Welcome to our December issue... Surrey Wine School, an independent wine education company, is opening in December to run wine courses and tastings for wine lovers in Guildford. All wine courses and tastings will focus on enjoying wine and learning about it in a relaxed, enjoyable setting, and no previous wine tasting experience is necessary. The school will not sell wine and is not affiliated to any wine merchants or retailers. The sessions suit all levels of knowledge and experience, starting with Saturday introduction courses – a great way of immersing yourself in the subject through a leisurely tasting of 12 delicious wines. Richmond Park was originally a deer-hunting park, and still has 300 red deer and 350 fallow deer. When Charles I moved his court to Richmond Palace (no longer standing) to avoid the plague in London, in 1625, he turned his manor into a deer park with herds of fallow and red deer. The park was enclosed with an 8 mile long brick wall in 1637 and most of the wall is still the original today. Visit Richmond Park this Christmas A 400-year-old treasure trove waiting to be discovered and one of a series of grand houses and palaces alongside the River Thames. Ham House was built in 1610 for Sir Thomas Vavasour, Knight Marshal to James I. On Sir Thomas’s death in 1620, the house passed briefly to the Earl of Holdernesse, before becoming the home of William Murray in 1626. Murray had been the ‘whipping boy’ for the future Charles I. He took punishment on behalf of the young prince, and formed a close bond with him, growing up to share his taste in art and architecture. We take a closer look at the fascinating history.

We enjoy the culinary delights of La Capanna in Cobham
f a restaurant was judged on looks alone, La Capanna would get full marks! With original features, it’s actually an old farmhouse transported from Sussex to Cobham and reassembled behind the façade of a 16th century cottage in Cobham High Street. There are four different dining areas, The Dining Room which is the oldest part of the restaurant ; The Minstrels Gallery which is upstairs and a great place for a more secluded romantic meal; The Conservatory, very popular for parties, and finally The Italian Garden perfect for a peaceful alfresco lunch or dinner in the warmer months. So there you have it, you only have to look at the photographs here to see that La Capanna is quite possibly one of the prettiest restaurants in Surrey. I spent an evening there recently to see if it was quite as pretty on the palate! We were greeted and seated by a very friendly waiter who brought us a lovely selection of breads and extremely tasty Italian olives, although the restaurant is quite large(it can seat up to 140 diners), it still felt homely and rather cosy especially on a chilly Autumn evening. Now the wine list… wine lovers will not be disappointed. An extensive selection of many new and old world variants, as well as a rather decent list of Champagnes including a bottle of Louis Roederer Cristal at just £1800. I opted for a bottle of house white as it wasn’t quite pay day, Trebbiano D’Abruzzo Doc 2011 at a very reasonable £17 per bottle. For my starter I chose La Capanna Antipasto Misto, a delicious mix of fresh seafood beautifully presented on a black square slate. My friend went for the Scallops with Nduja Spilinga & black olive crust. Bernardo,
14 DECEMBER2012
La Capanna’s general manager took our order and he certainly knows his menu. I chose rabbit stuffed with wild mushroom risotto and he told me exactly how it was prepared as if he were the chef himself. This was off a selection of specials that change daily. Monkfish was the main course choice of my friend, pan fried with broccoli purée, clams, mussels and creamy mashed potato. It looked nice and was, so I’m told, delicious. We had a bit of a wait between our starters and main course as the restaurant was starting to get pretty busy. Bernardo appeared producing plates for us with a couple of fresh, homemade pasta parcels stuffed with Burrata. “You didn’t order any pasta dishes” he said, “I thought you might like to try some”. A really lovely touch as well as being very tasty, and the wait was cleverly disguised. White chocolate mousse with a passion fruit sorbet was our choice of desert and a very good choice it was too! Behind the scenes is the recent arrival of acclaimed chef Francesco Mazzei and his head chef from London Restaurant L’Anima, Claudio Milani. I don’t know what it was like to dine at La Capanna before their arrival but right now I can’t wait to return, pretty as a picture and even prettier on the palate.

The Christmas Forest This year, make your Christmas tree count more than usual
T
he Christmas Forest has been selling Christmas trees in London since 1998, and is London’s largest independent Christmas treetailer, operating from seven sites in London over Christmas. Their trees come in many different varieties and are all premium grade, meaning they last beautifully throughout the Christmas season. They offer a wide range of varieties including the ever popular Nordmann non-drop fir with its soft luxuriant foliage, the heady aromatic Fraser fir, the classic traditional spruce as well as re-plantable living trees. All the trees are open and clearly displayed so you can find the shape of tree to suit your room. The Christmas Forest brings the magic of visiting a country farm to the city and once you’ve chosen the right tree you can add a few more homely festive touches by shopping for wreaths, holly, mistletoe and even logs for the fire. You can also now buy online and have the tree delivered to your door (London only) and installation. Since 2006, for every tree bought, The Christmas Forest has donated a tree to be planted in Africa through Tree Aid. So far, they have planted 86,000 trees to date. Trees provide a long-term, practical solution to poverty and environmental destruction. The support Tree Aid has received from the Christmas Forest

over the last four years has been a lifeline for African families using trees to battle poverty and climate change. Every tree sold by the Christmas Forest means another tree is planted in the ‘Forests for Food’ Project in Ethiopia through Tree Aid. Trees mean life for many rural African families. Living with the effects of extreme poverty made worse by climate change, villagers are learning how to raise and care for trees thanks to these campaigns. Trees are not only good for the environment but also essential for the people. Trees often survive when other crops fail so families can rely on a sustainable, nutritious variety of foods including fruit, nuts and even leaves and flowers. Trees give shade and shelter, food for animals, natural medicines, tools and fuel. www.treeaid.org.uk This year, to help Tree Aid celebrate its 25th anniversary, they have set a target to plant our 100,000th tree in Africa. Every tree planted through the Christmas Forest partnership is a gift for an African family this Christmas, and for generations to come.

LET’S TALK TURKEY
These days, few meats would look out of place as the centrepiece of your Christmas dinner.
S
ome people swear by a traditional goose, others are game for venison, while Marks & Spencer predicts chicken to be big this festive season. But the vast majority of us still gobble up turkey on December 25. Chef Rachel Allen says: “A few years ago we decided to cook the most gorgeous bit of beef. We had it with horseradish, bearnaise and amazing roast potatoes. It was delicious, but it didn’t taste like Christmas. For me, it’s got to be turkey.” With a variety of types, retailers and prices available, it can be tricky knowing which bird go for. For Allen, supporting local producers is key. “We get turkeys from a local farm. Personally, I believe in paying the extra to getting a really good quality one and I’ll use every single bit of it. Last year we had a bronze turkey - it’s lovely and moist.” Generally, bronze and black varieties of turkey have a gamier flavour and a denser texture, but a British Turkey Quality Mark indicates good standards of food safety, traceability and bird welfare. Size is also important to consider, in terms of how many people you’re feeding and how big your oven is. Asda turkey expert Jim Viggers says: “A 2.5kg turkey, for example, would feed a family of four and you could have turkey sandwiches in the afternoon. A 4kg turkey would feed seven to eight people again with plenty of leftovers, so decide what you want to do with the bird first.” But according to the British Turkey Information Service, the most common mistake people make with turkey is overcooking it. A spokeswoman advises: “Work out the cooking times well ahead of Christmas Day. To check it’s cooked, insert a clean skewer in the thickest part of the thigh. Leave for at least one minute and if the juices run clear the turkey is cooked.”
Cooking tips from the top Hugh Fearnley-Whittingstall “Because the legs are tougher, ask a butcher to take them off and then cook them separately. Find a great recipe for coq au vin and cook them slowly in wine and onion and bit of bacon. Then you can concentrate on cooking the breast quickly and keeping it moist.” Nadia Sawalha “Because it’s just once a year, I put an entire packet of butter over my turkey and baste it every 20 minutes and it’s always really lush. And I put streaky bacon on the breast and take it off towards the end.” Rachel Allen “Cook it for the first hour breast side down and then turn it over and cook it breast side up for the remaining time. That way the juices soak down into the breast so it will be moist. But with a really good turkey you don’t even need to do that.” 22 DECEMBER2012
Where to buy Here are some of the top turkeys - and some festive alternatives - being championed at some of Britain’s supermarkets this year: Waitrose Turkey: Heston from Waitrose turkey crown, complete with brining kit, herb butter and gravy serves a minimum of eight people, £55. For something different: Waitrose Highland topside of beef, £14.99 per kg. Sainsbury’s Turkey: The Woodland Trust Norfolk Black turkey is bred to be flavoursome and succulent, £9.99 per kg. For something different: Four-bird roast featuring goose, duck, turkey and guinea fowl and a pork stuffing with fig and orange, £80 from the customer ordering brochure. Aldi Turkey: Aldi’s Roly Poly turkeys are reared at two farms that are exclusive to the supermarket. The birds have a talk radio station to listen to and are finished on oats, £35.99 (4kg-5.99kg). For something different: Fresh whole goose, £34.99. Asda Turkey: The Extra Special Bourbon Gold is a cross between the Bourbon turkey and the Kelly Gold, said to result in a meatier bird, £8 per kg. For something different: Extra Special venison rack with cranberry and port butter, £35 per kg. Co-operative Turkey: The Co-operative Truly Irresistible British Free Range Bronze Turkey has been matured under chilled conditions for at least 14 days to develop flavour, £40.00 for 5kg. For something different: Fresh large unfatted British beef roasting joint. On offer over Christmas at £4.99 per kg. Morrisons Turkey: The Ultimate Turkey Crown is a free-range British turkey stuffed with pork, sage and onion and topped with streaky bacon, £9.50 per kg For something different: Lamb with rosemary and pomegranate butter, £11 per kg. Marks & Spencer Turkey: the Turkey Wellington is made with British turkey breast fillet, a chestnut mushroom duxelles with Madeira and fresh thyme and wrapped in a pastry case. It takes just an hour to cook. £20 for 1kg. For something different: Whole pheasant with bacon, £6.

