W
e here at Fargo Monthly dedicate our time to researching and promoting the newest and best that FargoMoorhead has to offer. Whether it is our editorial team scoping out stories or the sales team contacting businesses big and small about advertising opportunities, I’d say that every staff member here at Spotlight knows a thing or two about Fargo. That’s why this month we decided to do a “Staff Picks” edition of the magazine for December. One part a celebration of 2019 and the closing of yet another great year, and one part promotion of businesses that have been deemed a “favorite,” this issue is dedicated to our team and our community. As we asked our coworkers what places in town were their favorites, I myself got thinking of what places I admired most in town. Honestly, it felt like picking my favorite child. How could I betray all the businesses I love so my by picking just ONE favorite? But in the end, I’ve landed on the place that I spend the most time at: Youngblood Coffee Co. I often escape the office and get some of my work done while seated at the large communal table at Youngblood, enjoying the ample sunlight that comes through the windows. I even plan some of my meetings there because I know it’s a great creative and collaborative environment to be in. While I’m camped
HOME out here, I see a lot of things. I’ve made friends with some “regulars” and every time I go I always see someone I know. I’ve sipped incredible brews (roasted in-store! —a rarity) and had, literally, the best bread I’ve ever eaten in my life. Seriously, you can’t say you are a true carb connoisseur until you’ve eaten a thick slice of Youngblood toast as your lunch (it is basically the size of a sandwich). Beyond the remarkable tastebud adventures I experience there, it’s the community that keeps bringing me back. Just the other day I stepped up to the bar at Youngblood and the barista greeted me by saying, “I haven’t seen you here in a while!” Quickly, the other barista on shift corrected him, saying that I was there just yesterday and that his and my schedules just have been off. The community at Youngblood is intimate yet welcoming. Whether you are there five days of the week or it is your first time, you feel at home. And all these reasons coupled together are by Youngblood is my “top pick.” I hope this issue inspires you to reflect on what your favorite businesses in Fargo are and why. TOO MANY PICKS
I
don’t dislike many things. I’m of the firm belief you have to try to get me to dislike something. Like when I was a kid, my mom forced me to eat green beans (you know, the frozen kind you make in the microwave) for dinner. Now, if she didn’t nearly fork them and shove them in my mouth herself, I may have enjoyed them, but it seemed like she almost tried to get me to dislike them. It did not help that it tasted like an old shoe (not that I’ve eaten an old shoe), but that’s neither here nor there. Outside of dire situations such as the one laid out above, I’m extremely easy to please. Put a plate of food in front of me and as long as it’s cooked properly, I’ll give it a whirl. Pour me a beer and I’ll likely drink it, even if it is Bud Light or something like that. So when we decided to do a staff takeover of this magazine and offer forth our “picks”, I had trouble picking just one place. I enjoy everything Fargo has to offer in the vein of food, drink, events, shopping, etc. How can you expect me to zero in on one place? Whoever had this idea is a bufoon, that’s for sure (wait...). When I sat down and thought about it, it came down to experiences. Where was I making the most memories? Where was I having the most fun? Where was I being the most Nolan I could be. It was less about deciding on which place had the best “this” or “that”. I took a different approach. I landed on Vinyl Giant. Here is why. Music is probably the most important inanimate thing in my life. My mood is indicative of what I’m listening to. It motivates me and always leaves me thinking and analyzing. I’m one of those weird minds that loves learning the backstory, inception,
recording, instrumentation, etc. of a particular song. In fact, many of the pieces I write for our magazines are done with music pumping into my ears. In order for me to experience a track or record in a full, visceral way, I listen to it on vinyl. There is also something to be said about actually purchasing a record and holding it in your hands, I think. Don’t get me wrong, I think music streaming is the greatest technological innovation of our time, but dropping the needle on an album you own and can feel, there is more meaning attached to it. Vinyl Giant creates those experiences for me and for so many others like me in this area. They offer forth the widest array of music on vinyl and it seems they always have what you’re looking for. Feeling the new Lizzo? Vinyl Giant has it. Looking to re-live what it was like to listen to Animal Magnetism by Scorpions for the first time? They got that too and everything in between on the vast musical spectrum. They create experiences that will last after you leave their store. However, they create experiences within their walls too. Owners Aaron and Erica create relationships with their customers that turn into real friendships. They do it the right way when it comes to small business ownership. You also can’t buy the experience of having Gertie patiently wait for scratches while you look at records. That is something that is wholly Vinyl Giant’s and always will be. That is why Vinyl Giant is my “pick”. Happy Listening,

