Almost one million visitors packed Bournemouth’s beaches and cliff-tops for the resort’s fifth annual Air Festival, which took place from 30 August to 2 September – pronounced by festival-goers the most successful to date. e organisers also declared it a triumph for the UK’s leading seaside resort which saw the busiest aeronautical and evening entertainment programmes yet staged, attracting crowds of 964,000 over the four days. More than 125,000 visitors and residents flocked to Bournemouth beach on launch day ursday, greeting the arrival of the Red Arrows with a roaring cheer and clapping ovation. Another 180,000 arrived on Friday and with temperatures soaring on Saturday, crowds of more than 370,000 people thronged onto the sands, followed by 171,700 on Sunday. ousands lined the East Overcliff and seafront across the four days, keen to score pole position for views and images. Aviation action came from aircraft including the ear-splitting RAF Tornados, Battle of Britain Memorial Flight, the awesome Miss Demeanour, Royal Navy Black Cats and the iconic Avro Vulcan, to name but a few – we bring you the highlights from this wonderful local event. e railway line through Upton was part of the Southampton Dorchester line, known locally as Castleman’s Corkscrew after Charles Castleman who promoted this line and the circuitous route it took. It connected stations such as Broadstone, Wimborne, West Moors and Ashley Heath to Ringwood and Hamworthy. e line was closed to passengers in 1964 and to freight over the following 10-15 years. e track has since been removed and the open space left has become a country walk, the Castleman Trailway. Alan Burridge remembers the steam trains which passed the bottom of his garden and growing up in Upton during the 1950s – we bring you a wonderful article from Alan Burridge. If you saw the recent Channel 4 documentary about Big Dance 2012, the UK's biggest ever celebration of dance, you will probably be familiar with world-renowned British choreographer Wayne McGregor, who took on this hugely ambitious project choreographing over 35 dance groups to perform together in one place. e event weaved together over 1000 performers in one epic scale 40-minute work in Trafalgar Square: a unique and memorable event as part of the London 2012 Festival. Wayne’s company Random Dance, who were involved in the event, will be bringing his latest full-length work, Far, to Lighthouse, Poole’s Centre for the Arts on September 25th. Wayne McGregor’s dynamic style and ground-breaking collaborative approach across dance, film, music, visual art, technology and science has seen him create a string of truly unique, interdisciplinary work over the years, including the choreography for Radiohead’s Lotus Flower video, which features singer om Yorke dancing. Far is no exception. With just two weeks to go, Windfest Re-Tuned at Pylewell Park, Lymington has been informed by New Forest District Council they will not give permission for the event to be staged. After months of stakeholder engagement and strong support from other key departments including licensing, highways and Hampshire police, the council’s estate and property management division has forced organisers to pull the plug so close to the event date. Despite positive dialogue and support from all key bodies including Natural England and local residents, the organisers are devastated that at the eleventh hour, following strong ticket sales and with full event infrastructure in place, the event has to be cancelled. Random Dance I

f you saw the recent Channel 4 documentary about Big Dance 2012, the UK's biggest ever celebration of dance, you will probably be familiar with world-renowned British choreographer Wayne McGregor, who took on this hugely ambitious project choreographing over 35 dance groups to perform together in one place. e event weaved together over 1000 performers in one epic scale 40-minute work in Trafalgar Square: a unique and memorable event as part of the London 2012 Festival. Wayne’s company Random Dance, who were involved in the event, will be bringing his latest full-length work, Far, to Lighthouse, Poole’s Centre for the Arts on September 25th. Wayne McGregor’s dynamic style and ground-breaking collaborative approach across dance, film, music, visual art, technology and science has seen him create a string of truly unique, interdisciplinary work over the years, including the choreography for Radiohead’s Lotus Flower video, which features singer om Yorke dancing. Far is no exception. e production binds cutting edge design with choreography made from a radical cognitive research process. Inspired by the controversial Age of Enlightenment and by the 18th century French philosopher Diderot's very first set of encyclopaedia, Far mines an era that first placed ‘a body in question’. Danced by an ensemble of ten performers and the finest exponents of McGregor’s singular style, Far is set to a haunting score by electronic superstar and Brian Eno collaborator Ben Frost, within a mesmerising environment of shadow and light

THE BOURNEMOUTH AIR FESTIVAL

Soars to New Heights!

A

lmost one million visitors packed Bournemouth’s beaches and cliff-tops for the resort’s fifth annual Air Festival, which took place from 30 August to 2 September – pronounced by festival-goers the most successful to date. e organisers also declared it a triumph for the UK’s leading seaside resort which saw the busiest aeronautical and evening entertainment programmes yet staged, attracting crowds of 964,000 over the four days. More than 125,000 visitors and residents flocked to Bournemouth beach on launch day ursday, greeting the arrival of the Red Arrows with a roaring cheer and clapping ovation. Another 180,000 arrived on Friday and with temperatures soaring on Saturday, crowds of more than 370,000 people thronged onto the sands, followed by 171,700 on Sunday. ousands lined the East Overcliff and seafront across the four days, keen to score pole position for views and images. Aviation action came from aircraft including the ear-splitting RAF Tornados, Battle of Britain Memorial Flight, the awesome Miss Demeanour, Royal Navy Black Cats and the iconic Avro Vulcan, to name but a few. e Royal Navy and Royal Marines joined forces to create a must-see interactive village area. For the first time e Navy brought three ships to the bay, while the village showcased a full display of

