUBLE GLAZING? M ore importantly, which is the better product for you and your property? Nowadays, although they do cost more, triple glazed UPVC windows, residential doors and French doors are not that much more expensive than double glazed products. Properly installed UPVC triple glazing offers unrivalled value for money when household energy savings and consequent financial savings are taken into account (i.e. painting and decorating), not to mention the other benefits of triple glazing over double glazing. However, as triple glazing in casement windows, tilt and turn windows, Georgian windows and doors has an extra pane of glass, each sealed unit is thicker and more heavy duty. So not only does the extra glass cost at least 50% more, each window and/or door costs more to

transport as is much heavier. Top quality UPVC triple glazing, with a U-value of 1.0 W/m²k, is around 40% more thermally efficient that standard "A" rated double glazing and 60% more thermally efficient than standard "C" rated double glazing. This is a great benefit to UK home owners bearing in mind that between 2003-2009 gas prices (i.e. heating bills) rose by an average of 14% each year. Unfortunately, this long term trend does not look likely to reverse. Going forward, future window Building Regulations (which currently dictate a minimum 1.6 W/m²k U-value) are likely to call for windows used in new build homes and replacement windows to have a U-value of 1.4 W/m²k by 2013, and 1.2 W/m²k by 2016 in order to reduce carbon emissions from the UK housing
stock. By investing in high quality UPVC triple glazing, with a U-value of 1.0 W/m²k or better, property owners are essentially future-proofing their home. Triple glazing supplied and installed by Hazlemere Windows is all but identical to their "A" rated double glazing with the main difference being the internal bead, so aesthetically there is little or no difference. The internal bead has been specially developed to enable a wider 36mm unit to be fitted into a standard 70mm profile. By using a 36mm triple glazed sealed unit, as opposed to the 44mm sealed units of other fabricators, Hazlemere’s triple glazing bead blends in with the overall aesthetics of the window and retains its concave form (sloping in towards the sealed unit). When a 44mm sealed unit is used in a standard 70mm
profile, the internal bead often has to protrude from the frame of the sash, or "overhang" to allow for this much wider sealed unit. This can look rather clumsy and compromise aesthetics. Triple glazing is genuinely worth the added investment for five reasons: 1) Triple glazing is approximately 40% more thermally efficient than "A" rated UPVC double glazing so the savings are going to be far higher, potentially in the region of £10,000 and 30 tonnes of carbon over the next 20 years. 2) Triple glazed windows and doors will further reduce draughts and cold spots in a room that currently has less thermally efficient windows and doors. For instance, research has shown that if it’s -5°c outside, and 21°c inside a

home, the surface temperature of the inside pane of the triple glazed windows will be no less than 18°c. With single glazed windows the inside pane would register at a mere 1°c and standard double glazed windows would reach no higher than 11°c. 3) Triple glazed windows and doors can reduce the impact of exterior noise. They do reduce noise and are not sound proof, but the extra pane of glass, being of a different make up to the two external panes, does help toward acoustic insulation. 4) Triple glazed windows and doors could save each UK home owner over £10,000 during the next 2 decades, which is not inconsiderable when the rising costs of fuel are taken into consideration. In many cases these savings
could even offset the cost of having triple glazing installed in a home (over the recommended lifetime of the product). 5) A 3rd pane of glass, by definition, makes a triple glazed sealed unit much harder to break than a double glazed sealed unit – especially when the middle pane is made of toughened glass. What’s more, all Hazlemere's “A” rated UPVC triple glazed windows are internally beaded and the glass unit can only be removed from the frame by a person who is inside the premises. Double glazed windows are usually made up of two panes of float glass, unless the sealed units are in a door, within 300mm of a door or in windows that start less than 800mm from floor level, in which case
Building Regulations stipulate all glazing must then be toughened glass. It is important that triple glazed windows have a toughened middle pane even if the two outside panes are float glass, as this helps prevent thermal breakage of the middle pane. Thermal breakage of the middle pane can occur when there is a considerable difference in the indoor and outdoor temperature of a property. Because the thermally efficient triple glazed sealed unit keeps more heat in, the internal pane will remain at roughly room temperature. Similarly, because less heat is escaping, the external pane will remain cold when it is cold outdoors. Therefore the
middle pane of glass is subject to very contrasting temperatures i.e. warmth from the internal pane/cavity and cold from the external pane/cavity, and thermal breakage could occur if standard annealed glass was used. By using toughened glass, the possibility of thermal breakage is all but eliminated. British Telecom was one of the pioneers of home working with roughly 15,000 home-workers who say that they are around 20% more productive and take fewer sick days than employees who travel to work each day from home! With the 2012 Olympics fast approaching, the UK Government is suggesting that people work from home during that time to avoid travel chaos but in reality this once quirky concept has already become a realistic choice for many and is set to continue. Working efficiently from a home office requires certain criteria which contribute to meaningful and productive work. Top of that list is the all important desk which crucially has to be the right height and size for the job at hand. A good chair and plenty of space for filing and storage are also major considerations. Since an office can be fitted almost anywhere, it’s most important to make best use of the

