As spring awakens the gardens into a riot of beautiful hues, the English Heritage team looking after Audley End are busy getting ready for a season of impressive events – we take a closer look at a true English gem. e name Chipping Ongar has such a lovely ring to it. It feels quaint, very English, rural and tranquil. A small market town within the civil parish of Ongar in Epping Forest, conveniently located for various regions covered within this magazine’s, readership remit. Only 5 miles from Epping and 6 miles from Brentwood, a pleasant ride during the summer months and when looking for somewhere else to visit, a worthwhile visit can be made to Chipping Ongar – we take a look at a hidden gem in Essex. At last – it’s sunny outside. Summer seems to have got lost this year with hints of fine days, only to be followed with rain and freezing cold weather. So before we relax and throw open our windows to let in that much wanted sunshine, warmth and fresh air which will fill our homes, it is worth just being a little cautious. Always be aware of home security and it is worth shutting your windows, even if just popping out for a short time. Somehow and during the summer, more people are knocking at the door offering services such as gardening, paving, decorating and DIY - a few tips which may seem obvious could make the difference between being secure and being vulnerable. Chigwell is an incredibly beautiful and wealthy area. Originally, the ancient parish constituted three areas: a) e village of Chigwell, (nearest village to the City of London) which was a main settlement and included the parish church. b) Chigwell Row, near Hainault Forest, and iii) Buckhurst Hill. Chigwell and Chigwell Row formed the civil parish of Chigwell from 1895 until 1933. e parish then merged with the Urban Districts of Buckhurst Hill and Loughton to form the new Urban District of Chigwell. Chigwell has many charms, although essentially a wealthy and beautiful area, it is also genteel and quiet – we take a closer look at the charm of Chigwell. C

opped Hall is a truly outstanding estate with an equally fascinating history. Although the history goes back over a thousand years, I personally feel the most interesting period is the Tudor era. Although Henry VIII never actually lived there, Mary Tudor was under house arrest and secretly practised Catholicism. e mansion then passed to Elizabeth I when she became Queen who then in turn, passed it to Sir omas Heneage who begun the Elizabethan rebuild of the original mansion. In 1594 he married his second wife, Mary Countess of Southampton. Historical reference now turns to literary highlight. She was the mother of Henry, ‘Shakespeare’s Southampton’ and it is very exciting, that William Shakespeare’s A Midsummer Night’s Dream was supposedly written as entertainment for this wedding. Also that Copped Hall was the venue for the play’s first performance in the Long Gallery, in our very own Essex, backyard! Copped Hall then passed to the following owners: Lionel Cranfield (he filled the house with treasures and cultivated the garden) then down to his sons, and then grandson, Charles Sackville, who in turn, sold to Sir omas Webster in 1701. From 1701 to 1738 again and unfortunately, the mansion became dilapidated and was sold to Edward Conyers in 1739. His son, John Conyers, demolished the building in 1752 and began the substantial task of rebuilding it to a splendid Georgian mansion from 1753-1758. e Conyers were an important, influential family and had strong links with the medieval parish church of All Saints’ Church, Epping Upland. Edward Conyers was the vicar of All Saints’ and in 1780 a selection of silver was given to the church by the Conyers family. In 1768, Lady Henrietta (wife of John Conyers) gave a silver gilt flagon. e church was also given a silver paten and salver (circa 1739) from the private chapel at

Copped Hall together with books and furniture for the communion table and pulpit. ese precious items are no longer in use but securely stored in the bank. Also John Conyers arranged for the clock to be installed in All Saints’. Copped Hall remained in the Conyers family until Henry Conyers died in 1813. His family still lived there until 1869 when officially, the Conyers family ended their association with Copped Hall and sold it to George Wythes. In the 1890s, the Wythes family extended the mansion and built an elaborate Italianate garden with terraces, sculpture, temples and summer houses. Although, the gardens are still beautiful and with immaculate views, in order to really see how exquisite these gardens were at this time, you would need to look at various books, leaflets or reference material. I was very kindly taken to the walled garden and from a distance, saw the lake. ere is no doubt that the renovations so far, are authentic and have absolute respect for the original design and layout. Like the Conyers family, the Wythes family too were involved with All Saints’ Church. From April 1912 to March 1913, e Wythes family (together with the Marter family) donated funds to All Saints’ for land and a vicarage. Unfortunately, on the 5th May, 1917 a terrible fire broke out which destroyed most of the eighteenth century hall. Followed by periods of vandalism the building potentially, would have had a bleak future, however the Copped Hall Trust managed to procure the building and to pursue their objective to restore the interior of the 18th century mansion to its original 1750s grandeur and splendour. Copped Hall has a full diary for guided tours of the mansion and gardens, educational and social events, study days and evening lectures n