artillery from the 29 Commando Regiment. A 20-foot climbing wall proved a huge hit with youngsters. Also on the ground, the RAF village provided a full size mock up of a Chinook helicopter, the workhorse of the RAF, while the armoury engineering section gave the public an insight into ground defence weapons and aircraft defensive aids. Sumptuous delights from around the globe were on offer on the East Overcliff at the Food Fiesta, providing hungry plane spotters with everything from fajitas and pasta to ai cuisine and pastries, ideal for either a hearty lunch or an on-the-go snack. Younger visitors enjoyed being snapped with their favourite Transformer or with some of the amazing birds of prey displayed on the Falconry UK stand. Or they took a seat in a RAF Glider, while e Speedo road show located to the West of Bournemouth Pier offered interactive pods, an athlete podium and much more. e stunning Dusk and Night Air displays on ursday and Friday nights saw crowds treated to a fantastic aviation spectacle by the SWIP Team Twister Duo, fearless Tigers parachuting 10,000 feet lit up with glow sticks and smoke trails, and O’Briens Flying Circus. Spectacular firework displays lit up the skies on Friday and Saturday nights at 10pm, sponsored by the Oceanarium. Newton Faulkner and Lawson were just some of the household names to wow crowds of more than 6,500 on the beach. With a full moon, balmy temperatures and illuminated ships in the bay, the seafront at Boscombe became the coolest spot to be on the South Coast and the atmosphere was electrifying. Bars and restaurants were packed to capacity as visitors stayed to listen to the bands. At Bournemouth Pier the stage rocked to anthems of some of the UK’s favourite tribute bands, including classics from Madness, hits by Queen from e Queen Band and one of e Who’s greatest tribute acts, Who’s Who. Families strolling through the Lower Gardens were treated to a host of entertainment from 5pm, with Dodgy Totty’s quirky outdoor theatre, the circus skills of Barney Bay and the fire-throwing skills of Flame, amongst others. “It’s been wonderful to have had such appreciative crowds,” said Air Festival Director Jon Weaver. “e Royal Navy, RAF and Army have been enormously supportive of the event despite extremely heavy commitments with this year’s Diamond Jubilee and Olympics, we’re grateful to have such solid support for Bournemouth. ”It’s been great talking to Festival visitors saying they felt it was the best year ever!” Clear skies and warm weather kept flying itineraries on schedule,

and as temperatures soared, festival goers cooled off with more than 25,000 ice-creams sold. One and a half miles of stall holders, rides and food outlets also proved enormously popular, both along the beach and on the East Overcliff with a line-up of new attractions and global cuisine. As well as taking advantage of finding out about the Forces at the RAF and Royal Navy Villages, more than 900 people got the chance to visit HMS York anchored in the bay and flanked by RFA Mounts Bay and HMS Severn. Commander Tom Herman said; “e Air Festival is our largest outreach event of the year. A record number of people visited HMS York to experience naval life; which was in addition to our Navy Village ground assets, the support from the Royal Marines, Army and the mighty RFA Mounts Bay and HMS Severn which were at the heart of our activities.” e RAF Village was buzzing with festival goers delighted to be able to visit a mock up Chinook and speak to members of the Red Arrows Team. Flt Lt Pete James said; “We have received a fantastic reception from the people of Bournemouth and look forward to being back next year with a full display of nine aircraft.” Next year, it will be back, as big and beautiful as ever. e dates for the 2013 Air Festival have been confirmed ursday August 29th – Sunday 1st September ■

WIND TAKEN OUT OF SAILS FOR WINDFEST RE-TUNED

W

ith just two weeks to go, Windfest Re-Tuned at Pylewell Park, Lymington has been informed by New Forest District Council they will not give permission for the event to be staged. After months of stakeholder engagement and strong support from other key departments including licensing, highways and Hampshire police, the council’s estate and property management division has forced organisers to pull the plug so close to the event date. Despite positive dialogue and support from all key bodies including Natural England and local residents, the organisers are devastated that at the eleventh hour, following strong ticket sales and with full event infrastructure in place, the event has to be cancelled. Windfest organisers, Gary, Mick and Phil wish to extend their apologies and extreme disappointment to ticket holders, supporters and contributors. All ticket holders have been informed and will be refunded in full. e organisers say: "Months of finance, time and energy have been invested to develop a very exciting and family friendly event; we apologise profusely that this decision, which is out of our control, will let people down. However, we will be back with news as soon as we have licked our wounds and gathered our thoughts as to how we can ensure this unique concept of festival can continue in future years." When Upton Had Trains

he railway line through Upton was part of the Southampton Dorchester line, known locally as Castleman’s Corkscrew after Charles Castleman who promoted this line and the circuitous route it took. It connected stations such as Broadstone, Wimborne, West Moors and Ashley Heath to Ringwood and Hamworthy. e line was closed to passengers in 1964 and to freight over the following 10-15 years. e track has since been removed and the open space left has become a country walk, the Castleman Trailway. Alan Burridge remembers the steam trains which passed the bottom of his garden and growing up in Upton during the 1950s: Upton was rather different in the early 1950s than it is now, of course. Quaintly, I rather like to parallel it with the world Agatha Christie portrays in the Miss Marple television programmes. It was a world of comparative peace, as if everyone was breathing a huge sigh of relief after living through two World Wars in fairly rapid succession; it was also a world of immense honesty and trust. People were far more agreeable and polite, and day-to-day living had a freshness and zest because of it. And we dressed much as they did in the Miss Marple films, too, and few but the village practitioner, Doctor Chown, owned a car.

