et within glorious Capability Brown designed grounds, Stoke Place was built as a family residence in 1690 by Patrick Lamb. East and west wings were added over time and the property retains the warmth of a family home with an emphasis on service, glamour and comfort. Stoke Place’s décor was re-worked to provide luxurious adult comforts for stylish getaways. When planning the re-design of Stoke Place, the design manifesto hinged on creating comfortable, informal splendour with quirky but stylish reworks of the traditional country house. The group’s overriding objective was to create a rural outpost that was luxurious yet affordable, stylish but groovy. Guests approaching Stoke Place from the sweeping gravel driveway would be forgiven for mistaking it as a fussy, traditional English country hotel. It is anything but. Inside it's an eclectic mix of old and new, elegant Victorian rooms have been given a 21st century makeover with contemporary furnishings, colour and detail – we take a closer look at one of our truly local hidden gems. A former Royal Navy chef who combines military discipline with a passion for food has brought a genuinely international twist to the historic Denham Court Mansion’s Heron Restaurant. James Hatswell, 27, from Plymouth, joined the Navy at the age of 16 and trained at HMS Raleigh’s Cookery School. During his eight-year career, he visited 36 countries and has eaten some of the most exotic and exciting foods on the planet – an experience which has developed his passion for global cuisine and influenced his dishes. “The world is a huge place with vast amounts of ingredients and I think we need to explore as much as we can as chefs to be influenced by other cultures and backgrounds. And food brings people together to share those experiences,” – we catch up with the chef who has an inspiring local success story. Set in 1000 acres and renowned for its scenic lake, woodland and picturesque follies, Hall Barn Estate played host to over 100 enthusiastic fundraisers who gathered to raise money for the Alzheimer’s Society. Organised by at-home care provider Home Instead Senior Care in Beaconsfield, this Alzheimer’s Memory Walk afforded local people the rare opportunity to enjoy the grounds of this normally private estate, whilst raising over £1,500 for a worthy cause. Attended by local MP and Attorney General Dominic Grieve, the event offered a range of family-friendly activities including a pre-walk warm up from a local aerobics instructor. Attendees travelled from far and wide to take part in the Memory Walk and elderly members of the local community were joined by families, friends and even a few dogs on their 3 mile walk through the estate. The walk’s organiser and owner of Home Instead South Buckinghamshire, Michael Lawson was thrilled with the event: “It was truly fantastic to see so many people taking part in the walk and so keen to help raise money for Alzheimer’s Society. It was great that the walkers raised such a significant amount of money for the cause and great that everyone had a fantastic day in the process!” – we take a look at this touching walk. f you're looking for something different to do, why not pay a visit to The Horse Trust's sanctuary for horses, ponies and donkeys in Speen, Buckinghamshire? The sanctuary is open various afternoons a week throughout the year and offers special activities for children during school holidays. Read on for more information about activities planned during Autumn half term (22 - 30 October). The Horse Trust is the oldest horse charity in the world and is celebrating its 125th anniversary this year. The charity runs The Home of Rest for Horses, a sanctuary for rescued and retired working horses, ponies and donkeys. Residents come from a wide range of backgrounds - from retired police horses who spent their lives patrolling our streets to prevent crime and protect the public, to ponies that gave riding sessions to disabled children, or mistreated donkeys that have been rescued by the charity. Visitors have the opportunity to meet many of the sanctuary's residents and learn more about their background at the charity's stable block. For example, you can meet Titan, the UK's largest police horse who retired to the sanctuary from Thames Valley Police. Or, you can meet some of the horses, ponies and donkeys rescued from Spindles Farm during one of the UK's largest animal rescue operations. The sanctuary offers various facilities to visitors, including a visitor centre where you can learn more about horses and a picnic area, where you can watch the horses in their fields and enjoy the stunning scenery of the Chiltern Hills. The Horse Trust is planning an action-packed schedule of activities during Autumn half-term. The sanctuary will be open 2 - 4pm every day, except Tuesday and Wednesday, between Saturday 22nd October and Sunday 30th October. On Saturday 22nd and 29th, staff at the sanctuary will be running a new demonstration for visitors, showing them how to handle a horse. "We'll be showing visitors how to catch and lead a 14

