Ivan Cane's presentation concerns an intriguing but infrequently publicised waterway that prides itself in being the only locked canal in Norfolk. He will cover its early history, the working days and subsequent decline of the NW&DC. Restoration of the Canal began some 50 years ago when a certain David Hutchings became involved. However, the main thrust of its rejuvenation began with new ownership some 10 years ago. Ivan will conclude

with a review of the canal’s future prospects. Ivan was an educationalist, retiring as Deputy Headmaster of the High School in Fakenham. Whilst at the School, he took groups of pupils on canal camping holidays in traditional working boats. He is now a Wilderness Boat owner. ROW2RECOVERY BOAT ON DISPLAY IN UK FOR FIRST TIME AT THE RIVER & ROWING MUSEUM WORDS BY JACK HICKMOTT arly this year, four amputee and two able bodied servicemen completed an epic journey, rowing 3,000 miles across the Atlantic from the coast of Africa to Barbados to raise money for charities in a campaign called Row2Recovery.The River & Rowing Museum, Henley on Thames, will be exhibiting the boat that was used to cross the ocean and will tell the story of the crew’s remarkable story. The extraordinary mission to take part in the toughest rowing race in the world, The Talisker Whiskey Atlantic Challenge - generated nearly £1m for three military charities. On their epic 51-day, 3,000-mile voyage across the Atlantic the crew were faced with a multitude of heart-breaking obstacles ranging from horrific weather to unfortunate technological mishaps ultimately causing irreparable damage to their boat. In defiance of the Challenge’s disqualification rules the crew where given repair assistance and continued their journey to complete the race. The incredible morale and

determination demonstrated by the crew generated a huge amount of support for their causes and continues to do so. However, with just under £100,000 still needed for them to reach their goal of £1m, the team have decided to exhibit their remarkable vessel to the public for the first time. The boat provides a unique opportunity to tell the dramatic story of the crossing and of the incredible successes those with disabilities can achieve. Paddy Nicoll, Chairman of the Board of Trustees said: “This Row2Recovery exhibition perfectly encapsulates the spirit of the Paralympics. It’s an honour for us to tell the story of this amazing Row across the Atlantic by these brave amputee servicemen. I think the public will be captivated.” Members of the public are encouraged to attend the museum while the boat is on display to learn more about the voyage and to visit www.row2recovery.com to donate to the supported charities. The River & Rowing Museum – with education at its core – will host the boat (6 October 2012 – January 2013)

with a series of interpretive panels, objects that were used for the incredible journey across the Atlantic and the boat itself. EVENT

They took 96 days. • Lieutenant Will Dixon was hit in the head by a flying fish • The boat’s solar panels powered the navigation and communications systems • The crew would often row naked to reduce friction burns.

K

op Hill Climb promised it was gearing up for the best revival yet, and it delivered that promise last weekend, when over 400 cars and motorcycles took on the historic hill in Princes Risborough enthralling 14,000 spectators. The Kop Hill Climb has quickly established itself as a ‘must attend’ revival of an iconic motorsport event from the last century. The attendance of so many spectators to once again witness exceptional machinery take to the hill was a fitting tribute to exploits of those early pioneering racers. Saturday’s perfect weather added the final ingredient to a heady cocktail of activities and attractions, ensuring the day will be remembered for years to come by an incredible 10,000 spectators. On the hill Lord Howe declared the event opened at 10am, waving the Countess Howe off in the splendid 1914 Sunbeam TT racer quickly followed by an exciting collection of historic motorcycles and cars. By 13:15 the announcers, bands, and crowds fell silent as all eyes turned skyward for a show