A
s a regional supplier of drinking water, the City of Fargo is laserfocused on ensuring citizens receive the best product possible. That’s where Troy Hall and his team come into play. As the Water Utility Director for Fargo, Hall is tasked with ensuring millions of gallons of water are safely distributed to the citizens of Fargo, West Fargo and the Cass Rural Water Users District each day.
In 2015, Hall and the City of Fargo began construction on a new $110 million expansion to the City’s Water Treatment Plant. Not only did this expand the plant’s total water capacity, it also further refined the water’s quality and taste. It came down to the type of water being distributed to the city. “It was a quality-driven project. That was the primary reason for expanding our plant capabilities,” Hall said. Since the Water Treatment 18 | DECEMBER 2019 | FARGOMONTHLY.COM
Plant uses water from the Red and Sheyenne Rivers, circumstances required an expanded plant capable of refining water that is difficult to treat. “Devils Lake started releasing into the Sheyenne River, which resulted in saltier water,” Hall said. “It made it more difficult for the original plant to treat that level of salt.” Fargo maximized the value of the expansion by using the physical structure of the original plant, and all technologies found within it, to
serve as the backbone of an expanded plant. The enhanced facility adds a suite of new purification methods to the City’s arsenal in responding to ever-changing water quality components. The City opened its expanded Water Treatment Plant in mid-2019. The addition of the membrane water technologies incorporates processes to make our water more consistent in taste and smell. The expansion, complete with the additional physical space and new treatment tools, increases the plant capacity from 30 million gallons per day to 45 million gallons per day. “We’re built for the future and are prepared for the growth of the metro,” Hall remarked.

which is the amount of dissolved calcium and magnesium. Water hardness can be noticeable when your drinking glasses become less than crystal clear. When using hard water, more soap or detergent is needed to get things clean.
How Does The New Plant Impact You And The Water You Consume?
As the plant is fine-tuned, customers will see and taste softer water coming from their sinks, tubs and showers. “The membrane doesn’t care what kind of water goes in,” Hall said. “It’s trying to produce the same end product each time.”
The City of Fargo operates with incredible precision when it comes to water quality.
“One thing people talk about is the hardness in the water,” Hall said. “What the customers will find over time is, with the use of reverse osmosis, we’ll be much more consistent.” That reverse osmosis system has been integral in the improvement of the City’s water. When spring runoff occurs, the process will remove any abnormal tastes and odor. “Reverse osmosis also does a better job of removing organic material from the water,” Hall said.
When you go to the tap for a cup of water before bed, what should you be expecting from the City of Fargo? Thanks to the new plant, you can expect great H₂O.
“If you have a low-dose aspirin and cut about a third of that off and dissolve it into an Olympic size swimming pool, our technology can measure down to those aspirin particles in the swimming pool,” he said. “If we can see down to that amount, we think we’ll eradicate the compounds in water that alter taste and odor. We can measure down to one part per trillion!” With that amount of precision and new technology at their fingertips, the City of Fargo is committed to ensuring a solid supply of excellent water.
Step 2: Membrane Filtration Pre-treated water in the plant expansion is then channeled through ultra-filtration membranes. The water is funneled into spaghetti noodle-like fibers, separating tiny particles from the water. This new membrane treatment train will remove sulfate and bromide from the water, which can impact taste and odor.
Step 3: Reverse Osmosis The next step is reverse osmosis, which creates an ozone solution synthesis with the water. Reverse osmosis is used to make the water more pure and free from any taste or odor disparity. It also serves as a final checkpoint and pulverizes any final particles within the water.
Step 4: Distribution Finally, the purified water is distributed to the citizens of Fargo, West Fargo and Cass County.

They have a lot of original food and drinks on their menu that is fun for everyone, a great bloody mary bar, and on Friday and Saturday nights people can enjoy great House Music provided by local duo, Lucky Sevenz.
Why? Our area has an amazingly creative Park District. There is hardly a week that goes by where there is not some type of event or program offered for members of the community- not to mention a huge array of classes, activities & sports programs year-round for literally all ages and abilities.