horse," said Liane Crowther, Welfare Development Manager at The Horse Trust. "We will also talk about horse behaviour and explain why horses react to things in the way that they do." A demonstration from local farrier Jonathan Smith is planned for Friday 28th October. On Monday 24th, Thursday 27th and Friday 28th, staff will be running in-depth grooming demonstrations. Visitors will have the opportunity to learn about why we groom horses, what brushes to use and when, as well as finding our more about the anatomy of the horse. Younger visitors will be able to take part in "have a go at

grooming" sessions for a small donation to the charity. Have a go at grooming sessions will take place on Monday, Thursday and Friday at 2:15pm and 3:15pm. All week, the charity will be selling its new range of Christmas cards and 2012 calendar, as well as other gift items. The Horse Trust's Home of Rest for Horses is open 2-4pm between Thursday and Monday until 30 October. From 31 October until April 2012, the sanctuary will be reverting to its winter opening hours, which are 2 - 4pm every Friday, Saturday and Sunday. Entrance to the sanctuary is free, but the charity encourages a

donation of £5 per car or family to enable it to meet its running costs. With each horse costing around £10 per day to care for at the sanctuary, your donation will make a big contribution to their lifelong retirement. The Horse Trust's Home of Rest for Horses is located just off Slad Lane in Speen, near Princes Risborough. MAKING A DIFFERENCE S outh Bucks charity making.a.difference is three years old this month. Launched in September of 2008, the charity is delighted with the way it has progressed. Just as a baby becomes a toddler, who then becomes a child, so m.a.d has passed developmental milestones. m.a.d’s vision is to strengthen community and it seeks to do this in two places—South Bucks and Kampala, the capital city of Uganda. Locally, m.a.d works in schools and in a variety of community settings. In Kampala, m.a.d partners with CRANE, a network of over 100 projects that work with vulnerable children. So how has m.a.d seen things develop over the last three years? Ruth, who lives in Gerrards Cross, says, ‘I thought the vision of m.a.d was very exciting—to get people in this community working together to support something far away from our everyday lives. It’s been great to see how doing that has built

community here, as well as making a difference in the lives of children there. We hoped that people would be generous and we have seen that in a number of ways. People have not only given money, but they have given their time and resources as well.’ In addition to financial support, sending teams of people to Kampala is part of m.a.d’s work. Over the last three years, 40 different people have travelled to Uganda to do sports, medical work, run retreats for staff of the projects and provide first aid training. Anna, from Beaconsfield, was part of a games and sports team in 2009. ‘I loved being part of the team as well as working with the children. Going to Kampala, and working with m.a.d has certainly changed the way I view many parts of my life.’ Dave, from Gerrards Cross, would agree. ‘We have so much here that we take for granted. Working in a totally different context gave me a greater appreciation of things I used to hardly notice.’

Developing a cross-cultural partnership always brings challenges. But after three years, m.a.d and CRANE find that they are now in a place of planning and acting strategically, so that the money and people support that is provided from South Bucks has the greatest possible effect. Over the next few years m.a.d has agreed to provide funding for Christmas parties, residential camps and further retreats for project staff. The partners are also looking at developing ways of generating income to help cover the core costs of the network. m.a.d’s work in South Bucks schools has increased considerably in the last 18 months. Sharon, who lives in Chalfont St Peter, co-ordinates this work. ‘We are building a team of people who will help us as we take assemblies and lessons in both primary and secondary schools. We tailor-make our work to each school, but the theme is always generous living. We want to