stopping BBMF Spitfire flypast. In the paddock there were a further 200 vintage, veteran and classic vehicles on display, a superb trade village featuring both motor and non-motoring related goods and services. There were also many new additions to the paddock activities in 2012 including a very competitive Soapbox Challenge, the hugely popular Chevrolet sponsored Racing Bug, a sensational band line-up, a beer tent featuring the events very own Kop Hill Climb Ale and for those keen for an Earls Court Motor show experience Principal event Sponsor Chevrolet along with Stratstone Aston Martin, BMW, Mercedes Benz, Citroen, and Alfa Romeo brought along an array of modern automotive eye-candy. Sunday started overcast but dry providing both the motorcycles and many of the open topped Edwardian motorcars one more opportunity to take to a dry hill. By 11am the rain had settled in but 4,000 petrol heads braved the elements to see the hill runs and paddock activities and were rewarded with

a memorable day. This year saw a record number of entrants including many vehicles not previously seen at Kop Hill. It meant numbers had to be capped so be sure to book early for 2013. Some vehicle highlights included the 1911 SCAT Type C Racer, 1920 Hispano Suiza H6B, 1921 Rolls Royce Silver Ghost, 1925 Bugatti Type 30, 1933 Aston Martin Le Mans,1935 Maserati 4CS and 1935 Brough Superior 8 cylinder. The Soapbox Challenge, held in the paddock, sponsored by Chevrolet, designed and run by Modena of High Wycombe proved a huge success. The Challenge was open to teams of 10 to17 year olds to design, build and race a soapbox cart. With 16 teams battling it out over the weekend to be the overall winner the title went to The Snails from Stewkley Scouts, who also scooped second place with The

SAPs. Third place went to Prestwood Scouts’ Lean Mean Green Machine. The enthusiasm was such that many youngsters were clamouring to sign up for 2013. The winners will enjoy a visit to the RML race team headquarters, talking to the engineers about development and design courtesy of Chevrolet UK. The organisers are hoping to match, if not exceed, the £41,000 figure raised for local charities in 2011. In all, the 2012 Kop Hill Climb Revival was a phenomenal success, with Climb-goers and entrants alike excitedly talking about next year’s event. DEAD? MUCH HAS BEEN MADE OF THE ‘DEATH OF BOOKS’ BUT IS IT REALLY TRUE? e hear that the digital age has come, that electronic devices are the way forward , we’re all on Twitter and Facebook, blogging and communicating in ways unthinkable even a decade ago. Books have had their first format change since the invention of printing in the 15th century. But are we in danger of holding the funeral before the body is dead? The rise of Literary Festivals and the appetite for meeting authors and finding out the true meaning of their work is evidence to the contrary. All over the country festivals of words and books are on the rise. At a recent Booksellers conference delegates were told that 15% of all adult fiction book sales were digital but the counter to that is that 85% were hard copy or pbooks as they are now called! While devices have their place – on trains, holidays etc the physical book still has certain advantages - no battery to charge, no expensive device to purchase, you can easily lend it to a friend or give it as a gift. Only rarely is there a mention that the total number of books sold is rising slightly, even in these hard times. The big change in buying patterns is between the different ways of obtaining a physical book – in a supermarket, online or in a ‘real’ bookshop. What none of these can offer is the opportunity to met the author, hear them speak about the book, its inspirations and challenges, its characters and have it come to life for you. The rise of festivals is evidence of the public’s desire to have experiences. The Victorians would have regarded anything smacking of commerce as an insult to the noble art of literature. Yet Dickens gave public readings. Unlike Katie Price, he stopped short of setting up a signing in his local market, but local booksellers did make sure they had extra copies on hand in case demand should surge! Hay is only 15 years old and at the last count attracted 30,000 visitors flocking into its marquees in early June. Cheltenham and Edinburgh, Oxford and Southwold all hold very popular Festivals. Literary Festivals are most often rooted in the local community. They reflect the full breadth of interests and subjects you would expect from any group of widely differing ages, pastimes and tastes. Our local Festival, held in Chorleywood, on the edge of the

