Sunday 5th February to Sunday 6th March 2011 Princess of Wales Conservatory, Kew Gardens Depressed by the thought of those long winter months looming on the horizon? Then put Sunday 5th February into your diary, which marks the opening of the Royal Botanic Gardens, Kew’s month-long Tropical Extravaganza festival, in celebration of all things bright, beautiful and, of course, tropical. During Tropical Extravaganza, exotic orchids, tropical flowers and foliage displays will dominate the wet tropical zone of the Princess of Wales Conservatory. Its lush landscape will contrast with brilliantly coloured displays sweeping around the structural columns, which will be blanketed with hundreds of orchids. This blissful setting is not merely to be admired. We also aim to inform visitors about the vital importance of maintaining biodiversity in tropical rainforest

landscapes, and the interdependency of the plants within them and all living things. This will be achieved through a variety of sculptures, interactive displays and sound installations. There will also be volunteer guides in the conservatory throughout the festival who will be on hand to answer questions on the displays and Kew’s global work. Throughout the festival, Kew staff and volunteer guides will be offering a number of hands-on sessions and behind-the-scenes tours; including the opportunity to find out more about Kew’s taxonomic and restoration work with orchids in biodiversity hotspots, expert advice on growing orchids, and tours of our tropical nursery. A British icon since 1889, The Savoy has once again taken its place on the world stage after over a ÂŁ100million restoration.

The hotel closed in December 2007 for a restoration programme that encompassed the entire building from the iconic entrance and the American Bar to Savoy Grill and the 268 guestrooms and suites. The hotel now seamlessly blends elements of the original and the new while the stunning English Edwardian and Art Deco interiors sparkle with timeless elegance and glamour. Back in 1246, a stretch of land between the Strand and the Thames was presented by Henry III to Peter, Count of Savoy, uncle and consort to the King’s wife. Peter built his Savoy Palace on the river, and the name has been associated with the place ever since. Over 600 years later, impresario Richard D’Oyly Carte chose the location for a new theatre to stage the famous operettas written by his friends Gilbert and Sullivan. He decided to call his new building the Savoy Theatre, and the productions were known henceforth as the Savoy Operas. Gilbert and Sullivan were huge on both sides of the Atlantic, and D’Oyly Carte spent a lot of time producing their shows in America. This meant he could stay in some of the newest and best hotels, which impressed him so much with their amazing new technologies that he decided to build his own hotel back in London. The new Savoy on the river took five years to

build and opened on August 6, 1889. It caused a sensation.

This, the first true luxury hotel in London, was also the first to be lit by electricity. It had the first electric lifts, known as ‘ascending rooms’. Guest rooms were connected by speaking tube to the valet, maid and floor waiter – and to other parts of the hotel. The Savoy later became the first hotel to provide most of its rooms with private bathrooms en suite. The ‘Savoy bathroom’ became famous for its cascading shower and quick filling bath.
Winston Churchill frequently lunched with his cabinet at the hotel during World War II, and attended his Savoy dining club, The Other Club, until his death in 1965.
Originally managed by Swiss hotelier César Ritz and Maitre Chef Auguste Escoffier, the hotel quickly became known for its glittering parties and glitterati guests. Escoffier created dishes for Sarah Bernhardt, Lily Langtry, Dame Nellie Melba and the Prince of Wales, later Edward VII, while Ritz instituted the impeccable service, attention to detail and creativity that came to be the hallmark of the hotel. FIVE STAR ELEGANCE AND ROMANCE Since first opening its doors Claridge’s has long been the destination for opulent style London.
Bought in 1854 by Mr and Mrs William Claridge, the hotel received the ultimate accolade in 1860 when Queen Victoria visited Claridge’s to see her friend Empress Eugenie of France. This was the beginning of a tradition of royal visits, which continues to this day. Claridge’s has even been called the annex to Buckingham Palace, as foreign heads of state, invited to dine at the Palace, return hospitality by hosting a banquet at the hotel. In 1893 Claridge’s was bought by Richard d’Oyly Carte, owner of the Savoy, who commissioned C.W.
Stephens, famous for designing Harrods, to demolish the original buildings and erect the elegant seven storey hotel, which stands today. The new Claridge’s opened its doors in 1898. By 1929, when London’s bright young things were partying as if their lives depended upon it, Claridge’s was in need of some modernisation. Oswald Milne, a pioneer of the art deco movement was invited in. The entrance, still an awkward, oldfashioned carriage driveway was transformed into the spectacular, elegant lobby, with its revolving door,
glamorous mirrors and ‘leaping deer’ lamps which still, 75 years later, looks modern and contemporary. At this time, a new wing was added with 80 new rooms and the beautiful Ballroom. Much of the original furniture, lighting and decoration from this time remain and it is this heritage which gives Claridge’s its title of art deco jewel of Mayfair. During the Second World War Claridge’s became a haven for exiled royalty and heads of state. The Kings of Greece, Norway and Yugoslavia and the Queen of The Netherlands stayed for the duration, as did the presidents of both Poland and Czechoslovakia. On July 17th 1945 Winston Churchill declared suite 212 Yugoslavian territory for a day and a clod of Yugoslavian earth was laid under the bed, so that Crown Prince Alexander II could be born on his own country’s soil. After the war, in 1947, just before the wedding of the then Princess Elizabeth, a harassed diplomat telephoned Claridge’s and asked to speak to the King. “Certainly sir,” was the response, “but which one?” Popular with kings, presidents, prime ministers and financiers, Claridge’s also attracted most of the golden names of Hollywood, including Yul Brynner, Audrey Hepburn, Cary Grant and Bing Crosby. When Katharine Hepburn stayed she was reminded that the dress code of the day decreed that ladies should not wear trousers in the lobby, she acknowledged the rule but simply chose to use the Staff Entrance instead!

