AccorHotels Expands AccorHotels, the world’s leading hotel operator, has announced the signing of a hotel management agreement (HMA) between Arabia Group, developers in high quality mixed-use residential, retail, and commercial developments in Egypt and United Arab Emirates in partnership with the Ministry of Housing and Urban Development. Slated to open by 2022, the addition of Fairmont Pyramids Hotel & Residences will increase AccorHotels’ operational and development pipeline to 32 hotels in Egypt. Fairmont Pyramids Hotels & Residences will feature 250 rooms and 200 branded residences. Designed in accordance to a blend of Pharaonic and modern design aesthetics, the hotel is located just four kilometers from the Great Pyramids with unobstructed views of the wonders of the World as well as direct access to the new pyramids entrance.

Amazon to Acquire Souq.com Amazon has today announced that it has reached an agreement to acquire Souq.com, an e-commerce leader in the Middle East. Inertia Sponsors “Aswan42” Inertia, the prominent real estate company was the platinum sponsor of the first-of-its-kind marathon on the 24th of February, 2017 in Aswan, Egypt. The running event, titled ‘Aswan42,’ was held in collaboration with The TriFactory and the Magdi Yacoub Heart Foundation. “Dr Magdi Yacoub attended the marathon himself, and inaugurated the run,” said Engineer Hussein Rifai, the Chairman of Inertia. “Running next to someone as benevolent as himself, helped enthusiastic contestants from all over the world to walk the extra mile for a human cause,” he added. The marathon united 1,000 competitors from 32 nations, with a significant number of observers that attended to watch the unique run along the River Nile.

Egyptian Glam Goes International
Egyptian fashion designer Farida Temraz has been taking over international runways at a very young age with her glamorous collections as well as dressing up widespread celebrities on the red carpet, raising up the fashion bar for Egyptian designers. Her namesake Egyptian luxury brand Temraza is all about the elegant haute couture and bridal dresses for all sizes and all identities. We sat down with the creative designer to talk about her latest designs and success at New York Fashion Week. By Sarah Hassan
How did you feel after winning ‘Best Female Couture Designer’ at New York Fashion Week? It is an amazing feeling because I feel it actually paid off, but God willing there is more to come. The most interesting part is that when you see a lot of challenges that you have faced; coming from a third world country and going all the way to the city of fashion Paris and receiving an award there, that is indulging. It is not about your age, your background, or your nationality. Creativity and professionalism pays off on their own. What was the inspiration behind your Xecutive collection? 2017 is the year of women. Therefore, my main aim was to empower women that want to look good at all times at the same time. Women who manage work and households, women who have kids, husbands. I wanted to make it easier
for them to look good and also practical at the same time. Which Celebrity you think would look perfect in your designs? Jennifer Lopez In your own words, how would you define your design style? Unique and highlighting the best part in your body. When you wear Temraza, you can’t notice a default in your body. That’s the most important thing we have. This doesn’t mean that we take only model size people. On the contrary, 90% of my clients are either veiled or plus-sized. So it is my job to highlight the body shape by enhancing the best parts. So it is unique in that sense and in it quality.

How do you manage to handle the business as well as the creative side of your brand? Of course it is very very difficult. Keeping both of them is making me go crazy and sometimes I just need a break. I manage every single thing but sometimes I just snap and leave the entire world and go to my bubble and start to design. What are the biggest challenges you’ve faced so far in your career? Getting international is one of my biggest challenges. It is very difficult to keep up in four different countries while being based in Egypt. There are also people who are trying so hard to deflate the business and sometimes I have problems with staff, customers and fabrics. So everyday there is a challenge. What is the advice you would give to young women who want to start their own businesses? Proper presentation. Fashion needs good presentation. Be passionate, professional, patient and persistent. Give a proper performance. If you work something that you are passionate of then it becomes part of you. So for instance, I can’t tell you to separate your life from work because I am working in my passion.
What are your ambitions for Temraza? To be the first Egyptian-based International brand. How important is fashion in our daily lives? It’s who we are. It is the form of marketing. You market yourself through what you wear. So if you go to an interview, what you wear shows whom you are. No one can live without their fashion. It’s like a necessity, at least for me personally. Some people just imitate others which doesn’t reflect who they are- which is wrong. This is how trends come up. You create trends. There is nothing called à la mode. Word of mouth expresses the idea of new trends. A trend comes with someone who looks good wears something that used to be there because in fashion history repeats itself.

