t is understood that William the Conqueror created much of the fabric of Hatfield Forest at around the end of the 11th century. The estate was taken from King Harold after his death at the battle of Hastings, and William made it into a crown estate for himself. The word ‘forest’ was originally used to describe a place where deer were kept. Forests had a complex legal system and people could be prosecuted for breaking forest law. The forest law was a special law subject to the Kings preserve for hunting game. This could extend to land outside the forest to protect his deer from being poached. Henry I (1100-1135) developed the forest system further, and introduced fallow deer. The descendants of that original herd are present today after nearly 900 years. Fallow deer like woodland, thickets, scrub and plains. They are grazers, eating brambles, acorns, ivy, dead leaves and re-growth of felled trees. They do little damage to trees and crops, as they feed sparingly in one spot, and prefer to keep moving. This allows re-growth of vegetation. The thickets provide shelter and camouflage for these shy animals. Hatfield was well suited to fallow deer despite the colder climate. POACHING AND COURTS OF THE FOREST Commoner’s rights did not belong to the king, landowner or the individual, 16 DECEMBER2011

but to the house, cottage or farmstead in or around the forest. This allowed the occupants to graze their animals on the common, generally part of a forest or wood. This limited each house to the number and type of animals (oxen, cattle, sheep, pigs, goats and geese) and in some cases the time of the year as well. The most well known commoners’ rights today are in the New Forest in Hampshire which are still greatly prized by their owners. The law of forest rights allowed the king and landowners to appoint forest officials (verderers) and hold forest court. These official courts of the forest were a complex and very bureaucratic system. A hereditary chief and keeper of the forest generally over saw proceedings.

In Hatfield Forest’s case a local important land-owning family, the Barringtons, held the hereditary post from almost the beginning. The family would later own nearly one third of the forest. Poaching was always a problem within the forest, not so much from the small time local, but by more organised gangs. The forest courts would try all such cases, having the powers to blind poachers or have the offenders’ testicles removed. However, in practice most offenders were fined heavily (fines went to the landowner) or imprisoned. SUPPLYING THE KING’S VENISON Hatfield was only a minor royal

hunting forest, and was very rarely hunted by the king, possibly as there was no major house for him to stay in the area. In fact this was often the case until the time of Henry VIII. The hunting was generally done for him by professionals, or as favours for the nobilities. Kings of this time were great eaters of salt venison, so the forests were the main supplier for the king’s table. Deer were also given away as favours either by hunting a set amount of bucks and does, or alive for stocking other parks or forest. Hunting deer in unfenced Hatfield Forest was a skilled professional’s job, generally with the use of hounds. There were no guns in those early days. Detailed records show that Hatfield supplied only a small amount of fallow deer to the kings, and not in any regular time-table. For example Henry III recorded orders for venison beginning in 1231 until his death in 1271 when there were only 228 deer for his table. Another 106 were given away as carcasses or hunted, and 125 for stocking other parks. This represented about 2% of his consumption. ACKNOWLEDGEMENT

Set in 250 acres of rolling Hertfordshire countryside, Knebworth House is one of England’s most colourful stately homes. It is remarkable for having been in the same family - the Lyttons - for more than 500 years and for its romantic exterior complete with turrets, domes and gargoyles, which conceals a red brick house dating from Tudor times... 18 DECEMBER2011

The Lyttons acquired the estate in 1490 and succeeding generations have supervised additions, renovations and repairs to produce the house that can be seen today. The entrance hall was given its present form by the architect Sir Edwin Lutyens, who married into the Lytton family, while other highlights of the tour include the Banqueting Hall, Armoury, State Drawing Room, Bulwer Lytton’s Study, and the Queen Elizabeth Room. Some 25 acres of the Knebworth estate is given over to the Gardens. These have been a feature of the house since at least the 17th century, with the present layout dating largely from the Edwardian era.