Editorial Director His Pick: Luna Why? Owning a restaurant is tough enough. Yet, I can't imagine switching up your menu nearly every day but that's what Nikki Berglund and Ryan Nitschke do and, oh boy, do they do it right. I just went with some friends and we all split a meat plate, pickle plate, chive and cheddar popovers, green salad, potato and leek soup, roasted squash and gorgonzola lasagna and beet, potato and dill pasty. It was all perfect.
His Pick: Sports Bar Why? Living downtown gives you a bunch of different food/ drink options. It is always fun to check out different restaurants, but the one place I always end up at is Sports Bar. The staff is friendly and personable and goes out of their way to make you feel like you’re welcome. Highly recommend this place to anyone looking to have a good time.

he year 2019 has been a historic and memorable one for the City of Fargo. It saw explosive growth with the opening of several new facilities. This year also saw the strength of our community on display, as thousands of volunteers rose to the challenge of preparing for a spring flood. There were many highlights and noteworthy firsts across Fargo this year, and we’d like to share a few with you: The Fargo Police Department opened doors on a new headquarters, with Fargo’s finest now calling 105 25th Street North home. The move helps consolidate the various divisions of the department into one single location. This unification of the police force simplifies communications between divisions and, in turn, helps officers provide better streetlevel protection to Fargo’s residents and visitors.

Fargo City Hall held its first meeting in the new Commission Chambers in February. The space has ample room to meet a variety of needs, including seating for more than 200 people. It also marks the implementation of region-leading audiovisual equipment, including upgraded speakers, portable microphones and
studio lighting. Public meetings are now hosted with crystal-clear audio and acoustics. The Chambers also feature eight 4K cameras, meaning any of the dozens of meetings the City hosts look just as crisp for viewers at home as those physically in City Hall. City Hall also enjoyed its first “birthday” in 2019. The central hub for City activity has seen thousands of visitors in the past year. It has become even easier to access with the installation of a brand-new parking lot for public use just west of the main building off of 3rd Avenue North. The City Hall’s south parking lot became a part-time food court over the summer, as Fargo Cass Public Health’s Environmental Health Division enacted a Food Truck Pilot Program. The program provided space in the lot to be used as designated food truck space on Friday afternoons. The program considered public interest, as well as the efficacy of having designated spaces for food trucks. Several local food trucks partook in the pilot program. Phase I of the Fargo Civic Plaza was constructed following City Commission approval and unveiled in October of this year. The plaza’s opening also marked the
triumphant return of the longtime Fargo public art staple, the Sodbuster statue. The space was designed to provide a modern and practical use for the area between the Main Library and Civic Center. The Plaza space, which sits just north of the Main Library, features walking paths inspired by the natural textures and riparian forests of Fargo’s surrounding landscape. The City also introduced new technology to make it even easier for contractors and residents to receive permits for projects, ranging from building a deck to adding a garage onto a home. The Fargo Inspections Department unveiled its new permit portal, which allows the public to apply for a permit remotely without ever requiring a visit to City Hall. The new software also allows for submissions 24 hours a day, every day of the year. The update is a massive step forward for the convenience of residents. Fargo’s excellence caught some outside attention this year. A national ranking service, “WalletHub,” conducted a study of the best run cities in the U.S. Fargo ranked in the top ten and scored especially high in the Quality of City Services category, being recognized as the sixth best in the entire United States. Fargo excelled in multiple other categories, earning top ten distinctions for its educational opportunities and its economy. Also in 2019, WalletHub named Fargo one of the six happiest cities to live in America. The FARGODOME hosted several blockbuster concerts this past year-including a raucous, high-flying sold-out performance from the eclectic singer P!NK and an incredible show from Celine Dion. Next year is slated to be amazing as well, with music legends Cher and Elton John scheduled to hit the stage in 2020.
The Fargo Water Treatment Plant opened its expanded campus in mid-2019. The upgraded facility further enhances the original treatment plant, and provides the community’s residents with consistently high-quality water. You’re encouraged to read more in the “Your Tip Top Tap” article within this issue of FARGO Monthly. The Wastewater Treatment Plant has great things on the horizon as well. Bids will be opened early next year to begin the final construction phases of a plant expansion. The expanded wastewater plant is expected to be operational by 2022. These improvements will double the utility’s capacity and make it the largest in the state. Residents ask, and Fargo continues to answer the call. The Public Works Department is conducting a snow gate feasibility study. It’s the first step in potentially adding snow gates to its fleet of plow trucks, which could mean the end of hardened snow ridges at the end of homeowner’s driveways. In an effort to address workforce challenges, the Transit Department established MATBUS service to the Industrial Park. The new industrial route eliminates a potential barrier for up to 19,000 employees in the park by providing consistent, reliable transportation. This also aides the development of a dependable workforce for the employers of the Industrial Park. The City of Fargo has developed a clear vision to maintain its position as the regional leader in 2020, with several major upcoming initiatives. The 2020 budget calls for increased investment in public safety, with four new street-level police officers approved to join
the ranks. This represents a substantial commitment to the safety of Fargo’s residents and visitors. The City unveiled a new advertising campaign: “We Work For You.” The campaign highlights the diverse skills and excellent work of employees across the entire organization. You may have even seen the ads featured in Fargo Monthly in 2019. The Fargo City Commission recently took action to implement a new Infrastructure Funding Policy beginning in 2020. For many property owners, this means special assessments will be reduced, with the City covering a greater percentage of the overall cost on many projects. The new funding policy also supports a four-year Capital Improvements Plan, meaning Fargo is well prepared to continue growing and maintaining excellence. The Planning and Development Department has been hard at work developing a Core Neighborhoods Plan. This plan will ensure the City is acting in the best interest of neighborhoods, which truly comprise the backbone of our community. Fargo will see its first usage of the approval voting system in June when two City Commission seats are on the ballot. Elections are an excellent opportunity for residents to make their voices heard and to be involved in the process of selecting leaders for the community. We hope your 2019 was great and your outlook for next year is optimistic. On behalf of the City, thanks to our residents and visitors for being a vital facet of what makes Fargo far more.