Model, fashion icon, and Victoria’s Secret Angel, Gigi has become a very significant part of the fashion world and a highly esteemed model all at the young age of 21. The Dutch-Palestinian beauty was not only voted model of the year by the British fashion council in 2016, but was nominated twice for a teens choice award, and won the first annual Fashion Los Angeles award in 2015. Mixed race babies always grow into the most beautiful of swans, and Gigi was no exception. Born to the Dutch model and reality star Yolanda Hadid and Palestinian real estate developer Mohamed Hadid, it was no surprise that Gigi would grow up gorgeous. The beautiful couple also had Anwar and Bella Hadid. Bella is almost as famous and successful as sister Gigi, and their younger sibling Anwar is following in his successful
sisters’ footsteps as he recently started a career in modelling as well. Originally modelling as an infant for Guess, Gigi’s modelling career was paused for a period so that she could focus on school. In 2012 however, she returned as the face of Guess while she was still enrolled in school but soon dropped out a year later so that she could completely devote herself to the world of fashion.

After dropping out of college, the young model signed to IMG models in 2013, and made the big move to New York City. She made her first debut walking the catwalk for Desigual at the 2014 New York Fashion week, and from then on, her popularity in the fashion industry began to grow. In the July of the same year, she appeared alongside Peter Schwarzenegger (Arnold’s Schwarzenegger’s son) in the Tom Ford Autumn/Winter eyewear ad, as well as other campaigns for the American label. By May 2015, Gigi had already walked the runway for all the big fashion designers including Marc Jacobs, Channel, Micheal Kors, Jean Paul Gaultier, and Max Mara.
In December of that year Gigi gained her Angel wings and joined the exclusive club of Victoria’s Secret models. In her debut appearance, the uprising model garnered a lot of buzz and attention from inside and outside the fashion media, fast becoming “the” most talked about models in the fashion scene. Being part of singer and songwriter Taylor Swift’s squad and girlfriend to ex-One Direction singer Zayn Malik definitely helped boost her popularity. She is also the best friend of model Kendall Jenner, the sister of the infamous reality star Kim Kardashian. By the end of 2016 Gigi had walked for Versace, Chanel, Elie Saab, Fendi, Marc Jacobs, Anna Sui, Miu Miu, Balmain, Diane Von Furstenberg, Isabel Marant, Giambattista Valli, and finally
Tommy Hilfiger. Not only is she an ambassador for the brand, but also she collaborated with the brand on two capsule collections titled “TommyXGigi” which both sold out in record time. By 2017, it’s hard to find anyone who doesn’t know who Gigi Hadid is. For the spring/summer 2017 season alone she has fronted campaigns for Fendi, Max Mara, Stuart Weitzman, and Tommy Hilfiger among others. The 21-year-old Gigi has such a spectacular resume behind her, and she’s only in the beginning stages of her career!