Chiltern Hills, in November each year, is no exception. In its seventh year it has attracted such big names as Ben Elton, Nick Robinson, Nigella Lawson, Howard Jacobson and John Suchet as well as a host of other authors. Each year it holds an event for ‘rising stars’, authors not well known but looking for a platform to get their work in the public eye. Previous festivals have attracted Sir Ranulph Fiennes, Howard Jacobson, Carol Ann Duffy, Jodi Picoult, Max Hastings and BBC’s Any Questions. In a short time this festival has established itself as a favourite with audiences and authors alike not least for its informal style and infectious enthusiasm. If you have never been to a festival before, or if you are an old hand, this Festival, brings the stars of the literary world close to home and is well worth a visit. s we continue to be encouraged to ‘buy British’ and see Marco Pierre-White on TV selecting his fruit and veg from a market stall, it’s reassuring to know we can also do the same locally. Farm shops and farmers’ markets are ever popular, as is Beechwood Fine Foods, based in the market town of Tring in Hertfordshire. However, Beechwood goes one-step further with its commitment to sourcing local produce, with many homemade products served in its welcoming Fairtrade café alongside a fresh deli counter; including traditional raised pork pies, cured meats and hams and specialist British cheeses. Frustrated by the lack of locally sourced good quality produce, husband and wife team, Toby and Sarah Murray, started the business in June 2010 with a personal desire to create a farm 26

shop in town, combining their love of home baking with first-rate coffee. “Sarah and I felt there was an opportunity for us to develop something a little different within Tring, based upon our own needs,” explains Toby. “We wanted to create a unique and friendly atmosphere for those people looking for more than just the off-the-shelf, pre-packaged and mass-produced!” Earlier this year the shop was awarded top marks in the Food Hygiene Rating Scheme - a Food Standards Agency/Local Authority partnership initiative designed to assist consumers decide where to eat out and shop for food with good food hygiene standards. Owners Toby and Sarah Murray proudly display their certificate in the shop window. Over the past two years, the shop has grown to be an integral part of the community, with

Toby and Sarah attending and taking part in events such as the Herts County Show and Tring Fairtrade Fortnight as well as acting as official ticket agents for a number of local organisations, including the Pendley Court Theatre and Tring Carnival. 2011 saw the launch of the shop’s website and, shortly after, the introduction of online ordering. The choice of delicious cakes is extensive and includes traditional favourites, such Victoria Sandwich and the more exotic Black Forest Sandwich combining cherries and chocolate. n 1997, 55-year-old John Grimes of Berkhamsted, Hertfordshire, was recovering from chronic fatigue syndrome following Pericarditis. DOWN BY THE RIVERSIDE A GOLDEN ERA CAPTURED AT THE RIVER & ROWING MUSEUM WORDS BY JACK HICKMOTT ravel from Henley-on-Thames to Paddington Station and hop on the underground and you will find yourself bombarded with a barrage of brightly coloured billboards, posters and adverts – quite often void of any style or intelligence! However, if you head down to the River & Rowing Museum from 20 October you will see how it should be done. “Stuck Up” is a new exhibition that sees a striking selection of Thames transport posters brought together from the early 20th century - the golden age of British poster art. The new exhibition celebrates the masterful eye of Frank Pick (1878 – 1941) who became publicity officer for London Underground in 1908 and was instrumental in the evolution of its eye-catching brand design. The exhibition also captures a time when the Thames banks were a thriving social hub – during the early 20th century there was a surge in interest in the River Thames as a leisure destination. With most Londoners of that era already relying on the underground to get to work, Pick realised the only way to increase passenger numbers was to persuade Londoners to use the system more during their leisure time, taking advantage of the new trend towards punting, swimming, rowing and rambling on the Thames – and he developed an ingenious way of doing so. To promote London’s parks, museums, suburban beauty spots and historic houses and encourage more London Underground usage, Pick wanted to use colourful lithographic posters in the same way as Paris in the 1890s (Paris has revolutionised commercial advertising with artists such as Toulouse-Lautrec, Chéret and