love basketball and those who know me are well aware of that. I dabbled in playing the game until my high school years when I decided to set it aside. While I will never ascribe to being the best player ever, I do believe to have as much knowledge of the game as anyone around. So when we came up with the idea of going through a workout at Fargo Basketball Academy, I immediately volunteered. FBA has been a staple in the FargoMoorhead area for some time. They use expert coaches and a proven system to create the next generation of great basketball players. Owner and director Josh Johnson, a former collegiate player and coach, has been manning the academy since 2017. He has put together a staff that knows the game inside and out. Since becoming the owner, Johnson has helped train some of the best high school basketball players in the area. Some of whom have gone on to collegiate careers.
The academy also has a great facility in south Fargo that serves as its home base. Rather than worrying about booking gym time at a local exercise facility, the FBA gym is always open. That accessibility has helped make FBA a hotspot for younger players looking to hone their skills. But what does FBA focus on? And how do they create the next generation of ballers? I laced up my shoes and took to the gym with Josh to find out.

Ball-Handling
I’ve never been a stellar ball-handler, even when I was in my “prime”. So when Josh took out two balls for some ball-handling drills, I got a little nervous. One of the keys to FBA’s ball-handling fundamentals is being able to dribble well with both hands. Most players, especially youth, are dominant with one hand (usually the hand they shoot with). However, FBA makes a concerted effort, regardless of a player’s age, to train them to be good with both hands.

Finishing
Then, out came the orange cones. I was anticipating some sort of cone work, but in all my time playing basketball, I have never done a drill like this. Josh staggered the cones, each one further from the basket. Starting with my head underneath the basket, I dribbled around the first cone, the one closest to the basket and finished with a lay-up. This was followed by the second cone and so on until I went around the fourth and final cone. Josh then had me repeat that sequence two more times. Rather than finish with a lay-up, Josh had me finish through contact that he provided as well as with a reverse lay-up. After going through those three rounds, I was admittedly gassed. Josh kept pushing me to go harder and harder as the rounds went on. It was then that I realized that I was not in good

When I was playing, my right hand was dominant in whatever I was doing. That is the issue FBA is attempting to correct with all of their players. FBA creates multi-faceted players on the hardwood. That begins with ball-handling.
basketball shape. And then Josh dropped a bomb on me. “Now, you’re going to do all 12 in a row without stopping,” he said. Great. While I completed that challenge (and it was a challenge near the end), it made me realize the value of finishing and going hard on every rep. Oftentimes, basketball players do not get easy, wideopen lay-ups as I did. So, learning to finish through contact and finding different ways to finish (reverse lay-up) is vital to scoring and being versatile offensively. Josh said FBA usually takes older kids through that sort of drill. It is also designed to give a player a flavor for cardiovascular conditioning. The cone drill proved to me that I was not the most well-conditioned hooper around.