Versus Keeps It Real The new face of Versus, Zayne Malik, is strutting the covers with a gallery of seemingly casually candid shots. How casual the images were is actually no secret, as it turned out the photoshoot was as chill as it looks. It is no surprise, however because the images were taken by none other than Zayn’s gorgeous girlfriend, Gigi Hadid. Taken by iPhone and digital camera, the shoot was held at the Chateau Marmot hotel in LA, and also includes cameos of model Adwoa Aboah, as him and Malik both just hang out, flaunting pieces from the brand. Talk about keeping it real.
Christopher Kane’s Beauty and the Beast The uniquely talented designer Christopher Kane has once again stunned us with a fabulous modern day twist on tale as old as time “Beauty and the Beast”. In the new line Kane is inspired by the colours and symbolism from the classic film and re-enacts it onto the canvas known as fashion. From Disney-bound skirts to unisex icon sweaters, this line is sure to be a fan favourite, and a definite must have for any Disney fanatic.
H&M Revolutionary Denim Line Denim is always a tricky piece to buy, and usually comes with conforming to respective gender based styles. Sadly, those styles just don’t work with most of us, which is why H&M’s new gender fluid denim line is something we more than excited for. The oversized collection is meant to be laid back and casual- what denim is exactly meant to represent. It’s comfy, cool, and fashionable and a perfect staple to any person who still hasn’t found the right denim yet.
Paco Rabanne’s Arabian Star Line-Up Local Arab talents are taking the stage as Paco Rabanne teams up with Joelle Mardinian, Taim Al Falasi, Sherif Fayed and Wonho Chung to create the victorious scents known as Olympea and Invictus. Both signifying a victorious god or goddess, the scents are one of empowerment for both male and female counterparts, and smell like one thing: winning. While both are accompanied by a gentle blend of orange flower Olympea Intense, for women, has more of an amber, salty vanilla aura to it while Invictus Intense, for men, contains more of a fresher wooden scent as well as some hints of light amber woods. With the help of these four magnificent talents, it’s safe to say that Paco Rabanne may have created a soon to be bestseller.
Sandbox #MoreToAutism The Egypt-based jewellery brand Sandbox has collaborated with the Egyptian Autistic Society to raise awareness for the cause through exclusive pieces of jewellery. Coming in two selections, Sandbox envisioned a puzzle piece necklaces can be worn to show support to the strong mothers of autistic children, or engraved for the mother herself with her name and the name of her child. According to designer Suhayla Al Sheikh, “Jewellery touches you literally and figuratively.” It is a way to own who you are and express it. Which is why the campaign is so amazing, not only does it emotionally connect people to the cause but by buying a necklace, you will have made a donation to the cause, as 20% of the total proceedings go to the Egyptian Autistic Society. D&G’s Runway look If you thought Dolce&Gabbana models looked flawless on the runway for the AW17 collection, you were right. The makeup artists backstage made sure this was the case. Yes, it’s modest fashion, and boy are we excited for this one. Welcome, everyone, to a world where international designers are changing their views and no longer considering modest wear a burden, but an untapped opportunity. Lately fashion designers have taken to the runway to present an array of styles all alluding to a more modest take on fashion. This comes at a time where fashion in Middle Eastern is taking off and beauty gurus and fashion designers are becoming household names. And while a need for modest fashion has existed for many years, the western world seems to just be opening up to it, and the result is a gorgeous combination of both western and Middle Eastern styles. Here are just a few of the brands that are embracing the notion of modest fashion.
Dolce&Gabbana’s Abayas Okay, so this isn’t the first time Dolce&Gabbana have ventured into modest dressing. In fact they were among the pioneering luxury brands to develop capsule collections that were sold exclusively in the Arab market. Just last year they debuted their first collection aimed towards the Muslim community. This year they continued the collection with the recently launched Spring/Summer 2017 range. The collection is mainly composed of Abayas and headscarves in Dolce and Gabbana’s signature prints such as florals. With Dolce&Gabbana’s bold and ornate patterns mixed with a modest silhouette, the result is both striking and demure.
Diesel’s Middle Eastern Leap Italian brand Diesel is notorious for its edgy and hip designs, so when they announced that they would be creating a collection slated for the Middle Eastern market, we were intrigued. Already for their latest Diesel Black Gold collection of Fall/Winter 2017, models strutted down the runway in long, flowing modest designs. It seems they are talking this direction one step further as they develop a special collection for the Arab market. Taking inspiration from the modest silhouette, we will be on the look out for Diesel’s new collection.
Nike’s Pro Hijab Wearing a hijab and playing sports is not the easiest task, which is why Nike has finally created the perfect solution for every Muslim athlete. It took Nike a year in the making to develop the product, which should be available in the markets in 2018. The result was a lightweight one-piece scarf is meant to easily be slipped over the head and stay in place, like a stylishly stable swim cap. Bearing the Nike logo of course, this inclusive design is one that many have been waiting for.

