Making Memories
W
e might not notice it, but many of our best memories are created around food. Cosy family lunches with mom’s traditional dishes, coffee with an old friend, nightspot gathering over sushi-these are what can be called everyday occasions that add flavour to our daily lives. That’s why we chose to dedicate this issue to the art of good food and all it entails. First up, we talk to one of Europe’s hottest chefs, Kurt Zdesar. With stints in celebrity Michelin star hotspots such as Nobu and Hakkasan, the Australian born chef worked his way up all the way from McDonald’s! His inspiring interview with Daniela Bonetto is a must read. As the festive season draws near we feature the best dining and tabletop ware to guarantee you some lovely lunching in our “Talk of the Table” feature. Al Futtaim Gives Back
Within the framework of its social responsibility and its commitment to social development and education, Al-Futtaim Group Real Estate financed 300 elementary and middle school students in Manshiet Nasser as part of the “Adopt a Student” program by Nebny, a charitable organization. The program aims to develop reading and writing skills across students attending Manshiet Nasser schools. Cross Egypt Challenge
Five years have passed since the start of Egypt’s one-ofa-kind motorcycle and scooter rally, Cross Egypt Challenge. In October, the sixth season of the famous rally took place in a continuous effort to promote tourism and to prove that Egypt is safe for travels. The 2016 season of Cross Egypt Challenge started on October 20th and lasted for 10 days. Kayaking & Biking for a Cause
In a new initiative to promote Taba as a safe haven for visitors around the world a group of young Egyptian athletes kayaked from Taba Heights across the Red sea to Aqaba. The Exodus team, called so because their trip attempts to cross the sea in the footsteps of Moses using the same route. The aim of the trip is to unveil the fascinating and peaceful nature of Taba and to promote Eco sports in local communities. The successful two-day kayaking trip started on Friday, the 23rd of September from Taba Heights- Sinai, crossing the Red Sea all the way to Tala Bay- Aqaba, ending on the 25th back to Taba again. The Exodus initiative was sponsored by Orascom Hotels and Development.

As part of its ongoing Responsible Business Programme, the Semiramis InterContinental Cairo joined forces with the Breast Cancer Foundation of Egypt to support breast cancer awareness month, to which October is dedicated every year. Australian born Kurt Zdesar is taking the world over one dish at a time. But he certainly didn’t start from the top. At sixteen he was knocking on McDonald’s door and started from the bottom. At eighteen he became the youngest manager at the KFC franchise (Southern Fast Foods) but it was a few years later that his entrepreneurial flair really propelled him into the limelight. He was approached by Nobu to establish their first European restaurant in London. Ten months later the restaurant received a Michelin star; the UK’s first Michelin star for Asian cuisine. Next was Hakkasan, London’s 2nd restaurant to receive a Michelin star. Then came Ping Pong, Chotto Matte and his latest venture Fucina. Needless to say, Kurt’s is one story we should all be listening to.
Daniela Bonetto: Why the hospitality business? Kurt Zdesar: Food. I have always had a love affair with food. I have always lived by the philosophy that you should do what you love so it made sense for me to get paid to work with food. DB: When did you realise that food was your path to take? KZ: I was 16, I had just started my first job with McDonald’s. I worked my way up through the ranks very quickly. It came natural to me, I faced many challenges working in some very tough environments but even then I enjoyed every moment. I loved what I was doing and I excelled in it. Since then the path has been very clear to me and I know I was doing what I was meant to do in life.
DB: Any regrets? KZ: No, not ever. Every decision I have made in life has contributed to my journey. Good and bad decisions have helped form who I am and taken me to a very good place. I often look back at my experience with Nobu and miss that sometimes. I worked by his side for almost 10 years, travelled the world like an owner, made important decisions and never faced the stress of putting up the risk. I had it good! I didn’t enjoy letting go of Ping Pong; it was difficult for me. If I had to choose one thing to regret it wouldn’t be letting go, it would be not finding a better way to deal with the situation. One thing is for sure, it taught me the most about business.
DB: Tell me about the beginning; McDonald’s. KZ: Like all employees, I started from the bottom. I did everything I was asked from cleaning the toilets, goods receiving, learning how to operate all of the cooking stations to finally working the pass - the main point of communication between the front of house and the kitchen. It was probably the toughest job that I recall doing, both physically and mentally. It was an extremely disciplined environment and being exposed to this at 16 conditioned me for my future roles. I learnt about teamwork, systems, procedures and most of all – how not to treat staff!

