a magazine is not a one-man job. For every story you read, there are numerous hours spent from a whole slew of people to make it come to fruition. The story is handed down to a writer, who then comes up with photo ideas with our photographer. Once the story is written and photographed, it is then passed on to our design team for them to work their magic. It doesn’t end there though. All the while, our awesome advertisers ensure that we are able to create a top-notch magazine month after month. Finally, our copyediting team will go through the magazine with a red fine-tipped pen to ensure it’s perfect.
While it’s my face on the Editor’s page, there should be about 20 other people. So, despite the fact that our design room begins to smell like our designers haven’t showered in a couple of weeks (we’re not saying they do and we’re not saying that they don’t) and despite the fact that we’ll bicker over the placement of a comma or the headline of an article, this team really is amazing and I want to thank each and every one of them. ustic Oaks is one of the most unique venues in the area. “Rustic Oaks is a unique and historic 40 acre property on the Red River,” said Emily Finley of Rustic Oaks. This venue, which can comfortably hold 200 guests, is becoming the hotspot for weddings in the FM area. In fact, it’s so popular that they’re sold out most Fridays and Saturdays from May to October. According to Finley, they are working to solve this problem though. “It’s a great problem to have, but I wish we had more availability for all of the amazing brides and grooms that we meet. To try to accommodate as many couples as possible, we have started booking a lot of Sunday and weekday weddings; those options are perfect for a bride and groom on a budget.”

n the past, a big emphasis has been placed on wedding photography, but more modern couples are realizing the importance of capturing their special day on film. Husband-wife team Alissa and Charles Mauk began Exposure Productions three years ago. “More people are recognizing the importance of video and our unique film style,” Alissa Mauk said. They offer different video packages, as well as a bundled package with both video and photography. The finished product includes a trailer with music and a full-feature video that usually runs a little over an hour. “Most people are so busy during the day they don’t take the time to take in the details until they watch the film,” Alissa said. They take a different approach than many other videographers who have been in business a while. “We don’t consider ourselves videographers,” Alissa said. “We are film-makers; we are anything but traditional.”

’ve always loved to bake, ever since I was a little kid,” Julin, owner of Fantasies in Frosting, said. After decorating for years prior, Julin began baking out of her home in 1996 and moved to her retail location in 2005. Julin and her assistant use premium ingredients to make every cake according to their customers’ specifications, she said. Many brides who come here know they may have to pay more, but they tell Julin if they’re paying for a cake, they want a good one, she said. They begin with a consultation with the clients to learn about their colors, theme and vision for the cake. They also offer dessert buffets with cookies, bars, pies and mini cupcakes. “We can be really creative with our cakes, and it’s always something new,” Julin said. They have over 24 flavors right now, including Julin’s favorite, chai tea with apple filling and cream cheese frosting.

A SNOWY SURPRISE
One man dressed the trees and the bushes in the backyard with tiny white lights. He and his girlfriend both were serving our country in the military and were home for Christmas visiting his parents. As they moved closer to the tall bushes and trees that bordered the yard, he hit the remote button in his pocket, which lit the yard into a winter wonderland! There on the tall bushes, the words said it all: "Marry Me?"

A couple arrived at Mezzaluna for their reservation. The young lady was given a rose by the host, one from the waitress and one by the manager. This man's intended was on an extended safari in South Africa with her parents over the holidays. He knew her exact trip schedule, so he flew to South Africa and arrived at their hotel. The travel guide brought her parents to his room so he could ask for their blessing and her hand in marriage. The next day, he waited by Victoria Falls. While trying to please all of these people, it's not surprising that questions of etiquette often arise. Luckily, Alicia Weigel, owner and coordinator at Bliss Events & Weddings, answered some of these tough questions for our etiquette Q&A.
Q. “Who pays for that?” A. Traditionally it has been the Bride’s family paying for the
wedding, but in recent trends, wedding expenses are being split between both the bride and groom’s families. The best way to approach who pays for what is to have a conversation with both families or whomever is involved with financials and discuss exactly what everyone wishes to contribute to. This eliminates confusion and frustration when bills start coming due.
Q. “Do we have to have the same number of bridesmaids and groomsmen?” A. No, bridal parties are changing dramatically! The party you
choose should reflect your closest friends – not an equal number of genders. If they don’t match up, consider sending the party down the aisle in singles or in groupings rather than in pairs.
Q. “Do we tip them?” A. Weddings are predominately a service-based industry and a tip reflects the service received. You should never feel like you owe a tip for service to any vendor that was not satisfactory. If you had a great experience with your florist, baker or photographer, it is greatly appreciated when they are sent a note with a small gesture of thanks enclosed. Likewise, it is not expected. For professionals with higher priced services, the tip does not necessarily need to reflect a percentage of the bill, and in some cases a gratuity is already figured into your final price.