A few tips which may seem obvious could make the difference between being secure and being vulnerable. A professional will always gain access, however let’s try and stop the opportunists: n Keep shrubs and bushes cut back, especially near a front door. n Are your doors locked? Remove the keys but keep in a safe

and accessible place in case of fire. Invest in a chain and spy hole. Always check before opening the door. It’s easier to shake your head at a window than to be confronted by an unwanted stranger at an open door. n Take photographs of your valuables as a record. n If you’re planning a holiday, ask a neighbour to keep an eye on

your home. Push letters through the letterbox. If you have papers delivered – don’t forget to cancel. n Light timers. Cheap and easy to use. If your house is being

watched, a light timer could make all the difference between your home appearing occupied or empty. Also seriously consider external lighting. n Burglar alarm system, preferably connected to the police. n Put away ladders or gardening equipment which could be

handy for the burglar. n Keep the garage locked.

Probably the most famous resident of Chipping Ongar is the 19th century missionary and explorer, David Livingstone. Dr. Livingstone is probably most famous for that renowned greeting when discovered by Sir Henry Morton Stanley, who was searching for the Scottish missionary in Central Africa. Upon their rendezvous Sir Stanley uttered those words: “Dr. Livingstone, I presume?” A plaque above the archway leading to the United Reformed Church commemorates David Livingstone’s residence.

Aside its aesthetic appeal, the area also has an interesting history. ere has been evidence of a Roman settlement. Originally the town was known as ‘Castle Ongar’ because of the remains of a Norman ‘Motte and Bailey’ built around the 11th or 12th century. e motte or mound has a base diameter of 70 metres and is surrounded by a wet ditch up to approximately 15 metres wide. e castle may have been built by Eustace II, Count of Boulogne in 1086 and it enjoyed royal patronage from Henry II in 1157 when the castle was owned by Richard de Lucy.

Chipping Ongar also has some famous literary connections. e author of ‘Twinkle Twinkle Little Star’, the popular English lullaby was written by Jane Taylor. e poem is written in couplets and has five stanzas. It was first published in 1806 and is sung to the tune of the French melody "Ah! vous dirai-je, Maman.” Jane Taylor died of breast cancer at the age of 40 and is buried in Ongar churchyard. e town is also featured in Will Self ’s, ‘e Book of Dave’. Q: Tell me about Coopersale Hall School. A: Coopersale Hall is an independent fee paying preparatory school for boys and girls from the ages of 2½ to 11. We aim to offer an excellent education throughout the age ranges, and feel we really excel as children move into our Year 3 and beyond. Q: How do parents find out more? A: We have Open Mornings in March and October each year, and we have a number of slots each week for parents to have individual school tours. higwell is an incredibly beautiful and wealthy area. Originally, the ancient parish constituted three areas: a) e village of Chigwell, (nearest village to the City of London) which was a main settlement and included the parish church. b) Chigwell Row, near Hainault Forest, and iii) Buckhurst Hill. Chigwell and Chigwell Row formed the civil parish of Chigwell from 1895 until 1933. e parish then merged with the Urban Districts of Buckhurst Hill and Loughton to form the new Urban District of Chigwell. Chigwell has many charms, although essentially a wealthy and beautiful area, it is also genteel and quiet. A certain amount of calm and tranquillity permeates the district, the environment and the quality of life enjoyed by the residents, whether high-fliers or families. Most properties are detached and many have their own character, style or unique charm. Chigwell, as an area, has property to suit all tastes – for those looking for captivating and old-fashioned character, there are exquisite and elegant cottages on pretty lanes. Alternatively, and for those with larger families or who need more space or room for the fleet of cars, the outdoor/indoor swimming pool and/or tennis court, are the palatial, rambling, unique mansions which are the area’s hallmark. Famed for the quality of the property and the famed owners, Chigwell’s residents are a core group intellectuals, creative, entrepreneurial and sporting celebrities. Other buildings still currently in use include Chigwell School which originates from 1629. Founded from a bequest by Samuel Harsnett, Archbishop of York some famous pupils include William Penn (who founded Pennsylvania) and actor Sir Ian Holm. Apparently it was whilst Penn was at Chigwell he had a 22