The Magical Ice Kingdom has been specially created by Hyde Park Winter Wonderland and will be the biggest ice and snow experience of its kind. Follow the magical pathways and admire the beauty of the exquisite sculptures and crystal-like characters throughout the themed rooms. Meet the woodland ice creatures as you roam through the stalagmite ice forest and see ice bears, wolves, stags, owls, foxes, squirrels and rabbits. Try a seat in a fairy tale unicorn-pulled carriage and take the slide in the magnificent ice castle or dare to approach the ice dragon’s lair with the knights and archers and meet the ice Queen in her throne room. The Magical Ice Kingdom will be housed inside a winter palace, stretching 40m x 25m, which will be chilled to -8c in order to keep the sculptures frozen throughout the run. There is timed entry so please choose a time slot before booking.
Observation Wheel and the beautiful Angels Christmas Market and new Yuletide Market and Santa Land for the younger visitors. Zippos Circus returns with two shows – the family friendly Zippos Christmas Circus and Zippos Cirque Berserk – for the evening crowd.

The ever popular Bavarian Village will be back ready to serve even more bratwurst and mulled wine whilst hosting live music throughout the day and evening. In addition, there will also be many more restaurants and bars. There will also be an array of traditional and thrill-seeking rides throughout Winter Wonderland. More announcements will follow in due course.

3 Y ou can chill lighter styles of red wine too (room temperature in the old days used to be a lot colder than now with central heating!) 4 B eware supermarket half price offers – a wine reduced from £10 to £5 is normally worth about... £5! 5 I nvest in some good pear-shape glasses that curve in at the top to capture the aroma – you will get more from the wine. 6 I n restaurants, don’t feel embarrassed to ask the sommelier for a recommendation. The world’s oldest known bottle of
Courvoisier Cognac is now on sale at Harrods
P
riced at £95,000, this rare and important bottle will excite cognac connoisseurs the world over. The Courvoisier & Curlier was bottled in 1789, the year the French Revolution began, by the two nephews of Felix Courvoisier, the Curlier brothers, making it a unique piece of history. The 1789 Courvoisier & Curlier has been acquired by Harrods from the private Old Liquors Collection of Dutch seller Bay van der Bunt, which is currently the largest collection of historic spirits in the world. Since obtaining the vintage bottle from Sotheby’s, the cognac has been resting, untouched, in Mr van der Bunt’s cellar. Following its purchase, the Courvoisier & Curlier will be on display to the public for six weeks in the Tasting Room of the Harrods Wine Shop, meaning customers can view the remarkably rare antique over the festive season. The 1789 Courvoisier & Curlier will be highly desirable, and sparks an interesting debate as to whether the precious liquid should ever be consumed.

Guests attending L’Atelier de Courvoisier will be made privy to the rare bottle as part of a unique experience which will take them through the rich heritage of Courvoisier, thereby putting the importance of the 1789 cognac in perfect context. CHRISTMAS SHOPPING WEEKENDS Start your celebrations with a festive shopping break Frantic last-minute Christmas shopping can be a stressful experience so don’t leave buying your presents until Christmas Eve. Christmas is meant to be a relaxing time, so start your celebrations (and your shopping) now by getting away on a festive shopping break. Much of London and Europe goes Christmas crazy at least from the end of November. There are of course, some prestigious stores here in London, like Liberty, Selfridges, Fortnum & Mason, Harrods and Harvey Nichols, and there is nothing like soaking up the seasonal atmosphere and enjoying the hustle and bustle of the festive season. But here are some Christmas shopping breaks further afield, where you can soak up the Christmas atmosphere in other countries, following their own traditions, and at the same time see somewhere you may not have visited before.
BERLIN
Berlin goes market crazy at Christmas, with as many as eight main markets in the capital alongside excellent shops offering everything you could possibly want. After the shopping, it is also a great place to party with countless pubs, clubs, bars and nightspots.
Reasons to go to Berlin The markets including the Jewish Traditional at the Jewish Museum, the Opernpalais (famous for jewellery, ceramics, arts and crafts) and the Spandeur traditional market at the Town Hall, are just outstanding. The overwhelming Christmassy feel to Berlin. The illustrious Ka De We department store is a tourist attraction in its own right. An array of quirky, individual gifts, rather than the usual tourism tat for sale. The Christmas drink, Glühwein– a mulled wine with a rather potent kick. If you head there between 9th - 18thof December this year, all eight self-contained markets will be open.
NEW YORK
Christmas is a great time to visit New York City. Top stores, designer boutiques and open-air markets mean you’re sure to find everything on your holiday shopping list. Aside from shopping, New York’s nightlife is legendary and when lit for Christmas, it takes on an extra special feel.
Reasons to go to New York Top stores including Macy’s Department Store, Bloomingdale’s and the magnificent toy store FAO Schwarz. Christmas is the perfect time to go ice skating in New York. Rinks are dotted all over the city; the Rockefeller Centre and the Wollman being firm favourites, as well as the Laser Rinks in Central Park and the Sky Rink at Chelsea Piers. New York’s department stores put together beautifully designed windows to celebrate the season. The festive displays are a real attraction and a definite ‘must see’ of the city at Christmas time. Leave plenty of room in your suitcase for bringing back all those goodies, but be careful about how much you bring back – keep in mind the weight and the value!

GOTHENBURG
Gothenburg at Christmas just radiates with fun and lights. It’s Christmas market is held within Liseberg amusement park which is brought to life with more than 700 trees illuminated with festive lights. The air is usually filled with the aromas of toasted almonds, mulled wine and ginger biscuits. Skilled craftsmen can be seen making everything from silverware to hand-rolled cigars, while the tables of Liseberg’s restaurants are laden with the specialities of the season.
Reasons to go to Gothenburg The Christmas market of more than 60 stalls selling traditional handicrafts. More than three million light bulbs strung from the park’s trees – keeping the dark nights at bay. Ice skating in the park or taking a genuine sleigh ride. More than 600,000 people visit the markets each year, so they must know something. The park is open until 9pm and sometimes later, so you can make the most of your stay. Head out later than normal and then if you fancy it, continue into the city’s bars.
BUDAPEST
Festive shopping in Budapest is dominated by its annual Christmas market running from 1st - 24th December at Vorosmarty Square, offering quality folk and applied art products as well as wide selection of cultural displays and programs. The Gala Concert of the Gypsy Orchestra is also held in Budapest Congress Centre. Don’t miss the calendar being turned every day at 5pm.
KRAKOW
Thanks to its climate and rich Christmas traditions, Krakow is most deserving of the ti tle as the world’s capital of white Christmas. Seasonal street decorations, window-dressing and festive carols relying on lively traditional dancing tunes, make the city appear like it has emerged from a Christmas card or film set.
Reason to go to Krakow The market located on Rynek Glowny, one of the largest medieval squares in Europe, with stalls selling food, hot wine, traditional decorations and handmade arts and crafts. Gothic churches and baroque palaces take on an even greater appeal at Christmas time. The Christmas cribs, which form part of an annual competition are fabulous and provide portable theatres for the traditional nativity puppet plays. Amateur and professional companies of players stage live nativity performances.

THE DEERS OF
Richmond Park R
ichmond Park was originally a deer-hunting park, and still has 300 red deer and 350 fallow deer. When Charles I moved his court to Richmond Palace (no longer standing) to avoid the plague in London, in 1625, he turned his manor into a deer park with herds of fallow and red deer. The park was enclosed with an 8 mile long brick wall in 1637. Most of the wall that still encloses Richmond park is the original. The Royal deer have been maintained in Richmond ever since. The deer have played a major role in the Park’s history and have shaped the landscape too. Their special grassland habitat depends on grazing and the parkland trees have a distinctive ‘browse line’ as the deer eat all the leaves and twigs growing below about 1.5 metres. Deer grazing also prevents tree seedlings from growing, keeping the grassland open.
40 DECEMBER2012
For young trees to survive they need to be protected against damage from deer antlers for some 50 years. During the autumn the deer ‘rut’ (breeding season) takes place. The red stags and fallow bucks compete for females (known as hinds and does respectively). At this time, the large males roar, bark and clash antlers in a spectacular way in an attempt to fight off rivals and to attract as many females as possible. The young are born mainly in June, and are hidden by their mothers amongst the bracken and long grass. Females and their young are very vulnerable and sensitive to disturbance at this time Herds of red and fallow deer roam freely within much of the park. The herds are culled in November to keep numbers manageable and the park population healthy.