help children and young people think about the impact their lives can have, even in the simplest words and actions.’ This autumn brings a variety of activities for m.a.d, which is run completely by volunteers: • A ceroc evening on November 19 • Work in at least four different Buckinghamshire schools • Recruiting a team to assist with the residential camp in Kampala in January • Fundraising for Kampala Christmas parties and the January camps • Further development of the income generation plans There are many ways to get involved in making.a.difference. he National Society for the Prevention of Cruelty to Children’s (NSPCC) popular Letter from Santa fundraising campaign is back! The Letter from Santa initiative, which is this year being supported by Heart FM Radio, gives family and friends the chance to send someone special a magical letter from Santa for a suggested donation of £5. The letter is personalised with the child’s name and age and confirms that Santa and his sleigh will be stopping off in their home town to wish everyone a Merry Christmas. Last year Letter from Santa raised £1.3m towards continuing the vital services the NSPCC offers children, young people and families, and we hope to reach £1.6m this year. FROM FIGHTING TO FOOD – FORMER NAVY CHEF WITH A RECIPE BOOK OF THE WORLD BRINGS GLOBAL FLAVOURS TO THE BUCKINGHAMSHIRE GOLF CLUB

flavours of the world a FORMER Royal Navy chef who combines military discipline with a passion for food has brought a genuinely international twist to the historic Denham Court Mansion’s Heron Restaurant. James Hatswell, 27, from Plymouth, joined the Navy at the age of 16 and trained at HMS Raleigh’s Cookery School. During his eight-year career, he visited 36 countries and has eaten some of the most exotic and exciting foods on the planet – an experience which has developed his passion for global cuisine and influenced his dishes. “The world is a huge place with vast amounts of ingredients and I think we need to explore as much as we can as chefs to be influenced by other cultures and backgrounds. And food brings people together to share those experiences,” he said. James added: “From countries as laid back as Spain where you eat and drink four to five times a day, to New York where you grab something on the go, everywhere is

different. That’s how we discover different recipes and tweak them to fit our tastes and lifestyles. I’ve eaten some of the best breads cooked fresh on the streets of Iraq, Nigeria and Sierra Leone, to amazing fish platters fresh out of the water in Souda Bay and possibly the best shrimp and steak in South Carolina. In fact, I’ve wandered into every kitchen I’ve been able to, to see how all these wonderful chefs are doing it.” As well as the travel influencing the food, Navy discipline has moulded the running of the kitchen and James ensures a superior standard of hygiene - the restaurant being awarded five stars from Environmental Health - and he encourages the ‘do it nice or do it twice’ motto in his staff. “I went from going on squad runs at 7am to learning how to fire and maintain the SA80 rifle, to making sure the length of my apron and the creases in my chef whites were absolutely perfect and routines were

structured, as you would expect in the Royal Navy. “Although the worst bits were having to jump into freezing waters on the assault course and my first ‘Galley Sports’ where you have to rip the kitchen apart and clean it from top to bottom – and let’s face it, what 16-year old enjoys that – passing out was one of the proudest days of my life,” said James. Although he added it wasn’t all plain sailing. “When we were out somewhere in the Middle East, we phoned ahead our meat order and were meeting the delivery on the jetty so we could store ship as we had been at sea for weeks. But when we got alongside, all the meat was still very much alive. There were chickens flapping and a cow mooing. Needless to say we didn’t take it, but it