Winston Churchill and many more. One of the most fascinating periods of its history was the one-year stay of Grand Duke Michael (Mikhail) Alexandrovich Romanov and his wife Natasha. Many historians do refer to Grand Duke Michael as the last Tsar of Russia, but as he only reigned for

a few hours and never actually ruled so his brother, Tsar Nicholas II, is more widely regarded as the final Tsar. Michael’s secretary, Nicholas Johnson, (his mother was English) leased Knebworth House for one year from 13th September 1913. The Knebworth archives still have the tenancy agreement together with several photographs of the

Other popular features today include a maze and an organic kitchen garden. Knebworth achieved fame in Victorian times as the home of the novelist, playwright and politician Edward Bulwer Lytton, and again in the 1970s when the park was established as the premier open-air rock concert venue in the country. Artists who have appeared there include Pink Floyd, the Rolling Stones, Led Zeppelin, Queen, Oasis and, in 2003, Robbie Williams, with the record attendance of 375,000 over three consecutive nights. The stories of many other distinguished visitors are revealed in tours of the house, which is open to the public from late March until late September. The guest book stretches from Queen Elizabeth I to Queen Elizabeth II via Charles Dickens,

couple taken during their stay at Knebworth. Michael and Nastasha’s story is very romantic and ultimately very tragic but the time they spent at Knebworth was quoted as being the happiest time of their life. Walking around Knebworth today it is very easy to see why they fell in love with the building and its gardens and park. The photographs show them happily posing with their staff and guests in the dining parlour and by the great Christmas tree – indeed Knebworth archives has the menu card from the staff ball which was signed by both of them. It is strange to see them strolling on the sunken lawn beside the newly planted avenue of limes – those limes are now fully grown. Today the house and gardens are visited and enjoyed by many who tread in those historic footsteps. The book of their love story ‘Michael and Natasha: The Life and Love of Emperor Michael II, the Last Tsar of Russia’ (Rosemary and Donald Crawford) is also in the Knebworth library.

PGA pros are top class players but are also experts in other areas of the golf industry whether managing and running clubs, coaching and teaching, utilising their equipment knowledge as custom-fit technicians or pursuing Senior Management roles such as Director of Golf like Colin who suggests, ‘you never stop learning, the day I don’t enjoy golf I will quit.’ Qualifying as a PGA professional is done via two routes. The first and most popular is by becoming a registered 20 DECEMBER2011

assistant at a PGA recognised golf facility like Hanbury Manor that is a 18-hole PGA Championship golf course. Trainees will complete a three year Foundation Degree in Professional Golf Studies. The degree involves working through study guides, assignments, residential weeks at the National Training Academy and exams. aison Blanc has introduced some wonderful new additions to its café and patisserie menu including hearty winter warmers that are available throughout the day, as well as some beautiful handcrafted seasonal patisserie, subtly evoking that touch of magic for which Maison Blanc is so well-loved. She gave me the option of using a ‘numbing’ local anaesthetic cream, which I took. Despite being nervous, I did not find the procedure bad at all. Kay talked me through each step and made sure I was comfortable throughout. She was very gentle and I hardly felt the injections; it certainly wasn’t as bad as I had imagined. She explained that

it would take between 2 and 14 days for the full results to be visible and advised me to come back after this time so she could check on the result and have a ‘dose adjustment’ of treatment if required. It was so exciting to see the lines disappearing little by little each day and I don’t think I’ve ever looked in the mirror so much as I did in those first 2 weeks! In the end I did not need more treatment as I was more than pleased with the results. I have a natural look and still have facial expression but no lines!! Botox® is not permanent, lasting only three to four months, after which, the lines that were there prior to treatment slowly return. I will definitely have it again when the time comes as it has made me feel so much more confident with my appearance. I feel that I look more relaxed and don’t have an ‘angry’ look from frowning all of the time.

In a biOrb it’s at the bottom, which might seem unimportant until you realise that fish waste sinks. Think about it, there’s no point vacuuming your ceiling when the dirt is on the floor. The filter itself takes about 40 seconds to change and only needs doing about once a month. Water oxygenation was the next challenge. See the tube in the middle of the aquarium? It has an airline running into it. Air is blown through the base of a biOrb up to the surface.