One thing is clear; Aquavit is way ahead of its time. First opened in midtown Manhattan in 1987 and the recipient of two Michelin stars, Aquavit continues to be one of the city’s most popular dining destinations. The Aquavit brand has since expanded to Tokyo and, most recently, London. Located in the upscale St. James’s Market development, Aquavit London can be described as formally informal. Featuring marble floors, shiny chrome fittings and low hanging chandeliers, the atmosphere is more swanky than stiff. Clean lines and natural tones contrast beautifully with unexpected pops of colour found in little details such as the seating and glassware. Headed by executive chef Emma Bengtsson, a mainstay at the New York cite, and head Chef Henrik Ritzen, formerly of The Arts Club in Mayfair. Open from morning to midnight, the Aquavit menu is as complex as the ingredients used, with separate menus for weekday set lunch and weekend set lunch, along with breakfast, all day a la cart and weekend brunch. In terms of breakfast, Aquavit offers simple and healthy fare including
cardamom buns, sheep’s milk yogurt with cloudberry compote and organic granola. Weekend brunch features traditional dishes such as raggmunk- a Swedish potato pancakes with lingonberries, and blood pudding with poached egg and bacon, along with signature cocktails such as a Vikings Breakfast made from Aquavit, tomato juice and soy sauce. Breakfast aside; Aquavit’s all day a la carte menu is the real cause for excitement. Diners can order a smorgasbord of dishes paired with a custom spirit selection. Girlboss Charismatic founder of the fashion brand Nasty Gal Sophia Amoruso’s life reads like a series. So when Netflix went ahead and produced a show inspired by Amoruso’s New York Times best-selling book #Girlboss we were not surprised.
The series centers on Amoruso, played Britt Robertson, who began selling vintage clothes on eBay and, by the age of 28, had already built the multi-million dollar fashion empire, Nasty Gal. Girlboss will launch on Netflix in April and is created and executive produced by Kay Cannon who previously produced hits such as Pitch Perfect 1& 2, and comedy series 30 Rock. Superstar Charlize Theron also serves as executive producer along with Laverne McKinnonand, Beth Konoof, Christian Ditter, and Sophia Amoruso.
With the recent news that Sophia Amoruso’s company Nasty Gal has just filed for bankruptcy following over a decade of huge success, it is interesting to see if season two (if it is ever produced) will chronicle the current dramatic turn of events that are unfolding in the company. The spacious area has plush seating arrangements and is furnished with leather and other rich materials that provide the feeling of both comfort and sophistication. Decorated with harmonious shades of brown, café and taupe, your eyes can’t miss the bar at the center of the establishment. We went ahead and started to sample the Saumagra (salmon tartar with truffle oil and caviar on a bed of toasted bread), which were perfect bite sized sandwiches with delicious crunchy bread. The Wang Spring Rolls (duck spring rolls) were a sumptuous take on the classic spring rolls and a must-try for your next visit. For a classic favorite try the Carpaccio Rose (beef carpaccio on a bed of eggplant caviar) or if you are feeling a little bit
For the main course, we had the delicious Caruso Fillet. The grilled fillet made with Le J.Z’s signature sauce was cooked to perfection. Using premium meat especially sourced for the establishment, we were not surprised with the fillet’s mouthwatering quality. Meanwhile the Tuscany Ravioli is a great option for any Italian food lover. Bringing Art Home
Artist Dina Samaha When conceptualizing a new home, what gets hanged on the walls often gets lost in the shuffle. Ideally, however, art should be an integral part of the process of creating a space. We caught up with artist Dina Samaha, who is a regular collaborator with Eklego Design and other big names in the capital, to learn more about the importance of art, what inspires her, and what trends we should keep our eye out for this spring. Tell us about your latest exhibition, Inner Souls.
Inner Souls is a group of paintings reflecting a journey into the human soul—the very essence of life (the pure soul, the spiritual and the inspirational). It is a flow of “inner” emotions expressed on canvas through brush strokes and texture. In this exhibition, viewers are inspired to visualize art in their own homes along with furniture pieces, where art is in a part of a space rather than something to look at on big white walls. I really enjoyed collaborating with Eklego Design as it relates a lot to my artwork concept of “art to match your space”. I worked on their furniture display in the past, so creating the final touches within the exhibition was a lot of fun for me. Working within their Zamalek showroom and with their furniture, felt like I was working with one of my own Artistri interiors.
How do you see the relationship between interior design and art? Art to interior is like jewellery to women—it makes a statement and accentuates her beauty. More often in interior design we see wall art is always dealt with last, after the furniture has been fully arranged. However, to me adding art to your space is the most crucial element in home decor and should be thought of in early design stages. Having the right art piece in your home creates balance to your space and keeps the first impression to your visitors. It provides harmony within the client’s space’s theme or can add colour in a muted scheme. Every new project is like a blank canvas to me—I get the opportunity to transform each and every room into a space filled with personality, one that the client would enjoy seeing everyday. Art is like the magic piece that brings your space together.
What are your biggest inspirations?
There are so many things that inspire me.
It is difficult to pin down just one inspiration, as influences for me are countless. Everything around me inspires me—my mood, my emotions, my travels, nature and most importantly the home design I am creating the art for. Some days I just wake up with an idea in mind and translate on canvas and other days ideas just happen while am painting. I always take photos of things I like to open doors for creativity or if I have my sketchbook in hand I sketch down fresh ideas.
What is the most exciting new trend in art and design?
Well, what’s so exciting nowadays is that there isn’t just one or two trends that people are following. The whole interior design concept is becoming more bold and daring with pattern and colour. People are no more afraid to introduce colour to their space and make
their homes more personal. We all know Egyptians like to start with neutral earthy tones in their furniture and then go bold with oversized artwork with pops of colour, striking accents or a statement wallpaper or wall paint. Today, I feel like clients would like their homes to reflect their individual tastes and interests rather than a “one style suits all” approach. Being an interior designer and artist, makes me want to experience different styles and enjoy the journey until the very end. I love to see how the whole picture comes up together- design along with décor- and how the whole room atmosphere has changed dramatically through every stage. My clients are also starting to connect so much to nature by bringing the outdoors indoors and having the maximum amount of sunlight in their home. Indoor plants and potted succulents are becoming a must-have for decoration and an easy way to bring natural appeal to your space. “Greenery” (Pantone colour of the year) is the biggest proof to this—it brings freshness and spring to your home.
What are you working on next?
I am working on collaborations with interior designers so I have several pieces in progress. Working with other interior designers is definitely the highlight of my business. They totally make this journey worth it and more challenging. After all, it’s very satisfying to see your own work in a beautifully designed context. Am looking forward to experimenting new techniques and new media and create art that perfectly meshes with clients existing space. I am also launching a website later this year, where clients can order their bespoke handmade paintings directly either from my collection or they can commissioned a piece.