Shooting
We cooled down with shooting. First, Josh went through how they teach proper shooting form at FBA. The acronym is pretty familiar in the basketball community. B - Balance - Having your feet squared up to the basket. E - Elbow - Holding a 90-degree shot pocket as you elevate to shoot. E - Eyes - Eyes on the basket and nothing else. F - Follow Through - Finishing with a flick of the wrist. We began by taking some shorter-range shots using the BEEF method. I have to say, my jumper is pretty solid and Josh agreed. So, we started moving away

from the basket more and moving while shooting. Not only did this test endurance, but it also made sure my shot was staying technically proficient. Per the BEEF method, I thought I did a pretty good job. Josh and the staff at FBA teach this to all of their players. It is instilling muscle memory in them that lays a solid shooting foundation. The mechanics are key to a player becoming a knockdown shooter. All of these lessons are taught if you sign your child up for a course at Fargo Basketball Academy. Their knowledgable staff and great facility are a winning combination if your child wants to succeed on the hardwood.

conversation Warm & Festive Greetings! In this holiday season, I wanted to make a gift to you, yes you my faithful readers ever since February 2017, when I published my first article “5 Reasons Why I Stayed in Fargo.” This gift is one that I was blessed to be given by a mentor of mine named Karis Thompson. Karis guided me in my timid first step on the Concordia College as a freshman Rwandan international student to my community engagement initial ventures. I consider her as my older sister and mentor because I know I can turn to her for anything in my personal or professional life and she will either have an answer or know someone that does. Now that I have prolonged the suspense, let us talk about the gift: the art of conversation, the art of dialogue and the art of communal verbal exchange when breaking bread is sadly challenged by social media and our numerous digital platforms. In the Summer 2015, I went to my first GROUP THINK event, a

community conversation where speakers interact on stage on a subject matter that often is meticulously chosen to be edgy enough to make the audience step outside of their comfort zone because the speakers are being bravely and publicly vulnerable. 2020 is going to be an electric year for a myriad of reasons, therefore my gift to you is this template/example of how the art of conversing publicly with people from different cultural and thinking backgrounds is possible when we all agree to be courageous. Conversing is a central human trait because it takes courage to be publicly vulnerable and it takes courage to publicly recognize that another person’s opinion might be wiser than your own. Why do conversations matter? (Deep talk, not small talk.) During an interview, Stephen Colbert asked Sherry Turkle, MIT professor and author of Reclaiming Conversation: The Power of Talk in a Digital Age, “Don’t all those little tweets, don’t all those little sips of online communication, add up to one big gulp of real conversation?” She recalls her response, “My answer was no, they don’t add up. Connecting in sips may work for gathering discrete bits of information..., but they don’t really work for learning about each other, for really coming to know and understand each other. And we use conversations with each other to learn how to have conversations with ourselves. So a flight from conversation can really matter because it can compromise our capacity for self- reflection.” Psychologist Matthias Mehl and his team found that the happiest person they engaged through their study of happiness and deep talk had twice as many substantive conversations – and one-third the amount of small talk – as the unhappiest person. Substantive conversations, they observed, help us find and create meaning and connect with other people.
If we want to understand ourselves and to know the people we live and work and share a zip code with, we need to stray from small talk scripts and find our way into meaningful conversations.

Why did you organize GROUP THINK? (GROUP THINK, not groupthink.) In the fall of 2014, Brittany Sickler and I curated and organized a first GROUP THINK conversation. We worked to assemble a diverse group of friends and strangers to think and talk together about often unasked questions without any obligation to pitch or persuade, agree or acquiesce. We wanted to afford speakers, moderators and anyone who showed up the latitude to investigate themes with curiosity and creativity and to preempt groupthink – mandated consensus or “social or ideological conformity.”

This December, our volunteer planning team will host our 45th GROUP THINK conversation and conclude our sixth season. So many co-organizers, speakers, moderators, sponsors and conversationalists have generously and thoughtfully invested in this platform for public dialogue. We have congregated at The Stage at Island Park, in Stoker’s at the Hotel Donaldson, in the Sons of Norway’s Troll Lounge and other great spaces to explore themes like HOME, REGRET, WORK, SIGNIFICANT OTHERS, DEATH and GRATITUDE. We have listened to elders at Edgewood Vista reflect on the GOOD LIFE and talked about our experiences as KIDS with 10 middle and high school-aged facilitators from South Sudan Lutheran Church. For each conversation, our GROUP THINK team works to coalesce an experientially-, generationally- and racially- diverse crowd and to create a climate in which differences and disagreements enrich instead of end an interaction. We want to confirm that everyone belongs at GROUP THINK – and in this community – not because we always all agree, but because we happen to share the same geography. We hope conversationalists leave GROUP THINK feeling connected with people they