This has two main benefits, it 100% oxygenates* the water and it drives a circular water flow making sure all the water passes through the filter. ne redeeming feature of the antiques trade is that every so often something turns up that at first glance, which is usually enough for a hardened old pro, appears to be one thing but on closer inspection has so many different features that it is difficult to evaluate precisely. One such piece is the small upright chest of drawers decorated with Wedgwood ceramic plaques, illustrated here. It has a distinctly French feel to it and it is indeed an English version of the French original, which would have seven drawers rather than six. It came into being during the mid-18th century, a luxury item for a luxurious age. Essentially an item for the boudoir its seven drawers held clean lingerie for each day of the week. That begs the question why the English version only had six drawers; did we all go grubby for a day? The form was quickly adopted in late Regency and Victorian England on a commercial scale after The Duke of Wellington is reputed to have favoured it as being most compact and convenient while on campaign. From then on and still today the English model is known as a Wellington chest and usually made of good old mahogany. Sometimes the drawers are flanked by two columns, one of which is hinged and lockable when closed thus serving to secure all the drawers. But the one illustrated is very different. My first thoughts were that it might be to a design by Henry Holland, 1745 – 1806 the architect and iconic designer to the Prince of Wales. Irrespective of our being at war we maintained a strong artistic link with France and one of Holland’s favourite themes was the

However, on closer inspection it crosses the boundaries of several collecting fields and manufacturing details. The silver beaded mounts were a novelty that became a most fashionable motif during the late 18th and early 19th centuries. The inlay of once bright coloured leaves on thin threads hang from faux bamboo style tubes inlaid onto harewood – sycamore dyed with oxide of iron - are reversed on the lower section. The use of ivory for the John Linnell (cabinet maker 1729 – 96) shape feet was ahead of its time and all the timbers, the marquetry and the form of extended front columns are all elements attributable to Henry Holland. But now it starts to get complicated. The backboard is secured with traditional hand cut screws, while the back edge of each drawer bottom is secured with machine cut screws. Now the immediate reaction to that is that it must be 19th century, because it is generally accepted that machine made screws were not introduced until the 1830’s. However we now know that the first truly modern screw-cutting lathe was likely constructed by J. Ramsden in 1775. Twenty

years later in France, M. Senot created a screw-cutting lathe capable of industrial-level production, and in 1800 Henry Maudslay created a screwcutting lathe that became the international standard machine. These late-18thcentury screw-cutting lathes represented the breakthrough development of the technology but cabinetmakers used them with caution to begin with, combining the use of hand made where they might be seen and the new machine made where not. Another guide to 18th or 19th century is the thickness of the veneers. Prior to the early 1800s all veneers were cut by hand and were rarely less than 1/16th of an inch thick. The development of machinery capable of cutting veneer to a paper thickness by the 1830’s revolutionised the furniture industry and gives us strong evidence for dating. The veneers on this chest are both thick and thin. Thus far we are in mind to say a date for this circa 1830, but a pair of almost identical form and decoration with seven drawers and unquestionably French are housed in the Victoria and Albert Museum and are dated at circa1870. We shall now begin to examine the silver mounts and the Wedgwood