From Apprentice to Professional: A Rewarding Journey
I

t seems like just yesterday that I was the youngest cook in the kitchen. Now, I’m 38 and most of the time the oldest of our culinary team. Based on my age, one would assume that I am a product of the ’80s, which makes sense when I joke that I subliminally received my inspiration to become a chef from watching Jack Tripper on “Three’s Company.” Actually, chances are that my true inspiration came from the fact that my single mother often worked well into the evening, leaving my brother and myself to cook for ourselves. This day to day practice eventually inspired me to not only research cookbooks for new, unfamiliar recipes but also to set the dining room table with our best service ware and linens. I was Eric Watson inspired to not only create good food, but also to create an entire dining experience for my mother to enjoy when she arrived home. My childhood inspirations eventually lead to culinary school. Keep in mind that I went to culinary school in 1993, before the Food Network and the glamorization of the culinary world were sweeping our culture. I was the only student my guidance counselor had ever met that wanted to be a chef. I’m happy to say that I wanted to be a chef for the right reason: the food, not the desire to be a culinary celebrity. With this approach, I ended up applying and being accepted into a three-year Colorado based apprenticeship program overseen by the American Culinary Federation. After partaking in several “Iron Chef” like competitions and being publicly criticized afterward by Certified Master Chefs, I realized that my chances of success as a chef would increase drastically beyond my fellow students. When I was working my way through the ranks of the kitchen, I always had a mentor to look up to. I suppose that I’m now that person to many of my cooks, but I have to admit that I miss having a little outside motivation or a mentor’s praise for a job well done. That’s why I started the Fargo branch of the ACF. The ACF is in some way my new mentor; a group of chefs who will strive to be the best at what they do and always hold each other accountable. My biggest fear as a chef is allowing myself to slip into the irrelevant. Losing grasp of today’s culinary techniques and concepts will eventually lead to my demise. I refuse to let that happen. When I decided to attend culinary school, I never intended to be a celebrity. I never intended to be wealthy. All I wanted was to be well respected within my work environment and within my community. That’s what we intend to accomplish with The Red River Valley Chef’s Association. FX recently announced it will be producing a TV show based on the movie "Fargo."
Since this movie and our city go handin-hand (for better or worse), we were curious to meet the man behind this show. Noah Hawley is the writer for the new TV show. We caught up with him to see what we could dig out of him about the upcoming show that will put our city back on the map.