DECEMBER2012 41
F E AT U R E
The British Deer Society and the Deer Initiative of England and Wales, who are regarded as the main welfare organizations dealing with the welfare and management of deer nationally, recognise that parkland deer numbers must be managed and that removal of some of the deer is necessary each year to keep populations at acceptable levels. The keeping of deer in enclosed English parkland has a long heritage. Although many ancient parks were originally maintained for hunting purposes, in recent times it is recognised that the deer herds of the Royal Parks in London are an integral part of the parks’ ecosystem, as well as being a valuable amenity and educational feature. These parkland deer are wild animals, which are not
42 DECEMBER2012
regularly shepherded or handled; they are left to breed normally and to establish normal social behaviour. All deer parks have a maximum capacity of deer numbers, which must not be exceeded to avoid problems of disease and damage to the natural environment (the complex ecosystems for which Richmond Park is notified as a Site of Special Scientific Interest, National Nature Reserve and a European Special Area of Conservation, being of particular importance). The deer are wild animals, so never try to touch or feed them. Always keep a respectful distance, especially if you have a dog.
F E AT U R E
As well as deer, a range of other mammals lives in the park, though they may not be as obvious. These include Fox, Rabbit, Shrew, Mice and Vole. Unfortunately the Brown Hare, which was once common in the Park, has vanished as a consequence of increased disturbance. The Park’s diverse landscape, abundant insects and plentiful tree roost sites are good habitat for bats. Th ere are recent records of at least nine species including all 3 species of Pipistrelle, Noctule, Serotine, Brown Long-eared and Daubenton’s bats. You can adopt a deer in Richmond Park - www.royalparksfoundation. org/support/foundation/foundation_adopt_new.cfm When you become an adopter, you’ll receive a certificate of thanks,
postcard, factsheet and a badge pin. An adoption makes an unusual gift and is a great way to mark a special occasion! ith the 2012/13 rugby season now in full swing, Aviva Premiership champions Harlequins have impressed so far in their quest to defend the title. Last year will go down in history as one of the greatest in the history of the club. Just seven years ago the club was relegated from the top flight of English rugby and since then they have embarked on a journey that has resulted in Amlin Challenge Cup glory in 2011, as well as a 14 game unbeaten streak that led to Aviva Premiership success in May this year. As we head into the Christmas period, thoughts within the club are turning to the annual Big Game at Twickenham Stadium. In 2008, Harlequins made the brave decision to move one of their regular home games away from the 14,800 capacity Twickenham Stoop to the 82,000 Twickenham Stadium. Such a move already had precedence with French club Stade Francais who move from their regular 20,000 capacity stadium to the Stade de France for a number of marquee games each year. The Leicester Tigers were the opponents for Harlequins first Big Game in December 2008 as 50,000 filed into the national rugby stadium. The match ended in a draw and fans went away with a taste of what Harlequins as a club were capable of achieving.

Twelve months later, Wasps provided the opposition as a new Premiership rugby record crowd of 76,716 packed into Twickenham. They were treated to a pre-match concert and fireworks display that featured X-Factor stars Olly Murs, Lucy Jones and Jamie Archer, the latter raising the roof with a rocking rendition of the newly adopted club song, ‘The Mighty Quin’. December 2010 saw the third edition of the Christmas showpiece, with London Irish taking on Harlequins in Big Game 3. Supporters were again treated to a stunning pre-match performance from the Brat Pack tribute band, X-Factor winner Matt Cardle and finalist Rebecca Ferguson as well as the return of the popular Jamie Archer. The crowd also witnessed Harlequins and England legend Jason Leonard deliver the match ball into the stadium on a hovercraft. Most Recently, Big Game 4 proved to be one of the highlights of Harlequins historic 2011/12 season. Another attendance record was set with Twickenham Stadium sold out as 82,000 fans turned up to watch Harlequins take on Saracens. The entertainment was supplied by tribute band Killer Queen, X-Factor finalists Amelia Lilly and Misha B and
classical crossover singer Camilla Kerslake. It was a great family occasion and one the players enjoyed immensely. Speaking about the Big Game, Harlequins’ fly-half and former All Black Nick Evans commented, “The Big Game is one of the fixtures that the players look forward to during the season; playing in front of a big crowd at Twickenham is special at any time but to do so at Christmas when families make great efforts to get together is truly exceptional.” This year, Harlequins are also offering supporters and families a rare chance to experience a seat in an executive box at Twickenham Stadium from an extremely reasonable £60 per adult. Executive Boxes offer a panoramic view of the pitch with the comfort and warmth of your living room. Boxes are available in an exclusive or shared basis with box sizes ranging from 10 to 56 guests. Another sell-out crowd is expected this year as London Irish again provide the opposition for Big Game 5 on 29th December. It will be a family occasion not to be missed with tickets starting from just £10 for adults and £5 for children. For more information, log on to www.thebiggame.co.uk.

Ham House & Garden
A
400-year-old treasure trove waiting to be discovered and one of a series of grand houses and palaces alongside the River Thames. Between 1637 and 1639, Murray remodelled the interior of Ham. He created the Great Staircase and a suite of sumptuous rooms on the first floor: the Great Dining Room (now the Hall Gallery), the North Drawing Room, and the Long Gallery with its adjoining picture closet. The decoration is intact in most of these rooms. The remaining part of Murray’s art collection gives us a rare picture of fashions under Charles I. When the Civil War broke out in 1642, Murray naturally joined the Royalist cause, and was created 1st Earl of Dysart for his loyalty. He died in Edinburgh in 1655. The Duchess of Lauderdale Ham passed to Murray’s eldest daughter, Elizabeth. Her father’s titles were conferred upon her in 1655, after his death, when she became the Countess of Dysart. She was described by contemporaries as beautiful, ambitious and greedy. In 1648, she married Sir Lionel Tollemache, 3rd Baronet, of Helmingham Hall in Suffolk, a wealthy and cultivated squire. 46 DECEMBER2012
They had eleven children, of whom five survived to adulthood. Renowned as a political schemer, she is said to have belonged to the Sealed Knot, the secret organisation supporting the exiled King. Even before Tollemache’s death in 1669, Lady Dysart was rumoured to have formed an attachment to the ambitious John Maitland, 1st Duke of Lauderdale, Secretary of State for Scotland. Following their marriage in 1672, they extended and refurnished Ham as a palatial villa reflecting the Duke’s status as one of the most powerful ministers of Charles II. Much of this luxurious interior decoration survives today, along with rare textiles, furniture and paintings. The Tollemache dynasty After the Duke’s death in 1682, the Duchess had to curb her extravagance and was eventually reduced to pawning her favourite pictures and jewellery. Elizabeth died at Ham in 1698. Ham House and the Dysart title then passed to her eldest son from her first marriage: Lionel Tollemache, 3rd Earl of Dysart (1649-1727). Lionel took little interest in the house but by contrast, the 3rd Earl’s grandson and heir, another Lionel, the 4th Earl, carried out major structural repairs in the 1740s. He filled many of the rooms with new furniture and paintings. Most notably, the Queen’s Bedchamber, furnished by the Lauderdales for Charles’ Queen, Catherine of Braganza, was converted into a first-floor
LO CA L H I S TO RY
drawing room. The mahogany chairs, gilt pier-glasses and tables, and tapestries after Watteau survive in situ. The 5th Earl partially re-landscaped the garden and was succeeded in 1799 by his brother, Wilbraham, who immediately made improvements inside and outside the house. The 6th Earl was a generous patron of Reynolds and Gainsborough. He created the striking Yellow Satin Bedroom, but most of his changes were antiquarian in spirit, enhancing Ham’s 17th-century character. Restoration & renewal Little changed at Ham between the 6th Earl’s death in 1821 and 1884, when William, 9th Earl of Dysart came of age. Sixty years of benign neglect had left the house and its contents in urgent need of repair and Lord Dysart embarked on a thorough restoration campaign. The roof was renewed, electricity and heating installed, and much of the 17th-century furniture repaired. The 9th Earl died in 1935, when Ham passed to his second cousin, Sir Lyonel Tollemache. Sir Lyonel and his son, Cecil, gave Ham to the National Trust in 1948. Discover the fine interiors and historic gardens that make Ham an unusual and fascinating place to visit. Please note: for conservation reasons, some rooms have low light levels. The beautiful gardens include the much photographed Cherry Garden. It features lavender parterres flanked by two berceaux (vaulted trellises) of pleached hornbeam and a statue of Bacchus at its centre. Walnut and chestnut trees in the outer courtyard act as roosts and nesting sites for a large flock of green parakeets. The formal listed avenues are formed by more than 250 trees. It is said that the Duchess still haunts the house today, along with a number of other ghostly inhabitants. VISIT HAMPTON COURT THIS CHRISTMAS
I
Henry’s Palace When Henry VIII wanted a divorce from his first wife, Katherine of Aragon, Wolsey, in his unique position as papal legate and chief minister, was in a fantastic position to pull it off. Or fail … Katherine resisted, and the Pope refused. Wolsey was helpless. His titles and properties were confiscated and the Cardinal died in 1530, after his arrest for treason.
There were tennis courts, bowling alleys and pleasure gardens for recreation, a hunting park of more than 1,100 acres, kitchens covering 36,000 square feet, a fine chapel, a vast communal dining room (the Great Hall) and a multiple garderobe (or lavatory) - known as the Great House of Easement - which could sit 28 people at a time. Water flowed to the palace from Coombe Hill in Kingston, three miles away, through lead pipes.
Hampton Court now truly became Henry VIII’s favourite palace. He spent more time here than at any other of his residences during the second half of his reign, building new apartments for himself and his new wives. And the palace survived to witness many of the most important events in the chequered political and matrimonial history of the 1530s and 1540s. All of Henry’s six wives came to the palace and most had new and lavish lodgings. The King rebuilt his own rooms at least half a dozen times.
n just ten years Henry VIII spent more than £62,000 rebuilding and extending Hampton Court. This vast sum would be worth approximately £18 million today. When he died in 1547 Henry VIII had more than 60 houses, but – in the second half of his reign – none were more important to him, nor more sumptuously decorated, than Hampton Court Palace. By the time Henry finished his building works at Hampton Court Palace in about 1540, the palace was one of the most modern, sophisticated and magnificent in England.