In 1956 Buganin and Kruschev made Claridge’s their headquarters during their controversial stay in London. They held a cocktail party in the Royal Suite, which got so crowded that ‘buttons popped off jackets and wine was spilt on ladies dresses….’, not so different really from the penthouse party held in 2004 to celebrate Kate Moss’ 30th birthday! Throughout the Twentieth century Claridge’s has been the home of the great and the good of the worlds of film, fashion and finance, the opinion formers, the movers and shakers, the chic and most fashionable of the day. Just before the turn of the century in 1998, to celebrate its centenary, Claridge’s was once again lovingly restored. Its elegant lines and gracious features were re-polished, refreshed and re-presented to the world. The designer Thierry Despont, with detailed reference to the work of Basil Ionides and Oswald Milne, sympathetically and with exquisite taste, created the restaurant, Gordon Ramsay at Claridge’s, the intimate and chic Fumoir bar, The Foyer and the Reading Room. The nineteenth century and art deco details were not simply kept but celebrated and set off
to advantage by the addition of contemporary pieces, such as the beautiful Dale Chihuly light sculpture, of over 800 pieces of hand-blown glass, which hangs in The Foyer. Today Claridge’s is full of life and laughter. Graced by an international and discerning clientele who appreciate Claridge’s heritage and beauty, its extraordinarily high standards of service and, perhaps most important of all in today’s publicity crazed society, its discretion. ATUL KOCHHAR AN INDIAN INSPIRATION
Atul Kochhar is one of the most critically acclaimed chefs in Britain and the Chef Patron behind the highly acclaimed Indian restaurant and bar, Benares in Berkeley Square, Mayfair W1.

F E AT U R E Atul was the first Indian chef to receive a Michelin star for his time at Tamarind and he has since repeated the feat by winning a Michelin in January 2007 at Benares, announced in the 2007 Michelin Guide to Great Britain and Ireland. Born in Jamshedpur in Eastern India, Atul embarked on his cooking career at The Oberoi group of Hotels in India. In June 1993 he graduated to the five star deluxe Oberoi Hotel in New Delhi. Here Atul worked as a sous chef in one of the five restaurants in the hotel, supervising a team of 18, raising the standards in the kitchen. In January 1994 he moved to the fine dining restaurant of Bernard Kunig, one of the finest Hilton chefs and in November Atul’s reputation brought him to London to open Tamarind in Mayfair. By January 2001, at the age of 31, Atul became the first Indian chef to be awarded the coveted Michelin star. His creative and innovative edge has won Tamarind huge accolade, publicity and a large following. Tamarind’s success is mainly due to its unique blend of classical and modern cuisine. At Tamarind Atul changed the perception of Indian food in UK. For the first time in London Indian food was being recognised to take the elite ranks with other cuisine of the world. Since then many other restaurants have followed to enhance the cuisine. In June 2002 Atul joined Marks and Spencer as consultant chef for their Indian range. Soon after joining, the Indian range was awarded seven Q awards in honour of its outstanding quality. In August that year, Atul left Tamarind to set up his first independent venture, Benares, which opened on 30th April 2003. Benares represents Atul’s most ambitious venture to date, with a menu that reflects his passion for food from all areas of India and a setting to rival the most elegant of restaurants in London. Inspired by the holy city of Benares, on the banks of the river Ganges, Atul Kochhar offers a gastronomic journey that redefines the perception of Indian food thus Benares has established itself as one of the finest restaurants in London, winning accolades for its delicately spiced food and striking design. Renowned for the vibrancy of his food and the subtlety of his spice mixes, Atul is scrupulously faithful to the origins of each recipe. A I got inspired working with my dad in his catering business and joined this industry. Q Tell us more about your restaurant in Mayfair... A Benares is a Modern Indian dining room with features like Chef’s Table and Wine Theatre.

Q Are you planning to open any further restaurants? A Colony is my next venture in London at Paddington Street, near Marylebone High Street. It is a Bar and Grill concept inspired by British Colonial era. Food is inspired by street food of India and other British colonies. Q How do you perceive London residents and their understanding of high quality food? A London Residents are quite suave with their palate. They are well travelled and have good understanding of world cuisine. Chefs who come to cook in London should feel privileged to be cooking for a well educated cosmopolitan crowd. Q Is there much celebrity spotting at your restaurant? A Yes there are always well known people in our restaurants but we do not publicise their visits. Q Is there anything that London is missing out on or needs in the way of restaurants and food? A London needs more Asian influenced food. Cuisine of Malaysia, Vietnam, Philippines and Indonesia are quite small in number. Q Do you have any ambitions you have yet to fulfil? A There are many..! I want to climb Mt Everest and be able to cook at its base camp. Q How often do you get to travel? A As often as I can. But at least twice a year. Q What one thing do you always have to have when you go abroad? A My Kin knife. Q How do you manage to make your trips as stress-free as possible? A I tend not to plan it too much and take the life way it comes. It gives excitement and makes trip more enjoyable. Q Do you prefer to travel to Cities or more open-air country wide destinations? A Both. I love nature and love walking - so it helps to do both. Q What’s the most delicious thing you’ve ever eaten on your travels? A Street food in Singapore is amazing. Indian
influenced Fish Curry in Singapore was out of this world. Q Where’s the most challenging place you’ve visited and why? A Mauritius - it is infectiously relaxing and you can’t do anything there. I had a working contract there and hated it - as I had to work very hard in a very laid back setting!!! Q Are you an avid reader when you travel? If so, what is your favourite book? A I love reading. History is my subject and I read loads of it. Books about Mogul Empire are my favourite. Q Have you ever bought something abroad then regretted on returning home? A Carpets !!! Don’t ever buy them abroad. You can find good ones in your home country. Q What is your favourite part of London? A Notting Hill and Holland Park are my favourite places in London. As I moved to London in 1994, I lived in Notting Hill for 7- 8 years before moving out to Osterley. I miss Notting Hill and hope to return one day to live there for very long time. Q Where are your favourite holiday destinations? A 1. Kerala - For its unspoilt beauty - it is a paradise for good life, great food and amazing blend of world cultures. 2. KL, Malaysia - You don’t get many opportunities in life to experience food blends like KL and Malaysia. If you find yourself there - enjoy it. 3. Bangkok - Bangkok is one of my favourite places on earth. Food and night life is superb - Dome at State Tower Hotel (Lebua) is good enough reason to be there. 4. Rajasthan - Land of Rajputs, colours, castles and lots and lots of Food. Jaipur - Jodhpur - Udaipur - every bit is amazing. 5. Singapore - Street food capital of the world!!! I don’t miss home - whenever I am in Singapore - to me - it is home away from home. 6. Rio D j and Sao Paulo - These two places are just beautiful – amazingly gorgeous. Rio for its life and Sao Paulo for its cuisine. Gino D’Acampo’s recipe for
Fettuccine con pollo e Dolcelatte Fresh pasta served with chicken & Dolcelatte sauce SERVES 4 INGREDIENTS 400g fresh Fettuccine or Tagliatelle 350g chicken breast, boneless and skinless cut into thin strips 200g Dolcelatte cheese, cut into chunks 50ml dry white wine 150ml double cream 3 tablespoons of chopped chives 2 tablespoons of olive oil Salt to taste
to cook for a further minute stirring continuously. 4. M ix in the chive and season with salt and plenty of black pepper. Remove from the heat and set aside. 5. M eanwhile, cook the pasta in a large saucepan with salted boiling water until al dente. 6. O nce the pasta is cooked, drain and tip back into the same pan where you cooked it.
PREPARATION 1. Heat the oil in a medium size saucepan and fry the chicken for 6 minutes until golden all over. Stir occasionally with a wooden spoon.
7. P our over the creamy chicken sauce and stir all together, away from the heat, for 15 seconds allowing the sauce to coat the pasta beautifully.
2. A dd in the Dolcelatte and over a low heat, cook for 2 minutes stirring until melted.