vision which inspired his conversion to Quakerism! Penn’s 17th century school room is still in use today, albeit as the school library. A centre of excellence educationally, where local children (and some from further a field) enjoy a first-class education. So with all these coaches, it is also hardly surprising to learn that the legendary highwayman, Dick Turpin also frequented the area, and that the King’s Head (Ye Olde Kings Head now Sheesh restaurant) was his favourite pub! Incredible to think that today, the same area is being used as an area of relaxation and to spend time with friends and family, yet is so richly entrenched with history and exciting activity. Who knows what plans and skulduggery were planned within these same walls, and what dubious activity took place under the same roof. And where we would now drive our BMWs, Mercedes and Mazdas along the high road, actually horses, carriages and coaches had made the same trek. Near to Chigwell is Hainault Forest Country Park which is part of the original Royal Forest of Essex. In 1851, Parliament allowed the area to be drained in order to convert the area to farmland. As a result, 100,000 trees were felled and it is now commonly thought that this event inspired the conversation movement. A local philathropist, Edward North Buxton in 1906 was a key leader in saving the remaining ancient woodland which is now referred to as Hainault Forest Country Park. ere’s something endearingly solid about Chigwell. It’s been there for a long time, has history, substance and style. Chigwell has been recorded in one form or another for centuries, is established and very much respected n

A Novel Word from Michelle WORDS: MICHELLE HARRIS

A

s a prolific wordsmith who writes professionally as a copywriter and journalist, who also devises and formulates plans and strategies as a marketer; when not writing… in my spare time, I have been writing a novel! e whole process has merited various trips to an osteopath to straighten out a back that has been hunched up for too long, staring at a computer which has acted as my Windows 7 to the World and dry eye because I probably forgot to blink. So after months of developing fictitious characters, a plot was constructed from the recesses of my imagination. A carefully weaved Bayeux Tapestry of fiction from sample strands of ideas, literary manipulations and fantasy, has now, at last, those two preferred words: THE END at e End - of my manuscript. As a writer, you have to believe in your characters. You have to trust them, like them or hate them, they have to feel real, believable and essentially, that you have sympathy with the protagonist and other main characters who have lived, thrived or died, through your plots. e next step is now working through an arduous editing process. 24

On a practical level and at this stage, there has to be a professional distance. Detaching the creative and emotional processes in order to adopt a scientific approach to what is really relevant and not just because you like it. If it doesn’t work or serve a purpose, being merciless with the delete button or cutting with no pasting, can be a painful task. Also it is imperative to allow characters to reach their full literary potential. ere are some characters in my book that I would not choose as friends! But they serve a purpose; they’re in place to offer balance and perspective and to give depth to the plot and how the main characters respond to them and their actions. Looking back, this current novel was inspired by a single thought. Last year, I took my daughter to Prague for her birthday. Standing in the lobby of the hotel, I wondered about the hotel’s history and if she could tell me her secrets, what would she say? I considered how Prague suffered in the last war, how people’s lives were disrupted and where normality was put on hold in order to survive. Looking at the city’s architectural and cultural splendour, I wondered who lived and worked in the hotel at a specific time, what