Katherine of Aragon
The palace also provided accommodation for each of the King’s children and for a large number of courtiers, visitors and servants. And he used Hampton Court to impress. Most famously in August 1546 Henry feasted and fêted the French ambassador and his entourage of two hundred gentlemen – as well as 1,300 members of his own court – for six days. An encampment of gold and velvet tents surrounded the palace for the occasion. A year later, Henry was dead, with three surviving children – the 9-year old Prince Edward and his older sisters Mary and Elizabeth. Each would rule England, and Hampton Court would continue to play an important part in the lives of the Tudor monarchs... The Six Wives of Henry VIII Catherine of Aragon, Anne Boleyn, Jane Seymour, Anne of Cleves, Kathryn Howard, Katherine Parr. Divorced, beheaded, died; Divorced beheaded survived. This popular rhyme tells of the fate of Henry VIII’s six wives Catherine of Aragon Henry VIII’s first wife and mother of Mary I Catherine was the youngest daughter of Ferdinand and Isabella of Spain and she came to England in 1501 at the age of 16 to marry Henry VII’s eldest son and heir to the throne, Arthur. By 1527 Henry was having serious doubts about his marriage to Catherine. He believed that he had no sons because God was punishing him for having married his brother’s wife. He had found a passage in the Bible that backed this belief. He had also fallen for Anne Boleyn, the daughter of Thomas Boleyn, who had recently returned to England from the French court Catherine refused to grant Henry a divorce or retire to a convent. Henry therefore began the Reformation in England so that he could divorce Catherine without the Pope’s permission and marry Anne Boleyn.Catherine was divorced by Henry in 1533 and died in 1536.

Jane Seymour
Anne Boleyn Henry VIII’s second wife and mother of Elizabeth Anne Boleyn was born in 1501. At the age of fourteen she was sent with her sister, Mary, to the French court as a maid to Queen Claude. She returned to England in 1522 and attracted many admirers. Her sister, Mary managed to attract the King’s attention and became his mistress. In 1526 Henry asked Anne to become his mistress, but she refused because he was a married man. Henry was determined to win Anne Boleyn and became determined to divorce Catherine and marry Anne. The couple eventually secretly married in 1533 after Anne became pregnant. The King’s second marriage was not popular. Many people believed that Anne was a witch and had cast a spell on Henry. When the baby was born in September 1533 Henry was cross that the baby was a girl. She was called Elizabeth. Henry and Anne began arguing. Although Anne became pregnant twice more each time the babies were stillborn. Henry was by now tired of Anne and wanted rid of her. He had no intention of waiting for a divorce so his ministers invented evidence showing that Anne had been unfaithful and had plotted the death of the King. She was found guilty and was executed in May 1536. Jane Seymour Henry VIII’s third wife and mother or Edward VI Jane Seymour was a quiet shy girl who attracted Henry because she was so different to his first two wives, Catherine and Anne. Henry married Jane Seymour just 11 days after the death of Anne Boleyn. He was 45 years old, Jane was 28. Although Henry became concerned when Jane did not become pregnant immediately, he was delighted when she gave birth to a son, Edward, in October 1538. Henry was very upset when Jane died a month later. On his deathbed, Henry requested to be buried next to Jane.

Anne of Cleves Henry VIII’s fourth wife She was divorced after six months. After the death of Jane, Henry remained single for two years. He had the son that he had wanted for so long and although Edward was weak and sickly, he continued to live. Having broken free from Rome in the 1530s England was isolated from much of Europe and Henry’s advisers thought it would be a good idea for him to marry a German princess and make an alliance with the other great Protestant nation in Europe - Germany. Two suitable princesses were chosen and Hans Holbein was sent to paint their portraits. The girls were sisters and daughters of the Duke of Cleves. Henry chose the older daughter, Anne, to be his fourth wife. The 24 year old German Princess arrived in England in December 1539, However, Henry was horrified when he saw her and demanded that his ministers find him a way out of the marriage. Unfortunately for Henry they could not and the marriage went ahead in January 1540. Henry was unable to consummate the marriage and the couple divorced amicably six months later. Anne was well provided for and lived out her days in England in comfort. She outlived Henry and died in 1557. Kathryn Howard Henry VIII’s fifth wife She was executed for adultery after two years of marriage. Henry had chosen his fifth wife before his divorce to Anne was finalised. The lady in question was the 15 year old daughter of Edmund Howard, Kathryn, cousin of Anne Boleyn. The marriage took place in July 1540. Henry was 49 years old, overweight and unable to walk far due to his weight and an injury to his leg that festered and refused to heal. Kathryn was young, lively and flirtatious. She was bored with having an old
52 DECEMBER2012
husband and sought out young friends among the courtiers. Unfortunately for Kathryn one of the courtiers in question was a man named Francis Dereham who had known Katherine before her marriage. He knew that she had had affairs before her marriage and used this to bribe her into giving him a good position at court. Katherine’s actions led to her being accused of adultery and subsequently executed in 1542. Katherine Parr Henry VIII’s sixth wife She outlived Henry and died in 1548. Henry married for the sixth time in 1543. The lady in question was Katherine Parr who had been twice widowed. She was a kindly lady and proved a good stepmother to the King’s three children. She was also an excellent nursemaid and bathed Henry’s leg wound and comforted him when he was sick. She came close to being tried for treason in 1546 when her enemies at court attempted to prove that she was a committed Protestant. However, she managed to convince Henry that she was loyal to him and his Church and was spared. After Henry’s death she married Edward’s uncle, Thomas Seymour. Katherine Parr died in childbirth in 1548. The famed CCTV ghost ‘Skeletor’ is the name that was given to a ghostly figure who appeared on a CCTV camera at Hampton Court Palace in October 2003. On three consecutive days, palace security staff were called to close one particular fire door near the palace’s Introductory Exhibition. On the first day, CCTV footage showed the doors flying wide open with great force but there was nothing to reveal why. On the second day, the same thing happened but this time a ghostly-looking figure in period dress suddenly appeared on the screen and closed the doors. The doors opened again on the third day but there was no further sign of the ghostly doorkeeper. It wasn’t just security staff who thought they were seeing things. A visitor wrote in the palace’s visitor book on