On January 22nd the Royal Air Force Museum London will be unveiling its latest temporary display ‘Tin Hats and Football Boots’. This display explores the contribution made by various members of Tottenham Hotspur and Arsenal Football Clubs to the Royal Air Force and Air Raid Precautions during

the Second World War whilst examining how important regular competitive football was to the upkeep of the capital’s morale. With the outbreak of the Second World War, the world of football changed. Hostilities affected clubs in every league all over the country. The Football League was suspended and then re-instated in a new guise with many professional players joining the armed services and being called upon as ‘guest’ players by clubs near their billets. North London rivals, and RAF Hendon’s major

local clubs, Arsenal and Tottenham Hotspur found themselves sharing Spur’s ground at White Hart Lane; Arsenal’s Highbury ground having been requisitioned by the government as an ARP centre. Not only did these two neighbouring giants have to work together to ensure that both teams catered for their fans but also that they did so through the provision of nail-biting and stimulating games, quite often without the key players or support staff who had been so central to each team’s success before the War.

For 90 minutes both players and spectators could escape the horror of war and life would, for a brief period, assume an air of normality – all important for maintaining morale and a reminder of more peaceful times. The aim of this display is to highlight the hidden history of both clubs. Success should not only be measured by the amount of silverware in trophy cabinets but also by the contribution made by football to the war effort.

THE GENIUS OF TERRY O’NEILL By Belinda Wanis
They say that a picture is worth a thousand words and the photographs of the legendary Terry O’Neill speak volumes. He was one of the first photographers to give the public an insight into the mysterious world of celebrity with rare candid access to screen legends and rock icons during the sixties and seventies. His portraits of Hollywood goddesses such as Audrey Hepburn, Faye Dunaway and Brigitte Bardot embodied the glamour and optimism of the era. He has shot covers for every major magazine and has been requested by world leaders and royalty. With a career spanning almost 50 years, O’Neill is not only one of Britain’s most famous celebrity

photographers, he was also friends with the Hollywood greats. From Ava Gardiner and Audrey Hepburn to Frank Sinatra and Mick Jagger he hung out with them all, in fact he was married to Faye Dunaway for five years. He also had a talent for discovering up and coming stars including Elton John and Jodie Kidd. In the early sixties and at the tender age of 21 O’Neill was at the forefront of the new breed of photographer – the celebrity snapper. O’Neill got his big break when he sold a picture of Home Secretary Rab Butler catching 40 winks at Heathrow airport while working as a photographer for British Airways. Tabloid newspaper The Daily Sketch then sent him on his first assignment, to
photograph a new band called The Beatles. When the picture was published, the paper sold out and the editor, keen to repeat this success asked O’Neill if he knew any other bands. He suggested the Rolling Stones. “I’d been watching the Stones play in a club in Richmond, so I set up a shoot with them,” O’Neill says. “The editor said, “Aren’t there any attractive groups?’ “In many ways it was quite a revolutionary time,” O’Neill says. “Before the Sixties, it was the toffs that ruled the arts, just as they did the country. But then the Sixties happened, and all of a sudden us poor people, your working classes, got a chance to show what we could do..” It was a heady time

and everything that O’Neill touched seemed to turn to gold. “One day Mary Quant brings out something called the mini-skirt, the next day there’s a new model on the block called Jean Shrimpton, and then Twiggy gets discovered.”
“I used to be the Special Photographer on film sets,” he says, “so nothing was closed to me. I’d spend weeks hanging around just waiting for the perfect picture. And I got them, simply because the stars were so relaxed around me.”
“Back in those days, we all used to hang out in the same clubs together,” says O’Neill. “The Stones, the Beatles, all sorts of models and us photographers. You have to remember that, back then, photographers were often much more important than the pop groups they photographed. If I couldn’t make it down to shoot Mick and the boys one week, then they would come to me. It was that sort of arrangement.”
You don’t get that nowadays, of course,” he adds, laughing wryly, “because the PRs have stopped it. You’re lucky if you get 15 minutes with one of the big actors today, but you can’t really bond in that time, and so you can hardly be expected to take truly memorable shots. Instead, everything is posed, everything rushed. Nobody gets any really memorable pictures any more. Photographers these days? They have my sympathy.”
After a while O’Neill felt that he had captured the UK scene and went in search of new subjects in America. Breaking into Hollywood, photographing the greats, allowed him to stand out from other British photographers like David Bailey who never really left the UK.
Today he is still exhibiting and taking photographs though he does confess that there is no current star that he feels the need to photograph. He recently published a book on his
favourite subject, Frank Sinatra entitled Frank and Friendly. He now also gives back to charity through his work with Legende Celebrity Art by providing exclusive and limited edition prints for auction to benefit worthy causes such as Help The Heroes and cancer charity Teens Unite. THE WONDERFUL STORY OF BUTTERFLY WORLD This £27 million project was conceived by Clive Farrell, a butterfly fanatic and lepidopterist whose dream was to create a tribute to the butterfly and a dedicated centre of learning for the preservation of this fragile and beautiful species.