DB: A lot of kids nowadays try to find the easy route to success and get bored quickly when it doesn’t come. What piece of advice would you give them? KZ: From a young age I was always told to find something that I would enjoy doing and I’d recommend doing the same to everyone. Get your foot through the door, be prepared to work for free and make a career out of it, you’ll be less likely to get bored! Being surrounded by experienced people and showing a keen interest will give you experience and knowledge. Apply yourself and be prepared to do whatever is asked of you and always do it to the best of your ability. Follow this principle and before you know it you’ll be asked to do things you actually enjoy doing. More and more responsibility will be given to you as the people around you realise that you can deliver and deliver well. Success is derived from determination, a positive attitude and the application of work. Success does not just fall into your lap. When employers are looking to promote we look for the shining star – remember the cream always rises to the top…

DB: What is the best piece of advice you have ever received and by whom? KZ: During my career I was extremely fortunate. I had two mentors for most of my career – internationally renowned restaurateur Drew Nieporant (I heard that they made a case study of him at Cornell University) and world-class chef Nobu Matsuhisa. I first worked under them in 1996, when I was 24. I was lucky to receive lots and lots of advice. Nobu was really philosophical and taught me so many things and I remember our parting words very clearly as I was about to embark on my own: “Life is full of obstacles; there is a way around every obstacle. The key is to keep trying every direction, including digging.” Drew’s advice differed as it was always pragmatic and he loved psychology. He told me about a potentially lucrative deal he walked away from, the reason being that his potential partners were fighting for him to pay for an insignificant detail that he believed did not fall under his responsibility. Without explanation he got up and left both the table and the deal. Drew explained to me that he knew he could win the argument and get what he wanted but if they were going to be so greedy over minor detail, when big issues arose it would be a nightmare to deal with. This helped me realise that I also needed to take a step back in some situations and try to understand what is really going on and not what is right in front of me. Both Drew & Nobu taught me my most important belief – the value of the employee and how they must come first in the business.

DB: You really shined when you moved to Nobu. What was the midas touch? KZ: Seeing what a phenomenal restaurant Nobu the first restaurant had become it was clear to me that this was my opportunity to excel in life. Like my advice earlier I did everything I was asked to do to the best of my ability and I did it immediately! I threw myself into the job, I worked every day of the week, every hour the restaurant was open and even more until the restaurant found legs to stand on. All that was important for me was to become the best I could be and prove myself to the owners and the team. I was 24, I didn’t come with a wealth of
experience but I made up for it in determination and effort. I remained honest and loyal and by the way… I LOVED IT!! DB: When and how did you realise that it was time for you to branch out on your own and launch Ping Pong? KZ: Having opening so many successful restaurants for other people left me incredibly motivated. I had a driving force inside me, I wanted to test myself and I reached a point in life where I realised that the only way to forward myself was to take that final step.

DB: What is the most important thing you have learned about this business? KZ: The restaurant business is a combination of the dining experience (whether it be fine dining, fast, casual, etc.), the design, the service and ultimately the food. In order to create a success concept, they must work in unity. In this modern age restaurants also need to be digital savvy. Customers take pictures of their food and interiors to share on social media. A rule of thumb for me is to give my customers the material to share and in return they will promote the business for you. It’s a difficult business and every single ingredient has to be right or the recipe will not work. DB: What aspect of your business keeps you awake at night? KZ: The uncertainty of success – the restaurant business is evolving more quickly than ever before so the recurring thought of whether a new restaurant will work or not eats away at my mind like no other aspect of the business. It makes it unbelievably rewarding when they open and succeed. However, uncertainty is not the only thing that keeps me awake. In the silence of the night my mind is constantly throwing ideas at me. The noise my mind makes could almost be seen as torture! DB: What are your thoughts on companies such as Uber Eats, Deliveroo etc.? KZ: They certainly can act as a lifeline for some restaurants. This is not the case for all offerings and these services have really opened up an excellent range of dining options while at home or in the office. Personally I am not a big fan of food delivered to the home. I feel like we have lost touch with real ingredients and the nutritional benefits of cooking real food at home for the main family meal.
DB: What is your guilty pleasure? KZ: Ice cream, even if it’s cold outside. DB: What’s on your bedside table? KZ: My laptop. I have to use headphones at night to distract my mind from racing away. DB: Last book read? KZ: Recently I tend to only read cookbooks; I find it so exciting it’s actually ridiculous. I buy 10 or 20 cookbooks at a time and flick through them all within minutes then take my time with my preferred few. DB: Who do you admire? KZ: Richard Branson. Having entered the working world at a young age and foregoing the traditional educational structure is something Richard and I have in common. The hands on approach to learning and developing is something I can relate to and greatly admire. Being an advocate for charity and promoting young entrepreneurs are also admirable traits and owning your own island can’t be all that bad either. Jokes aside his success speaks in volumes for itself and I can only imagine the stress and hardship that he had to put himself through to get to where he is today.