plaques. I will let you know. Another nice surprise recently was the discovery of two miniature portraits, or rather the discovery that one of them was of General Robert Monckton (1726 – 82). We don’t know who the other one is…yet. They are monochrome in a medium known as plumbago. This describes a particular method of drawing with finely pointed pieces of graphite onto vellum, and although it was first developed in the 17th century examples from this period are rare, and it is from the 18th century that most are found today. The fact that there is a name of a famous person on the back of a picture can mean nothing at all, but in this case there are sufficient portraits of General Monckton to be able to identify him as the subject of this miniature. He was an officer of considerable note in the British Army and a colonial administrator in British North America. He established a most distinguished military and political career and was responsible for organising the deportation of the Arcadians from the then British controlled Nova Scotia in the early part of the Seven Years War. In 1759 General James Wolfe chose Monckton to be his 2nd I.C. for the assault on Quebec and so significant was his military role during this part of his life that the city of Moncton, New Jersey is so named in his honour. So what at first glance looked like just another 18th century miniature portrait of an officer turned out to be a history lesson, for me anyway. Always good. John Bly Est Antiques 1891. arlier this year the Government announced their first comprehensive review of the Feed-in tariffs for small-scale renewable electricity generation. A case in point is this 1930’s loft conversion that is in the process of being transformed from a previous unutilised space into a super comfortable bedroom with separate wardrobe and shower areas. The bedroom measures 5m x 5.5 m and the dressing room is 5m x 2.6 m. In line with our client’s brief we have created a calm contemporary scheme with a masculine feel. Velvet, silk and wool fabrics have been used to deliver a truly luxurious retreat. The cushions on the bed are to be made up in a stripe claret coloured silk which complement the roman blinds in a matching geometric fabric. Giving further accent a black and cream geometric patterned velvet will cover the seat of the chaise. The large padded headboard is to be covered in herringbone tweed. Moving into the dressing room the bespoke wardrobe has been carefully laid out after consultation with our client. The space saving footstools will be covered in circular

his month, we had the chance to speak to James Bernard, Owner and Director at ‘Plus Rooms’ to get an insight in to how, in such a competitive environment, he maintains to push the boundaries of conventional extension building and design. With a wide array of satisfied clients, jaw-dropping case studies and a design driven approach to domestic building work, James has placed ‘Plus Rooms’ at the very forefront of the London extension market. ‘Plus Rooms’ have been operating in the London for just over 9 years, in which time they have established themselves as one of the market leaders. The company was originally set up by James’ father in 2002, with James joining the business around 2 years later. However, James’ mother and father tragically died in a car accident last November which led to James and his brother Robert inheriting the family business. While many historical features of the inn remain unchanged, Isle Crawford adopted the restrained-chic aesthetic that she used to revitalise Babington House. Much of the furniture, tableware and textiles were specially commissioned pieces by local suppliers such as Ercol in nearby High Wycombe. The inn bar, ideal for fireside banter, serves local ales, ploughman’s lunches and hearty, nostalgic dishes. The bar comprises chunky tables, low beams and a local, homely feel prevails. The dining room continues the love affair with the traditional inn concept as ‘warm, affordable and connected to good food’ (Ilse Crawford). The design elements take their inspiration from local history and suppliers. An antler chandelier provides the centrepiece to a dining space furnished with locally produced birch Windsor chairs, accessorised with sheepskin throws. Tactility and historical touches are key elements, the settles are detailed with geometric. Welsh woollen blankets while the walls whisper with references to local legends and folklore; plates printed with vintage images and woodcuts line the walls while literal historical touches such as ceramic pie birds remain. 88 DECEMBER2011


WEEKEND BREAKS The main restaurant opens out towards a vast, meadow-style garden, making it an ideal spot for alfresco summer dining, complete with an outdoor summer kitchen. Meanwhile, The Olde Bell’s seasonally inspired menu of traditional and modern British classics is the culinary brainchild of The Olde Bell’s distinguished kitchen triumvirate, executive chef and author, Warren Geraghty, head chef, Andrew West-Letford and pastry chef, Jason Farr. The inn has earned itself a reputation as a foodie retreat with menus that are in keeping with the inn’s essential character, inventive and unfussy. Additional room features include a rustic oak trestle, an Anglepoise lamp and a chair upholstered in Windsor suiting. f IN A RARE FACE-TOFACE INTERVIEW, THE HOLLYWOOD HEARTTHROB OPENS UP ABOUT HIS LATEST PASSION PROJECT, HIS FRIENDSHIP WITH THE LATE WRITER AND WHY HE REMAINS UNCOMFORTABLE WITH HIS CELEBRITY STATUS. BY SHEREEN LOW