Along with the support of our patrons (who include Sir David Attenborough, Professor Dr David Bellamy, Alan Titchmarsh, Emilia Fox and Baroness Helena Kennedy) the project was launched in March 2008 at an event at the Royal Society in London. Building work began in September 2008 and the image here shows the dome area under construction. Once completed in the Autumn 2011, it will be the biggest butterfly experience in the world and the Biome (100m in diameter x 17.5 m high) will be big enough to house the footprint of Stonehenge seven times over. PHASE I - SPRING 2009 The site was created in the shape of a butterfly’s head and the designer gardens competition, Future Gardens, was launched. The wildflower meadows were created and Ivan Hicks’ gardens were also opened, plus a cafe, shop and plant boutique. We celebrated the Very Hungry Caterpillar’s 40th birthday too.

PHASE II - SPRING 2010 The education focus is launched next, to include the Butterfly Breeding House, the Insect Study Centre, the Chrysalis Lake, new gardens, picnic areas and the developing children’s play area. The Nectar House Cafe and new shop are opened too and the landscape is very much more developed. PHASE III - SPRING 2011 This phase will show further development of the site and construction of the first half of the massive rainforest Biome, 100 meters in diameter and home to over 10,000 tropical butterflies, hummingbirds, insects, spiders as well as tropical plants. PHASE IV - AUTUMN 2011 The final stage will be the completion of the massive Biome, the largest walk-through experience in the world, with rope walkways, Maya caves and ruins to explore, streams and tropical rainstorms. The project will incorporate a living rainforest, yards from the M25 and M1 and a tribute to our tropical and native butterflies.
EXPLORE THE BIOME The 27 acre site is designed in the shape of a giant butterfly’s head, with the 100m Biome (to be completed in autumn 2011) as its geodesic eye. It represents an architecturally exciting, iconic landmark of the future. Giant maya ruins based on archaeological sites of Belize and Mexico will provide the backdrop to a kaleidoscope of up to 10,000 tropical butterflies and a variety of hummingbirds and many other creatures. The Biome will be an exhibition of living flora and fauna found within the rainforests of the world, including a lost civilisation, underworld caves with insects, spiders and scorpions, canopy walkways and intermittent thunderstorms - a lost world and a truly tropical adventure. The Biome will also provide one of the most extraordinary corporate events and hospitality venues in Europe, and will include a restaurant, cafe and retail areas. OUR BUTTERFLIES The tropical butterfly house will this year house over 600 tropical butterflies, to include the Blue

Morpho, The Monarch, Swallowtail, Owl, Helliconius, Clearwing and many more. As well as these spectacular butterflies we are focusing this year on educating visitors about the lifecycle of the butterfly, how extraordinary and fragile it is and how it can be so easily broken by a declining habitat. In the Butterfly Breeding House you can see the tiny eggs, pupae and caterpillars and watch the butterflies emerging from their pupae ready to spread their wings. From here they are transported to the Tropical Butterfly House to source nectar and breed. The butterflies are bred in the rainforests around the world in farms either owned or supported by The Stratford Upon Avon Butterfly Farm, which in turn is owned by the founder of Butterfly World, Clive Farrell. The butterflies come in chrysalis form (in their sleeping bags!) by air freight from all over the world, to include Belize, the Phillipines, Costa Rica, Kenya, Columbia, Northern Thailand and El Salvador. The Stratford Upon Avon Butterfly Farm is one of the biggest butterfly livestock businesses in the world, and supplies most of the live butterfly exhibitions in the UK, Europe, Canada and the USA, including the Natural History Museum. Clive Farrell’s butterfly farm in Belize, Fallen Stones, won a Shell Technology Worldaware Business Award in 1995 for his work on developing this project, where it is the mainstay of the local economy. The project prevents this area of the rainforest being used as a wood source or destroyed by cattle.

OUR GARDENS Ivan Hicks is the celebrated garden designer and chief landscape architect for the project and he has created an incredible attraction for anyone interested in gardening – or just those who want to be inspired at Butterfly World. He has created an array of different gardens from ‘The Theatre of Insects’ to ‘Through the Flowerpot Garden’, in which you are transformed into ‘insect size’ and can walk through a giant flowerpot… but make sure the spider doesn’t catch you! Adored by children and grown-ups alike, come and see what he is creating for Phase II. WILDFLOWER MEADOWS With the conservation of our native species of butterfly in mind, Ivan Hicks has created a kaleidoscope of colour with his unique approach to wildflower planting. There are over 20 acres of wildflower meadows at Butterfly World, which last year were an incredible sight to behold and attracted an enormous amount of media attention. The international wildflower meadows provide a wonderful nectar transfusion for the butterflies and insects – their very own service station off the M25! It also brought tears to the eyes of the visiting public who could not remember seeing such a spectacle for years. FUTURE GARDENS As part of phase I of the project, Butterfly World last year hosted a designer gardens exhibition called RED ADMIRAL
Future Gardens. This involved inviting talented garden designers from around the world to contribute thought-provoking designs for individual gardens which fit into the segments of a caterpillar. Each of the 12 gardens makes a design statement with no shortage of inspiration for visitors to take home and try for themselves. These gardens look fabulous in their second year of development and continue to offer fun for the children and great ideas for garden lovers. CHILDREN’S PARTIES Our futuristic Solardome, Nectar House Cafe and Insect Study Centre provide wonderful spaces for children’s parties as well as the 27 acres of Butterfly World Phase II to run around in. We can organize the whole package for you – entertainers, activity walks, craft sessions, face-painting, party lunch or tea, butterfly cakes and party bags - for up to 30 children. LIP TIPS Apply lip balm heavily to dry lips before you even start your make-up, then let it soak in. By the time you apply lipstick, you’ll have luscious, soft lips that will make your lipstick easier to apply and last longer too. Bleeding lipstick? The trick is to buy the most intense colours and only apply lipstick once - the less product on your lips, the less it will run. If your lips don’t have much natural lip colour, apply a touch of lip balm and then add just a hint of deep berry or plum-coloured lip stain. So, in terms of food swaps have a vegetable soup rather than a pasty, plain air-popped popcorn instead of crisps and grapes in place of raisins. WAIT AFTER FAT If you do have a meal with a high-fat content then make sure you allow time for that feeling of fullness to come. It can take longer for sense of satiety to come from a fatty meal compared to meal high in protein for example, so allow time for the feeling of fullness from the fat to kick in.
10 WAYS TO FEEL FULL, NOT FAT Tips and tricks to a make you feel fuller for longer If you find that you are never feeling satisfied after a meal or just an hour or so later you are reaching for a snack to pick you up? Well, we’re here to help with some feel-full strategies. Granted there are foods that can boost your feelings of fullness but how, when and where you eat your meals can also
have a bearing on your full factor too. Here are 10 ways to keep your dining habits in check to maximise your feelings of satiety and satisfaction. SOMETIMES GO IT ALONE People can eat more when they dine in company or with the television on because they become distracted as to what exactly is going into their mouth. Make sure mealtimes are all about the food, focus on it entirely and you’ll feel full sooner. Avoid fast-paced music too, this can increase the speed you eat, resulting in a clean plate before your body is able to recognise it is full. SMELL AND CHEW When you eat make sure you give your meal a good sniff as concentrating on the smell of your food as well as the taste also switches on satiety signals. Secondly, chew, chew, chew, and chew some more, some of the hormones needed to send the satiety signals to the brain are released by your chomping. GO FOR BULKY AND MOIST The rationale behind the bulky and moist rule is pretty straightforward,