FM: "Thanks for taking the time to do this interview." NH: "No problem. It’s the fun part of the job... What can I tell you?"
FM: "The movie “Fargo,” for better or worse, is kind of our claim to fame, so everyone’s really interested in what’s going on with the show since nobody knows what’s happening. We want to shed some light on it and talk a little bit about what it will be about."
NH: "Well, I can’t say too much because they are very secretive
about these things before the show comes out. When FX came to talk about that they wanted to do a show based on the movie “Fargo” and what did I think, you know, it’s one of the most iconic American movies of the last 25 years. But, I think part of what made it so compelling, when I went in I said, ‘it’s the best of America versus the worst of America.’ The idea for me is, yes we have problems, but look who’s solving them. I’m trying to do a series that captures that aesthetic of good vs. evil that the Coens deal with so often and especially in that movie. They tend to have someone who’s really good, someone who’s really bad and someone who’s in the middle. That’s the dynamic that I wanted to explore... We got a straight to series order, which means we’re going to make 10 episodes. We haven’t figured where we’re shooting yet specifically, but we’ll probably start shooting in or around November. Obviously, we need some snow on the ground. So, we’re all hoping it’s a white winter. It should premiere on FX next April."
FM: Are you enjoying the whole writing process? Is everything pretty much written or how does that work out?
NH: No, I have nine more scripts to write so... these things get
announced, you get a production start date and you sit around in a room, trying not to feel the pressure while you try and make something great. There’s a lot of writing to do and we’re just starting to think about cast and directors. We have the luxury of a little bit of time here... But, here we’ll have all of them written beforehand so that will be great.
FM: Is this going to be a one season thing or are you hoping to push it into a whole series?
NH: Yeah, the hope is that it’s a multiple season show. The
great thing about FX versus network, where I’ve had my last two shows, they don’t cancel anything. If you make 10 episodes, you’re going to air 10 episodes and then they’re going to decide if people are watching and they’re feeling great about the material then they’re going to pick it up... The nice thing about this is that the bar couldn’t be higher, but at least we know we’re going to get to show our full hand before they decide. It’s exciting.
FM: Have you made any roadtrips up to Fargo to do some research?
NH: What’s the best time of year to do that? Right now, right? (Laughs)
FM: Definitely. Not in January. Avoid it at all costs. So as of right now, the whole plot is pretty hush-hush?
NH: Yeah it is. You get angry phone calls from the network if
you start throwing plot devices around. (Laughs) But, I think it’s safe to say that while it shares a similar dynamic character-wise to the movie, it is not an imitation and we’re not trying to rehash what happens in the movie. It’s a completely original story. So, just trying to capture that sensibility. I think that combination of a Coen Brothers sensibility and a look at the real impact that crime has on peoples' lives with a little funny thrown in.
FM: We want it to be known, as you can tell from me, that we don’t all speak with the typical dumb Fargo accent.
NH: As we head into production, it’s a big issue and something that we’re very aware of. Since the movie, the accent has become almost a parody. We’re not interested in doing that. I come from New York City and you can’t tell from my accent. Our goal is to underplay that. Otherwise, it becomes the only thing that people see. But, it’s also the charm of the place. Everyone’s not going to sound like they’re from southern California. That’s for sure. (Laughs)

he new production of “Grease” this summer at the NDSU Festival Concert Hall promises to be like no other production of “Grease” you’ve seen. The goal is to put a new twist on the classic musical by throwing in elements of film, Cirque du Soleil and non-stop action. “Ryan’s (the Director) vision is he’s really interested in the 3D aspect of art so how we bring 4D to life on stage through not only our performance, but our set and video,” said cast member, Amanda Casselton. “He’s really inspired by Cirque and athleticism. There will be trampolines, different elements that will bring ‘Grease’ to a whole new light.

The cast of “Grease” had to go through several weeks of bootcamp to prepare for the production. This bootcamp included a lot of circuit and endurance training to ensure they’re ready for the strenuous activities involved in the show.

Every one of the cast members is paid for their participation in the production. This is different from many other productions in the area.

Meet Ryan Domres
Although he’s only 28, Ryan Domres has accomplished a lot. Originally from Fargo, he has moved to New York where he’s worked as a director and choreographer. In fact, he recently finished working as the Assistant Director to “Cinderella” on Broadway.
Q: Tell us a little bit about your background. A: I went to school at both MSUM and NDSU jointly... I started getting work performing professionally so I left school before my degree was finished... I was in New York for quite a while… I was mostly working as a performer and then I met a lady who transitioned me into choreography.
Q: Tell us more about the show. A: … I was really looking for a way to interest the general public in
musical theatre… In my eyes, it’s kind of a dying art form. To find a way to interest people is the key. I think it needs to be done through the story of the piece… We’re adding a bunch of cirque elements into the show…
Q: Do you ever wish you could put on a nice, easy production of “Grease”? A: (Laughs) You know, I wish I could, but it’s just not in my nature. I like to jump in deep. It’s not fun if it’s not a challenge.
3. Film will be incorporated into the production
Johan Anderson, a film director from New York City, will be making a film that goes along with the performance. The production will incorporate this film by creating a giant movie screen as part of the set.
4. “Grease” will involve the
community
According to Director Ryan Domres, the whole goal of the project is to get the community involved. Almost everyone participating in the performance is from the FargoMoorhead area, and they hope to bring musical theatre back to the area.
5. It’s going to be a fun show
Domres promises that this will not be the average performance of “Grease.” “An average production of ‘Grease’ is pretty uninteresting to me,” he said. “Sure, the songs are singable, but sitting and watching it, I want to be entertained.” The audience is sure to be entertained by his production.