Amr Saad With a love for quality, simplicity and the avant-garde, designer Amr Saad creates peculiar and artistic handmade eyewear unlike any you have seen before. In collaboration with art director Ikon Chiba and Maison Pyramide, Saad’s most recent Opulence campaign is a study in high fashion and design. The campaign features ragdoll-like forms dressed in fur coats and lipstick modelling the sunglasses in various poses. At first glance, Saad’s designs appear relatively common, but upon closer inspection one can see the unique features and shape apparent in each pair. According to Chiba, the campaign is all about the outrageous and nonsensical, inviting the viewer to see beyond the obvious and ponder how the forms and designs relate to your personality or those of your loved ones.

Starting a new project called UltraBOOST Uncaged Parley, Adidas plans to take ocean plastic and recycle it into shoes- high quality, environmentally saving shoes. Both looking fabulous and feeling fabulous never seemed so realistic until this moment. And maybe projects like these can help save our sea life (yes, even the baby turtles).

Azza Fahmy’s Talisman By Nour Ibrahim
Talisman: a charm that is meant to mystically benefit the wearer in a series of ways. Cultures through the ages have all obtained said symbols of good fortune, unifying history into one common superstition: the function of Talismans. And while today some may see them as a mere charm or stone, the history behind each cypher holds great meaning and sentiment, and for this reasoning, is still held dear to many today. Hence what makes the Azza Fahmy: Talisman Collection so extraordinary. It takes the symbols of ancestors along with their definition and history and merges the different cultures of the unique talismans in a way that can only be described as intricately remarkable. With fine detail and even finer material, such as gold pressed silver, sterling silver, and precious and semi-precious stones, the uniquely interpreted charms are nothing beyond mesmerizing, each talisman hiding a unique and special story within their very core. The first few Talisman collection pieces represent protection and shielding from the harms of life, more collectively known as the infamous Evil Eye. The feel of mysticism and gracefulness each one beholds is a wonder on its own. The magical talismans seem to be getting an above average treatment in terms of quality and class as their jewelled interpretations are seemingly beyond exquisite. “Japan is a country full of contrasts: it is simultaneously classic, modern and contemporary. Our boutique will be luminous and graphic. Visitors will feel as if they were experiencing a sunny Sicilian day in Tokyo…” Domenico Dolce and Stefano Gabbana expressed the concept behind their latest store opening in Japan. Dolce & Gabbana bring some Italian fashion and reflections of Sicily in their newest installment of boutiques in the wealthy Aoyama district in Japan where it contrasts with the country’s uniqueness. The store sits in a luxury-shopping hub of Aoyama, which is very close to most trafficked crossing in the world, Shibuya. It is also located next to the state of the art integrated property development, Rappongi Hills. The design of the Aoyama boutique forms an emotional connection between the structure, product and materials through light effects, contrasts and special angles. The space is a 550 square meter area architecturally designed and decorated to bring out Sicily’s characteristic and vivacious radiance through chiaroscuro effects. Lit by light projections, the boutique is made to resemble a compact black volume where the light illuminates the displayed collections in systematic interludes. Theatrical lighting is projected on the products where they
erupt with colour or stay in the shadow by the generated 400 spotlights in the ceiling switching on and off and moving around- suggesting a natural play of light on a sunny day. The Dolce & Gabbana boutique carries menswear, women’s wear collections as well as accessories. It is a two level store, where the men’s and women’s ready to wear, accessories and leather goods are displayed on the ground floor. Housing the footwear, men’s formal wear and women’s eveningwear is the first floor. There is a large staircase and a small room with a special design concept, where the jewelry collection is displayed, illustrated with a gold carpet
and brass ceiling which contrasts with the rest of the store. Arabescato marble covers the outside and the inside of the store, with slices of the marble cut out for the windows. All the flooring is tiled with black ceramic. Also the display cases for small leather goods are made out of the same marble. A regal slab of Carnico marble, with an illuminated ‘Dolce & Gabbana’ sign, sits above the glass entrance. Le CouCou New York City A wonderful display of classic French technique, Le CouCou NYC brings Paris to New York City at last. Currently the owner of two Paris-based establishments, Le CouCou NYC is renowned chef Daniel Rose’s first stateside endeavour. The charming interior designed by Williams and Roman is a wonderful blend of part modern contemporary, New York City elegance and French countryside. A Reinvention Brandon Haw Daniela Bonetto meets Brandon Haw to discuss his belief in functional clarity, what makes a beautiful design and his relationship with Sir Norman Foster.
In 2014 Brandon Haw founded his own architecture practice. As one of Foster + Partners’ longest reigning Managing Directors, Brandon had previously spent nearly thirty years at the helm of high-profile projects. The studio, located in Mies van der Rohe’s Seagram building in Manhattan, is an agile design-led architectural practice with a firm belief that the quality of our environment, both at an urban scale and the smallest scale, adds value to our everyday lives physically, economically and spiritually.