Studio Blumenfeld New York 1941-1960
The Cité, a space for artistic experimentation in Paris, revisits the Studio Blumenfeld: New York 1941-1960, where the exhibition invites visitors to discover the artistic journey of a photographic genius, his constant yearning for exploration, and his search for identity through colour photography which, throughout the 1940’s and ‘50s, would come to influence all of America. Schooled in the European interwar avant-garde movements, Erwin Blumenfeld (1897-1969) built most of his career in the United States, where he moved in 1941. During this period, when the press was on the rise, Vogue, Harper’s Bazaar, Collier’s, Cosmopolitan, Life, Look, Kaleidoscope, and Photography, all these major American fashion magazines, called upon his photographic talent. Three years after his arrival in New York, Blumenfeld became the most famous photographer in his field, and the best paid, too.
Torn between the requirements of commercial orders and his own artistic ambitions, Blumenfeld managed to create a unique, immediately recognizable style: colour and light effects, manipulations of the medium, repeated motifs, shortened silhouettes, bold framing... A style that, in the end, drew heavily from his European roots. Visitors are invited to immerse themselves in the universe of the Studio during the war and post-war years, through a unique selection made from a personal archive of nearly 700 pieces. This show presents colour fashion photographs taken by the artist for the press, magazine covers, and his ‘100 Best’ selection of most inspiring images from his research, which covered a folding screen in his studio that was occasionally used as a prop for shoots, advertisements, fashion series, and other experiments.