or every big budget Pirates Of The Caribbean-style blockbuster, Johnny Depp switches it up with a smaller movie that’s close to his heart. With the fourth swashbuckling instalment, On Stranger Tides, still fresh in minds from its May release, one of Hollywood’s finest talents has chosen to follow it up with a role that may not be as instantly recognisable as Captain Jack Sparrow or the Mad Hatter, but still has that power to grab attentions on the big screen. The Rum Diary, adapted from Hunter S Thompson’s debut novel, holds a special place in Depp’s heart, because he was close friends with the author and gonzo journalist before his suicide in 2005. “Johnny probably knew Hunter better than anyone else alive,” acknowledges the film’s director Bruce Robinson. His intimate connection to the film is probably the reason why Depp - who stars in and co-produces the film - is giving rare one-to-one interviews today. Dressed casually in an unbuttoned checked shirt, with a polo shirt underneath and black jeans, various chains around his neck, blue nail varnish on his fingernails, while a big woolly hat rests on his head, covering his famous barnet. “It’s been a long road, you know,” says the 48-yearold, stroking his goatee. “This whole thing commenced around 1997 with me and Hunter, and here we are in 2011 and it’s actually happening.” Depp has been the driving force behind the film, since his discovery of the book “by accident”. “We were in Hunter’s house and there were these endless boxes of stuff. I started pulling things out and stumbled upon The Rum Diary,” he recalls. “We started reading it and I told him to publish it. Within about 20 minutes we were already talking about the movie rights and how we should

produce this film together.” Tragically, that wasn’t to happen with Thompson’s passing - but Depp ensured his posthumous presence was felt constantly on set. “One of my last efforts to salute the man was to continue in our venture, forcing him - even in death - to be a producer,” he says, giving a little chuckle. A chair with Thompson’s name on it was on set each day, along with a script cover, ashtray, cigarettes, empty glass and a bottle of Chivas Regal whisky. “We had to utilise all these elements to recognise Hunter, to salute him,” he explains. “Bruce and I would arrive on set every morning, pour the glass full with Chivas Regal, dunk our fingers in, maybe take a sip and get on with the day - just to make sure Hunter was there. And he was - every day, every second, every moment - for us.” In the film loosely based on Thompson’s own experiences as a young journalist, Depp plays itinerant journalist Paul Kemp, who decides to swap the hustle and bustle of New York for Puerto Rico, in the film which also stars Aaron Eckhart, Giovanni Ribisi and Amber Heard. It’s the second time he’s portrayed an incarnation of the writer as a young man, following his portrayal of Raoul Duke in 1998’s Fear And Loathing In Las Vegas. “There’s more responsibility, but there’s also more comfort in playing someone you know,” he says. “The challenge was trying to find the [version of ] Hunter before he found the avenue for the rage. It was like playing the same character, only 15 years before. This guy’s got something; there’s an energy burning underneath, it’s just ready to shoot out.” Depp and Thompson’s unlikely bond cemented over the years and the actor soon found himself becoming road manager on one of the DECEMBER2011 91