FIRST DRIVE:
PORSCHE 911 CARRERA 4S THE LATEST SET OF WHEELS ARE TAKEN FOR A SPIN. BY MATT JOY
E
verything happens for a reason, if your belief system lies somewhere between the fatalist and the determinist. You could argue of course that this notion merely helps the human brain cope with the completely randomness of the universe but putting the philosophy aside for one moment, it is true that a chance occurrence can help you make sense of something previously confusing. is idea perfectly describes the existence of the Porsche 911 Carrera 4. Whether you plump for the standard 4 or the 4S, you are paying a premium over the two-wheel-drive Carrera 2 and 2S that also nets you subtly different rear bodywork (including a unique light arrangement and a wider track) and the inevitable gains in traction that an extra pair of driven wheels brings. But the question mark comes simply because the two-wheel drive Carrera is a devastatingly effective machine already. If there's one thing it's not lacking that is traction, the rear-engined arrangement maximising the available grip when powering out of a bend. Not forgetting of course that your new 911 comes with the hugely effective Porsche Active Stability Management (PASM) system to help you out in a tight spot. So why would you choose a Carrera 4 then? Well unlike previous Carrera 4s, the 991-generation is a lot closer visually to the two-wheel-drive version. In the past the extra width at the rear has been known to unbalance the overall shape a little and leave it looking like it was carrying a little too much
54 DECEMBER2012
Christmas indulgence around its behind. But now it's been perfectly judged, and it carries a little more muscle to arguably make it more visually appealing than the Carrera 2. And that rear light signature might seem like a small thing but it catches the eye and makes you wonder why every 911 doesn't have it. Mechanically the differences between the 4 and the 2 are straightforward. You get the same sonorous 3.4- or 3.8-litre flat six engine with two outputs (standard and S model) with a choice of seven-speed manual or seven-speed PDK dual-clutch gearbox. A further trick up its sleeve is a double de-clutch facility which can be switched on or off; essentially in manual-equipped cars it will blip the throttle for you on downchanges to match the revs to the wheel speed, thereby avoiding any nasty locking of wheels when really pressing on. But the majority of this is under the skin, so you climb aboard the 911 and are greeted by the same appealing cabin, much improved over the outgoing car in both ergonomics and material quality. Pinching several bits from the Cayenne and Panamera give it a more grown up feel and make it much easier to live with, and the reassuring snap and click of the switches gives the impression that it will last as long as the bulletproof mechanicals. ere's nothing to indicate that this 911 is four-wheel-drive as you pull away. In fact the Carrera 4 diverts most or all of the power to the rear unless it detects a loss of grip, so you have the four-wheel drive only when you need it. at means that for much of the time it drives exactly how you would want it; namely just like a
M OTO R S
two-wheel-drive 911. You sacrifice nothing in terms of the slickness, sensitivity and accuracy in the way that the car responds to your inputs. You don't feel any additional weight, nor that the car is compromised as a result. Sure, there is a modest weight penalty but that's offset by the increased traction. Where you really feel the benefit is when conditions aren't ideal - namely most of the time - and the reassurance of four-wheel-drive gives greater confidence. You can exploit the Carrera 4S's mighty flat-six more of the time, hear that distinctive engine note rise and fall but accelerate harder and sooner out of the bends. On the higher-powered S version you get torque vectoring as standard, which can switch power between wheels on the same axle as well as front to back. It's fiendishly clever but all you really need to know is that it punts you out of a corner with as much traction as it can possibly muster. And when you do get caught out by an unseen change of surface or even something as dramatic as an unhelpful spillage on the road, the Carrera 4 can switch the power from front to rear or vice versa in 100 milliseconds. You still have complete awareness of what's going on beneath you - there's just a little more happening to help you out. It's for this precise reason that the four-wheel-drive version makes the 911 even more of a practical, everyday supercar. Not that the standard Carrera 2 is untrustworthy of course, but with the Carrera 4 you can savour its power, precision and sublime chassis all-year round.

McLAREN
MP4-12C SPIDER BY MATT JOY
P
aris was stolen by the Brits in 2012. The home team might have been out in force but it was McLaren’s P1, the first glimpse of its flagship supercar, that drew the biggest motorshow crowds. But there was another new car sharing the stand - the MP412C Spider. An obvious second act to follow the Coupe version, the Spider swooped in with the promise of the same blockbusting performance and handling but added fresh air. But the Spider doesn’t have any of the compromises you normally get when switching from coupe to drop-top. The super-strong and light carbon ‘Mono Cell’ chassis was designed from the outset to be turned into a drop top so creating the Spider required no chassis strengthening at all. That meant unchanged suspension too which is almost unheard of, and the weight increase is negligible; just 40kg accounting for the roof mechanism and a different exhaust. In fact when getting your first glimpse of the Spider it’s actually quite easy to mistake it for the coupe. The Spider has a two-piece composite roof that will fold in less than 17 seconds and at speeds up to 19mph. Remarkably it actually offers more luggage space than the coupe, thanks to a pair of roll-up bags that stow beneath the tonneau cover when the roof is up. There’s also a heated rear window that acts a wind deflector with the roof down, but can also be lowered with the roof up to allow the engine sound into the car. In a way that small detail tells you a lot about Spider experience; it is a car prepared and able to suit any circumstances. Assuming you
56 DECEMBER2012
M OTO R S
approach the car with the roof up, you now squeeze a discreet rubber button to open the door as it glides upwards into position. Slide yourself into the slim but comfortable seats and you feel at the centre of the action. The windscreen drops down low to give a superb view out while the wheel and the instruments sit proud of the dashboard top, giving an uncluttered driving environment.
combination that is more impressive. The Active Roll Control system is tech-heavy but all you need to know is that it allows the Spider to skim over bumps in a way that no performance car has ever done yet it doesn’t compromise an inch in the way it grips and resists roll. The Handling switch allows adjustment of the roll stiffness, but even with it turned up to Track mode it’s firm not harsh.
Fire it up and with everything turned down to its friendliest settings, the Spider demands very little of you indeed. Press the D button to engage the gearbox and a slight squeeze of the accelerator releases the auto handbrake and you’re away. You have the same Active Dynamics panel controlling handling and powertrain so you can tailor the car to the circumstances. With everything in Normal there’s nothing to tell you you’re in the Spider: it’s just as fast, as compliant, as quiet and as accommodating as the coupe. Drop the roof and it changes completely of course: wind is kept well in check below silly speeds and of course that super-strong carbon structure means not one hint of shake or wobble over bumps. This is how all convertibles would be in an ideal world.
The test drive included track time as well as a mixture of Spanish roads, and its ability to deal with such a wide variety of surfaces was remarkable. If anything the optional Corsa tyre’s extra grip isn’t necessary: on the road the grip levels are stratospheric and on track it’s a pleasure to flirt with the edge of adhesion and feel the Spider move around. Even driven like this it responds beautifully, never feeling twitchy or a handful.
Don’t waste a single opportunity to turn everything up though. The intermediate Sport mode offers an excellent balance for fast road driving, leaning off the ESC a little bit to allow some movement in the car while the extra noise and sharper responses from the engine are welcome. You can use Track mode on the road of course, but then you are in control of all 616bhp (an upgraded output over 2012 model year). Such is the linearity of the twin-turbo V8s delivery that it is deceptively fast. An extended blast through first, second and third gears feels mighty fast but the speedometer tells an even more remarkable story: it will hit 124mph from rest in just 9.0 seconds with the grippier Corsa tyre option. It’s best experienced with the rear window down as you get all the noise, resonating around the roof and no wind intrusion whatsoever. Despite being turbocharged it does its best work with a few thousand revs on the dial, but the performance is savage in bald stats yet silken in delivery.
The philosophy behind the MP4-12C Spider is clear to see, and its adaptability and immense competence is remarkable. The Spider is essentially the class swot: so good at everything you want to dislike it, but you can’t help but have huge respect for its flawless execution.