this time, little thought was given to the design of poster marketing materials and, after

becoming dissatisfied with the quality of design, Pick soon decided that instead of letting the printers hire commercial artists, he would commission young and emerging artists himself. By the 1920s this approach to advertising had taken off and Britain was experiencing a golden era in artistic and stylistic quality. During the 1920s and 1930s bold and striking poster designs appeared all over the London Underground with artists drawing inspiration from avant-garde art movements such as Cubism and Futurism. The use of these styles introduced elements of modern art to a much wider audience. Thanks to Pick, in the 1920s and 1930s designing a poster for London Transport became seen as an honour for both established and emerging artists. One of the earliest and most notable long running collaborations was with Edward McKnight Kauffer (1890 – 1954) who introduced many of the general London public to modern art through the influence of the cubist movement on his work. Other well known artists who accepted commissions included Man Ray (1890 – 1977) and Graham Sutherland (1903 – 1980). ‘Stuck Up!’ at the River & Rowing Museum was inspired by the generous donation of four duplicate Thames and rowing posters from the London Transport Museum and includes a number o0f items kindly loaned from their permanent collection. “Stuck Up” will run from 20 October – February 2013 Tickets are £8 for adults and £6 for children and provide free access to the museum for a year. I AM GOING TO GO OVER SOME IMPLANT QUESTIONS AGAIN THIS TIME AS WE HAVE HAD A FEW QUERIES ABOUT THEM RECENTLY. Q. WHAT ARE DENTAL IMPLANTS, ARE THEY SCREWED INTO YOUR JAW OR YOUR TOOTH ROOTS?

I am going to concentrate this month’s edition on Dental Implants and try and give you basic understanding on dentistry’s exciting field. I have touched on the subject in previous editorials but am happy to go over it again as it’s an exciting field. Dental Implant is a titanium metal rod which is placed into the jaw bone. They are used to replace missing teeth and they can be used to support one or more false teeth. Research indicates that dental implants biocompatible surface actually stimulates the required fusion with the bone. Once that has been achieved, the crown, bridge or whole tooth replacement can be fixed to the implant or implants to feel and function like natural teeth. Implants are a well-established, tried and tested treatment. Over 95% of modern implants should last for many years with the right care. More people than ever are choosing dental implants as the preferred tooth replacement therapy. That’s because people are discovering that implants not only feel secure and stable, allowing them to speak and eat clearly, but

they look natural as well. And there’s another bonus- because they help prevent bone loss, implants can help to maintain a more youthful appearance! Q. CAN IMPLANTS ALWAYS BE USED TO REPLACE MISSING TEETH?

Regardless of the cause of tooth loss, dental implants can be a simple, proven lasting solution for restoring teeth. After a thorough examination of your medical history, your dentist can advise you whether dental implants may be the right solution for you. There is no upper age limit. Nevertheless, it does depend on the condition of the bone in your jaw. Your dentist will arrange for a number of special tests to find out the amount of bone still there. If there is not enough, it may be possible for the bone to be built up by grafting bone into the area first. This will be an extra procedure prior to placing the implant. Also, heavy alcohol consumption, smoking, diabetes or other clinical conditions may interfere with an implants integration process and its ultimate long term success. Patients who grind their teeth at night must also undertake a careful evaluation with their dentist.

The big question! Placing the implant means a small operation and can be performed using a simple local anaesthetic, and sometimes with sedation if you are nervous. Sometimes the dentist may need to use general anaesthetic for complex cases. You will not feel any pain during the procedure but you may feel discomfort during the week after the surgery.

Under normal circumstances, the swelling and mild pain which may occur often disappear after a few days. HOW LONG DOES THE TREATMENT TAKE?

Your dentist will be able to give you a rough timetable before the treatment starts but usually the permanent teeth are fitted 3-6 months after the implants are put in. In a minority of cases, it may take up to a year for the implant to fully integrate with the bone.