writer’s last book tours. “The thing I initially connected with, in regard to Hunter’s work, was his honesty,” he reveals. “You read about these amazing experiences and you think, ‘That’s b******t, it’s his imagination’ but when you’ve lived with and really spent time with him, as I have on the road, you realise it’s all true. You end up living the books.” Depp’s life could also read like a book. Now a father-of-two and happily settled with French actress Vanessa Paradis, he had previously been engaged to Winona Ryder and dated Kate Moss. Following an early role in TV series 21 Jump Street before making the leap to films like Cry-Baby and Tim Burton’s Edward Scissorhands, he readily admits he was “box office poison” for a decade, before he was offered the life-changing role of Captain Jack Sparrow. Since then, he’s switched to being a box office magnet, drawing crowds with performances of Willy Wonka and murderous barber Sweeney Todd, a part which won him his first Golden Globe award. For someone who has been in the public eye for more than half his life, Depp, who lives with his family at their four homes around the world, including a French vineyard and an island in the Bahamas, should be somewhat comfortable in the spotlight - but isn’t and says he never will be. Ever the devoted dad, he still takes his kids to school each day when he can, but says he “prefers to stay in the background” so he isn’t too embarrassing. he has since apologised for after angering antisexual violence groups. “I used the wrong word, but I meant the violation you feel when you’re hit by the paparazzi, and all those cameras and people screaming your name,” he explains. “It’s a very strange and surreal moment you never get used to. I’ve been running that gauntlet for more than 25 years now and it’s stranger and worse than it ever was.” The release of The Rum Diary marks the fulfilment of Thompson’s final two wishes. One was to shoot his cremated ashes out of a cannon, while the other was to get the film made. “When Hunter made his exit back in 2005, I had to focus my attention on getting his last wish ready to load him into a bunch of giant bullets and shoot him into the sky out of a 153ft cannon,” says Depp. “His other wish was to get The Rum Diary made and to get it out there. We’ve done that now and I feel all my commitments to Hunter are done.” And he reckons his friend would give the film his thumbs up: “I believe Hunter would be very proud, yeah. If he’d seen the finished film, he’d be whooping.” Thompson’s influence continues to spur Depp on each day. “If Hunter was here today, we wouldn’t be in this room. Most likely, we’d be in a bar and he would be holding court. It would be on his terms,” he quips. “I still have him with me every day. He’s there when I plop my noggin down on the pillow at night. I don’t get those phone calls at three in the morning suggesting whatever kind of weirdness we could get up to, but I still have him in my head.”

The sale saw some £4.5 million pounds worth of cars being sold. It was a fantastic sale with dealers and collectors from all over the world participating. There is also no doubt that many people who in the past invested in stock and shares and now looking to classic cars as a good investment for the future.” A Cord 810 Phaeton owned by Jimmy Page and Duncan Bannatyyne sold for £80,000 and a Mercedes Benz 300 SL Roadster which had been stored in an Edinburgh garage for the last 23 years made £343,000 which was £100,000 over its estimate. The BMW i8 Concept and the fascinating approach that underpins it embody the vision of a sustainable

Gino D’Acampo’s recipe for

Torta di ricotta e caffè COFFEE AND RICOTTA TART

INGREDIENTS

For the sweet pastry 190g plain white flour 100g unsalted butter, cubed +extra for greasing 2 tablespoons caster sugar For the filling 1.25kg ricotta cheese 120g caster sugar 2 tablespoons plain white flour Pinch of salt 1 tablespoon instant coffee 2 tablespoons Baileys liquor 120g dark chocolate, 70% cocoa, finely chopped 4 medium size egg yolks 50g dark chocolate, 70% cocoa for decoration ½ teaspoon vegetable or sunflower oil

to ½ cm thickness. Line the tin in a way that the pastry comes about two thirds of the way up the side. Cover with cling film and refrigerated while preparing the filling.

To prepare the pastry, sift the flour in a large bowl and add in the butter. With your fingertips, rub the butter into the flour until fine and crumbly. Stir in the sugar and pour in 3 tablespoons of cold water. Pinch with your fingers to form a dough and add a little more water if necessary. Turn the dough out onto a lightly floured surface and gather together into a ball. Cover with cling film and leave it to rest refrigerated for 10 minutes. Grease with butter a 25cm diameter spring-form tin. Place the rested dough on a lightly floured surface and roll out

Place the instant coffee in a cup and dissolve in 1 tablespoon of water and baileys. Set aside. Place the ricotta cheese in a large bowl and add in the sugar, flour and salt. Mix all together until smooth. Pour in the coffee mixture, chopped chocolate and egg yolks and stir until well mixed. Spoon the filling into the pastry shell and smooth the top. Cover with cling film and chill for 45 minutes.

Preheat the oven to 180°. Place the tin on a baking tray and bake in the middle of the oven for 1 hour. Turn off the oven, slightly open the door and leave the tart to cool in the oven. Place the remaining chocolate in a small saucepan and pour over the oil. Stir and melt over a very low heat. Take the tart out of the oven and lift out of the mould. With the help of a fork, drizzle over the melted chocolate. Slice and serve at room temperature with a nice cup of coffee.