Yes, Upton was this quiet and tiny village slightly the worse-for-wear after those two World Wars, where everyone knew everyone else and if you didn’t attend church on Sunday you were rather frowned upon, as it was regarded as the social place to go. And no one had much else to do, anyway, and it was something of a nice change for everyone to put on their best clothes. Parallel to the main Blandford Road, from Hamworthy Junction, (which is now part of the Country Walk), was the railway line going to Broadstone and beyond. Adjacent to what is now the ‘Crossways’ lane were the railway gates and a small signal box, and a fair few trains used the line on a daily basis. Sometimes the train times would conflict with local people going to or returning from work, and the gates would be the focus of a curse from many a man made late by their closure. Most families in Upton had a large back garden, growing as much of the food to be put onto the table as possible, as well as rearing chickens for their precious eggs, so the plot would be regarded as a smallholding. So we grew up being gardeners, digging, planting and fertilising the soil with the manure from the chickens and kitchen waste. During the earlier war years, even the lawns had been dug up to SEPTEMBER2012 19

At Poole High Street level crossing accommodate crops like potatoes, greens and fruit bushes. e UK is an island, and during the Second World War especially with U-Boats prowling the Atlantic, we had to be self-sufficient as very little, if anything, from abroad would get through on a ship as they would be torpedoed and sunk. e Summers were great but the Winters were freezing, and with the words ‘central heating’ not yet in our vocabulary, the evenings would be spent listening to the wireless (radio), playing cards or reading and writing, whilst sitting as close to the open coal fire as possible. Chilblains would inevitably be the result of this indulgence, and Snow-Fire chilblain cream would be in every home to combat this common ailment. Getting up on a frosty Winter’s morning was truly a bitter experience 20

and, as ‘double glazing’ had also not yet been invented, most of the windows would be iced-up both inside and out! Overnight, the fire would have extinguished itself, of course, so a portable stove, which burned paraffin, would be brought into the front room or lounge, placed in the hearth and lit. On weekdays, fresh from our bed and dressed in pyjamas and dressing gown, shivering we would change into our school clothes which felt as if even they had spent the night hanging on the washing line in the garden. at done, breakfast might be cereal, toast and dripping or both. Dripping was the fat from the Sunday meat roast, solidified and spread on toast or even plain bread. Like the Eskimo, the fat helped keep us warm. My abiding memory of Winters in Upton was the bitter cold. Every home suffered the same; families just had an open fire in the one room and that was it. e milk would be delivered by the local dairy’s milkman, Plumleys or Arnolds, as there was no other way of getting it. With the cold so intense, by the time we got up to fetch the milk from the doorstep, the cream would have solidified pushing the tin-foil lid off, enabling the blue tits and other small birds to peck at the cream to get their little bit of fat to keep them warm and alive. Generally, the refrigerator had yet to be installed in the majority of people’s kitchens and most families had what was called a ‘safe’ instead. A ‘safe’ was a wooden cupboard on legs, with finely-meshed wire set into the door and both sides. It would be sited facing towards the Northerly direction, and it was regarded as ‘safe’ inasmuch as the milk, cheese and meat inside it could be kept ‘safe’ from flies or hungry cats or dogs, whilst being kept fresh at the same time. However, there was a boom in sales of refrigerators during the long hot Summer of 1959. Although we didn’t realise it, we were so fortunate having the railway line from Hamworthy Junction through to Broadstone and beyond at the top of the garden. To be honest, we didn’t even know at the time where anything beyond Broadstone might have been. We were aware this place named Broadstone existed, but with travel the way it

was at the time, we had never actually been there, or indeed, ever had a reason to consider going. So, Broadstone and beyond was something of a mystery, much like Corfe Mullen, Wimborne and most of the other ‘local’ villages. Imagine not having a car; Tesco at Fleetsbridge or Asda in town would be quite some haul by public transport, especially as the bus service wasn’t as good then as it is today, then perhaps you can understand why such easy-to-get-to local places as they are now, seemed so far away. On even a half-decent day, we would think nothing of walking to Hamworthy to see Gran’s sister or even all the way into Poole to do some shopping. Poole Bus Station consisted of a rough, flat piece of concrete, (which is now Kingland Crescent, situated between the railway gates and the H. Samuel’s entrance to the Dolphin Centre) with half-a-dozen bus stops, and much like today, we would queue at the appropriate one. e land the Dolphin Centre is now built on was a flat piece of grass called ‘Lady’s Walking Field’, where Summer would usually bring a circus or a fair. Other than watching the trains going by or shunting, when everything was clear we

would walk back along the railway line behind our house towards Hamworthy Junction, hoping not to get caught (as it was Private Property and a dangerous place to be) and would run like the clappers if anyone spotted us. It was easy to tell when a train was due, as there was a wire running alongside the line to the signal, so when the signal went up to indicate a train was on its way, the rarely-oiled wire would squeak, which gave us some time to either get back home or hide. In Summer two men would gradually work their way along the side of the tracks, with a crooked stick and scythe, cutting down the grass. Inevitably, as it dried out over the next few weeks, a hot piece of coal would be blown out of the train’s funnel as it chuffed past and land in the dry, cut grass catching it alight. We would beat it out as best we could. But this was all part of the fun, and we enjoyed ourselves immensely doing such things.