Unfortunately, yes. However, in many situations the cost is only a little more than the cost of more conventional treatment with crowns and bridges. Over the longer term, implants are usually a more cost effective and satisfactory option. There are advantages to having an implant. An implant to replace a single tooth avoids the need to cut down teeth either side for crowns to support a bridge. Implants can also help anchor a denture better so they do not move around. However, it is best to discuss the different treatment options with your dentist and decide on what suits you best and fits with your budget.

AS EVERYTHING PREPARES TO GO PINK FOR OCTOBER BREAST CANCER AWARENESS MONTH, THE BREAST CANCER CARE CHARITY TALKS ABOUT PINK FRIDAYS AND OTHER EVENTS PLANNED, AND HOW THERE WILL BE A PARTICULAR FOCUS ON SECONDARY BREAST CANCERS AND YOUNGER WOMEN WITH THE DISEASE.

E

very year in the UK, 50,000 people, including about 300 men, are diagnosed with breast cancer, making it our most common form of cancer. "Every 10 minutes someone is diagnosed in the UK," says Geri Halliwell, who has been a patron for charity Breast Cancer Care for 12 years. The Spice Girl is throwing her weight behind the annual awareness month, which raises money for breast cancer charities as well as helping spread awareness of the disease. With the pink ribbon as its emblem, the month has come to mean a lot to people who have breast cancer, and their family and friends. "Dress pink, eat pink, party pink and think pink," says Halliwell. But as well as raising money with a pink fashion show or tea party, it's also a time to acquaint yourself with some facts. Though breast cancer is common, survival rates are better than ever. Around 11,500 die from the disease each year. But since the Eighties, breast cancer death rates have fallen by more than a third, and currently 82% of people survive beyond five years. This is testament to the effectiveness of campaigns such as Breast Cancer Awareness Month. Increased awareness means people are being diagnosed earlier, plus advancements in treatments have helped.

However, director of services at Breast Cancer Care, Diana Jupp, points out that UK survival rates lag behind those of other European countries, because UK women are still more likely to be later seeing a doctor about changes in their breast. "Presenting late impacts on the outcome of their treatment, so it's really essential that we get the message across so women get themselves checked quickly," stresses Jupp. "Nine times out of 10 it isn't cancer, but it's always best to get it checked." So, despite the success of Breast Cancer Awareness Month so far, there's still a lot of work to be done. Here's a look at the key issues surrounding breast cancer today... COMPLEX CAUSES If you thought breast cancer only occurred in people with a family history of the disease, think again - it can happen to anyone, male or female. While scientists have now identified genes which predispose people to breast cancer (families with high rates can be screened), and having more than one close relative who've been diagnosed may increase your own risk, charities point out that less than 10% of cases will run in families. More often than not, the exact reasons why one person develops cancer and another doesn't can't be pinpointed, but research has