GET INTO MISTLETOE MODE LIPS ARE THE INSTANT WAY TO LOOK PARTY-READY. LISA HAYNES REVEALS HOW TO WORK A STATEMENT POUT. BY LISA HAYNES
NATURAL BEAUTIES LOOK AWAY NOW, THE SEASON OF EXCESS IS UPON US. But if you prefer to leave the glitter and sparkle for the Christmas tree, then look to lipstick for a festive beauty boost. "Lipstick provides an easy way to change your look, taking you from girl-next-door to sexy siren with just a swipe of colour," says Jemma Kidd, make-up artist and author of Jemma Kidd Make-up Secrets. "It's an instant pick-me-up." Prime your pout for mistletoe kisses with irresistible statement lips. WEARING IT WELL e power of your pout should never be underestimated it's the main focus when we talk, laugh, drink and kiss, making lips a prime candidate for a party makeover. "A fully made-up mouth can be the finishing touch to your look, and some women feel naked without their signature lipstick," Kidd says. "It is probably the safest way to go bold. e rest of the face must be flawless, with minimal make-up in neutral tones so that the statement colour really stands out and you don't look overly made-up." Take your lip size and shape into consideration when you're choosing textures and colours. Satin-finish lipsticks are flattering for most due to their creamy coverage and slight glossy finish. "Matte colour can make a bold statement that looks stunning on fuller mouths, especially in classic Hollywood starlet red, but be careful if you are older, or if you have small/thin lips as matte finishes can look harsh and ageing," Kidd warns. 60 DECEMBER2012
CREATIVE COLOUR Unless you're working a strong eye, give the nude tones a wide birth if you want your lips to be the star attraction this Christmas. "For the most wearable brights on the mouth, go for red, pink, purple or orange," Kidd advises. If you have porcelain skin, stick to cool pinks and blue-toned reds. ose with olive complexions should opt for berry or plum tones, oranges and warm, orange-toned reds. If you have dark skin, Kidd recommends experimenting with rich browns, strong oranges and deep plums. When trawling the lipstick stands in search of your perfect pout match, avoid testing on the back of your hand. Kidd explains: "If you can, try a lipstick on your lips to test the true colour (use a cotton bud to apply), or try on your fingertip, which is closer in colour to your lips because of the concentration of blood vessels there." LIP LONGEVITY All that prosecco supping and mistletoe pecking calls for extra staying power during the party season. With the right preparation, you can make your lipstick last longer. "Use a lip primer, or a dab of foundation or concealer," Kidd reveals. "After outlining your lips, apply lip liner over the whole surface to provide a smooth, even undercoat of colour and a waxy base for the lipstick to adhere to." It's winter, so think layering. One coat of lippy isn't sufficient so apply your lipstick once, blot with
H E A LT H & B E AU T Y
a tissue and then layer on another coat. If it feels too bold, blot with your finger for a pressed-in stain effect. Kidd recommends a light dusting of translucent powder or blusher patted on top of the lipstick for a matte finish and extra staying power. Pigment-packed lipsticks can be drying on the lips, especially long-lasting formulas. Use a lip balm under your lipstick to avoid the dreaded cracked look. POUT PERFECTION If you're ready to take the pout plunge, Jemma Kidd has these golden lipstick rules:
n Dark colours are generally harder to wear than paler shades. ey can be more draining and ageing, and you also need to be more accurate in your application as any slips will be obvious.
n Bright lipsticks will be more flattering if you have a small mouth or thin lips.
n When you are wearing a dramatic, bold lipstick, keep the rest of your make-up minimal.
n If you buy a shade that turns out to be too dark or bright, blend it with another lipstick or gloss to achieve a bespoke colour that suits you perfectly. n Oily lipsticks, liquid glosses and stains tend to migrate beyond the lip line, so choose thicker, drier and less greasy formulas if 'bleeding' is an issue.
n To achieve the illusion of bigger lips, use a lip liner in a colour that matches your lipstick and outline your lips just a fraction outside your natural lip line. TRIED & TESTED Lauren Taylor tames her mane with a DIY blow-dry masterclass. Like a lot of women, my hair just won't do what I tell it to. If only there was a way to recreate that just-left-the-salon feeling at home... Now Saks are offering a blow-dry menu with the chance to learn techniques you can reuse at home, and I went to watch Saks's creative director Alison Dace demonstrate four different blow-dry techniques. First, the 'Tjuz It' tousled look was created by blow-drying the roots with a rounded brush. Using a only a splattering of mousse, the stylist worked the roots to give lift and volume. A backcombing technique was demonstrated to make sure it looks subtle and sophisticated, by not taking the comb all the way through the hair so the top layer is left straight. Next there was the 'Wrap It' technique - the stylist dries the hair flat and downwards against the scalp, using the shape of the head to wrap the hair around. Another technique was the simple, straight 'Polish It' look, and the final masterpiece was a Kate Middleton-esque 'Bounce It' style; loose curls achieved with a large barrel curling tong. e masterclass was a helpful insight into new things to try with my tresses. It's a great idea to get your stylist to talk through their techniques step-by-step - I recorded my favourite look with my smartphone. When it comes to blow-drying like a professional, a lot of it comes down to investing in a good big round brush, mousse - and lots of practice in front of the mirror. n A Saks blow-dry starts from £22. laire, who personally designs and oversees each project, has had a diverse career spanning 25 years. She has added her work to some of the finest furniture collections and has also designed for and appeared on BBC 1 showcasing how to create the wow factor using high street goods. But bespoke design is her main passion. “It’s the magic of finding out what the client really wants, translating that into drawings, selecting materials and honing it all into something really special,” she says. Claire and her team never replicate designs, each scheme is unique to a particular client and project. “We’re not brought in to give an off the peg answer,” she says, “We’re brought in to create something special. of an executive harbour side home in Sydney. Taking the whole building back to the brick enabled them to sort out any structural issues, leaks and the like and to rebuild it to an exceptionally high standard. They implemented a complete home automation system to deal with security, lighting, air conditioning, water features and irrigation. It was then rebuilt using 200 year old oak flooring from a tobacco factory in the Loire and ancient carved pillars from the Swat Valley in Pakistan. Internal door frames and skirting boards are solid walnut and the walls are finished in polished plaster. All doors are individually designed veneer inlay with bronze handles. The kitchen, made using burr walnut and ebony, is complimented with book matched marble. “I’m not really excited by kitchens to be honest,” says Claire. “So our approach is different. We make delicious rooms which you can just happen to cook in!”

External terraces are lined with Egyptian limestone with secreted lighting. Italian glass mosaic lines the magnesium swimming pool. The stunning harbour view is enhanced by frameless bi-fold doors so that the entire front of the building can be folded back, out of sight. The outside dining table has a massive marble top. So much so that the biggest crane in Australia had to be brought in to move it into place. All of the furniture, designed by Claire, was made under close supervision in the UK. “I was extremely proud to be exporting British excellence,” says Claire. “We have some fabulous craftsmen and it’s only right that their work should have an international audience.” “What was so exciting about this project was the opportunity to create a completely clean slate and to design both the interior and exterior,” says Claire. “I remember discussing with Lord Bath the colour of his curtains. He was adamant that he wanted red to contrast with the Capability Brown parkland outside. The interaction of the outside and inside space is often overlooked. But here we were able to follow our design themes
into foliage and exterior lighting.” Drama was created using patinated iron uprisers on the steps to contrast with the limestone and a wall was broken up with panels of etched glass shot through with light and covered with a stream of water. “I love to create theatricality,” says Claire. “I think spaces should be infinitely pleasing and entertaining.” Claire also recreates historic interiors, every detail researched for authenticity from Queen Victoria’s railway carriage to Georgian and Queen Anne country houses. Next is a Lutyens manor house. “I think the Georgian period is my favourite,” says Claire. “I love the size of the rooms and the huge windows. I love the fact that it means you can be traditional or really contemporary. Once you have that perfectly proportioned canvas, everything else is up for grabs!” ■ CONTACT 0207 118 0149 www.clairerendall.com info@clairerendall.com