Michelle Harris they did and were they compromised by historical events and situations? A stream of consciousness began to take the form of a plot, followed by the visualisation and development of the novel’s protagonist and other characters. Who? What? When? Why? How? And ‘What If ’ a baby was saved but hidden within the blanket was a pendant; the only clue to the infant’s history and parentage? What happens when secrets are denied and hidden, only to be relevant years later when questioned by future generations? ocated just outside Saffron Walden, Audley End House remains one of the grandest stately homes in the country, boasting stunning Jacobean interiors and beautifully landscaped gardens. As spring awakens the gardens into a riot of beautiful hues, the English Heritage team looking after Audley End are busy getting ready for a season of impressive events. ONE OF THE GREAT SIGHTS OF EAST ANGLIA e House itself is a spectacular Jacobean mansion, built to entertain royalty, and includes a Victorian Service Wing complete with kitchen, laundries and a dairy. Every weekend from June until September Victorian servants will bring the kitchens and laundries alive, busily going about their work looking after Lord and Lady Braybrooke and their family. Visitors can feel free to ask the servants questions about their tasks, the day’s menu or even about gossip from the household, but make sure you don’t stop for too long – a Victorian servant has lots of work to do! e house itself contains some amazing rooms: the Great Hall dates from the building of the house in the early 17th century. Other rooms not to be missed are the chapel, the bedroom suite complete with a bed fit for a king, and a series of rooms designed by renowned Georgian architect, Robert Adam. Audley End also includes historic stables, complete with resident horses and a Victorian groom. ere are daily displays in 26

the stable yard – watch as the grooms clean the tack, muck out or even school the horses. Children will thoroughly enjoying saying hello and finding out about their new equine friends. BEAUTIFUL GARDENS THROUGHOUT THE YEAR is impressive property also boasts beautiful gardens, which you can explore at your leisure, including an impressive formal garden and the working Organic Kitchen Garden, which was restored in 1999. Renovated to its former glory it now looks as it would have done in late Victorian times. FLOWERS IN FULL BLOOM In May the gardens are awash with colour! e 1830s Parterre and the Pond Garden are planted with hyacinths, primroses, tulips, daffodils and forget-me-nots. Alan North, Head Gardener at Audley End, says, “Every year the colour scheme varies but it is always quite a spectacle with around 16,500 bedding plants and 19,000 bulbs. is year is no exception – lilacs, pinks, creams and blues have all been included in the design.” THE ORGANIC KITCHEN GARDEN Alan and his team also look after the Organic Kitchen Garden, an essential element of any Victorian Estate. “At Audley End it’s not just about tending the gardens; it is about doing it in a way that is true to the historical period of the property.

BRITISH BEACH POLO CHAMPIONSHIP 2013

T

he highlight of the South Coast’s summer season, the Asahi British Beach Polo Championship to be held at Sandbanks, Poole for its sixth year on the 12/13thJuly 2013 is now only 2 months way. Supported by some of the best arena polo players, including Jamie Morrison, the hotly anticipated beach festival promises excitement and glamour both on and off the pitch. England, Ireland, Scotland (sponsored by our sister publication Sandbanks Life) and Wales will be competing with Ireland keen to retain the title after a gripping final against Wales last year. There is floodlit night beach polo on the Friday evening, visiting international polo teams and of course the ‘bonkers’ beach polo after parties. To complement the polo The Asahi British Beach Polo Championship offers a host of other activities such as ‘have a go’ polo, the Oakley Ladies Beach Volleyball, fashion shows, the charity Audi V Polo Pony race and the vibrant retail village. The polo is an excuse to dress up (or strip off for a quick swim), stay up late and indulge. Founded by Johnny Wheeler and David Heaton-Ellis the publicity for the inaugural Championships in 2008 was kick started by Piers Morgan drawing people’s attention to Sandbanks as ‘Britain’s Monte Carlo’ . Despite the onset of the recession a growing number of businesses use this ‘boutique’ event to entertain clients, reward their staff and promote their brands. Whilst sponsorship is still an important revenue stream new ideas such as camel polo (stand by for the elephants!), floodlit beach polo, equine displays and the appearance of the odd celebrity has kept people talking about the event and coming back year on year. So why does the Championships keep returning to Poole. Johnny Wheeler says ‘a cooperative council and a large stunning easily accessible beach are the vital ingredients for us as event organisers. Some good weather, the best polo players and an enthusiastic crowd is pretty important too’. The beach polo continues to add massive value to Sandbanks and continues to go from strength