he landmark events of 2012 - namely the Queen’s 60-year reign, followed by the Olympics - are set to prompt patriotic gardeners to fly the flag for Britain this year in the form of red, white and blue designs in their beds, borders and containers. Blue and white lobelia, red salvias and geraniums and other bedding favourites could be the mainstay for many borders. The challenge will be getting these colours in the garden in time for the jubilee celebrations in the first week of June. The Royal Horticultural Society (RHS) has just launched an advisory page on its website (www.rhs.org.uk) providing advice and suggestions to gardeners wanting to go for red, white and blue planting schemes, bringing together a selection of suitable plants that will go well together. “Unfortunately June is not the best time to have masses of colour from plants grown from seeds,” says Jenny Bowden, RHS advisor. “But we have come up with some great suggestions that are relatively easy to grow. “We know how important these two wonderful events are to people and we just thought that some patriotic planting would help in the celebrations.” The secret will be to buy partially grown plug and mini-plants such as white verbenas, lobelias and Nemesia ‘Wisley Vanilla’, red pelargoniums (geraniums) and blue Lobelia ‘Panthera Cobalt’ to put in containers and hanging baskets. These plants will have to be purchased as early as possible. 82

Plant centres are likely to have supplies from April. “Although it will be necessary to get the plants into containers and hanging baskets as soon as possible, gardeners also need to ensure that they are kept in sunny, frost-free conditions until the threat of frost has passed. A temperature of 15C (59F) is ideal,” says Bowden. Themed selections for June flowering include Petunia grandiflora ‘Jubilee Mixed’, from Suttons (www.suttons.co.uk). Compact in habit and reaching a height of 25-30cm (10-12in), they should be sent out as young plants in late April. Another Suttons celebratory package includes Calibrachoa Superbells ‘Red Devil’, Lobelia ‘Panthera Cobalt’ and Verbena ‘Superbena White’, which should perform all summer in baskets or containers. Young plants will be sent out in May. Verbena ‘Union Jack’ collection is being offered by Vernon Geranium Nursery (www.geraniumsuk.com). With delivery at the end of April, there should be time for plants to settle in and start flowering for June. DT Brown is offering a
patriotic blend of young highly scented red, white and blue sweet pea plants, which should be delivered in late March and, once hardened off, can be planted in their permanent positions. As the Olympics and Paralympics are being run during the end of July, August and early September, gardeners will have enough time to grow plants from seeds for these celebrations. The RHS suggests growing red, white and blue sweet peas, red-flowered Salvia splendens, Nicotiana (tobacco plant) in red and white, and blue flowers such as ageratums or Salvia farinacea ‘Victoria’. However, if the thought of a red, white and blue border stirs up images of old-fashioned planting schemes often seen in parks or on roundabouts, vertical displays may provide a more contemporary feel. Consider planting a wall of
blue, white and red with verbenas, ivy-leaved pelargoniums, lobelias and begonias. RHS Garden Harlow Carr, in North Yorkshire, is extending the theme to vegetables by planting red (‘Highland Burgundy Red’), blue (‘Purple Majesty’) and white (‘Elisabeth’) potatoes, while all four RHS gardens will be featuring planting displays to celebrate both the Queen’s Diamond Jubilee and the London Olympics. Other patriotic veg might include the purple/blue variety of carrots, ‘Purple Haze’, white cauliflower ‘Avalanche’, runner bean ‘Painted Lady’ which produces red and white flowers and rainbow chard, for its colourful red stems. Flying the flag opens up so many opportunities for gardeners to go red, white and blue this summer.