F E AT U R E little shocked at my gumption, being just 20 years old at the time. Nonetheless they eventually said yes and I’ve never looked back. At the very core of Apple and imbedded in its DNA was the late Steve Jobs desire to make sure things just work. It seems strange that for so long so many of us blindly accepted poor design, inferior production methods and damn right obtuse interfaces that drove many of us to despair.
Dear Santa...
When it comes to identifying that ‘must have’ product which will top Christmas lists everywhere, the iPad or iPad mini easily earns the top spot. If you were thinking there might be a worthy competitor from an alternative electronic manufacturer then think again. Lets be honest, no-one wants to see their child cry on Christmas morning.
I am of course biased, and have a vested interest in Apple. Still, the truth is universal, and it is universally acknowledged that the Apple iPad is best. It doesn’t matter whether you are buying something for a 5 year old or a 75 year old; the iPad spans generations in a way no previous electronic device ever has. Of course you will still need to decide which iPad or iPad mini to buy and prices range from £399 - £699 for the iPad and £269 – £529 for the iPad mini. You can choose between Wi-Fi only, where you must download content at home (or via a Wi-Fi hot spot) but can play anywhere. Alternative Wi-Fi/Cellular models allow you to download content on-the-go using a mobile data network connection (3,Vodafone, O2 or EE) and this obviously costs money. I’d be cautious of signing long term contracts that tie you in for up to 24 months and which does not include using your iPad abroad without incurring extravagant ‘roaming’ charges. The good news is that the iPad can be used with a 68 DECEMBER2012
Micro ‘Pay As You Go’ SIM.
If this all sounds confusing, that’s because it is. There are subtle differences across the iPad and iPad mini range spanning 24 models in total. Make sure you go to a store that can advise you correctly. My second choice for a Christmas present is the iPod touch. The latest iPod touch is a piece of technical brilliance. Lightweight, slim, tactile and beautifully presented in an array of colours, the iPod touch is fabulous value for money. Priced at £249 - £329 the iPod touch really belies its price and I just can’t think of anything else that is so good for anywhere near the same price. Remember Apple originally catapulted itself to fame and fortune with the iPod and this latest incarnation still delivers smiles every Christmas. The secret to Apple’s success has much to do with how Apple has redefined the user experience; carefully removing all the irrelevant buttons and unnecessary complications that bog down the competition. I only need glance at my collection of old school remotes, an ageing Hi-fi stack held together with a mile of cable and a C:/ Why_wont.*.*u/work operating systems to remind why Apple is the best option. 20 years ago, when I left school, I headed straight to Apple to ask if I could start my own business with them. They were a
Much like ‘The ghost of Christmas past’ I remember a Christmas where Dad was still sweating from an over indulgent portion of Christmas lunch trying to fathom out the Christmas gadget he so readily purchased without realising he’d require a crash course in computer programming. Up and down the country parents found themselves speed reading tiny multilingual booklets, knowing only too well, they were well out of their depth. Consequently glancing around the room in the vain hope they might find someone to ‘pass the parcel’. This brings me to my third choice of Christmas present: the Apple TV. Priced at just £99 the Apple TV is a great Christmas present for the person who already has a Mac, iPhone, iPad or iPod touch. The Apple TV plugs straight into your HDTV and joins your existing home Wi-Fi network without the need for a manual. Those clever people at Apple have actually made a Wi-Fi device that works without any unnecessary complications. Apple TV is one of those products that you need to see to really appreciate. Go to a store where you can see it working for yourself. It’s definitely worth a few minutes of your time. In short it integrates your Mac, iPod touch, iPhone and iPad with your TV, wirelessly. Even the wealthiest of James Bond villains doesn’t have as cool a set-up as I have
F E AT U R E your iPhone, iPod touch, iPad, Mac to the device. Only one device can be paired at a single time but given most of us on the beach don’t have a vast array of equipment with us the Bose SoundLink serves its purpose well.
at home. Admittedly I do not have an enormous shark-filled tank but my Apple TV set-up runs a close second. I can run up to five Apple TVs in my home at once. I can watch five different HD movies in five different rooms at the same time. I can interrupt any of my five Apple TVs whenever I like and simply push content from my iPad to any Apple TV. I can do the same with my MacBook Pro and my wife can use her iPhone or MacBook Pro to control whichever TV she. Prefers. We need never speak again, let alone fight over the remote. It’s worth taking time out to test your internet connection speed before you rush out and buy one or more Apple TVs. I would recommend using www.speedtest. net . This website provides a quick and simple test of your internet speed and so long as you are receiving a 4Mb+ download speed you should be good to go. New fibre optic based internet services from Virgin and BT are best and commonly provide 8Mb+ so it’s worth checking you have the latest, fastest service if you want to feel the full benefit of Apple TV.
of. Supermarkets, PC World, Curry’s and others all have their own “i” brands. As the majority of iPad, iPhone and iPod customers purchase speakers without auditioning them. These retail giants simply push out rubbish products designed to maximise their profits. They appear attractively priced but sound rubbish and often only last until Spring before they make their way to the local rubbish tip along with a mountain of other similar devices.
What I really like about the Bose SoundLink 2 is the fact that Bose make good solid products which are well engineered and well thought out. The Bose SoundLink seems to share some of Apple’s design DNA and features Bose patented sound technology that reproduces excellent quality sound despite its compact size. It’s easy to set-up and features a built in case. When you close the case the music stops and when you open the case, which doubles as a stand, the music starts up again. Simple elegant practical design – brilliant! The Bose SoundLink 2 is priced £249 - £299 and worth every penny.
My final suggestion for a Christmas gift is another wireless speaker system but well deserving of its place here. For years I’ve been waiting for a portable speaker system that I can take with me on holiday, use in the garden and take to the park or beach. Something well built, stylish and that sounds half decent. It’s been a long wait but finally it’s arrived.
So there you have it, five electronic products all of which are either made by Apple or rightfully deserve a place alongside an Apple product. There’s something for almost everyone and every budget. If I was allowed a sixth product, please editor let me have a sixth, I highly recommend either a Wacom Bamboo or Griffin stylus. These devices use a conductive rubber nib that allows you to more accurately draw and write on an iPad or iPad mini. It’s not that I have abnormally fat fingers, I just find drawing with a stylus so much easier and better than with my fingers. Priced £15 - £25 they make great stocking fillers.
The Bose SoundLink 2 relies on a Bluetooth connection for wireless connectivity. This means you must ‘pair’

Fourth on my list of cool Christmas presents are the new Bowers & Wilkins speaker systems lead by the New A7, the Zeppelin Air and the A5. Quality wireless speaker systems that have Apple’s Airplay system built-in. This means you can use the Bowers & Wilkins speakers on the same network as one or more Apple TVs, iPod touches, Macs or iPhones. Bowers & Wilkins commitment to Airplay is encouraging as the Zeppelin has in recent years been the most popular choice, least in my own stores, and it’s good to see a British company leading the industry. When it comes to other docking speaker systems, and let’s face it there are hundreds these days, the majority are poor quality systems designed and built by opportunist companies that none of us have ever heard DECEMBER2012 69

ondon living can be claustrophobic, so you can never have enough space. Most Londoners move into a new home and start planning an extension or refurbishment right away. At first, it may only be a pipe dream, but the longer you look at your undersized kitchen, with visions of dinner parties and open plan living, the harder it becomes to ignore. But where do you start? It probably feels a bit daunting, but it doesn’t have to be. In fact, the extension process can be fairly straight forward. As a full service builder, R&M Lines can manage the project from beginning to end. To start with, you will be provided with a quote and consultation from an experienced estimator. During this stage, you can discuss design ideas, ideal fittings and colour schemes; drafting up an extension that fits seamlessly into both your house and your life. You can also take advantage of your builders’ experience, finding out which materials look better and last longer, which ideas may have difficulty receiving planning permission and any structural elements

you need to consider. The goal is to build an extension that works with and maximises the existing qualities of your home. The same is true for a loft conversion or full refurbishment. Once you’ve ironed out the details, it’s time to submit planning drawings, which R&M Lines provides for free, to your local council. A clearly presented proposal can make all the difference and once your project gains approval, you can move onto the building stage. At this point, R&M Lines will assign a dedicated project manager to supervise your extension. Not only does a single project manager ensure that the extension you ask for is the extension you get, they also make sure that you have the right people working on the right things at the right time, delivering works on-budget and on-schedule. They’ll also do their best to accommodate you at every turn, keeping your home tidy and responding to any requests you might have. You probably don’t have the time required to coordinate builders, plumbers and electricians but with a project manager on the case, with their professional contacts and experience, it’ll be
easy. Additionally, as R&M Lines provide an 18 month guarantee on all works, you won’t have to worry about anything going wrong once they’re out the door. A couple of months down the line, the works will be finished and you’ll have a beautiful new extension; one that you’ll be proud to show friends and family alike. With space to entertain, relax and spend time with your loved ones, you’ll have more ways to enjoy your home than ever before. ome of the best-known decorative ironwork in the world has been made at Rowhurst Forge, including the gates to Shakespeare’s Globe in London. Husband and wife team Adam Boydell and Lucy Quinnell specialise in top-quality, one-off pieces. Their clients commission exclusive work, and appreciate high standards of design and workmanship. Every job is different, and the couple’s portfolio is packed with a diverse range of fascinating metal artworks – from trophies for the Sir Michael Caine Drama Awards to a large sailfish for the home of a private client. Public Art is a speciality, and several British towns host large-scale metal artworks designed and made by this small Surrey team. The well-known Dorking Cockerel was commissioned from them, and made by their colleague Peter Parkinson. Adam and Lucy also enjoy making ironwork for gardens. Winners of an RHS
Gold Medal for their first garden at the Hampton Court Palace Flower Show in 2008, they went on to design an iron love seat for “A Midsummer Night’s Dream” by Jayne Thomas (winner of The People’s Choice in 2010), and made iron crowns for Jayne’s “Celebration and Jubilation” 2012 garden. As well as creating bespoke ironwork, Lucy also represents more than a hundred art metalworkers and jewellers at her gallery Fire and Iron. On the same site as Rowhurst Forge, Fire and Iron is an exciting place where people can see, buy and commission work by Lucy and Adam and other leading craftspeople working with metals. “We’re like a big, extended family,” says Lucy. “I’m surrounded by the brilliant work of creative people I have trained or worked with over many years. We are all growing together.” The scale of artworks ranges from an extraordinary double bed – like something from a film set, the iron bedhead

swirls and twists and is encrusted with huge chunks of amethyst, pyrite and rose quartz – down to tiny, delicate pieces of fine jewellery. Jeweller Kate Hill lives in Dorking and works with Lucy at Fire and Iron. She makes the stunning “Fence” collection of sterling silver and gold rings, pendants, cufflinks and earrings. Kate is one of twenty jewellers showing their work at Fire and Iron, several of whom trained locally at the University for the Creative Arts. Lucy explains how Fire and Iron’s jewellers are responding to current trends: “Ethics are more important than ever, unusual precious and semi-precious stones are in demand, and “upcycling” is really popular at the moment. I’ve just taken the plunge, and had my late grandmother’s old and broken gold jewellery converted into a very beautiful ring by my colleague Helen Walker. Helen is a genius when it comes to breathing new life into old jewellery, and I’m so glad I put my trust in her – the sentimental value is intact, but I have a stunning and wearable ring to enjoy.” Lucy admits that she sees ornamental ironwork as “big jewellery – jewellery for buildings and gardens”, and the fireplaces at Fire and Iron are certainly well-
accessorised. Striking fire baskets and log holders are accompanied by robust fire tools featuring expressive animal faces and flowing leaf forms. A poker and shovel await collection by their new owner – the handles coil elegantly into spirals, a stamped line and dot pattern adding texture and interest. Useful tongs and shovels line up next to more indulgent fire tools, such as toasting forks and chestnut roasters. In fact, the whole place seems true to the advice famously given by William Morris, to “have nothing in your house that you do not know to be useful, or believe to be beautiful.” So many pieces on display pass both tests, and those items that have no utilitarian function are without any doubt skilfully-made items of great beauty.