to strength. So what of the future of Beach Polo? It is definitely growing in popularity. The Chairman of the International Beach Polo Association (IBPA) – Alex Webbe says ‘beach polo is different to conventional grass polo – it needs an adjusted handicap system and slight variations to the rules. After making his film debut in A Hill In Korea (1956), Sir Michael receiv ved his big break in the 1964 film Zulu. He has now featured in over e 100 films, at least one almost ev very y year ear from 1956 to the present day y.. June 2013 sees the release of his latest film Now You See Me, with Sir Michael starring alongside Morgan Freeman and Jesse Eisenberg. Bev verley Cook, Museum of London curator, said: “Sir Michael Caine is one of London’s most loved and recognisable characters. He was the first actor to bring an authentic London accent to the big screen, and although Hollywood success made him an international star, he remains inextricably linked to his London roots. This exhibition will celebrate how the city influenced both Caine’s life and his career.” Commenting on the new exhibition, Sir Michael Caine said, “I think the Museum is great for London, and I am so proud to be included.” 32

Henley Regatta O

ne of the most important dates in the British social and International rowing calendars, the Henley Regatta is the epitome of an English summer day and is steeped in history. e Henley Regatta was first held in 1839 and has been held annually ever since, except during the two World Wars. e first regatta took place on a single afternoon; however its popularity with the oarsmen extended the race to two days. Later in 1886 the event was extended to three days and in 1906 a further day was added, lengthening the regatta to a four-day event. By 1986 it was further extended to five days proving its popularity with the British public during the summer. Originally staged by the Mayor and people of Henley as a public attraction with a fair and other amusements, the emphasis rapidly changed so that competitive amateur rowing became its main purpose.

e Regatta occupies a unique position in the world of rowing. It has its own rules and is not subject to the jurisdiction either of the governing body of rowing in the U.K. (British Rowing) or of the International Rowing Federation, but is proud of the distinction of being officially recognised by both these bodies. e length of the Course is 1 mile 550 yards, which is 112 metres longer than the standard international distance of 2,000 metres. It takes approximately seven minutes to cover, so there are often two races at once on the course for much of the day. e number of races is, of course, reduced on each successive day, leaving only the Finals to be rowed on the last day. Since 1884 the Henley Regatta has been organised by a self-electing body of Stewards, at present numbering 60, most of whom are well-known and successful rowers and scullers. e Stewards' primary consideration in all their decisions is the best

interests of those who are competing in the races. e regatta today is one of the biggest events in the British and International social calendars and sees thousands of spectator’s crowd around the banks of the River ames every day. e private enclosures are the best way to see all of the sporting action in style and comfort and there is a wide variety on offer from Temple Island to the Stewards Enclosure. Located amidst rolling water meadows and surrounded by wooded hills, it marks the start of the famous Henley Regatta Course and was a recent feature in the Olympic opening ceremony. e Temple itself is a delightful folly, designed by James Wyatt as a fishing lodge for Fawley Court, the Christopher Wren mansion on the Henley Reach, from which the Temple completed a charming prospect through an avenue of trees and provides a stunning view for the River Lounge and other enclosures. ere is no formal dress code in many of the enclosures except the Stewards, however most spectators wear smart clothing with some guests opting for traditional Regatta attire in the form of lounge suits for men and dresses for ladies. Many of the enclosures start the day early including the River Lounge and Temple Island, whereby guests enjoy a delicious champagne and canapé breakfast. e River Lounge goes further