GET ENOUGH SLEEP When your body is deprived of sleep it produces more ghrelin and less leptin. These are the hormones that are involved in the regulation of appetite; ghrelin is produced largely in the stomach and accelerates your appetite, while leptin decreases appetite as it’s the hormone that signals satiety. GET HYDRATED The daily recommended amount of water to drink is around the eight glasses mark, but many of us don’t get anywhere near that amount and as a result when we feel hungry, it is often because we’re actually thirsty. Drink a glass or two of water before a meal, and when you do eat, the food will feel more filling. GET A SMALLER PLATE People tend to fill their plate however big it is, and most of us eat until it is empty. And the aim of getting a ‘clean plate’ makes us more likely to override the satiety signals that stop us eating. So, swap your normal plate for a slightly smaller one, and you’ll find your ‘full’ switch will flip a little faster. CHOOSE FIDDLY FOODS If you eat foods that take a little time and effort to eat, this will allow time for your body to recognise the fullness feeling. Good examples of fiddly foods are corn on the cob, a crunchy salad or fish with bones, these types of foods force you to eat more slowly and help you to feel full quicker. EAT AN APPLE BEFORE EACH MEAL Apples help to promote a feeling of fullness and research has shown that eating an apple 20 minutes prior to eating a meal reduced the amount of food that was consumed at that meal. So, including an apple for your daily snack will not only contribute to one of your daily recommended fruit or veggie portions but the fibre will fill up your stomach too. BE NATURAL Try to eat food that is as natural as possible as most manufactured foods tend to be very energy-dense which means they contain more calories bite-forbite. However raw fruit and vegetables take a lot of chewing and occupy a lot of room in your stomach so they fill you up much more per bite.

THE INS & OUTS OF SNORING This month Idai Makaya discusses the issue of snoring with an ear nose and throat consultant surgeon and looks into its social and health implications and what can potentially be done about it – including some breakthrough and revolutionary treatment solutions. Snoring occurs when the muscles around the palate, tongue or back areas of the mouth and throat ‘junction’ relax during sleep. This causes the flesh to stick together and interferes with the normal airflow. Snoring is a common ‘condition’ and everyone is likely to snore sometimes. However, snoring can also have more serious social or health implications for some people and when this happens one really should look into finding a means of addressing it. The people most likely to snore are men (many readers will probably say “no surprises here!”), menopausal women (while they are going through the menopause) and elderly people in general (due to reduced general muscle tone). However, overweight people are also at a heightened snoring risk - regardless of gender - as are people who drink lots of alcohol, smokers and people who tend to sleep lying on their backs (instead of lying on their sides). The latter variables are all within our control and whenever there’s a snoring ‘problem’ in any home the above issues should probably be addressed in the first instance. If you are confronted with a snoring problem and fail to resolve it by aiming at resolving the causes mentioned in the previous paragraph it’s probably a good idea to visit your GP for a more effective solution and for guidance. This is because snoring often links to more serious health and social problems. Snoring may be linked to fatigue - either for the snorer or for those in close proximity – and this can have detrimental affects on one’s life. This fatigue sometimes relates to irregular breathing - or even regular episodes of complete breath cessation (called sleep apnoea). Fatigue may also be related to a lack of sleep caused by the disturbance aspect of loud snoring - which can affect both the snorer and those in close proximity to the snorer. I caught up with Mr Prasad Kothari – an ear nose and throat specialist based at Spire Harpenden Private Hospital in Hertfordshire and at the Luton and Dunstable NHS Hospital to find out about the latest