was very funny.” James was also lucky enough to have worked with Bill Ferguson, another former Navy chef who appeared with Heston Blumethal on TV’s Mission Impossible series. And on his first ship, HMS Cardiff, James worked alongside Ian Spencer, who now cooks for the Queen. After leaving the Navy, James worked in fine dining before joining the Heron Restaurant, based at the Buckinghamshire Golf Club in Denham, Bucks. As the club is owned by Asahi Breweries, Japanses food is a constant theme, but James is always creating new dishes and ideas on how to tweak the traditional and with presentation techniques. The club also offers private dinners and parties with completely bespoke menus he writes. “With food you never stop learning and what is why I love what I do here so much. The more people who see this beautiful location with the breath-taking scenery makes a fantastic accompaniement to any good meal. Along with the location, the history of this place also makes for great conversation over a nice glass of wine next to the river,” concluded James. he Chiltern Painters would like to say hello to all the Life Magazine readers and it’s that time of year for us to welcome you again to this year’s Annual Art Exhibition which is held in the beautiful Old Amersham Market Hall as it has always been. The Chiltern Painters group was founded in 1969 by four enthusiastic amateur painters attending art classes in the then Amersham Art School, held in the barns adjacent to the present swimming pool, a vastly different venue from the present highly regarded Amersham Art College where several of our members are still attending courses. Two of the founder members, Ann Way and Ron Evens, are still exhibiting with the Group as honorary members and we still hold our meetings in each others houses which means 24

membership is limited to eighteen. As membership has grown from four to eighteen, so has the scope and media of the work displayed. Membership now includes both professional and amateur painters producing artwork in watercolour, pastel, oils and acrylic as well as printmakers, sculptors in clay, bronze and bronze resins and the woodcarver who works mainly in lime and oak. The members now also have a large and varied range of greetings cards on sale at the very tempting price of only £1 each. This year the Group has embarked on a new venture by producing a calendar in aid of The Iain Rennie Hospice at Home which is being supported by the local branches of Rotary International. The cover painting for this calendar, which is a lovely rendering of local

barns near Hughenden, has been painted by Val Doonican the well know singer and entertainer who we are fortunate to have as an honorary member of the Chiltern painters. The calendars contain seventeen full colour paintings by our members and will be on sale at the exhibition at the very reasonable cost of £5 each thanks to the generous help from our printer and we hope you will support us in raising much needed funds for this wonderful charity. The Iain Rennie Hospice at Home was chosen as it a charity operating in the Chilterns whose aim is to give adults and children with life limiting illnesses the choice of being cared for in their own homes. The charity offers specialist nursing care 24 hour a day every day of the year as well as support for families from diagnosis to bereavement and

beyond. This care is free to patients and their families making fund raising essential to the continuing work of the IRHH. The Chiltern Painters meet once a month for talks, demonstrations and critiques by invited professional artists as well as workshops at various outside locations. We are so fortunate to have such beautiful local scenery which makes ideal subjects for our members and in addition the exhibition will show paintings from further afield and abroad. et in 1000 acres and renowned for its scenic lake, woodland and picturesque follies, Hall Barn Estate played host to over 100 enthusiastic fundraisers who gathered to raise money for the Alzheimer’s Society. Organised by at-home care provider Home Instead Senior Care in Beaconsfield, this Alzheimer’s Memory Walk afforded local people the rare opportunity to enjoy the grounds of this normally private estate, whilst raising over £1,500 for a worthy cause. Attended by local MP and Attorney General Dominic Grieve, the event offered a range of family-friendly activities including a pre-walk warm up from a local aerobics instructor. Attendees travelled from far and wide to take part in the Memory Walk and elderly members of the local community were joined by families, friends and even a few dogs on their 3 mile walk through the estate. The walk’s organiser and owner of Home Instead South Buckinghamshire, Michael Lawson was thrilled with the event: “It was truly fantastic to see so many people taking part in the walk and so keen to help raise money for Alzheimer’s Society. It was great that the walkers raised such a significant

amount of money for the cause and great that everyone had a fantastic day in the process!” The money raised from the Memory Walk will help fund the charity’s research and national initiatives, as well as the vital services it offers in the South Buckinghamshire area for people with dementia and their carers. Services include day support and befriending