though, by creating beautifully sculptured gardens with alfresco seating and erecting a stunning marquee with a contemporary interior. e lounge serves gourmet cuisine throughout the day, a complimentary bar, live background music, head and neck massages and offers a river cruise on-board the Lilly Anna. River cruises are another great way to see the river and to explore the Regatta course but make sure you book early to avoid disappointment. Food and drink are as important as the racing during the regatta and there is a wide variety on offer from celebrity chefs to royal caterers across the course. “rhubarb” for example serve a variety of best of British and European menus from canapé and bowl food selections to stunning puddings and mains. Dishes include seasonal produce such as roasted rump of Welsh lamb, boulanger potatoes, green peas “à la Française”, buttered spinach and rosemary jus for a main or a choice of miniature puddings including Tiny Eaton mess, Pimms Royale jelly with summer berries, Mini summer pudding, Scottish raspberries and lemon curd in bitter chocolate pastry tartlet and Sherry trifle. e Regatta is easily accessible from Henley town centre with a quick trip over Henley Bridge towards Maidenhead. Parking is directly to the rear of the enclosures and is well sign posted. Races start from as early as 7.30am on some days and can go onto the early evening. eing in the limelight is not something Eleasha Newberry is used to, but since winning the Dream Makeover Essex competition all that’s about to change. DESIGN DIRECTOR FRANK GIBBS SPEAKS OUT WITH HIS TIPS ON KITCHEN DESIGN FOR 2013

D

esign is constantly evolving, what was relevant last year might not be this, last year's biggest innovation might, and probably has been superseded. With this in mind, I spoke with Urban Myth's design director Frank Gibbs to get his thoughts on kitchen trends and other aspects of kitchen design for 2013. What's trending in kitchen design right now? Design wise, most people are still looking for the big open plan lifestyle kitchen. Whether the kitchen and living room are amalgamated or the kitchen and dining room or even all three, the biggest trend in the overall design is to make the kitchen the hub of the home. at's not something I see changing anytime soon and with good reason, why would you want to be isolated in the kitchen whilst everybody else gets to socialise together? Big tall unit banks housing all the major appliances and storage solutions are key along with island units for prep, cooking or washing often with incorporated seating are still top of people’s wish lists. What are people looking for in their new kitchen? Definitely clever storage, nobody wants to get on their hands and knees just to get something out of a cupboard. Pan drawers are now called 50

pull-outs because they were never really meant just to house saucepans, everything from tinned food, crockery and small appliances can be stored in them. People want everything to be easily accessible, easy to keep clean and, most importantly, easy to live with. What's the one area we should really spend money on? Work-surfaces. ey get a lot of use; in fact, they probably get the most use out of any part of the kitchen. It's definitely worth spending a little extra to get the most hard wearing materials to ensure they stay looking as good as the rest of your kitchen in ten years’ time. Where can we save a bit of money? is is going to sound contradictory but, work-surfaces. ere have been some serious advances in laminate work-surface technology over the last few years. I'm not for a moment suggesting that a budget laminate work-surface is going to be anywhere near the quality of granite or composite stone but, high pressure, metal or ABS edged laminates from Germany can really give them a run for their money. If you're wanting to save a bit of money, have a look at them. What colours are trending at the moment? Probably one of