Wimborne Food Festival Top TV chef Jun Tanaka is heading back to the Wimborne Food Festival to entertain the crowds in 2012. Jun wowed foodies last year with a virtuoso demonstration performance in which he prepared loin of venison with beetroot salad and creamed horseradish sauce. He enjoyed it so much that he’s back for more – although this time around he is hoping to have a less stressful train journey to Dorset from London. “I had a nightmare journey and arrived late – but everyone was so welcoming and positive that I was soon really into it,” he said. “I love doing demos because sharing your knowledge with people is always very satisfying. And when people are so enthusiastic about

what you’re doing as they were here it’s fantastic.” Jun will be appearing in the Andrew David Associates & Honeybrook Farm Cookery eatre in the Cornmarket on Saturday 27th October. Organiser Clare Kavanagh is still finalising the full line-up but is sure that Jun will be a popular draw at the event which is being held over the weekend of the 27th and 28th October. “Jun was fantastic last year and definitely proved to be one of the most popular demonstrators we have had,” said Clare. “To have him back shows that chefs enjoy our unique atmosphere every bit as much as the visitors and I’m sure people will be fascinated to see what he’s got planned this time around.” Jun presented Channel 4’s Cooking It, has made regular

With young local cooks rubbing shoulders with TV celebrity chefs, traders offering flavours from all corners of the world and an eclectic mix of live music and street entertainment, Wimborne Food Festival has firmly established itself as a must-visit event in Dorset’s autumn calendar. Organisers are expecting around 15,000 visitors to flock to the town centre over the weekend of October 27 and 28 as Wimborne

he Christians, the outstanding, soul influenced group who had hits in the late 80’s and 90’s including ‘Forgotten Town’, ‘Harvest For e World’, ‘Born Again’, ‘Ideal World’, and ‘Hooverville’, are celebrating their 25th anniversary with a date at Lighthouse, Poole’s Centre for the Arts on October 5th, to coincide with the release of a new album plus Deluxe Anniversary editions of their first two albums. e Christians followed up their 1987 self-titled million selling debut album with the number one hit album ‘Colours’ in 1990, which heralded the magnificent tracks ‘Words’ and ‘Father’, while e Daily Mirror described the voice of Garry Christian as “One of the best voices of the decade”. e name e Christians refers to the brother’s surname (the original line-up included Roger, Russell and Garry, as well as Henry Priestman) and the band were also renowned for the strong messages and morals in their songs, although they have no religious connection (it’s just their surname!). During their rise to fame the Liverpool based band developed a reputation for being ‘socially aware’ and unsurprisingly comparisons were drawn to e Temptations due to the depth and range of the brother’s vocal harmonies. PLANS SECOND JUDICIAL REVIEW

F

urther to previous legal challenges by the Lymington River Association (LRA) against Wightlink’s use of W Class ferries on the Yarmouth-Lymington route, this in from Wightlink today. In their own words. e LRA and its lawyers remain determined to challenge the maintenance and development of Wightlink’s habitat protection work and its Lymington/ Yarmouth ferry service. At the full planning inquiry that was held in Lymington Town Hall last November, the Planning Inspector approved Wightlink’s project which comprised of; the running of the W Class ferries and the carrying out of habitat recharge works at Boiler Marsh and new berth works in Lymington. e berth works have now been successfully completed to the benefit of passengers and the ease of the ferry operation. APPEAL NOT MADE IN TIME e LRA’s lawyers failed to appeal the Planning Inspector’s November decision within the relevant six week period following it being made. A request was then made that the Secretary of State reconsider that decision made on his behalf by the Planning Inspector and revoke the planning permissions that the Inspector granted on the basis that they were incompatible with European law. e Secretary of State decided not to reverse the Inspector’s decision and accepted her finding that Wightlink’s project was not in breach of European Law because it was correct, to consider Wightlink’s application under Article 6.3 rather than Article 6.4 of the Habitats Directive. Wightlink supports the reasoning behind that decision.

LRA CLAIMS UNLAWFUL DECISIONS Now the LRA is claiming that the consequences of the Planning Inspector’s decisions were unlawful and is seeking a judicial review of the Secretary of State’s decision not to revoke the decision of his appointed planning inspector, notwithstanding the fact that it failed to act in time in respect of the original Inspector’s decision. CONSIDERABLE FRUSTRATION FOR WIGHTLINK e uncertainty caused by this on-going action is a matter of considerable frustration to the company given the extensive examination the proposals have already received and which were approved in their entirety by the Inspector. e latest action brought by the LRA very largely repeats its previous arguments against the project, all of which were considered and dismissed by the Planning Inspector having considered all of the evidence presented to her including that of Natural England (the statutory nature conservation adviser). Notwithstanding this, the LRA, which its lawyer describes as “a concerned local group”, is continuing to pursue its complaints about the project. e LRA is a company limited by guarantee. Despite its corporate status, it is seeking a Protective Costs Order, exempting it from all legal costs arising from its activities believing that these should be borne by the public purse, despite the fact that its position has already been extensively considered and rejected by an expert Planning Inspector. If it and its lawyers are not freed from any expense, they say the application for judicial review will not proceed ■

ast month, the Furlong shopping centre in Ringwood was delighted to celebrate 21 years as a retail destination. Despite the changes in its retail mix and the economic downturn, the centre has thrived over the last two decades and now is home to an enviable mix of stylish stores and cafés. e Furlong shopping centre opened with their anchor store, Waitrose, in August 1991 and some of the original stores still remain today; such as Grants Estate Agents, Furlong Furniture and Toys of Ringwood. Dominic Jones from Waitrose opened their Ringwood store 21 years ago and when asked what makes the centre such a success 48