They create an ability for people to show themselves to each other and show themselves the parts that are still being baked.” What do you want to offer your coconversationalists at the beginning of your conversation? What do you want to invite them to reveal? 3. INTERACTION At each GROUP THINK conversation, our team sets out cards with Angeles Arrien’s Four-Fold Way on tables as an articulation of our common commitments and as an
invitation to the room – • Show up. Choose to be present. • Pay attention to what has heart and meaning. • Tell the truth without blame or judgment. Truthfulness, authenticity and integrity develop vision and intuition. Be open, not attached, to outcomes. Wisdom is flexible and fluid. Trust and be comfortable with states of not knowing as a prelude to clarity, objectivity, discernment and detachment. With each season, we have evolved the format and flow of GROUP THINK and worked to deepen our practice of inviting a representative mix of community members to join us for authentic, meaningful conversations. Tell us a bit about yourself I spent most of my childhood making messes and crafting. My mom is a very creative woman and was always painting on our walls or making something out of nothing. She really encouraged creativity and tried to get us to express ourselves creatively. Then you have my grandma, she owned a nail salon in upstate New York and every chance I got to visit was magical! This place was full of creativity and I will never forget sitting there watching my aunt and grandma paint beautifully intricate images on such small canvases! It still blows my mind. Describe what you make under Tin•ker? With Tin•ker, I create one of a kind Alcohol Ink paintings as well as travel around to teach creative workshops. Starting in January Tin•ker will be available to travel out to smaller communities to teach private or public workshops. Where is the name from? A few years ago my best friend gave me the nickname Tinkerbell. I guess you could say it stuck and has become a permanent part of who I am. It also perfectly describes what I do most days, tinker around and see what I can make. You have worked with a huge variety of mediums and tools - what are some of your favorites currently to create with? I think I have worked with every medium out there (for better or worse) and I have loved most of them! haha. I love alcohol ink painting first and foremost, so if I have downtime, I’m probably doing that. I also love to hand letter/doodle, make string art, embroider and spend as much time as possible in my woodshop. What is one of your favorite pieces you’ve created? A few years ago I got to work with some art students at New Tech High School in Sioux Falls, SD. We spent three days creating two huge staircase string art
installations. I absolutely love working with kids and would love to do more pieces like this. What is your favorite thing about having a maker business? I love the creative freedom that comes with having a business of my own. I love being able to show people, who think they aren’t creative, that they truly are. What is the most challenging thing? Saying no. I am not great at saying no. I love helping people find their creativity in using the skills that I have to help them bring their project to life. While it can be challenging I will always want to help when asked. What is a word that best describes you? Passionate. I’ve always loved the saying “Some people confuse passion with crazy. Let me be clear, I am bat sh*t passionate.”
Yep, that pretty much sums it up these days. How do you stay inspired to create? I try to surround myself with people who love what they do. I also find it very important for me to take artist dates with myself. Getting out of my daily routine is usually where I find the most inspiration. I have also always been a very vivid dreamer and take a lot of inspiration from them. What advice would you have given yourself 10 years ago? Relax! Things don’t have to be perfect. Where can people find your work? I am currently in the process of creating a new website, so, for now, you can find my work at Unglued and on FB or Instagram.

for the holidays
W
hen I was a child, Christmas was all about the gifts. Sleeping the night before was nearly impossible because I needed to know what was under that dang tree. Now, though thoughtful or handmade gifts are wonderful, I don’t really get all jazzed up about them. For me, this time of year is all about food and family. Sometimes we need a set reason like the holidays to visit family or spend time with friends. I come from a family where the seasonal meal has many required dishes that are part of our festive tradition. Jello has somehow made its way off
the list but I’m sure it’ll make a comeback. Now, whether it’s because we want it or because we’re being nostalgic, only time will tell. We’ve got a vegetable dish with half a box (more if I’m in charge of making it) of Cheez-It crackers crushed on top with melted butter. And even though it’s made in a microwave, it’s dang good. These types of recipes will always have a place at the table but I like to use the holidays as a reason to not only appreciate our traditional recipes but try some new ones as well. One year I took an ancestral dive into my Polish heritage and made pierniki and rugelach. Both