Alzheimer’s Society shows that the number of people with dementia in Buckinghamshire is set to increase by up by 44 per cent in the next 10 years. “As providers of private at-home care, we meet with many clients who have been affected in some way by dementia and are really passionate about increasing awareness of the illness and raising money for Alzheimer’s Society. “ Michael is a strong advocate of ensuring an early diagnosis for those suffering from dementia and has been encouraging his caregivers to embark on the Home Instead Advanced Alzheimer’s Training Course. Gail Hayes, one caregiver who has just completed the course with Home Instead comments: “One of the main things we were taught is how to recognise the early warning signs of dementia. n August 2010, after many months of planning, Chess Valley Equine opened its doors for business. Now in its second year, Chess Valley Equine is a dynamic, young veterinary practice based near Amersham, and is dedicated solely to the provision of equine veterinary care in Buckinghamshire and neighbouring counties. It is the brainchild of Joe Sharps and Olwen Lloyd, two veterinary surgeons who have worked locally for several years and who saw an opportunity to set up and run a new practice on their own terms. “Starting from scratch gave us the freedom to make our own clinical and commercial decisions, building upon the best aspects from our previous experience and retaining the flexibility to offer

a bespoke service to our clients” comments Joe. Chess Valley Equine provides a range of equine veterinary services, from routine healthcare, pre-purchase examinations (‘vettings’) and 24/7 emergency treatments, through to complementary treatments such as acupuncture, chiropractic therapy and hydrotherapy. In doing so, they utilise the latest mobile diagnostic and therapeutic equipment such as digital x-ray and shockwave therapy. The practice ethos is that every horse should be treated as an individual, because that is

exactly what they are. Not all horses respond in the same way to treatment, and ensuring the right treatment for the individual horse is more likely to result in longer lasting results. Patients range from children’s ponies, riding school horses and competition horses, through to thoroughbred racehorses. Setting up a new business in the current economic climate was never going to be easy. However, tough market conditions can also be an opportunity, notes Olwen: “As horse owners are reviewing

their discretionary spend on their equestrian pursuits, they are demanding better value for their money, seeking to avoid false economies. We are confident we offer that value”. This year’s Festival will open on Wednesday 12th October with the European premiere of 360, directed by Fernando Meirelles (City of God, The Constant Gardener, Blindness) and with an original screenplay from the acclaimed writer Peter Morgan (The Queen, Frost/ Nixon). Meirelles is no stranger to the Festival after The Constant Gardener (for which Rachel Weisz later won the Best Supporting Actress Oscar) opened it in 2005. 360 is a modern and stylish kaleidoscope of interconnected love and relationships linking characters from dierent cities and countries in a vivid, suspenseful and deeply moving tale of romantic life in the 21st century. Starting in Vienna, the ďŹ lm beautifully weaves through Paris, London, Bratislava, Rio, Denver and Phoenix into a single, mesmerising narrative. From a simple decision made by one man – to remain faithful to his wife – springs a series of consequences. From uplifting, beautiful and romantic moments through to desperate, confused and conicted interludes, each protagonist in 360 has their own vivid, entertaining, funny, tragic narrative as their stories entwine across the globe.

This year’s Festival will close on Thursday 27th October with the UK premiere of The Deep Blue Sea, adapted and directed by Terence Davies (Distant Voices, Still Lives) marking his return to ďŹ ction feature making following his much loved documentary Of Time and the City. The Deep Blue Sea stars Rachel Weisz, Tom Hiddleston and Simon Russell Beale. Hester Collyer (Academy Award ÂŽ winner Rachel Weisz) leads a privileged life in 1950s London as the beautiful wife of high court judge Sir William Collyer (Simon Russell Beale). To the shock of those around her, she walks out on her marriage to move in with young ex-RAF pilot, Freddie Page (Tom Hiddleston), with whom she has fallen passionately in love. Set in post-war Britain, this deeply moving story is an adaptation of Terence Rattigan’s classic play, The Deep Blue Sea is a study of forbidden love, suppressed desire, and the fear of loneliness. When will my child’s teeth come through?