comments; “I’ve been in the business for 27 years and seen many changes. e Furlong is unique as all the stores complement each other. e centre has a unique character that makes for a relaxed and enjoyable shopping experience, unrivalled in the area”. To commemorate their heritage, e Furlong marketing team organised a summer folk festival to tie in with their countryside roots. With live music from local folk band Jigfoot, a scarecrow competition, children’s crafts and a delicious BBQ; a good time was had by all. e event even helped raise £646 for the RNLI charity. e last few months have seen three new stores open – Joules, Moshulu and Gerry Weber and with plans for two new stores to

ondon Fashion Week (LFW) is one of the highest profile fashion events in the world and one of the ‘big four’ international catwalk influencers. British Fashion Council have announced the provisional schedule of designers who will be showcasing their Spring/Summer 2013 collections at London Fashion Week this month. Gabrielle Fagan asks experts for advice for sport newbies, so efforts end in golden health and not tears. Generally, most sporting bodies have experienced a hike in interest, including British Rowing which has had an enormous surge in traffic to its website - a tenfold increase in the regular number of visitors. at's all good news as new research says it's never too late to start exercising and only two-and-a-half hours of moderate activity a week could cut your chances of suffering a heart attack. Heart and circulatory disease causes one in three of all deaths in the UK. e British Heart Foundation-funded scientists confirm that exercise has anti-inflammatory effects, which can protect the heart, and the benefits will be felt even by those who start exercising in middle age. But you need to take care that you don't fall at the first hurdle.

Russell Bouwman, sport nutritionist at e Nutri Centre, says: "e key thing is to start slow. e idea that you need to be pounding the treadmill for hours to get fit or playing a high-intensity sport such as football or squash three times a week is a little outdated. "Starting slow, maybe by walking or an exercise class, minimises the risk of injury, builds confidence, as well as releasing some of those feel-good brain chemicals called endorphins. "e key is being consistent. As general health and wellbeing is increased, people can then move up to more active sport such as jogging, cycling or swimming if they wish." So on your marks, get set, go for an Olympics-inspired health strategy. GOLDEN TIPS ●

While the hope for a medal keeps Olympians focused, you should have a specific goal in mind too. It could be increasing your time on an exercise bike or rowing machine in a gym to taking part in an event such as a charity run.

Get an assessment of your abilities and current physical standard from a trainer or a club coach if you're returning to sport after a long break, rather than relying on rose-tinted memories of youthful success.

If physically demanding, high-impact sports aren't suitable for you, don't be afraid to explore less demanding activities. Mental stimulation and exercise play an important role in improving brain function. Most clubs welcome new members and many offer taster sessions to allow you to try out an activity before joining.

Listen to your body. e body's ability to heal and recover can take longer as we age, which doesn't mean you need to halt exercise because of every small twinge, but don't ignore a pain or problem that persists beyond a few days. If in doubt, seek medical advice to prevent a short-term interruption becoming a long-term lay off.

A vitamin supplement can give your system a boost, which it may need if you're embarking on a new health regime. BEST FOOT FORWARD Our feet bear the brunt of pressure when we exercise, so they need to be treated with care. With 26 bones and 40 joints, the foot is one of the most complex structures in the human body. Before you pound those pavements, make sure you have suitable running shoes, and ideally try to run on the more forgiving surfaces of a track or in a park so that the impact is less jarring on your feet and knees. "When running, the repetition of the foot hitting the ground causes damage to the tissue, resulting in a tight feeling in the sole of the foot," says Dave Wain, podiatrist from Carnation Footcare. He advises trying an orthotic insole, such as Carnation Footcare Powerstep Pinnacle, £47.10, from www.powerstep.co.uk and independent pharmacies. "Orthotic insoles can also be beneficial for runners that over-pronate, an inward rolling of the feet, as they can help to correct gait and, in turn, improve running technique," he says. If foot pain occurs after swimming, running or cycling, he advises using a Carnation PediRoller, £9.48, to help reduce inflammation of the affected tissue and strengthen muscles in the sole of the foot. "Make sure you rest as much as possible and if the problem persists, visit a podiatrist." Wain also stresses the importance of suitable shoes for cycling. "e problem with targeting only the visible, superficial muscles is that we may be unaware we lack vital core stability, which is essential to protect our back and joints. "It's like building a house on sand which is at risk of collapse with such a poor foundation. Remember, even if you look as if you have a perfectly toned body, it doesn't mean that your core is good." Your home's front door makes a statement, but is it the right one? It's key to your home's kerb appeal and to making a good first impression, both to visitors and, when you want to sell, potential buyers, so make sure yours isn't letting you down. Ideally, the colour of your front door should go with the house's brickwork, paintwork or other exterior finish, and the style of the door should suit the house's age and architecture - a modern door on a period house just doesn't look right. If you've got a front door that doesn't fit in, or that's seen better days, you need to remove or improve it. But before you go out and get yourself a new door, check the rules and regulations. e door may have to comply with building regulations, particularly if it's glazed, so ask the retailer/fitter or your local council's building control department about this. If your home's listed, you may need consent from the council to change the door. You may even be restricted to using certain colours when repainting an existing door - the council's conservation office will be able to advise you. Restrictions may also apply if your home's on 'designated land', which includes conservation areas and Areas of Outstanding Natural Beauty. If you live in one of these areas, ask the local council about what you can and can't do to your front door because they may want to keep the appearance of the building unchanged. With leasehold flats and houses, check the lease before doing anything to the front door because it may not be yours to replace or repaint, or you may need the freeholder's permission. Painting a front door isn't hard to do just make sure you use wood paint suitable for exterior use. You can either take the door off its hinges and paint it inside, or leave it in place and wait until a fine, warmish day to paint it. Replacing a front door is trickier because new doors always take quite a bit of adjusting, which can be frustrating and time-consuming. e other problem is fitting the locks you don't want to compromise your home's security, so get an expert in if you're not sure what you're doing or you get into difficulty. As well as looking good, your door must