approaches to the treatment of snoring. Idai Makaya: Mr Kothari, apart from the very obvious ones pointed out earlier, what are the more serious health problems related to, causing, or caused by snoring? Prasad Kothari: Apart from weight and alcohol, the other common causes of snoring are: Blocked nose due to allergy, polyps - or a crooked nasal partition (septum). Enlarged tonsils. A prominent uvula (the fleshy bit at the end of the palate) and floppy muscular tissue along the palate. A large tongue, particularly at the back end. A small receding jaw. Frequently there could be more than one cause of obstruction leading to snoring or sleep apnoea. Q H ow do you determine what is causing an individual to snore? A A good history and basic examination is crucial. We calculate the BMI by measuring the height and weight to check if snorers are overweight. We also get other information e.g. collar size and other symptoms, using a questionnaire. We calculate the “sleepiness index” for people in whom we suspect apnoea. We will then perform a detailed examination of the nose and throat using a very fine flexible camera. This is a very quick and painless procedure. In some patients we will also use a revolutionary technique called “apneagraphy.” Q W hat are the treatments for snoring? A T reatment for snoring is decided mainly by the site of obstruction. The initial advice is weight reduction and life style change for some people. If apnoea is a major component then CPAP (a mask for facilitating correct airflow, to stop apnoea from occurring) is the ideal treatment. The commonly used surgical techniques are as follows: For the Nose: Shrinkage of nasal lining (called turbinate reduction) Correction of any septum deformity (called Septoplasty) Removal of any nasal polyps
words Idai Makaya For the Palate / throat: Injection snoreplasty Palatoplasty (surgery on palate - using a process called coblation) Uvuloplasty (surgery on uvula) Tonsillectomy/Tonsillar reduction For the Tongue base: Radiofrequency/Coblation reduction (to reduce size) Mandibular advancement device (a ‘splint’ to be worn at night) For some people ‘Mandibular advancement surgery’ can also be considered Some of these procedures can be performed under a local anaesthetic, as an out- patient. Q P lease explain the advantages of the “apneagraphy” you mentioned earlier. A A pneagraphy is a new and advanced method of assessment of snoring and apnoea. It is a study carried out at patients’ own homes. It involves having a very fine catheter inserted through the nose, which is then connected to a very small computer. The patients sleep with this device and it measures oxygen levels, heart rate, snoring and also apnoea. It then calculates the degree of obstruction and apnoea. The biggest advantage is that it can guide us to the site of obstruction and thereby help in planning the most appropriate remedy. The nasal catheter is very well tolerated and is painless. Q T hanks for your input Mr Kothari. Is there anything else you think people who are affected by snoring especially need to do or to be aware of? A S noring is very common and can affect personal and marital life. Simple investigations and treatment can avoid these problems in the long term. Most treatments are minimally invasive and much of the surgery to stop snoring can be carried out under a local anaesthetic. hile the dust settles after the Christmas festivities it may be an opportunity to look back and wonder where the devil the last year has gone. It certainly doesn’t seem like twelve months since I was penning the first of the year’s articles for Fish Media Group, followed by eleven more. What has made them all worthwhile have been the letters from readers. Some have asked for a particular and very specific subject while others have requested more contents of a general nature, and, given time I hope to be able to satisfy most of these. But even more surprising, in the nicest possible way, are the approaches by people who recognise a Roadshow face but also say they read – and enjoy! - the articles in the many different towns and areas covered by the distribution. It was as a result of one such conversation that I ended up staying in the Pomme D’Or Hotel in Jersey in early December. Before going further I must say that this is a great place to stay. All the right ingredients; friendly and most helpful staff, couldn’t be better location, excellent food in three restaurants and, most important to me, a knowledgeable wine waiter and a barman who can mix a fine dry martini! Anyway I was invited to participate in a Symposium on perils, pitfall and pleasures of considering antiques and the decorative arts in general as investments. I was not alone on the podium nor in the auditorium for we had a good number in the audience as well. There was a speaker on the legal aspects, an economist, and auctioneer and me and after each had had his say there was a jolly good session of questions and answers. My brief followed the lines I have touched on during the last four years which is that irrespective of what has happened before, which we can trace with charts and graphs and statistics, what we want to know is what is going to happen in the future. Well the crystal ball is not too reliable in the world of antiques but there are one or two things that make sense of an optimistic forecast. For example 18th century Irish furniture, always well considered in its native country started to be acknowledged as fine if slightly quirky as any in England about 15 years ago, maybe a little earlier. Accordingly the prices rose steeply in both places, only to slide back with the recession. Now as sure as the good Lord made little apples the Irish economy will rise again and with it the value of the best Irish 18th century furniture. Equally during the late Victorian period, when the British were enamoured by the culture and skills of Japanese craftspeople and artists their products

were at a premium. After the Second World War very few people, save a handful of canny collectors, appreciated such aesthetics. When the Japanese economy boomed so did the values of their artefacts as they started to buy back their earlier exported goods. The prices dropped with their economy but it will revive and today’s canny collectors will once again reap a rich harvest. You read it here first.
Another area I maintain remains one of the best buys is antique Irish and English glass, particularly in the form of candlesticks. I love candlesticks of any type; brass, wood, silver, iron, pewter, ceramics, and from every period. In fact I think my next article might be about just them alone. Anyway for now let’s consider the grandest type, the candelabrum. This basically describes a single stand with multiple branches each terminating in a sconce for the candle and usually a drip-pan to save the wax from spilling onto the table or carpet. Incidentally as we are still in winter and I hope still lighting candles for mealtimes, if you get candle wax on a polished wood or other surface, don’t panic. Let the wax cool and go hard. Then take a clean credit card and very holding at an angle of 45% gently scrape away the wax without touching the polished surface. When you are nearly level get a tin of clear boot polish and a linen rag and with one finger rub the polish around the remaining wax until it disappears. Then brush over with a soft shoe brush. If the candle splutters onto a table cloth then the old method is still the best; get a clean piece of brown wrapping paper and a hot smoothing iron. Place a folded towel on a firm surface, cover with the tablecloth, put the brown paper on the waxy bit of the tablecloth and press on the hot iron. The paper absorbs the wax acting like blotting paper and then it can be laundered. So candelabra were made of all materials but mostly of the more expensive type. Occasionally and charmingly in brass, more often in silver, sometimes in porcelain, the most glamorous in glass and later in gilded and enamelled metals. The great age for the glass variety was during the last half of the 18th century when the stands and branches were festooned with lustre cut drops conforming with all the classical designs of the period. Naturally the most fashionable manufacturers were eager to join in and the bases were made of ormolu, which is gilded bronze, feldspar and other semi-precious stones, and porcelain, most famously from the factory of Josiah Wedgwood. As far as investment goes, I don’t think it can apply as a primary reason for buying such useful and beautiful objects. If you happen to like a brass candlestick and its value increases then that’s good luck. If it doesn’t you still have a light at the end of the tunnel. JOHNBLY EST ANTIQUES 1891. While clothes make a statement about our taste and fashionistas keenly follow the catwalk trends, dedicated decoristas know that homes too are subject to fashion, and getting the right look is just as key. But there’s now a bewildering variety of looks to choose from and when budgets are tight, the last thing you want is to make expensive mistakes. Leading interior designers have come to the rescue to pinpoint the top trends which will influence interiors in 2011, and reveal their insider tips on successfully interpreting them. So be inspired by the designer divas and follow their suggestions for creating super stylish, successful rooms. ROOMS THAT THRILL Designer Tara Bernerd predicts 2011 will be an exciting year in interiors because there’s a realisation that our homes should suit us and the way we want to live. “Slavishly following trends in anything, whether fashion or homes, will always prove unsatisfactory,”