First or ‘baby’ teeth have usually developed before your child is born and will start to come through at around 6 months. All 20 baby teeth should be through by the age of two-and-a-half. The first permanent ‘adult’ molars (back teeth) will appear at about 6 years, behind the baby teeth and before the first teeth start to fall out at about 6 to 7. The adult teeth will then replace the baby teeth. It is usually the lower front teeth that are lost first, followed by the upper front teeth shortly after. All adult teeth should be in place by the age of 13, except the wisdom teeth. These may come through at any time between 18 and 25 years of age.

These all encourage children to brush their teeth. The most important point is to use a small-headed toothbrush with soft nylon bristles suitable for the age of your child, as recommended by the British Dental Health Foundation. Thorough brushing for two minutes twice a day, particularly last thing at night, will help to prevent tooth decay.

ome years ago I had a large oil-on-can nvas vvas portrait of a ladyy,, obvioously of noble background d and,, in her h daayy – thee later 17centur y that is of th 17 – of conside nsiderable beauty. It was a ďŹ ne example of a typical set piece of time; she is holding, rather dramatically, a scantily clad child who clearly wants to plaay with a small dog, and all are within swathes of luxurious drapes. In a well-preser ved condition and in its original car ved wood and giltt ffrrame, it was not long beffor ore it caught the eye of someone who recognises a good picture. A deal was struck and the picture was delivered and hung in a place just made ffor or it. it And so began one of those great f riendships that grow ffrrom common interests,, although alt this buyer had enjoyed a ffeew more interests than I,, and I thought mine were varied enough. The customer and later to become fr f riend was Laszlo Groff, a beguiling beguil Hungarian who arrived in England in 1956 and without any English ffound ound employment ďŹ rst as a cook and then as a steel worker in an iron ffoundr oundr y, then th into the mine as an explosives expert. Next came a spell as a furniture maker ffor or Messrs Gomme in High Wycombe working on their famous ‘G Plan’ l ’ range, beffor ore turning his hand to running his own chicken farm. Settling down to become a qualiďŹ ed accountant Laszlo then went to O xfford to receive a degree with honours in histor y and has just completed his 8th

tour of Transyylvania lecturing on his favourite subject, ject,, the histor y of cartograph hyy. In this ďŹ eld Laszlo is one of the leading authorities on ancient maps with a collection envied by museums and connoisseurs all over the world. In the ďŹ eld of music he is a keen jazz bu and has been in the audience on several occasions when I’ve been plaaying, both with a small group and with the Sticky Wicket Big Band Drum Spectacular which we put on at The Stables in Wav a enden,

the jazz Mecca established by the late and much lamented John Dankworth and his still-singing wiffee the th fabulous Cleo Lane. So time spent with Laszlo is never silent and while visiting him last year I noticed and remarked on ttw wo contemporar y paintings hanging in the same room as the lady with the child and dog. They had an instant appeal in the colourful and atmospheric representation of rural Hungar y, ful fu l of light and shadows. Zoltan explained that the

Impressionist movement had and still has an important inuence in Hungar y and a leading exponent is the artist Zoltan Grof – no relation – who painted the ttw wo I was admiring. Zoltan’’s technique of using enamel-oil,, give his paintings the power of colour achieved by traditional oils,, with the luminescence of light and shade created by the modern medium of lacenamel. Zolton developed his skills and love of the medium as a student. The impressionist traditions of the famous Hungarian Nagyban b nya School which was ffounded ounded as an artist ’s colony in 1896 by Simon Hollosyy, was wa the spark f rom which Zoltan developed his passion and skills to produce the vibrant and atmospheric paintings. In 2001 Zoltan was commissioned to create 24 large scale pictures for for UNESCO, each commemorating the cities, towns and villages given World UNESCO status. His paintings are in numerous private collections in Hungar y and abroad. At the time of writing we are holding an exhibition of Zoltan an’’s work in the grand Bedffor ord Room at Woburn Abbey, the th ďŹ rst we hope of many. We all meet fascinating people ffrrom time to time but there can be ffeew occupations like mine where you have the opportunittyy to learn just how fascinating they really are and how they act as catalysts ffor or other people with var ying talents in such disparate ďŹ elds.