Daniela Bonetto: What is good design? And why do you think it can impact people lives? Brandon Haw: I grew up in a family of artists, my mother was an illustrator and my father was a minimalist painter and later a conceptual/environmental artist. Both were a tremendous influence on me, so much so that at the moment I was about to follow their footsteps and apply for art college, my father instead convinced me to apply to architecture school. His reasoning was clear and convincing. My brother and I had been bought up to appreciate nature, the environment, and how things were made; and above all, the fact that our surroundings played an important and fundamental part in our everyday lives.... that if we were stuck in a hospital bed, or a dark and dingy office with no light or air; or lived in a city with terrible infrastructure and poor or non-existent open space, then this was detrimental to the wellbeing of man and civilization. In other words, with an in-built appreciation of the arts through our upbringing, we were also exposed to the importance of functionality and of making things that worked well. These notions were instilled into me and helped to define the differences and confluences between the pure arts that may move the soul or the intellect, and architecture, which has the capacity to not only achieve the same emotions, but which could also lift the spirit through sublime functionality and beauty. DB: How did your relationship with Sir Norman Foster first begin? BH: I returned to London, where I was born, in 1987 after studying at Princeton and living and working in New York for a number of years. I joined Foster Associates, as it was then called, when it was just a couple of dozen people. I recall at the time telling them that I planned to return to New York after a year, but found instead an ethos of design, championed by Norman, that completely synced with my own background growing up. The Foster office similarly believed functional clarity was a goal to be achieved alongside beautiful design. The rigor of analysis during the design process, attention to detail, as well as an understanding of how things were built, were part of our day to day as designers. I worked with Foster and Partners for 26 years, designing projects around the world ranging from the Kings Cross masterplan, to the Commerzbank Tower in Germany, the Hearst Tower in New York, the Faena House in Miami as well as many, many others. As a Senior Partner, I had seen the growth of the practice rise from a few dozen, to 400, 600 and upwards of 1,200 people, creating the world force in architecture that we see today.

DB: When and how did you realize that it was time for you to branch out on your own? BH: In 2014, I decided to open my own new studio here in New York. Having been part of a large global practice, and having amassed a wealth of experience over the years, I felt it was time to start afresh with a creative, design lead studio. The building of a new firm is itself a project. I had always felt most at home in New York, and I feel a commitment to the city as my adopted home. My new studio is located in Mies’ 1958 Seagram building - one of the world’s most important pieces of 20th century architecture, which was itself quite radical in its time, and is a great source of inspiration each day. DB: How was it to work on the rebirth of the World Trade Center and what does it mean to you? BH: I recall when I was here on 9/11 for the Hearst Tower project and the rallying together of New Yorkers during that time of trauma. It was important to have worked on the World Trade Center competition as a way to envisage a new optimistic vision for the city, where sustainability and environment would play a role in our everyday working lives.

DB: What is the most important thing you have learned about this business? BH: Over the years I have learned to be patient and the importance of listening. I tend not to get too rattled. Architecture is a long game and the process is far from linear at times. It is important to always have a flexible attitude, but most of all to have the courage of your convictions. Also, as architects and designers, we have a responsibility to lead and advocate passionately for better design that will improve the quality of our daily lives.
DB: Clients are becoming more design-conscious. How has that influenced you? BH: It is often said that behind every great piece of architecture there is a great client. This is largely true- so it is very positive that clients see the added value that great design brings, not just economically, but socially and environmentally as well. This greater awareness on the part of some clients does not necessarily change the way one designs at all, but it certainly can be both more liberating and even challenging when a client is pushing you harder.
DB: The last place/ building which made you think, ‘I wish I had done that’ BH: I recently had the privilege to visit Le Corbusier’s La Tourette in France. It was wonderful to experience the almost relaxed and effortless mastery of his craft; much like a great Rolling Stones performance or a great Picasso. There was a confidence to each detail and architectural move that was extremely rewarding. DB: Smartest business decision? Worst? BH: I think opening my own design studio and returning to the roots of when I first arrived here in 1982 has been one of the great decisions in my life. As for the worst, that is more difficult, but I certainly do not regret anything.