she says. “One positive outcome of the recession and the resulting financial restraint, is that it’s encouraging people to be far more discerning and confident in their taste. Consequently they’re investing in exquisite craftsmanship and design that endures. “We’re noticing clients showing a willingness to commit to their personal style and explore beyond the dull boundaries of perceived ‘good taste’.” BERNERD’S TIPS The look for 2011 is much moodier, more masculine and architectural, says Bernerd, founder of Target Living. “We’re looking for homes that cosset us and that means creating atmosphere. That will be achieved by using a diverse palette of colours, materials and patterns.” She predicts a palette of more muted retro tones and colour blocking with sage green, chocolate brown, Prussian blue, sienna and greys. There’ll also be a focus on wood in smoky
shades, volcanic-coloured stones, textured leathers, lacquers and metallics, particularly bronze, she says. Our enthusiasm for design eras of the past, such as the Fifties, shows no sign of waning, Bernerd adds, and investment in art will continue to increase. COSY & CHIC Designer Kelly Hoppen says: “People are still feeling bruised by the economic recession and nervous of the future, so our desire will be for nurturing spaces. Nowadays our homes aren’t there to say how much we have, but how happy and comfortable we are in the most chic way possible,” she says. Hoppen identifies a continuing trend for what she describes as a ‘linear shabby chic’ look with homes combining a relaxed lived-in style with a definite chic edginess. “This isn’t a squashy, rustic country look, it’s still very city, but with a softer edge and defining lines which are pure and clever.”

HOPPEN’S TIPS Textured wallpapers will dress walls seductively, sofas will be rounder and deeper in style and carpets in thick pile and pattern will add another layer of comfort. Neutrals, Hoppen insists, will remain the most successful base palette but increasingly they’ll be enhanced and enlivened by colour in accessories and art. “I think we’ll continue to see the modern marriage of vintage pieces displayed with streamlined contemporary ones that bring character and interest to spaces,” she says. “The fashion for hard surfaces such as chrome is waning and instead, lacquered pieces will predominate and bring lustre, sheen and essential luxury into rooms.” Lighting is also key to successful schemes, she says. Hidden and concealed lighting helps build ambience and great effects can be conjured with massive vintage or modern lighting hanging above tables. HOME & AWAY Designer Katharine Pooley believes global influences are increasingly playing a role in homes. “The world is becoming smaller as we’re able to travel farther afield and people are becoming more aware of the variation of the beauty and design of other cultures. Homes are being enhanced by a classical gilt chair juxtaposed with a modest wooden Buddha, or an African painting which may echo the colours of a hand woven tapestry from India. Such artefacts add vibrancy and personality to rooms.” The revival of pastel shades such as baby blues, sea blues, pinks and mauves will continue into 2011, she forecasts, and dense brown shades will lose their appeal. Pooley insists: “It’s important not to overlook the ‘wow’ factor. We recently created a lighting installation using an oversize glass rectangle with stalactites of glass hanging within it.”

Specialist wall finishes can feature silver enamelling and furniture can be finished in leather, shagreen (made from shark or ray skin) or parchment. WALLS GO WILD Designer Helen Green predicts a craving for personality and originality in our homes will this year banish the once fashionable, bland ‘hotel’ look. “Staying in is the new going out and there’s a growing desire for luxury, comfort and individuality in homes. As a result, art is enjoying huge popularity but that’s going beyond the predictable display of paintings or sculpture,” she says. “We’ll see an ever more creative use of art installations on walls. Recently, we covered a huge double height wall space above a fireplace in a bespoke artwork of milky white porcelain and rose petals, which had a lustrous 3D effect. The only limit nowadays is the imagination.” Walls, she says, will go wild as the choice of coverings further expands beyond traditional wallpaper - and fabrics such as silk, suede or eco-friendly materials including bamboo become mainstream. GREEN’S TIPS Dark woods, such as American walnut, are now giving way to the lighter North European influence in interiors, says Helen, and paler woods with a limed finish will predominate: “Accents of colour - lime green, burnt orange, cinnamon, russets and deep rose pinks - pair well with a base palette of cool, pale greys and ivories,” she advises. “You can introduce colour in accessories or furniture such as a versatile
L-shaped sofa or chaise upholstered in jewelcoloured velvet.” LUXURY & GLAMOUR Designer Joanna Wood forecasts glamour, comfort and opulence on the horizon for homes. “Minimalism will be declared utterly dead in 2011,” she says. “Everyone is completely fed up with the clinical, austere settings dominated by taupes and beige, and we’re entering a much more fun phase. Because we’re spending more time in our homes, we’re investing more time and money as we need them to be places that are pleasurable, cocooning refuges for living and entertaining. But that doesn’t mean we’re going to embrace maximilism. There’s no place for over the top embellishment, rather it’s about creating subtle but luxurious settings which are admired for their good looks rather than ostentation and conspicuous displays of wealth. There’s an art in combining elegance with a sense of drama - by perhaps displaying a ‘wow’ factor piece such as Ralph Lauren cocktail bar - that’s what makes great rooms.” WOOD’S TIPS Glitter and gloss will rule, she says, as lacquered surfaces and metals continue to star in rooms. “Brass and gold is being pushed aside in favour of nickel and bronze or nickel and silver,” she says. “Those finishes may command attention in a statement piece or panel, or be seen as trims on furniture or perhaps in detailed touch such as door handles.” And colour’s revival is unstoppable, she predicts, with shades of red, orange, pistachio green and mulberry pink ready to enliven a neutral backdrop.
POOLEY’S TIPS Texture and quality are watchwords for next year as people realise the enormous amount of creative potential in homes, the designer says. “People are becoming much more confident about commissioning bespoke pieces which will become modern day heirlooms, or are seeking individual