the most important bit of advice I can give is to ignore colour trends. Seriously. It's fine to go for this year’s big colour when you're buying a new coat; chances are that you'll only wear it for a few months anyway. When it comes to a new kitchen however you're making a big investment, one that you'll still want to be happy with in ten years. ink carefully before you listen to somebody on the television suggesting you decorate your home orange...it's going to get very old, very quickly! Go for a colour that you both like and can see yourself living with for a long time and if you want to be bold, think about doing so on the walls since it's not that expensive to re-paint them in a year or so. As far as the kitchen itself, White, cream, beige and grey still give big impact for little risk. What advice would you give to anybody about to embark on a kitchen project? Don’t rush. Seriously, give yourself plenty of time. A new kitchen is a big project, one that you need to get right. Allow time to get the design exactly how you want, don't wait until two weeks before you need to have the kitchen fitted before making a studio visit. Talk to your builders if you're extending or building a new property, they'll need to know in good time the details of your kitchen plan and the locations of the services required to make it work. Remember that the average order time for a kitchen is 6-8 weeks after which, depending on the specification and materials involved, it will take 1-3 weeks to complete the installation. Smoked Salmon Fishcakes RECIPE SMOKED SALMON FISHCAKES – SERVES FOUR Delicious with roasted baby vegetables. Buy Loch Fyne salmon fillets from the fish counter of your local restaurant. Ingredients: l 100g smoked salmon l 150g fresh salmon l 13ml white wine l Juice from ¼ lemon l One clove garlic l Eggwash (one egg and a splash of milk whisked together) l 40g plain flour l 20g spring onion l 5g dill l 90g breadcrumbs l 250g potato, mashed l 25g unsalted butter l 75g celery (about 2 sticks) l 25g leek (about half a leek) l ¼ average sized onion l 4 tablespoons olive oil METHOD 1. Pre-prepare the mashed potato and baby vegetables, and place to one side 2. Make sure the salmon is filleted and all bones removed 3. Cut the fresh salmon into 50g pieces and steam in a pan with the white wine, lemon juice, sea salt and black pepper for five minutes then place to one side – the salmon should still be pink inside 4. Finely chop the garlic and cut the onions and leeks into a half inch dice 5. Melt half the butter in a pan and quickly sweat off the onions and garlic until soft. Add the remaining vegetables and cook for one minute 6. Pour the salmon cooking liquor over the vegetables and reduce by two thirds, then remove from the heat 7. Mix the plain mashed potato together with hot vegetables then gently fold in the salmon 8. When the mix has cooled, finish with smoked salmon cut into thin strips and also add the chopped spring onion and dill. Check seasoning and add salt and pepper as required 9. Shape into 4 fish cakes and lightly dust with flour, then brush with eggwash and finish with breadcrumbs 10. Heat the oven to 180 degrees 11. Melt the remaining butter in a frying pan, and pan fry the fishcakes for two minutes either side until golden brown, then finish off in the oven for a further eight minutes 12. Reheat the vegetables under the grill 13. Split the veg between five plates and place a fishcake on top, finishing with the rest of the marinade n

LONDON’S MILLIONAIRE PROPERTY BOOM Sales of multi-million pound properties offering home comforts such as private spas and wine cellars rose a “staggering” 71% in the final three months of 2012, according to Land Registry figures. ritain may have taken one step towards a possible triple-dip recession during that period, but the market for properties priced between £2m and £5m in England and Wales boomed. A total of 448 properties with a £2m-£5m price tag were sold during the fourth quarter of 2012, compared with 262 during the same period in 2011, according to analysis of Land Registry data by residential property specialist London Central Portfolio.

Sales of “super prime” homes in Central London, costing in excess of £10m, proved similarly robust, rising tenfold as wealthy European, Russian, Chinese and Arab buyers continued to view the capital’s property market as a “safe haven” for their money. The most expensive property to change hands during the final three months of last year was a home in Farm Street, Mayfair, which fetched more than £28.1million. Wealthy buyers also snapped up properties in exclusive developments such as One Hyde Park, the residential project launched in 2011 by the colourful Candy brothers, offering homeowners with deep pockets features such as eel-skin decorated walls, a panic room and homecooked meals from a team of award-winning chefs. One half of the property development duo, Nick Candy, has retained a penthouse at One Hyde Park with his celebrity wife, the singer and actress Holly Valance.

Average prices in prime areas of Central London, including Westminster, Kensington and Chelsea, rose 14.1% to end 2012 at £1,359,739, according to the LCP research. However, Naomi Heaton, chief executive of LCP, said average prices reported by the Land Registry may have been inflated by the number of buyers now using their own names to purchase properties, rather than using a taxefficient corporate vehicle. Using a corporate structure to buy a property has become less attractive following a crackdown by George Osborne, the Chancellor, during last year’s Budget. The Chancellor introduced a 15% stamp duty for individuals buying through a corporate vehicle. Ms Heaton pointed out that properties wrapped in a corporate vehicle and sold as a company do not appear on the Land Registry. Therefore, an increase in the number of people who have chosen to buy in their own names has had an inflationary effect on average prices, according to Land Registry data. The boom in £2m-£5m properties comes despite an increase in stamp duty, from 5% to 7%, in last year’s Budget. The rise initially sparked a fall in the number of transactions in this price category, with sales in the third quarter dropping by almost 30% year-on-year, before recovering.