The Big Bend
Skyscraper As the world population continues to climb to unprecedented levels and urban centres become increasingly congested, developers and architects are finding increasingly creative ways to manage spatial constraints when embarking on large-scale development projects. This has resulted in a recent of building up, as exemplified by recently completed mega structures such as the Shanghai Tower in Shanghai, One World Trade Centre in New York City and Burj Khalifa in Dubai. Emerging from this trend is a newly proposed development with the potential to be one of the tallest- and longest- buildings in New York City. BY Kate Dannies
In response to rising demand for luxury residential towers within New York’s hottest districts, local design studio Oiio has proposed a looped conceptual skyscraper that boasts both length and height. Based in New York and Athens, Oiio formulated the proposal in order to highlight the race for height amongst Manhattan’s luxury residential developers. This race for height has been compounded in recent years due to planning laws permitting developers to purchase air rights from neighbouring buildings, allowing for increasingly tall structures on relatively small land plots. Additionally, New York City’s unique zoning laws have necessitated a unique set of tricks through which developers maximize their property’s height, and, in turn, value. Known as the Big Bend, renderings of the building show a thin structure that curves at the top before returning to the ground, creating what Oiio describes as the longest building in the world, measuring 1.22 kilometres end to end. Big Bend renderings place the building among the luxury towers currently under development on and around West 57th Street, a prestigious area just south of Central Park known as Billionaire’s Row. Other developments following the skinny skyscraper trend include SHoP Architects 111 West 57th Street and Christian de Portzamparc’s One57, along with Jan Nouvel’s 53W53, also known as the MoMA Expansion Tower and Rafel Vinoly’s 432 Park Avenue, the tallest residential tower in the western hemisphere. The Skyscraper Museum has recently nicknamed these buildings ‘super slenders’ due to their extreme width-to-height ratios.
The Big Bend building design features a grid of large windows with small floorplates. The legs of the structure would straddle a historic building to fit into narrow plots on either end, and the building would rise to tower over both the 111 West 5th Street and One57 buildings. While many are embracing the slender skyscraper trend, some of New York’s most prominent architects have spoken out against the developments, arguing they highlight the rising inequality within the city, both architecturally and socially.