PRODUCT OF THE MONTH Sometimes stains appear on walls and woodwork and you don't know what's caused them or how to get rid of them. If however many times you paint over them, they keep coming back, you need to use a specialist paint. Polycell One Coat Stain Stop, £12.65 for 1ltr, is just the thing for the job. It's a thick white paint that covers stains permanently (usually in one coat, but sometimes a couple are needed) and dries pretty quickly. It covers most stains, including pen, grease, nicotine, crayons, rust, soot and old water marks, and can be used on concrete, stone and masonry, as well as plaster, plasterboard and wood, so it's really versatile - and effective. HOW-TO TIP If your door needs a facelift, begin by carefully taking off the door furniture, then use a scraper to remove any flaking or cracked paint. Apply exterior wood filler where required and sand it - and the rest of the door - when set. Apply a coat or two of exterior wood

primer-undercoat and once dry, rub the door with fine sandpaper to remove any rough patches, dust and debris, then wipe it over with a damp cloth. is will create a good surface for the top coat to stick to and should ensure a better finish. "e more effort you put into preparing the door at the beginning, the more likely you are to get a beautiful, long-lasting finish," says Mark Bannister, decorating consultant for exterior paint specialist Sandtex. "Not only will your front door look great, it will also be protected from the elements for years. "And with a host of new on-trend colours available, homeowners can also put their personal stamp on their property to make sure it stands out from the crowd." Ensure that you apply the top coat to all the exposed surfaces, including the top and bottom edges. Missing these will mean that water seeps in, causing the wood to shrink and expand with the weather. When the first coat's completely dry, apply a second coat if necessary. U

nless something goes wrong with your home's electrics (or you get them checked by an electrician, which you should do every 10 years), it's hard to know if they're safe or not, but this is something you don't want to take any chances with. Not only should old-fashioned fuse boxes, sockets, switches and wiring be replaced, but you may need to do electrical work as part of big home improvements, such as fitting a new kitchen, converting the loft, or changing the use of a room. While it may be necessary, changing the electrics can be very dirty and disruptive. If often involves gouging out plaster to create channels for the cables and taking up the floors, making it hard to continue living there while the work's being done. You can legally do some minor electrical work yourself (see www.planningportal.gov.uk or ask your local council's building control department if in doubt), but it's generally a good idea to get a qualified electrician in. e easiest option is to employ an electrician who belongs to a 'competent person scheme', such as NICEIC (you can search for registered electricians at www.niceic.com). ey can self-certify that their work complies with building regulations (Part P covers electrical work and applies in England and Wales). If your electrician doesn't belong to a competent person scheme and the work they've done must comply with building regulations, you'll have to pay a building control officer from the council to inspect it. In Scotland, the process is slightly different. You apply for a building warrant from your local council to do building work

and any electrical work done under the warrant must be checked by the council or an 'approved certifier' (a registered installer). If you're unsure about the rules and regulations that apply to your part of the country, ask the council. You may want to draw up a contract with your chosen electrician, especially for big jobs. is should cover things like the work they'll be doing, the price they've agreed to do it for and how long it should take, so you have some form of redress if things go wrong. While you may need to pay the electrician upfront for materials (check the receipts), it's not advisable to pay them upfront for labour. If they want payment before the job's finished, the best option is to pay them in instalments when they meet agreed targets, so you're not paying them for work they haven't done. When they've finished, ask them for a certificate to prove that the work is safe and legal (building control can also issue this), which you may need when you sell your home. You shouldn't need planning permission to do electrical work, but you may have to apply for listed building consent from your local council if your home's listed. And if it's leasehold, you may need the permission of the freeholder, depending on the terms of the lease. PRODUCT OF THE MONTH Mixing your own paint colours is a great way to create a unique look, use up leftover paint or get the perfect colour if you can't find it in the shops. But using a paint stirrer is time-consuming and hard work, plus it's easy to leave unmixed paint at the bottom of the tin. Instead, use the Titan Power Paint Mixer (£2.99, Screwfix, www.screwfix.com) drill attachment, a very useful and inexpensive addition to your toolbox. You simply pour the paint into a big tub, attach the Titan to your drill, turn it on and mix away - the paint's mixed in minutes and with a lot less arm ache than with a stirrer. HOW-TO TIP Mould and mildew on walls and ceilings is unsightly and unhealthy, but it's common in kitchens, bathrooms and around windows that suffer from condensation. If it's a problem in your home, scrub the area with a specialist cleaning product (try Polycell 3 In 1 Mould Killer, £6.98 for 500ml, B&Q) to get the worst of it off, then use a specialist paint to cover any marks that remain. Ronseal Anti Mould Paint in White (from £18.98 for 750ml, B&Q) works really well and unlike a lot of specialist paints, it's water based, so it's nice to use and dries quickly. As well as covering mould marks, it prevents regrowth for up to six years and is ideal for kitchens and bathrooms because it's moisture and steam resistant ■