were delightful and were accompanied by traditional sweets like pumpkin bread and sugar cookies. This year I’m bringing my all-time traditional favorite shortbread cookies and introducing a new dessert that came across my radar a few months back that I have finally made the time to make; a Brazilian confection enjoyed at celebrations throughout the year known as brigadeiro. The best part of both these desserts is how few ingredients each requires, many which you likely have on hand, and the textural experiences. The shortbread cookies are crisp, buttery and can be cut into magical wintery shapes that are covered in chocolate, caramel
and sprinkles. The key to making a successful shortbread cookie is using cold butter and not overmixing your dough. You want to keep the butter cold to help create the signature crisp and flake of shortbread. The brigadeiro took me a few tries to get it right. I did the “Goldilocks and the Three Bears” this one; too soft, too firm and finally got it just right. The best part is, it tasted good in all three variations, however, it’s much easier to eat when prepared properly. I challenge you to bring something new to the table this holiday season and may your 2019 end and the new year begin on sweet notes!
Shortbread Cookie Recipe
Brigadeiro Recipe
Makes about 24 -3” diameter cookies Recipe Notes: Keep your butter cold, using a stand mixer or hand mixer works best and don’t over mix!
Makes about 12 pieces. Recipe Notes: Be patient with this one and do not increase your temp to make it cook faster!
Ingredients: 16T. Unsalted butter, cold and cut into ¼” cubes 1/2c. Sugar 1/2t. Salt 2-1/3c. All Purpose Flour Sprinkles, chocolate, decorations, etc.
Ingredients: 1-14oz. Can sweetened condensed milk 3T. Cocoa powder, sifted 2T. Butter + more for hands Pinch of salt Chocolate sprinkles, or sprinkles of your choice Mini foil cupcake liners
Directions: • Preheat oven to 350F • Place sugar, salt and cubed butter in bowl. With mixer on medium speed, stir just until mixture is creamed. You do not want to whip it as that would heat up the butter. • Reduce speed to medium-low. Slowly sprinkle flour into the mixer bowl and mix until it begins to pull together and barely starts to pull away from the sides of the bowl. • Lightly flour work surface. Place dough on work surface and knead briefly until it forms a ball. You can cut the dough in half and work in smaller batches to make it easier. Roll dough out to roughly ¼” thickness. Cut to desired shape and place on parchment-lined baking sheet. • These cookies do not spread much so you can place them about 1-2” apart. Bake at 350F for 15-20 minutes until lightly golden brown on the edges. Remove from oven and cool completely before decorating. I often dip them halfway in melted chocolate and add sprinkles for color.
Directions: • In heavy-bottomed 4-quart saucepan, melt 2T. butter over mediumlow heat. • Once butter is melted, add salt and the entire can of sweetened condensed milk and stir. • Add sifted cocoa powder and stir. And keep stirring. And don’t stop stirring! • Keeping the temperature at medium-low and stirring constantly, make sure to scrape the sides as well as the bottom of the pan to prevent burning. • You will know when the mixture is ready by running your spoon along the bottom of the pan. If it takes 2-3 seconds for the mixture to fill that void back in, it’s ready. This usually takes about 15-20 minutes. • Remove from heat and pour into a glass dish or plate. Let cool completely, 30-45 minutes. rian heard his wife scream. He saw headlights. Then everything went black. When he woke up, his back was on the cold pavement in North Fargo, looking up at a blurry paramedic. He had an excruciating headache and a sharp pain in his arm. His daughter cried, and his wife lay next to him in broken glass. She was motionless. That’s part of the story in “Just Like Me” a video by Yarn Media for the New Life Center, a homelessness recovery organization in Fargo. This video featuring “Brian” is a fictionalized dramatization that combines elements of several local homeless men’s stories into one powerful story of loss and recovery. The video follows Brian, whose car accident triggers a downward spiral of addiction, depression, the loss of his daughter and, ultimately, homelessness. But the story doesn’t stop there. Brian finds the New Life Center, where volunteers and staff help him reconnect with his daughter and get him back on his feet. The story struck a chord with the Fargo community. In the first two days after it’s release, the video received hundreds of shares and comments of support on social media with over 15,000 views. As temperatures get chilly, this story reminds us to remember the homeless in our community, and remember that they’re like us in so many ways. The opioid epidemic is not going away. If we don’t take action, families and children will pay the price. This film is a reminder that we’re all responsible for helping our neighbors. Rob Swiers, the Executive Director of the New Life Center makes it clear that each person has the opportunity to make a difference in their community. Many people look for opportunities to get involved this time of year, but often don’t know where to start. The New Life Center’s efforts provide powerful insights into how each of us can more effectively help those around us who are in need. Here are four lessons we can learn from The New Life Center on how we can all make a difference.
Four ways to make a difference this holiday season: 1. Challenge your assumptions Brian’s story seemed to resonate with so many because the causes of homelessness in Fargo is often different than we think. “It’s not just the person standing at the off-ramp with a sign,” says Swiers. In Fargo, hundreds of homeless individuals remain in temporary shelter, out of sight of most city residents, while struggling to meet their basic needs and gaining a true path to recovery. And the solutions to homelessness can be just as surprising. “We provide food, shelter, and clothing. That’s where it starts, but it is not where it ends. We walk with them, guide them and help them. That’s where the transformation happens,” said Swiers. Often, providing dignity and respect are the first steps in supporting someone as they come out of homelessness.
2. Work Together Effective growth only happens in an environment of healthy cooperation. The New Life Center collaborates with other agencies like Sanford and the Fargo Police to effectively serve others. Rather than trying to do everything on their own, The New Life Center partnered with Yarn Media to produce a video that allowed their team to stay laser-focused on their mission. Similarly, they partner with dozens of other local agencies and programs to ensure every person who walks through their door is provided with the best possible care.