elebrities may party at chic clubs, restaurants and premieres but, increasingly, the hottest entertainment destination for the rest of us is our own home. Cinemas, party rooms, bars and games rooms are now considered must-haves in high-end homes. But while most people don’t have the budget for such lavish spaces, it doesn’t stop us embracing the philosophy that ‘staying in’ is the new ‘going out’ - and looking for kit to make it possible. “The world has moved on in terms of the way people use their homes,” says designer Tara Bernerd of Tara Bernerd & Partners. “Of course, those who can afford luxury want entertainment areas - a cinema room, a games room with a pool table and a party ‘night club’ zone so they can effortlessly and instantly enjoy their often limited leisure time. “Most people now regard their homes as little kingdoms, where they can demonstrate their taste, be cocooned and amused when they’re alone or with family, or entertain in style when the mood 86

takes them.” Home bars have shed their naff reputation. A built-in bar was a famous and much mocked fixture in the Trotters’ lounge in TV’s Only Fools And Horses, but now high street giants Marks & Spencer and John Lewis both have sophisticated ranges of drinks cabinets and trolleys. Freezing weather aside, which makes venturing out even less appealing, socialising indoors means you can tailor an occasion exactly to suit you and your guests. This could potentially save you money, not to mention freeing hosts from concerns over drinking and driving. “Men may be more interested in gadgets, gizmos and toys for a games room, while women are keen to have areas where they can relax and entertain such as cinema rooms and bar areas,” says Bernerd. Convenience and privacy are motivating factors for those who already have the luxury gyms, pools and spas, and see separate entertainment zones as complementary to those facilities. But she points out many people want their homes to have multi-functional spaces.
“One of our aims is to ensure these rooms are versatile and have just as much atmosphere and appeal when they are used as intimate, relaxing spaces as when they’re used for entertaining groups of friends or for parties,” she says. ou might not think so when it’s as cold as it is now, but you’re lucky if your home has rooms with really high ceilings. Not only are they a fantastic architectural feature and quite unusual, but they can also be used to create an extra room. With the addition of a mezzanine level (an internal balcony overlooking the space below), you can add a room more easily than converting your loft or cellar or building an extension. A mezzanine level can have all sorts of uses - a dressing room, home office, studio, spare room, or bed platform or play area in a child’s room (bed platforms also work well in high-ceilinged studio apartments). However, there are lots of practical considerations. So that you can stand up comfortably in both the mezzanine and the space underneath it, the room should have a ceiling height of at least 4.2m (13ft 9in), unless it’s a small child’s room. Whatever you use the mezzanine for, you’ll need something to enclose it. A balustrade or half-height wall is a 92