n the early 1900’s Christmas was a huge event and preparations began many weeks beforehand as so much had to be done. The vast array of oven ready foods we find on the supermarket shelves today just didn’t exist so all families had to make their own specialities. here can be few greater enthusiasts for The Chilterns than Brian Bennett, an oil painter who has made the local landscape his special subject for many decades. In the 1950’s, Brian joined the staff of Berkhamsted School and as Head of Art soon realised that the Chiltern countryside was an ideal setting for the landscape painter. In his excellent book ‘A Painter’s Year’ he says, “The more I explored the more I realised that here and hereabouts was all that a landscape painter would ever need. For if a painting is to work well I believe it is important to know the place as intimately as possible – not just to see it, but to feel it. The landscape should in a way come through the boots! And it’s all here, within a relatively small compass. With deep woods and valleys, high grassy hills and distant views, a multitude of wild flowers together with all the birds and animals usually to be found in this southern part of England . . “ Wearing boots and an old hat on which he wipes his painting knife between colours, Brian prefers to work on site between the Dunstable Downs and the Thames. His paintings from the escarpment overlooking the Vale of Aylesbury often show contrasting aspects of the same scene with distant views of the Vale appearing through a worm’s-eye view of wildflowers. As he points out in his book, working this way is not always straightforward: “Like all landscape painters, I suffer desperately from wind. And the top of the Chiltern escarpment, a couple of hundred feet above the plain below, and facing into the strongly prevailing south westerlies is one of the best places I know for artistic masochism. Even when the easel is sunk firmly into the ground the vibrating canvas is clearly eager to fly away, and my painting arm is far from

steady; succeeding gusts clutch at it, while a sudden lull in the gale producing an involuntary lurch forward can prove equally disastrous. My hat, although weighted down with the multi-coloured paint scrapings of previous endeavours, is far from being a fixture. The views are only too literally breathtaking while the brain is increasingly numbed . . . and at the end of an hour or so of this self-inflicted torture even the most dedicated painter is forced to give in and seek shelter and a quieter life elsewhere.” Brian Bennett’s oil paintings are in a very distinctive style and have attracted a large local following as well as featuring in collections worldwide. His work has been shown in exhibitions of many national painting societies and, as a past President of the Royal Institute of Oil Painters he was made a Fellow of the Institute in 1996 in recognition of the importance of his contribution to its work. For many years, he has held solo exhibitions at The Hawker Gallery in Old Amersham. This year’s collection will be shown at the beginning of November, with subjects drawn from many parts of the Chilterns. However this year a number of paintings have a special focus. Like many, Brian is appalled at the prospect of the proposed high-speed rail route and its consequences for the very special area to which he has dedicated most of his life as a painter. This collection will include paintings along the proposed route to remind us all of what we might lose. 4 x medium sized skate wings 1 large lemon 1 tblsp capers 1 large purple cauliflower 1 small white cauliflower 1 small romanesco Approx 50g butter and olive oil for frying 200 ml milk 100 ml double cream 1 large bag washed baby spinach 100 ml cider vinegar 1pinch caster sugar

into boiling salted water take out whilst still a little crunchy. 3. Pop them into the cider vinegar and caster sugar mix. 4. Wilt the spinach in a hot pan with a little butter, season. 5. Pan fry the skate wings till golden brown both sides, finish in a hot oven if necessary. 6. Place the capers, chopped lemon segments and juice with the butter from the skate pan.

Method

To serve

1. Cut the purple cauliflower into florets, place in a pan with the milk and cream cook and cook until soft. Liquidize until smooth, season to taste. 2. Place the white cauliflower florets and romanesco florets

7. Spread a little purple puree onto each plate. 8. Scatter a few pickled florets on each followed by a small mound of the spinach, finish with a skate wing per portion topped with a little of the golden citrus and caper butter.