You’re probably familiar with the movie “Shrek.” What you may not know is that this movie was adapted into a musical. What you may also not know is that this musical will be the Mainstage Musical at Trollwood Performing Arts this summer. This musical brings together close to 150 students to put on a show that is sure to bedazzle, amaze and surprise the audience. “It’s not too off from the movie, so it has the same icon characters and they pretty much have the same relationships,” said Artistic Leader Michael Walling. “But it’s been inserted with big, brassy fun music. … It’s very playful and fun and big.”

“Shrek The Musical” is part of something much bigger happening at Trollwood Performing Arts School. Each summer, over 600 students become involved in the different camps held at Trollwood. These camps are meant to educate the area’s youth on different arts education and youth leadership programs. More information on the programs can be found at trollwood.org.

Yes, all the kids are students, but it’s hard work. Every student is expected to perform at a high level. “I don’t dumb down anything. I have an expectation that they’ll keep up, and they do,” said Walling.

They pulled out all the stops to ensure they have the most creative characters possible. They hired professional designer Robin Waytenick-Smasne from Whitman College to design the costumes.

It will be a well-attended event Performances at Trollwood are always quite the production and well attended. Last year for their musical “Legally Blonde,” over 16,000 people attended the shows.

FM: What’s the origin of the name? CH: “It’s kind of a lame story actually. We had all these songs

FM: Is it important to you to break up your genre and music? CH: “Yeah. Since we like all types of music, we like to focus on good songs. It doesn’t really
matter what genre it is. Especially the older we get, we want to expand and show that we’re diverse and that we can write different genres as songwriters. It’s pretty important to us.”
FM: A lot of your songs deal with some personal stuff. Can that be hard to open up like that? CH: “No. It’s almost like a good therapy to be open and honest in your songs. I think you write

n February of 2005, after living in Missoula, MT for four years and Eureka, CA for a year, I moved back to my hometown of Fargo, ND. I had recently left the band I had been playing with for the last three years and decided to come to Fargo to visit family and friends. While visiting, I frequented a local brewery and after several visits and meetings with the owner I was offered a job booking bands and getting the place established as a local live music venue. I took the job, went back to Eureka, packed my things and moved back to Fargo.

Growing up in Fargo and making countless trips back for visits and performances as a musician, I thought I knew what to expect from the Fargo music scene. It wasn’t until I moved on from my job at the brewery and started my own production company and a new band that I realized what really sets Fargo apart from every other city’s music scenes... enthusiasm and a sense of community. Of all the different places I have lived, worked and performed as a musician, I have never witnessed a music scene with as much of an open heart, a sense of community and enthusiasm as Fargo. I have witnessed places that are small and spoiled, where the people will not come out to a show unless they are 100 percent ecstatic about the artist performing that night or refuse to go to a show even if they like the artist because they don’t like the bathrooms at the venue or some other ridiculous excuse. I have witnessed places where people in the community don’t go to live music at all because they either don’t care or are too lazy. I have also witnessed places that suffer from oversaturation that splits up crowds, making every artist performing on any given night a lousy turnout. But Fargo has managed to sit in perfect equilibrium. Fargo is big enough to be blessed with world-class artists visiting our community on a regular basis. As a show promoter, witnessing a visiting artist’s reaction to our community’s enthusiasm is absolutely priceless. Fargo is fortunate enough to have live music going on every night with something for everyone, yet small enough that all of our local musicians view each other as family. They support each other because Fargo has a deep understanding of the importance of a strong sense of community. I never thought I would move back to Fargo but as a musician and a music fan, it was the best decision of my life. This city is one of a kind in so many ways it should be no surprise that our music scene is one of a kind as well. Way to go Fargo, keep showing everyone how we do! Did you know Rourke Art Museum is the former Moorhead Post Office? This year’s invitational theme is “Signed. Dealed. Delivered.” to pay homage to the former status of the building. Over 90 artists from the region will be coming together to take part in the Museum’s event as it celebrates the 100th anniversary of the laying of the building’s cornerstone.