DB: There’s plenty of architecture and design out there that is not very functional… BH: When I see architecture that puts form, shape or pattern over function I struggle with it. It goes back to my upbringing in Art. For me there is a difference- if I wanted to be a sculptor or a graphic designer, then I would choose to do just that, but I think architecture is more than that, and has a social responsibility. The utility and functionality of architecture has to be at the forefront, but not at the ‘expense’ of beauty, but as part of the creative driver towards a beautiful end result. DB: Where is the most exciting architecture happening in the world? BH: I believe there are many exciting developments in architecture the world over. Japan is re-emerging as a creative force, as well as China and Korea. I particularly admire the work of Studio Mumbai in India. At the moment, we are quite active in Latin America, which is another fertile ground for innovation in design. DB: What is the best piece of advice you have ever received and by whom? BH: I always remember my father telling me life can be like a grand game both serious and enjoyable, and through which you hone your responses through experience. He always encouraged me to travel and be free of mind. These were great pieces of advice for me. Vendome, Bogota

Gazbia Sirry Art Is My Life By Nour Ibrahim
Gazbia Sirry is known as a pioneer in Egyptian Art history. Having gone through the constant ever changing emotions of the country itself, her art depicts the emotional and physical life of Egypt as well as it’s ever-changing moods. Many of her works also portray dear family and friends that are portrayed in a truly detailed manner, having all the pain, emotion, and tiredness in addition to the smile lines, laughter and love that comes alive through her work. Being well known to express her passion through the canvas, one can take Gazbia’s early exquisite pieces as a journey through Egypt’s history. Through times of turmoil her art depicted darker colors and more depressing sceneries, just as in times of flourishment her canvases portrayed bright colors of enthusiasm and rejuvenation. If a person were to explain emotions without words, they would show them her paintings and the viewer would understand immediately. This emotionally vivid outcome is thanks to Gazbia’s tendency to take her emotion out on her work. She is known and specializes in this form of stress relief and is iconic because of just that. Of course, along with emotion comes the humanism. While peasants and strangers are painted to interpret a point, or tell a physical story, her ever so detailed portrayals of her friends and family contrast the simple artistic style of the former, and create a more complexly intricate style of realism. Alongside this realism comes a technique. She seems to memorize a lifetime of emotions and expressions from her subject before replicating their features onto a canvas. This style gives off a unique form of realism as well as a history of emotion and personality within the models face. The practicality, the sternness, the happiness and the sadness of her caricatures seem to radiate from the canvas, maybe not giving us a physical story, but most definitely portraying an emotional one. And even more interesting is the fact that these characters in her life are being painted from her point of view, truly giving us insight on how she herself portrayed the people around her, and not who they actually might be, making the story hidden within the face of the portrait even more fascinating. Towards the end of her career, Gazbia became more attracted to abstract art. The beauty she brought along with this art was contrary to her original styles. In contrast to the first, the abstract art was more open to interpretation. While in the beginning you knew exactly what she was trying to portray, her later works suggest the audience think and wonder for themselves, giving the paintings a unique sense of flexibility and thought rather than raw emotion. The fact that she amazingly perfected both raw and intuitive styles just gives more validation the already remarkable title the artist holds. When the term “Art is My Life” is used, it is not used lightly. Gazbia lived through her art, which is why she is so extraordinary. A person can look at her life, her emotions, her family, and her friends all through a few paintings, giving her something so importantly remarkable: immortality. For the Teriyaki, mix the soy sauce, 1 cup of water, ginger, garlic, sugar, and honey together in saucepan and bring to simmer on medium heat. Once simmering, add the cornstarch mixed in the cold water and cook till sauce thickens, about 2 more minutes. 3. If preparing in advance, let sauce cool, then marinate the salmon in the sauce. If not continue directly to step 4. 4. Preheat the oven to 160C. Place the salmon on a baking pan lined with parchment paper or aluminum foil. Brush the teriyaki glaze all over the salmon and bake for 15-20 minutes or until cooked to your liking. 5. Take out of the oven and remove the skin, it should come out easily. Serve salmon with salsa on top and extra teriyaki on the side.