TESLA
Both the story of Tesla and the company’s namesake, inventor and engineer Nikola Tesla are true underdog tales, but with dramatically different endings. Nikola Tesla, hailed as genius both during his lifetime and in the present day, held hundreds of patents on his inventions but died penniless and in obscurity, crushed by the greed and dishonesty of his competitors. Conversely, while automakers and consumers alike initially rejected Tesla Motors, in less than ten years the company has transformed into one of the world’s most innovative and successful automotive companies. While nowadays Tesla is synonymous with its mythical CEO Elon Musk, the company’s origin can be traced back to engineers Marc Tarpenning and Martin Eberhard. After selling off their e-reader business in 2000, Eberhard was inspired by his desire for a high performance vehicle but was put off by the poor fuel efficiency and the wars over oil resources that were raging in the Middle East, in addition to rising concerns over global warming. Incorporated in 2003, the company’s flagship sports car, the Roadster, made serious waves upon its release in 2008. In 2013, the Model S sports sedan was released, outselling the Mercedes Benz S Class, BMW 7 Series and every other luxury sedan. Currently, the Model S is the world’s best-selling plug-in electric car with over 150,000 vehicles sold. The company’s most recent release was the Model X SUV in 2015, with
plans for a new Model D currently in the works. Tesla has a unique strategy of direct to customer sales- customers cannot buy vehicles from stores, only from the Tesla website. This has caused conflict with other automakers and existing state laws requiring new vehicles to be sold through franchised dealers. The preference for Tesla electric vehicles is clear. While other electric vehicle models continue to be plagued by poor battery life and high costs, Tesla hopes its innovative battery and charging technology will result in increasingly cheaper batteries with shorter recharging times, helping to lower overall vehicle costs overtime. Tesla has a network of superchargers located across North America, Europe and Asia, in addition to a Destination Charging programme, under which shops are offered fast chargers for customers.
Tesla has also become a pioneer when it comes to autonomous car driving. The company’s AutoPilot system provides semi-autonomous driver assist in all Tesla vehicles manufactured since September 2014. AutoPilot vehicles are equipped with multiple cameras and ultrasonic acoustic location sensors that provide a 360-degree buffer zone around the car. In addition to adaptive cruise control and lane departure warning, an add-on tech package offers semi-autonomous drive (Summon) and auto parking (AutoPark) capabilities. Additionally, as of 2016, all Tesla cars are built with the necessary hardware to allow full self-driving capability after the features are validated. Tesla expects to enable full self-driving by the end of 2017.

Dark Chocolate Cinnamon Babka Babka is a yeast-risen eastern European cake that is perfect for nibbling over breakfast or brunch. It has a dark chocolate filling that is spiked with a little ground cinnamon. While it takes many steps to create it, the cake’s moist, deeply flavored brioche-like cake makes it worth the extra effort. If you want to save yourself a little time, substitute the chocolate filling with Nutella. It can keep at room temperature for up to four days, or frozen for up to two months. By Kareem Abdelrahman

Babka Dough: 2 teaspoons of instant yeast 1/2 cup whole milk, slightly warm 1 teaspoon sugar 90g unsalted butter, at room temperature, cubed 1 large egg 1/4 teaspoon salt 2 cups all purpose flour
1. In the bowl of a stand mixer, mix the yeast with milk and sugar and 1/3 cup (40g) of the flour. Let rest until small bubbles appear, about 10 minutes. 2. While the mixer is working with the dough hook, mix in the 90 grams of butter then the egg and salt. Gradually add the flour until it’s incorporated. Turn the mixer to medium-high speed and knead the dough until smooth, about 5 minutes. 3. Butter a 23cm loaf pan and line the bottom and up the sides with a piece of parchment paper. 4. To make the filling, melt the 100g of butter in a saucepan. Add the sugar and stir until dissolved. Remove from heat and add the chocolate, then stir until the chocolate is melted and smooth. Stir in the cocoa powder and cinnamon. Set aside. 5. On a lightly floured surface, roll the dough to a rectangle 30 x 50cm. Spread the chocolate filling over the surface of the rectangle all the way to the edges. Starting at one of the long ends of the rectangle, roll up the dough tightly so you

have a log that’s around 50cm long. 6. Using a sharp knife, slice the dough completely in half lengthwise. With the cut sides facing up, overlap the end of one cut half over the other, then take the other cut half and fold it over the other, making sure the cut sides are always facing up. Continue making a rope-like formation overlapping and twisting the two halves of the dough together until the dough into one big twist. 7. Lift the twisted loaf and add it into the prepared loaf pan. 8. Put the loaf pan in a warm place, and let rise for about two hours, until it’s puffy and almost doubled in size. 9. While the dough is rising, make the syrup by bringing the water, sugar, and honey to a boil in a small saucepan. Let boil for 4 minutes. Remove from heat and set aside. 10. Preheat the oven to 375ºF (190ºC). Bake the babka in the middle rack of the oven for 30 minutes. 11. Remove the babka from the oven and spoon or brush the syrup over the babka, let cool completely before lifting the babka out.