15TH - 16TH FEBRUARY 2011 AT RHS HORTICULTURAL HALLS, WESTMINSTER SW1 As one of the best events to inspire Londoners to grow, the RHS London Plant and Design Show will showcase two contemporary Show Gardens that will champion the use of green-roof gardening in the city. A recent RHS study has shown that rooftop gardening can help combat climate change by lowering surrounding air temperatures and the RHS encourages urbanites to make the most out of their outdoor space and help the environment by growing plants. For this reason, London authorities are making green roofs standard features in developments and the Mayor of London’s draft Climate Change Adaption Strategy aims to increase the amount of ‘greened’ surface area in the city by at least five percent by 2030. RHS Tijana Blanusa, who undertook the RHS research, says: ‘With our climate getting warmer gardeners will be playing an even more important part in helping reduce the effects.’ ‘Getting planting right in urban spaces, which can be very limited, can have a major effect in not only helping reduce urban temperatures but will also provide other environmental benefits. So, this

exhibition is really useful for people looking for tips on how green-roofing can work for them.’ The modern-style rooftop gardens are being designed by two rising stars of the gardening world: RHS Young Designer of the Year 2010, Hugo Bugg and Melissa Jolly who won a top award for a competition in BBC Gardeners’ World 2010. They will demonstrate how green-roof gardening and living-wall planting can be stylish and sleek as well as good for the environment. Twenty-three-year-old Hugo, who also won an RHS Gold medal and Best Show Garden at RHS Show Tatton, said: ‘I’m thrilled to be creating another Show garden for an RHS event. It will be a 4 by 5 metre urban retreat that I’m hoping will inspire visitors to go out and exploit every inch of their outdoor space in a creative way’. Other benefits of green-roof gardening include heat-insulation, water-absorption, providing a safe environment for wildlife and soaking up pollution. Recently, a new industry code of practice has been set up that gives the key requirements for successful green roof design and installation.

DAVID MITCHELL Hertfordshire based actor, comic, panel show favourite and Peep Show star David Mitchell joins Jimmy Carr, Charlie Brooker and Lauren Laverne in new comedy and current affairs show 10 O’ Clock Live, launching on Thursday, January 20. Each week the hosts will present an intelligent, informative and funny take on the world of current affairs with a mix of debates, interviews, topical comedy, investigations and opinion pieces. They’ll be joined by the finest and sharpest minds from comedy, politics, science and culture - all live in front of a studio audience.
SO WHAT TONE WILL YOU BE GOING FOR? ARE YOU A PAXMAN OR A PARKINSON? I’m not planning on being nasty but I don’t want to be looking to pick holes from the moment they open their mouths. Their may already be too much of that in TV news but I do think you should allow people to express what they want to express and not to try to catch them out. It shouldn’t be an exercise in them not saying anything. People forget these people went into politics often with the best of intentions so it’s still important we let them express what they want to express.
THIS ALL SOUNDS QUITE EDGY. IS CHANNEL 4 MAKING A RETURN TO THE GOOD OLD DAYS? I think it feels that there is room for intelligent comedy show that scrutinises the news. The election show we did seemed to go down well. I don’t know if it’s kind of a return to the old days for C4 or a move into the future but it seems to think the time is right.
IT WON’T BE ALL SNEERING THEN? We have to be very careful to avoid sneering. What I want the show to feel like is engaged and interested and be a show that people who are interested and want to see changes can identify with - not just a show that thinks politics is dull and boring. That feels particularly important.
IT SOUNDS LIKE A VERY NEAT FIT FOR A CEREBRAL AND POLITICALLY AWARE COMIC LIKE YOURSELF? I’m nervous to say it’s my dream job but if it goes well I can’t think of a job I’d rather have.
DO YOU DREAM OF YOUR OWN DAVID FROST MOMENT? My equivalent of Nixon falling apart? Making David Cameron cry, perhaps. It would be really good for culture if a humorous show that genuinely scrutinises our politicians became a fixture. I think we’d be a healthier democracy. I’m not saying it would transform our democracy but it could at least help like an aspirin.
SO, WHAT WILL IT BE LIKE? We’re going to try to avoid comparisons if possible, but our general approach will be to scrutinise politicians in the news and at the same time be funny and entertaining. It sounds incredibly straightforward put like that. I’ll be chairing a debate each week and interviewing a politician and I want to be asking the same sort of questions as would be asked on a serious show but with a frivolity and with a view to making people laugh. I don’t think any of the discussion topics on a so-called serious show preclude humour. WHAT ARE YOU EXCITED ABOUT? One thing I’m looking forward to is interviewing them in front of an audience because if they say something ridiculous, the audience will laugh, and that’s very different from Newsnight or the Today programme where they can evade questions without getting titters from the audience.

HOW DID IT ALL COME ABOUT? C4 wanted to do an election night and the company making it thought of putting us four together and it just seemed to work. We gelled and it was fun to do. Everyone involved felt it would be really good to take this further. It was quite a high-pressure environment to give it a pilot - live TV on election night, but we couldn’t really have lived with ourselves if we turned it down. We rather thought it would be a one-off but when it went big and there was the opportunity to do more, we were very pleased. ARE THE LAWYERS BEGINNING TO PANIC? I haven’t had a talk from the lawyers yet. We have strong viewers but the lawyers only worry when you start libelling people. Expressing opinion is relatively safe.
PEOPLE HAVE BEGUN TO THINK OF YOU AS A STEPHEN FRY-IN-WAITING. A RENAISSANCE MAN FOR A GENERATION, HOW DO YOU FEEL ABOUT THAT? No I’m not comfortable with that at all. I feel tremendously inadequate when compared to him. If people mean it as a compliment then thank you but I think anybody would suffer by comparison to Stephen. YOU’RE A BUSY MAN. IS YOUR SCHEDULE BECOMING AN EXERCISE IN LOGISTICS? There are times when it is but I’m fortunate at the moment. There are lots of things I’ve wanted to do that I’ve been able to fit in. There are some weeks I wonder how it will all work but it seems to and there’s something reassuring about being busy when you’re freelance. WHAT’S IN STORE FOR YOU IN 2011? This until the end of April then Rob (Webb) and I are writing a book. Well, I say we’re writing it but we haven’t really started. That will come out for Christmas. And there’s more Peep Show next year and more Would I Lie To You? WOULD YOU CONSIDER ANOTHER MOVIE ROLE? Certainly. I got into comedy because I like TV comedy but the opportunity to do a film would be great. I don’t want to write one. I don’t feel I need to make that step but if the offer came along and it looked like a part I could play I would do it with great joy. IT STRIKES ME YOU WOULD MAKE A GREAT STAND-UP. DO YOU FANCY THAT? I’ve never considered it seriously. I’ve never liked the sound of that - just being alone with a microphone. When you’re playing a character you have something to hide behind. The same on a panel show, you’re playing a parlour game. The exposed nature of a microphone and a job of eliciting laughter from an audience, that all seems a little exposed for me.