O

ver the years – five to be precise – I’ve written about the Olympia Fine Art and Antiques Fairs, the now deceased Grosvenor House Antiques Fair and more recently the newly formed Masterpiece, which is exactly that, and it has occurred to me that not many people know these are just the very tip of an enormous mountain of antiques fairs held throughout the UK seemingly every day of the week. ey are as varied in style and size as the merchandise on show. One of the largest in Europe is held annually at Newark, with 2,500 stallholders and covering 84 acres. is is organised by IACF – International Antique and Collectors Fairs – and is one of twenty eight similar events they hold throughout the country drawing 100,000 visitors and engaging over 10,000 dealers. en there are the several fairs organised by national and regional trade associations such as the BADA – British Antique Dealers’ Association and LAPADA – London and Provincial Antique Dealers’ Association. ese fairs usually run for a week and are held in elaborately constructed marquees on the grandest of scales. On the other hand there are the vast majority of one-day fairs, held in hired village halls or hotel banqueting suites and usually individually run by a single person or small company. To my mind these are certainly the most enjoyable if you are looking for a fascinating day out rather than an academic or commercial event. Some of these have been going for many years, indeed one of my favourites is the Bushey Antiques fair which recently celebrated its 30th anniversary.

It’s run by David Maggs of Yewtree Antiques and has over 100 tables showing a wide range of merchandise. ere are up to four halls in total, comprising a flea market in three halls and antiques and collectors fair in the other. Well worth a visit, usually on the fourth Sunday in every month. Also on my list is the Midas Quality Antiques Fair held every second Sunday in the month at the Bell House Hotel in Beaconsfield. is is another old-established event now run by Terry Leigh and his brother with around sixty dealers and it can attract up to 1000 visitors, even on a ‘bad weather’ day. So successful have they been recently that they have fixed a new venture by holding a Midas Fair in the grounds of Woburn Abbey on the 26th and 27th January 2013. To my mind the best thing about these small individual fairs is the extraordinary range of goods, from some ancient brain surgeon’s drills and spatulas to Georgian door knobs and Victorian dog collars alongside really good jewellery, paintings and prints, silverware and of course

porcelain. Equally intriguing if not more so is the diversity of character in the dealers themselves. By our very nature we are a pretty off-the-wall lot anyway, but some of these people are amazing. If you’re not interested in their stock they will tell you about themselves. As an example I have got to know one who deals in fine quality jewellery, especially diamond rings, whose other lives include 40 years as a chef in the hotel trade, a butler, a tutor on etiquette in service, a wine and spirit specialist obviously we got on extremely well from this point – and High Steward in Oxford University. Just looking at his stock you can tell this chap knows his onions – in and out of the kitchen. But thirty or forty years in the antiques trade is not that long. e great surge of interest began in the early post-war years (WWII that is) when large numbers of houses were coming onto the market because those who might have inherited them had been killed in the 1st or 2nd World Wars and the resident owners were

to old and infirm to maintain them. ese houses were full of antiques of every description and had to be dispersed somehow. At the same time a large body of able men and a few women came out of four years of active service, and found no work awaiting them. Most therefore became self-employed, setting up and running any sort of business they could; publicans, government surplus agents, scrap metal merchants, demolition men, builders and antiques dealers. e job of the latter was to filter the goods and chattels from these empty houses according to their merit; junk to the junk shop, middle class goods to local antique shops and fine goods to the great galleries and emporia in London, New York and Paris. e buying and selling of these things involved considerable guile and sometimes quite hair-raising escapades. In truth the stories of Lovejoy are nowhere near as chaotic, uproarious and outrageous as real life. Someone of ‘the old school’ has already suggested a fitting title for a true book of the times might well be ‘Bookcases, Blarney, Barmaids and Booze’. In fact my next article could be a trial first chapter. Perhaps not, let’s stick to the present day and take a trip to the next antiques fair close to wherever you are and enjoy the display, the array of goods and the enthusiasm of the dealers as they talk about their stock. ey have bought these things with their own money, using their own knowledge and judgement and I’ll guarantee in five minutes you will learn something, even if you don’t buy ■

Steven Hughes PRINCIPAL OF DELICIOUS DINING GROUP You came to Southampton 25 years ago when you purchased Simon's Wine Bar, arguably the most established wine bar in the City, what was your background previously? I grew up in father's hotel business but initially went into sales and came to Southampton to live after working for the American corporation GTE selling Yellow Pages. is job was country wide starting in Southampton but moving to Hampton Court, Edinburgh, Slough, Newcastle and ending in Basingstoke. What influenced you to enter into the hospitality industry? A couple of years prior to buying Simon's Wine Bar I had invested in a Wine Bar/Club with my brother Simon. Whilst looking at this venue, we also viewed Simon's Wine Bar but ended up purchasing 80