3. Spread the word Thousands of people learned about the work of the New Life Center because people were willing to spread the word. No matter what causes you’re passionate about, it’s likely that you have people in your network that have a similar passion, but have not yet taken a step towards getting involved. If you plan to volunteer at the New Life Center for the first time, invite a friend to come along. You can double your impact while helping a friend engage with something you’re passionate about.
4. Step out of your comfort zone “We’ve been around for 112 years. In that time, we’ve seen a tremendous amount of change,” says Swiers. The New Life Center has stayed relevant throughout the years by embracing change rather than resisting it, and that forward-thinking mindset has allowed them to grow their impact over time.
Sometimes it’s worth investing in professionally produced storytelling like the New Life Center did with Yarn. But each of us can make an impact just by sharing our firsthand experiences with our personal and professional networks. Sharing an online review of a charity you admire or simply telling a friend about your volunteering experiences can make a big difference in moving a cause forward.
Starting is often the hardest part of making a difference. Consider taking a small step, like donating or volunteering at a local organization. This time of year, we are lead to reflect on what we are grateful for. What often comes with that is the desire to give back. If you have the desire to give back to our community this time of year, here is a good starting point on how and where you can volunteer. This list is by no means complete, but it certainly is a great start to get you in the mindset of how and where you want to give back this season.

the joy project Christmas Eve, they serve around 300 people, setting up meals at Gladys Ray Shelter, Dorothy Day House, Stepping Stones Resource Center, Bright Sky Apartments, both Grand Inn Motels, The Ronald McDonald House and Project HART. At these places, Santa comes to visit with children and even brings them gifts, creating a fun, festive and magical atmosphere for all.
At the time of year where family and a sense of “home” are so treasured, Bengtson-Loerzel began thinking about these families in temporary housing and how hard it must be for them to celebrate holidays when they are unsure of where they will live from day to day. So she started The Joy Project.
“As soon as we are done on Christmas Eve, I start looking forward to the next year. It’s truly rewarding to spend the holiday with people who may be in need of some joy during the holidays,” said Bengtson-Loerzel. “I’ve seen kids’ eyes light up when Santa arrives, realizing that he didn’t forget about them. I’ve seen people cry tears of joy by receiving a gift for the first time in many years. I’ve heard a million thank you’s — that’s the most rewarding part of The Joy Project.”
The Joy Project is a group of caring community members and businesses who work together to make the holidays feel a bit warmer for such families. Each
As they are a group of committed individuals and not an official non-profit, their funds are more limited and they rely completely on the generosity of the community. Right now, they are still trying to raise $600 to cover the meals they will serve this year. Additionally, they will be collecting Christmas goodies and 12-packs of sodas and juice at Luna on Christmas Eve morning to help prepare for the night’s festivities. To find out how you can help, either monetarily or by volunteering, be sure to follow them on Facebook under “The Joy Project” and reach out with any questions. “My goal is to one day fall asleep on Christmas Eve knowing that everybody in Fargo-Moorhead had a meal, got a gift and felt loved for at least one night of the year,” said Bengtson-Loerzel. The way this project has been heading, it is hopeful to think that someday this might be a reality.

he Joy Project was founded by Marisa Bengtson-Loerzel in 2013 after she witnessed a school bus drop off children at the Grand Inn Motel one day, a week before Thanksgiving.