health beauty found evidence that certain factors may increase the likelihood. One recent study found that a poor diet early in life may be a factor, and obesity in adulthood is also thought to be a potential link. Those who drink more alcohol may also be at higher risk, and Hormone Replacement Therapy (HRT) and how much oestrogen you've been exposed to over your lifetime, are also cited. DIANA JUPP POINTS OUT THAT RESEARCH IS STILL ONGOING. "We're still not that much nearer to understanding what causes it," she says. However, age is one of the biggest known risk factors, with some 80% of breast cancers occurring in women over the age of 50. Still, that means around 20% of diagnoses are for people under 50, which amounts to around 9000 people every year. THE SUPPORT NETWORK Breast cancer isn't just a life or death issue - for the majority of people diagnosed, a key challenge is coping with the disease, and a lot of charity funding goes towards helping with this. After the initial shock of being diagnosed, a person will need to adapt to living with cancer. On top of dealing with the illness and, often very draining, treatment, normal life - and all the stresses and commitments that come with it - goes on. LUCKILY, HELP IS OUT THERE. Friends and family often offer to help with childcare, and this can be a real lifeline. Rachel Rawson, Senior Clinical Nurse Specialist at Breast Cancer Care, says: "It's always a good idea to take up offers of help, and look into other childcare options in your area." The charity runs a free helpline, which people can call at any time for support and advice on any issues relating to their illness whether that be worries about surgery or practical dilemmas, such as how to tell their children or employers. "Money can be a big worry. We spend a lot of time signposting people to the relevant avenues for support, whether that's transport to hospital or income support," says Rawson. There are also specialist support forums, including for the younger women who have breast cancer. Clinical Nurse Specialist Jackie Harris points out that because younger women are the minority of breast cancer patients, they often find it hard to meet anyone of a similar age going through the same thing. "The Younger Women's Forums bring these women together from all around the country," she says. "They gain so much support from each other, share experiences, and remain firm friends afterwards." LIVING WITH SECONDARIES Breast Cancer Care is using this year's awareness month to highlight secondary breast cancer, with Secondary Breast Cancer Awareness Day taking place on October 13. This is when breast cancer spreads to other parts of the body commonly lymph nodes, lungs, liver, bones and brain. Around 36,000 women and men are currently living with secondary breast cancer, and although it can be treated, it can't be cured. But Jupp points out that if a person has a secondary breast cancer in the bones, for example, they could still live with it for another 10 years. "But you've got a ticking clock over you and you don't know how long you've got," she warns. The charity is currently fighting for more support for people living with secondary breast cancer. They have identified a need for more access to specialist nurses, information and palliative care.

HOW DO I CHECK MY BREASTS? Lumps and bumps don't automatically mean cancer, but if you get into the habit of checking your breasts regularly, you will know what's normal for you and be able to spot changes. All parts of the breasts should be checked, including the armpits and up to the collarbone. Changes you should look out for include: Changes in size or shape. Changes in skin texture such as puckering or dimpling. Inverted nipple. A lump or thickening of breast tissue. Redness or a rash on the skin or around the nipple. Discharge from one or both nipples. Constant pain in the breast or armpit. Swelling in the armpit or around the collarbone. Spotting these signs may not mean you have cancer, but seeing your GP quickly is crucial. He or she will be able to put your mind at rest, or refer you for further tests if needed. t is not every day Hazlemere Window Company gets an order from their local Conservative MP to build a bespoke brick built orangery onto his High Wycombe Constituency home. hen asked to picture a quintessentially English home, the image that comes to mind is that of a traditional thatched property in beautiful surroundings. HOME OWNERS BEWARE PLANNING FOR GLASS EXTENSIONS IS YET TO BE RELAXED

T

he Coalition Government recently announced proposals to relax planning for home improvements in an attempt to boost the economy. However, these have met with much opposition from groups fearing the relaxing of planning laws could lead to serious disputes between neighbours. As the law stands at present, as long as a property still has sufficient permitted developments rights intact and all existing building and planning laws are complied with as they stand, then most home owners can build a single storey extension or conservatory up to a projection of 3m if the property is semi-detached and up to 4m if detached. However, even now neighbouring properties have “rights to light” and some councils enforce a 45 degree rule, whilst others a 60 degree rule, in that no structure can go out further than a diagonal line from the neighbours nearest window i.e. line of sight. In addition there are restrictions on the height that single storey extensions can be built to. Since 1st October 2010, when stricter Building Regulations came into force, adding or replacing an existing glass extension like a conservatory or orangery in England or Wales, needs careful research to ensure that what is added is permitted development. From a long term investment/hassle free point of view, it is important that any new double glazed structure fully complies with the planning rules and Building Regulations in force at the time. Failure to do so can have significant consequences if and when the property the glass extension is connected is sold. It is the responsibility of the purchasers Solicitors to ensure that any conservatory, extension, orangery or replacement windows and doors, fully comply with the rules that were in force at the time these home improvements were made. Erecting any type of extension, be it a glazed structure or not,