Scandals in Southsea. I decided to leave GTE some 18 months later and Simon's Wine Bar was on the market again. I actually wanted a country pub with rooms but I'm impatient! Having grown up in a catering environment, I decided at this point it was time for me to enter into the hospitality world. Over the years the Delicious Dining venues have been, and continue to be, diverse in brand and identity - for example Mustang Sally’s and Banana Wharf. Has this been a deliberate business decision or something that just happened? It has been a deliberate decision, taking opportunities as they arose. However, only when the brands of Mustang Sally's and Banana Wharf were founded did I realise the scope for multiple sites with

putting profits back into business to create a better environment for the customer. I had individual reasons for the changes in each site, for example turning Dock Gate 4 into Grand Cafe was a natural progression; I saw the potential for large functions and this progressed to refurbishing the entire venue. When this recession finally ends we will be in a stronger position because we made the investment. You have contributed a great deal to the local economy of Southampton over the years, how many employees do you currently have? Approximately 350 staff.

the same brand. I grew Mustang Sally's to three outlets over a fairly short period but when the flagship in Ocean Village was sold to developers I followed a different path. e first Banana Wharf came along two years later in virtually the same position as the original Mustang Sally's. Do you consider yourself a risk taker? I am more often than not prepared to take a calculated risk but will always have done careful research and due diligence beforehand. ere is however some risk in opening every business, particularly in hospitality but I am prepared to put my name and signature on the line. You continue to grow your group, where do you get your inspiration for new venues from? I take concepts and ideas from various places I visit when both in this country and abroad. Normally ideas are a combination of elements from many different establishments be it in design style, service or atmosphere. I remember two venues very vividly from the 80's, Peppermint Park and Coconut Grove and they both influenced my thoughts when creating Banana Wharf. I also take opinions of those who are experts in their specific fields. More recently you've opened two boutique hotels, was it your family background that led you to diversify into accommodation? Yes, in part because the family owns large hotels and it is obvious the profitability of a bedroom is far greater than that of a restaurant. Knowledge of the hotel industry led me to eventually take that path. I had always wanted a hotel but actually my first investment in Simon's Wine Bar introduced me to the ‘great and the good’ of Southampton where I came as a complete stranger, so in hindsight it was the right decision at that time. In the last two years you've extended Ennio's Boutique Hotel, opened a 10 bedroom hotel at e Cromwell Arms, refurbished Grand Café, Yuzu, Puccini’s and opened a 3rd Banana Wharf in Poole, all of this in what is now accepted as the worst recession in living memory. Why? In some cases I have used the recession to work for the group, for example reverse premiums. You have to look to the future, every venue I have has a good, sound base and I'm a great believer in

Exotic, full of flavour and perfect for an autumn’s day, this Moroccan-style fish dish is certain to become a family favourite. The new head chef, Loic Gratadoux, of the Harbar Bistro at The Harbour Heights Hotel shares this spicy recipe with readers to celebrate his introduction to the hotel.

JOHN DORY TAGINE, SAFFRON POTATOES, BABY FENNEL AND CONFIT TOMATOES

• 6 plum tomatoes cut in quarters • 1 litre of fish stock • 8 small new potatoes, cut lengthways into quarters

SERVES: 4 PREP TIME: 45 MINUTES COOKING TIME: 1 HOUR

METHOD

INGREDIENTS

• 4 John Dory fillets Charmoula sauce • 2 tbsp of roughly chopped fresh coriander • 3 garlic cloves, chopped • 1 ½ tsp ground cumin • ½ red chilli, seeded and roughly chopped • ½ tsp saffron strands • 4 tbsp extra virgin olive oil • Juice of 1 lemon • 1 ½ tsp paprika • 1 tsp salt Tagine: • 2 tbsp olive oil • 2 celery sticks, chopped • 1 carrot, chopped • 1 small onion, chopped • ½ preserved lemon, finely chopped 82

1. For the charmoula sauce, place all the ingredients into a food processor and blend until smooth. 2. Heat the oil in a large pan and add the celery, carrot and onion and fry gently for 5 minutes, until softened but not browned. 3. Add half the chopped preserved lemon, 2 tbsp of the charmoula, the tomatoes and the fish stock. Bring to the boil and simmer for 30 minutes, then add the potatoes. Cook for another 30 minutes and then pass through a fine sieve. is sauce will be the tagine part of the dish. SAFFRON POTATOES:

1. Add a pinch of saffron to boiling water and add the potatoes. Cook for

approximately 15 minutes until tender.

1. Peel the tomatoes, cut into quarters, remove the seeds and put in a mixing bowl. Season with olive oil, salt, sugar, thyme and place on tray with greaseproof paper. Place in the oven at 70 degrees and cook for 1 hour 30 minutes. When ready keep in a container with olive oil. BABY FENNEL

Blanch the baby fennel in salted water and then cool in ice cold water. To finish the dish: 1. Pan-fry the John Dory fillets on each side for two minutes or until golden. 2. udding young vehicle technicians Sid Longworth (aged 16) and Sam O`Shea (aged 18) from Lytchett Minster School have been selected for apprenticeships at the prestigious Poole Accident Repair! e VW Group approved apprenticeships will last three years. However, as Poole Accident Repair is also a Porsche Centre Approved Body Repairer, the apprentices will then undergo further training for both VW Group and Porsche vehicles for up to a total of seven years. Over the course of this time, the rigorous programs aim to train the young apprentices to meet the extremely high manufacturer standards possessed by only a handful of professionals in the UK accident repair industry. Sid is training to be a paint technician, whilst Sam is training to be a panel technician. e candidates begin their apprenticeships in August 2012, but their places were dependent on them achieving their target school grades. Teacher Simon Wyatt from Lytchett Minster School says: “More companies should be offering apprenticeships like this. Poole Accident Repair is a highly prestigious company, so this opportunity has caused quite a stir amongst the students. It has really motivated them to be excited about the world of work.”