Ayrton Bespoke Period timber windows and doors
l
ondon was the world’s largest city from 1831 to 1926 and the building boom created many of the Victorian houses Londoners live in today. However age is catching up with the beauty and charm of the many special features of these properties such as the doors and windows. That is where Ayrton Bespoke steps in. The company specialises in the accurate replication of these original windows and doors, introducing modern benefits such as double glazing and weather seals. As energy conservation becomes an ever 128 j u n e 2 0 1 2

more important requirement, homeowners can benefit from modern joinery without compromising the valuable period features of the 19th Century and indeed earlier. Replacement windows and doors substantially enhance heat retention, noise insulation and isn’t it nice to have windows that open and doors that close! It can appear to be a daunting process replacing windows and doors. In an ordered and well worked fashion the Ayrton designers conduct a full survey, discuss design and plans with the customer before manufacturing commences. Fitting is typically 8 to 10 weeks later, carried out by their in house team who ensure that there is minimum disruption to the property. The company has experience working with local authorities and understands the planning stipulations for approval of changes to windows and doors in London’s conservation areas (and listed buildings). With an increased focus on refurbishment in the house market, the company is also involved with extension work and in particular the supply and fit of bi fold doors. The company offers 10 year guarantees on all their products and with an East European manufacturing base the company offers a price pledge matching any quote on a like for like basis. All their products are on display in their Showroom in Wandsworth, open Monday to Friday 9am to 6pm and Saturday mornings. 0208 877 8920 www.ayrtonbespoke.com

Christmas Planning by Andrew Coggins General Manager of Pantiles Nurseries Limited

Planting CAN occur throughout the winter months. The only time I advise for planting to cease is when the soil is frozen below the surface, at this stage the danger is that you will not be able to backfill carefully enough and there will be large air pockets which can lead to movement of the root ball or waterlogging. The rest of the time, planting is advantageous, whenever the soil temperature is above 5’c, roots can grow, enabling establishment.
In the garden there is plenty that can be done whether finishing the winter tidy up or planning for next year. I have said it before, but I will not apologise for saying it again, as it is one of the most frequently asked questions.
Many people are surprised to learn that with air temperatures below zero the soil temperature, 12 below the surface, can remain above that critical temperature, a combination of insulation and natural activity in the soil generating heat. Where you do have to be a more careful is planting the more exotic plants which can perish not due to damage to the root system but the damage to the more tender top growth. Plants which spend the winter outside in nurseries are less likely to suffer damage as the nurseries
t this time of year most peoples minds turn towards Christmas. Love it or hate it the festive season dominates most of our activities, from rushing around buying presents to chilling out with a nice glass of your favourite tipple. Christmas is possible the one time of year for many when they actually have proper downtime, time off work and dare I say it little to occupy your time. This thinking time is ideal for planning for the year ahead whether it is decorating the house, revamping the garden or booking the next holiday. The only word of advice I would offer with regard to this is don’t put starting planning too late, otherwise your plans are not likely to come to fruition.

would protect them if there was a high likelihood of damage as they become unsaleable. Ones that are kept undercover are more likely to be tender, although this isn’t always the case. Overhead protection needn’t put you off buying, but always ask for confirmation that it isn’t tender, this will give you protection should it suffer in establishment. Most good nurseries, will like ourselves, offer a 12 month guarantee to cover the establishment of your purchases. Plants kept in greenhouses, whether heated or not, should be avoided as these are more likely to get damaged if planted out in winter as the temperature could mean they have not entered proper dormancy. Trees and shrubs planted at this time of year are much more likely to thrive in the first year, as establishment has been able to commence earlier than those planted in the spring. The advantages this provides include: developing a larger root system which enables the plant to source more nutrients and water, it also provides better stability and therefore resistance to winds and reduces the risk of water logging damage. I personally like being outdoors at this time of year provided the weather is fresh and crisp, rather than the current wet and windy. Gardens and plants I believe can look at their most beautiful after a good frost. At this time of year the benefits of supporting wild birds, by providing food, water and nesting, can also start to pay off, with
the fleeting glimpse of a bird just bring to life an otherwise dormant environment. If you are lucky you may also attract a friendly Robin who will happily follow you round the garden as you carry out your chores. I do realise though that this isn’t everyone’s cup of tea. To some the comfort of the house is much more attractive, but even in there you can plan. Internet shopping, most of us now do it and for gardening it is no different. Planning ahead can save money, however probably the most benefit comes from enabling you to buy in a coherent way, each purchase being a piece of the jigsaw of next years garden plan. We ourselves have an internet site where you can purchase from the vast range of our products at: www.plantsforall.co.uk. Whatever you do this Christmas, have an enjoyable and safe one!

T
he company has completely revised the layout of its Surrey store; with seven new displays spread over 4,000ft2 and showcasing the best of Poggenpohl in a spacious, contemporary setting. Manager of the Guildford showroom Mike Harris says: “The changes we have made have brought the store to the forefront of design trends, but also show prospective customers the supreme practicality of our kitchens. Poggenpohl is a brand known for its minimalist design and exclusive detail, but actually precision engineering and long lasting quality are also our trademark and what make us stand out from the crowd. “In refurbishing the store we have created a space befitting one of the best known and best loved kitchen brands on the market.” The redesign coincides with an auspicious event in the company’s history – its double diamond jubilee. Therefore,

to celebrate 120 years of excellence in the kitchen industry – and to officially open the Guildford showroom – Poggenpohl hosted a Champagne reception and cookery demonstration there on 25th October which was sponsored by Louis Roederer – makers of the world famous Cristal champagne. Exquisite dishes were created by Tante Marie Cordon Bleu Cookery, which is the oldest independent cookery school in the UK, founded in 1954. The chef worked in one of the showroom’s luxury kitchens, using the latest appliances from Gaggenau, Siemens, Miele, SubZero and Wolf, and the audience was able to see firsthand how a Poggenpohl design fits perfectly into 21st century life. Poggenpohl marketing director Robert Laurie says: “When people buy Poggenpohl they are buying into a lifestyle, it’s an aspirational product and clients expect high style and design.

the +Artesio developed in conjunction with international architect Hadi Teherani.
“This larger showroom has an open-plan feel to it, with one display running into the next, giving an increased sense of space, and it definitely portrays a Poggenpohl lifestyle.”
Poggenpohl has shared premises in Guildford with prestigious bathroom brand CP Hart since 2002, with high-end bathroom furniture and brassware on the ground floor and the large kitchen studio above. Laurie comments: “We work with high design, beautifully made products for different areas of the home, so it’s natural that our clients will have an interest in both companies.”
Internal alterations mean the kitchen studio now benefits from masses of natural daylight and the layout works with the architecture of the building – including the large vaulted ceiling and existing windows. A variety of key design concepts are presented, ranging from the Modern Classic – a contemporary take on classic kitchen style – and the +Segmento – streamlined and handleless – to the Plusmodo, created in collaboration with celebrated artist and sculptor Jorge Pensi, and as shown above

TO GRIT OR NOT TO GRIT?
That is the question We are in the season of snow and ice again. What does the law say about gritting the pavements and roads?
I
n relation to Local Authorities, the answer lies in the statutory duty in the Highways Act 1980. The leading case in this area is Goodes v East Sussex County Council. The Court considered the issue of a Local Authority’s legal duty under section 41 of the Act and found that the removal of surface-lying material was not an obligation. This included snow and ice.
In 2010, the Court of Appeal considered the issue once more. In this particular case the issue related to the accumulation of grit on a sliver of tarmac on the edge of a highway. One of the allegations was that the Local Authority had failed to inspect or clear the road and had allowed the surface of the road to remain dangerous. The Court again confirmed that the duty on the Local Authority did not extend to the removal of surface - lying material. So, as a result, nobody can claim compensation for an accident on the road or pavement caused by the formation of snow or ice which has not been cleared or gritted. The legal position is very different in relation to private property, as a different statute applies. Each case is decided under its own set of circumstances and facts under the Occupiers’ Liability Act 1957. An Occupier of land owes a duty to a lawful visitor to their premises to ensure that they can use the premises reasonably safely, without risk of injury. Establishing who
the Occupier actually is, in law, is not always a straightforward question. The answer depends on who has control of the land or premises. For example, somebody living in a rented property or a shopkeeper with a commercial lease may be responsible for maintaining safe access routes. At home, remember that the postman and milkman are lawful visitors to your premises, as well as invited guests, and you have a responsibility to ensure that they can use your premises safely. So keep the access route to your front door safe. Remember that freshly fallen snow is rarely a problem – but it becomes more dangerous the more compacted it becomes. And if you have brushed it away and melt water has frozen again, it may be lethal. Use your common sense. If it is slippery, then someone could have a nasty accident. If they make a claim then you should be covered by your household insurance policy – but better to avoid someone hurting themselves in the first place.
If you need advice yourself following a recent accident or injury, please feel free to contact one of the specialist personal injury team at Barlow Robbins LLP on 01483 543200.