which does not comply with all the rules is rather like the man in the bible Jesus talked about who built his house upon the sand, so as soon as the waves, wind and rain came it disappeared in the storm. Whereas in the past, some property owners have wrongly “got away” with breaking the law, planning enforcement notices nowadays are more common. It is worth be aware that both the Building Regulations and planning rules in England and Wales are now much stricter since the need for all new structures to be more thermally efficient, to

help cut carbon emissions. It clearly states on the Government’s planning portal website – as “With all building work, the owner of the property (or land) in question is ultimately responsible for complying with the relevant planning rules and building regulations.” This public information Government website www.planningportal.gov.uk clearly sets out the issues each householder needs to take into account before ordering a new double glazed conservatory or orangery, or indeed replacing an existing structure, because the

rules make it quite clear that any changes are made at all (i.e. removing external doors between the house and glass structure, changing the width, depth, height, design etc.), it is likely that planning and/or Building Regulations will be required. Double glazed conservatories and some orangeries that have sufficiently double glazed roofs and walls are normally exempt from building regulations if: • They are built at ground level and are less than 30 square metres in floor area. • The conservatory is separated from the house by external quality walls, doors or windows. • There is an independent heating system with separate temperature and on/off controls. • Glazing and any fixed electrical installations comply with the applicable building regulations requirements The Government’s planning portal also advises home owners not to construct conservatories where they will restrict ladder access to windows serving rooms in roof or loft conversions, particularly if any of the windows are intended to help escape or rescue if there is a fire. It is worth being aware that any new structural opening between the conservatory and the existing house will require building regulations approval, even if the conservatory itself is an exempt structure. Glass extensions like double glazed conservatories and orangeries can be built if sufficient Permitted Development rights are intact, but even then they may still need to comply with all planning rules and Building Regulations. with nutmeg cream

AUTUMN IS THE SEASON FOR SQUASHES AND PUMPKINS IN ALL SHAPES AND SIZES AND THESE ARE NOW VERY PLENTIFUL. BE BRAVE AND EXPERIMENT - MOST ONLY NEED HALVING, REMOVING THE SEEDS AND LOOSE FIBRES SEASONING ADDED AND A SPLASH OF OIL READY TO ROAST TO PROVIDE AN ALTERNATIVE VEGETABLE THAT IS COLOURFUL AND NUTRITIOUS AS WELL AS DELICIOUS. AT THE RESTAURANT WE TRANSFORM THE SPECTACULAR IRON BARK PUMPKIN INTO THIS VELVETY SOUP FINISHED WITH A SPICED NUTMEG CREAM.

Ingredients Soup 1 medium pumpkin 1 clove of garlic chopped A few sprigs of thyme Salt and pepper 1.5 litres chicken or vegetable stock – warmed 70 mil double cream 200 ml orange juice 25 g butter Spiced nutmeg cream 100 ml double cream or crème fraiche Freshly grated nutmeg Sage leaves or coriander cress to garnish

Method 1. Split the pumpkin in half – scrap out the loose fibre and seeds from the middle. 2. Cut into large chunks leaving the skin on. Rub with oil, salt and pepper, garlic and thyme place on a tray.

3. Roast in a hot oven 200 degrees C/400 degrees F/ Gas Mark 6 for 40 -45 minutes depending on size. Test with a small knife to see if the pumpkin is nicely roasted and soft. 4. Scoop out the hot flesh from the skin into a food processor and then whizz with the warm stock and the orange juice until smooth. Add the cream and the butter to finish. 5. Pass through a sieve into a saucepan and then warm gently – season to taste. 6. Your delicious soup is then ready to serve – pour into warmed bowls. To serve At the restaurant we place the soup in a cream whipper to give it aeration and a very light texture but this soup will taste just as good served as it is. Whip the double cream and add a little freshly grated nutmeg. Pipe or spoon a little on top of the warm soup and finish with grated nutmeg, sage leaf or coriander leaves.