popular choice because you still get a feeling of space, although you do, of course, lose privacy. You’ll also need a staircase up to the mezzanine. Ladder-style ones are fine for kids, but not so user-friendly for adults, while spiral staircases save space. For a really clever use of space, you can tuck things under a (conventional) staircase, like a built-in home office or storage, or even a tiny shower room or kitchen in a studio apartment. One thing you don’t want to do without is soundproofing, because this could affect your enjoyment of the mezzanine and the room below. And don’t forget the importance of natural light. Depending on where and how tall the room’s windows are, the mezzanine could lack daylight, so you’ll need bright artificial lights that can be operated from both levels of the room. Because a mezzanine level is an internal structure, you probably won’t need planning permission to build one, unless you live in a listed building. If you do, you’re likely to need consent from your local council’s conservation officer - and your application may be rejected.
You should also check with the council’s building control department, as they may want to monitor the work to ensure it complies with building regulations. Using an architect to design your mezzanine is a good idea, because they should know what rules and regulations apply. Alternatively, a builder may be happy to design and construct the mezzanine for you, or build it to your design. You may even need to employ a structural engineer, as mezzanines are often big and heavy and so could put more weight on the floor than it was designed to take. If your home’s leasehold, you may need the freeholder’s permission to add a mezzanine, depending on the terms of the lease. And if it’s a flat, with a flat below, you’ll probably have to comply with the Party Wall Act because the weight of the mezzanine could damage your neighbour’s ceiling underneath it. Costs for a mezzanine level start from hundreds of pounds (for a small, simple platform in a child’s room), but can cost thousands, depending on the
structure’s size and the work involved. Compared to most types of building work, though, this is a relatively quick and inexpensive way of adding a room. PRODUCT OF THE WEEK
A hole in a plasterboard wall or ceiling seems like a big problem - after all, how do you fill air? but it needn’t be. New Artex Easifix Plasterboard Repair Kit (£14.98, B&Q) is made for the job and is really easy to use. Best of all, the tub contains everything you need to do the repair. You simply mix the powdered filler with water in the tub using the stirrer, put one of the self-adhesive metal-and-mesh patches (there’s a large and a small one) over the hole and smear the filler over it with the filling knife (you have about 45 minutes to perfect your ‘plastering’ before it sets). When the filler’s hard, you sand it flat with the sanding blocking, wipe it off and it’s ready to be painted - it’s so simple and effective.

With the remnants of 2000 years of history, there’s plenty to see in Lisbon. Phoenicians and Romans, Barbarians and Moors have all left their stamp on the city. Start with the quiet of the Sé, the 12th century cathedral, before plunging into the narrow, atmospheric streets of the Alfama district. Its Rua de Sao Pedro hosts a lively fish market. There are museums and the rebuilt castle, the Castelo de São Jorge. For a taste of neo-classical history, the buildings of the Restauradores area will fill your gaze as you sip coffee from a pavement café. As you continue your tour, you’ll swiftly realise that each area of town - Belem, Bairro Alto, Baixa – has a wealth of museums, galleries and buildings to amaze you. 94

On the Atlantic Ocean, seafood plays a large part in Lisbon’s cuisine. Portugal is associated with sardines, but try squid, sea bass, oysters…or a cataplana de peixe e mariscos, a fish stew that lets you taste many at once! A feijoada is a spicy pork and bean stew: hearty cuisine maybe edges it over haute cuisine, here, but everything is available. There are hundreds of restaurants for all palates – a cervejaria is the place for a less formal beer and a snack. Portuguese wine may not be that well-known to the British palate, but it should be. CARAMELIZED PINEAPPLE ON PAIN D’EPICES WITH ORANGE CURD, RUM SYRUP AND COCONUT ICE CREAM
WELL NOW THE SNOW HAS MELTED AND THERE IS HOPE OF SPRING JUST ROUND THE CORNER AND THE ABUNDANCE OF NEW SEASONAL INGREDIENTS, THIS SCRUMPTIOUS DESSERT PAYS HOMAGE TO THE COMFORT FLAVOURS OF WINTER - ZINGY ORANGE AND SPICE FINISHED WITH THE EXOTIC FLAVOURS OF COCONUT, PINEAPPLE AND RUM. PAIN D’EPICES IS CLASSICAL FRENCH, HONEYED, AND SPICED BREAD THAT WE ALSO SERVE WITH SAVOURY AS WELL AS SWEET AT THE RESTAURANT.
Ingredients
Pain d’epices 250g clear honey 125ml milk 50g caster sugar 3 eggs 120g dark rye flour 120g plain white flour 20g baking powder 2 teasp mixed spice 2 teasp ground ginger Finely grated rind of ½ orange and ½ lemon 2 teasp vanilla extract Orange Curd 4 oranges zest and juice 150 g caster sugar 150 g butter 4 egg yolks Caramelized Pineapple 1 large Pineapple 200 mls dark rum 50 g salted butter 50 gm demera sugar Coconut Ice cream 12 large free range egg yolks 75g caster sugar 500ml whole milk 400 ml coconut milk 100 ml double cream
Method
Pain d’epices 1. Butter a large loaf tin 23 x 12 cm and line with buttered greaseproof paper. 96

2. Heat the oven to Gas Mark 3, 160 degrees C /325 degrees F 3. Heat the honey with the milk until melted, keep warm 4. In a large bowl, whisk the sugar and eggs together until very light and smooth 5. Sieve all the dry ingredients together. Stir the warmed milk and vanilla extract into the egg mixture. Then fold in the dry ingredients 6. Bake for 30 minutes, then lower the heat to Gas Mark 2/150 degrees C/300 degrees F and continue to bake for one hour. 7. Leave to cool in the tin for 30 minutes and then turn out Orange Curd 08. Reduce the juice and zest of oranges by half 09. Add the caster sugar and the butter 10. Add the 4 egg yolks – them mix together and place on a very low heat, cook out until thick and creamy Caramelized Pineapple 11. Peel and cut the large pineapple in small cubes. 12. Heat a heavy bottomed frying pan add salted butter 13. Sauté the pineapple chucks 14. Flame with the rum and then add the demera sugar and caramelize the pineapple until golden
Coconut Ice cream 15. Lightly whisk your egg yolks and sugar together 16. Heat the milk and cream and coconut milk in a pan to near boiling 17. Add a little of the hot milk and cream to the egg yolks, whisk together and then add back into the pan with the remaining milk cream mixture 18. Continue to cook on a very low heat gently whisking all the time until the custard coats the back of your spoon 19. Allow to cool and then churn in an ice cream machine
To serve
20. Cut a strip of pain de epices, toast on both sides 21. Spread with a little of the orange curd 22. Place on a plate to serve 23. Stack your caramelized pineapple on top and serve with a scoop of the coconut ice cream 24. Drizzle over a little of the pan juice rum syrup to finish.
Chef’s tip
You can garnish the dish with thin shavings of fresh coconut that have been toasted under a grill; a mandolin is a great tool for this job. There are a number of other ice creams that would also work with this dish such as passion fruit and banana and mango.

ust 60 bottles of a Diamond Jubilee scotch, made by Johnnie Walker distiller Diageo, have been produced for sale, and are being offered to known collectors of rare and expensive whiskies. Another single bottle will be given to the Queen herself. The whisky is a blend of grain and malt whiskies dating back from 1952, and finished in casks made of oak from the Queen’s Sandringham estate. If you don’t have £100,000 to spend and are wondering what it tastes like, the master blender for all Johnnie Walker whiskies, Jim Beveridge, said he is “surprised and delighted” by the way the Jubilee whisky has turned out. “With whisky as old as 60 years, sometimes it can be a bit crusty and the flavours can be a bit subdued. But this one is very vibrant,” he said. “It has a fresh fruity flavour, and a finish which is smoky and also has an exotic fruit taste.” He added that Diageo has whisky stocks dating back 50 years, but for anything older than that there are far fewer to choose from. “1952 was an interesting year for distillers, as the whisky industry started to get back on its feet after the Second World War “ said Mr Beveridge. The whisky was bottled on 7th February in Baccarat crystal decanters, at the Royal Lochnagar Distillery on the edges of the Queen’s Balmoral estate. David Gates, the head of Diageo’s whisky business, said the company originally planned to offer the Diamond Jubilee whisky to wealthy afficionados in Asia Pacific and Latin America, but has now had requests from the US and Europe as well. All profits from the sale of the bottles will go to the Queen Elizabeth Scholarship Trust (QEST).
